High Prevalence of Bovine Cardiac Cysticercosis in Upper Egypt: An Epidemiological and Histopathological Study. Animals (Basel) 2024; 14:158. Abstract
Bovine cysticercosis is categorized as a serious parasitic zoonotic infestation. The infection is mainly caused by the tapeworm Taenia saginata, which infects cattle and humans. The larval stage, Cysticercus bovis (C. bovis), is found in the skeletal and cardiac muscles of infected cattle. Despite its potential public health concern, few studies have been conducted on cardiac cysticercosis in Upper Egypt. This study investigates the prevalence, epidemiology, and impact of cardiac cysticercosis in Upper Egypt, emphasizing how histopathological changes in cardiac muscle and physiological parameters might be associated with the infection. From December 2022 to October 2023, a total of 941 animals from Assiut province, Upper Egypt, were slaughtered and their cardiac muscles were examined for the presence of C. bovis. Cysts were classified as viable or degenerated through macroscopic inspection. The overall prevalence of C. bovis infected hearts made up 10.8% of the total examined. The highest prevalence rate was in the summer season followed by spring; winter had the lowest infections. The histopathological examination of infected tissues revealed immune cell infiltration around Cysticercus-infected areas. Additionally, Bax immunostaining demonstrated the apoptotic effect of cysticercosis. Regarding the measured physiological parameters, there were non-significant changes in plasma levels of total protein and albumin in cattle infected with cysticercosis compared with control animals. Moreover, there was a significant decrease in total antioxidant capacity (TAC) combined with a significant increase in lipid peroxide (Malondialdehyde) (MDA), troponin T, and lactate dehydrogenase (LDH) activity in infected animals. The present work documented a set of epidemiological and pathological findings, revealing that C. bovis is a potentially harmful parasite and can cause significant health problems in both cattle and humans.

Abstract
Animal-based measures (ABMs) are the preferred way to assess animal welfare. However, manual scoring of ABMs is very time-consuming during the meat inspection. Automatic scoring by using sensor technology and artificial intelligence (AI) may bring a solution. Based on review papers an overview was made of ABMs recorded at the slaughterhouse for poultry, pigs and cattle and applications of sensor technology to measure the identified ABMs. Also, relevant legislation and work instructions of the Dutch Regulatory Authority (RA) were scanned on applied ABMs. Applications of sensor technology in a research setting, on farm or at the slaughterhouse were reported for 10 of the 37 ABMs identified for poultry, 4 of 32 for cattle and 13 of 41 for pigs. Several applications are related to aspects of meat inspection. However, by European law meat inspection must be performed by an official veterinarian, although there are exceptions for the post mortem inspection of poultry. The examples in this study show that there are opportunities for using sensor technology by the RA to support the inspection and to give more insight into animal welfare risks. The lack of external validation for multiple commercially available systems is a point of attention.

Abstract
Tail biting in pigs represents a very serious problem in modern pig farming, particularly with the intensification of the industry. It is considered a multifactorial syndrome and can be caused by various factors, leading to significant economic losses through reduced weight gain and partial or total condemnation of slaughtered carcasses due to secondary bacterial infections. The aim of this article is to summarise the current knowledge regarding tail biting in pigs, with a primary focus on the use of slaughterhouses for evaluating tail lesions and monitoring their prevalence. The introduction addresses the factors influencing the incidence of tail biting in pig farms and prevention strategies. Subsequent sections cover topics such as tail docking, the negative effects of pig tail biting, the advantages and drawbacks of examining tail lesions in slaughterhouses, and the methodical procedure for evaluating such lesions. Additionally, the article discusses the relationship between tail lesions and meat inspection findings, as well as the prevalence of tail lesions in various European countries.

Abstract
Ante- and post-mortem inspections at abattoir were originally introduced to provide assurance that animal carcasses were fit for human consumption. However, findings at meat inspection can also represent a valuable source of information for animal health and welfare surveillance. Yet, before making secondary use of meat inspection data, it is important to assess that the same post-mortem findings get registered in a consistent way among official meat inspectors across abattoirs, so that the results are as much independent as possible from the abattoir where the inspection is performed. The most frequent findings at official meat inspections of pigs and beef cattle in Sweden were evaluated by means of variance partitioning to quantify the amount of variation in the probabilities of these findings due to abattoir and farm levels. Seven years of data (2012-2018) from 19 abattoirs were included in the study. The results showed that there was a very low variation between abattoirs for presence of liver parasites and abscesses, moderately low variation for pneumonia and greatest variation for injuries and nonspecific findings (e.g., other lesions). This general pattern of variation was similar for both species and implies that some post-mortem findings are consistently detected and so are a valuable source of epidemiological information for surveillance purposes. However, for those findings associated with higher variation, calibration and training activities of meat inspection staff are necessary to enable correct conclusions about the occurrence of pathological findings and for producers to experience an equivalent likelihood of deduction in payment (independent of abattoir).

Abstract
In this study, the contribution of the ante mortem (AM) inspection and the food chain information (FCI) to ensuring meat safety and public health was investigated, by evaluating the slaughterhouse findings of 223,600 slaughtered dairy cows in the Netherlands. The outcome of this study was that the ante mortem (AM) and post mortem (PM) inspections have a substantial overlap, and that with regard to food safety and public health in over 99% of cases the PM could even be omitted on the basis of the AM. In this study, the data provided by the dairy farmers on the current FCI forms contributed little to nothing with regard to the outcomes of AM and PM inspection. It is concluded that current meat inspection procedures need an update and a more risk-based approach needs to be adopted. Regarding this, the AM inspection of dairy cattle should remain, because it plays an important role in ensuring food safety (e.g., by preventing contamination of the slaughter line by excessively dirty animals, or animals with abscesses), monitoring animal welfare and in detecting some important notifiable diseases. The PM inspection, however, could in many cases be omitted, provided there is a strict AM inspection complemented by a vastly improved (automated) way of obtaining reliable FCI.

Abstract
The aim of this study was to investigate associations between ear, tail, and skin lesions, hernias, bursitis, and rectal prolapses at the abattoir and meat inspection outcomes in slaughter pigs, including carcass condemnations and trimmings, carcass weight, and carcass quality. This was an observational study whereby pigs were managed according to routine practices in a single abattoir. Data were collected from 1816 pigs. The relationship between animal-based welfare and post-mortem outcomes was analyzed using generalized mixed models (Proc Glimmix). Our findings showed that tail lesions were associated with entire carcass condemnations and trimmings (P < 0.001), a reduction in carcass weight (P < 0.05), and a potential to impair carcass quality by reducing muscle pH (P < 0.05), especially in carcasses from male pigs (P < 0.05). Additionally, hernias were associated with viscera condemnation (P < 0.05) and a reduction in carcass weight (P < 0.05). Therefore, our findings confirm that ante-mortem inspection could be useful to predict post-mortem outcomes in the same pigs, especially in cases of tail lesions and hernia, which might trigger attention of the veterinary inspector in charge of the post-mortem inspection.

Abstract
Meat inspection is important to ensure food safety and protect public health. Visual inspection of slaughtered carcasses for pathological changes should be supported by bacteriological analysis to determine whether the entire carcass or parts of it should be condemned. The aim of this study was to determine the bacterial species present in different sample types from condemned broiler carcasses. Furthermore, we investigated the genetic characteristics, zoonotic potential, and relatedness of Escherichia coli, the predominant bacterial species isolated from the carcasses. A total of 400 broiler carcasses condemned because of cellulitis (100), scratches (100), hepatitis (100), and healthy control carcasses (100) were selected. Samples of meat, pathological lesion, and bone marrow of each carcass were obtained for microbial analysis. From the analyzed samples, 469 bacterial isolates were recovered with E. coli accounting for 45.8%, followed by Aeromonas spp. (27.9%), in particular A. veronii. The highest rate of bacterial isolation was observed in carcasses condemned with cellulitis, whereas carcasses with hepatitis had the lowest rate of bacterial isolation. Forty-four E. coli isolates originating from different sample types were selected for whole genome sequencing. A clonal relationship was shown between E. coli from different sample types of the same carcass condemned with cellulitis and scratches. A major clade of E. coli was found in carcasses condemned with cellulitis with isolates containing mdf(A), tet(A), and bla TEM-1B genes that confer resistance to macrolides, tetracycline, and ampicillin, respectively. E. coli in this clade all belonged to ST117 and clustered with E. coli isolates previously collected from dead chickens and carcasses condemned due to cellulitis in Denmark, Finland, and the United Kingdom. Bacterial evaluation results of carcasses condemned with cellulitis, scratches (moderate to severe skin lesion), and acute hepatitis confirmed the need for total condemnation of carcasses with these pathological findings. A similar evaluation should be done for carcasses affected with chronic hepatitis, and minor scratches lesions.

Abstract
Ante- and post-mortem inspections of food-producing animals at slaughter are mandatory activities carried out in many countries to ensure public health, animal health, and meat quality. In finishing pigs, lung lesions are the most frequent defects found in meat inspections. It is possible to implement managerial strategies on-farm to reduce the occurrence and spread of respiratory diseases, but such strategies come with additional costs that could impede implementation. This study assessed the economic impact of two strategies aimed at reducing the prevalence of lung lesions in finishing pigs at slaughter by improving the health conditions of the animals during the production cycle. First, a farrow-to-finish pig farm with 355 sows was modeled based on the current standard practice for finishing pig production in Sweden, using economic data, meat inspection data and biological variables from the literature and expert opinions. A partial budget analysis was then performed in which the baseline farm was compared with two hypothetical strategies aimed at reducing the occurrence and spread of respiratory diseases during pig production: (S1) avoiding mixing of litters after weaning and (S2) keeping purchased pregnant gilts separated from sows during gestation, farrowing and lactation. Both these strategies intended to reduce the occurrence of respiratory disease in finishing pigs at slaughter gave an average gain in annual net income (33,805 SEK in S1 and 173,160 SEK in S2, equal to 3,146€ and 16,113€, respectively, at the time of analysis), indicating that both were economically sustainable under the assumed conditions. The impact analysis of the two strategies revealed that the reduced prevalence of lung lesions when adopting one of the strategies was the most influential factor in net benefit change on the farm. Overall, the results suggest that with the increasing prevalence of lung lesions in Swedish pig production (as also observed worldwide in recent years), adopting an effective strategy to decrease respiratory infections will become more relevant and economically beneficial.

Abstract
Muscle and liver tissues from Italian heavy pigs were analyzed to investigate whether the chronic consumption of these products by local consumers could represent a health risk in relation to the contamination by some toxic metals and metalloids (TMMs). The concentrations of Al, As, Cd, Cr, Cu, Fe, Ni, Pb, Sn, U, and Zn were measured with an inductively coupled plasma-mass spectrometer, while Hg analysis was performed by using a mercury analyzer. Fe, Zn, and Cu were the most abundant elements in both tissues, while U was detected only at ultra-trace levels. As, Cd, Cu, Fe, Hg, Pb, U, and Zn showed significantly higher concentrations in livers compared to muscles (p ≤ 0.01), with Cd and Cu being 60- and 9-fold more concentrated in the hepatic tissue. Despite this, concentrations of all TMMs were found to be very low in all the samples to the point that the resulting estimated dietary intakes did not suggest any food safety concern. Indeed, intakes were all below the toxicological health-based guidance values or resulted in low margins of exposure. Nevertheless, in the calculation of the worst-case exposure scenario, the children's estimated intake of Cd, Fe, and Zn through the sole consumption of pig liver contributed to more than 23, 38, and 39% of the tolerable weekly intakes of these elements, while the combined consumption of pig liver and pig muscle to more than 24, 46, and 76%. These findings alert about the probability of exceeding the toxicological guidance values of Cd, Fe, and Zn though the whole diet, suggesting long-term negative health effects for the younger population.

Abstract
Simple Summary Bovine cysticercosis is a parasitic disease caused by Cysticercus bovis, the larval stage of the human tapeworm Taenia saginata, which is the causative agent of human taeniasis, a foodborne parasitic disease caused by the consumption of infected raw or undercooked beef meat. Although commonly asymptomatic, bovine cysticercosis has an important impact worldwide, causing huge economic losses to the meat industry due to carcass condemnation or downgrading. Given the lack of epidemiological case-control surveys carried out in Italy, the present survey’s aim was to assess the presence of farm-level risk factors for bovine cysticercosis in an endemic area in North-West Italy. The results of our survey show a significant association between the detection of bovine cysticercosis cases at slaughter and farm proximity to picnic spots, closeness of wastewater treatment plant effluents, presence of employees along with the family members and loose-housing systems. These findings highlight the need for enforced food chain information and surveillance strategies and the crucial role that hygiene-related campaigns would play to educate both the general public and farm operators on the transmission pathways of T. saginata. Abstract Taenia saginata is the causative agent of bovine cysticercosis, a zoonotic parasitic disease with a worldwide distribution. Bovine cysticercosis is considered to be an important food safety issue responsible for human taeniasis and a major economic concern since infected carcasses undergo condemnation, freezing and downgrading. The aim of the current investigation was to assess the presence of farm-level risk factors for bovine cysticercosis in an endemic area in North-West Italy. A questionnaire was designed to collect information relating to several farm structural features, as well as management practices, environmental characteristics and attitudes of farmers. The questionnaire was administered in two separate time intervals by direct interview to previously selected case and control farms. Overall, 32 case farms and 131 control farms were included between 2005 and 2011 and 50 case farms and 192 control farms were included between 2014 and 2020. The present survey showed a significant association between the detection of bovine cysticercosis cases at slaughter and farm proximity to picnic spots, closeness of wastewater treatment plant effluents, loose-housing systems and presence of employees along with the family members, highlighting the need for targeted awareness raising policies.

Abstract
Simple Summary Tuberculosis is transmitted from animal to human by consuming raw or under cooked meat and milk from infected animals. Careful meat inspection considering all parts of the carcass is very important. However, most abattoirs in Ethiopia are performing only routine meat inspection which does not examine the organs in detail. Failure to do so might result in undetected lesions. In this study, two methods (routine and detailed meat inspections) were compared to inspect carcasses at abattoir level. Our study clearly shows that the routine meat inspection method misses about 89% of the tuberculosis lesions identified by detailed meat inspection. Based on detailed meat inspection, overall 4.7% of lesions suggestive of bovine tuberculosis (bTB) were found in the carcass of cattle slaughtered at Debre Birhan municipality abattoir during the study period. However, the routine meat inspection only detected 0.5% of the carcasses examined as having Tuberclosis (TB) lesions. Anatomically, 66% of the lesions were found in the lungs and associated lymph nodes, 21% in lymph nodes of the head, and 13% in the lymph nodes of the gastrointestinal tract. Therefore, lesion distribution routine and detailed meat inspection and their sensitivity with respect to lesion detection was identified. Abstract Routine meat inspection in the abattoir was used to examine carcass for subsequent approval for consumption. However, the chance of missing lesions results in approval of carcass and/or the offal with lesions of tuberculosis. A cross-sectional study was conducted at Debre Birhan Municipal abattoir from October 2016 to May 2017. Lesion prevalence estimation and two meat inspection procedures’ efficacy evaluation was attempted. The breeds of the animals inspected were zebu breeds. Routine abattoir meat inspection involves visual inspection, palpation and incision of intact organs such as the liver and kidneys, as well as inspection, palpation and incision of tracheobronchial, mediastinal and prescapular lymph nodes. The detailed meat inspection involves inspection of each of the carcass. In this case, the seven lobes of the two lungs, lymph nodes and organs were also thoroughly examined. The cut surfaces were examined under bright light sources for the presence of an abscess, cheesy mass, and tubercles in detail. The study involved and compared both routine and detailed meat inspections at the abattoir. Chi-square test of independence and odds ratio were used to see the association of lesion and different risk factors. Based on detailed meat inspection, the overall lesion prevalence of bovine tuberculosis in the carcass of cattle slaughtered at Debre Birhan municipality abattoir was found to be 4.7% but only 0.5% of the carcass examined had detectable bovine tuberculosis lesions when routine abattoir meat inspection alone was used. The majority of the lesions were distributed to the lungs and associated lymph nodes. There was a significant association (p < 0.05) in TB infection rate and body condition score. In conclusion, this study has clearly indicated the prevalence of bovine tuberculosis lesions in the abattoir that are missed by routine abattoir meat inspection. In addition, it showed low sensitivity of the routine meat inspection procedure used. Hence, our study warrants immediate attention to strengthen the current meat inspection practices at Debre Birhan public abattoir.

Abstract
Simple Summary Inspections of pigs before (antemortem) and after (postmortem) being slaughtered are part of the official controls carried out in European abattoirs. The ability of data obtained from the antemortem inspections to predict lesions eventually found during postmortem inspections has not been thoroughly investigated so far. In this study, data obtained from inspections performed both ante- and postmortem in heavy pigs slaughtered in Italy were analyzed, determining the prevalence of the most common lesions and conditions found during the ante- and postmortem inspections and exploring the correlation between these findings. The most common findings were the presence of manure on more than the 30% of the body and pleurisy for antemortem and postmortem inspections, respectively. Some conditions found during the antemortem inspections were predictive of lesions reported during postmortem inspections. For instance, respiratory and kidney lesions were more likely to occur in pigs presenting manure on more than the 30% of the body, whereas dermatitis and skin wounds were more likely to be present in pigs showing skin lesions during the antemortem inspections. The results of this study show that information obtained from the antemortem inspection of pigs can be useful to characterize farms using a risk-based approach and to address the organization of official controls in slaughterhouses. Abstract Pigs slaughtered in European abattoirs must be submitted to antemortem inspection (AMI) and postmortem inspection (PMI), as required by the current European legislation in the matter of official controls. AMI and PMI are equally essential to guarantee food safety and to monitor swine health and welfare. However, little is known about the ability of AMI to predict conditions that are possibly found during PMI. In this study, such a correlation was explored together with the assessment of conditions typically found during AMI and PMI in heavy pigs slaughtered in two Italian slaughterhouses. An assessment scheme containing 13 variables for AMI and 34 lesions for PMI was used for the scope. The herd size was also considered as a variable and included in the study. A total of 24,510 pigs and 30,961 pigs were assessed during AMI and PMI, respectively. The most common conditions found were manure on the body covering more than 30% of the body (dirt >30%) and pluck lesions (‘pleurisy’, ‘pericarditis’, and ‘pneumonia’) for AMI and PMI, respectively. A significant correlation (p < 0.05) between some antemortem (AM) findings and postmortem (PM) conditions was found. In particular, the AM conditions ‘dirt >30%’and ‘skin lesions’ were positively related with PM conditions ‘skin wounds’ and ‘dermatitis’, while the complexes of respiratory and kidney lesions were predicted only by the condition ‘dirt >30%’. The variable ‘standardized herd size’ was negatively associated with ‘milk spot liver’ and positively associated with ‘arthritis/bursitis’. The results of this study show that findings reported during AMI can potentially be used to predict certain conditions found in pigs at PMI. These data can be useful for the competent authorities in characterizing swine farms using a risk-based approach and in developing systems and specific plans for official controls.

Abstract
Meat inspection records of one large cattle slaughterhouse were analyzed to evaluate the added value of slaughterhouse data for cattle health surveillance in the Netherlands. Data were available from January 2015 to September 2018, consisting of 467,361 meat inspection records. Analyses included (1) an assessment of the representativeness of the cattle herds in the slaughterhouse data in relation to the cattle herd population in the Netherlands, and (2) multivariable analyses to quantify associations between meat inspection findings and farm of origin characteristics, and the trends in time of the findings in slaughtered cattle. Ninety percent of the meat inspection records originated from dairy cattle therefore this paper only presents the results of dairy herds (N = 422,194 cattle). The dairy herds in the slaughterhouse data seemed representative for the Dutch dairy population although their regional coverage differed from the distribution of dairy herds in the Netherlands. Non-dairy herds were underrepresented in the slaughterhouse data which stresses the importance of the inclusion of data from other slaughterhouses that may be more specialized in slaughtering beef cattle. Inspection records were categorized into 15 indicators related to ante-mortem and post-mortem findings. Following multivariable analyses, seven indicators were deemed of added value to existing cattle health surveillance components, as they provided either new information or information regarding specific health problems.

Abstract
In many dairy industries, but particularly those that are pasture-based and have seasonal calving, "surplus calves," which are mostly male, are killed at a young age because they are of low value and it is not economically viable to raise them. Such calves are either killed on farm soon after birth or sent for slaughter at an abattoir. In countries where calves are sent for slaughter the age ranges from 3-4 days (New Zealand and Australia; "bobby calves") to 3-4 weeks (e.g., Ireland); they are not weaned. All calves are at the greatest risk of death in the 1st month of life but when combined with their low value, this makes surplus calves destined for early slaughter (i.e., <1 month of age) particularly vulnerable to poor welfare while on-farm. The welfare of these calves may also be compromised during transport and transit through markets and at the abattoir. There is growing recognition that feedback to farmers of results from animal-based indicators (ABI) of welfare (including health) collected prior to and after slaughter can protect animal welfare. Hence, the risk factors for poor on-farm, in-transit and at-abattoir calf welfare combined with an ante and post mortem (AM/PM) welfare assessment scheme specific to calves <1 month of age are outlined. This scheme would also provide an evidence base with which to identify farms on which such animals are more at risk of poor welfare. The following ABIs, at individual or batch level, are proposed: AM indicators include assessment of age (umbilical maturity), nutritional status (body condition, dehydration), behavioral status (general demeanor, posture, able to and stability while standing and moving, shivering, vocalizations, oral behaviors/cross-sucking, fearfulness, playing), and evidence of disease processes (locomotory ability [lameness], cleanliness/fecal soiling [scour], injuries hairless patches, swellings, wounds], dyspnoea/coughing, nasal/ocular discharge, navel swelling/discharge); PM measures include assessment of feeding adequacy (abomasal contents, milk in rumen, visceral fat reserves) and evidence of disease processes (omphalitis, GIT disorders, peritonitis, abscesses [internal and external], arthritis, septicaemia, and pneumonia). Based on similar models in other species, this information can be used in a positive feedback loop not only to protect and improve calf welfare but also to inform on-farm calf welfare management plans, support industry claims regarding animal welfare and benchmark welfare performance nationally and internationally.

Abstract
The potential effects of a 24 or 72-h delay in post-mortem inspection (PMI) of ungulates on public health and monitoring of animal health and welfare was evaluated. The assessment used a survey of meat inspectors, expert opinion, literature search and a stochastic model for Salmonella detection sensitivity. Disease detection sensitivity at a delayed PMI is expected to reduce detection sensitivity to a variable extent, depending on the hazard and on the signs/lesions and organs involved. No reduction is expected for Trichinella detection in meat from susceptible animal species and any decrease in detection of transmissible spongiform encephalopathies (TSEs) will not exceed the current tolerance for fallen stock. A 24-h delay in PMI could result in a small reduction in sensitivity of detection for tuberculosis, echinococcosis and cysticercosis. A greater reduction is expected for the detection of pyaemia and Rift valley fever. For the detection of Salmonella, the median model estimates are a reduction of sensitivity of 66.5% (90% probability interval (PI) 0.08-99.75%) after 24-h delay and 94% (90% PI 0.83-100%) after 72-h delay of PMI. Laboratory testing for tuberculosis following a sampling delay of 24-72 h could result in no, or a moderate, decrease in detection depending on the method of confirmation used (PCR, culture, histopathology). For chemical contaminants, a delay in meat inspection of 24 or 72 h is expected to have no impact on the effectiveness of detection of persistent organic pollutants and metals. However, for certain pharmacologically active substances, there will be a reduced effectiveness to detect some of these substances due to potential degradation in the available matrices (tissues and organs) and the non-availability of specific preferred matrices of choice.

Abstract
Vertebral osteomyelitis (VO) it is often a suppurative lesion that, in Portugal, represents the main cause of total condemnation of slaughtered finishing pigs. Based on the EU Meat Inspection legislation, meat from generalized VO cases presenting signs of pyemia should be declared unfit for human consumption. For that reason, the main objective of this study is to establish a classification scheme to differentiate between localized and generalized VO cases using macroscopic findings and validate it based on the presence of pyemia. To assist in, a combination of macroscopic characteristics of gross lesions (e.g., presence of pyaemia-related lesions (PRL), acute/chronic characteristics of VO) was used to create a classification scheme to differentiate between localized and generalized VO cases. The scheme was applied to 40 VO cases that had been totally condemned in an undifferentiated way. In those 40 cases, histopathological analysis was used to validate acute/chronic macro-criteria, and microbiological analysis was performed to identify the pyemia cases. From the 40 selected VO cases, 20 were macroscopically classified as chronic and 20 as acute. Cohen's kappa coefficient (κ = 0.80; p < 0.001), revealed a substantial agreement between macroscopic and histopathology classification. Microbiological analyses identified 13 pyemia cases (13/40; 32.5%). Among those, 12 were macroscopically classified as acute, this association being highly significant (p < 0.001). By using the proposed VO classification scheme, 14 possible cases out of 40 could have been spared from total condemnation. This scheme can be used to harmonize the classification of VO and meat inspection decisions in Portuguese abattoirs. The output would lead to avoidance of unnecessary carcasses condemnation (food waste/economic losses), under an evidence-based approach, without compromising food safety and public health as demanded by the EU Meat Inspection legislation.

Abstract
BACKGROUND Porcine Cysticercosis (PC) infection is globally classified as a neglected and re-emerging tropical disease. The disease is endemic in Western Kenya yet smallholder farmers continue to practice scavenging pig production, thereby posing public health risk. This study determined the prevalence of PC infection at the farms and slaughter slabs in a cross-sectional survey in two Counties (Busia and Kakamega) of Western Kenya. MATERIALS AND METHODS Two hundred and eighty-seven (287) heparinized blood samples were collected at the farm from 162 households in 9 villages and 113 pigs from 5 slaughter slabs. The prevalence of PC was detected through meat inspection at slaughter slabs, and the prevalence of Taenia solium antigen determined by using the ApDia Ag-ELISA test at the farms and slaughter slabs. RESULTS At meat inspection, the PC prevalence was 1.8%, while prevalence of Taenia Species cysts detected with Ag-ELISA test was 3.8% at the farms, and 5.3 % at the slaughter slabs. The Ag-ELISA test had sensitivity of 100% (95% CI: 19.79- 100.00) and specificity of 96.4% (95% CI: 90.49- 98.84). CONCLUSION The PC prevalence levels observed among scavenging pigs in Western Kenya should be a cause of public health risk concern. This observation warrant enforcing mandatory pig confinement, and use of latrines at the farms and meat inspection at local slaughter slabs. Further studies are recommended to identify different Taenia species in cysticercoids pigs in the region, which this study could not differentiate.

Abstract
Tail biting lesions are a potential measure of on-farm animal welfare, as a large range of stressors increase the risk for tail biting outbreaks. Further, tail biting is a major challenge, as lesions due to tail biting decrease animal welfare and health, as well as production efficiency and carcass quality. The aim of this study was to suggest a tail scoring system for use at slaughterhouses processing undocked pigs, and to link tail lesion scores to meat inspection data. A further aim was to suggest a definition for an intact enough tail. To validate the suggested scoring system we assessed tails before and after scalding and compared results to pathological examinations. In total, 14,433 tails were scored, and 117 tails were collected for pathological examination. After scalding, 49.2% of all tails were scored as fully intact. Of tails with lesions 2.5% were scored as having major acute wounds (>2 cm), while 11.6% had minor acute wounds (<2 cm), and 36.7% healed lesions. Intact tails were on average 31.5 cm (SD 2.5 cm) long. Lesion scored at the slaughter-line agreed well with the pathological assessment. Tail lesions were associated with several meat inspection findings: tails with more severe lesions and of shorter length increased the risk for meat inspection findings to a higher degree. A detailed lesion scoring method helps to identify carcasses at risk for condemnations, as well as being a potential method for on-farm welfare estimation. We suggest that a system for scoring tail lesions in undocked pigs should utilize a combination of scoring of the lesion and measuring the tail length. As bite marks or bruises on an otherwise intact tail were not a concern for meat hygiene, we suggest the definition of an intact enough tail could allow the inclusion of tails with these mild changes. Meat inspection findings in carcasses with tails scored as healed, but with no fresh lesions, and with more than 75% of the average intact length remaining were rather similar to those of fully intact tails. Based on these findings we suggest that a tail of this length, and with no visible fresh lesions could also be considered intact enough.

Abstract
Monitoring animal welfare (AW) in pig farms requires both proper indicators and a feasible approach. Animal-based measures (ABMs) are well-established AW indicators. Furthermore, AW screening at the slaughterhouses could be useful for identifying problems on farm. The aim of this study was to evaluate ABMs at the slaughterhouse and, when possible, to compare these ABMs with those collected on the farm. The study was carried out in northern Italy in a commercial abattoir and in a sample of farms. Animal-based measures were recorded on pigs from 62 batches of 54 farms, during ante-mortem (n=10 085 pigs) and post-mortem (n=7952 pigs) inspections. Sixteen of 54 farms were selected to compare ABMs collected at the slaughterhouse with ABMs collected on the farm. Overall, 2295 pigs (mean pigs examined per farm 119±45) were inspected at the slaughterhouse (group S) and 420 pigs (mean pigs per farm 26±5) on the farm (group F). Non-animal-based measures were also collected at the 16 farms. Differences between groups S and F, at the animal level, were assessed by a two-tailed paired Wilcoxon-Mann-Whitney test. Differences at the site of observation level (farm and slaughterhouse) were assessed by Fisher's exact test using a hierarchical log-linear modelling for contingency tables. The most frequent ABMs at the slaughterhouse were manure on the body (47.7%), followed by dermatitis (28.0%), white spot (25.4%) and bursitis (24.7%). Recording ABMs at the slaughterhouse and on the farm usually yielded similar results; however, there were some exceptions. In particular, significant differences were found for non-uniformity of size (P<0.05) and dermatitis (P<0.001), which were higher at the slaughterhouse than on the farm. Results of log-linear modelling underlined the effect of the farm of origin on the percentage of pigs with bursitis, manure on the body and ear injuries that were observed at the slaughterhouse. In group S, significant associations between manure on the body and insufficient presence of clean and dry areas in the corresponding farm were found (P<0.05). Although these results should be interpreted with care due to the limited sample of farms, the slaughterhouse could be a feasible site of observation of ABMs, which could then be integrated in monitoring of AW on farm. Considering the number of slaughtered batches per farm, it would be possible to repeat assessments several times throughout the year for each farm, which could help provide an index for the continuous monitoring of AW.

Abstract
The changes associated with condemned lungs in cattle with chronic pleural lesions of the caudal lobes were characterized by histology and immunohistochemistry (IHC). Fibroproliferative pleural lesions were microscopically confirmed. Occasionally, the pleural lesions also included adipose, chondroid, and osseous metaplasia that were covered by mesothelial cells, mostly in the absence of inflammation. Other lungs also showed fibrosis in the subpleural interstitium and interlobular septa. In both condemned and noncondemned lungs, immunoreactivity to Wilms tumor 1 (WT1) was normally observed on surface mesothelial cells but not on the submesothelial fibroblasts and myofibroblasts. Conversely, the myofibroblasts beneath the pleura, but not the mesothelial cells, showed immunoreactivity to alpha smooth muscle actin and calponin. However, in the lungs with myofibroblastic foci in the pleura, the proliferated cells maintained WT1 immunoreactivity similar to those of some metaplastic cells. These findings may reflect the plasticity of mesothelial cells in vivo.

Abstract
Denmark has not had cases of bovine tuberculosis (bovTB) for more than 30 years but is obliged by trade agreements to undertake traditional meat inspection (TMI) of finisher pigs from non-controlled housing to detect bovTB. TMI is associated with higher probability of detecting bovTB but is also more costly than visual-only inspection (VOI). To identify whether VOI should replace TMI of finisher pigs from non-controlled housing, the cost of error - defined here as probability of overlooking infection and associated economic costs - should be assessed and compared with surveillance costs. First, a scenario tree model was set up to assess the ability of detecting bovTB in an infected herd (HSe) calculated for three within-herd prevalences, WHP (1, 5 and 10%), for four different surveillance scenarios (TMI and VOI with or without serological test, respectively). HSe was calculated for six consecutive 4-week surveillance periods until predicted bovTB detection (considered high-risk periods HRP). 1-HSe was probability of missing all positives by each HRP. Next, probability of spread of infection, Pspread, and number of infected animals moved were calculated for each HRP. Costs caused by overlooking bovTB were calculated taking into account Pspread , 1-HSe, eradication costs, and trade impact. Finally, the average annual costs were calculated by adding surveillance costs and assuming one incursion of bovTB in either 1, 10 or 30 years. Input parameters were based on slaughterhouse statistics, literature and expert opinion. Herd sensitivity increased by high-risk period and within-herd prevalence. Assuming WHP=5%, HSe reached median 90% by 2nd HRP for TMI, whereas for VOI this would happen after 6th HRP. Serology had limited impact on HSe. The higher the probability of infection, the higher the probability of detection and spread. TMI resulted in lowest average annual costs, if one incursion of bovTB was expected every year. However, when assuming one introduction in 10 or 30 years, VOI resulted in lowest average costs. It may be more cost-effective to focus on imported high-risk animals coming into contact with Danish livestock, instead of using TMI as surveillance on all pigs from non-controlled housing.

Simple Summary Analysis of a large volume of meat inspection data suggests availability of genetic variation for most common indicators of poor animal welfare. This genetic variation can be used to select pigs that have the potential to resist common infections and other unfavorable welfare conditions. Genetic selection can be a tool in addition to farm management in reducing the risk of diseases, thereby reducing pain and suffering of animals. In general, the slaughter remarks have small but favorable genetic relationships with finishing and carcass quality traits. Therefore, it is possible to enhance animal welfare along with the genetic selection for economically important production traits. Abstract Animal health and welfare are monitored during meat inspection in many slaughter plants around the world. Carcasses are examined by meat inspectors and remarks are made with respect to different diseases, injuries, and other abnormalities. This is a valuable data resource for disease prevention and enhancing animal welfare, but it is rarely used for this purpose. Records on carcass remarks on 140,375 finisher pigs were analyzed to investigate the possibility of genetic selection to reduce the risk of the most prevalent diseases and indicators of suboptimal animal welfare. As part of this, effects of some non-genetic factors such as differences between farms, sexes, and growth rates were also examined. The most frequent remarks were pneumonia (15.4%), joint disorders (9.8%), pleuritis (4.7%), pericarditis (2.3%), and liver lesions (2.2%). Joint disorders were more frequent in boars than in gilts. There were also significant differences between farms. Pedigree records were available for 142,324 pigs from 14 farms and were used for genetic analysis. Heritability estimates for pneumonia, pleuritis, pericarditis, liver lesions, and joint disorders were 0.10, 0.09, 0.14, 0.24, and 0.17 on the liability scale, respectively, suggesting the existence of substantial genetic variation. This was further confirmed though genome wide associations using deregressed breeding values as phenotypes. The genetic correlations between these remarks and finishing traits were small but mostly negative, suggesting the possibility of enhancing pig health and welfare simultaneously with genetic improvement in finishing traits. A selection index based on the breeding values for these traits and their economic values was developed. This index is used to enhance animal welfare in pig farms.

Simple Summary Despite being important to the general public, the monitoring of animal welfare is not systematic. The Danish political parties agreed in 2012 to establish national animal welfare indices for cattle and pigs, and here we assess the potential for using data from the systematic meat inspection to contribute to such indices. We demonstrate that although a number of recordings may be relevant for animal welfare, differences in recording practices between slaughterhouses can be so large that correction is not deemed feasible. For example, significant differences in tail fractures in pigs and sows were recorded between abattoirs, despite the fact that this condition should be easier to diagnose compared to e.g., the more consistently recorded “chronic arthritis” in cows. The study findings suggest that some recordings may be useful for inclusion in animal welfare indices, but that their relevance should be assessed along with the recording practices if included. Furthermore, factors such as appropriate behaviour are also important to monitor as part of the welfare of both cattle and pigs. Abstract National welfare indices of cattle and pigs are constructed in Denmark, and meat inspection data may be used to contribute to these. We select potentially welfare-relevant abattoir recordings and assess the sources of variation within these with a view towards inclusion in the indices. Meat inspection codes were pre-selected based on expert judgement of having potential animal welfare relevance. Random effects logistic regression was then used to determine the magnitude of variation derived at the level of the farm or abattoir, of which farm variation might be associated with welfare, whereas abattoir variation is most likely caused by differences in recording practices. Codes were excluded for use in the indices based on poor model fit or a large abattoir effect. There was a large abattoir effect for most of the codes modelled and these codes were deemed to be not appropriate to be carried forward to the welfare index. A few were found to be potentially useful for a welfare index: Eight for slaughter pigs, 15 for sows, five for cattle <18 months of age, and six for older cattle. The absolute accuracy of each code/combination could not be assessed, only the relative variation between farms and abattoirs.

Abstract
Secondary infections as a result of tail biting cause substantial economic losses in pig production and are a subject of concern for animal welfare. The use of first-choice antibacterial agents in the treatment of tail biting in finishing pigs is hypothesized to be negatively correlated with the development of systemic infection. This would be expected to reduce the prevalence of post-mortem pyemic sequelae (such as osteomyelitis and abscesses) in finishers with tail-bite lesions. We performed a register-based study that included three Danish databases, holding information on the purchase of antibacterials at herd level (VetStat), herd demographics (Central Husbandry Register), and relevant observations at slaughter (meat inspection data). We included all finishers from indoor production finisher herds that met the inclusion criterion of at least one slaughtered finisher with a recorded tail-bite observation during 2015 at the single largest Danish abattoir. The final dataset held 1,070 herds with one or more tail-bite observations, from which 14,411 of 2,906,626 finishers (0.50%) had an individual record of a tail bite. Within this group of finishers with tail-bite observations, the recorded tail-biting-related sequelae included osteomyelitis (8.1%), abscesses in the hindquarters (10.5%), abscesses in the forequarters (2.3%), abscesses in the mid-section of the carcass (2.9%), abscesses in the limbs (2.4%), and chronic arthritis (0.5%). Due to a high-herd prevalence (>25%), osteomyelitis and abscesses in the hindquarters were selected for further analysis. The occurrence of osteomyelitis and hindquarter abscesses in individual finishers with tail-bite observations was described using a generalized linear mixed effects model with binomial response and logit link. Herd was included as a random effect, while herd size and various antibacterial treatments were tested for inclusion in the model as fixed effects. The final models indicated a significant association between herd size and both osteomyelitis (p = 0.014) and hindquarter abscesses (p < 0.001), with larger herds (2,001–12,000 registered finisher pigs) showing a reduced risk. Further, a negative association was found between the occurrence of hindquarter abscesses and the use of oral pleuromutilin (p = 0.022). The significant association with herd size highlights the potential importance of management factors in reducing the occurrence of tail-bite lesions in finishing pigs.

Abstract
Tail lesions are important pig welfare indicators that could be recorded during meat inspection as they are more visible on the carcass than on the live animal. Tail biting is associated with reduced performance in the bitten pig, but it is not clear whether problems with tail biting are reflected in general farm performance figures. Farm advisory services aim to improve farm productivity which could be associated with improvements in pig welfare. Record keeping forms an integral part of such advisory services. The aim of this study was to examine the influence of record keeping in the Teagasc eProfit Monitor (ePM herds) on the prevalence of tail lesion severity scores in Irish slaughter pigs. In addition, we investigated associations between the prevalence of tail lesion scores and production parameters at farm level in ePM herds. Pigs were observed after scalding/dehairing and tail lesion score (0 to 4), sex and farm identification were recorded. Tail lesion scores were collapsed into none/mild lesions (score ⩽1), moderate lesions (score 2) and severe lesions (score ⩾3). The effect of record keeping (ePM herd) on the different tail lesion outcomes was analysed at batch level using the events/trials structure in generalized linear mixed models (PROC GLIMMIX). Spearman's rank correlations were calculated between average tail lesion score of a batch and production parameters. A total of 13 133 pigs were assessed from 73 batches coming from 61 farms. In all, 23 farms were identified as ePM herds. The average prevalence of moderate tail lesions was 26.8% and of severe tail lesions was 3.4% in a batch. Batches coming from ePM herds had a lower prevalence of moderate tail lesions than non-ePM herds (P<0.001). Average tail lesion score was negatively associated with age (P<0.05) and weight (P<0.05) at sale/transfer of weaners, and tended to be positively associated with the number of finishing days (P=0.06). In addition, the prevalence of severe tail lesions was negatively associated with average daily gain in weaners (P<0.05) and tended to do so with average daily gain in finishers (P=0.08). This study provides the first indication that record keeping through an advisory service may help to lower the risk of tail biting, which is associated with improved farm performance.

Abstract
The aim of this study was to assess the relationship between tail lesions, cold carcass weight, and viscera condemnations in an Irish abattoir. The following data were collected at the evisceration point from every third pig slaughtered over 7 days: farm identification, sex, tail lesion score, viscera inspection outcome, and cold carcass weight. Tail lesions were scored according to a 5-point scale. Disease lesions responsible for lung (pleurisy, pneumonia, and abscess), heart (pericarditis), and liver (ascariasis) condemnation were recorded based on the decision of the veterinary inspector (VI). Data on 3,143 pigs from 61 batches were available. The relationship between disease lesions, tail lesion score, and cold carcass weight was studied at individual carcass level, while the relationship between disease lesions and tail lesion score was studied at both carcass and batch level. Tail lesions (score ≥1) were found in 72% of the study population, with 2.3% affected by severe tail lesions (scores ≥3). Pleurisy (13.7%) followed by pneumonia (10.4%) showed the highest prevalence, whereas the prevalence of ascariasis showed the greatest variation between batches (0–75%). Tail lesion score, pleurisy, pleuropneumonia, and pericarditis were associated with reductions in carcass cold weight (P ≤ 0.05) ranging from 3 to 6.6 kg. Tail lesion score was associated with condemnations for pleurisy, pneumonia, and pleuropneumonia (P ≤ 0.05) at a batch level. VI shift was associated with condemnations for pneumonia, pleuropneumonia, and pericarditis (P ≤ 0.05) at a carcass level and with pneumonia at a batch level. Sex was not associated with viscera condemnations but males were more likely to be affected by tail lesions. The relationship between overall tail lesion score and the lung diseases at batch level supports the relationship between poor health and poor welfare of pigs on farms. The inclusion of tail lesion scores at post-mortem meat inspection should be considered as a health and welfare diagnostic tool.

Abstract
BACKGROUND We evaluated Swiss slaughterhouse data for integration in a national syndromic surveillance system for the early detection of emerging diseases in production animals. We analysed meat inspection data for cattle, pigs and small ruminants slaughtered between 2007 and 2012 (including emergency slaughters of sick/injured animals); investigating patterns in the number of animals slaughtered and condemned; the reasons invoked for whole carcass condemnations; reporting biases and regional effects. RESULTS Whole carcass condemnation rates were fairly uniform (1-2‰) over time and between the different types of production animals. Condemnation rates were much higher and less uniform following emergency slaughters. The number of condemnations peaked in December for both cattle and pigs, a time when individuals of lower quality are sent to slaughter when hay and food are limited and when certain diseases are more prevalent. Each type of production animal was associated with a different profile of condemnation reasons. The most commonly reported one was "severe lesions" for cattle, "abscesses" for pigs and "pronounced weight loss" for small ruminants. These reasons could constitute valuable syndromic indicators as they are unspecific clinical manifestations of a large range of animal diseases (as well as potential indicators of animal welfare). Differences were detected in the rate of carcass condemnation between cantons and between large and small slaughterhouses. A large percentage (>60% for all three animal categories) of slaughterhouses operating never reported a condemnation between 2007 and 2012, a potential indicator of widespread non-reporting bias in our database. CONCLUSIONS The current system offers simultaneous coverage of cattle, pigs and small ruminants for the whole of Switzerland; and traceability of each condemnation to its farm of origin. The number of condemnations was significantly linked to the number of slaughters, meaning that the former should be always be offset by the later in analyses. Because this denominator is only communicated at the end of the month, condemnations may currently only be monitored on a monthly basis. Coupled with the lack of timeliness (30-60 days delay between condemnation and notification), this limits the use of the data for early-detection.

Abstract
A risk ranking process identified Toxoplasma gondii and pathogenic verocytotoxin-producing Escherichia coli (VTEC) as the most relevant biological hazards for meat inspection of sheep and goats. As these are not detected by traditional meat inspection, a meat safety assurance system using risk-based interventions was proposed. Further studies are required on T. gondii and pathogenic VTEC. If new information confirms these hazards as a high risk to public health from meat from sheep or goats, setting targets at carcass level should be considered. Other elements of the system are risk-categorisation of flocks/herds based on improved Food Chain Information (FCI), classification of abattoirs according to their capability to reduce faecal contamination, and use of improved process hygiene criteria. It is proposed to omit palpation and incision from post-mortem inspection in animals subjected to routine slaughter. For chemical hazards, dioxins and dioxin-like polychlorinated biphenyls were ranked as being of high potential concern. Monitoring programmes for chemical hazards should be more flexible and based on the risk of occurrence, taking into account FCI, which should be expanded to reflect the extensive production systems used, and the ranking of chemical substances, which should be regularly updated and include new hazards. Control programmes across the food chain, national residue control plans, feed control and monitoring of environmental contaminants should be better integrated. Meat inspection is a valuable tool for surveillance and monitoring of animal health and welfare conditions. Omission of palpation and incision would reduce detection effectiveness for tuberculosis and fasciolosis at animal level. Surveillance of tuberculosis at the slaughterhouse in small ruminants should be improved and encouraged, as this is in practice the only surveillance system available. Extended use of FCI could compensate for some, but not all, the information on animal health and welfare lost if only visual post-mortem inspection is applied.

Abstract
During abattoir meat inspection pig carcasses are partially or fully condemned upon detection of disease that poses a risk to public health or welfare conditions that cause animal suffering e.g. fractures. This incurs direct financial losses to producers and processors. Other health and welfare-related conditions may not result in condemnation but can necessitate 'trimming' of the carcass e.g. bruising, and result in financial losses to the processor. Since animal health is a component of animal welfare these represent a clear link between suboptimal pig welfare and financial losses to the pig industry.Meat inspection data can be used to inform herd health programmes, thereby reducing the risk of injury and disease and improving production efficiency. Furthermore, meat inspection has the potential to contribute to surveillance of animal welfare. Such data could contribute to reduced losses to producers and processors through lower rates of carcass condemnations, trimming and downgrading in conjunction with higher pig welfare standards on farm. Currently meat inspection data are under-utilised in the EU, even as a means of informing herd health programmes. This includes the island of Ireland but particularly the Republic.This review describes the current situation with regard to meat inspection regulation, method, data capture and utilisation across the EU, with special reference to the island of Ireland. It also describes the financial losses arising from poor animal welfare (and health) on farms. This review seeks to contribute to efforts to evaluate the role of meat inspection as a surveillance tool for animal welfare on-farm, using pigs as a case example.

Abstract
BACKGROUND A study to curb transmission cycle of a zoonotic Taenia cestodiasis between humans and cattle is presented. OBJECTIVE To evaluate the reliability of meat inspection procedure in detecting carcasses of cattle with T. saginata cysticercosis. METHODS A total of 55 cattle divided into two groups of artificially (n=30) and naturally (n= 25) infested animals were utilized. Total dissection method was used as a gold standard of validity. RESULTS Meat inspection insensitively revealed cysticerci in 12 carcasses in each group compared with 24 and 23 carcasses revealed by total dissection in natural and artificial infestations, respectively. Sites of oncosphere invasion showed great variations with the two groups of cattle. In the predilection sites, most cysticerci were found in the heart, Triceps brachii, tongue and head muscles in that order. However, non-predilection sites (neck and back, hind limbs, chest, pelvic and lumbar regions, lungs and liver) considerably harboured high numbers of cysticerci. Observations indicated that except for the dead, degenerate or calcified cysticerci a careless meat inspector will most likely miss out quite a number of viable cysticerci, which blend the pinkish-red colour of the meat and be passed on for human consumption, becoming the source of bovine cysticercosis. CONCLUSIONS The results confirmed that in spite of the time and efforts taken by meat inspectors looking for cysticerci at specified predilection sites of carcasses, this method is insensitive and inaccurate. To effectively improve meat inspection procedures, there is need to increase the area and number of predilection sites observed during inspection and vary them according to the nature of the animals, their husbandry history and the target human population for consumption. In addition, other control approaches such as vaccination, chemotherapy and immunodiagnosis should be developed and implemented to complement meat inspection procedures.

Abstract
A probabilistic risk assessment model was developed to estimate the risk to human health of Taenia saginata in the New Zealand cattle population. A standardized monitoring program was established to determine the number of suspect cysts detected during postmortem inspection and the scenario set was applied to risks in both the domestic and export markets. The mean number of human infections per year as a result of consumption in the export and the domestic market was estimated as 0.50 and 1.10 respectively. Estimations for expression of specific clinical symptoms were even less. In a scenario set where postmortem inspection procedures for T. saginata were not applied, the mean number of human infections per year was estimated to increase from 0.50 to 0.61 in the export market and from 1.10 to 1.30 in the domestic market. Given that T. saginata infection in humans results in mild and readily treatable symptoms, these risk estimates are extremely low on any scale of food-borne disease and bring the value of specific postmortem inspection procedures for T. saginata in the New Zealand situation into question. The Monte Carlo model developed to calculate these probabilities is presented here in detail to illustrate the potential of Monte Carlo methods for modeling risk.

Abstract
The effect of the pH on the boiling test was studied in 68 beef and 108 pork muscles. The pH had a significant effect on the sensory scores obtained from the boiling test. The effect was particularly pronounced in the odour of meat. In beef the odour scores remain steady for samples with a pH value under about 6.2 and start to increase rapidly in higher pH values. In pork the increase in scores appears to be linear. The odour observed in high pH meat was described by the judges as abnormal and ammonialike. In the case of meat with a high pH, the results of the boiling test at meat inspection should be interpreted with extreme caution.

Fluorescein fundus angiography was performed on 30 dogs with no pathologic fundus findings using a Canon CF 60 Z wide angle camera. In serial photography of the dye passage 4 different circulatory phases could be distinguished: choroidal, retinal anteriolar, capillary and venous phase. The dye passage in the retinal vessels was described in detail. For aesthesia the combination of ketamine and xylazine proved to be suitable.

The presence of Toxoplasma gondii in the diaphragm was correlated with the dye test titres in 174 sheep. In 94 of these the presence of the parasite was also correlated with the haemoglobin (Hb) type. T. gondii was recovered from 3 % of the sheep with titres < 1/16, compared with 30 % of those with titres 1/16 and 70 % of those with titres ≥ 1/32. The results indicate that the distinction between serologically positive and negative individuals at a final serum dilution of 1/16 is justified. Some evidence was found that the parasite is easier to recover from dye test positive mature sheep than from dye test positive lambs. Of the 174 sheep, 143 were examined at random among 186 sheep culled or cast for age during a 4-year period from 1 flock in which the prevalence of Toxoplasma antibodies was representative for flocks in the southern Norway, and T. gondii was recovered from 53 (37 %) of these. It was concluded that 10—15 % of the lamb carcases and 25—37 % of the carcases from mature sheep in this country have T. gondii in their muscles detectable by the peptic digestion technique. A possible genetical influence on the infection was indicated by the higher frequency of recoveries of T. gondii from sheep with Hb type B than from sheep with the Hb types A or AB, but the number of individuals with Hb type B was too small to demonstrate statistically significant differences. The epidemiological importance of infected sheep carcases is discussed.
