Abstract
Climate change poses a global threat to public health. This study investigated the understanding of, and concern over, climate change in Saudi Arabia and examined the associations with sociodemographic characteristics and dietary choices. This cross-sectional study consisted of 280 participants recruited via an online survey. Of the study participants, 45% demonstrated a sufficient understanding of climate change, and 56% were highly concerned about climate change. Male sex, medium-high monthly income, high education, and governmental employees were determinants of sufficient understanding of and great concern over climate change. Participants who exhibited a high understanding of climate change score demonstrated significantly higher consumption of vegetables (3.47 ± 0.98) and vegetable oils (3.26 ± 1.07) than participants with a low understanding score (3.31 ± 0.96 and 3.00 ± 1.01, respectively) (p ≤ 0.01). Additionally, participants with higher concern of climate change scores exhibited lower consumption of red meat (p = 0.0001), poultry (p = 0.003), margarine (p = 0.02), and soy products (p = 0.04). The study revealed a poor understanding of, but great concern over, climate change. The intake of non-climate-friendly food was typically higher than that of climate-friendly food. These findings are critical for developing strategies to enhance awareness of climate change and encourage people to consume climate-friendly food to mitigate climate change and improve public health.

Abstract
BACKGROUND Todays, due to the impact of human food choices on increasing greenhouse gas emissions, water consumption and environmental degradation, there is a new approach about changing the pattern of food production and consumption, including sustainable food and nutrition system related to consumption. This study aimed to explore the components of a sustainable diet among the factors that affect people's food choices. METHODS This qualitative study was carried out using an in-depth interview with 33 individuals aged 30-64 years old living in different areas of Tehran. Data collection, data analysis and theoretical conceptualization were performed simultaneously. MAXQDA 10 software was used for managing and organizing the data. RESULTS In this paper, the findings are categorized according to the key components of a sustainable diet in five themes: "Health and Nutrition", "Food and Agriculture Security", "Environment and Ecosystems", "Markets, food trade and production chains", "social, cultural, and policy factors" were categorized. Meanwhile, the components of the "Health and Nutrition" domain had the highest contribution and the components of the two domains "food and agriculture" and "environment and ecosystems" had the lowest role based on the participants' perception in this study. CONCLUSION Considering to the low importance of the components of a sustainable diet in food choices of the community, promoting the individual awareness of sustainable diet components, clarifying the importance of food choices in creating environmental impacts and leading the national macro policies in the field food and nutrition toward sustainable diet goals are essential.

Abstract
Since 2015 there has been a surge of academic publications and citations focused on consumer food waste. To introduce a special issue of Appetite focused on the drivers of consumer food waste we perform a transdisciplinary and historical review of the literature through a co-citation network analysis and topic modelling approach. We show that the rapid increase in publications is largely attributable to an urgency caused by the Sustainable Development Goals and climate change. Topic modelling reveals that the dramatic quantitative increase of publications has also produced a variety of evolving themes, and that a metaphorical Cambrian Explosion is occurring after decades of academic inactivity. Network analysis results show that consumer food waste features in thousands of articles and hundreds of journals, but that the citation practices of academics are becoming highly concentrated, as 20% of journals attract over 80% of citations. Finally, by examining the burstiness and transdisciplinary structure of citation networks we show that though the field has historically been dominated by empirical articles, it is now starting to show signs of maturity as a flurry of review papers help to consolidate knowledge.

Abstract
PurposeThe main purpose of the study is to examine the moderating influence of motherhood on the linkage between feeling guilty and willingness to buy organic food.Design/methodology/approachThe data were collected using a questionnaire from female consumers and analyzed with structural equation modeling.FindingsThe structural equation model results revealed that food safety concern and environmental concern influence feeling guilty about buying conventional food products. The empirical findings also supported the positive effect of feeling guilty on willingness to buy organic food. Additionally, for mother consumers, the impact of food safety concern and environmental concern on feeling guilty was greater than non-mother consumers. Similarly, moderator analyses revealed that the influence of feeling guilty on willingness to buy organic food is significantly higher for mothers.Originality/valueReferring to the attitude-behavior-context (ABC) theory, the current research aimed at filling the knowledge void by examining how motherhood moderates the relationship between feeling guilty and willingness to buy organic food. Hence, understanding the moderation role of motherhood provides newer insights into consumer behavior and marketing literature. The results of the research can help both organic food producers and retailers to develop successful marketing strategies.

Abstract
Sustainability has become an important driver in defining business strategies, affecting most critical corporate functions and changing the way in which value is created, communicated, and distributed. This is increasingly impacting marketing practices, in particular, through promoting the development of sustainable marketing in the food sector. In line with this, our study aimed to investigate if and how sustainable marketing practices affect consumer loyalty to a specific brand. To answer our research questions, we relied on the results of a survey submitted to a sample of 907 Italian consumers of biscuits. Results showed that the consumers’ attention to sustainable issues (in the absence of adequate information that can guide them in choosing a brand) did not result in brand loyalty. The same outcome was found when consumers were overloaded by marketing campaigns, which had the effect of confusing users and making them unfaithful. Ultimately, when consumers showed both engagement with sustainable concerns and sensitivity to marketing initiatives (i.e., they are sensitive to sustainable marketing practices), a positive effect on brand loyalty was observed. Our results contribute to the emerging stream of literature discussing the relevance and potential impact of sustainable marketing.

Abstract
The outbreak of the COVID-19 pandemic has strongly influenced consumers' habits and behaviours, creating a more sustainable and healthier era of consumption. Hence, there is a potential for further expanding the green food sector in China. The theory of planned behaviour (TPB) is one widely used framework to explain consumers' food choices. Considering consumers' internal norms, their perceptions of green food attributes, and the shifting consumer behaviour, our study has extended the TPB framework (E-TPB) by adding constructs of moral attitude, health consciousness, and the impact of COVID-19 (IOC). The results of structural equation modelling among 360 functional samples revealed that the E-TPB model has a superior explanatory and predictive power, compared with the original TPB model regarding Chinese consumers' green food buying intentions in the current and post-pandemic periods. The path analysis demonstrated that attitude, perceived behavioural control, moral attitude, health consciousness, and IOC have significant positive effects on green food purchase intentions. However, the association between subjective norm and purchase intention varies within the TPB and E-TPB models, which showed a non-significant impact in E-TPB. These findings can generate more suitable managerial implications to promote green food consumption in China during the current and post-pandemic periods.

Abstract
In the United States, typical dietary patterns are not necessarily healthy and sustainable. In order to shift diets, we need to provide support to individuals in a way that reflects what matters most to them. In this study, we aimed to identify the considerations that are most important to individuals regarding food-related decisions, and to determine how those considerations relate to specific foods, with a focus on health and environmental sustainability. In a sequential mixed-methods design, we first conducted 27 semi-structured interviews with participants in California and Nebraska. These interviews included a free-listing activity, where we used a technical construct of salience, Smith's S Index, to identify the considerations that were most important to our participants. We followed up with 20 of those participants to complete a pile-sorting survey, where participants sorted and rated 42 food items for price, taste, health, convenience, familiarity, and environmental impact. Our findings showed that the most salient considerations cited by our participants were price, health, taste, and time. There was consensus for how participants rated the foods for price, taste, convenience, and familiarity. However, there was only weak consensus for how participants rated the foods for health impact, and no consensus for how participants rated the foods for environmental impact. There was also disagreement on how to sort new plant-based products intended to replace or substitute meat and other animal-based foods. These findings have implications for how to communicate about healthy and sustainable diets. They highlight conflicting considerations, disagreement in classification of new products, and limited consensus for perceived health and environmental impact of foods, which present challenges to the achievement of diets that are healthy and environmentally sustainable in the United States.

Abstract
Sustainability is a complex and multifaceted concept that comprises environmental, economic, social, and cultural dimensions. Growing consumer concerns over the impacts of global meat production and consumption have led to increasing interest in sustainability initiatives and the use of sustainability labels. Yet, an understanding of what sustainability means to consumers in the context of meat and how consumers relate production-related credence attributes of chicken meat to sustainability remains limited. Between September 2019 and January 2020, an exploratory research study was conducted using a multi-method approach. Participants completed an online survey before participating in a series of eye-tracking choice tasks followed by in-depth interviews. The study revealed that the environmental dimension of sustainability is most important to consumers’ definition of a “sustainable food system”. Likewise, the sustainability of chicken meat products was most commonly associated with the perceived environmental impact of chicken meat production, followed by animal welfare aspects. Consumers made incorrect inferences about some sustainability labels and these inferences sometimes contributed to positive associations with sustainability. Consumers frequently associated a higher price with higher sustainability, indicating a belief that “doing the right thing” might cost more. This study provides new insights regarding consumers’ perceptions of production-related credence attributes and sustainability labels.

Abstract
Sustainability appears to be increasingly important to consumers. In order for companies to reach their sustainability targets and offer more environmentally friendly solutions to consumers, food producers and retailers have begun to change their packaging to more recyclable, bio-based and biodegradable packaging. This study evaluated the sensory characteristics of paper-based prototype packages developed for two product categories (biscuit and meat packages) using a trained sensory panel. Consumer liking, preference and purchase intent were assessed by 130 participants. For the biscuit packages, no significant differences were observed for the liking of any of the four dimensions assessed (appearance, design, feel or overall liking). However, consumer segmentation identified three relatively homogeneous groups of consumers exhibiting differences in the hedonic reaction to the three packages. For the meat packages, significant differences and preference were observed between the original and paper-based packages. For both categories, the purchase intent was low, indicating that further work needed to be done to improve several quality characteristics (e.g., design, size and strength of the package), which would lead to better consumer acceptability.

Abstract
There is a tendency towards greater expectations of consumer goods and services in society-what was once judged as ideal may now be a bare minimum. This presents a challenge for food providers in the upcoming decades. As the more demanding baby boomer cohort ages, health institutions of the future will face challenges meeting their food expectations. The purpose of this study was to explore expectation type dynamics and function with updated empirical material on aging consumers expectations of institutional food and advance our current understanding of how consumers evaluate their expectations. This qualitative study employed in-depth semi structured interviews with 14 informants between the age of 58-79. Content analysis was performed to capture the informants' food expectations based on the expectation hierarchy proposed by Santos and Boote. Analyzing the content and relationship between different expectation types led to three main findings: expectation functions and content, interconnectedness, and the role of affect. Based on the findings, this study contributes by making several propositions for future research and proposes an updated expectancy-disconfirmation model. Importantly, this study provides novel knowledge that can help health institutions understand and meet aging consumers expectations of institutional food.

Abstract
Not least from an ecological and health perspective, it can be posited that a broader part of consumers should practice sustainable diets. People who are already willing to do so are often confronted with the intention-behavior gap, caused by a range of internal and external factors. To eliminate these barriers requires a deeper and more comprehensive understanding of these factors and their interplay. Therefore, a think aloud study with 20 adult German participants was conducted to explore the four chosen external factors of availability, education, advertising and price. Furthermore, questionnaires for all four factors were handed out and a follow-up interview was conducted to gain additional qualitative data. Results show that these four external factors seem to have a major impact on the intention-behavior relation. According to the participants all factors interact in some way with other internal and external factors, making practicing sustainable diets a complex activity. In conclusion, the four external factors availability, education, advertising and price need to be addressed by various stakeholders within our food systems in order to move forward in the process of making sustainable diets practicable and sustainable food systems firmly established.

Abstract
The present research aims to investigate the extent to which sensory appeal, nutritional quality, safety, and health determinants influence purchase intention, consumption, and satisfaction of consumers towards convenience food. The non-probability purposive sampling approach was adopted for the recruitment of consumers. A pre-tested questionnaire was used to collect data from 501 consumers. Descriptive statistics, confirmatory factor analysis, and structural equation modeling were adopted to analyze the data. Factor loading, Cronbach’s alpha, composite reliability, average variance extracted, and correlations estimate of constructs revealed good internal consistency and reliability of scale items as well as convergent and discriminant validity of the constructs. The path analysis of structural model demonstrated positive relationship between sensory appeal, nutritional quality, safety attributes, healthiness, and purchase intention of convenience food. Further, the path analysis of structural model revealed that purchase intention with consumption as well as consumption with satisfaction were positively associated for convenience food. Sensory appeal was the key determinant influencing purchase intention, consumption, and satisfaction of consumers towards convenience food. The good taste, pleasant appearance, nice smell, and appealing texture within sensory appeal were the most important factors influencing purchase intention, consumption, and satisfaction of consumers towards convenience food. Further, the consumers in emerging economies such as India focus more on sensory appeal in convenience food choice.

Recently, we have seen energy-efficient light-emitting diode (LED) light bulbs rapidly replace incandescent ones. However, results of new research are indicative of adverse health impacts of LED lighting, which is characterized by enriched blue light. Our study aims to reveal whether using color priming by attaching red/green traffic-light icons on light bulbs influences consumers’ preferences of light bulbs. We conducted a field study simulating the buying process, in which participants (N = 572) were presented with LED and carbon incandescent bulbs. We alternately displayed two pairs of bulbs: (1) in their original packaging and (2) in packages marked with traffic light icons (red = LED). Our results confirm that traffic light icons significantly (p < 0.01) increase the odds of choosing the healthier carbon bulb. The results highlight the benefits of attaching traffic light icons to light bulb packaging, helping consumers to make more health-conscientious purchasing decisions. Nowadays, this study’s contribution is more significant due to COVID-19 restrictions and stay-at-home policies, since people work or study remotely, which increases their exposure to household lighting. These results may incentivize policymakers to enforce adding traffic light icons to light bulb packaging, thus encouraging LED light bulb manufacturers to reduce the blue light component in order to improve the health aspect of their bulbs.

Abstract
Despite impressive market growth, increasing demand and economic importance of convenience food in emerging economies such as India, comprehensive research regarding the role of psychological and social determinants on convenience food choice is lacking. Therefore, this research aims to investigate the influence of convenience orientation, social status, moral attitude, mood, spiritual concern, religious beliefs and ethical values on purchase intention and consumption of convenience food. The non-probability purposive sampling method was adopted for recruitment of participants. A pre-tested questionnaire was used to collect data from 501 consumers. The descriptive statistics, confirmatory factor analysis and structural equation modeling were carried out to analyse the data. The factor loading, Cronbach’s alpha, composite reliability, average variance extracted, and correlations demonstrated good internal consistency and reliability of scale items as well as convergent and discriminant validity of the constructs. The model fit indices revealed that measurement and structural models fitted well with data. The path analysis of the structural model demonstrated that convenience orientation (β = 0.789 ***, t = 32.462), moral attitude (β = 0.594 ***, t = 20.984), mood (β = 0.586 ***, t = 18.683), spiritual concern (β = 0.145 ***, t = 3.23), religious beliefs (β = 0.451 ***, t = 14.787) and ethical values (β = 0.497 ***, t = 16.678) were positively related with purchase intention and consumption of convenience food (*** Significant at p ≤ 0.01). The path analysis of structural model also indicated that social status was not linked with purchase intention and consumption of convenience food. The convenience orientation was the key determinant influencing purchase intention and consumption of convenience food.

Abstract
The COVID-19 pandemic has profoundly disrupted household food purchasing and preparation, including elements identified as important drivers of household food waste. The two main aims of this study were (1) to examine changes in food waste behaviors since the start of the COVID-19 pandemic in the U.S. and Italy; and (2) to investigate potential predictors of food waste behavior, including avoidance of supermarkets, increased home cooking, and increased role of health concerns in food choices. A sample of n = 478 (79% female) individuals from the U.S., mean (SD) age = 30.51 (10.85), and n = 476 individuals from Italy, (78% female), mean (SD) age = 33.84 (12.86), completed an online survey between April 8th and April 28th 2020. Just under half of respondents (49%) reported decreased food waste since the start of the pandemic. Rates were significantly higher among the U.S. sample (61.5%, n = 294) compared to the Italian sample (38%, n = 180). Controlling for the time since restrictions were introduced, age, gender, and perceived financial security, logistic regression revealed greater reduction in food waste since the beginning of the pandemic for U.S. individuals relative to participants from Italy (OR = 0.47, p < .001). In addition, increased importance of health concerns when making food choices (OR = 1.34, p < .005) as well as more frequent cooking (OR = 1.35, p < .001), and greater avoidance of supermarkets (OR = 1.15, p = .049) were associated with greater probability of less food waste. Scarcity and greater reliance on cooking may encourage individuals to reflect on food waste practices. Further research should explore how these factors may be targeted to reduce food waste beyond the pandemic.

Abstract
Resumo Este trabalho objetivou apresentar aspectos relacionados à utilização do ultrassom no processamento de frutas e hortaliças, como o funcionamento do método, os efeitos no alimento, as aplicações, os aspectos sensoriais e a percepção dos consumidores. As mudanças dos hábitos alimentares e a busca do bem-estar refletem no aumento da procura por alimentos naturais, como as frutas e as hortaliças. Estes alimentos podem sofrer alterações microbiológicas ao longo da cadeia produtiva, sendo necessária a aplicação de boas práticas agrícolas e de manipulação, e processos tecnológicos de conservação para a garantia da qualidade do produto. O ultrassom é uma tecnologia emergente aplicada no processamento de frutas e hortaliças que está relacionada a melhorias na qualidade e preservação. O princípio básico do ultrassom é a cavitação acústica, que envolve o crescimento e colapso de bolhas durante períodos de rarefação e compressão, causando alterações químicas, físicas e mecânicas no alimento. Essas alterações estão relacionadas à inativação de micro-organismos e de enzimas, à remoção de resíduos e às melhorias na qualidade físico-química, e à acessibilidade de compostos bioativos. Além disso, a aplicação deste método pode ter boa aceitabilidade pelos consumidores, que procuram alimentos mais naturais e submetidos a processos que não causem impacto ambiental.

Abstract
Background Meeting the UN Sustainable Development Goals requires a relatively rapid transition towards a circular economy. Therefore, a multidisciplinary perspective is required to sketch why a transition from diets based primarily on animal proteins towards diets based primarily on plant proteins products is extremely urgent for both food security and sustainability. Scope and approach This review starts out by identifying ecological, economic and social aspects of sustainable food consumption. Subsequently, it is argued how protein supply is underlying and linking the top-3 of anthropogenic impacts based on the planetary boundaries concept, i.e. 1) biodiversity loss, 2) nitrogen cycle acceleration, and 3) carbon cycle acceleration (resulting in climate change). These environmental impacts associated with current Western food consumption need to be reduced urgently. In order to address the inefficiencies inherent to current dietary patterns, therefore, a ranked list of more sustainable options is proposed, based on their order of magnitude. Addressing consumers, industry, and governmental stakeholders plus cultural aspects, challenges and options are sketched. Key findings and conclusions Clearly, a dietary transition from primarily animal towards plant protein products is required. Fortunately, new dietary guidelines are increasingly taking sustainability into account and the contours of a diet transition are slowly emerging.

Abstract
Moving towards sustainable food systems and food consumption are proposed as strategies to reduce environmental impact. However, these strategies require joint action between different stakeholders, including the general population's knowledge and perception, as final consumers. To assess the knowledge and awareness on food sustainability and environmental impact concepts in a representative sample of Spanish adult population, we conducted a cross-sectional, nationally representative telephone survey. After random selection, 2052 respondents aged ≥18 years (57% woman and 43% men) participated. A questionnaire was specifically designed for the research. Participants showed a good attitude towards sustainable diets, which were described as healthy by 40% of the population. Most of the responders (>70%), did not well understand ecological and carbon footprints, and green and blue water concepts. Men declared a higher understanding of sustainability concepts, as compared to women. More than 50% of the population misunderstood the impact of meat and derivatives production on sustainability, and 70% perceived the same for fish and dairy products. Women were more prone to pay more money to afford a sustainable diet than men were. In conclusion, although consumers show a positive attitude towards sustainability, important misconceptions remain, and thus require intervention through education, information, and motivation.

Abstract
BACKGROUND/AIMS EAT-Lancet Commission's Planetary Health Diet proposed a diet that integrates nutrition and sustainability considerations, however its affordability is unknown in many country-specific contexts, including Australia. The aim of this study is to develop a healthy and sustainable food basket modelled on the Planetary Health Diet to determine the affordability of the Planetary Health Diet basket across various socio-economic groups, and compare this affordability with a food basket modelled on the typical current diet, in an Australian setting. METHODS An Australian-specific Planetary Health Diet basket was developed for a reference household (2 adults and 2 children) modelled on the Planetary Health Diet reference diet, and compared to a previously-developed Typical Australian Diet basket. The cost of each food basket was determined by online supermarket shopping surveys in low, medium and high socio-economic areas in each Australian state. Basket affordability was determined for the reference household by comparing the basket cost to disposable income in each socio-economic group in each state. Mann-Whitney U tests then determined if there were significant differences between the median costs and the median affordability of both baskets. RESULTS The Planetary Health Diet basket was shown to be less expensive and more affordable than the Typical Australian Diet basket nationally, in all metropolitan areas, in all socio-economic groups across Australia (median cost: Planetary Health Diet = AUD$188.21, Typical Australian Diet = AUD$224.36; median affordability: Planetary Health Diet = 13%, Typical Australian Diet = 16%; p = < 0.05). CONCLUSIONS This study showed the Planetary Health Diet to be more affordable than the Typical Australian Diet for metropolitan-dwelling Australians. IMPLICATIONS These results can help to inform public health and food policy aimed at achieving a healthy and sustainable future for all Australians, including reductions in overweight/obesity rates and increased food security.

Abstract
This study applied a qualitative approach to investigate the underlying influences on consumers' green food consumption from the intention generation phase to intention execution phase in the perspectives of purchase intention and the intention-behaviour gap (IBG). Additionally, the impact of the "Coronavirus Disease 2019" (COVID-19) pandemic on consumers' green food purchases was explored. Research data were derived from semi-structured in-depth interviews with 28 consumers and analyzed using grounded theory. The findings identified factors that influenced intentions and the IBG in the process of consumers' green food purchases. Specifically, these findings reported that health consciousness, perceived attributes, environmental consciousness, social influence, family structure, and enjoyable shopping experiences were identified as major drivers for generating consumers' green food purchase intentions. High prices of green food, unavailability issues, mistrust issues, and limited knowledge were factors triggering the gap between green food purchase intentions and behaviours. In addition, the results revealed that the COVID-19 crisis increased consumers' green food purchase intentions, whereas the IBG widens as a result of issues of unavailability, price, and panic. These findings will help stakeholders build future policy and suitable strategies to better promote green food consumption in the Chinese context.

Abstract
Changing the everyday food-related behaviours of consumers is a critical part of tackling the global food waste challenge. Comprehensive frameworks of household food waste and consumer behavior are needed to guide the development of targeted interventions and future research agendas. This study systematically reviews food waste and behaviour studies from developed nations to provide an overview of the current research field. It uses a multi-level perspective to organise the various factors influencing food-related behaviour and proposes a new, multi-level, framework of consumer behaviour and household food waste. A novel addition to the field, the framework gathers factors at micro (individual), meso (household), and macro (external to the household) levels and argues that behaviour and food waste emerge from their interactions. Our review also reveals a research domain with disciplinary and methodological ‘bald spots’ and an over-emphasis on individual level factors. A multi-level research agenda focusing on under-explored factors and interactions between factors across levels is presented, and consideration given to multi-level interventions that support consumer behaviour change to reduce household food waste.

Abstract
The challenge of sustainable development and consumption is to meet current wants without impoverishing future generations and the planet in the long term. Therefore, new patterns of sustainable practices are increasingly promoted. The purpose of the present study is to realize a systematic review aimed to analyze the contents and features of articles dealing with new trends in consumers’ sustainable consumption. One hundred and four papers published in the last five years were retrieved and analyzed through a lexicographical analysis using the software T-LAB. The results show that, even if most of the current studies focus almost exclusively on the environmental impact of sustainability, the social perspective is also recently taking hold. Evidence suggests prevailing attention towards consumers’ appeal and consumption of eco-friendly food products, together with a growing interest in the last years in consumers’ practices in other key sectors, such as tourism, commerce, and clothing. Future research should spotlight the less explored frameworks, looking at the economic and social sides of sustainability in a variety of contextual settings. At the same time, consumer-focused research should not forget to look at consumers’ sustainable behavior as a whole and its impacts from the perspective of planet, people, and profit.

participants living in the Centre of Portugal. The questionnaires were applied after informed consent
only to adults (aged 18 or over) and the data were collected from January and December 2017 among
the Portuguese population.
Results:
The participants’ food choices were, in general, influenced by environmental and political
determinants (0.77 ± 0.53, in a scale from -2 to +2). It was also observed that the elderly, men and
the participants who had a university degree were more influenced by these determinants. These findings
were similar for those who lived in urban areas, the retired, the participants who had a professional
activity or studies in agriculture areas and those who were responsible for buying their own
food. Furthermore, there were found significant differences between age groups, genders and the
levels of education. There were also observed significant differences between the different living
environments, professional status, regarding the areas of work or studies and also between the participants
who were responsible for buying their one food and the ones who were not. These findings
are very important because they highlight the complicity of people’s food choices and are determinant
for the development of strategies that can improve people’s eating habits.
Conclusion:
This paper fulfills an identified need to study the environmental and political determinants
underlying the Portuguese food choices.

Abstract
Growth in the consumer health and wellness industry has led to an increase of packaged foods marketed as health food (HF) products. In consequence, a ‘health halo’ around packaged HF has arisen that influences consumers at point-of-purchase. This study compared product claims (nutrient content claims (NCC), health claims and marketing ‘buzzwords’) displayed on packaged HF snack products sold in HF stores and HF aisles in supermarkets to equivalent products sold in regular aisles (RA) of supermarkets. Product Health Star Rating (HSR), nutrient profile and price were also compared. Data were collected for 2361 products from three supermarket chains, two HF chains and one independent HF store in Sydney, Australia. Mann-Whitney U tests compared the product claims, HSR, nutrient composition and unit ($) price. HF snacks displayed significantly more product claims per product compared to RA foods (HSR ≤ 2.5), median (IQR) 5.0(4.0) versus 1.0(2) and (HSR > 2.5) 4.0(4.0) versus 3.0(4), respectively (p < 0.001). A significantly different HSR was evident between HF and RA snack products, median 2.5(0) versus 2.0(1.5), respectively (p < 0.001). HF snacks cost significantly more than RA snack foods, irrespective of product HSR (p < 0.001). These findings support the recommendation for revised labelling regulations and increased education regarding consumers food label interpretation.

Abstract
In recent decades, the food industry has been faced with new challenges, and it has had to develop new types of diets and produce new types of foods that can slow down the spread of chronic diseases. The aim of our research was to identify the characteristics of plant-based nutrition, based on international and Hungarian literature. The comprehensive analysis was performed based on the theoretical model called Theory of Planned Behavior, in the course of which the perceived and objective benefits of and barriers to the conversion to a plant-based diet were examined. According to our results, the main benefits of plant-based nutrition are its many factors associated with a reduction in risk of developing numerous chronic diseases. This is followed by benefits of well-being and satisfaction, followed by ethical and environmental benefits. The most commonly reported inhibitory factor of a vegetarian diet is the enjoyment of eating meat and the difficulty in giving up meat consumption. This is followed by health considerations, e.g., lack of various ingredients in foods. Convenience and taste factors are also important disincentives, as well as the irrelevant nature of some plant-based nutrition information sources. Besides, social barriers, negative discrimination, and negative effect on mental health associated with them can also be a hindrance, as can financial barriers. The classification developed during our analysis can serve as a relevant guideline for decision-makers, and also as a basis for further primary qualitative and quantitative research.

Abstract
PurposeThough the concern over pro-environmental behavior is growing, there is a lack of a valid scale to measure pro-environmental behavior in nutricosmetics context. Nutricosmetics products are believed to boost health and fitness and thus gained worldwide popularity. Many consumers in recent days are purchasing nutricosmetics products because of its positive impact toward human health and less harm toward the environment. However, to date, there is no valid instrument to measure this construct. To fill this gap in the existing literature, this study aims to develop a valid and reliable scale to measure pro-environmental behavior in nutricosmetics purchase (PEB-NP).Design/methodology/approachTo develop and validate the PEB-NP scale, a sequential process is followed which includes item generation, item selection, item purification and item validation. Relevant literature was reviewed and qualitative interviews were carried out to generate the items. Next, experts’ opinion was sought to select the items. Two studies were conducted (N= 150,N= 448) to explore the factor structure and to validate the scale. Exploratory factor analysis (EFA) was used to purify the scale, whereas confirmatory factor analysis (CFA) using SmartPLS (version 3) was used to validate the scale.FindingsBased on EFA output, 14 items were retained which were then validated using CFA. The results revealed that, PEB-NP is a hierarchical multi-dimensional construct. The dimensions are “environmental aesthetics,” “conservation behavior (reduce and recycle)” and “health consciousness.” The findings from CFA confirmed the EFA results and established that pro-environmental behavior is a third-order factor model in which conservation dimension is consisted of two sub-dimensions, namely, “reduce” and “recycle” behavior.Practical implicationsThe newly developed scale will enable the marketers and policymakers to segment their consumers based on this scale to better strategize the marketing efforts in fulfilling their needs. Not only this, the PEB-NP scale will benefit marketers in understanding the behavioral pattern and purchase preference of the pro-environmental consumers with regard to the nutricosmetics consumption. This research also provides suggestions for future researchers in the pro-environmental behavior and nutricosmetics fields.Originality/valueThis study is a pioneer study to develop and validate the PEB scale in the context of nutricosmetics purchase.

Abstract
Pressure points in global food supply where resilience in supply chains can be limited or controlled are the equivalent of Critical Control Points in food safety systems. The approach of using critical control in supply chains can provide insights for nutritional improvement, sustainable food trade and food waste reduction. The pressure points determine the provision of a secure and sustainable food system where the outcomes of reducing their criticality are identified in the UN Sustainable Development Goals and other international programmes. These seek to reduce climate change impact and improve public health provision. While policy makers are rightly focussed on these targets, the data analysis methods required to rank and associate resource flow pressure points with commercial food supply chains and nutritional goals remain untested. Here, we show how methodologies can identify where opportunities to tackle future criticality exist, and where they are currently being overlooked for food categories that have the greatest consumer and dietary protein demand. The analysis provides insights that identify where latent restrictions in resilience can occur, so that the future risk of food insecurity is reduced.

Abstract
The purpose of this study was to identify and analyze consumer choices and evaluate the restaurant service quality, including quality of meals and services, and sustainability practices in restaurants in Warsaw and Kaunas. Our research was conducted using a sample of 1200 adult Poles and Lithuanians. Polish and Lithuanian consumers used catering services with varying frequencies. Different elements influenced their choice of restaurant. However, the common feature was the quality of meals, which in Lithuania was compared only with the price of meals, and with other elements in Poland. In the context of restaurant’s sustainable practices, it has been revealed that surveyed consumers had only partially fit into the contemporary consumption trends. In both countries, consumers have appreciated the use of reusable cutlery and crockery, as well as local and seasonal ingredients, while they did not pay attention to sustainable restaurant practices, such as the use of alternative sources of protein, environmentally friendly forms of energy, and reducing waste and minimization of food losses. The use of cluster analysis and principal component analysis (PCA) allowed a comprehensive assessment of consumer opinions on restaurants in terms of meal quality and service as well as sustainable practices. Restaurateurs should monitor the satisfaction of their customers and recognize the changing needs and habits of consumers.

Abstract
Dietary change has been suggested as a key strategy to maintain food security, improve health and reduce environmental impacts in the face of rising populations, resource scarcity and climate change impacts, particularly in developed countries. This paper presents findings from a quantitative modelling analysis of food availability and environmental implications of shifting the current average Australian dietary pattern to one of two alternative, healthy dietary patterns, the ‘healthy mixed diet’, with a mixture of animal and plant foods, and the ‘healthy plant-based diet’, with only plant foods. Both were constructed in accordance with the Australian Dietary Guideline recommendations, and four sustainability principles: Avoiding over-consumption, reducing intake of discretionary foods, reducing animal products, and reducing food waste. It was assumed that all food was provided domestically where possible, and export of foods only occurred when there was a surplus to domestic requirements. The authors compared the impacts of each dietary pattern on direct food availability, water use, land use, greenhouse gas emissions, fuel and energy use and fertiliser use. The plant-based diet had the best overall environmental and direct food availability outcomes, however had key vulnerabilities in terms of fertiliser and cropping land availability. For the agricultural sector overall, changes in diet had little effect on environmental impact due to the amount and nature of Australian exports, indicating that changes to production methods are also necessary. Likewise, changing diets had little effect on the existing environmentally intensive Australian economy, indicating that changes to other sectors are also necessary.

BACKGROUND A person's meat consumption is often determined by their values and preferences. PURPOSE To identify and evaluate evidence addressing health-related values and preferences regarding meat consumption. DATA SOURCES MEDLINE, EMBASE, Web of Science, Centre for Agriculture and Biosciences Abstracts, International System for Agricultural Science and Technology, and Food Science and Technology Abstracts were searched from inception to July 2018 without language restrictions. STUDY SELECTION Pairs of reviewers independently screened search results and included quantitative and qualitative studies reporting adults' health-related values and preferences regarding meat consumption. DATA EXTRACTION Pairs of reviewers independently extracted data and assessed risk of bias. DATA SYNTHESIS Data were synthesized into narrative form, and summaries were tabulated and certainty of evidence was assessed using the GRADE (Grading of Recommendations Assessment, Development and Evaluation) approach. Of 19 172 initial citations, 41 quantitative studies (38 addressed reasons for meat consumption and 5 addressed willingness to reduce meat consumption) and 13 qualitative studies (10 addressed reasons for meat consumption and 4 addressed willingness to reduce meat consumption) were eligible for inclusion. Thirteen studies reported that omnivores enjoy eating meat, 18 reported that these persons consider meat an essential component of a healthy diet, and 7 reported that they believe they lack the skills needed to prepare satisfactory meals without meat. Omnivores are generally unwilling to change their meat consumption. The certainty of evidence was low for both "reasons for meat consumption" and "willingness to reduce meat consumption in the face of undesirable health effects." LIMITATION Limited generalizability of findings to lower-income countries, low-certainty evidence for willingness to reduce meat consumption, and limited applicability to specific types of meat (red and processed meat). CONCLUSION Low-certainty evidence suggests that omnivores are attached to meat and are unwilling to change this behavior when faced with potentially undesirable health effects. Abstract
There is an increasing interest in healthy and sustainable product characteristics. Consumers determine their dietary intake and frame production systems with their choices. However, little is known about the relationships between health and environmental information in influencing these choices, especially when considering functional foods. This study assessed the influence of health-related and environmental-friendliness-related product information on the willingness to pay (WTP) for functional foods. To this end, a WTP elicitation experiment was set up using a jam-like fruit compote enriched with Aloe vera gel. Participants were provided with different messages related to the health and environmental benefits of Aloe vera products, and were also asked to taste the product. Results indicated that providing new information significantly increased the WTP for the enriched compote. This increase was significant for both health and environmentally based benefits, with the health message leading to a higher WTP. Combining health and environmental messages produced an additive effect on WTP which was independent of the sequential order in which the two messages were given. Results contrasted the view that health messages are the main drivers of WTP, and open a broader range of communication in terms of marketing strategies and sustainable policy objectives.

Abstract
Meat-based diets are the norm in Western societies. This is a problem because meat production is a major contributor to global warming and environmental degradation. Despite the urgency to reduce meat consumption, quantitative studies have shown that there is only a small minority of consumers aware of the meat environmental impact, willing to halt or reduce meat intake for ecological reasons, or who have already stopped or reduced meat consumption because of environmental concerns. We conducted a qualitative synthesis reviewing studies that looked at attitudes towards changing meat consumption. Our focus was on the behavioral change process: Awareness, willingness, and change, aiming to enhance the current understanding of people's attitudes towards reducing meat consumption due to environmental concerns. The studies reviewed show that consumer awareness is hindered by beliefs about food, meat, and personal behavior. Nutrition, health, and taste were found to be both enablers and barriers with regard to willingness. Vegetarians and vegans perceive the environment as simply another reason, among others, to maintain a meatless diet. Based on these results, we offer recommendations for future dietary public health interventions, and for future research endeavors on this topic. This review employed a meta-aggregative approach and partially followed the Joanna Briggs Institute methodology for systematic reviews of qualitative evidence.

Abstract
Today's society is increasingly aware of food consumption patterns. Under the perspective that real consumption trends are often not in line with healthy recommendations, this research focuses on the study of the environmental and nutritional sustainability of two types of food consumption habits present in the northern Atlantic area of Spain (Galicia). The main objective is, therefore to detect the existing deviations between the current Galician diet (GD) and the traditional and increasingly relevant Recommended Atlantic Diet (RAD), allowing verifying whether current consumption patterns ensure an optimal and sustainable nutritional profile. In this sense, the carbon footprint from a Life Cycle Assessment perspective has been estimated as environmental indicator of both dietary patterns and, the nutritional quality has been determined by the Nutrient Rich Diet 9.3 index and the Health gain score. The carbon footprint of both dietary models is moderately high compared to recommended diets such as the Mediterranean one. Comparing the two scenarios, the associated greenhouse gas emissions are about 15% higher for GD than for RAD, mainly due to the higher intake of beef and dairy products. On the other hand, nutritional quality is comparatively higher for RAD than for GD, associated with higher consumption of vegetables and fruits. An additional objective of this work has been to consider a sensitivity analysis to determine the effect of replacing beef with alternative sources. Having in mind this study, it can be concluded that the real consumption pattern in Galicia is far from the recommended one, with worse environmental and nutritional quality. The promotion of social awareness policies to guide consumers in the choice a healthier and more environmentally sustainable dietary pattern should be advisable for regional decision-makers as well as for those who wish to promote adherence to the Atlantic diet in other regions and countries.

Lock-Ins and Agency: Towards an Embedded Approach of Individual Pathways in the Walloon Dairy Sector. SUSTAINABILITY 2019. Abstract
As the 2009 dairy crisis drew attention to the situation of dairy farmers in Europe, the extent of strategical power left to farmers in dairy cooperatives of increasing size is a frequently raised issue. Four dairy cooperatives collect 97% of the milk in the Walloon Region (in the southern part of Belgium). Two of them integrated agro-food multinationals. We decided to analyze the trajectories of Walloon dairy farmers exploring alternatives to the delivery of milk to these mainstream dairy cooperatives. We focused on the territories situated to the east of the Walloon Region, where dairy farming represents 75% of farming revenues. Alternatives consist either of processing milk on farm or in concluding a contract with a cheese processor collecting milk directly from farmers. Our objective was to understand the issues faced in these alternative trajectories and the reason why these alternatives remained marginal. We designed a qualitative case study based on interviews with farmers and local cheese processors. We mobilized evolutionary approaches on the stability and transitions of systems and approaches of change at the farmer level. It appears that the alternative trajectories remain embedded in a broader dairy context. The lock-ins emerging from this context determine the evolution of the farming model towards intensification and the individual identity and capabilities of farmers. We present a model of interconnected and embedded lock-ins, from the organizational frame of the regime to the individual frame. This model illustrates how the agency articulates with structural dynamics. We propose structural measures in the organization of agricultural education and in terms of support to alternative supply chains that will enhance agency in favor of a change.

Abstract
Background: The Food and Agriculture Organisation has called for sustainable diets, which align with SDG 2, Zero Hunger, and SDG 12, Sustainable Consumption and Production. The inclusion of sustainability characteristics in New Zealand's (NZ) eating and activity guidelines (EAGs) may lead to achieving sustainable diets. This study aimed to evaluate the agreement among sectoral professionals of including sustainability characteristics within the guidelines. Methods: Agriculture, environment, and health sector professionals were invited to complete an online survey to establish agreement with sustainability characteristics and sustainability statements. Opinion and attitude questions were completed using a 5-item Likert scale. One-way ANOVA analyses were conducted to compare the level of agreement and differences in means of the sector levels of agreement whilst controlling for covariates. Post-hoc tests were used to determine sectoral differences. Results: Overall, 298 (65% female) respondents completed the survey from the agriculture (37%), environment (22%), and health (41%) sectors. Two-thirds (66%) of respondents were over 35 years and 90% had a tertiary education. Two-thirds (63%) of respondents disagreed that NZ's current food system is sustainable; health (77%) and environment (78%) sector respondents had greater disagreement than those from agriculture (35%; P = 0.00). Overall, 77% of respondents agreed that sustainability characteristics should be included in guidelines; health (90%) and environment (84%) sector respondents had greater agreement than from agriculture (58%; P = 0.00). Five sustainability characteristics received high levels of agreement (>90%) for inclusion: dietary diversity, sustainable seafood, limit processed foods, reduced food waste, and sustainable lifestyle behaviours. Agreement for eight sustainability characteristics was highest among the health and environment sectors vs. the agricultural sector (P < 0.05). A relatively low level of agreement was received from all three sectors, particularly the environmental sector (68.7%), towards the characteristic "to consume recommended serves of dairy products." Only 38.5% of all respondents agreed with the inclusion of "organic food produce." Negative associations were observed between respondents' opinions regarding the sustainability of NZ's current food system and familiarity with the EAGs. Conclusion: Professionals from the agriculture, environment, and health sectors largely support the inclusion of sustainability characteristics in NZ's EAGs. A multi-sectoral approach will be required to address areas of divergence.

Abstract
New processing technologies are gaining popularity worldwide due to several advantages related to food safety, shelf life extension, nutritional and sensory quality. However, consumers can be cautious of food products produced using these technologies. In this context, the objectives of the study were to explore consumers' spontaneous associations with fruit juices processed using different technologies, and to study the influence of food technology neophobia on those associations. A study with 423 Brazilian consumers was conducted to evaluate their perception of five types of juices (fresh juice, cold pressed juice, pasteurized juice, pressurized juice and non-pressurized juice) using word association. Participants also answered the Food Technology Neophobia Scale (FTNS) and a series of socio-demographic questions. Results showed that consumers' attitudes towards processing technologies were mainly defined by top-down processes. Fresh, cold pressed and non-pressurized juice were mainly associated with healthy and natural products, whereas concepts including references to processing technologies were associated with processed products and unhealthiness. Food technology neophobia moderated consumers' perceptions of juice processing technologies. Interestingly, consumers with high technology neophobia perceived juices processed by both conventional and innovative technologies more negatively than those with low or medium levels of neophobia.

Abstract
Current discussions about the concept of nutritional sustainability show a high complexity of this topic leading to many different definitions. Regarding communication issues of nutritional sustainability between actors of food chains this complexity should be reduced. One opportunity to tackle these challenges of reducing complexity might be the concept of ingredient branding. Therefore, the aim of this mini-review is the identification of conditions for ingredient branding application as a communication strategy for nutritional sustainability which might overcome challenges in communicating the complexity between the different stakeholders of supply chains. In doing so, the specific case of agrifood chains is discussed based on the selected characteristics of globalization, increasing consumer demands, foods incorporating credence attributes and price. Along the agrifood chain, a sourcing strategy reflecting nutritional and sustainable aspects might lead to an ingredient branding strategy implying a brand policy for a special ingredient within the final product which is an important component but cannot be clearly recognized by the user. A “nutritional sustainability inside” strategy should reflect the multifaceted information along the agrifood chain and should be based on standardized criteria for nutritional sustainability.

Abstract
New trends in food are emerging in response to consumer awareness of the relationship between food and health, which has triggered the need to generate new alternatives that meet the expectations of the market. Revolutionary fields such as nanotechnology have been used for the encapsulation of nutritional ingredients and have great potential for the management of food additives derived from fruits and plant species. Turmeric, a spice that has been used as a dyeing agent, is recognized for its properties in Ayurveda medicine. This article aims to provide an overview of the characteristics of turmeric as an ingredient for the food industry, including its properties as a coloring agent, antioxidant, and functional ingredient. This article also highlights the potential of nanotechnology to enhance these properties of turmeric and increase the possibilities for the application of its components, such as cellulose and starch, in the development of nanostructures for food development.

Assessing the Carbon Emission Driven by the Consumption of Carbohydrate-Rich Foods: The Case of China. SUSTAINABILITY 2019. Abstract
Background: Carbohydrate-rich (CR) foods are essential parts of the Chinese diet. However, CR foods are often given less attention than animal-based foods. The objectives of this study were to analyze the carbon emissions caused by CR foods and to generate sustainable diets with low climate impact and adequate nutrients. Methods: Twelve common CR food consumption records from 4857 individuals were analyzed using K-means clustering algorithms. Furthermore, linear programming was used to generate optimized diets. Results: Total carbon emissions by CR foods was 683.38g CO2eq per day per capita, accounting for an annual total of 341.9Mt CO2eq. All individuals were ultimately divided into eight clusters, and none of the popular clusters were low carbon or nutrient sufficient. Optimized diets could reduce about 40% of carbon emissions compared to the average current diet. However, significant structural differences exist between the current diet and optimized diets. Conclusions: To reduce carbon emissions from the food chain, CR foods should be a research focus. Current Chinese diets need a big change to achieve positive environmental and health goals. The reduction of rice and wheat-based foods and an increase of bean foods were the focus of structural dietary change in CR food consumption.

Abstract
OBJECTIVE The present qualitative study aimed to gain an in-depth understanding of participants' attitudes, knowledge, perceived effectiveness (a person's belief that his/her behaviour can contribute to environmental preservation) and behaviours relating to a sustainable eating pattern. DESIGN One-to-one interviews (either face-to-face or by telephone) were conducted following a structured interview schedule, audio-recorded, transcribed verbatim and analysed using inductive thematic analysis in NVivo 10. SETTING Victorian (Australia) adult participants recruited via online advertisements, flyers on community advertisement boards and letterbox drops. SUBJECTS Twenty-four participants (mean age 40 years, range 19-69 years; thirteen female, eleven male) were interviewed. RESULTS Participants reported that environmental impact was not an important influence on their food choice. Participants displayed limited knowledge about a sustainable eating pattern, with most unaware of the environmental impact of food-related behaviours. Most participants believed sustainable eating would be only slightly beneficial to the environment. Participants reported undertaking limited sustainable food behaviours currently and were more willing to undertake a food behaviour if they perceived additional benefits, such as promoting health or supporting the local community. CONCLUSIONS The study suggests consumers need further information about a sustainable eating pattern and the environmental impact of food choice. The findings highlight some of the barriers that will need to be addressed when promoting this kind of eating pattern and that a range of interventions will be necessary.

Consumer Readiness to Reduce Meat Consumption for the Purpose of Environmental Sustainability: Insights from Norway. SUSTAINABILITY 2018. Abstract
Food production is associated with various environmental impacts and the production of meat is highlighted as a significant source of greenhouse gas emissions. A transition toward plant-based and low-meat diets has thus been emphasised as an important contribution to reducing climate change. By combining results from a consumer survey, focus group interviews and an in-store field experiment, this article investigates whether Norwegian consumers are ready to make food choices based on what is environmentally sustainable. We ask how consumers perceive the environmental impacts of food consumption, whether they are willing and able to change their food consumption in a more climate-friendly direction, and what influences their perceptions and positions. The results show that there is uncertainty among consumers regarding what constitutes climate- or environmentally friendly food choices and that few consumers are motivated to change their food consumption patterns for climate- or environmental reasons. Consumers’ support to initiatives, such as eating less meat and increasing the prices of meat, are partly determined by the consumers’ existing value orientation and their existing consumption practices. Finally, we find that although providing information about the climate benefits of eating less meat has an effect on vegetable purchases, this does not seem to mobilise consumer action any more than the provision of information about the health benefits of eating less meat does. The article concludes that environmental policies aiming to transfer part of the responsibility for reducing greenhouse gas emissions to food consumers is being challenged by the fact that most consumers are still not ready to make food choices based on what is best for the climate or environment.

Tasty or Sustainable? The Effect of Product Sensory Experience on a Sustainable New Food Product: An Application of Discrete Choice Experiments on Chianina Tinned Beef. SUSTAINABILITY 2018. Abstract
This study aims to contribute to the existing literature by verifying whether the degree of liking of a new food product influences people’s preferences and willingness to pay from a discrete choice experiment when dealing with sustainable food products. To this purpose, we considered the case study of the introduction into the Italian market of a new food product: tinned Chianina meat. Among the attributes considered for this new product, two in particular were related to sustainability: organic breeding and the preservation of a traditional rural landscape. Half of the respondents underwent a sensory test before taking part in the hypothetical market (discrete choice experiment), while the remaining were administered the tests in reverse order. Tasting the product before the discrete choice experiment did not produce different willingness to pay (WTP) parameters as estimated by a taste factor interaction. However, separating the respondents into those who liked or disliked the product in the tasting condition revealed differences in willingness to pay results. The preferences are different for more than 50% of the attributes considered, and the magnitude of this difference is quite relevant. The WTP for one well known and certified sustainability related attribute—organic breeding—was not affected by the liking, while, for the other—the preservation of a traditional rural landscape—the effect of liking decreases the WTP. As a consequence, we suggest that tasting and liking studies should be routinely coupled with discrete choice studies when analyzing the introduction of new food products, especially when considering sustainable attributes in the experimental design. In the case of organic products where the expectations about taste are higher, neglecting to consider their sensory perception, along with the other discrete choice experiment attributes, could seriously undermine their long lasting success on the market.
