Abstract
Propelled by an ever-growing awareness about the importance of following dietary recommendations meeting specific biological requirements linked to a person health status, interest in personalized nutrition is on the rise. Soilless biofortification of vegetables has opened the door to the potential for adapting vegetable production to specific dietary requirements. The evolution of vegetables biofortification toward tailored food is examined focusing on some specific categories of people in a context of personalized nutrition instead to simple describe developments in vegetables biofortification with reference to the single element or compound not adequately present in the daily diet. The concepts of bioavailability and bioaccessibility as a useful support tool for the precision biofortification were detailed. Key prospects for challenges ahead aiming to combine product quality and sustainable are also highlighted. Hydroponically cultivation of vegetables with low potassium content may be effective to obtain tailored leafy and fruit vegetable products for people with impaired kidney function. Simultaneous biofortification of calcium, silicon, and boron in the same vegetable to obtain vegetable products useful for bone health deserve further attention. The right dosage of the lithium in the nutrient solution appears essential to obtain tailored vegetables able to positively influence mental health in groups of people susceptible to mental illness. Modulate nitrogen fertilization may reduce or enhance nitrate in vegetables to obtain tailored products, respectively, for children and athletes. Future research are needed to produce nickel-free vegetable products for individuals sensitized to nickel. The multidisciplinary approach toward tailored foods is a winning one and must increasingly include a synergy between agronomic, biological, and medical skills.

Abstract
Multiple aspects of the physiological and nutritional mechanisms involved with silicon (Si) absorption by quinoa plants remain poorly investigated, as well as the best way of supplying this element to crops. Thus, this study aimed at evaluating whether the application of Si increases its uptake by quinoa plants and consequently the use efficiency of N and P, as well as the levels of phenolic compounds in the leaves, crop productivity and the biofortification of grains. For this purpose, the concentration of 3 mmol L−1 of Si was tested, according to the following procedures: foliar application (F), root application in the nutrient solution (R), combined Si application via nutrient solution and foliar spraying (F + R), and no Si application (0). The provision of Si through the leaves and roots promoted the highest uptake of the element by the plant, which resulted in an increased use efficiency of N and P. Consequently, such a higher uptake favored the productivity of grains. The optimal adoption of the application of Si through leaves and roots promoted the highest Si concentration and ascorbic acid content in quinoa grains.

Abstract
Enhanced weathering is a proposed carbon dioxide removal (CDR) strategy to accelerate natural carbon sequestration in soils via the amendment of silicate rocks to agricultural soils. Among the suitable silicates (such as basalt and olivine), the fast-weathering mineral wollastonite (CaSiO3) stands out. Not only does the use of wollastonite lead to rapid pedogenic carbonate formation in soils, it can be readily detected for verification of carbon sequestration, but its weathering within weeks to months influences soil chemistry and plant growth within the same crop cycle of its application. This enables a variety of short-term experimental agronomic studies to be conducted to demonstrate in an accelerated manner what could take years to be observed with more abundant but slower weathering silicates. This study presents the results of three studies that were conducted to investigate three distinct aspects of wollastonite skarn weathering in soils in the context of both agricultural and horticultural plants. The first study investigated the effect of a wide range of wollastonite skarn dosages in soil (1.5-10 wt.%) on the growth of green beans. The second study provides insights on the role of silicon (Si) release during silicate weathering on plant growth (soybeans and lettuce). The third study investigated the effect of wollastonite skarn on the growth of spring rye when added to soil alongside a nitrogen-based coated fertilizer. The results of these three studies provide further evidence that amending soil with crushed silicate rocks leads to climate-smart farming, resulting in inorganic carbon sequestration, as well as better plant growth in agricultural (soybean and spring rye) and horticultural (green bean and lettuce) crops. They also demonstrate the value of working with wollastonite skarn as a fast-weathering silicate rock to accelerate our understanding of the mineral-soil-plant-nutrient synergism of enhanced weathering.

Abstract
Zinc (Zn) is an essential key nutrient in different biochemical and physiological processes. The nutritional deficit of this mineral element is estimated to affect the health of over 3 billion people worldwide. Several strategies are available to reduce the negative impact of mineral malnutrition; among them, biofortification is the practice of deliberately increasing the nutrients and healthy compounds in the edible parts of vegetables. This study aims to evaluate Zn bioaccessibility in biofortified and non-biofortified rocket and purslane using an in vitro gastrointestinal digestion process and measure the concentration of other mineral elements (Al, B, Ca, Fe, K, Mg, Mn, and Sr) released during the digestion process from rocket and purslane biofortified with Zn. The bioaccessible Zn in biofortified rocket and purslane ranged from 7.43 to 16.91 mg/kg, respectively. In addition, the daily intake, the RDA coverage (%), and the hazard quotient (HQ) for the intake of Zn (resulting from the consumption of 100 g of rocket and purslane) were calculated. The calculated HQ highlights the safety of these baby leaf vegetables. The study confirms that it is possible to obtain Zn-biofortified rocket and purslane with high Zn bioaccessibility by adopting an appropriate mineral plant nutrition solution enriched in Zn.

Abstract
Iodine (I) and selenium (Se) are essential to human and animal development. There is a worldwide deficit of I and Se in the diet of humans, as well as in animals. It is advisable to enrich plants with these elements to ensure adequate uptake in animals and humans. The aim of this study was to determine the efficacy of the application of I and Se in the cultivation of carrot crops, to better understand the metabolic pathways and processes of I applied through foliar spray. Carrots were fertilized with 4-fold foliar applications of I and Se, which were applied as the liquid fertilizers "I + Se", "Solo iodine" and "Solo selenium", all containing an organic stabilizer, in two field trials. Foliar nutrient applications of I and Se were translocated by the plant for storage in the roots. The level of enriched I and Se in the roots was considered safe for the consumer. The Recommended Daily Allowance values for I and Se in the roots of 100 g of fresh carrots are 4.16% and 4.37%, respectively. Furthermore, I and Se accumulated in the roots to a level that was physiologically tolerated by carrot. Biofortification through foliar feeding did not impact negatively on the yield or quality of the carrot crop. Iodides applied via foliar application were the dominant form of I in the plant tissues and were included in the metabolic process of the synthesis of iodosalicylates, iodobenzoates, iodotyrosine (I-Tyr), and plant-derived thyroid hormone analogs. No synergistic or antagonistic interaction between I and Se, with respect to the effectiveness of biofortification in roots, was observed in any treatments. The molar ratio of I:Se in the roots after foliar application of both elements was approximately 1.6:1 and was similar to the control (1.35:1).

Abstract
Vegetables represent pillars of good nutrition since they provide important phytochemicals such as fiber, vitamins, antioxidants, as well as minerals. Biofortification proposes a promising strategy to increase the content of specific compounds. As minerals have important functionalities in the human metabolism, the possibility of enriching fresh consumed products, such as many vegetables, adopting specific agronomic approaches, has been considered. This review discusses the most recent findings on agronomic biofortification of vegetables, aimed at increasing in the edible portions the content of important minerals, such as calcium (Ca), magnesium (Mg), iodine (I), zinc (Zn), selenium (Se), iron (Fe), copper (Cu), and silicon (Si). The focus was on selenium and iodine biofortification thus far, while for the other mineral elements, aspects related to vegetable typology, genotypes, chemical form, and application protocols are far from being well defined. Even if agronomic fortification is considered an easy to apply technique, the approach is complex considering several interactions occurring at crop level, as well as the bioavailability of different minerals for the consumer. Considering the latter, only few studies examined in a broad approach both the definition of biofortification protocols and the quantification of bioavailable fraction of the element.

Abstract
BACKGROUND High concentrations of ammonium as the sole nitrogen source may result in physiological and nutritional disorders that can lead to reduced plant growth and toxicity. In this study, we hypothesized that ammonium toxicity in radish seedlings (Raphanus sativus L.) might be mitigated by the incorporation of silicon (Si) into applied nutrient solution. To examine this possibility, we conducted a hydroponic experiment to evaluate the effects of five concentrations of ammonium (1, 7.5, 15, 22.5, and 30 mmol L-1 ) on the photosynthesis, green color index, stomatal conductance, transpiration, instantaneous water-use efficiency, and biomass production of radish in the absence and presence (2 mmol L-1 ) of Si. The experimental design was a randomized block design based on a 2 × 5 factorial scheme with four replicates. RESULTS The highest concentration of applied ammonium (30 mmol L-1 ) was found to reduce the photosynthesis, transpiration and total dry biomass of radish seedlings, independent of the presence of Si in the nutrient solution. However, at lower ammonium concentrations, the application of Si counteracted these detrimental effects, and facilitated the production of seedlings with increased photosynthesis, greater instantaneous water-use efficiency, and higher total dry biomass compared with the untreated plants (without Si). Transpiration and stomatal conductance were affected to lesser extents by the presence of Si. CONCLUSION These findings indicate that the addition of Si to nutrient solutions could provide an effective means of alleviating the unfavorable effects induced by ammonium toxicity at concentrations of less than 30 mmol L-1 . © 2020 Society of Chemical Industry.

Abstract
Soilless cultivation represent a valid opportunity for the agricultural production sector, especially in areas characterized by severe soil degradation and limited water availability. Furthermore, this agronomic practice embodies a favorable response toward an environment-friendly agriculture and a promising tool in the vision of a general challenge in terms of food security. This review aims therefore at unraveling limitations and opportunities of hydroponic solutions used in soilless cropping systems focusing on the plant mineral nutrition process. In particular, this review provides information (1) on the processes and mechanisms occurring in the hydroponic solutions that ensure an adequate nutrient concentration and thus an optimal nutrient acquisition without leading to nutritional disorders influencing ultimately also crop quality (e.g., solubilization/precipitation of nutrients/elements in the hydroponic solution, substrate specificity in the nutrient uptake process, nutrient competition/antagonism and interactions among nutrients); (2) on new emerging technologies that might improve the management of soilless cropping systems such as the use of nanoparticles and beneficial microorganism like plant growth-promoting rhizobacteria (PGPRs); (3) on tools (multi-element sensors and interpretation algorithms based on machine learning logics to analyze such data) that might be exploited in a smart agriculture approach to monitor the availability of nutrients/elements in the hydroponic solution and to modify its composition in realtime. These aspects are discussed considering what has been recently demonstrated at the scientific level and applied in the industrial context.

Abstract
The use of iodine-biofortified vegetables may be a health alternative instead of iodine-biofortified salt for preventing iodine (I) deficiency and related human disorders. In this study, four Brassica genotypes (broccoli raab, curly kale, mizuna, red mustard) were hydroponically grown with three I-IO3− rates (0, 0.75 and 1.5 mg/L) to produce iodine-biofortified vegetables. Crop performances and quality traits were analyzed; iodine content was measured on raw, boiled, and steamed vegetables. The highest I rate generally increased I content in all Brassica genotypes, without plants toxicity effects in terms of reduced growth or morphological symptoms. After 21 day-iodine biofortification, the highest I content (49.5 µg/100 g Fresh Weight (FW)) was reached in broccoli raab shoots, while after 43 day-iodine biofortification, genotype differences were flattened and the highest I content (66 µg/100 g FW, on average) was obtained using 1.5 mg I-IO3/L. Nitrate content (ranging from 1800 to 4575 mg/kg FW) was generally higher with 0.75 mg I-IO3/L, although it depended on genotypes. Generally, boiling reduced iodine content, while steaming increased or left it unchanged, depending on genotypes. Applying low levels of I proved to be suitable, since it could contribute to the partial intake of the recommended dose of 150 µg/day: A serving size of 100 g may supply on average 24% of the recommended dose. Cooking method should be chosen in order to preserve and/or enhance the final I amount.

Abstract
Sea fennel (Crithmum maritimum L.), a perennial halophyte typical of coastal habits, is well known for several food and non-food uses. This review presents both the characteristics and ethnobotany as well as the findings, technical advances and potential of sea fennel research with the aim to improve and disseminate knowledge regarding the value and potentials of this halophyte. Current knowledge suggest that sea fennel shows good potential as an emerging crop, being a refined food and also an interesting source of human health compounds and crop protection products. Moreover, sea fennel may be proposed as an alternative and sustainable cash crop also in the context of a saline agriculture regime. On the other hand, some aspects of sea fennel require further understanding; therefore, new research and development activities should be carried out before full commercial exploitation.

Abstract
Chronic kidney disease represents a global problem together with other so-called 'lifestyle-related diseases'. Unlike the healthy population, for the patients with impaired kidney function, it is of course prudent to recommend a restriction of high-potassium foods. Thus, it is suggested to limit the consumption of vegetables, because they generally contain high concentrations of potassium. At the same time, a lower consumption of vegetables reduces the intake of healthy compounds such as vitamins, fibers, and antioxidants, which also reduces the vegetables' potential benefit in chronic kidney disease patients. Microgreens are an emerging class of specialty crop that represent a nutritious and refined food. In this study, for the first time, some chicory (local variety 'Molfetta' and cultivar 'Italico a costa rossa') and lettuce (cultivar 'Bionda da taglio') genotypes were grown using a hydroponic system with different potassium (K) levels (0, 29.1, 58.4, and 117 mg L-1) in order to produce microgreens with a low potassium content. The crop performances, cations content, proximate composition, and antioxidant activity were analyzed. Independent of the genotype, the K content in the microgreens was successfully reduced using a nutrient solution (NS), without K or with 29.1 mg K L-1, which supplied between 103 and 129 mg of K 100 g-1 FW (about 7.7⁻8.6% of the K daily intake that was recommended for the patients that were affected by chronic kidney disease). Whereas, 100 g of microgreens that were grown by using an NS with 58.4 or 117 mg K L-1 supply between 225 and 250 mg of K (about 15.8⁻16.5% of the K daily intake recommended for patients affected by chronic kidney disease). No differences were observed in terms of the shoot height, dry matter, proximate composition, and visual quality. A slightly lower yield was observed using an NS with a K concentration.

Abstract
Globe artichoke (Cynara cardunculus L. subsp. [L.] scolymus Hayek), summer squash (Cucurbita pepo L.) and faba bean (Vicia faba L.) are widely cultivated for their immature inflorescences, fruits and seeds, respectively. Nevertheless, in some areas of Puglia (Southern Italy), other organs of these species are traditionally used as vegetables, instead of being considered as by-products. Offshoots (so-called cardoni or carducci) of globe artichoke, produced during the vegetative growing cycle and removed by common cultural procedures, are used like to the cultivated cardoons (C. cardunculus L. var. altilis DC). The stems, petioles, flowers and smaller leaves of summer squash are used as greens (so-called cime di zucchini), like other leafy vegetables such as chicory (Cichorium intybus L.) and Swiss chard (Beta vulgaris L.). Also the plant apex of faba bean, about 5-10 cm long, obtained from the green pruning, are used as greens (so-called cime di fava) like spinach leaves. Moreover, crenate broomrape (Orobanche crenata Forssk.), a root parasite plant that produces devastating effects on many crops (mostly legumes), is used like asparagus (Asparagus officinalis L.) to prepare several traditional dishes. In this study ethnobotanical surveys and quality assessment of these unconventional vegetables were performed. For their content of fiber, offshoots of globe artichokes can be considered a useful food to bowel. Summer squash greens could be recommended as a vegetable to use especially in the case of hypoglycemic diets considering both content and composition of their carbohydrates. For their low content of nitrate, faba greens could be recommended as a substitute of nitrate-rich leafy vegetables. Crenate broomrape shows a high antioxidant activity and may be considered as a very nutritious agri-food product. Overall, the results of the present study indicate that offshoots of globe artichoke, summer squash greens, faba greens and crenate broomrape have good potential as novel foods, being nutritious and refined products. Their exploitation aiming to the obtainment of labeled and/or new potential ready-to-eat retail products could satisfy the demand for local functional foods.

Abstract
Closed soilless cultivation systems (SCS) support high productivity and optimized year-round production of standardized quality. Efficiency and precision in modulating nutrient solution composition, in addition to controlling temperature, light, and atmospheric composition, renders protected SCS instrumental for augmenting organoleptic and bioactive components of quality. Effective application of eustress (positive stress), such as moderate salinity or nutritional stress, can elicit tailored plant responses involving the activation of physiological and molecular mechanisms and the strategic accumulation of bioactive compounds necessary for adaptation to suboptimal environments. For instance, it has been demonstrated that the application of salinity eustress increases non-structural carbohydrates and health-promoting phytochemicals such as lycopene, β-carotene, vitamin C, and the overall phenolic content of tomato fruits. Salinity eustress can also reduce the concentration of anti-nutrient compounds such as nitrate due to antagonism between nitrate and chloride for the same anion channel. Furthermore, SCS can be instrumental for the biofortification of vegetables with micronutrients essential or beneficial to human health, such as iodine, iron, selenium, silicon, and zinc. Accurate control of microelement concentrations and constant exposure of roots to the fortified nutrient solution without soil interaction can maximize their uptake, translocation, and accumulation in the edible plant parts; however, biofortification remains highly dependent on microelement forms and concentrations present in the nutrient solution, the time of application and the accumulation capacity of the selected species. The present article provides an updated overview and future perspective on scientific advances in SCS aimed at enhancing the sensory and bioactive value of vegetables.

Abstract
Food industries are increasingly oriented toward new foods to improve nutritional status and/or to combat nutritional deficiency diseases. In this context, silicon biofortification could be an innovative tool for obtaining new foods with possible positive effects on bone mineralization. In this paper, an alternative and quick in vitro approach was applied in order to evaluate the potential health-promoting effects of five silicon-biofortified leafy vegetables (tatsoi, mizuna, purslane, Swiss chard and chicory) on bone mineralization compared with a commercial silicon supplement. The silicon bioaccessibility and bioavailability of the five leafy vegetables (biofortified or not) and of the supplement were assessed by applying a protocol consisting of in vitro gastrointestinal digestion coupled with a Caco-2 cell model. Silicon bioaccessibility ranged from 0.89 to 8.18 mg/L and bioavailability ranged from 111 to 206 μg/L of Si for both vegetables and supplement. Furthermore, the bioavailable fractions were tested on a human osteoblast cell model following the expression of type 1 collagen and alkaline phosphatase. The results obtained highlighted that the bioavailable fraction of biofortified purslane and Swiss chard improved the expression of both osteoblast markers compared with the supplement and other vegetables. These results underline the potentially beneficial effect of biofortified leafy vegetables and also indicate the usefulness of in vitro approaches for selecting the best vegetable with positive bone effects for further in vivo research.

Abstract
Food plants biofortification for micronutrients is a tool for the nutritional value improvement of food. Soilless cultivation systems, with the optimal control of plant nutrition, represent a potential effective technique to increase the beneficial element content in plant tissues. Silicon (Si), which proper intake is recently recommended for its beneficial effects on bone health, presents good absorption in intestinal tract from green bean, a high-value vegetable crop. In this study we aimed to obtain Si biofortified green bean pods by using a Si-enriched nutrient solution in soilless system conditions, and to assess the influence of boiling and steaming cooking methods on Si content, color parameters and Si bioaccessibility (by using an in vitro digestion process) of pods. The Si concentration of pods was almost tripled as a result of the biofortification process, while the overall crop performance was not negatively influenced. The Si content of biofortified pods was higher than unbiofortified also after cooking, despite the cooking method used. Silicon bioaccessibility in cooked pods was more than tripled as a result of biofortification, while the process did not affect the visual quality of the product. Our results demonstrated that soilless cultivation can be successfully used for green bean Si biofortification.

Abstract
Calcium is an essential nutrient for human health, because it is a structural component and takes part in a variety of biological processes. The aim of this study was to increase Ca content of baby leaf vegetables (BLV: basil, mizuna, tatsoi and endive), as fresh-cut products. For the production of biofortified BLV, a floating system with two level of Ca (100 and 200mgL(-1)) in the nutrient solution was used. In addition, the assessment of bioaccessibility of Ca, by in vitro digestion process, was performed. In all vegetables, the Ca biofortification (200mgL(-1)) caused a significant Ca enrichment (9.5% on average) without affecting vegetables growth, oxalate contents and marketable quality. Calcium bioaccessibility ranged from 25% (basil) to 40% (endive) but the biofortified vegetables showed more bioaccessible Ca. These results underline the possibility to obtain Ca biofortified BLV by using agronomic approaches.
