Abstract
Bitterness is one of the five basic tastes generally considered undesirable. The widespread presence of bitter compounds can negatively affect the palatability of foods. The classification and sensory evaluation of bitter compounds have been the focus in recent research. However, the rigorous identification of bitter tastes and further studies to effectively mask or remove them have not been thoroughly evaluated. The present paper focuses on identification of bitter compounds in foods, structural-based activation of bitter receptors, and strategies to reduce bitter compounds in foods. It also discusses the roles of metabolomics and virtual screening analysis in bitter taste. The identification of bitter compounds has seen greater success through metabolomics with multivariate statistical analysis compared to conventional chromatography, HPLC, LC-MS, and NMR techniques. However, to avoid false positives, sensory recognition should be combined. Bitter perception involves the structural activation of bitter taste receptors (TAS2Rs). Only 25 human TAS2Rs have been identified as responsible for recognizing numerous bitter compounds, showcasing their high structural diversity to bitter agonists. Thus, reducing bitterness can be achieved through several methods. Traditionally, the removal or degradation of bitter substances has been used for debittering, while the masking of bitterness presents a new effective approach to improving food flavor. Future research in food bitterness should focus on identifying unknown bitter compounds in food, elucidating the mechanisms of activation of different receptors, and developing debittering techniques based on the entire food matrix.

Abstract
AbstractAn intentional transfer of information is central to human communication. When comparing nonhuman primate communication systems to language, a critical challenge is to determine whether a signal is used in intentional, goal-oriented ways. As it is not possible to directly observe psychological states in any species, comparative researchers have inferred intentionality via behavioral markers derived from studies on prelinguistic human children. Recent efforts to increase consistency in nonhuman primate communication studies undervalue the effect of possible sources of bias: some behavioral markers are not generalizable across certain signal types (gestures, vocalizations, and facial expressions), contexts, settings, and species. Despite laudable attempts to operationalize first-order intentionality across signal types, a true “multimodal” approach requires integration across their sensory components (visual-silent, contact, audible), as a signal from a certain type can comprise more than one sensory component. Here we discuss how the study of intentional communication in nonlinguistic systems is hampered by issues of reliability, validity, consistency, and generalizability. We then highlight future research avenues that may help to understand the use of goal-oriented communication by opting, whenever possible, for reliable, valid, and consistent behavioral markers, but also taking into account sampling biases and integrating detailed observations of intraspecific communicative interactions.

Abstract
RATIONALE The basolateral amygdala (BLA) plays important roles in the cognitive control in human and non-human animals. However, inconsistent findings between species have been observed and there have been relatively few detailed investigations of the cognitive properties of BLA, especially in mice. OBJECTIVE Our aim was to determine the role of BLA in cognition by using optogenetic manipulations. METHODS Male C57BL/six mice were trained and tested on the five-choice serial reaction time task (5-CSRTT), open-field test (OFT), elevated plus maze (EPM), Y-maze, and novel object recognition (NOR) test during optogenetic stimulation and inhibition of the BLA. RESULTS Optogenetic activation of the BLA decreased the impulsivity and increased the compulsivity of mice, whereas optogenetic inhibition of BLA had the opposite effect. Similarly, anxiety-like behaviours and spatial working memory were increased in BLA activation mice, whereas BLA inhibition decreased these behaviours. However, both BLA activation and inhibition decreased the motivation of the mice. CONCLUSIONS These data demonstrate that the BLA regulates impulsive action and spatial working memory, and plays a critical role in anxiety-like behaviours.

Abstract
Foraging in seasonal environments can be cognitively challenging. Comparative studies have associated brain size with a frugivorous diet. We investigated how fruit distribution (where) and preference (what) affect foraging decisions in three semi-free ranging primate species with different degrees of frugivory: Macaca tonkeana (N indiv = 5; N trials = 430), M. fascicularis (N indiv = 3; N trials = 168) and Sapajus apella (N indiv = 6; N trials = 288). We used 36 boxes fixed on trees and filled with highly and less preferred fruits with different (weekly) spatio-temporal distributions. Individuals were tested in two conditions: (1) same fruit provided concurrently in the same quantity but in a scattered and in a clumped distribution, (2) highly preferred fruit was scattered while the less preferred was clumped. Generally, primates preferred feeding first on the boxes of the clumped distribution in both conditions, with the more frugivorous species at a higher degree than the less frugivorous species in condition (1), but not (2). Therefore, what fruit was available changed the foraging decisions of the more frugivorous species who also engaged more in goal-directed travel. When feeding on preferred fruit, primates probably maximized foraging efficiency regardless of their degree of frugivory. Our findings emphasize that the food type and distribution may be a preponderant driver in cognitive evolution.

Abstract
The diversity of great ape diets requires behavioral flexibility. Consequently, the exploration of potentially novel food sources is supposedly beneficial, but simultaneously, apes show high neophobia to prevent harmful and poisonous food intake. Social information, such as presence of group members or observations of non-naïve, experienced individuals have been demonstrated to affect the acceptance of novel food items in primates. Sociality may have evolutionary effects on the response of apes to novel foods. Here we assess the social information hypothesis, which predicts that selection favors higher neophobia in species where social information is abundant. We report the results from 134 great apes housed in multiple facilities from four closely related species that naturally differ in their degree of sociality: Pongo pygmaeus, Pongo abelii, Pan troglodytes and Pan paniscus. We examined individuals' reactions to novel foods when alone, which enabled us to detect any inherent differences and revealed significant distinctions between species. Chimpanzees and bonobos, that are naturally exposed to higher amounts of social information, were less likely to consume novel foods alone (showed higher neophobia) than the two more solitary orangutan species. Chimpanzees were especially cautious and showed higher explorative behaviors before tasting novel food than other species. Age influenced neophobia as younger individuals of all species took longer to taste novel foods than adults did.

Abstract
The daily energy requirements of animals are determined by a combination of physical and physiological factors, but food availability may challenge the capacity to meet nutritional needs. Western gorillas (Gorilla gorilla) are an interesting model for investigating this topic because they are folivore-frugivores that adjust their diet and activities to seasonal variation in fruit availability. Observations of one habituated group of western gorillas in Bai-Hokou, Central African Republic (December 2004-December 2005) were used to examine seasonal variation in diet quality and nutritional intake. We tested if during the high fruit season the food consumed by western gorillas was higher in quality (higher in energy, sugar, fat but lower in fibre and antifeedants) than during the low fruit season. Food consumed during the high fruit season was higher in digestible energy, but not any other macronutrients. Second, we investigated whether the gorillas increased their daily intake of carbohydrates, metabolizable energy (KCal/g OM), or other nutrients during the high fruit season. Intake of dry matter, fibers, fat, protein and the majority of minerals and phenols decreased with increased frugivory and there was some indication of seasonal variation in intake of energy (KCal/g OM), tannins, protein/fiber ratio, and iron. Intake of non-structural carbohydrates and sugars was not influenced by fruit availability. Gorillas are probably able to extract large quantities of energy via fermentation since they rely on proteinaceous leaves during the low fruit season. Macronutrients and micronutrients, but not digestible energy, may be limited for them during times of low fruit availability because they are hind-gut fermenters. We discuss the advantages of seasonal frugivores having large dietary breath and flexibility, significant characteristics to consider in the conservation strategies of endangered species.

Abstract
Among all factors modulating our motivation to perform a given action, the ability to represent its outcome is clearly the most determining. Representation of outcomes, rewards in particular, and how they guide behavior, have sparked much research. Both practically and theoretically, understanding the relationship between the representation of outcome value and the organization of goal directed behavior implies that these two processes can be assessed independently. Most of animal studies essentially used instrumental actions as a proxy for the expected goal-value. The purpose of this article is to consider alternative measures of expected outcome value in animals, which are critical to understand the behavioral and neurobiological mechanisms relating the representation of the expected outcome to the organization of the behavior oriented towards its obtention. This would be critical in the field of decision making or social interactions, where the value of multiple items must often be compared and/or shared among individuals to determine the course of actions.
