Abstract
Solar dehydration processes, implemented with NIR sensors, were studied. The research plan was divided into phases to achieve specific objectives. Phase 1: laboratory tests on micro plants; phase 2: scale transposition tests on small-sized plants - pilot scale; phase 3: tests on commercial systems already in use by Italian SMEs. The realisation of the scheduled activities started with the design, programming, and positioning of NIR sensor for data collection and configuration optimization. NIR spectra were collected in reflectance mode (900-1700 nm) using the MicroNIR1700™ or the MicroNIR On-site W™ (VIAVI Solutions Italia S.r.L., Monza, Italy) portable spectrometers with the MicroNIR Pro ES 1700 software. Spectra were acquired automatically throughout the process by placing the NIR probe over a sample slice, positioned on the intermediate shelf. The probe was thermally insulated to avoid temperature variations. The spectra were first transformed by converting reflectance to absorbance; then the second derivative Savitzky-Golay filter (second order polynomial fit and 21 points) and multiplicative scatter correction were applied to remove potential scatter effects. Aquagrams were calculated from the spectral data. The experiments were carried out with a micro-drying system (45x45x45 cm), and a pilot scale plant available at CREA.IT (Milan). Then, the transfer of the selected configuration was realised using a commercial plant already active in a farm of Pavia area. Different food matrices were tested (pineapple, apple, melon, eggplant, onion). NIR data processing by multivariate analysis was made to prove the reliability of the aquaphotomics approach in detecting the actual end of the drying process. The evaluation of the potential development of dedicated App, easy to consult, to be made available through integration on virtual platform was finally computed.

Abstract
Experiments demonstrated that visible and near-infrared (Vis-NIR) spectroscopy is a highly reliable tool for determining the nutritional status of plants. Although numerous studies on various kinds of plants have been conducted, there are only a few summaries of the research findings regarding the absorbance bands in the visible and near-infrared region and how they relate to the nutritional status of plants. This article will discuss the application of Vis-NIR spectroscopy for monitoring the nutrient conditions of plants, with a particular emphasis on three major components required by plants, namely nitrogen (N), phosphorus (P), and potassium (K), or NPK. Each section discussed different topics, for instance, the essential nutrients needed by plants, the application of Vis-NIR spectroscopy in nutrient status analysis, chemometrics tools, and absorbance bands related to the nutrient status, respectively. Deduction made concluded that factors affecting the plant's structure are contributed by several circumstances like the age of leaves, concentration of pigments, and water content. These factors are intertwined, strongly correlated, and can be observed in the visible and near-infrared regions. While the visible region is commonly utilised for nutritional analysis in plants, the literature review performed in this paper shows that the near-infrared region as well contains valuable information about the plant's nutritional status. A few wavelengths related to the direct estimation of nutrients in this review explained that information on nutrients can be linked with chlorophyll and water absorption bands such that N and P are the components of chlorophyll and protein; on the other hand, K exists in the form of cationic carbohydrates which are sensitive to water region.

Abstract
Osteoarthritis (OA) is the most common joint disease and the leading cause of disability in elderly individuals. Despite rapid advances in imaging techniques, early OA diagnosis remains a clinical challenge. In the present study, the feasibility of early OA diagnosis was explored via near-infrared spectroscopy (NIRS) combined with aquaphotomics. Synovial fluid samples from 65 cases of OA categorized as mild, moderate, and severe according to theKellgrenandLawrence classification criteria were analyzed via NIRS. The 1st overtone of water (1300-1600 nm) was considered as the research object for an aquaphotomics model, and aquagrams of the mild, moderate, and severe OA cases were generated using 12 water absorption patterns for early OA diagnosis.The aquaphotomics results exhibited clear differences in the region of 1300-1500 nm, and the number of hydrogen bonds of different water species (1412,1424, 1482, and 1496 nm) evidently correlated with OA occurrence and development. With OA progression, the absorption intensity of water molecules without hydrogen bonds (1412 nm/1424 nm) became stronger, while the absorption intensity of water molecules with four hydrogen bonds (1482 nm/1496 nm) decreased.These results together reveal that the established accurate and rapid early OA diagnosis model based on NIRS combined with aquaphotomics is effective and feasible, and that the number of hydrogen bonds can be used as a biomarker for early OA diagnosis.

Abstract
Aquaphotomics, as a new discipline is a powerful tool for exploring the relationship between the structure of water and the function of matter by analyzing the interaction between water and light of various frequencies. However, chemometric tools, especially the Water Absorbance Spectral Pattern (WASP) determinations, are essential in this kind of data mining. In this review, different state-of-the-art chemometrics methods were introduced to determine the WASP of aqueous systems. We elucidate the methods used for identifying activated water bands in three aspects, namely: 1) improving spectral resolution; the complexity of water species in aqueous systems leads to a serious overlap of NIR spectral signals, therefore, we need to obtain reliable information hidden in spectra, 2) extracting spectral features; sometimes, certain spectral information cannot be revealed by simple data processing, it is necessary to extract deep data information, 3) overlapping peak separation; since the spectral signal is produced by multiple factors, overlapping peak separation can be used to facilitate the extraction of spectral components. The combined use of various methods can characterize the changes of different water species in the system with disturbance and can determine the WASP. WASPs of research systems vary from each other, and it is visually displayed in the form of the aquagram. As a new omics family member, aquaphotomics could be applied as a holistic marker in multidisciplinary fields.

Abstract
Water spectrum of any aqueous system contains information about OH covalent and hydrogen bonds that are highly influenced by the environment and the rest of the molecules in the system. When aquaphotomics is used to analyze the water near infrared (NIR) spectra, the information about the water molecular structure can be obtained as a function of internal and external factors. The objective of this research is to apply aquaphotomics analysis to evaluate different groundwaters by using their NIR unique spectral pattern, robust to external influences of temperature and humidity, that can potentially be used for water type identification and screening practice. Two groundwaters obtained at different depths and their mixture, differing in mineral content and molecular structure were monitored on a daily basis using portable visible/NIR (vis/NIR) spectrometer during three consecutive years. The spectra were pre-processed by smoothing and multiplicative scatter correction (MSC) to remove noise and baseline effects. Results showed that NIR spectral patterns of groundwater samples were affected by changes in environmental factors - temperature, humidity, time and others. The water absorbance bands which are highly influenced by humidity and temperature in short wavelength NIR region were identified. Their avoidance resulted in obtaining consistent spectral patterns during the entire monitoring period, unique for each groundwater, that can be used as its fingerprint and monitored over time. Consistency and uniqueness of the spectral pattern for each groundwater provide a potential to use the deviation of spectral pattern as an indicator of changes in the water. These results confirm that vis/NIR spectral pattern can be used as an integrative marker of water status, stable over time, providing the basis for an efficient cost-effective method for monitoring of water functionality.

Abstract
As a fast and non-destructive detection method, near infrared spectroscopy, mainly containing overtones and combinations, can be used to quantify the components with a concentration of ≥ 1% in the analytical sample. Aquaphotomics uses the characteristic that the water structure changes with the addition of solute, which is reflected in the region of the water spectrum. Thus, it provides the possibility to unlock the information hidden in the spectrum. In our work, near infrared spectroscopy combined with aquaphotomics was used to quantify aqueous solution containing salvianolic acid B. It has shown that the aquaphotomics approach accurately quantifies the aqueous solution's salvianolic acid from 0.51 mg/mL to 25.86 mg/mL. The obtained RMSEP, R2, RPD, and MRE of prediction were 0.52 mg/mL, 0.995, 14.88 and 4.74%, respectively. For the salvianolic acid A reaction solution, the predicted R2 was 0.93, RMSEC was 0.85 mg/mL, and RMSEP was 0.82. The results of this study supported the concept of aquaphotomics, and the aquaphotomics approach was successfully applied in the reaction system of salvianolic acid A at 120 °C. This method was conducive to understanding the reaction and improving the accuracy of the quantitative model. It is a rapid and accurate alternative for analysis and measurement of transformation reactions at high temperature and high pressure, even for the substance with a concentration of less than 5 mg/mL.

Abstract
The consumption of ready-to-eat (RTE) leafy vegetables has increased rapidly due to changes in consumer diet. RTE products are perceived as fresh, high-quality, and health-promoting. The monitoring of the RTE quality is crucial in relation to safety issues. This study aimed to evaluate the maintenance of RTE rocket salad freshness packed under modified atmospheres. A portable E-nose, the electrolyte leakage test (which measures the index of leaf damage-ILD), and NIR spectroscopy and Aquaphotomics were employed. Two trials were carried out, using the following gas mixtures: (A) atmospheric air (21% O2, 78% N2); (B) 30% O2, 70% N2; (C) 10% CO2, 5% O2, 85% N2. Samples were stored at 4 °C and analyzed at 0, 1, 4, 7, 11, and 13 days. ANOVA, PCA, PLS were applied for data processing. E-nose and ILD results identified the B atmosphere as the best for maintaining product freshness. NIR spectroscopy was able to group the samples according to the storage time. Aquaphotomics proved to be able to detect changes in the water structure during storage. These preliminary data showed a good agreement NIR/ILD suggesting the use of NIR for non-destructive monitoring of the damage to the plant membranes of RTE rocket salad.

Abstract
Water activity is an important phenomenon not yet explained in terms of water molecular structure. This paper aims to find the relationship between the water activity and water molecular structure of the rice germ, based on its spectral pattern which can be measured using non-destructive technology. Aquaphotomics near-infrared spectroscopy was used to study rice germ stored at different levels of water activity and atmosphere. The findings show that state of the rice germ is governed by the water activity upon storage, which is defined by the structure of water within germ matrix. The structure of water can be described solely by the absorbance spectral pattern at the following absorbance bands: proton hydrates, hydration shells and water vapor (1364, 1375 and 1382 nm), trapped water (1392 nm), free water (1410 nm), hydration water (1425 nm), adsorbed water (1455 nm), non-bonded hydroxyl (1436 nm) and bound water (1520 nm).

Abstract
Extraction process is not only a critical manufacturing unit but also the initial process of various extracts and preparations. Taking the most extensive Chinese herbal medicine Danshen (Salvia miltziorrhiza Bge) as an example, salvianolic acid B (Sal B) is its main active pharmaceutical ingredient but lacks accurate characterization of the extraction process. As one of process analytical technologies, near-infrared spectroscopy (NIRS) technology has been widely applied for monitoring pharmaceutical extraction process. In most past studies, water spectral information is often eliminated due to its high absorption. However, this study proposed a method of using water spectrum to understand the whole extraction process and to quickly determine the content of Sal B. Principal component analysis (PCA) was first utilized to investigate the whole extraction process, then the reconstructed spectrum based on PCA was established and analyzed by Aquaphotomics, and finally the partial least squares regression (PLSR) quantitative model of Sal B was established. PCA and Aquaphotomics results showed the whole extraction process could be considered as a dynamic change from structure breaker to structure maker, and the dominance of highly H-bonded water structures increases with the extraction time. Also, the Sal B quantitative model with water spectrum showed higher accuracy and stability than other methods, which parameters (RMSEC, RMSECV, RMSEP, R2c, R2cv, R2p, RPD) were 0.2408 mg/mL, 0.2939 mg/mL, 0.2584 mg/mL, 0.9536, 0.9300, 0.9494, 4.6298, respectively, and the paired t-test showed that Sal B content measured by NIR and HPLC methods had no significant differences (p > 0.05). In conclusion, all result indicated that water can be used as a probe to understand the traditional Chinese medicine extraction process with NIRS.

Abstract
Given the importance of ethanol-water mixtures in many chemical and biological processes, the molecular interaction in ethanol-water binary system was studied using near-infrared (NIR) spectroscopy. Excess spectra (in form of excess absorption coefficient) and Gaussian fitting were applied to analyze low concentration ethanol-water mixtures, ranging from 0 to 10% (v/v). With the knowledge of aquaphotomics, six kinds of water species were identified for 0-10% ethanol-water system, and it was indicated that water can be a sensitive probe for analyzing the structural changes and the interactions in the solutions. The excess spectra and two-dimensional (2D) correlation spectroscopy were introduced for high concentration mixtures (10-100%) analysis and found that the intermolecular hydrogen bonding strength between ethanol and water reaches to the maximum at 40% ethanol concentration which may be related to some abnormal properties of alcoholic solutions reported previously. In 40-100% mixtures, ethanol molecules tend to initiate the self-association which leads to the weakening of the interaction between ethanol and water. This paper not only deepens the understanding of the structure and dynamics of alcoholic solution, but also opens a new perspective in molecular interaction analysis in aqueous system by understanding the roles of water.

Abstract
Few works to date have reported the application of near-infrared spectroscopy (NIRS) for the characterization and authentication of cephalopods. This study investigated the feasibility of a portable NIRS instrument for the non-destructive freshness evaluation of fresh (F) and frozen-thawed (FT) cuttlefish (Sepia officinalis). Samples were examined by chemical, microbiological and sensorial analyses, during 13 days of conservation at 3 °C. The spectral data were collected on lateral mantle of cuttlefish, and different partial least squares discriminant analyses (PLS-DA) were applied for classification purposes. The interpretation of spectra was also investigated by applying the specific water coordinates, using aquaphotomics. Few significant differences in the wet chemistry and microbiological data were detected between F and FT during storage. The quality index method and microbiological analyses suggested similar behavior between F and FT samples until to near 9 days of shelf life. PLS-DA models with the spectral range 900-1650 nm achieved a classification precision of 0.91 between F and FT, while the performances for the prediction of storage days were less effective. The results of aquaphotomics plotted in aquagrams were suitable for the interpretation of the main physicochemical changes of cuttlefish throughout the shelf life. The water coordinates suggested a different molecular conformation of water species in the FT than F samples, with more free water molecules and a lower amount of bound species and the water solvation shell, respectively.
