Abstract
Oxidative stress causes several pathological conditions in humans and animals, including gastrointestinal disorders. The aim of this study was to analyze the antioxidant capacity of three natural powdered raw materials containing quercetin, bromelain, and Lentinula edodes and develop a new feed supplement for dogs using a combination of them. The total phenolic content (TPC), antioxidant activity, DPPH (2,2-diphenyl-1-picrylhydrazyl), and ABTS (2,2'-Azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt) of the extracts, either individually or in combination, were evaluated colorimetrically. The effects of this supplement on healthy adult dogs' nutritional, inflammatory, and stress status were evaluated. American Staffordshire Terrier adult female dogs (n = 30) were randomly assigned to a control (n = 15) or a treated (n = 15) group. The supplement was added as powder to the food of the treated dogs once daily for 28 days. There was no significant difference in the body weight and body condition scores between the initial and final phases of the experiment. At the end of our study, a significant decrease in fecal calprotectin, cortisol, indole/skatole, and N-methylhistamine and a significant increase in short-chain fatty acids were observed as compared to the control group. In conclusion, this natural feed supplement can be used to improve gastrointestinal health and psycho-physical conditions in dogs.

Abstract
Edible fungi, commonly known as mushrooms, are precious medicinal and edible homologous gifts from nature to us. Because of their distinctive flavor and exceptional nutritional and medicinal value, they have been a frequent visitor to people’s dining tables and have become a hot star in the healthcare, pharmaceutical, and cosmetics industries. Edible fungal polysaccharides (EFPs) are an essential nutrient for edible fungi to exert bioactivity. They have attracted much attention because of their antioxidant, immunomodulatory, antitumor, hypoglycemic, and hypolipidemic bioactivities. As a result, EFPs have demonstrated outstanding potential over the past few decades in various disciplines, including molecular biology, immunology, biotechnology, and pharmaceutical chemistry. However, the complexity of EFPs and the significant impact of mushroom variety and extraction techniques on their bioactivities prevents a complete investigation of their biological features. Therefore, the authors of this paper thoroughly reviewed the comparison of different extraction methods of EFPs and their advantages and disadvantages. In addition, the molecular weight, monosaccharide composition, and glycosidic bond type and backbone structure of EFPs are described in detail. Moreover, the in vitro and in vivo bioactivities of EFPs extracted by different methods and their potential regulatory mechanisms are summarized. These provide a valuable reference for improving the extraction process of EFPs and their production and development in the pharmaceutical field.

Abstract
This review aimed to compare alternative protein sources in terms of nutritional composition and health benefits with the purpose of disseminating up-to-date knowledge and contribute for diversification of the food marked and consumers decision-making. Plant-based is the most well-established category of alternative proteins, but there is still room for diversification. Less conventional species such as chia seeds are prominent sources of ω-3 (∼60% total lipids), while hempseed and quinoa are notable sources of ω-6 (up to 58% and 61%, respectively). Edible insects and microalgae are alternative foods rich in protein (up to 70%), fibers (∼30%), as well as peptides and polysaccharides with antimicrobial, antioxidant, anti-hypertensive, antidiabetic, antidepressant, antitumor, and immunomodulatory activities. Additionally, lipid contents in insect larvae can be as high as 50%, on a dry weight basis, containing fatty acids with anti-inflammatory and antitumor properties. In contrast, edible fungi have low lipid contents (∼2%), but are rich in carbohydrates (up to 79%) and have balanced amino acid profiles. The results suggest that food formulations combining different alternative protein sources can meet dietary requirements. Further studies on flavoring and texturing processes will help to create meat and dairy analogs, thus helping to broaden acceptance and applicability of alternative protein sources.

Abstract
In this work, the assessment of Azadirachta indica, Tagetes erecta, Chrysanthemum morifolium, and Lentinula edodes extracts as catalysts for the green synthesis of zinc oxide nanoparticles (ZnO NPs) was performed. The photocatalytic properties of ZnO NPs were investigated by the photodegradation of methylene blue (MB) dye under sunlight irradiation. UV-visible (UV-Vis) spectroscopy, Fourier Transform Infrared (FTIR) spectroscopy, Transmission Electron Microscopy (TEM), X-ray Diffraction (XRD), Thermogravimetric (TGA), and Brunauer-Emmett-Teller analysis (BET) were used for the characterization of samples. The XRD results indicate that all synthesized nanoparticles have a hexagonal wurtzite crystalline structure, which was confirmed by TEM. Further, TEM analysis proved the formation of spherical and hemispherical nanoparticles of ZnO with a size in the range of 14-32 nm, which were found in aggregate shape; such a size was well below the size of the particles synthesized with no extract (~43 nm). ZnO NPs produced with Tagetes erecta and Lentinula edodes showed the best photocatalytic activity, matching with the maximum adsorbed MB molecules (45.41 and 58.73%, respectively). MB was completely degraded in 45 min using Tagetes erecta and 120 min using Lentinula edodes when subjected to solar irradiation.

Abstract
The aim of this work is to comprehend the biphasic reaction systems through another perspective; the simultaneous purification and production of carbohydrates during the pretreatment of biomass. A dilute acid hydrolysis of almond shells in a 2-Methyltetrahydrofuran/H2O system was optimised to maximise the obtaining of hemicellulose-derived monosaccharides with the minimum formation of degradation products. The optimised conditions of the biphasic reaction system, which produced 205.3 g hemicellulose-derived monosaccharides/Kg almond shells, were replicated in a monophasic reaction system to assess the benefits of the biphasic reaction systems. The latest system allowed the removal of 85.3% of the furans generated during the dilute acid hydrolysis, creating antioxidant extract, together with the catalysis of the hydrolysis of the hemicelluloses in a 20%. Therefore, the proposed process could become a promising method to purify carbohydrates with an environmentally friendly procedure that allowed the obtaining of multiple added-value products in a single step.

Abstract
This study deals with the development and mechanical characterization of innovative starch- and gelatin-based hydrogels enriched with hydrothermal aqueous extracts from Paulownia (i.e., bark, leaves, petioles). The color, rheology, and texture properties of formulated biopolymer-based hydrogels depending on the processing conditions of the extracts was evaluated for the different Paulownia fractions. Results indicated that a clear impact on color features of the tested hydrogels was observed with the incorporation of Paulownia extracts. Rheological testing showed that weak and intermediate strength hydrogels were identified for starch- and gelatin-based hydrogels independently of used extract. A relevant softening of all gelled matrices was observed in the presence of recovered liquor extracts involving the following trend (leaves > barks > petioles). For all fractions, the highest viscoelastic features were achieved for hydrogels made with extracts recovered at 140 °C. Texture outcomes confirmed the rheological achievements. No syneresis was observed in developed hydrogels after two weeks of cold storage.
