Abstract
Each year 500.000 sows, equal to 50% of Danish sows, are culled and transported to slaughter. However, the clinical condition, behavior, and welfare of cull sows have received almost no scientific attention. The aim of the current observational study was to describe the clinical condition of cull sows on the day of transportation to slaughter, including examination of possible differences between lactating and nonlactating sows. On the day of transportation, the participating farms were visited by trained technicians who conducted a thorough clinical examination of all sows selected by the farmer for slaughter. Four sows could not be transported because they were unfit according to the European Council Regulation regarding fitness for transportation, and they were not included in the present data. A total of 522 sows, with a median parity of 5 (range: 1-11), from 12 Danish farms were included in the study. Approximately, 10% showed signs of changed gait, and 0.8% were obvious lame. Wounds were observed in 54.6% of the sows, and 11% had decubital shoulder ulcers. Almost 40% of the cull sows were lactating. At culling, the lactating sows were of higher parity than the nonlactating sows, and lactating sows were at higher risk of having deviations from normal on clinical variables related to examination of the udder, such as udder swellings and inflammations. Nonlactating sows had 3.5 times more superficial skin lesions than lactating sows. Our findings warrant for further studies exploring different aspects of the life of cull sows in what is here defined as the The Cull Period, which is the interval from the culling decision is made until the sows are slaughtered.

Abstract
Reverence for the cow has been a centerpiece of Hindu culture, the roots of which can be traced back to the Indus Valley Civilization around 3000 BCE. Historical and anthropological literature demonstrates how over the millennia the animal’s status as a religious symbol steadily increased and the concept of its sanctity grew in complexity, becoming deeply entrenched and assuming a core identity of the religion. The cow has also been used as a symbol of political opposition to external influences and invading powers. Nowhere else in the world has an animal maintained such divine significance into modern day. This literature review explores the interplay of complex cultural, religious, social and political factors that led to the phenomenon of the sacred cow, a ban on its slaughter and the advent of the modern gaushala. The review also discusses the moral implications of preservation of animal life past their commercial use, the impact on their welfare and need for objectively assessing whether there is a place for such strategies in other animal industries worldwide.

Abstract
Salmonella Brandenburg ranked 16th among the serovars responsible for human infections in EU in 2015 and it was found to be associated with swine. In Emilia- Romagna and Lombardy regions of northern Italy, S. Brandenburg was isolated from mesenteric lymph nodes, fecal matter, carcasses and conveyor belts at pig slaughterhouses in 2014 and 2015. In the same area, S. Brandenburg was detected in pork salami in 2015. In the present study, 12 isolates of S. Brandenburg recovered from the pork food-chain were typed by XbaI PFGE and their three profiles were compared to all human S. Brandenburg isolates processed by the Surveillance System of Emilia- Romagna region from 2012 to 2017 (105 isolates). The most frequent pulsotype of porcine origin (6/12) was the second most frequent in humans (16/105). Of the other two pulsotypes of porcine origine (3/12 each), one was the most frequent in humans (41/105), the other was undetected among human isolates.

Abstract
Commercial poultry abattoirs were evaluated to determine the efficacy of the multi-hurdle antimicrobial strategy employed to reduce the microbial load present on incoming broilers from the farm. As next generation sequencing (NGS) has been recently employed to characterize the poultry production system, this study utilized 16S High throughput sequencing (HTS) and quantitative plating data to profile the microbiota of chicken carcasses and determine the efficacy of the multi-hurdle antimicrobial system. Aerobic plate count (APC) and Enterobacteriaceae (EB) microbial counts were quantified from whole bird carcass rinsates (WBCR). The remaining rinsates underwent microbiome analysis using 16S rRNA gene fragments on an Illumina MiSeq and were analyzed by Quantitative Insights into Microbial Ecology (QIIME). The key stages of processing were determined to be at rehang, pre-chill, and post-chill as per the Salmonella Reduction Regulation (75 Fed. Reg. 27288-27294). The APC microbial data from rehang, pre-chill, and post-chill were mean log 4.63 CFU/mL, 3.21 CFU/mL, and 0.89 CFU/mL and EB counts were mean log 2.99 CFU/mL, 1.95 CFU/mL, and 0.35 CFU/mL. NGS of WBCR identified 222 Operational Taxonomic Units' (OTU's) of which only 23 OTU's or 10% of the population was recovered post-chill. Microbiome data suggested a high relative abundance of Pseudomonas at post-chill. Additionally, Pseudomonas, Enterobacteriaceae, and Weeksellaceae Chryseobacterium have been identified as potential indicator organisms having been isolated from all processing abattoirs and sampling locations. This study provides insight into the microbiota of commercial broilers during poultry processing.

Abstract
We detected the mcr-1 gene in 21 (14.8%) Salmonella isolates from pigs at slaughter; 19 were serovar Typhimurium sequence type 34. The gene was located on IncHI2-like plasmids that also harbored IncF replicons and lacked a conjugative transfer region. These findings highlight the need to prevent further spread of colistin resistance in animals and humans.

Abstract
A cross-sectional study of lungs from 1,887 randomly selected pigs from 471 farms from two provinces in the Philippines was carried out to estimate the prevalence of gross pathological lesions, identify potential risk factors and spatial clustering associated with high lung or pleurisy score farms. Lungs from pigs were scored at slaughter. Interviews with the farm managers were conducted to collect information about farm management and biosecurity practices. Of lungs examined, 48% had a lung score above 6 (maximum was 55) and 22% showed pleurisy. When data were aggregated at the farm level, commercial farms were at higher risk of being high lung score farms and high pleurisy farms compared to smallholder farms (P < 0.01). Variables that were associated with an increased risk of a farm being a high lung score farm included the presence of a market pen on the farm, not vaccinating against hog cholera and the presence of another piggery within 500 m. Practicing "feedback" (feeding pig manure, viscera or aborted material to pigs), presence of another piggery within 500 m, and allowing commercial livestock vehicles on farm were all associated with an increased risk of being a high pleurisy farm. Spatial analyses revealed a primary 9.6 km-radius cluster of 39 farms with high lung and pleurisy scores in the southeast of Bulacan province. High lung and pleurisy score farms could be targeted to improve on-farm disease control programs to reduce the risk of respiratory diseases. Clusters of high scoring farms could be prioritized for further investigations or for coordinating intervention efforts.

Abstract
Simple Summary Animal products are consumed by a large majority of the global population, yet public knowledge about animal handling and welfare during the slaughter process is limited. An open educational resource about slaughter, called “Animal welfare at slaughter and killing” has been openly available on the Internet since 2012. The resource includes learning objectives, 650 webpages, 800 illustrations, 150 video clips, self-tests with feedback and a series of take-home messages. The resource is designed to not only be relevant to the primary target group, i.e., the abattoir staff, but also to anyone with an interest in the topic. A study was conducted to evaluate the use and impact of this educational resource with participants from slaughterhouses, universities, authorities and non-governmental organizations (NGOs). Focus group sessions were video recorded and analysed using an interpretive thematic analysis. Improved knowledge among consumers may lead to more well-founded decisions at purchase of meat and improved awareness among citizens to increase public pressure to improve animal handling at slaughter. Abstract Knowledge about slaughter of animals for human food is often perceived as controversial and therefore not made widely available. An open educational resource on the Internet about the slaughter of animals has created tension at launch but also resolved tension. Aiming to explore how this resource at the boundary between academia and society is perceived, a study was carried out with participants from slaughterhouses, universities, authorities and NGOs. Focus group sessions were video recorded and transcripts were coded using an interpretive thematic analysis. The results show that an open educational resource in addition to contributing to learning and awareness raising can also induce dialogue (and thus resolve tension) about animal welfare and contribute to animal welfare resilience. Our results also indicate that participants had diverse opinions about the influence of multimedia on attitudes towards animal slaughter. The use of additional instruments such as comment fields may lead to more knowledgeable citizens and socially robust knowledge, but has to be carefully weighed against the risk of false or fake data.

Abstract
With the constant increase in poultry meat consumption worldwide and the large variety of poultry meat products and consumer demand, ensuring the microbial safety of poultry carcasses and cuts is essential. In the present review, we address the bacterial contamination of poultry meat from the slaughtering steps to the use-by-date of the products. The different contamination sources are identified. The contaminants occurring in poultry meat cuts and their behavior toward sanitizing treatments or various storage conditions are discussed. A list of the main pathogenic bacteria of concern for the consumer and those responsible for spoilage and waste of poultry meat is established.

Simple Summary There are approximately 200,000 unwanted horses annually in the United States. Many are shipped to slaughter, enter rescue facilities, or are held on federal lands. This study aimed to estimate a potential number of available homes for unwanted horses in order to examine broadly the viability of pursuing re-homing policies as an option for the thousands of unwanted horses in the U.S. The results of this survey suggest there could be an estimated 1.2 million homes who have both the perceived resources and desire to house an unwanted horse. This number exceeds the approximately 200,000 unwanted horses living each year in the United States. These data suggest that efforts to reduce unwanted horses could involve matching such horses with adoptive homes and enhancing opportunities to keep horses in the homes they already have. Abstract There are approximately 200,000 unwanted horses annually in the United States. This study aimed to better understand the potential homes for horses that need to be re-homed. Using an independent survey company through an Omnibus telephone (land and cell) survey, we interviewed a nationally projectable sample of 3036 adults (using both landline and cellular phone numbers) to learn of their interest and capacity to adopt a horse. Potential adopters with interest in horses with medical and/or behavioral problems and self-assessed perceived capacity to adopt, constituted 0.92% of the total sample. Extrapolating the results of this survey using U.S. Census data, suggests there could be an estimated 1.25 million households who have both the self-reported and perceived resources and desire to house an unwanted horse. This number exceeds the estimated number of unwanted horses living each year in the United States. This study points to opportunities and need to increase communication and support between individuals and organizations that have unwanted horses to facilitate re-homing with people in their community willing to adopt them.

Simple Summary The identity of Jack the Ripper remains one of the greatest unsolved crime mysteries in history. Jack was notorious both for the brutality of his murders and also for his habit of stealing organs from his victims. His speed and skill in doing so, in conditions of poor light and haste, fueled theories he was a surgeon. However, re-examination of a mortuary sketch from one of his victims has revealed several key aspects that strongly suggest he had no professional surgical training. Instead, the technique used was more consistent with that of a slaughterhouse worker. There were many small-scale slaughterhouses in East London in the 1880s, within which conditions were harsh for animals and workers alike. The brutalizing effects of such work only add to concerns highlighted by modern research that those who commit violence on animals are more likely to target people. Modern slaughterhouses are more humane in some ways but more desensitizing in others, and sociological research has indicated that communities with slaughterhouses are more likely to experience the most violent of crimes. The implications for modern animal slaughtering, and our social reliance on slaughterhouses, are explored. Abstract Hundreds of theories exist concerning the identity of “Jack the Ripper”. His propensity for anatomical dissection with a knife—and in particular the rapid location and removal of specific organs—led some to speculate that he must have been surgically trained. However, re-examination of a mortuary sketch of one of his victims has revealed several aspects of incisional technique highly inconsistent with professional surgical training. Related discrepancies are also apparent in the language used within the only letter from Jack considered to be probably authentic. The techniques he used to dispatch his victims and retrieve their organs were, however, highly consistent with techniques used within the slaughterhouses of the day. East London in the 1880s had a large number of small-scale slaughterhouses, within which conditions for both animals and workers were exceedingly harsh. Modern sociological research has highlighted the clear links between the infliction of violence on animals and that inflicted on humans, as well as increased risks of violent crimes in communities surrounding slaughterhouses. Conditions within modern slaughterhouses are more humane in some ways but more desensitising in others. The implications for modern animal slaughtering, and our social reliance on slaughterhouses, are explored.

Abstract
Various tissues, nasal swabs, urine and blood samples were collected from 376 feral swine at two federally inspected abattoirs in Texas during six separate sampling periods in 2015. Samples were tested for Brucella spp. by culture and serology. Brucella spp. were cultured from 13.0% of feral swine, and antibodies were detected in 9.8%. Only 32.7% of culture-positive feral swine were also antibody positive, and 43.2% of antibody-positive feral swine were culture positive. Approximately, the same number of males (14.0%) and females (12.1%) were culture positive, and slightly more males (10.5%) than females (8.7%) were antibody positive. Our results indicate that serology likely underestimates the prevalence of feral swine infected, and that those who come in contact with feral swine should be aware of the symptoms of infection with Brucella spp. to ensure prompt treatment.

Abstract
Simple Summary Cruelty to animals occurs during production, handling, transport, and slaughter in most countries where Islam is a major religion. Most of the people involved in this, such as those involved in the transport of animals, animal handlers, and butchers, are Muslims. However, many Muslims and Islamic religious leaders are not aware of this cruelty. Islam is a religion that shows compassion to animals as mentioned in the holy book Qur’an and sayings of the Prophet Mohammed (pbuh). This paper highlights what Islam says of the welfare of animals and how animal welfare can be improved by sensitizing all Muslims and religious leaders to the teachings on animal welfare in the Qur’an and the Hadiths so that they can influence their followers. Abstract Islam is a comprehensive religion guiding the lives of its followers through sets of rules governing the personal, social, and public aspects through the verses of the Holy Qur’an and Hadiths, the compilation of the traditions of Prophet Mohammed (pbuh), the two main documents that serve as guidelines. Islam is explicit with regard to using animals for human purposes and there is a rich tradition of the Prophet Mohammad’s (pbuh) concern for animals to be found in the Hadith and Sunna. Islam has also laid down rules for humane slaughter. In many countries animals are killed without pre-stunning. Regardless of pre-stunning, such meat should not be treated as halāl or at least be considered as Makrooh (detestable or abominable), because the animals have been beaten or treated without compassion during production, handling, transport, and slaughter. Many Muslims and Islamic religious leaders are not aware of the cruelty that is routinely inflicted on animals during transport, pre-slaughter, and slaughter in many Islamic countries. There is an urgent need to sensitize all Muslims to the teachings of animal welfare in the Qur’an and the Hadiths. A campaign is needed to apprise religious leaders of the current cruelty that occurs during transport and slaughter.

Simple Summary Improving stakeholder attitudes to livestock welfare may help to facilitate the better welfare that is increasingly demanded by the public for livestock. Knowledge of the existing attitudes towards the welfare of livestock during transport and slaughter provides a starting point that may help to target efforts. We compared the attitudes of different stakeholders within the livestock industries in east (E) and southeast (SE) Asia. Farmers were more motivated to improve animal welfare during transport and slaughter by peer pressure, business owners by monetary gain, and business managers by what is prescribed by their company. Veterinarians showed the most support for improving animal welfare. The results suggest that the role that stakeholders play in their sector of the livestock industry must be considered when attempting to change attitudes towards animal welfare during transport and slaughter. Abstract Stakeholders in the livestock industry are in a position to make critical choices that directly impact on animal welfare during slaughter and transport. Understanding the attitudes of stakeholders in livestock-importing countries, including factors that motivate the stakeholders to improve animal welfare, can lead to improved trade relations with exporting developed countries and improved animal welfare initiatives in the importing countries. Improving stakeholder attitudes to livestock welfare may help to facilitate the better welfare that is increasingly demanded by the public for livestock. Knowledge of the existing attitudes towards the welfare of livestock during transport and slaughter provides a starting point that may help to target efforts. This study aimed to investigate the animal welfare attitudes of livestock stakeholders (farmers, team leaders, veterinarians, business owners, business managers, and those working directly with animals) in selected countries in E and SE Asia (China, Thailand, Viet Nam, and Malaysia). The factors that motivated them to improve animal welfare (in particular their religion, knowledge levels, monetary gain, the availability of tools and resources, more pressing community issues, and the approval of their supervisor and peers) were assessed for their relationships to stakeholder role and ranked according to their importance. Stakeholder roles influenced attitudes to animal welfare during livestock transport and slaughter. Farmers were more motivated by their peers compared to other stakeholders. Business owners reported higher levels of motivation from monetary gain, while business managers were mainly motivated by what was prescribed by the company for which they worked. Veterinarians reported the highest levels of perceived approval for improving animal welfare, and all stakeholder groups were least likely to be encouraged to change by a ‘western’ international organization. This study demonstrates the differences in attitudes of the major livestock stakeholders towards their animals’ welfare during transport and slaughter, which advocacy organisations can use to tailor strategies more effectively to improve animal welfare. The results suggest that animal welfare initiatives are more likely to engage their target audience when tailored to specific stakeholder groups.

Abstract
The risk of Salmonella shedding among pigs at slaughter with regard to their previous on-farm Salmonella status was assessed in a group of pigs from a farm from NE of Spain. A total of 202 pigs that had been serologically monitored monthly during the fattening period and from which mesenteric lymph nodes (MLN) and faecal (SFEC) samples were collected at slaughter for Salmonella isolation were included. A repeated-measures anova was used to assess the relationship between mean OD% values during the fattening period and sampling time and bacteriology on MLN and SFEC. Pigs were also grouped into four groups, that is pigs seronegative during the fattening period and Salmonella negative in MLN (group A; n = 69); pigs seronegative during the fattening period but Salmonella positive in MLN (B; n = 36); pigs seropositive at least once and Salmonella positive in MLN (C; n = 50); and pigs seropositive at least once but Salmonella negative in (D; n = 47). Pigs shedding at slaughter seroconverted much earlier and showed much higher mean OD% values than non-shedders pigs. The proportion of Salmonella shedders in groups A and D was high and similar (26.1% and 29.8%, respectively), but significantly lower than that for groups B and C. The odds of shedding Salmonella for groups B and C were 4.8 (95% CI = 1.5-15.5) and 20.9 (3.7-118) times higher, respectively, when compared to A. It was concluded that a large proportion of Salmonella seronegative pigs may shed Salmonella at slaughter, which would be likely associated to previous exposure with contaminated environments (i.e. transport and lairage). For pigs already infected at farm, the likelihood of shedding Salmonella was much higher and may depend on whether the bacterium has colonized the MLN or not. The odds of shedding Salmonella spp. were always much higher for pigs in which Salmonella was isolated from MLN.

Abstract
European legislation states that after stunning regular checks should be performed to guarantee animals are unconscious between the end of the stunning process and death. When animals are killed without prior stunning these checks should be performed before the animal is released from restraint. The validity of certain indicators used to assess unconsciousness under different stunning and slaughter conditions is under debate. The aim of this study was to validate the absence of threat-, withdrawal-, corneal- and eyelid reflex as indicators to assess unconsciousness in calves subjected to different stunning and slaughter methods. Calves (201±22 kg) were randomly assigned to one of the following four treatments: (1) Captive bolt stunning followed by neck cut in an inverted position (n=25); (2) Non-stunned slaughter in an upright position (n=7); (3) Non-stunned slaughter in an inverted position (180° rotation) (n=25); (4) Non-stunned slaughter in an upright position followed by captive bolt stunning 40 s after the neck cut (n=25). Each calf was equipped with non-invasive electroencephalogram (EEG) electrodes before the slaughter procedure. All reflexes were verified once before the slaughter procedure. At the beginning of the procedure (T=0 s) calves were stunned (treatment 1) or neck cut in an upright position (treatment 2, 4) or inverted position (treatment 3). Calves of treatment 4 were captive bolt stunned 34±8 s after the neck cut. Reflexes were assessed every 20 s from T=15 s for all treatments until all reflex tests resulted in a negative response three times in a row and a flat line EEG was observed. In addition, reflexes were assessed 5 s after captive bolt stunning in calves of treatments 1 and 4. Visual assessment of changes in the amplitude and frequency of EEG traces was used to determine loss of consciousness. Timing of loss of consciousness was related to timing of loss of reflexes. After captive bolt stunning, absence of threat-, withdrawal-, corneal- and eyelid reflex indicated unconsciousness as determined by EEG recordings. After non-stunned slaughter, both threat- and withdrawal reflex were on average lost before calves were unconscious based on EEG recordings. The eyelid- and corneal reflex were on average lost after calves had lost consciousness based on EEG recordings and appeared to be distinctly conservative indicators of unconsciousness in non-stunned slaughtered calves since they were observed until 76±50 and 85±45 s (mean±SD), respectively, after EEG-based loss of consciousness.

Abstract
Guinea pigs (Cavia porcelus) are an important source of nonhuman animal protein in the Andean region of South America. Specific guidelines regarding the welfare of guinea pigs before and during slaughter have yet to be developed. This study critically assessed the humaneness of 4 different stunning/slaughter methods for guinea pigs: cervical neck dislocation (n = 60), electrical head-only stunning (n = 83), carbon dioxide (CO2) stunning (n = 21), and penetrating captive bolt (n = 10). Following cervical neck dislocation, 97% of guinea pigs had at least 1 behavioral or cranial/spinal response. Six percent of guinea pigs were classified as mis-stunned after electrical stunning, and 1% were classified as mis-stunned after captive bolt. Increased respiratory effort was observed during CO2 stunning. Apart from this finding, there were no other obvious behavioral responses that could be associated with suffering. Of the methods assessed, captive bolt was deemed the most humane, effective, and practical method of stunning guinea pigs. Cervical neck dislocation should not be recommended as a slaughter method for guinea pigs.

Abstract
In this article we present a model for Salmonella contamination of pig carcasses in the slaughterhouse. This model forms part of a larger QMRA (quantitative microbial risk assessment) on Salmonella in slaughter and breeder pigs, which uses a generic model framework that can be parameterized for European member states, to describe the entire chain from farm-to-consumption and the resultant human illness. We focus on model construction, giving mathematical formulae to describe Salmonella concentrations on individual pigs and slaughter equipment at different stages of the slaughter process. Variability among individual pigs and over slaughterhouses is incorporated using statistical distributions, and simulated by Monte Carlo iteration. We present the results over the various slaughter stages and show that such a framework is especially suitable to investigate the effect of various interventions. In this article we present the results of the slaughterhouse module for two case study member states. The model outcome represents an increase in average prevalence of Salmonella contamination and Salmonella numbers at dehairing and a decrease of Salmonella numbers at scalding. These results show good agreement when compared to several other QMRAs and microbiological studies.

Abstract
Pigs raised in the United Kingdom are unlikely to be the source of UK human infections. Since 2010, reports of infection with hepatitis E virus (HEV) have increased in England and Wales. Despite mounting evidence regarding the zoonotic potential of porcine HEV, there are limited data on its prevalence in pigs in the United Kingdom. We investigated antibody prevalence, active infection, and virus variation in serum and cecal content samples from 629 pigs at slaughter. Prevalence of antibodies to HEV was 92.8% (584/629), and HEV RNA was detected in 15% of cecal contents (93/629), 3% of plasma samples (22/629), and 2% of both (14/629). However, although HEV is prevalent in pigs in the United Kingdom and viremic pigs are entering the food chain, most (22/23) viral sequences clustered separately from the dominant type seen in humans. Thus, pigs raised in the United Kingdom are unlikely to be the main source of human HEV infections in the United Kingdom. Further research is needed to identify the source of these infections.

Abstract
Electrical water bath stunning is the most commonly used method for poultry stunning prior to slaughter, but has been questioned on animal welfare and product quality grounds. Controlled atmosphere stunning (CAS) methods, involving a variety of gas mixtures, have become increasingly common, at least in Europe. CAS methods have been perceived as an improvement from an animal welfare perspective, partly because birds can be stunned without prior shackling, and are generally considered to result in improved product quality compared to water bath stunning. However, there would still be an interest in alternative stunning methods especially for small to medium size poultry slaughterhouses. This review presents an overview of the modes of action and the technical aspects of poultry stunning methods, including novel and emerging stunning technologies.

Abstract
This study investigated the benefits of hot-water spraying (HWS) as a diagnostic test to verify the absence of signs of life (SOL) before scalding in pigs slaughtered with carbon dioxide (CO2) stunning. A total of 37 108 finishing pigs from five German abattoirs (A to E) operating at 55 to 571 pigs per hour were assessed. Suspended pigs were sprayed onto the muzzle, head and front legs (143 to 258 s post sticking for 4 to 10 s, 57°C to 72°C). Any active movements during HWS were rated as positive test outcomes. In comparison, SOL were considered to be absent if a subsequent manual examination was negative and no active movements were observed following HWS. The incidence of pigs with activity during hot-water spraying (PWA) was restricted to two abattoirs (B: 0.25%; D: 0.02%; A, C, E: 0.00%). PWA showed movements of facial muscles (88%), mouth opening (78%), righting reflex (63%), isolated leg movements (35%) and vocalization (4%). The manual examination was positive in 71% of PWA (corneal/dazzle reflex: 67%/53%, nasal septum pinch: 33%), whereas all inactive pigs tested negative (P99.9% in either case. Any positive manual findings as well as any respiratory activity were instantly terminated using a penetrating captive bolt. Active movements triggered by the shot were shown to be an indicator for SOL (P<0.001). Video analyses revealed that spontaneous movements (SM) following sticking were present in 100% of PWA as opposed to 3.1% in pigs without such activity (controls). Results for different categories of SM in PWA v. controls were as follows: 100% v. 2.6% for mouth opening, 16.0% v. 0.1% for righting reflex and 22.0% v. 0.9% for isolated leg movements (all P<0.001). First mouth opening after sticking was observed later in PWA (28±24 v. 10±7 s), but mouth openings were observed for a longer period of time (141±44 v. 27±25 s) (both P<0.001). PWA with shorter mouth-opening intervals showed higher movement intensities during HWS and more positive manual findings (P<0.05). We conclude that HWS is a promising test for SOL. SM and sustained mouth opening in particular are indicators for compromised animal welfare and affected pigs should be shot by captive bolt.

Abstract
AIM To determine the ability of sheep to mobilise their body reserves after being deprived of feed prior to transport for slaughter. METHODS A total of 240 3- and 4-year-old cull ewes were held off pasture for 0, 9, 18 or 30 hours (n=60 per group) then transported 1 hour by road, unloaded and washed, held in lairage for 3 hours then slaughtered. Blood samples were collected from a subsample of 60 unfasted ewes 1 week earlier, and from all ewes at exsanguination to determine concentrations of serum metabolites indicative of adaptation to fasting. In addition, several attributes of carcass quality were measured. RESULTS At slaughter, increased time off pasture prior to transport resulted in no change in glucose concentrations in serum (p=0.140). There were differences (p<0.001) between the group fasted for 30 compared with 0 hours in mean concentrations of free fatty acids (0.98 (SD 0.32) vs. 0.58 (SD 0.23) mmol/L), β-hydroxybutyrate (0.69 (SD 0.17) vs. 0.42 (SD 0.11) mmol/L), triglycerides (0.29 (min 0.13, max 0.83) vs. 0.22 (min 0.06, max 0.96) mmol/L) and urea (10.17 (SD 1.80) vs. 6.94 (SD 2.03) mmol/L). Different periods of feed deprivation had no effect (p>0.05) on carcass weights (mean 22.7, min 13.2, max 32.9 kg) or dressing out percentages (mean 40.9, min 27, max 49%). Meat ultimate pH was unaffected (p>0.05) by the period of feed deprivation but meat became darker (p<0.05) and had reduced redness (p<0.001) with increasing time off feed. CONCLUSIONS The results suggest that sheep in variable body condition adapted to the periods of feed deprivation by mobilising their energy reserves without any evidence of metabolic depletion (e.g. depleted blood glucose or high meat pH). However, being deprived of feed they probably experience a degree of hunger.

Abstract
Studies that address fish welfare before slaughter have concluded that many of the traditional systems used to stun fish including CO2 narcosis are unacceptable as they cause avoidable stress before death. One system recommended as a better alternative is electrical stunning, however, the welfare aspects of this method are not yet fully understood. To assess welfare in aquaculture both behavioural and physiological measurements have been used, but few studies have examined the relationship between these variables. In an on-site study aversive behaviours and several physiological stress indicators, including plasma levels of cortisol and ions as well as blood physiological variables, were compared in Arctic char (Salvelinus alpinus) stunned with CO2 or electricity. Exposure to water saturated with CO2 triggered aversive struggling and escape responses for several minutes before immobilization, whereas in fish exposed to an electric current immobilization was close to instant. On average, it took 5 min for the fish to recover from electrical stunning, whereas fish stunned with CO2 did not recover. Despite this, the electrically stunned fish had more than double the plasma levels of cortisol compared with fish stunned with CO2. This result is surprising considering that the behavioural reactions were much more pronounced following CO2 exposure. These contradictory results are discussed with regard to animal welfare and stress physiological responses. The present results emphasise the importance of using an integrative and interdisciplinary approach and to include both behavioural and physiological stress indicators in order to make accurate welfare assessments of fish in aquaculture.

Abstract
Assessing unconsciousness is important to safeguard animal welfare shortly after stunning at the slaughter plant. Indicators that can be visually evaluated are most often used when assessing unconsciousness, as they can be easily applied in slaughter plants. These indicators include reflexes originating from the brain stem (e.g. eye reflexes) or from the spinal cord (e.g. pedal reflex) and behavioural indicators such as loss of posture, vocalisations and rhythmic breathing. When physically stunning an animal, for example, captive bolt, most important indicators looked at are posture, righting reflex, rhythmic breathing and the corneal or palpebral reflex that should all be absent if the animal is unconscious. Spinal reflexes are difficult as a measure of unconsciousness with this type of stunning, as they may occur more vigorous. For stunning methods that do not physically destroy the brain, for example, electrical and gas stunning, most important indicators looked at are posture, righting reflex, natural blinking response, rhythmic breathing, vocalisations and focused eye movement that should all be absent if the animal is unconscious. Brain stem reflexes such as the cornea reflex are difficult as measures of unconsciousness in electrically stunned animals, as they may reflect residual brain stem activity and not necessarily consciousness. Under commercial conditions, none of the indicators mentioned above should be used as a single indicator to determine unconsciousness after stunning. Multiple indicators should be used to determine unconsciousness and sufficient time should be left for the animal to die following exsanguination before starting invasive dressing procedures such as scalding or skinning. The recording and subsequent assessment of brain activity, as presented in an electroencephalogram (EEG), is considered the most objective way to assess unconsciousness compared with reflexes and behavioural indicators, but is only applied in experimental set-ups. Studies performed in an experimental set-up have often looked at either the EEG or reflexes and behavioural indicators and there is a scarcity of studies that correlate these different readout parameters. It is recommended to study these correlations in more detail to investigate the validity of reflexes and behavioural indicators and to accurately determine the point in time at which the animal loses consciousness.

Abstract
Captive bolt stunning is used for rendering livestock insensible at slaughter. The mechanical factors relating to performance of 6 penetrating captive bolt gun (CBG) models were examined. The Matador Super Sécurit 3000 and the .25 Cash Euro Stunner had the highest kinetic energy values (443 J and 412 J, respectively) of the CBGs tested. Ninety percent (27/30) of CBGs held at a government gun repository (United Kingdom) were found to have performed at a normal standard for the model, while 53% (10/19) of commercial contractor CBGs tested were found to underperform for the gun model. When the .22 Cash Special was fired 500 times at 4 shots per min, the gun reached a peak temperature of 88.8°C after 2.05 hr. Repeat firing during extended periods significantly reduced the performance of the CBG. When deciding on the appropriate CBG/cartridge combination, the kinetic energy delivered to the head of the nonhuman animal, bolt penetration depth, and species/animal type must be considered. It is recommended that CBGs are routinely checked for wear to the bolt and barrel if they are repeatedly fired in a session.
