Abstract
BACKGROUND Food security can benefit from the technology's transparency, relatively low transaction costs and instantaneous applications. A blockchain is a distributed database of records in the form of encrypted blocks, or a public ledger of all transactions or digital events that have been executed and shared among participating parties and can be verified at any time in the future. Generally, the robust and decentralized functionality of the blockchain is used for global financial systems, but it can easily be expanded to contracts and operations such as tracking of the global supply chain. In the precision agriculture context, Information and Communications Technology can be further implemented with a blockchain infrastructure to enable new farm systems and e-agriculture schemes. RESULTS The purpose of this review is to show a panorama of the scientific studies (enriched by a terms mapping analysis) on the use of blockchain in the agri-food sector, from both an entirely computational and an applicative point of view. As evidenced by the network analysis, the reviewed studies mainly focused on software aspects (e.g. the architecture and smart contracts). However, some aspects regarding the different blockchain knots (computers always connected to the blockchain network) having the role to store and distribute an updated copy of each block in a food supply-chain, result of crucial importance. CONCLUSION These technologies appear very promising and rich of great potential showing a good flexibility for applications in several sectors but still immature and hard to apply due to their complexity. © 2019 Society of Chemical Industry.

Abstract
Global wine and alcohol trade faces a serious economic problem linked to counterfeiting of these commodities. Recently applied authentication methods and techniques pose more difficulties for counterfeiters but they are apparently not effective once we consider economical losses identified by EU legal authorities. The presented solution links isotopic characteristics of the soil, plant, technological intermediate product and the final food product (wine, grapes) on the basis of 87Sr/86Sr isotopes ratios. For the isotopic signature of wines, the average isotope composition of the substrate cannot be a reliable indicator. Only the isotopic composition of pore water can, as it leaches various mineral phases at different stages and passes into vine root system. Instead of complicated sampling of pore water, an original method of preparing and processing soil samples and consequently must & wine samples was developed. Based on both, soil and biological material analysis, we can unquestionably determine not only geographical but also regional and local authenticity of the wine. Determination of red wines isotopic signature is more straightforward process in comparison to white wines, because of technologically different processing of grapes. That is the reason why, in case of white vines, the 87Sr/86Sr ratio of bentonites (natural purifier and absorbent useful in the process of winemaking) must also be taken into consideration. Results of analyses of Slovak wines from geographically diverse regions as well as from sites in close-by distances have clearly established reliability of presented concept, in which the soil is linked to the plant and to the final food product (wine or table grapes).

Abstract
A commercially available microtiter plate reader was applied as a high-throughput counterpart of ultraviolet-visible (UV–Vis) spectrophotometer to identify the producing location of extra virgin olive oils (EVOOs). Multiplicative scatter correction and the first derivative was used to denoise the UV–Vis spectra and eliminate the effects of background drift. The spectra were analyzed using chemometrics methods including the principal component analysis (PCA) and the partial least squares-discriminant analysis (PLS-DA). The PLS-DA model on full spectra using 5 latent variables showed a classification accuracy of 97.92% by cross-validation. The overall results demonstrated that the use of a UV–Vis spectrophotometer based on the microtiter plate reader combined with chemometrics can be applied to the quality assessment of EVOOs. It is demonstrated that the microtiter plate reader can be a high-throughput tool in the quality assessment of food ingredients.

Abstract
INTRODUCTION The consumption of high quality coffee such as specialty Arabica and fine Robusta coffee is increasing steadily in recent years. Development of single origin coffee is an important strategy to maintain coffee quality, grade and high cupping score. Indonesia is a top exporting country for Arabica coffee with high variety of specialty coffees from different origins. Despite its long standing reputation in global coffee market, very few is known about the variability among Indonesian specialty coffees. OBJECTIVES This study aims to observe metabolite variability among Indonesian coffees from different species and geographical origins by means of non-targeted GC/MS metabolite profiling. METHODS Sixty-four compounds were tentatively identified from 16 green and roasted coffee beans from different species and cultivation areas in Indonesia and were subjected to principal component analysis (PCA). Ten Specialty Arabica coffee and five Fine Robusta representing all important high quality coffees of Indonesia were also analyzed independently to further classify Indonesian coffee according to their origin. RESULTS PCA results of 16 green and roasted coffee beans of different species and cultivation areas showed that samples were separated along PC1 based on different roasting condition (green and roasted) with 52.9% variance and were separated along PC2 based on different species with 19.3% variance. The result from this study showed the clustering of samples based on three major cultivation areas in Indonesia (western, central, eastern part). Metabolites showing higher concentration in Sulawesi, Papua, Flores and Sumatra samples were glycerol, glucuno-1,5-lactone, gluconic acid and sorbitol. A clear distinction in galactitol and galactinol concentration between all samples from eastern part of Indonesia and western and middle part of Indonesia was also observed. CONCLUSIONS Our results showed that each region (western, central and eastern part of Indonesia) has signature compounds that may serve as discriminant markers for coffee authentication. This is the first report on the classification of Indonesian specialty coffee based on their metabolic profiles and can act as a basis for marker identification for routine procedures in industry.

Abstract
Cod liver oil is a popular dietary supplement marketed as a rich source of omega-3 fatty acids as well as vitamins A and D. Due to its high market price, cod liver oil is vulnerable to adulteration with lower priced vegetable oils. In this study, 1H and 13C nuclear magnetic resonance spectroscopy, Fourier transform infrared spectroscopy, and gas chromatography (coupled to a flame ionization detector) were used in combination with multivariate statistics to determine cod liver oil adulteration with common vegetable oils (sunflower and canola oils). Artificial neural networks (ANN) were able to differentiate adulteration levels based on infrared spectra with a detection limit of 0.22% and a root mean square error of prediction (RMSEP) of 0.86%. ANN models using 1H NMR and 13C NMR data yielded detection limits of 3.0% and 1.8% and RMSEPs of 2.7% and 1.1%, respectively. In comparison, the ANN model based on fatty acid profiles determined by gas chromatography achieved a detection limit of 0.81% and an RMSEP of 1.1%. The approach of using spectroscopic techniques in combination with multivariate statistics can be regarded as a promising tool for the authentication of cod liver oil and may pave the way for a holistic quality assessment of fish oils. Abstract
This work addresses a technological advance applied to the construction of a magnetogenoassay with electrochemical transduction for the maize taxon-specific (HMGA gene) detection using gold-coated magnetic nanoparticles as nanosized platform. Superparamagnetic core-shell Fe3O4@Au nanoparticles (10.4 ± 1.7 nm) were used to assemble the genoassay through the covalent immobilization of HMGA DNA probes onto carboxylated self-assembled monolayers at the nanoparticles surface. A hybridization reaction using sandwich format was selected to prevent inefficient hybridization connected with stable secondary DNA structures using also fluorescein isothiocyanate as DNA signaling tag. The labelling of the hybridization reaction with enzymes allowed the chronoamperometric measurement of the peroxidase activity linked to the nanoplatform located on gold surface. Using this electrochemical magnetogenoassay a linear concentration range from 0.5 to 5 nM and a LOD of 90 pM with a RSD <1.2% was calculated. Certified maize was evaluated without further purification after PCR amplification. This work highlights the efficacy of the electrochemical magnetogenoassay for the HMGA detection, showing its potential as alternative procedure for the verification of the compliance of the legislation.

Abstract
In the last decade, ion mobility spectrometry (IMS) has reemerged as an analytical separation technique, especially due to the commercialization of ion mobility mass spectrometers. Its applicability has been extended beyond classical applications such as the determination of chemical warfare agents and nowadays it is widely used for the characterization of biomolecules (e.g., proteins, glycans, lipids, etc.) and, more recently, of small molecules (e.g., metabolites, xenobiotics, etc.). Following this trend, the interest in this technique is growing among researchers from different fields including food science. Several advantages are attributed to IMS when integrated in traditional liquid chromatography (LC) and gas chromatography (GC) mass spectrometry (MS) workflows: (1) it improves method selectivity by providing an additional separation dimension that allows the separation of isobaric and isomeric compounds; (2) it increases method sensitivity by isolating the compounds of interest from background noise; (3) and it provides complementary information to mass spectra and retention time, the so-called collision cross section (CCS), so compounds can be identified with more confidence, either in targeted or non-targeted approaches. In this context, the number of applications focused on food analysis has increased exponentially in the last few years. This review provides an overview of the current status of IMS technology and its applicability in different areas of food analysis (i.e., food composition, process control, authentication, adulteration and safety).

Abstract
Saffron is one of the most adulterated food products all over the world because of its high market prize. Therefore, a non-targeted approach based on the combination of headspace flash gas-chromatography with flame ionization detection (HS-GC-FID) and chemometrics was tested and evaluated to check adulteration of this spice with two of the principal plant-derived adulterants: turmeric (Curcuma longa L.) and marigold (Calendula officinalis L.). Chemometric models were carried out through both linear discriminant analysis (LDA) and partial least squares discriminant analysis (PLS-DA) from the gas-chromatographic data. These models were also validated by cross validation (CV) and external validation, which were performed by testing both models on pure spices and artificial mixtures capable of simulating adulterations of saffron with the two adulterants examined. These models gave back satisfactory results. Indeed, both models showed functional internal and external prediction ability. The achieved results point out that the method based on a combination of chemometrics with gas-chromatography may provide a rapid and low-cost screening method for the authentication of saffron.

Abstract
Fast, simple and inexpensive procedure for detecting potential wine adulterations. Aged wine authentication on the basis of digital image information and chemometrics. Quantitative prediction of adulteration levels of aged wines using PLS regression.
A method has been developed to authenticate aged high-quality wines and to quantify their potential adulterations through multivariate analysis and regression techniques applied to the obtained RGB digital images. Wines of pure Gran Reserva, Crianza, and Joven Rioja as well as synthetic adulterated Gran Reserva samples were studied. Digital images were obtained by a single and inexpensive lab-made device. Each sample was characterized by means of the 256 channels intensities from the RGB-colorgram. Multivariate image analysis revealed differences among the wine classes, and between genuine-aged and adulterated samples. Partial least squares regression was used to develop a model for estimating the adulteration degree of Gran Reserva wines. The model achieved good prediction (RMSEP = 1.6), appropriate precision (RSD = 2.5%) and suitable LOD (2.3%) to quantify cost-effective adulterations. The present method, due to simplicity and low cost, could provide an appropriate alternative to the traditional chemical authentication methods.

Abstract
A portable mass spectrometer was coupled to a direct inlet membrane (DIM) probe and applied to the direct analysis of active fragrant compounds (3-methylbutyl acetate, 2-methyl-3-furanthiol, methyl butanoate, and ethyl methyl sulfide) in real time. These fragrant active compounds are commonly used in the formulation of flavours and fragrances. Results obtained show that the portable mass spectrometer with a direct membrane inlet can be used to detect traces of the active fragrant compounds in complex mixtures such as essential fragrant oils and this represents a novel in-situ analysis methodology. Limits of detection (LOD) in the sub-ppb range (< 2.5 pg) are demonstrated. Standard samples in the gaseous phase presented very good linearity with RSD % at 5 to 7 for the selected active fragrant compounds (i.e., isoamyl acetate, 2-methyl-3-furanthiol, methyl butanoate, and methyl ethyl sulphide). The rise and fall times of the DIM probe are in the ranges from 15 to 31 seconds and 23 to 41 seconds, respectively, for the standard model compounds analysed. The identities of the fragrance active compounds in essential oil samples (i.e., banana, tangerine, papaya, and blueberry muffin) were first identified by comparison with a standard fragrance compounds mixture using their major fragment peaks, the NIST standard reference library, and gas chromatography mass spectrometry (GC-MS) analysis. No sample preparation is required for analysis using a portable mass spectrometer coupled to a DIM probe, so the cycle time from ambient air sampling to the acquisition of the results is at least 65 seconds.

Abstract
A combination of physical-chemical analysis has been used to monitor the aging of red wines from D.O. Toro (Spain). The changes in the chemical composition of wines that occur over the aging time can be used to distinguish between wine samples collected after one, four, seven and ten months of aging. Different computational models were used to develop a good authenticity tool to certify wines. In this research, different models have been developed: Artificial Neural Network models (ANNs), Support Vector Machine (SVM) and Random Forest (RF) models. The results obtained for the ANN model developed with sigmoidal function in the output neuron and the RF model permit us to determine the aging time, with an average absolute percentage deviation below 1%, so it can be concluded that these two models have demonstrated their capacity to predict the age of wine.

Abstract
This study presents the comprehensive elemental profile of Greek Graviera (Gruyère) cheeses. In total, 105 samples from nine different geographic regions produced from sheep, goat and cow milk and their mixtures were assessed. Elemental signatures of 61 elements were investigated for determination of geographic origin and milk type. Regional and milk type classification through Linear Discriminant Analysis was successful for almost all cases, while a less optimistic cross validation exercise presented lower classification rates. That points to further research using a much larger sample set, increasing confidence for cheese authentication utilizing also bioinformatics tools under development. This is the first study reporting signatures of 61 elements in dairy products including all sixteen rare earth elements and all seven precious metals. Safety and quality were assessed regarding toxic and nutritive elements. According to both EU and USA regulations and directives, Graviera is a nutritional source for trace and macro elements with low levels of toxic elements.

Abstract
Interest in using insects as an alternative source of food for humans is increasing. However, few analytical methods provide accurate information about the presence of insect species in processed foods. In this study, we developed a fast real-time PCR assay based on a TaqMan probe that can be performed within 40 min to detect edible rice grasshopper in commercial food products. A rice grasshopper-specific primer pair and probe targeting the cytochrome c oxidase subunit 1 (COI) gene were newly designed, having an amplicon size of 110 bp. The specificity of this primer pair and probe was verified using 19 insects and five crustaceans and no cross-reactivity was obtained against the non-target species. The absolute limit of detection (LOD) was 0.5 pg of rice grasshopper DNA, and as low as 0.1% of rice grasshopper was detected in raw, heat-treated, and autoclaved binary insect mixtures. To evaluate the effect of food matrix, binary mixtures containing rice grasshopper in wheat were used additionally, and at least 0.1% of target species was detected using this assay. The applicability of this assay was confirmed using nine commercial food samples labeled as containing rice grasshopper or locust. The fast real-time PCR developed in this study is a specific and sensitive method for identifying edible rice grasshopper in various food samples.

Abstract
Selection of the appropriate method for traceability may be of great interest for the characterization of food authenticity and to reveal falsifications. The possibility of tracing the geographical origins of Radix Astragali based on diffuse reflectance mid-infrared Fourier transform spectroscopy (DRIFTS) technique and fluorescence fingerprints (EEMs) technique was investigated in this work. DRIFTS technique combined with PCA and PLS-DA and EEMs technique combined with M-PCA and N-PLS-DA were used to determine the geographical origin of Radix Astragali samples, respectively. DRIFTS-PLS-DA provided total recognition rates of 98.4% for all Radix Astragali samples in the training sets and 94.6% in the predicted sets. Compared with the DRIFTS, EEMs combined with chemometrics obtained more accurate recognition results. The total recognition rates (RRs) of the training sets and prediction sets obtained with EEMs-N-PLS-DA were all 100%. The good classification results of fluorescence fingerprints technique should be attributed mainly to two reasons. One reason is that three-dimensional fluorescence spectrum can provide more information than two-dimensional DRIFTS, and the other reason is that fluorescence spectrum has higher sensitivity and selectivity than the DRIFTS. Therefore, fluorescence fingerprint (EEMs) technique combined with chemometrics results more adequate for tracing the food geographical origin. It should be noted that the more the analysis target contains fluorescent substances, the more accurate results are obtained by using the fluorescent fingerprint method. Conversely, if the classification object contains very few fluorescent substances, the classification result may not be as good as the DRIFTS method. Furthermore, due to relatively cumbersome operation of fluorescence method, EEMs fluorescence method is unsuitable for rapid analysis as compared to infrared method.

Abstract
BACKGROUND Concentrations of 16 rare earth elements (REEs) and two actinides were determined for the first time both in cultivated mushrooms and in their production substrates by inductively coupled plasma mass spectroscopy. Moreover, the effect of REEs on cultivation parameters and composition of the final product was assessed, together with their potential use for authentication purposes. RESULTS The concentrations of REEs varied greatly among seven cultivation substrates and correlated with measurements in Cyclocybe cylindracea mushrooms; no such correlation was established in Pleurotus ostreatus. Reduction of hemicellulose, cellulose, and lignin in substrates during P. ostreatus cultivation was positively correlated with REE concentrations, which also affected the production performance depending on the species examined. In all cases, a negative correlation was established between bioconcentration factors (BCF) in mushrooms and REE content in substrates, while the effect of substrate composition on BCF values varied according to the element studied. The estimated daily intake values of REEs through mushroom consumption was at much lower levels than those reported as potentially harmful for human health. CONCLUSION The content of REEs in cultivation substrates and in mushrooms revealed that the bioaccumulation of elements differed in each fungus. The nature/origin of substrates seemed to affect the concentration of REEs in mushrooms to a considerable extent. © 2018 Society of Chemical Industry.

Abstract
Food fraud can be highly lucrative, and high accuracy authentication of various foodstuffs is becoming essential. Olive oil is one of the most investigated food matrices, due to its high price and low production globally, with recent food fraud examples showing little or no high quality olive oil in the tested oils. Here a simple method using a 405 nm LED flashlight and a smartphone is developed for edible oil authentication. Identification is fingerprinted by intrinsic fluorescent compounds in the oils, such as chlorophylls and polyphenols. This study uses the hue parameter of HSV-colorspace to authenticate 24 different edible oils of 9 different types and 15 different brands. For extra virgin olive oil, all nine samples are well separated from the other oil samples. The rest of the samples were also well type-distinguished by the hue parameter, which is complemented by hue-histogram analysis. This opens up opportunities for low-cost and high-throughput smartphone field-testing of edible oils on all levels of the production and supply chain.

Abstract
The aim of this study was to revisit the TLC authentication of alimentary products concept based on analysis of anthocyanes with the foodstuffs of plant origin. To this effect, we used two anthocyanins (cyanin and keracyanin) and two anthocyanidins (pelargonidin and delphinidin) as phytochemical standards. The first step was to develop a novel method making use of the RP-18 F254s stationary phase (which ensures mixed-mode retention mechanism with the localized adsorption on the non-bonded silanols) and acetic acid as the mobile phase component. Importantly, similar TLC systems are currently used for the analysis of anthocyanes. Individual steps of our method development enabled a deeper insight in vulnerability of anthocyanins to external conditions resulting in hydrolysis thereof. In this study, it was impossible to fully separate the products of hydrolytic degradation of the test anthocyanins in a single development run and it was only triple development which ensured distinct and symmetrically shaped chromatographic spots, further scrutinized with use of mass spectrometry. The identity of the hydrolytically split fractions was additionally studied with use of the p-aminobenzoic acid (PABA) test. To obtain calibration curves, triple development was employed for cyanin, keracyanin, and pelargonidin, while delphinidin was developed in one development run. The respective LOD and LOQ values were: for spot (i) derived from the cyanin standard, 0.005 and 0.016 μg spot-1; for spot (ii) derived from the cyanin standard, 0.006 and 0.017 μg spot-1; for spot (i) derived from the keracyanin standard, 0.092 and 0.274 μg spot-1; for spot (ii) derived from the keracyanin standard, 0.035 and 0.104 μg spot-1; for the pelargonidin standard, 0.013 and 0.040 μg spot-1; and for the delphinidin standard, 0.036 and 0.108 μg spot-1. The developed method was used to identify and quantify cyanin, keracyanin, pelargonidin and delphinidin in selected alimentary products (syrups, juices and herbal infusions), keeping in mind that the obtained numerical results were of semi-quantitative nature only.
