Abstract
There is growing evidence that shifts in food consumption have the potential to mitigate the environmental impacts of food systems. Yet, although Canadians are increasingly concerned about climate change, changes towards more sustainable food consumption patterns are not widely observed. Understanding consumers' perspective on these issues is crucial for bridging this gap between individual behaviors and collective concerns. This study explores the knowledge, understanding and beliefs of Quebec consumers regarding the environmental impacts of food and their potential for shaping sustainable food consumption. A representative sample of consumers (N = 978) answered an online questionnaire assessing their factual knowledge and investigating their views of food systems impacts. Results indicate low levels of knowledge and highlight widely shared beliefs regarding food systems. Consumers tended to overestimate the role of transport in food's environmental footprint and believe that reducing transport or eating local foods are the most effective ways to improve environmental sustainability. Likewise, consumers tend to underestimate the impact of production, as well as solutions that could effectively reduce this impact. The findings reveal a need for improved literacy and awareness of the environmental impacts of food, thereby highlighting the importance of effective information and education strategies to shape sustainable food consumption habits.

Abstract
Stevia rebaudiana Bertoni is a plant native to South America that has gathered much interest in recent decades thanks to diterpene glycosides, called steviosides, which it produces. These compounds are characterised by their sweetness, which is 250-300 times higher than saccharose, and they contain almost no caloric value. Stevia is currently also grown outside the South American continent, in various countries characterised by warm weather. This research aimed to determine whether it is viable to grow Stevia rebaudiana plants in Poland, a country characterised by a cooler climate than the native regions for stevia plants. Additionally, the impact of adding various dosages and forms of nitrogen fertiliser was analysed. It was determined that Stevia rebaudiana grown in Poland is characterised by a rather low concentration of steviosides, although proper nitrogen fertilisation can improve various characteristics of the grown plants. The addition of 100 kg or 150 kg of nitrogen per hectare of the field in the form of urea or ammonium nitrate increased the yield of the stevia plants. The stevioside content can be increased by applying fertilisation using 100 kg or 150 kg of nitrogen per hectare in the form of ammonium sulfate. The total yield of the stevia plants grown in Poland was lower than the yield typically recorded in warmer countries, and the low concentration of steviosides in the plant suggests that more research about growing Stevia rebaudiana in Poland would be needed to develop profitable methods of stevia cultivation.

Abstract
Product optimisation is one of the most crucial phases in the new product development or launch process. This work proposes applying penalty analysis to investigate the impact of not just-about-right (JAR) sensorial aspects on willingness to pay (WTP) and an overall liking for a local Italian ancient pear variety and to verify the mediating role of pleasantness in the relationship between not-JAR sensory attributes and consumers' WTP using structural equation model (SEM). One hundred and twelve non-expert participants recruited during an in-store experiment evaluated overall liking and JAR attributes and were involved in an in-field experimental auction based on the non-hypothetical Becker-DeGroot-Marshak (BDM) mechanism. The participants' average WTP for the sample was EUR 3.18 per kilogramme. Only juiciness and sourness significantly impact consumers' overall liking but not on consumers' WTP. Moreover, pleasantness did not mediate the relationship between non-balanced sensorial aspects and WTP. In conclusion, the penalty analysis for attributes not being JAR in monetary and hedonic terms is a beneficial research approach for a deep-inside evaluation of the potentiality of the product in the marketplace, providing helpful directions for product optimisation. Results show market potential for the local ancient pear variety 'Angelica'.

Abstract
Promoting local food consumption for economic growth is a priority; however, defining "local" remains challenging. In Nova Scotia, Canada, this pioneering research establishes a comprehensive framework for assessing local food consumption. Employing three data collection methods, our study reveals that, on average, Nova Scotians allocate 31.2% of their food expenditures to locally sourced products, excluding restaurant and take-out spending, as per the provincial guidelines. The participants estimated that, in the previous year, 37.6% of their spending was on local food; this figure was derived from the most effective method among the three. However, the figure was potentially influenced by participant perspective and was prone to overestimation. To enhance accuracy, we propose methodological enhancements. Despite the limitations, the 31.2% baseline offers a substantial foundation for understanding local food patterns in Nova Scotia. It serves as a replicable benchmark for future investigations and guides researchers with similar objectives, thereby establishing a robust research platform.

Abstract
Tourists who favor local food typically care about healthy food choices. Their view of locally produced food as healthy is related to perceptions of sustainability. This relationship can be explained by tourists' personality traits and tendency to eat local food. This study aimed to establish the effect of tourists' perceptions of sustainability in the context of local food experiences on healthy eating tendencies. In addition, we aimed to determine the role of tourists' personality traits and local eating tendencies and elucidate the moderating role of searching online for information on food choices. An online questionnaire (via e-mail and WhatsApp) was used to obtain data from 379 research participants, recruited using a non-probabilistic sampling technique. A research model and hypotheses were formed based on Hayes PROCESS Macro models 90 and 6, and moderator and mediator effects were analyzed using these models. Healthy eating was well-explained by the model, and the perception of social and environmental sustainability in local food experiences (LFE-SES) positively affected food-related personality traits (FRPT), local food eating tendencies (LFET), and healthy eating (HE). While food-related personality traits did not mediate the relationship between the perception of sustainability and healthy eating, local food eating tended to mediate this relationship. In addition, when food-related personality traits and local food eating tendencies were evaluated together, they had a mediating role between the perception of sustainability and healthy eating. Searching online for information had an insignificant moderating effect. These findings help promote an understanding of healthy eating tendencies. Within the context of local food, they suggest critical theoretical and practical implications for the relationship between the perception of sustainability, food-related personality traits, local food eating tendencies, and healthy eating.

Abstract
Ordos is an ecological fragile area in the upstream and midstream of the Yellow River and a component of the ecological security barrier on the northern frontier of China. With population growth in recent years, the contradiction between human beings and land resources has become increasingly prominent, leading to increased food security risks. Since 2000, the local government has implemented a series of ecological projects to guide farmers and herdsmen to transform from extensive production to intensive production, which has optimized the pattern of food production and consumption. It is necessary to study the balance between food supply and demand to evaluate food self-sufficiency. Here, we used the panel data from 2000 to 2020 collected based on random sampling surveys to reveal the characteristics of food production and consumption, the changes in food self-sufficiency rate and the dependence of food consumption on local production in Ordos. The results showed that food production and consumption dominated by grains have been increasing. The residents' diets were characterized by excessive consumption of grains and meat, and insufficient consumption of vegetables, fruits, and dairy foods. On the whole, the locality has achieved self-sufficiency, because the food supply exceeded the demand during the two decades. However, the self-sufficiency of different food types varied greatly, as some foods, such as wheat, rice, pork, poultry, and eggs, have not been self-sufficient. Due to the increased and diversified food demand of residents, food consumption became less dependent on local production and more dependent on food imported from the central and eastern China, which threatened local food security. The study can provide a scientific basis for decision-makers for the structural adjustment of agricultural and animal husbandry and the structural adjustment of food consumption, to ensure food security and sustainable utilization of land resources.

Abstract
Emerging new purchasing behaviors have been reflected in the sales trends of dairy products, mainly in cow milk consumption. This study aimed to investigate the preferences of milk purchasers toward different product attributes, by considering both individuals' socio-demographic characteristics (SD) and milk purchasing habits (PH) as independent variables in the milk consumption model definition. To achieve this objective, a questionnaire was administered to a sample of 1,216 residents in Northwest Italy. The application of the Best-Worst scaling (BWS) methodology to define the purchasers' declared preferences toward a set of 12 milk attributes, showed that milk origin and expiry date are the most important attributes for milk choice in the decision-making process. The correlation analysis showed that the SD and milk purchasing habits variables affect the definition of stated preferences heterogeneously between the intrinsic, extrinsic, and credence attributes.

Abstract
Consumers are increasingly aware of the benefits of local foods in terms of quality, sustainability, animal welfare, and safety. This research addresses two main questions: (i) is the perception towards sustainability aspects of local dairy products related to individuals' preferences for milk and cheese quality aspects? (ii) are these perceptions related to people's socio-demographic characteristics? For this purpose, a choice experiment was conducted online in Apulia (South-East Italy) involving a sample of 543 respondents. A Principal Component Analysis (PCA) was applied to analyze the consumer opinion related to dairy products' quality attributes, sustainability, and availability on the market. From the PCA, four main components (accounting the 64.5% of the total explained variance) were defined, highlighting non-overlapping choice styles of consumers, distinguished by attitudes primarily based on quality attributes of dairy products rather than sustainability characteristics or perceived higher quality of local products. Furthermore, the Availability request component described the consumer need for higher availability and/or visibility of local dairy products on the market. The effect of gender, age, and educational status of individuals emerged as significantly important for the resulting component definitions. The obtained results clearly suggest the need to increase the efficiency of communication strategies concerning local dairy products, as well as local dairy products' availability and visibility on the markets.

Abstract
Carp fishing economy in Poland has a centuries-old tradition. However, in the last decade, as a result of changes in global market trends, this industry has experienced stagnation. Still, the elimination of this niche industry may have painful consequences for the entire ecosystem and biodiversity. Hence, every effort should be made to protect and maintain the status quo. The aim of the article is an attempt to show that the development prospects for the carp market in Poland are limited, especially in the face of little interest in carp consumption by young adult consumers, who will create the demand for carp in the near future. The remedy may be to change the image of the carp together with a territorial marketing strategy that would be consistent with the preferences of the young generation. The research was conducted on the basis of a critical analysis of the literature of the subject, focus studies, questionnaires and a case study.
