Abstract
In today's era of increased food consumption, consumers have become more demanding in terms of safety and the quality of products they consume. As a result, food authorities are closely monitoring the food industry to ensure that products meet the required standards of quality. The analysis of food properties encompasses various aspects, including chemical and physical descriptions, sensory assessments, authenticity, traceability, processing, crop production, storage conditions, and microbial and contaminant levels. Traditionally, the analysis of food properties has relied on conventional analytical techniques. However, these methods often involve destructive processes, which are laborious, time-consuming, expensive, and environmentally harmful. In contrast, advanced spectroscopic techniques offer a promising alternative. Spectroscopic methods such as hyperspectral and multispectral imaging, NMR, Raman, IR, UV, visible, fluorescence, and X-ray-based methods provide rapid, non-destructive, cost-effective, and environmentally friendly means of food analysis. Nevertheless, interpreting spectroscopy data, whether in the form of signals (fingerprints) or images, can be complex without the assistance of statistical and innovative chemometric approaches. These approaches involve various steps such as pre-processing, exploratory analysis, variable selection, regression, classification, and data integration. They are essential for extracting relevant information and effectively handling the complexity of spectroscopic data. This review aims to address, discuss, and examine recent studies on advanced spectroscopic techniques and chemometric tools in the context of food product applications and analysis trends. Furthermore, it focuses on the practical aspects of spectral data handling, model construction, data interpretation, and the general utilization of statistical and chemometric methods for both qualitative and quantitative analysis. By exploring the advancements in spectroscopic techniques and their integration with chemometric tools, this review provides valuable insights into the potential applications and future directions of these analytical approaches in the food industry. It emphasizes the importance of efficient data handling, model development, and practical implementation of statistical and chemometric methods in the field of food analysis.

Abstract
Wheat bran, the main by-product of dry milling of wheat, is currently mainly used in the animal feed industry, but has attracted attention as a food ingredient owing to its high dietary fiber and phytochemical contents, providing excellent physiological effects. The bran layers (aleurone layer, outer pericarp and intermediate layer) contain different compositions, structures, and nutrients, and have different properties. Each layer, when separated and isolated, potentially could find more extensive applications in foods. This triggered interest in isolating the bran layers using milling and wet- or dry-fractionation techniques based on their chemical or physical properties. The recent progress has allowed the production of commercial products from wheat bran layers, particularly aleurone-rich products, enhancing the value of wheat bran layers and their applications in food. The present review highlights the recent advances in studying the chemical composition including distribution of chemical components, physical structure, biopolymer matrix, and physicochemical properties of each wheat bran layer. Technologies to fractionate wheat bran layers and utilization of different bran layers in foods are discussed and reviewed, providing new strategies for improving the value of wheat bran and utilization of wheat bran in foods.

Early detection of stripe rust infection in wheat using light-induced fluorescence spectroscopy. Abstract
In the current study, the application of fluorescence spectroscopy along with the advanced statistical technique and confocal microscopy was investigated for the early detection of stripe rust infection in wheat grown under field conditions. The indigenously developed Fluorosensor fitted with LED, emitting monochromatic light was used that covered comparatively larger leaf area for recording fluorescence data thus presenting more reliable current status of the leaf. The examined leaf samples covered the entire range of stripe rust disease infection from no visible symptoms to the complete disease prevalence. The molecular changes were also assessed in the leaves as the disease progresses. The emission spectra mainly produce two fluorescence emission classes, namely the blue-green fluorescence (400-600 nm range) and chlorophyll fluorescence (650-800 nm range). The chlorophyll fluorescence region showed lower chlorophyll bands both at 685 and 735 nm in the asymptomatic (early diseased) and symptomatic (diseased) leaf samples than the healthy ones as a result of partial deactivation of PSII reaction centers. The 735 nm chlorophyll fluorescence band was either slight or completely absent in the leaf samples with lower to higher disease incidence and thus differentiate between the healthy and the infected leaf samples. The Hydroxycinnamic acids (caffeic and sinapic acids) showed decreasing trend, whereas the ferulic acid increased with the rise in disease infection. Peak broadening/shifting has been observed in case of ferulic acid and carotenes/carotenoids, with the increase in the disease intensity. While using the LEDs (365 nm), the peak broadening and the decline in the chlorophyll fluorescence bands could be used for the early prediction of stripe rust disease in wheat crop. The PLSR statistical techniques discriminated well between the healthy and the diseased samples, thus showed promise in early disease detection. Confocal microscopy confirmed the early prevalence of stripe rust disease infection in a susceptible variety at a stage when the disease is not detectable visually. It is inferred that fluorescence emission spectroscopy along with the chemometrics aided in the effective and timely diagnosis of plant diseases and the detected signatures provide the basis for remote sensing.

Abstract
Field studies were conducted from 2016 to 2019 (south-eastern Poland; 49°58'40.6″ N 22°33'11.3″ E) with the aim to identify the chemical composition of winter wheat grain upon foliar application of biostimulants, of which PlanTonic BIO (containing nettle and willow extracts) showed antifungal activity. The main chemical compositions and their spatial distribution in wheat grain were characterized by Raman spectroscopy technique. It was established that applied biostimulants and hydro-thermal conditions changed the chemical composition of the grain during all the studied years. A similar chemical composition of the grain was achieved in plants treated with synthetic preparations, including both intensive and extensive variants. The second group, in terms of an increase in fatty acid content, consists of grains of plants treated with biostimulants PlanTonic BIO, PlanTonic BIO + Natural Crop and PlanTonic BIO + Biofol Plex. The future of using biostimulants in crop production, including those containing salicylic acid and nettle extracts, appears to be a promising alternative to synthetic crop protection products.

Abstract
The present review covers reports discussing potential applications of the specificity of Raman techniques in the advancement of digital farming, in line with an assumption of yield maximisation with minimum environmental impact of agriculture. Raman is an optical spectroscopy method which can be used to perform immediate, label-free detection and quantification of key compounds without destroying the sample. The authors particularly focused on the reports discussing the use of Raman spectroscopy in monitoring the physiological status of plants, assessing crop maturity and quality, plant pathology and ripening, and identifying plant species and their varieties. In recent years, research reports have presented evidence confirming the effectiveness of Raman spectroscopy in identifying biotic and abiotic stresses in plants as well as in phenotyping and digital selection of plants in farming. Raman techniques used in precision agriculture can significantly improve capacities for farming management, crop quality assessment, as well as biological and chemical contaminant detection, thereby contributing to food safety as well as the productivity and profitability of agriculture. This review aims to increase the awareness of the growing potential of Raman spectroscopy in agriculture among plant breeders, geneticists, farmers and engineers.

Abstract
Desirable changes in the biochemical composition of food plants is a key outcome of breeding strategies. The subsequent localization of nutritional phytochemicals in plant tissues gives important information regarding the extent of their synthesis across a tissue. We performed a detailed metabolomic analysis of phytochemical substances of grains from Zea mays L. (var. Pioneer) by tandem mass spectrometry and localization by confocal microscopy. We found that anthocyanins are located mainly in the aleurone layer of the grain. High-performance liquid chromatography in combination with ion trap tandem mass spectrometry revealed the presence of 56 compounds, including 30 polyphenols. This method allows for effective and rapid analysis of anthocyanins by plotting their distribution in seeds and grains of different plants. This approach will permit a more efficient screening of phenotypic varieties during food plant breeding.

Abstract
The understanding of interactions between proteins, carbohydrates, and phenolic compounds is becoming increasingly important in food science, as these interactions might significantly affect the functionality of foods. So far, research has focused predominantly on protein-phenolic or carbohydrate-phenolic interactions, separately, but these components might also form other combinations. In plant-based foods, all three components are highly abundant; phenolic acids are the most important phenolic compound subclass. However, their interactions and influences are not yet fully understood. Especially in cereal products, such as bread, being a nutritional basic in human nutrition, interactions of the mentioned compounds are possible and their characterization seems to be a worthwhile target, as the functionality of each of the components might be affected. This review presents the basics of such interactions, with special emphasis on ferulic acid, as the most abundant phenolic acid in nature, and tries to illustrate the possibility of ternary interactions with regard to dough and bread properties. One of the phenomena assigned to such interactions is so-called dry-baking, which is very often observed in rye bread.

Abstract
The nutritional quality of rice is contingent on a wide spectrum of biochemical characteristics, which essentially depend on rice genome, but are also greatly affected by growing/environmental conditions and aging during storage. The genetic basis and related identification of genes have widely been studied and rationally linked to accumulation of micronutrients in grains. However, genetic classifications cannot catch quality fluctuations arising from interannual, environmental, and storage conditions. Here, we propose a quantitative spectroscopic approach to analyze rice nutritional quality based on Raman spectroscopy, and disclose analytical algorithms for the determination of: (i) amylopectin and amylose concentrations, (ii) aromatic amino acids, (iii) protein content and structure, and (iv) chemical residues. The proposed Raman algorithms directly link to the molecular composition of grains and allow fast/non-destructive determination of key nutritional parameters with minimal sample preparation. Building upon spectroscopic information at the molecular level, we newly propose to represent the nutritional quality of labeled rice products with a barcode specially tailored on the Raman spectrum. The Raman barcode, which can be stored in databases promptly consultable with barcode scanners, could be linked to diet applications (apps) to enable a rapid, factual, and unequivocal product identification based on direct molecular screening.

Abstract
The spectroscopy technique of Micro-Raman is an appropriate method to investigate the microscopic structure of internally heterogeneous (i.e., composed of multiple layers) agro-food products. The effects of applying magnetic fields (magneto-priming technique) and imbibition on the chemical makeup of Triticale seed were studied, particularly in its pericarp, germ and endosperm parts, with the help of Micro-Raman. In light of the results obtained, the magneto-primed seeds soaked in water presented a greater number of chemical compounds than the control seeds, although those treatments were not as effective as the ones with only magneto-priming. The effects of the magneto-priming treatment were especially noticeable in the endosperm due to the large number of chemical compounds identified. The seed composition differences among treatments showed that the use of Micro-Raman jointly with magneto-priming is an appropriate method to obtain and analyse information of the key components of Triticale seeds, notably regarding their pericarp and endosperm.

Abstract
Raman spectroscopy is one of the main analytical techniques used in optical metrology. It is a vibration, marker-free technique that provides insight into the structure and composition of tissues and cells at the molecular level. Raman spectroscopy is an outstanding material identification technique. It provides spatial information of vibrations from complex biological samples which renders it a very accurate tool for the analysis of highly complex plant tissues. Raman spectra can be used as a fingerprint tool for a very wide range of compounds. Raman spectroscopy enables all the polymers that build the cell walls of plants to be tracked simultaneously; it facilitates the analysis of both the molecular composition and the molecular structure of cell walls. Due to its high sensitivity to even minute structural changes, this method is used for comparative tests. The introduction of new and improved Raman techniques by scientists as well as the constant technological development of the apparatus has resulted in an increased importance of Raman spectroscopy in the discovery and defining of tissues and the processes taking place in them.

Abstract
This review presents applications of spectroscopic methods, infrared and Raman spectroscopies in the studies of the structure of gluten network and gluten proteins (gliadins and glutenins). Both methods provide complimentary information on the secondary and tertiary structure of the proteins including analysis of amide I and III bands, conformation of disulphide bridges, behaviour of tyrosine and tryptophan residues, and water populations. Changes in the gluten structure can be studied as an effect of dough mixing in different conditions (e.g., hydration level, temperature), dough freezing and frozen storage as well as addition of different compounds to the dough (e.g., dough improvers, dietary fibre preparations, polysaccharides and polyphenols). Additionally, effect of above mentioned factors can be determined in a common wheat dough, model dough (prepared from reconstituted flour containing only wheat starch and wheat gluten), gluten dough (lack of starch), and in gliadins and glutenins. The samples were studied in the hydrated state, in the form of powder, film or in solution. Analysis of the studies presented in this review indicates that an adequate amount of water is a critical factor affecting gluten structure.

Abstract
Lanzhou lily is a famous lily variety in China, which has many advantages different from other lily varieties. It is rich in nutrients and can be used as medicine or food. The present study is performed to evaluate the quality of Lanzhou lily by Raman spectroscopy. Here, Raman spectra of lily bulbs were collected by confocal Raman microscopy. Through study of a variety of samples, we found that Raman peaks of several important nutrients including starch, sucrose and amino acids were clearly observed from scales of lily bulb, while strong characteristic peaks of ferulic acid were observed at the epidermis of the same scale due to the stimulation of the external environment. We also compared lily bulbs with various sizes and shapes using an average Raman spectrum of selected area. Then, changes of nutrients were quantitively analyzed in different storage period. The results show that the nutrient components including starch, sucrose, amino acids and ferulic acid can be evaluated by Raman spectroscopy. Then the quality of Lanzhou lily can be evaluated by Raman spectroscopy. This is valuable for quality evaluation of lily using non-destructive methods.

Abstract
In recent thirty years, protein-based nanoparticles have attracted considerable attention, and they are being widely used in the food, pharmaceutical, and biomedical fields. Wheat glutenin, an important natural vegetable protein, has been demonstrated to be nutritive and biocompatible. This study aimed to develop a new type of redox-sensitive protein nanoparticles. The glutenin nanoparticles (GNPs) were synthesized with glutenin concentrations (0.082%, 0.5%, and 0.83%) through the adoption of an antisolvent titration technique and the use of hydrogen peroxide (H2O2) oxidative cross-linking for different periods. At a glutenin concentration of 0.83% and oxidation time of 20 h, the obtained GNPs were spherical in shape and approximately 100-300 nm in size, as measured by transmission electron microscopy and dynamic light scattering. The formation of disulfide was confirmed by Raman spectroscopy. The turbidity values of the GNP suspensions were decreased by half after the addition of β-mercaptoethanol. Nile blue A, a model hydrophilic substance, was entrapped in the GNPs with 77.67% loading efficiency. The newly developed GNPs can be used as redox-responsive carriers for delivering hydrophilic active substances.

Abstract
Water extractable pentosans extracted from three varieties of oats were studied for structural analysis using ATR- FTIR, ferulic acid content using RP-HPLC, antioxidant activity by DPPH, reducing power, and metal chelating assays, and functional properties. The appearance of absorption band at 1720 cm-1 in water extractable pentosans is assigned to the presence of aromatic esters as displayed from ATR-FTIR spectrum. All the samples exhibited non-newtonian behavior with viscosities following the order; SWEP > 20WEP > 90WEP. Bile acid binding capacity of water soluble pentosans varied significantly from 46.69 to 49.40%. RP-HPLC displayed that water extractable pentosans from SKO20 contained about 2 times higher FA (423.00 μg/100 g) compared to SWEP (250.00 μg/100 g) and 90 WEP (253.00 μg/100 g). Water soluble pentosans had DPPH scavenging activity, reducing power, and metal chelation activity in the range of 13.57-17.45 (μg α-tocopherol/g), 8.91-10.24 (μg BHT/g), and 0.55-0.76 (μg citric acid/g), respectively.

Abstract
Rapid and visual detection of the chemical compositions of plant seeds is important but difficult for a traditional seed quality analysis system. In this study, a custom-designed line-scan Raman hyperspectral imaging system was applied for detecting and displaying the main chemical compositions in a heterogeneous maize seed. Raman hyperspectral images collected from the endosperm and embryo of maize seed were acquired and preprocessed by Savitzky-Golay (SG) filter and adaptive iteratively reweighted Penalized Least Squares (airPLS). Three varieties of maize seeds were analyzed, and the characteristics of the spectral and spatial information were extracted from each hyperspectral image. The Raman characteristic peaks, identified at 477, 1443, 1522, 1596 and 1654 cm-1 from 380 to 1800 cm-1 Raman spectra, were related to corn starch, mixture of oil and starch, zeaxanthin, lignin and oil in maize seeds, respectively. Each single-band image corresponding to the characteristic band characterized the spatial distribution of the chemical composition in a seed successfully. The embryo was distinguished from the endosperm by band operation of the single-band images at 477, 1443, and 1596 cm-1 for each variety. Results showed that Raman hyperspectral imaging system could be used for on-line quality control of maize seeds based on the rapid and visual detection of the chemical compositions in maize seeds.

Abstract
The bacterial infection of seeds is one of the most important quality factors affecting yield. Conventional detection methods for bacteria-infected seeds, such as biological, serological, and molecular tests, are not feasible since they require expensive equipment, and furthermore, the testing processes are also time-consuming. In this study, we use the Raman hyperspectral imaging technique to distinguish bacteria-infected seeds from healthy seeds as a rapid, accurate, and non-destructive detection tool. We utilize Raman hyperspectral imaging data in the spectral range of 400–1800 cm−1 to determine the optimal band-ratio for the discrimination of watermelon seeds infected by the bacteria Acidovorax citrulli using ANOVA. Two bands at 1076.8 cm−1 and 437 cm−1 are selected as the optimal Raman peaks for the detection of bacteria-infected seeds. The results demonstrate that the Raman hyperspectral imaging technique has a good potential for the detection of bacteria-infected watermelon seeds and that it could form a suitable alternative to conventional methods.

Abstract
A simple and efficient two-dimensional multifocus confocal Raman microspectroscopy featuring the tilted-array technique is demonstrated. Raman scattering from a 4 × 4 square foci array passing through a 4 × 4 confocal pinhole array is tilted with a periscope. The tilted array of Raman scattering signals is dispersed by an imaging spectrograph onto a CCD detector, giving 16 independent Raman spectra formed as 16 bands with different heights on the sensor. Use of a state-of-the-art imaging spectrograph enables high-precision wavenumber duplicability of the 16 spectra. This high duplicability makes the simultaneously obtained spectra endurable for multivariate spectral analyses, which is demonstrated by a singular value decomposition analysis for Raman spectra of liquid indene. Although the present implementation attains only 16 measurement points, the number of points can be extended to larger than 100 without any technical leaps. Limit of parallelization depends on the interval of measurement points as well as the performance of the optical system. Criteria for finding the maximum feasible number are discussed.

Abstract
Within the last decade, an increasing amount of genetic data has been used to clarify the problems inherent in wheat taxonomy. The techniques for obtaining and analyzing these data are not only cumbersome, but also expensive and technically demanding. In the present study, we introduce infrared spectroscopy as a method for a sensitive, rapid and low cost phylogenetic analysis tool for wheat seed samples. For this purpose, 12 Triticum and Aegilops species were studied by Attenuated Total Reflection-Fourier Transform Infrared (ATR-FTIR) spectroscopy. Hierarchical cluster analysis and principal component analysis clearly revealed that the lignin band (1525-1505 cm(-1)) discriminated the species at the genus level. However, the species were clustered according to their genome commonalities when the whole spectra were used (4000-650 cm(-1)). The successful differentiation of Triticum and its closely related genus Aegilops clearly demonstrated the power of ATR-FTIR spectroscopy as a suitable tool for phylogenetic research.

Abstract
BACKGROUND The natural recalcitrance of lignocellulosic plant cell walls resulting from complex arrangement and distribution of heterogeneous components impedes deconstruction of such cell walls. Dilute acid pretreatment (DAP) is an attractive method to overcome the recalcitrant barriers for rendering enzymatic conversion of polysaccharides. In this study, the internodes of Miscanthus × giganteus, a model bioenergy crop, were subjected to DAP to yield a range of samples with altered cell wall structure and chemistry. The consequent morphological and compositional changes and their possible impact on saccharification efficiency were comprehensively investigated. The use of a series of microscopic and microspectroscopic techniques including fluorescence microscopy (FM), transmission electron microscopy (TEM) and confocal Raman microscopy (CRM)) enabled correlative cell wall structural and chemical information to be obtained. RESULTS DAP of M. × giganteus resulted in solubilization of arabinoxylan and cross-linking hydroxycinnamic acids in a temperature-dependent manner. The optimized pretreatment (1% H2SO4, 170°C for 30 min) resulted in significant enhancement in the saccharification efficiency (51.20%) of treated samples in 72 h, which amounted to 4.4-fold increase in sugar yield over untreated samples (11.80%). The remarkable improvement could be correlated to a sequence of changes occurring in plant cell walls due to their pretreatment-induced deconstruction, namely, loss in the matrix between neighboring cell walls, selective removal of hemicelluloses, redistribution of phenolic polymers and increased exposure of cellulose. The consequently occurred changes in inner cell wall structure including damaging, increase of porosity and loss of mechanical resistance were also found to enhance enzyme access to cellulose and further sugar yield. CONCLUSIONS DAP is a highly effective process for improving bioconversion of cellulose to glucose by breaking down the rigidity and resistance of cell walls. The combination of the most relevant microscopic and microanalytical techniques employed in this work provided information crucial for evaluating the influence of anatomical and compositional changes on enhanced enzymatic digestibility.

Abstract
Consumption of wholegrain foods has been recommended for healthy diets. The beneficial health properties of wholegrain products have been associated with the presence of higher amounts of dietary fiber and antioxidants and lower calories as compared to their respective refined ones. Phenolic compounds are mainly attributed to antioxidant properties of wholegrain foods. This review article provides a single comprehensive source that describes effects of milling and thermal processing on phenolic compounds and antioxidant properties in cereals. In general, milling and pearling processes affect the distribution of phenolic, compounds and thus antioxidant properties vary among the milling fractions. Thermal processes such as baking and extrusion could cause negative or positive effects on phenolic compounds and antioxidant properties of the end product subject to grain type and processing conditions. Thus factors that enhance health benefits of wholegrain cereal products have been discussed.

Abstract
Confocal Raman microspectroscopy (CRM) has emerged as a powerful approach to visualize the compositional distribution in lignocellulosic biomass of cell walls. In this work, the applicability of CRM for imaging the topochemical correlation between lignin and hydroxycinnamic acids (HCA) in the Miscanthus sinensis internode was explored. Model compound [p-coumaric acid (PCA) and ferulic acid (FA)] analysis indicated that the band region from 1,152 to 1,197 cm(-1) can be used to characterize the distribution of HCA. Raman images calculated by integrating over the area intensity of characteristic spectral regions showed heterogeneous distribution of lignin and HCA at cellular and sub-cellular level. When overlaying the Raman image of lignin and HCA distribution, it was found that these two polymers were co-located in the middle lamella and secondary wall of corresponding cells. Raman images for the band intensity ratio (1,173 cm(-1)/1,603 cm(-1)) indicated a clear association between lignin and HCA distribution within morphologically distinct cell wall layers of sclerenchyma fibers and the parenchyma. This is the first time that the spatial correlation between lignin and HCA concentration has been illustrated by a microspectroscopy imaging approach. The results are of importance in extending the current understanding of lignin and aromatics topochemistry in herbaceous biomass.

Abstract
Dough-derived cell wall fragments isolated by ultracentrifugation were largely derived from the starchy endosperm, with some fragments deriving from the aleurone and outer layers, as indicated by fluorescence microscopy. Dough mixing had little effect on the structure and composition of cell wall fragments compared to thin grain sections, as determined by Fourier transform infrared (FTIR) and (1)H nuclear magnetic resonance (NMR) spectroscopy. These analyses confirmed that the fragments largely comprised water-unextractable arabinoxylan and β-glucan. FTIR microspectroscopy of dough-derived cell wall fragments prepared from five bread wheat cultivars showed that two largely comprised highly substituted arabinoxylan (cv. Manital and San Pastore), one comprised a mixture of low, medium, and highly substituted arabinoxylan (cv. Hereward), and the remaining two comprised a greater proportion of low substituted arabinoxylan (cv. Claire and Yumai 34). Yumai 34 yielded a greater mass of cell wall material, and its cell walls comprised a high proportion of medium substituted arabinoxylan. Such methods will allow for the impact of bakery ingredients and processing on endosperm cells, including the addition of xylanases, to be investigated in the future to ensure any potential health benefits arising from wheat breeding are realized in the food that reaches the consumer.

Abstract
Structural changes in albumin, globulin, glutelin, and prolamin from fresh and aged rice were characterized in this study. Infrared and Raman spectroscopies revealed changes in interactions between protein and starch, and the occurrence of structural changes involving secondary and tertiary structures of protein induced by rice aging. The α-helical structure was reduced, and aliphatic amino-acid side chains became more buried in albumin after rice aging. Oxidation of the sulfhydryl group in globulin was evident. The unordered coil in glutelin decreased, and a characteristic frequency of the free sulfhydryl group appeared. The antiparallel β-sheet in prolamin increased, the conformation of disulfide bonds changed, and tyrosine residues became exposed to a polar environment. The association between globulin and starch strengthened, whereas that between glutelin and starch diminished. These differences in structure and interactions with starch might be responsible for the dissimilar pasting properties between fresh and aged rice.

Abstract
Different levels of heat-moisture treatment (HMT) were applied to normal and waxy rice flours. Changes in chemical composition and functional properties of both flours were investigated. It was found that HMT induced β-turn conformation of rice proteins. Levels of HMT and types of rice flour interactively influenced thermal properties and XRD patterns of flour. When heat-moisture treated flour was utilized for production of thermoplastic flour (TPF) materials, it was found that HMT improved continuity of injection molding, complete mold filling, and yielded homogenous TPF materials. HMT levels affected the mechanical, thermal and barrier properties of TPF resin and materials differently. The ratio of HMT level to native flours was proposed for use not only for resin processing and injection molding, but also for improving mechanical and barrier properties of TPF materials.

Abstract
Counterfeit medicines have become a serious global problem. Consequently, analytical and pharmaceutical scientists have been active in developing and applying new methodologies to detect and analyze counterfeit medicines. Vibrational spectroscopy combined with chemometric methods is becoming a popular choice in this area of research. In this study, Raman microscopy was used to collect chemical images of counterfeit tadalafil tablets and multivariate curve resolution (MCR) was used to analyze the Raman spectra and reveal the identities of the excipients and active pharmaceutical ingredients (API) in each tablet. Resolved counterfeit tablet spectra were compared to the resolved genuine tablet spectra. Both similarities and dissimilarities were revealed by the analysis in terms of the identity of the excipients, the quantity of the API, and the distribution of the components. It was concluded that Raman microscopy combined with MCR is a powerful method to detect and analyze counterfeit tablets.

Abstract
In addition to the starchy endosperm, a specialized tissue accumulating storage material, the endosperm of wheat grain, comprises the aleurone layer and the transfer cells next to the crease. The transfer cells, located at the ventral region of the grain, are involved in nutrient transfer from the maternal tissues to the developing endosperm. Immunolabeling techniques, Raman spectroscopy, and synchrotron infrared micro-spectroscopy were used to study the chemistry of the transfer cell walls during wheat grain development. The kinetic depositions of the main cell wall polysaccharides of wheat grain endosperm, arabinoxylan, and (1-3)(1-4)-β-glucan in transfer cell walls were different from kinetics previously observed in the aleurone cell walls. While (1-3)(1-4)-β-glucan appeared first in the aleurone cell walls at 90°D, arabinoxylan predominated in the transfer cell walls from 90 to 445°D. Both aleurone and transfer cell walls were enriched in (1-3)(1-4)-β-glucan at the mature stage of wheat grain development. Arabinoxylan was more substituted in the transfer cell walls than in the aleurone walls. However, arabinoxylan was more feruloylated in the aleurone than in the transfer cell walls, whatever the stage of grain development. In the transfer cells, the ferulic acid was less abundant in the outer periclinal walls while para-coumarate was absent. Possible implications of such differences are discussed.

Abstract
Fourier transform infrared (FTIR) microspectroscopy has been employed to investigate benign (ordinary dermal and Reed nevi), dysplastic and malignant (invasive melanoma) skin lesions through the analysis of spectral changes of melanocytes as well as in the evaluation of the presence of melanin. Hierarchical cluster analysis and principal component analysis led to a satisfactory separation of malignant from dysplastic and normal melanocytes. Also, on enlarging the clustering with spectra from Reed and dermal nevi, the multivariate analysis segregated well the spectral data into discrete clusters, allowing the obtaining of reliable average spectra for analysis at the molecular level of the main groups or components responsible for the biological and biochemical changes. The most significant spectral characteristics appear to be related to differences in secondary protein structures, in nucleic acid conformation, in intra- and intermolecular bonding. In all cases, supervised and unsupervised spectral analyses resulted in satisfactory agreement with histopathological findings.

Abstract
The aim of this work was to examine the potential of ATR-FTIR and Raman spectroscopies to evaluate changes happening during the development and maturation of olive fruit. To do this, the spectra of the different parts of the olive (skin, flesh and stone) have been measured at different stages of development. The evolution of different spectral bands has been related to the content of olive constituents like triglycerides, water, carotenoids and phenolic compounds. Oil accumulation can be followed using both FTIR and Raman spectroscopy. The increase in bands at 1746 cm(-1) (ATR-FTIR) and 1440 cm(-1) (Raman) correlates well with the oil content in the fruit determined using the standard Soxhlet extraction method. In the case of overripe olives ATR-FTIR does not provide a representative spectrum of the olive flesh due to the accumulation of water on the surface of the ATR crystal. The increase of the content in carotenoids and phenolic compounds during olive growing and their decrease during the ripening phase can be successfully monitored by means of the Raman bands at 1525 and 1605 cm(-1), respectively.
