Abstract
This study evaluated the effects of different dietary metabolizable energy (ME) concentrations on the meat quality, carcass traits, volatile flavour and lipid metabolism-related gene expression levels in yellow-feathered chickens. In total, 600 Huxu female chickens aged 90 days were randomly assigned to six dietary treatments, each with 10 replicates of 10 birds. During the finisher phase, the birds were fed diets containing 2880 (low), 2940, 3000, 3060, 3120 and 3180 (high) kcal ME/kg. The results showed that the average daily gain of chickens increased as the dietary ME concentration increased, while the feed to gain improved (p < 0.05), and the intramuscular fat content of breast muscle increased (p < 0.05). The energy concentration had no effect on the breast muscle pH (45 min and 24 h), colour parameter (L*) or percentage of drip loss (p > 0.05), but the shear force values decreased significantly (p < 0.05). The diameter and area of the breast muscle fiber decreased and the muscle fibre density increased as the dietary ME concentration increased (p < 0.05). The highest ME concentration (3180 kcal) increased the percentages of aldehydes (hexanal, heptanal, 2,4-nonadienal, octanal, nonanal and 2-decenal), alcohols (2-nonen-1-ol, trans-2-undecen-1-ol, 7-hexadecenal, 2-hexyl-1-decanoal and n-nonadecanol-1,3,7,11-trimethyl-1-dodecanol), alkanes (2,6-dimethyl-heptadecane) and carboxylic acids (9-hexadecenoic acid), but reduced the percentages of octadecanal, octadecane, heneicosane and tetradecanal (p < 0.05). In addition, the mRNA gene expression levels of fatty acid-binding protein 3 and apolipoprotein B were significantly upregulated in the liver, whereas that of cholesteryl ester transfer protein was significantly downregulated. In conclusion, increasing the ME diet to 3180 kcal/kg significantly improved the quality and flavour of the meat from yellow-feathered broilers. our finding may help poultry producers to improve the taste of meat by regulating genes related to lipid metabolism, thereby achieving the flavour and taste characteristics preferred by consumers.

Abstract
The present research aims to develop a carcass quality characterization methodology for minority chicken populations. The clustering patterns described across local chicken genotypes by the meat cuts from the carcass were evaluated via a comprehensive meta-analysis of ninety-one research documents published over the last 20 years. These documents characterized the meat quality of native chicken breeds. After the evaluation of their contents, thirty-nine variables were identified. Variables were sorted into eight clusters as follows; weight-related traits, water-holding capacity, colour-related traits, histological properties, texture-related traits, pH, content of flavour-related nucleotides, and gross nutrients. Multicollinearity analyses (VIF ≤ 5) were run to discard redundancies. Chicken sex, firmness, chewiness, L* meat 72 h post-mortem, a* meat 72 h post-mortem, b* meat 72 h post-mortem, and pH 72 h post-mortem were deemed redundant and discarded from the study. Data-mining chi-squared automatic interaction detection (CHAID)-based algorithms were used to develop a decision-tree-validated tool. Certain variables such as carcass/cut weight, pH, carcass yield, slaughter age, protein, cold weight, and L* meat reported a high explanatory potential. These outcomes act as a reference guide to be followed when designing studies of carcass quality-related traits in local native breeds and market commercialization strategies.

Abstract
The present research aimed to determine the differential clustering patterns of carcass and meat quality traits in local chicken breeds from around the world and to develop a method to productively characterize minority bird populations. For this, a comprehensive meta-analysis of 91 research documents that dealt with the study of chicken local breeds through the last 20 years was performed. Thirty-nine traits were sorted into the following clusters: weight-related traits, histological properties, pH, color traits, water-holding capacity, texture-related traits, flavor content-related nucleotides, and gross nutrients. Multicollinearity problems reported for pH 72 h post mortem, L* meat 72 h post mortem, a* meat 72 h post mortem, sex, firmness, and chewiness, were thus discarded from further analyses (VIF < 5). Data-mining cross-validation and chi-squared automatic interaction detection (CHAID) decision tree development allowed us to detect similarities across genotypes. Easily collectable trait, such as shear force, muscle fiber diameter, carcass/pieces weight, and pH, presented high explanatory potential of breed variability. Hence, the aforementioned variables must be considered in the experimental methodology of characterization of carcass and meat from native genotypes. This research enables the characterization of local chicken populations to satisfy the needs of specific commercial niches for poultry meat consumers.

Abstract
Simple Summary Mulberry leaf is widely used in ruminants feeding, such as sheep, beef cattle, and dairy calves. Due to the high content of crude fiber in mature mulberry leaves and branches and the presence of anti-nutritional factors such as tannin, excessive addition will affect the production performance and health of livestock and poultry, and limit its large-scale application in animal production to a certain extent. The disadvantages of woody plants can be improved by microbial fermentation, which can reduce the content of anti-nutritional factors, and increase the content of peptides and amino acids, probiotics, and bioactive components. In this study, Lactobacillus, Saccharomycetes, and Bacillus subtilis were used to make mixed strains to ferment mulberry leaf powder, and different proportions were added to the diet of yellow feathered chicken broilers. The results showed that the addition of fermented mulberry leaf in the diet could improve the digestion and absorption of nutrients, and then improve its growth performance, and increase the contents of inosine monophosphate (IMP), total amino acids, essential amino acids, and delicious amino acids in breast and thigh muscle, and improved polyunsaturated fatty acids and essential fatty acids in breast muscle; this also has a positive effect on improving meat quality. Abstract This study was conducted to investigate the effects of feeding fermented mulberry leaf powder (FMLP) on growth performance, slaughter performance, and meat quality of broilers. A total of 360 1-day-old chickens were randomly divided into 5 groups. The control group was fed basal diet (CON), 3% FMLP, 6% FMLP, 9% FMLP, and 3% unfermented mulberry leaf powder. The (MLP) group was fed basal diet supplemented with 3%, 6%, 9% fermented mulberry leaf powder, and 3% MLP, respectively. The experiment lasted for 56 days, with 1–28 days as the starter phase and 29–56 days as the grower phase. The results on the growth performance showed that diets supplemented with 3% FMLP significantly increased the ratio of villus height to crypt depth in the duodenum, jejunum, and ileum of broilers, enhanced the activity of intestinal amylase and digestibility of dry matter and crude protein, improved the average daily gain (ADG), and decreased the feed to gain ratio (F/G) (p < 0.05). Compared with the control group diet, the 3% FMLP group diet significantly increased the breast muscle yield (p < 0.05), reduced the abdominal fat ratio (0.1 < p < 0.05), and improved the slaughter performance of broilers. The 3% MLP group diet increased the shear force of breast muscle (p < 0.05) and thigh muscle of broilers compared to the control group, and adding FMLP could reverse the above results. Additionally, relative to the control group, FMLP supplementation improved the contents of inosine monophosphate (IMP), total amino acids (TAA), essential amino acids (EAA), and delicious amino acids (DAA) in breast and thigh muscle, and improved polyunsaturated fatty acids (PUFA) and essential fatty acids (EFA) in breast muscle; the 6% and 9% FMLP groups showed preferably such effects (p < 0.05). In conclusion, dietary supplementation of FMLP can improve the digestion and absorption of nutrients, and then improve the growth performance of broilers; it also has a positive effect on improving slaughter performance and meat quality.

Abstract
High-energy-density diet could increase body weight at the expense of the intestinal health of the animals. In order to optimize production without negatively influencing the gut health of chickens, dietary supplementation with bacitracin methylene disalicylate (BMD) is a common feeding strategy adopted to enhance production performance and intestinal health. Studies have suggested that BMD could improve chicken growth performance and gut health through modulation of the gut microbiota. The current study investigated the effect of BMD supplementation in a normal-energy (NE) or high-energy (HE) diet on growth performance, organ weights, jejunal morphology, and gut microbiota of broiler chickens at different growth stages. Birds were allocated to four treatments: normal-energy basal diet (NE-BAS), normal-energy BMD diet (NE-BMD), high-energy basal diet (HE-BAS), and high-energy BMD diet (HE-BMD). In the starter phase, body weight and body weight gain were reduced significantly (p < 0.05) in chickens fed HE diets compared to those fed NE diets. The FCR was significantly higher (p < 0.05) in birds fed HE-BMD diets in the starter phase but lower (p < 0.05) during the grower phase when compared to other treatments. Moreover, the relative bursa weight increased significantly (p = 0.0220) among birds that received HE diets. Birds fed HE-BMD had greater villus height (p = 0.054) than NE-BMD group. Among the chickens fed the HE diets, those that received BMD treatment had a significantly increased (p = 0.003) villus width (13.3% increase) compared to those that received the basal diet. Improved population of Firmicutes was observed in chickens fed HE-BMD diet when compared to HE-BAS. Our results imply that BMD may be more effective in improving intestinal health when supplemented in a high-energy diet for broiler chickens.

Abstract
Adenosine monophosphate-activated protein kinase (AMPK) acts as a sensor of cellular energy changes and is involved in the control of food intake. A total of 216 1-d-old broilers were randomly allotted into 3 treatments with 6 replicates per treatment and 12 broilers in each cage. The dietary treatments included 1) high-energy (HE) diet (3,500 kcal/kg), 2) normal-energy (NE) diet (3,200 kcal/kg), and 3) low-energy (LE) diet (2,900 kcal/kg). The present study was conducted to investigate the effects of dietary energy level on appetite and the central AMPK signal pathway. The results showed that a HE diet increased average daily gain (ADG), whereas a LE diet had the opposite effect (P < 0.05, N = 6). The average daily feed intake (ADFI) of the chickens fed the LE diet was significantly higher than that of the control (P < 0.05, N = 6). Overall, the feed conversion rate gradually decreased with increasing dietary energy level (P < 0.05, N = 6). Moreover, the chickens fed the LE and HE diets demonstrated markedly improved urea content compared with the control group (P < 0.0001, N = 8). The triglyceride (TG) content in the LE group was obviously higher than that in the HE group but showed no change compared with the control (P = 0.0678, N = 8). The abdominal fat rate gradually increased with increased dietary energy level (P = 0.0927, N = 8). The HE group showed downregulated gene expression levels of liver kinase B1 (LKB1), neuropeptide Y (NPY), cholecystokinin (CCK), and glucocorticoid receptor (GR) in the hypothalamus compared with the control group (P < 0.05, N = 8). However, LE treatment significantly increased the mRNA level of AMP-activated protein kinase α2 (AMPKα2) compared with other groups (P = 0.0110, N = 8). In conclusion, a HE diet inhibited appetite and central AMPK signaling. In contrast, a LE diet activated central AMPK and appetite. Overall, the central AMPK signal pathway and appetite were modulated in accordance with the energy level in the diet to regulate nutritional status and maintain energy homeostasis in birds.

Abstract
Simple Summary The present investigation examined improvements in egg hatchability and the growth performance of hatched chicks of two strains upon injection with increasing concentrations of royal jelly (RJ). The results showed positive effects of RJ injection on all parameters. Limited impacts of the different chicken strains were observed on the tested parameters. The study revealed that varying the chicken strain could alter the response to the in ovo injection with RJ. Abstract The hypothesis of the present work was that the effects of in ovo injection may differ in different chicken strains. The influence of in ovo royal jelly (RJ) injection on hatching, growth and blood parameters in two chicken strains (Dokki-4 and El-Salam as example for different strains) was evaluated. A total of 1080 eggs were used. On the seventh day of incubation, the eggs were randomly allocated into six experimental groups in a 2 × 3 arrangement that included the two chicken strains and three concentrations of RJ (0, 0.25 and 0.5 mL RJ/egg). Injection with 0.5 mL RJ/egg improved hatchability compared to the other treatments. The El-Salam strain exhibited significantly higher body weight and body weight gain than the Dokki-4 strain. Injection with 0.5 mL RJ/egg significantly (p < 0.05) improved chicken body weight and daily weight gain compared to the control treatment. RJ injection decreased blood lipid profile parameters and the numbers of monocytes and eosinophils and increased total protein, globulin, haemoglobin (Hb) and lymphocyte levels compared to the control treatment. The Dokki-4 strain showed significantly higher antibody titres against avian influenza virus (AIV) (p < 0.05) and sheep red blood cells (SRBCs) (p < 0.0001) than the El-Salam strain and RJ injection enhanced antibody titres against AIV, Newcastle disease virus (NDV) and SRBCs. Therefore, the Dokki-4 strain was superior to the El-Salam strain for the tested parameters and injection with 0.5 mL RJ/egg produced the best hatching parameters, growth performance and health-related traits. RJ in ovo injection was much more effective in the Dokki-4 strain than in the El-Salam strain, which supported the hypothesis of the study that varying the chicken strain could alter the response to the in ovo injection with RJ.

Abstract
Both genetic selection and increasing nutrient density for improving growth performance had inadvertently increased leg problems of meat ducks, which adversely affects animal welfare. We hypothesised that slowing weight gain with improving tibia quality probably enhanced tibial mechanical properties and alleviated leg deformities. Therefore, the present study aimed to evaluate the effect of graded Ca supplementation in a low-nutrient density (LND) diet on tibia composition and bone turnover in meat ducks. A total of 720 15-d-old male meat ducks were randomly assigned and fed a standard nutrient density positive control (PC) diet containing 0·9 % Ca, and four LND diets with 0·5, 0·7, 0·9 and 1·1 % Ca, respectively. Ducks fed the 0·5 % Ca LND diet and the PC diet had higher incidence of tibial dyschondroplasia (TD). When compared with the 0·5 % Ca LND diet, LND diets with ≥0·7 % Ca significantly improved tibia composition, microarchitecture and mechanical properties, and consequently decreased the incidence of TD. Furthermore, LND diets with ≥0·7 % Ca increased osteocyte-specific gene mRNA expression, blocked the expression of osteoblast differentiation marker genes including osteocalcin, collagenase-1 and alkaline phosphatase (ALP), and also decreased the expression of osteoclast differentiation genes, such as vacuolar-type H+-ATPase, cathepsin K and receptor activator of NF-κB. Meanwhile bone markers such as serum ALP, osteocalcin (both osteoblast markers) and tartrate-resistant acid phosphatase (an osteoclast marker) were significantly decreased in at least 0·7 % Ca treated groups. These findings indicated that LND diets with ≥0·7 % Ca decreased bone turnover, which subsequently increased tibia quality for 35-d-old meat ducks.

Abstract
Over 40 million day-old layer line cockerels are culled in Germany each year, due to economic reasons, leading to a recently instigated research focus on the potential of dual-purpose breeds as an alternative to conventional poultry husbandry, especially the practice of culling. This paper aims to explore and assess the dual-purpose chicken breed “Lohmann Dual” (LD) performance (n = 30) and sensory characteristics (n = 48). Carcass and meat quality traits are evaluated, and descriptive sensory analysis of breast muscles is conducted. To define the scope of characteristics, a market sample of “Ross” Line (n = 35) is adducted. LD carcasses are characterized by higher leg than breast yield; carcass, breast and leg weights are higher in Ross. LD meat has a lower pH, differs in color, has higher drip and thawing losses, but lower cooking loss. LD breast muscles are firmer as indicated by shear force measurements, which is confirmed through the sensory analysis. Appearance, odor and flavor differ between the lines. Overall, distinguishable differences are found between both breeds. Further research should focus on the marketing aspect of the dual-purpose line, as some characteristics could draw consumers to this product. Animal welfare and ethical concerns should further be considered when considering dual-purpose breeds as a feasible alternative to culling.

Abstract
This experiment was conducted to investigate the effects of dietary methionine (Met) on growth performance, carcass traits, meat quality and oxidative status of breast muscle in fast- (Arbor Acres, AA) and slow- (Partridge Shank, PS) growing broilers from 1 to 42 d of age. The broilers were divided into a 2 × 3 factorial design with 6 replicates per treatment. Diets were formulated to contain low (LM, 0.35 and 0.31% during 1 to 21 and 22 to 42 d), adequate (AM, 0.50 and 0.44%) and high (HM, 0.65 and 0.57%) Met, respectively. The main effects showed that the AA broilers had superior (P < 0.05) growth performance and carcass traits compared with those of the PS broilers. The breast muscle of the AA broilers had lower (P < 0.05) drip loss and malondialdehyde (MDA) content but higher (P < 0.05) cooking loss and glutathione peroxidase (GPX) activity than that of the PS broilers. Compared with the LM diets, the AM and HM diets increased (P < 0.05) 42-d BW, ADG, eviscerated yield and breast muscle yield only in the AA broilers. The AA broilers fed the HM diets had higher (P < 0.05) pH but lower (P < 0.05) L*, cooking loss and ether extract content in breast muscle than those fed the LM diets. Compared with the LM diets, the HM diets resulted in strain-dependent changes (P < 0.05) in muscle oxidative status, with total antioxidant capacity (T-AOC) increased in the AA broilers, GPX activity increased and MDA content decreased in the PS broilers, and superoxide dismutase (SOD) activity increased in both strains of broilers. No differences were observed between the AM and HM diets except for T-AOC in breast muscle. In conclusion, the LM treatment negatively affected broiler growth performance, carcass traits, meat quality and oxidative status of breast muscle in a strain-dependent manner, particularly in the AA broilers, whereas the HM treatment had limited effects compared to the AM treatment.

Abstract
The major objective of this research was to establish the main and interactive effects of corn type and extent of grinding on broiler performance including carcass characteristics. A completely randomized experimental design with a 2 (corn type) × 2 (fine and coarse) factorial arrangement, each with six replicates of 45 male Ross chicks, was applied. Experimental diets, containing dent or hard corn, were formulated with two extents of grinding (3.00 or 6.00 mm screens) for three growing phases. In comparison with dent corn, the hard corn increased body weight (BW) gain and thigh muscle yield (p < 0.05), while decreasing feed conversion ratio (p < 0.01) and abdominal fat deposition (p < 0.05), some aspects of which were age-dependent and appeared to vary with extent of grinding. Coarser grinding increased the weight of proventriculus (p < 0.01), gizzard (p < 0.05) and small + large intestine (p < 0.10) relative to BW, particularly towards market size. These results suggest that feeding hard corn or large-particle-size corn have some favourable effects on growth performance or gastrointestinal development for finishing broilers.

Abstract
The present study was conducted to investigate whether dietary essential oils could affect growth performance, relative organ weights, cecal microflora, immune responses and blood profiles of broiler chickens fed on diets containing different nutrient densities. A total of eight hundred-forty 1-d-old male broiler chicks were randomly allotted into twenty-eight pens (7 pens per treatment, 30 chicks per pen). There were four experimental diets containing two different nutrient densities and supplemented with or without essential oils. Experimental period lasted for 35 days. No clear interaction between nutrient density and essential oils on any of growth performance-related parameters was observed. Live body weights were affected (p<0.05) by nutrient density at 21 days and by dietary essential oils at 35 days. Essential oils significantly (p<0.05) increased daily body weight gain and feed conversion ratio during the periods of 22 to 35 and 1 to 35 days, but failed to affect feed intake during the entire experimental period. Daily weight gain at 1 to 21 days and feed intake at 1 to 21 and 1 to 35 days were significantly impaired (p<0.05) by nutrient density. There were significant treatment interactions (p<0.05) on relative weights of bursa of Fabricius and abdominal fat contents. Finally, either essential oil or nutrient density did not influence the relative percentages of breast and leg meats, the population of cecal microflora, blood parameters and antibody titers against Newcastle disease and infectious bronchitis in broiler chickens. It was concluded that dietary essential oils, independent to nutrient density, failed to stimulate feed intake, but increased growth performance in broiler chickens.

Abstract
Neural networks are capable of modelling any complex function and can be used in poultry production. Dietary crude fibre (CF) and exogenous enzymes (exEn) extensively affected abdominal fat (AF) of broilers. Current methods to study AF and its correlation with dietary CF levels and exEn supplements are costly, laborious and time-consuming. The purpose of this study was to develop an artificial neural network-genetic algorithm (ANN-GA) to model data on the response of broiler chickens (AF) to CF and exEn from 0 to 42 days of age. A data set containing eight treatments was divided to the train, validation, and test data set of the ANN models. The information about feeding eight diets at two periods [starter (0-21 days of age) and grower (22-42 days of age)] were used to estimate AF of broilers by ANN-GA. A multilayer feed-forward neural network with different structures was developed using matlab software, and optimal values for the ANN weights were obtained using the genetic algorithm (GA). Crude fibre, and exEn were used as input variables and AF of broilers was output variable. The best model of ANN-GA was determined based on the train root mean square error (RMSE). The best selected ANN-GA showed desirable results, RMSE, 0.1286% and R(2) coefficient, 0.876 for test data.

Abstract
The effects of protein source and amino acid (AA) and AME levels in the diets of male broilers from 8 to 21 d of age on subsequent growth and blood and carcass traits were investigated in the current study. Fourteen Ross × Ross 708 male broiler chicks were randomly allocated to each of 80 floor pens arranged in a randomized complete block design. Each diet contained 1 of 2 dietary protein sources (high inclusion of distillers dried grains with solubles or high inclusion of meat and bone meal), 1 of 2 AA densities (moderate or 10% higher), and 1 of 2 AME densities (2,998 or 3,100 kcal/kg). Experimental diets were fed from 8 to 21 d of age, and common diets from 1 to 7 and 21 to 55 d of age. The higher AME density in high inclusion of meat and bone meal diets increased serum triglyceride and cholesterol levels on d 20. The dietary inclusion of high inclusion of distillers dried grains with solubles or lower levels of AA increased high-density lipoprotein cholesterol on d 20. Feeding the high-AA-density diet decreased feed intake without affecting BW gain, which resulted in a lower feed conversion ratio (FCR). A high-AME-density diet lowered feed intake but increased BW gain, which resulted in a lower FCR from 8 to 21 d of age. Feed intake, BW gain, FCR from 21 to 54 d of age, and carcass weight on 42 and 55 d of age were not affected by treatments from 8 to 21 d of age. However, early dietary manipulation from 8 to 21 d of age affected fat and meat yield at 42 and 55 d of age. Moreover, a high-AME diet decreased feed cost per carcass weight gain from 8 to 55 d of age. In conclusion, high AA or AME densities during the grower phase, from d 8 to 21 of age, may improve growth during the grower feeding phase, but may also affect meat yield during the latter grow-out phases. Furthermore, high-AME diets from 8 to 21 d of age may save on feed costs for meat production.

Abstract
BACKGROUND The objective of this study was to evaluate the effects of feeding high- and low nutrient density diets, and three different vitamin premix withdrawal regimes on broiler performance and meat quality. Male broiler chicks (480 days old) were reared on the floor in a 2 × 3 factorial arrangement for 42 days. Chickens were slaughtered at 42 days of age and meat samples kept at -20 ± 1°C and analysed after 1, 90 and 180 days of storage. RESULTS Broiler performance was significantly affected by dietary nutrient density. Vitamin premix withdrawal had no significant effect on body weight. The results showed no significant differences between nutrient density and vitamin premix withdrawal on lightness (L*), redness (a*) and yellowness (b*). Oxidative stability of thigh muscle lipids during frozen storage was significantly affected by nutrient density, while vitamin premix withdrawal had no significant impact on lipid oxidation. High nutrient density diet led to a significantly (P < 0.05) decreased pH compared with the low nutrient density diet. CONCLUSION Increasing dietary nutrient density improved broiler performance but impaired meat quality while vitamin premix withdrawal during finisher periods had no negative effect on broiler performance and meat quality.

Abstract
1. A 2 × 2 factorial design was used to investigate the differences in carcase, muscle and meat characteristics between fast and slow growing genotypes fed on low nutrient (LND) or high nutrient diets (HND) at their respective slaughter ages. 2. The birds were randomly assigned to treatments with 5 replicates of 145 birds for Wens Yellow-Feathered Chicken (WYFC, 5·75 birds/m(2)) or 115 birds for White Recessive Rock Chicken (WRRC, 7·25 birds/m(2)), according to the commercial recommendations for the two breeds and were fed on HND or LND. Birds were slaughtered at 63 d and 105 d of age. 3. The results showed WRRC had higher carcase yield and meat yield than that of WYFC, lower fat content, higher moisture content and lower cooking loss. The meat from WRRC was less tender and contained lower levels of polyunsaturated fatty acids (PUFA). 4. Birds fed on HND had higher breast meat yield, myofiber area and protein content in the breast muscle and lower fat content than birds fed on LND. The thigh muscle of birds fed on HND had higher levels of PUFA. Age had a positive effect on carcase parameters, but a negative effect on pH, meat tenderness and cooking loss, and the two genotypes exhibited different responses to the influence of nutrient density and age. 5. Genotype and age had the largest effect on carcase performance and meat quality. LND benefited meat quality and WRRC had larger responses in meat yield and shear force when fed on HND.

Abstract
We investigated the effects of a low crude protein (CP) diet and a low CP diet supplemented with synthetic essential amino acids (EAA) on the meat quality of broiler chickens. Twenty-one-day-old chickens were assigned to one of three diets: control, low CP (LCP), or low CP supplemented with EAA (ELCP). The chickens received these diets for 10 days. The shear force value (SFV) and free glutamate content of the Pectoralis major muscle were measured as indicators of the meat toughness and taste. The collagen and crude fat content of the muscle and the cross-sectional area of myofibers were measured to evaluate the effects of the LCP and ELCP diets on meat toughness. The SFV of the ELCP group was 47% lower than that of the control group (P<0.01). However, the LCP diet did not affect the SFV. The collagen and crude fat content were not affected by the dietary treatment. The cross-sectional area was lower in the LCP and ELCP groups (P<0.05) than the control group. The free glutamate content of muscle was not affected by the dietary treatment. Thus, a low CP diet supplemented with EAA is an effective means of producing tender meat.

Abstract
A study was conducted to determine whether water-cooled perches would be preferred by commercial broilers exposed to a hot ambient environment, and subsequently, whether utilization of these perches would improve performance and the well-being of birds, beyond those provided by normal perches. Four hundred and thirty-two 14-d-old male chickens from a commercial fast-growing strain (Arbor Acres) were housed in the following conditions: 1) cool perches, 2) normal perches, and 3) control pens with no perches. The results showed that there was greater use of cool perches than normal perches for broiler chickens during summer (F1, 4=125, P=0.0004). Cool perches increased BW gain (F2, 6=5.44, P=0.0449) and breast (F2, 24=3.31, P=0.0539) and thigh muscle yields (F2, 24=6.29, P=0.0063), while decreasing abdominal fat deposition (F2, 24=7.57, P=0.0028), cooking loss (pectoralis major, F2, 24=3.30, P=0.0542; biceps femoris, F2, 24=3.42, P=0.0493), percentage of panting birds (F2, 6=102, P<0.0001), and scores of footpad (F2, 6=122, P<0.0001) and hock (F2, 6=68.2, P<0.0001) burn, and abdominal plumage condition (F2, 6=52.0, P=0.0002), particularly toward the end of the rearing period. In contrast, normal perches hardly affected growth performance, carcass composition, meat quality and behavioral patterns, and appeared to worsen the welfare status, including footpad and hock burns and abdominal plumage condition, due to a lower occupancy rate. Cool perches offer a thermoregulatory and performance advantage to broilers exposed to a hot environment and appear to be a management strategy for improving the production and well-being of commercial broilers.
