Abstract
Europe's semi-natural grasslands support notably high levels of temperate biodiversity across multiple taxonomic groups. However, these ecosystems face unique conservation challenges. Contemporary agricultural practices have replaced historical traditional low-intensity agriculture in many regions, resulting in a spectrum of management intensities within these ecosystems, ranging from highly intensive methods to complete abandonment. Paradoxically, both extremes along this spectrum of management intensity can be detrimental to biodiversity of semi-natural grasslands. Moreover, while anthropogenic climate change is an overarching threat to these ecosystems, rapid changes in land use and its intensity often present more immediate pressures. Often occurring at a faster rate than climate change itself, these land-use changes have the potential to rapidly impact the biodiversity of these grasslands. Here, we divide the ecological processes, threats, and developments to semi-natural grasslands into three sections. First, we examine the different impacts of agricultural intensification and abandonment on these ecosystems, considering their different consequences for biodiversity. Second, we review seminal works on various evidence-based management practices and offer a concise summary that provides support for various conservation and management strategies. However, the socio-economic factors that drive both abandonment and intensification in semi-natural grasslands can also be used to develop solutions through strategic governmental and non-governmental interventions. Accordingly, we conclude with a way forward by providing several key policy recommendations. By synthesizing existing knowledge and identifying research gaps, this essay aims to provide valuable insights for advancing the sustainable management of semi-natural grasslands.

Abstract
The objective of this study was to examine the impact of stage of lactation (early, mid and late) and proportion of pasture in the cows diet (high: GRS, medium: PMR and no: TMR) on the composition and quality of Cheddar cheese. Triplicate trials were carried out in each stage of lactation, and milk protein and fat contents were standardized for Cheddar cheese manufacture at pilot scale. As cheese milks were standardized for milk fat and protein contents, gross composition did not differ as a result of diet. Fatty acid profiles of GRS cheese were significantly different from TMR, while PMR profiles were less distinct and more similar to both GRS and TMR profiles, as illustrated by partial least squares discriminatory analysis. Fatty acids including CLA C18:2 cis-9, trans-11, C22:1 n-9 and C18:3 n-3 were most influential in this separation of profiles. Fatty acid profiling revealed that GRS derived cheese contained higher proportions of nutrients considered beneficial for human health including higher proportions of unsaturated fatty acids and omega-3 fatty acids. A biomarker model utilizing the proportions of 5 fatty acids was constructed and was effective at distinguishing between cheese of GRS, TMR and PMR feeding systems. Proportions of ρ-κ-casein, αs2-casein and αs1-casein in cheese also differed between diets while proportions of ρ-κ-casein, αs1-casein and β-casein were lowest in late lactation cheese. The impact of diet was less influential compared with that of stage of lactation on the ripening characteristics of cheese. An index of primary proteolysis was highest in late lactation cheese. The peptides derived from the proteolysis of κ-casein and β-casein and levels of secondary proteolysis, in particular, the proportions of 12 free amino acids were most influenced by stage of lactation. Overall this study demonstrated the effects of increasing pasture allowance and stage of lactation on the nutritional quality and ripening properties of Cheddar cheese.

Abstract
There is an increasing consumer desire for pasture-derived dairy products, as outdoor pasture-based feeding systems are perceived as a natural environment for animals. Despite this, the number of grazing animals globally has declined as a result of the higher milk yields achieved by indoor TMR feeding systems, in addition to the changing climatic conditions and lower grazing knowledge and infrastructure. This has led to the development of pasture-fed standards, stipulating the necessity of pasture and its minimum requirements as the primary feed source for products advertising such claims, with various requirements depending on the region for which it was produced. This work investigates the differences in the composition and techno-functional properties of butters produced from high, medium and no pasture allowance diets during early, mid, and late lactation. Butters were produced using milks collected from 3 feeding systems: outdoor pasture grazing (high pasture allowance); indoor TMR (no pasture allowance); and a partial mixed ration (medium pasture allowance) system, which involved outdoor pasture grazing during the day and indoor TMR feeding at night. Butters were manufactured during early, mid, and late lactation. Creams derived from TMR feeding systems exhibited the highest milk fat globule size. The fatty acid profiles of butters also differed significantly as a function of diet and could be readily discriminated by partial least squares analysis. The most important fatty acids in such an analysis, as indicated by their highest variable importance projection scores, were CLA C18:2 cis-9,trans-11 (rumenic acid), C16:1n-7 trans (trans-palmitoleic acid), C18:1 trans (elaidic acid), C18:3n-3 (α-linolenic acid), and C18:2n-6 (linoleic acid). Increasing pasture allowances resulted in reduced crystallization temperatures and hardness of butters and concurrently increasing the "yellow" color. Yellow color was strongly correlated with Raman peaks commonly associated with carotenoids. The milk fat globule size of cream decreased with advancing stage of lactation and churning time of cream was lowest in early lactation. Differences in the fatty acid and triglyceride contents of butter as a result of lactation and dietary effects demonstrated significant correlations with the hardness, rheological, melting, and crystallization profiles of the butters. This work highlighted the improved nutritional profile and functional properties of butter with increasing dietary pasture allowance, primarily as a result of increasing proportions of unsaturated fatty acids. Biomarkers of pasture feeding (response in milk proportionate to the pasture allowance) associated with the pasture-fed status of butters were also identified as a result of the significant changes in the fatty acid profile with increasing pasture allowance. This was achieved through the use of 3 authentic feeding systems with varying pasture allowances, commonly operated by farmers around the world and conducted across 3 stages of lactation.

Abstract
Human health and diet are closely linked. The diversity of diets consumed by humans is remarkable, and most often incorporates both animal and plant-based foods. However, there has been a recent call for a reduced intake of animal-based foods due to concerns associated with human health in developed countries and perceived impacts on the environment. Yet, evidence for the superior nutritional quality of animal-sourced food such as meat, milk, and eggs, compared with plant-based foods, indicates that consumption of animal-sourced food should and will continue. This being the case, the aim here is to examine issues associated with animal-sourced foods in terms of both the quantification and mitigation of unintended consequences associated with environment, animal health, and herd management. Therefore, we examined the role of animal proteins in human societies with reference to the UN-FAO issues associated with animal-sourced foods. The emphasis is on dominant grazed pastoral-based systems, as used in New Zealand and Ireland, both with temperate moist climates and a similar reliance on global markets for generating net wealth from pastoral agricultural products. In conclusion, animal-sourced foods are shown to be an important part of the human diet. Production systems can result in unintended consequences associated with environment, animal health, and herd management, and there are technologies and systems to provide solutions to these that are available or under refinement.

Abstract
Pasture access can benefit dairy cows' behavior, health, and welfare, but herds are increasingly housed indoors full-time. Recent infrared thermal-imaging (thermography) studies suggest that higher eye temperatures may be a physiological indicator of chronic stress. We, therefore, hypothesized that, compared to cows with pasture access, cows housed indoors full-time would have higher eye temperatures. In a two-phase crossover experiment, 29 Holstein-Friesian dairy cows experienced 18 days of overnight pasture access and 18 days of full-time indoor housing. We measured each animal's eye temperature 16 times (eight/phase). During Phase One, cows with pasture access had higher eye temperatures than cows housed indoors full-time (contrary to our hypothesis). However, during Phase Two, cows with pasture access had lower eye temperatures than cows housed indoors full-time. It is, therefore, unclear whether eye temperature reflected disparities in dairy cow welfare between different housing treatments.

Abstract
This study investigated the effects of diet and stage of lactation (SOL) on sensory profiles, texture, volatile profiles, and colour of Cheddar cheese. Cheddar cheese was manufactured from early-, mid-, and late-lactation milk obtained from seasonally calved cows (n = 54). Cows were assigned a diet; group 1: perennial ryegrass (GRS), group 2: total mixed ration (TMR), and group 3: partial mixed ration (PMR). Instrumental analysis was performed at 270 days (mature Cheddar). Sensory evaluation took place after 548 days (extra mature Cheddar). Toluene was the only volatile compound that was significantly influenced by diet. The trained panel rated early-lactation cheese as stronger than mid- and late- for cowy/barny flavour and late-lactation cheese as sweeter than early- and mid-lactation cheese. Mid-lactation cheese was liked least overall. Early-lactation cheeses were rated higher for 'crumbly' texture than mid- and late. Diet affected consumer ratings, with GRS and PMR cheese rated as more intense than TMR for flavour, aftertaste, and saltiness. Consumers reported that TMR cheese was lighter in colour compared to GRS cheese, which was supported by instrumental analysis. Consumers perceived GRS as more springy and less crumbly than TMR and PMR, while Texture Profile Analysis indicated that TMR was harder than GRS. Consumer segmentation was observed with two clear preference groups, one preferring GRS and one preferring TMR. For both groups, 'taste' seemed to be the main driver of liking, highlighting that consumer preference is most impacted by individual taste preferences.

Abstract
Milk is one of the most valuable products in the food industry with most milk production throughout the world being carried out using conventional management, which includes intensive and traditional systems. The intensive use of fertilizers, antibiotics, pesticides and concerns regarding animal health and the environment have given increasing importance to organic dairy and dairy products in the last two decades. This review aims to compare the production, nutritional, and compositional properties of milk produced by conventional and organic dairy management systems. We also shed light on the health benefits of milk and the worldwide scenario of the organic dairy production system. Most reports suggest milk has beneficial health effects with very few, if any, adverse effects reported. Organic milk is reported to confer additional benefits due to its lower omega-6-omega-3 ratio, which is due to the difference in feeding practices, with organic cows predominantly pasture fed. Despite the testified animal, host, and environmental benefits, organic milk production is difficult in several regions due to the cost-intensive process and geographical conditions. Finally, we offer perspectives for a better future and highlight knowledge gaps in the organic dairy management system.

Abstract
Dairy cows are highly motivated to access pasture and have a partial preference for alternative forms of outdoor access (e.g., deep-bedded outdoor sand or wood-chip packs). In addition, Canadians value the provision of outdoor access to dairy cows as they perceive it as important for good cow welfare. In contrast to Europe, Oceania, and the United States, little data exist on the use of outdoor access on Canadian dairy farms. Therefore, our objective was to assess current outdoor access practices for dairy cows in Canada. An online questionnaire was used to determine housing and outdoor access practices for lactating cows, dry cows, pregnant heifers, and weaned, nonpregnant heifers on Canadian dairy farms. The questionnaire was distributed by the 10 provincial milk boards between November 2020 and August 2021, resulting in an 8.9% response rate (n = 903 completed questionnaires). In total, 75% (n = 675) of respondents provided some form of outdoor access to at least 1 cattle class on their farm. Pasture was the most frequently used form of outdoor access for all cattle classes. Based on a weighted average, a total of 29% and 48% of Canadian dairy farms provided lactating and dry cows, respectively, access to pasture; for youngstock, these numbers were 48% and 27% for pregnant heifers and weaned, nonpregnant heifers, respectively. Herd size (for each cow class), indoor housing system, and region were all associated with the provision of pasture. Farms with larger lactating herds less often provided access to pasture; larger herd sizes in terms of weaned, nonpregnant heifers, pregnant heifers, and dry cows were also associated with a lower likelihood of access to pasture. Farms using indoor bedded pack housing for their lactating cows more often provided pasture to this cattle class than farms with freestall or tiestall housing; this likelihood did not differ between farms with tie or freestall housing for this cattle class. Dry cows or pregnant heifers housed in a tiestall were more often provided pasture than freestall-housed dry cows or pregnant heifers. Housing type for weaned, nonpregnant heifers was not associated with the likelihood of pasture provision. Farms in British Columbia or on Canada's East Coast (i.e., Nova Scotia, New Brunswick, and Prince Edward Island) more often provided lactating cows pasture compared with farms in other regions. For the other 3 cattle classes, farms on the East Coast of Canada more often provided pasture than farms in other parts of Canada. These results will inform future decisions regarding outdoor access for Canadian dairy cattle and may also aid in identifying future areas of research. For example, our results may aid in designing housing systems that facilitate outdoor access in larger herds and in areas that are subject to more extreme weather conditions.

Abstract
Understanding the costs of emission abatement measures is essential for devising reduction efforts. It allows to identify cost-effective solutions to achieve target values set by international agreements or national policies. This work aims to summarize and discuss the current knowledge on costs and effects associated with selected ammonia (NH3) mitigation measures in livestock production through comparison of country-specific and model-estimated values. Often, large differences appear between the results of individual countries, also in comparison with model results that are generally better harmonized between countries. It seems that different system boundaries in cost assessments, but also different geographic and structural conditions create perceived as well as real cost differences, also caused by the variability of individual situations. Our results are robust with respect to identifying feeding strategies as the most cost-effective, but results for other mitigation options do not show any clear trends, thus making it difficult to distinguish further cost-effective solutions. We point out and discuss some key aspects which may affect estimates of national costs, leading to challenges with the interpretation of final results. Our study concludes that further and more consistent assessments (e.g. standardized protocols) are needed to improve the evaluation base for other individual abatement options, including options that are under development.

Abstract
The objective of this study was to examine the impact of increasing proportions of grazed pasture in the diet on the composition, quality, and functionality of bovine milk across a full lactation. Fifty-four spring-calving cows were randomly assigned to 1 of 3 groups (n = 18), blocked on the basis of mean calving date (February 15, 2020 ± 0.8 d), pre-experimental daily milk yield (24.70 ± 3.70 kg), milk solids yield (2.30 ± 0.27 kg), lactation number (3.10 ± 0.13), and economic breeding index (182 ± 19). Raw milk samples were obtained weekly from each group between March and November 2020. Group 1 (GRS) consumed perennial ryegrass and was supplemented with 5% concentrates (dry matter basis); group 2 was maintained indoors and consumed a total mixed ration (TMR) diet consisting of maize silage, grass silage, and concentrates; and group 3 consumed a partial mixed ration diet (PMR), rotating between perennial ryegrass during the day and indoor TMR feeding at night. Raw milk samples consisted of a pooled morning and evening milking and were analyzed for gross composition, free amino acids, fatty acid composition, heat coagulation time, color, fat globule size, and pH. The TMR milks had a significantly higher total solids, lactose, protein, and whey protein as a proportion of protein content compared with both GRS and PMR milks. The GRS milks demonstrated a significantly lower somatic cell count (SCC), but a significantly higher pH and b*-value than both TMR and PMR milks. The PMR milks exhibited significantly lower total solids and fat content, but also demonstrated significantly higher SCC and total free amino acid content compared with GRS and TMR. Partial least squares discriminant analysis of fatty acid profiles displayed a distinct separation between GRS and TMR samples, while PMR displayed an overlap between both GRS and TMR groupings. Variable importance in projection analysis identified conjugated linoleic acid cis-9,trans-11, C18:2n-6 cis, C18:3n-3, C11:0, and C18:2n-6 trans as the largest contributors to the variation between the diets. Milk fats derived from GRS diets exhibited the highest proportion of unsaturated fats and higher unsaturation, health-promoting, and desaturase indices. The lowest proportions of saturated fats and the lowest atherogenic index were also exhibited by GRS-derived milk fats. This work highlights the positive influence of grass-fed milk for human consumption through its more nutritionally beneficial fatty acid profile, despite the highest milk solid percentages derived from TMR feeding systems. Furthermore, this study demonstrates the proportional response of previously highlighted biomarkers of pasture feeding to the proportion of pasture in the cow's diet.

Abstract
Precision Livestock Farming (PLF) techniques include sensors and tools to install on livestock farms and/or animals to monitor them and support the decision making process of farmers, finally early detecting alerting conditions and improving the livestock efficiency. Direct consequences of this monitoring include enhanced animal welfare, health and productivity, improved farmer lifestyle, knowledge, and traceability of livestock products. The indirect consequences, instead, include improved Carbon Footprint and socio-economic indicators of livestock products. In this context, the aim of this paper is to develop an indicator applicable to dairy cattle farming that takes into account concurrently these indirect consequences. The indicator was developed combining the three sustainability pillars (with specific criteria): environmental (carbon footprint), social (5 freedoms of animal welfare and antimicrobial use) and economic (cost of technology and manpower use). The indicator was then tested on 3 dairy cattle farms located in Italy, where a baseline traditional scenario (BS) was compared with an alternative scenario (AS) where PLF techniques and improved management solutions were adopted. The results highlighted that the carbon footprint reduced in all AS by 6-9 %, and the socio-economic indicators entailed improvements in animals and workers welfare with some differences based on the tested technique. Investing in PLF techniques determines positive effects on all/almost all the criteria adopted for the sustainability indicator, with case-specific aspects to consider. Being a user-friendly tool that supports the testing of different scenarios, this indicator could be used by stakeholders (policy makers and farmers in particular) to identify the best direction towards investments and incentive policies.

Abstract
Understanding farmers' attitudes towards traits is critical for developing appropriate breeding goals for dairy production. In response to a research gap in regards to the influence of farmers' knowledge of breeding tools, this study aimed to determine the effect of farmers' knowledge on their attitudes towards the use of breeding tools and traits in typical family-owned farms in Slovenia. An online questionnaire was sent to dairy farmers affiliated with Slovenian breeding associations, and 256 dairy farmers responded. The analysis was conducted in three steps. First, the basic response patterns according to the farmers' knowledge level were determined using latent class analysis. Second, farmers' attitudes towards breeding tools were assessed by 15 statements using principal component analysis. Finally, we were interested in the relationship between farmers' attitudes and knowledge about selection. The results showed that farmers had more knowledge about the benefits of genomic selection, followed by general knowledge about breeding values and the definition of genomic selection, and they had the least knowledge about the reference population. Farmers with more knowledge were statistically significantly more likely than farmers with less knowledge to have higher education, be younger, have a larger herd size, have higher milk production per cow, have the intent to increase herd size and milk quantity, and use genomically tested bulls. No significant relationship was found between belonging to a specific knowledge class and the main breed in the herd, the farmer's gender, production system, or farming in less-favoured areas. The results also show that farmers basically agree that they need written recorded performance data about a bull/cow to know exactly how good the animal is, that the genetic merit (breeding value) of bulls/cows adds to the performance of their progeny, that it is very important to maintain the breed characteristics of bulls/cows, that cooperation in being able to compare animals with other farmers is essential for improving herd performance, and that the possibilities of selecting dairy cows with genomic selection and monogenetic traits must be fully exploited, indicating a positive attitude towards genomic selection. The level of knowledge was shown to influence attitudes towards various aspects of breeding. It was found that the higher the level of knowledge, the more positive the attitude towards genetic and genomic selection, and the more negative the attitude towards traditional selection.

Abstract
This Scientific Opinion addresses a European Commission's mandate on the welfare of dairy cows as part of the Farm to Fork strategy. It includes three assessments carried out based on literature reviews and complemented by expert opinion. Assessment 1 describes the most prevalent housing systems for dairy cows in Europe: tie-stalls, cubicle housing, open-bedded systems and systems with access to an outdoor area. Per each system, the scientific opinion describes the distribution in the EU and assesses the main strengths, weaknesses and hazards potentially reducing the welfare of dairy cows. Assessment 2 addresses five welfare consequences as requested in the mandate: locomotory disorders (including lameness), mastitis, restriction of movement and resting problems, inability to perform comfort behaviour and metabolic disorders. Per each welfare consequence, a set of animal-based measures is suggested, a detailed analysis of the prevalence in different housing systems is provided, and subsequently, a comparison of the housing systems is given. Common and specific system-related hazards as well as management-related hazards and respective preventive measures are investigated. Assessment 3 includes an analysis of farm characteristics (e.g. milk yield, herd size) that could be used to classify the level of on-farm welfare. From the available scientific literature, it was not possible to derive relevant associations between available farm data and cow welfare. Therefore, an approach based on expert knowledge elicitation (EKE) was developed. The EKE resulted in the identification of five farm characteristics (more than one cow per cubicle at maximum stocking density, limited space for cows, inappropriate cubicle size, high on-farm mortality and farms with less than 2 months access to pasture). If one or more of these farm characteristics are present, it is recommended to conduct an assessment of cow welfare on the farm in question using animal-based measures for specified welfare consequences.

A multi-centre study was set up to understand the factors affecting European dairy cattle farmers' adoption of diagnostics and to gauge for differences between regions. The data were collected through a multi-lingual survey by participating countries of the European Co-operation in Science and Technology (COST) action COMbatting Anthelmintic Resistance in ruminants (COMBAR). Four countries provided sufficient data to be included in the data analysis: Norway, Italy, Germany and Austria. Three models were estimated and validated through structural equation modelling. Norway, along with Germany and Austria (pooled dataset) showed similar trends that align with previous studies. AR risk perception had no influence on the adoption intention of diagnostics, a positive influence was found for attitude towards diagnostics and subjective norms (i.e., perceived opinion of others), and a negative influence of attitudes towards anthelminthics. Additionally, routine (i.e., perception of the current treatment) had an indirect effect on adoption intention through attitudes. Italy's data deviated from these findings, presenting a positive effect of the perceived severity of AR, and perceived behavioural control (i.e., perceived ability to perform a specific behaviour) on adoption intention of diagnostics. Finally, Norway's data set allowed for inclusion of a measurement of current behaviour in the model, identifying a direct positive effect of the perceived actual behaviour of other farmers on their own behaviour.

Abstract
We propose to consider semi-natural habitats-hotspots for biodiversity-being caught in a socio-ecological extinction vortex, similar to the phenomenon described for species threatened with extinction. These habitats are essentially socioecological systems, in which socioeconomic drivers are interlinked with ecological processes. We identify four highly interlinked and mutually reinforcing socio-economic processes, pertaining to the importance of semi-natural habitats for (i) agricultural production, (ii) policy, research and development; (iii) vocational education in the fields of agricultural sciences and (iv) public's experiences with semi-natural habitats. Evidence from six countries in the boreal region demonstrates that recent slowing down or even reversal of two processes are insufficient to stop the extinction vortex phenomenon. We suggest research directions to ascertain the phenomenon, monitor its development and develop proactive actions to weaken the vortex. It is highly plausible that interventions directed at most, if not all, of the key vortex processes are needed to reverse the overall deteriorating trends of a socio-ecological system.

Abstract
Pasture is generally perceived as positive for dairy cow welfare, but it nevertheless exposes cows to heat, parasites, and other challenges. This review is intended for people ready to design comprehensive protocols for assessing the welfare of dairy cows at pasture. We provide an overview of the benefits and risks of pasture for cows, and then go on to identify the available and feasible measures for assessing cow welfare at pasture and the gaps that need to be addressed to develop specific welfare measures. Some of the measures from on-farm welfare assessment protocols designed for indoor use (e.g. Welfare Quality®) are relevant for cows at pasture (e.g. lameness scoring). However, the timing, location and/or method for certain measures (e.g. observation of social behaviour) need to be adapted to the pasture context, as cows at pasture can roam over a large area. Measures to address specific pasture-related risks (e.g. heat stress, biosecurity) or benefits (e.g. expression of a wide range of behaviours) should be implemented in order to capture all dimensions of cow welfare at pasture. Furthermore, cow welfare is liable to vary over the grazing season due to changes in weather conditions, grass quality and pasture plots that induce variations in lying surface conditions, food availability, distance to walk to the milking parlour, and so on. It is therefore important to investigate the variability in different welfare measures across the pasture season to check whether they hold stable over time and, if not, to determine solutions that can give an overview across the grazing season. Sensors offer a promising complement to animal and environment observations, as they can capture long-term animal monitoring data, which is simply not possible for a one-day welfare-check visit. We conclude that some measures validated for indoor situations can already be used in pasture-based systems, while others need to be validated for their fitness for purpose and/or use in pasture conditions. Furthermore, thresholds should probably be determined for measures to fit with pasture contexts. If all measures can be made adaptable to all situations encountered on farms or variants of the measures can at least be proposed for each criterion, then it should be possible to produce a comprehensive welfare assessment protocol suitable for large-scale use in near future.

Abstract
Investing labor time in herbage measurements is important for precision pasture management. In this study, the labor input of three smart herbage measurement tools—multispectral imagery linked to an unmanned aerial vehicle (UAV), a semi-automated rising plate meter (RPM), and near-infrared reflectance spectroscopy (NIRS) of cut herbage samples—and of direct observation was modeled based on the REFA work element method. Three to five users were observed during work execution to identify best-practice workflows. Time measurements were conducted using video footage. The resulting standard times of work elements were used to model labor input for herbage measurements in different farm sizes (i.e., milking platforms of 6–100 ha) and subdivisions of a farm’s milking platform (i.e., 4–45 paddocks). Labor time requirement differed between the smart farming tools (0.7–5.9 h) depending on the farm size and milking platform scenario. The labor time requirement increased for all tools with an increase in farm size and was lowest for the RPM. For the UAV tool, it did not increase noticeably when the division of the milking platform changed. Nevertheless, the potential to save time was identified for the UAV and the NIRS. Therefore, the automation of certain steps in the workflows would contribute to sociotechnological sustainable pasture management.

Abstract
Ireland’s grass-based dairy system is relatively unique in industrialised countries in its focus on producing milk from grazed grass rather than increasing yields through non-forage feed. The environmental benefits of a grass-based dairy system have been promoted within Ireland and abroad. However, the means by which grass is produced is important. There have been environmental concerns about water pollution from nutrient leaching and increasing greenhouse gas emissions from the increased number of cows and higher fertiliser application in the Irish dairy sector. This paper uses qualitative interviews with Irish dairy farmers to assess: (1) how can we understand Irish farmer attitudes towards the grass-based system within a ‘good farmer’ theoretical framework? (2) How do concepts of extensive and intensive production fit with good farming norms within the grass-based system? (3) How could cultivation of multispecies swards, including legumes, fit with existing notions of good farming? The research finds that there had been a concerted efforts by researchers, advisory bodies and other actors to foster a definition of good farming to mean good grass management. This definition of good farming excluded the use of feed inputs over a certain level to increase yields but included the use of fertiliser to maximise grass production. There is scope to change the definition of good farming within the industry to include minimal use of fertiliser, for instance through the cultivation of multispecies swards including legumes and the skills and knowledge this involves. In terms of policy implications, the paper identified three strategies for government and industry to facilitate a definition of good farming which involves low fertiliser use: emphasising the cost-saving aspect of reducing fertiliser; identifying visible symbols of ‘good farming’ using multispecies swards; and co-producing the definition of good farming with a diverse range of stakeholders including farmers.

Abstract
Pasture-based dairy systems aim to maximize the proportion of grazed pasture in the cow's diet by having a compact calving season that coincides with the onset of the grass growing season. In Ireland, where pasture-based systems are dominant, a key performance indicator that reflects the degree of compact calving is referred to as 6-wk calving rate (6-wk CR). Although the industry target is 90%, the national average 6-wk CR in Ireland is currently 67%. The aim of this study was to use qualitative research to understand in depth farmers' experiences in implementing a high 6-wk CR. Ten case-study dairy farmers were interviewed using the biographical narrative interpretive method. We identified 5 broad and often interrelated themes evoked by farmers regarding 6-wk CR: the "good" farmer; support networks; free time and family time; simplicity of a structured system; and profitability and monetary gain. The findings of this study identify complexities and challenges at farm level when it comes to increasing 6-wk CR, such as increased workload and challenges associated with large numbers of male calves born during a condensed calving season. Benefits experienced by farmers as a result of increasing 6-wk CR included increased days in milk and consequently improved cash flow as well as increased grass utilization. Our findings are of interest to researchers and extension agents involved in programs concerned with reproductive management in pasture-based dairy systems.

Abstract
Modelling plays an important role in assessing disease risks and the efficacy of preventative actions. However, the extent to which existing models meet the needs of different groups of dairy farmers around disease prevention is unclear. A questionnaire gathered information on disease prevention actions undertaken by organic and conventional dairy farmers in Spain and the UK, and on their information preferences and needs in relation to such actions. A systematic review of animal health modelling articles was undertaken to compare the expressed needs of dairy farmers for information on disease prevention, with the focus and outputs of existing models. Farmer groups differed in needs when planning disease prevention interventions. Most farmers sourced animal health information from veterinarians. Farmers preferred to use practical experience to judge the efficacy of change. To fulfil the expressed needs of dairy farmers, models need to address specific farming contexts and non-economic impacts of change.

Abstract
This study assesses the practices and views of Scottish dairy farmers relating to pasture-based and indoor systems. There are the debates about the environmental, economic and animal welfare implications of these systems. Indoor dairy farming is a contentious practice among the public. While this controversy is sometimes represented as a lack of public understanding, there is a need for more research on farmers' views to facilitate discussion in the industry. A survey was posted to 909 dairy farmers in Scotland with questions about their grazing practices and attitudes to grazing and indoor systems. 254 surveys were completed, online and in paper form. There was a 26% response rate to the paper version of the survey. The results showed that 19% of respondents housed some or all the cows all year-round. 68% agreed or strongly agreed that cows should graze for part of the year and 51% agreed or strongly agreed that welfare was better if cows grazed for part of the year. These views coexisted with the view that management was more important than the type of system for determining profitability or welfare outcomes (83% and 82% strongly agree or agree respectively). Respondents whose system involved grazing and respondents who had spent longer in farming were moderately more likely to agree that cows should have access to pasture, and slightly less likely to agree that management was more important than system for determining welfare outcomes. The results indicate that the picture is more complicated than the public rejecting indoor dairy farming and those in the industry accepting it. The results showed that a majority preference for cows to graze co-existed with the view that management was more important than system. In terms of industry and policy recommendations, the research suggests that measures should be taken to safeguard farmers' ability to graze through for instance research and advisory support on grazing; ensuring different systems are not penalised in the development of dairy sector environmental measures and recommendations; and potentially supply chains that financially rewards farmers for grazing.

Abstract
Farmyards are commonly conceptualized as point sources of nutrient pollution nested within the wider agricultural landscape. However, within farmyards there are individual sources and delivery pathways, each of which is affected by a range of management practices and infrastructure. Rainfall mobilizes these nutrients, which may then be delivered to a receptor or to the wider drainage network. As such, the nutrient transfer continuum (NTC), which has been established as a framework to understand and mitigate nutrient loss at a landscape scale, can be similarly applied to disentangle the stages of nutrient transfer from farmyards. The NTC differentiates nutrient transfer into source, mobilization, delivery, and impact stages. This differentiation allows targeting of mitigation measures and evaluation of costs and benefits. This review paper applies the NTC template to farmyard nitrogen and phosphorus transport to conceptualize causative factors and to identify mitigation options.

Abstract
Water pollution by veterinary antibiotics (VAs) resulting from livestock production is associated with severe environmental and human health risks. While upward trends in global animal product consumption signal that these risks might exacerbate toward the future, VA related water pollution is currently insufficiently understood. To increase this understanding, the present research assesses processes influencing VA pollution from VA administration to their discharge into freshwater bodies, using an integrated modelling approach (IMA). For the VAs amoxicillin, doxycycline, oxytetracycline, sulfamethazine, and tetracycline we estimate loads administered to livestock, excretion, degradation during manure storage, fate in soil and transport to surface water. Fate and transport are modelled using the VA transport model (VANTOM), which is fed with estimates from the Pan-European Soil Erosion Risk Assessment (PESERA). The grey water footprint (GWF) is used to indicate the severity of water pollution in volumetric terms by combining VA loads and predicted no effect concentrations. We apply our approach to the German-Dutch Vecht river catchment, which is characterized by high livestock densities. Results show a VA mass load decrease larger than 99% for all substances under investigation, from their administration to surface water emission. Due to metabolization in the body, degradation during manure storage and degradation in soil, VA loads are reduced by 45%, 80% and 90% on average, respectively. While amoxicillin and sulfamethazine dissipate quickly after field application, significant fractions of doxycycline, oxytetracycline and tetracycline accumulate in the soil. The overall Vecht catchment's GWF is estimated at 250,000 m3 yr-1, resulting from doxycycline (81% and 19% contribution from the German and Dutch catchment part respectively). Uncertainty ranges of several orders of magnitude, as well as several remaining limitations to the presented IMA, underscore the importance to further develop and refine the approach.

Abstract
Grazing has become a less common dairy farming practice in most European countries. Ireland is an exception with its predominantly grass-based system. After the removal of European milk quotas, farmers were encouraged to expand within a grass-based paradigm rather than pursuing yield increases through feeding more concentrate. This research assessed Irish dairy farmer attitudes toward grass-based, higher-feed-input, and indoor paradigms. A paradigm of agriculture is a shared understanding about how agriculture should be carried out. Grass-based, higher-feed-input, and indoor paradigms propose different solutions to economic, environmental, and animal-welfare challenges facing dairy farming. An online survey was distributed to Irish dairy farmers in August 2018, which received 396 responses. There was support among respondents for the grass-based paradigm of maximizing milk from forage and minimizing concentrate use, with 73% of respondents strongly agreeing or agreeing this was the best option for Irish dairy farmers. The results suggest there were not significant ideological disagreements among respondents about the economic, environmental, and animal-welfare merits of different paradigms. Rather, the results showed respondents supported grass-based or higher-feed-input paradigms for different reasons as follows: profitability and lifestyle for the former, and the ability to expand production without access to additional land and less dependence on weather for the latter. These findings could be of interest in countries where grazing is less widely practiced, but where there is a desire to increase the uptake of grazing practices. Messaging about the profitability and simplicity of the grass-based system clearly resonated with respondents, and could be replicated in other countries. There is a desire within the Irish government, industry, and advisory bodies to keep dairy expansion within a grass-based paradigm. The results suggested individuals may diverge from this paradigm not because they disagree with messaging about its benefits, but rather if difficulties with land access or managing weather variability lead them to expand through feeding more concentrate. To maintain production within the grass-based paradigm, more opportunities could be created for farmers who are restricted from further expansion, such as alternative supply chains or payments for environmental services.

Abstract
Parasiticidal fungi have been used in several in vivo experiments in livestock farms worldwide, constituting an effective tool for the biocontrol of gastrointestinal parasites in grazing animals. In the first year of study, two groups of eight first-season pasturing ewe lambs infected by strongyles were dewormed with albendazole, and then, the test group received an oral dose of 106 chlamydospores of Mucor circinelloides and 106 Duddingtonia flagrans individually and thrice a week from mid-September to May (FS1), while the control group remained without fungi (CT1). In the second year, two new groups of first-season grazing ewe lambs were treated with ivermectin and subjected to the same experimental design (FS2 and CT2, respectively). The anthelmintic efficacy was 96.6% (CT1), 95.6% (FS1), 96.1% (CT2), and 95.1% (FS2). The counts of strongyle egg output increased in the control groups (CT1 and CT2) throughout the study and reached numbers higher than 600 eggs per gram of feces (EPG), while in FS1 and FS2, they were <250 EPG. The values of red blood cell parameters registered for CT1 and CT2 were lower than those of the reference standards, while a significant increment was recorded in FS1 and FS2, and values within the physiological range were attained. It is concluded that integrating efficient anthelminthic deworming with rotational pasturing and the regular intake of chlamydospores of M. circinelloides and D. flagrans provides a helpful strategy for maintaining low levels of strongyle egg output in first-season grazing ewe lambs and improves their health status.

Abstract
Simple Summary There are various systems available for health monitoring and heat detection in dairy cows. By continuously monitoring different behavioral patterns (e.g., lying, ruminating, and feeding), these systems detect behavioral changes linked to health disorders and estrous. Most of the systems were developed for cows kept indoors, and only a few systems are available for pasture-based farms. The systems developed for the barn failed to detect the targeted behavior and thereby its changes on the pasture and vice versa. Therefore, our goal was to train and validate a machine learning model for the automated prediction of lying behavior in dairy cows kept on pastures, as well as indoors. Data collection was conducted on three dairy farms where cows were equipped with the collar-based prototype of the monitoring system and recorded with cameras in parallel. The derived dataset was used to develop the machine learning model. The model performed well in predicting lying behavior in dairy cows both on the pasture and in the barn. Therefore, the building of the model presents a successful first step towards the development of a monitoring system for dairy cows kept on pasture and in the barn. Abstract Monitoring systems assist farmers in monitoring the health of dairy cows by predicting behavioral patterns (e.g., lying) and their changes with machine learning models. However, the available systems were developed either for indoors or for pasture and fail to predict the behavior in other locations. Therefore, the goal of our study was to train and evaluate a model for the prediction of lying on a pasture and in the barn. On three farms, 7–11 dairy cows each were equipped with the prototype of the monitoring system containing an accelerometer, a magnetometer and a gyroscope. Video observations on the pasture and in the barn provided ground truth data. We used 34.5 h of datasets from pasture for training and 480.5 h from both locations for evaluating. In comparison, random forest, an orientation-independent feature set with 5 s windows without overlap, achieved the highest accuracy. Sensitivity, specificity and accuracy were 95.6%, 80.5% and 87.4%, respectively. Accuracy on the pasture (93.2%) exceeded accuracy in the barn (81.4%). Ruminating while standing was the most confused with lying. Out of individual lying bouts, 95.6 and 93.4% were identified on the pasture and in the barn, respectively. Adding a model for standing up events and lying down events could improve the prediction of lying in the barn.

Abstract
The contributions that ruminant livestock make to greenhouse gas and other pollutant emissions are well documented and of considerable policy and public concern. At the same time, livestock production continues to play an important role in providing nutrient-rich foodstuffs for many people, particularly in less developed countries. They also offer a means by which plants that cannot be digested by humans, e.g. grass, can be converted into human-edible protein. In this review, we consider opportunities to improve nutrient capture by ruminant livestock through new feeds and feeding systems concentrating on intensive and semi-intensive systems, which we define as those in which animals are given diets that are designed and managed to be used as efficiently as possible. We consider alternative metrics for quantifying efficiency, taking into account resource use at a range of scales. Mechanisms for improving the performance and efficiencies of both individual animals and production systems are highlighted. We then go on to map these to potential changes in feeds and feeding systems. Particular attention is given to improving nitrogen use efficiency and reducing enteric methane production. There is significant potential for the use of home-grown crops or novel feedstuffs such as insects and macroalgae to act as alternative sources of key amino acids and reduce reliance on unsustainably grown soybeans. We conclude by highlighting the extent to which climate change could impact forage-based livestock production and the need to begin work on developing appropriate adaptation strategies.

Abstract
Dairy cows are highly motivated to access pasture, especially at night in summer. When pasture is not available, dairy cows show a partial preference for alternative types of outdoor access, spending half the night outside in summer on an outdoor sand or wood chip pack. However, many dairy farms do not provide cows outside access. To better understand reasons why dairy farmers choose to provide or not provide outdoor access, we studied the perspectives of dairy farmers located in the 4 Western Canadian provinces: British Columbia, Alberta, Saskatchewan, and Manitoba. Data were collected via (1) 11 focus group discussions with a total of 50 Western Canadian dairy farmers, and (2) semi-structured individual interviews with 6 dairy farmers of Hutterite colonies. Transcripts were analyzed using template analysis. Reasons to not provide outdoor access fell into 5 main themes: (1) adverse climate conditions, (2) negative implications of outdoor access for cow welfare including concerns about udder health, (3) concerns regarding decreases in profitability, (4) farm infrastructure not set up for outdoor access, and (5) higher ability to manage animals kept indoors. Reasons to provide outdoor access fell into the 5 main themes: (1) local climate conditions conducive for outdoor access, (2) beneficial effects of outdoor access on cow welfare including lower lameness prevalence, (3) increased profitability due to a premium milk price provided to farmers that allow pasture access to their cows, (4) farm infrastructure that is set up for outdoor access, and (5) easier management of animals outdoors. We conclude that the decision to provide outdoor access depends on how farmers weigh these factors given the constraints on their farm, as well as their personal beliefs and values.

Identification of discriminating behavioural and movement variables in lameness scores of dairy cows at pasture from accelerometer and GPS sensors using a Partial Least Squares Discriminant Analysis. Abstract
The behaviour and movement of lame dairy cows at pasture have been studied little, yet they could be relevant to improve the automatic detection of lameness in cows in pasture-based systems. Our aim in this study is to identify behavioural and movement variables of dairy cows at pasture that could discriminate lameness scores. Individual cow behaviours were predicted from accelerometer data and movements measured using GPS data. Sixty-eight dairy cows from three pasture-based commercial farms were equipped with a 3-D accelerometer and a GPS sensor fixed on a neck collar for 1-5 weeks, depending on the farm, in spring and summer 2018. A lameness score was assigned to each cow by a trained observer twice a week. Behaviours were predicted every 10 s based on accelerometer data, and then combined with the GPS position. Segmentation on behavioural time series was used to delineate each behavioural bout within each outdoor period. Thirty-seven behavioural and movement variables were then calculated from the behavioural bouts for each cow. A partial least square discriminant analysis was performed to identify the variables that best discriminate lameness scores. Time spent grazing, grazing bout duration, duration before lying down in the pasture, time spent resting, number of resting bouts, distance travelled during grazing, and dispersion were the most discriminant variables in the PLS-DA (VIP > 1). Severely lame cows spent 4.5 times less time grazing and almost twice as much time resting as their sound congeners, especially in the lying position. Exploratory behaviour was also reduced for both moderately and severely lame cows, resulting in 1.2 and 1.7 times less distance travelled respectively, especially during grazing. These variables could be used as additional variables to improve the performance of existing lameness detection devices in pasture-based systems.

Abstract
Seasonal calving, pasture-based dairy systems are widely practiced in countries with a temperate climate and plentiful rainfall such as Ireland and New Zealand. This approach maximizes milk production from pasture and, consequently, is a low-cost, low-input dairy production system. On the other hand, the majority of global milk supply is derived from high input indoor total mixed ration systems where seasonal calving is not practiced due to the dependence on ensiled silages, grains and concentrated feeds, which are available year-round. Synchronous changes in the macro and micronutrients in milk are much more noticeable as lactation progresses through early, mid and late stages in seasonal systems compared to non-seasonal systems-which can have implications on the processability and functionality of milk.

Abstract
Greenhouse gas (GHG) emissions from dairy farms are significant contributors to global warming. However, much of the published work on GHG reduction is focused on either methane (CH4) or nitrous oxide (N2O), with few, if any, considering the interactions that changes to farming systems can have on both gases. This paper takes the raw data from a year of activity on a 300-cow commercial dairy farm in Northern Ireland to more accurately quantify GHG sources by use of a simple predictive model based on IPCC methodology. Differing herd management policies are examined together with the impact of integrating anaerobic digestion (AD) into each farming system. Whilst significant success can be predicted in capturing CH4 and carbon dioxide (CO2) as biogas and preventing N2O emissions, gains made can be lost in a subsequent process, negating some or all of the advantage. The process of extracting value from the captured resource is discussed in light of current farm parameters together with indications of other potential revenue streams. However, this study has concluded that despite the significant potential for GHG reduction, there is little incentive for widespread adoption of manure-based farm-scale AD in the UK at this time.

Abstract
Allowing dairy cattle to access pasture can promote natural behaviour and improve their health. However, the psychological benefits are poorly understood. We compared a cognitive indicator of emotion in cattle either with or without pasture access. In a crossover experiment, 29 Holstein-Friesian dairy cows had 18 days of overnight pasture access and 18 days of full-time indoor housing. To assess emotional wellbeing, we tested cows on a spatial judgement bias task. Subjects learnt to approach a rewarded bucket location, but not approach another, unrewarded bucket location. We then presented cows with three "probe" buckets intermediate between the trained locations. Approaching the probes reflected an expectation of reward under ambiguity-an "optimistic" judgement bias, suggesting positive emotional states. We analysed the data using linear mixed-effects models. There were no treatment differences in latency to approach the probe buckets, but cows approached the known rewarded bucket slower when they had pasture access than when they were indoors full-time. Our results indicate that, compared to cattle housed indoors, cattle with pasture access display less anticipatory behaviour towards a known reward. This reduced reward anticipation suggests that pasture is a more rewarding environment, which may induce more positive emotional states than full-time housing.

Abstract
The objective of this study was to evaluate the effect of rolled barley supplementation on microbial composition and omasal flows of bacterial, protozoal, and nonmicrobial AA in cows fed fresh perennial ryegrass (Lolium perenne L.; PRG). Ten ruminally cannulated multiparous Holstein cows averaging (mean ± standard deviation) 49 ± 23 d in milk and 513 ± 36 kg of body weight were assigned to 1 of 2 treatments in a switchback design. The treatment diets were PRG only or PRG plus 3.5 kg of dry matter rolled barley (G+RB). The study consisted of three 29-d periods where each period consisted of 21 d of diet adaptation and 8 d of data and sample collection. A double-marker system was used to quantify nutrient flow entering the omasal canal along with 15N-ammonium sulfate to label and measure the microbial and nonmicrobial omasal flow of AA. Overall, rolled barley supplementation had no effect on the AA composition of the omasal liquid-associated and particle-associated bacteria. Rolled barley supplementation affected the AA concentrations of omasal protozoa; however, the differences were nutritionally minor. Particle-associated bacteria AA flow was increased for all AA, except for Trp and Pro, in cows fed the G+RB diet. Rolled barley supplementation had no effect on protozoal AA flow. On average, protozoa accounted for 23% of the microbial essential AA flow, which ranged from 17 to 28% for Trp and Lys, respectively. The flow of all AA in omasal true digesta increased in cows fed the G+RB diet compared with the PRG-only diet, resulting in a 228 g/d increase in total AA flow in cows fed the G+RB diet. This increase in total AA flow in cows fed the G+RB diet was due to an increase in microbial AA flow. Rolled barley supplementation had no effect on nonmicrobial AA flow. The nonmicrobial AA flow modestly contributed to total AA flow, accounting for 15.6% on average. These results indicated that extensive ruminal degradation of PRG AA occurred (83.5%), and we demonstrated that cows consuming PRG-based diets exhibit a large dependence on microbial AA to support metabolizable AA supply. Rolled barley supplementation can increase the omasal flow of microbial AA in cows consuming PRG-based diets. However, further research is required to elucidate if this increased AA supply can support higher milk yield under such dietary conditions.

Abstract
Simple Summary Pasture-raised beef and dairy products are valued by consumers for their taste and higher animal welfare standards. Pasture grazing can be optimized using virtual fencing technology. The use of virtual fencing to guide cattle on pasture can contribute to biodiversity conservation by protecting environmentally sensitive areas. Concerns exist about consumers’ acceptance of virtual fencing in beef and dairy production. To explore consumers’ perception of virtual fencing, German consumers’ responses to information material about virtual fencing were analyzed. The results showed respondents’ uncertainty about the implementation of the technology with regard to its effects on animal welfare and possible social impact. Respondents showed readiness to support pasture grazing with their purchase decisions, yet struggled to see their personal advantages from the use of a specific grazing management practice. Thus, practitioners should consider keeping the focus in communication with consumers not on the technology but on tangible benefits, such as quality of pasture-raised products. Furthermore, state support is argued to be necessary to encourage livestock practitioners to adopt virtual fencing in cattle grazing for biodiversity conservation. Abstract The share of cattle grazing on grassland is decreasing in many European countries. While the production costs of intensive stall-based beef and dairy systems are usually lower per kg product, grazing-based systems provide more ecosystem services that are valued by consumers. Innovative grazing systems that apply virtual fencing technology can improve animal welfare, optimize grassland use as pasture, and contribute to biodiversity conservation. Although consumer demand for pasture-raised products could promote animal-friendly practices, consumer perception of virtual fencing remains unknown. To address this gap in research, this study developed information brochures with different lines of argumentation and tested the responses of German consumers using concurrent think aloud protocols. The results demonstrated ambivalence in consumers’ attitudes to virtual fencing. The participants supported the idea of cattle pasturing to promote animal welfare and foster biodiversity declaring a willingness to contribute not only by paying price premiums for pasture-raised products but also through seeking other possibilities of action and participation. However, participants raised concerns about the effects on animal welfare and the social ramifications of the technology. The study offers recommendations for addressing these issues in communication and further contributes to the understanding of consumers’ perceptions of innovation in animal production.

Abstract
The use of precision technology is increasingly seen as an option to improve productivity, animal welfare, resource use efficiency, and workplace features on dairy farms. There is limited research related to longitudinal adoption patterns of precision dairy technologies and reasons for any patterns. The aim of this analysis was to investigate trends in technology adoption regarding both the amount (number of farms with a technology) and intensity (number of technologies per farm) of adoption. Surveys of parlor technology adoption were conducted on New Zealand dairy farms in 2008, 2013, and 2018, with 532, 500, and 500 respondents, respectively. Technologies were grouped into labor-saving (LS, such as automatic cluster removers) or data-capture (DC, such as in-line milk meters) categories. Trends were examined for farms that had only LS, only DC, or LS+DC technologies. Technology adoption increased over time; the likelihood of technology adoption in 2018 (and 2013 in parentheses) increased by 21 (22), 7 (68), and 378% (165) for LS, DC, and LS+DC technology groups, respectively, compared to 2008. Farms with LS+DC technologies also had a greater proportion of LS technologies compared to non-LS+DC farms, although this relationship declined over the 10-yr period. The use of a rotary versus herringbone parlor was estimated to be associated with 356 and 470% increase in the likelihood of adopting LS technologies and LS+DC, respectively, from 2008 to 2018. Regional differences in adoption were also found, with the likelihood of adopting DC and LS+DC technologies found to be 46 and 59% greater, respectively, in the South Island of New Zealand, compared to the base region of Waikato. The results highlight the importance of understanding spatial and temporal farm characteristics when considering future effect and adoption of precision dairy technologies. For example, the analysis indicates the occurrence of 2 trajectories to technology investment on farms, where larger farms are able to take advantage of technology opportunities, but smaller farms may be constrained by factors such as lack of economies of scale, limited capital to invest, and inability to retrofit technology into aging parlor infrastructure.

Abstract
Pasture access for dairy cows is highly valued both by cows and the public at large. When pasture access is not feasible, farmers can provide cows with alternative forms of outdoor access, such as an outdoor bedded pack, that may be easier to implement on some farms. We reviewed the literature on how lying, standing, walking, feeding, social, and estrus behaviors are influenced by pasture and other types of outdoor areas. Pasture allows the expression of grazing and can facilitate the expression of lying, standing, walking, and estrus behaviors. In addition, pasture can decrease the number of negative social interactions between cows, likely because more space per cow is provided than what is normally available indoors. The provision of soft flooring and an open space in outdoor bedded packs appears to provide some benefits for lying, standing, and walking behavior and may also have positive effects on social behavior, especially with larger space allowances. The effects of an outdoor bedded pack on estrus behavior are less well-documented, but the provision of a standing surface that provides better footing than typically available indoors may promote estrus behavior. Alternative outdoor areas assessed to date appear to be less attractive for cows than pasture, perhaps because these areas do not provide the opportunity to graze. We encourage future research to investigate the importance of grazing for dairy cows. The motivation of dairy cows to access alternative outdoor areas should also be investigated. As cow preference for the outdoors depends on many factors, providing cows a choice may be of particular importance.

Effect of Feed Concentrate Intake on the Environmental Impact of Dairy Cows in an Alpine Mountain Region Including Soil Carbon Sequestration and Effect on Biodiversity. SUSTAINABILITY 2020. Abstract
Several studies on the environmental impacts of livestock enterprises are based on the application of life cycle assessments (LCA). In Alpine regions, soil carbon sequestration can play an important role in reducing environmental impacts. However, there is no official methodology to calculate this possible reduction. Biodiversity plays an important role in the Alpine environment and is affected by human activities, such as cattle farming. Our aim was to estimate the carbon footprint (CF) of four different dairy production systems (different in breeds and feeding intensity) by using the LCA approach. The present study included 44 dairy Alpine farms located in the autonomous province of Bolzano in northern Italy. Half of the farms (n = 22) kept Alpine Grey and the other half (n = 22) Brown Swiss cattle. Within breeds, the farms were divided by the amount of concentrated feed per cow and day into high concentrate (HC) and low concentrate (LC). This resulted in 11 Alpine Grey low concentrate (AGLC) farms feeding an average amount of 3.0 kg concentrated feed/cow/day and 11 Alpine Grey high concentrate (AGHC) farms with an average amount of 6.3 kg concentrated feed/cow/day. Eleven farms kept Brown Swiss cows with an average amount of 3.7 kg concentrated feed/cow/day (BSLC) and another 11 farms feeding on average 7.6 kg concentrated feed/cow/day (BSHC). CF for the four systems was estimated using the LCA approach. The functional unit was 1 kg of fat and protein corrected milk (FPCM). Furthermore, two methodologies have been applied to estimate soil carbon sequestration and effect on biodiversity. The system with the lowest environmental impact in terms of CF was BSHC (1.14 kg CO2-eq/kg of FPCM), while the most impactful system was the AGLC group (1.55 kg CO2-eq/kg of FPCM). Including the CF reduction due to soil carbon sequestered from grassland, it decreased differently for the two applied methods. For all four systems, the main factor for CF was enteric emission, while the main pollutant was biogenic CH4. Conversely, AGLC had the lowest impact when the damage to biodiversity was considered (damage score = 0.41/kg of FPCM, damage to ecosystem diversity = 1.78 E-07 species*yr/kg FPCM). In comparison, BSHC had the greatest impact in terms of damage to biodiversity (damage score = 0.56/kg of FPCM, damage to ecosystem diversity = 2.49 E-07 species*yr/kg FPCM). This study indicates the importance of including soil carbon sequestration from grasslands and effects on biodiversity when calculating the environmental performance of dairy farms.
