Abstract
Purpose This study aimed to evaluate the salt intake in boarding school students and the consistency between salt intake measurements based on 24-h urine and weighed dietary records over 3 consecutive days in this population. Methods This was a school-based cross-sectional study. Overweight (including obesity) or hypertensive students aged 6-14 years and their normal counterparts were recruited for this study at three boarding schools in China. Three consecutive 24-h urine samples were collected from all participants. During the collection period of 24-h urine, the weighed diet records were collected in children who had all three meals at the school canteens on weekdays. Incomplete 24-h urine or dietary records were excluded from the analysis. Results The median salt excretion was 6,218 [4,636, 8,290] mg by 24-h urine and 120 (82.2%) consumed excess salt among the participants. The median salt intake was 8,132 [6,348, 9,370] mg by dietary records and 112 (97.4%) participants consumed excess salt than recommended in participants who have all three meals in the school canteens. In children with complete dietary records and 24-h urine, the level of salt intake estimated by 24-h urine accounted for 79.6% of the dietary records. Conclusion Our study showed that boarding school students consumed excessive salt from school canteens. Thus, policies or strategies targeting school canteens are urgently needed. Weighed dietary records are recommended if feasible.

Abstract
This study aimed to assess the relative validity of the diet photograph record (DP) for measuring the energy and nutrient intakes against the weighed dietary record (WD) and the 24 h dietary recall (HR) in the Chinese preschoolers. In this study, 40 preschool children aged 4–6 years and their parents were recruited from a kindergarten in southwest China. Dietary intake of the preschoolers on a same day, as estimated by the DP and the HR were compared with the WD. These three methods were administered by the three group of investigators independently. The mean differences, correlation coefficients, cross-classifications, and weighted κ, as well as the Bland–Altman plots were performed to assess the differences and agreements among the estimates from the DP, the HR, and the WD. For the DP and the HR, the estimates of energy and nutrient intakes were moderate to high correlated with the WD, with the higher coefficients ranging from 0.73 to 0.94 for the DP. Both the methods tended to underestimate the dietary intake, but the differences from the known weights using the DP were significantly smaller than those using the HR. The weighed κ values ranking the preschoolers ranged from 0.48 to 0.80 for the DP and ranged from 0.28 to 0.64 for the HR. Furthermore, the Bland–Altman plots indicated a better agreement between the DP and the WD for estimating energy and nutrient intakes. This DP is a valid tool for measuring energy and nutrient intakes among the preschoolers.

Abstract
Phosphorus intake in Europe is far above recommendations. We present baseline data from three human intervention studies between 2006 and 2014 regarding intake and excretion of phosphorus and calcium. All subjects documented their nutritional habits in weighed dietary records. Fasting blood samples were drawn, and feces and urine were quantitatively collected. Dietary phosphorus intake was estimated based on weighed dietary records and urine phosphorus excretions. Food sources were identified by allocation to defined food product groups. Average phosphorus consumption was 1338 mg/day and did not change from 2006 to 2014, while calcium intake decreased during this period (1150 to 895 mg/day). The main sources for phosphorus intake were bread/cereal products, milk/milk products and meat/meat products/sausage products and the main sources of calcium intake included milk/milk products/cheese, bread/cereal products and beverages. There was no difference between estimated phosphorus intake from the weighed dietary records and urine phosphorus excretion. In conclusion, we demonstrated constant phosphorus intakes far above the recommendations and decreasing calcium intakes below the recommendations in three German collectives from 2006 to 2014. Furthermore, we could show in case of usual intakes that an estimated phosphorus intake from urine phosphorus excretion is similar to the calculated intake from weighed dietary records.

Abstract
AIM To determine the relative validity of a 2-day 24-hour dietary recall (HR) designed to assess energy and nutrient intake among Chinese adults compared with a 2-day weighed dietary record (WD). METHODS Data were obtained from an ongoing population-based, prospective cohort study of adults aged 18-65 years in South China. A total of 41 adults completing a HR and a WD within 14 days were included in the present analysis. Estimations of individual mean differences, Spearman's correlation coefficients, cross-classifications and Bland-Altman plots were used to assess the agreement between the intakes of energy and 18 nutrients obtained from the HR and the WD. RESULTS With the exception of total fat, saturated fatty acids, thiamine, potassium and magnesium, the energy and nutrient intakes between the HR and WD showed no significant differences. All dietary intakes that were evaluated by the HR were correlated significantly with the dietary intake from the WD (de-attenuated correlation coefficients ranged from 0.10 to 0.87). The proportion of participants classified into quartiles correctly ranged from 61% for tocopherol intake to 90% for energy intake. The weighted k values ranking the participants ranged from 0.11 for tocopherol intake to 0.41 for the intakes of energy and calcium. The Bland-Altman plots showed moderate/good agreement among all the dietary intakes that were estimated from the HR and WD, except for total fat. CONCLUSIONS This study suggests that an HR could be a valid tool for estimating the energy and nutrient intakes among adults in South China at the group level.

Abstract
We present here the survey methods and basic results of dietary records which were used as reference values in the present validation study of a self-administered food frequency questionnaire (FFQ) for the 5-year follow-up survey of the JPHC study. A semi-weighed dietary record was kept for four seven consecutive days in each of the four seasons in 3 areas, i.e., Iwate, Akita, and Nagano, and for seven consecutive days in both winter and summer in Okinawa. The mean intakes were significantly different between areas for some nutrients and food groups. A significant seasonal difference in the mean intakes was also observed in some nutrients such as carotene and vitamin C, and in some food groups such as potatoes, vegetables, and fruits in both sexes, and alcoholic beverages in men and milks in women (p<0.001).
