Abstract
The consumption of metal-contaminated offal of animals will affect the health of humans. Thus, the research determined the concentrations of heavy metals in the offal and muscle tissues of cows, goats, and ram slaughtered at the main abattoir in Lokoja, northcentral Nigeria. Furthermore, an evaluation was carried out to assess the potential health hazards faced by the indigenous population due to the consumption of heavy metals from these animals. The mean concentrations of metals (Al, Cd, Cr, Ni, and Pb) in the kidney, liver, and muscle of cows, goats, and rams were determined using Inductively Coupled Plasma Optical Emission Spectrometry. Estimated daily intake of the metals, hazard quotient, hazard index, and cancer risk were calculated. All internal organs had Ni levels above the regulatory threshold limit. The average concentration of Pb in the muscle tissue and liver of the tested animals exceeded the permissible limits by the WHO. Similarly, the concentration of Cd in the muscle tissues was above the Maximum Permissible Limit (MPL) of 0.05 mg kg-1. Except for cow kidneys, all internal organs contain Cr levels below the MPL (1.0) limit. The THQ value for the metals was < 1 except Cd. It indicates potential health risks due to Cd. The calculated HI values were > 1. The percentage contribution of Cd to the HI value was the highest. The observed sequence is Cd > Ni > Cr > Pb > Al. The results show that eating the offal and muscle under investigation has a carcinogenic effect.

Abstract
Due to their physicochemical properties, per- and polyfluorinated alkyl substances (PFASs) persist and bioaccumulate in living organisms, causing adverse health effects. Since exposure to xenobiotics is influenced by factors related to both the living organism and the considered compounds, biomonitoring PFASs' presence in the environment is of crucial importance. This study aimed to detect and quantify 15 PFASs in the muscle and liver of 40 roe deer from a specific area in Northern Italy by UPLC-HRMS. In the roe deer, liver PFAS concentrations were higher than those seen in muscle (p < 0.05). Although PFAS content in animals from urbanized areas was higher than those found in deer from rural areas, this difference was not statistically significant. In female roe deer, the concentration was higher than in males (p < 0.05); moreover, older animals showed higher concentrations of PFASs in the liver than younger animals (p < 0.05). In conclusion, the amount of PFASs was higher in tissues from roe deer belonging to urbanized areas, showing that this species might serve as a good bioindicator due to its territorial behavior. PFAS content was significantly higher in female roe deer, although the reason is not fully known. Finally, PFAS concentration was higher in the liver of older animals, probably due to compromised hepatic function.

Abstract
The study was performed on 10 female and 10 male wild boars (Sus scrofa) after shooting during the regular hunting season to investigate the concentration of metals in the muscle and fat tissue. The concentrations of essential and non-essential elements were determined (arsenic (As), cadmium (Cd), chromium (Cr), copper (Cu), lead (Pb), manganese (Mn), mercury (Hg), and zinc (Zn)) using inductively coupled plasma optical emission spectrometry. The concentrations of As, Hg, and Cd were below the limit of detection (As, Hg: < 0.5 mg/kg, Cd: < 0.05 mg/kg) in every tissue sample of both sexes. The lead was detected as 0.36 ± 0.16 mg/kg and 0.22 ± 0.06 mg/kg in the muscle of females and males, respectively, showing a significant difference between the sexes (p = 0.0184). The measured concentration of Cr was 0.14 ± 0.08 mg/kg and 0.13 ± 0.06 mg/kg, and that of copper was 1.22 ± 0.14 mg/kg and 1.06 ± 0.16 mg/kg in the muscle of females and males, respectively. The same tendency was observed in the case of copper content of fat tissues (female: 0.13 ± 0.10 mg/kg; male: 0.13 ± 0.04 mg/kg; p = 0.2707). Manganese concentration of muscle was 0.45 ± 0.30 mg/kg (female) and 1.36 ± 0.96 mg/kg (male), and that of fat tissue was 0.32 ± 0.22 mg/kg (female) and 0.74 ± 0.75 mg/kg (male). The Zn was detected as 56.75 ± 7.86 mg/kg and 1.83 ± 0.76 mg/kg in the muscle and fat of females and 52.12 ± 11.51 mg/kg and 1.94 ± 0.57 mg/kg in males, respectively. Based on data, the consumption of fat and muscle tissues of the wild boars tested can be food toxicologically objectionable, mainly due to the lead content, and thus pose a risk to frequent consumers of this type of game meat.

Abstract
We analyze concentrations of various elements in small mammals from commercial orchards and berry plantations and test differences between them depending on species, individual body mass, age, gender, type and age of crop and intensity of applied agricultural measures. Skinned front legs (muscle and bones) were used to register the presence and concentration of Ca, Cd, Mo, Ni, Se, Ag, As, Be, Bi, Co, Cr, Cu, Fe, Ga, Mg, Mn, Pb, Sr, U, V and Zn. The most abundant species were common vole (Microtus arvalis), yellow-necked (Apodemus flavicollis) and striped field (A. agrarius) mice. The maximum recorded concentrations exceeded the minimums by 1.7-7.7 times in Mg, Zn, Cu, Ga, Ni and Ca, and 11.0-23.2 times in Mn, Be, Mo, Co, Sr, V, Pb and As. The hypothesis that the use of fertilization and pesticides in commercial orchards should induce differences in the elemental concentrations between crop areas and control habitats was confirmed by the higher concentrations of Cu, Mn, Bi, Co, Cr, Fe, Ni, Sr and Pb in rodents from the crop areas. Spatially controlled generalized linear mixed model confirmed the cumulative influence of species and crop, explaining 30-80% of the distribution of Ca, Ni, Co, Cu, Ga, Mn, Pb and U. The effect of species and the age of the individual was significant for Ni, Co, Cu, Fe, Ga, Mn and Pb, while effect of gender was not expressed. Depletion of Cu in older individuals was found in all three species. With species as a grouping factor, the effect of crop type and the intensity of agricultural practices were significant factors in the accumulation of Ca, Ni, Co, Cu, Ga, Mn and Pb, while effect of crop age was not expressed. The obtained elemental concentrations in rodents indicated orchards to be cleaner than heavy polluted areas.

Abstract
The aim of the study was to investigate the effects of age and sex on the content of heavy metals (Pb, Cd, Zn and Cu) in the hair, liver and the longissimus lumborum muscle of roe deer (Capreolus capreolus L.). In addition, correlations between heavy metals in individual tested matrices were studied as well as an attempt was made to explain the reasons for their accumulation in specific research matrices. The levels of Zn and Cu were measured using atomic absorption spectroscopy (F-AAS). The levels of Pb and Cd were analysed by means of electrothermal atomic absorption spectroscopy (ET-AAS). In the own research, sex-related statistically significant differences in concentrations of analysed elements were confirmed. Higher levels of the elements were observed in samples collected from does (except for Cd in the liver samples of 6-7-month-old male fawns) but only in some cases, these values were statistically significantly higher. In some cases, age-related differences in the content of individual metals were also confirmed. Age-dependent increased Pb levels in the muscle and liver were reported in 6-7-month-old, <3-4-year-old, <5-6-year-old males. Similar relationships were confirmed for Zn in the bucks' muscles. In the group of does, the increase in heavy metal concentrations with aging was observed for Zn in the muscle and for Pb in the liver. In the other cases, the trend of age-related level changes regarding heavy metals was not clearly demonstrated. Significant positive correlations between Cu and Cd were found for all samples, and significant negative correlations of Cu with Pb were found for the hair and liver. There was a negative correlation of Zn with Cu in all matrices. The study also revealed a negative correlation between Zn and Pb in muscle and a strong significant negative correlation between Zn and Cd in hair and in the liver.

Abstract
We used anonymous questionnaires to assess the hygienic and sanitary aspects of game meat self-consumption in Eastern Spain as the first step towards a health risk assessment. The survey yielded 472 valid interviews from active hunters. The maximum possible score was 65 points (average 29 ± 8; range 1–52). Most participants were men (95%), but women achieved significantly better scores (p = 0.003). Hunters above 65 years old scored significantly lower results than younger groups (p = 0.007). The score increased with the educational level (p = 0.046). A 92% of the collaborators consumed game meat. Veterinary inspection and freezing were irregular among the participants. Most respondents declared carrying the animals in their personal vehicles. Of the dressing process, 61% of sites were outdoors, 68% of the participants declared using specific knives, 64% used the same clothes as in the field, and 42% used disposable gloves. The most usual way to dispose of the remains was garbage containers (41%); offal abandonment in the field was 33%, and 13% fed domestic animals using the remains. We conclude that public health authorities should increase their interest in the self-consumption of game meat. Clear guidelines about domestic dressing facilities and hygienic habits should be published, these being essential when looking for synergies with hunter associations.

Abstract
The presence of toxic metals in harvested game meat is a cause for concern for public health and meat safety in general. Authorities and food safety agencies continue to develop guidelines and limits of the maximum allowable levels of toxic metals in food products. However, the situation is different for game meat products in developing countries, where a number of shortcomings have been identified. This includes a lack of game meat animal slaughter regulations, specific species' product limits that have not yet been established and the continued use of hunting or game meat animals' harvesting plans that could introduce the same toxic metals of concern. This review was conducted from English literature published between 2011 and 2021; it highlights the possible health effects and the shortcomings in the implementation of game meat safety production strategies for toxic metals (Arsenic, Lead, Cadmium and Mercury) in game meat animal production. Lead (Pb) remains the most significant threat for toxic metals contamination in game meat animals and the slaughter processes. In most developing countries, including in South Africa, the monitoring and control of these heavy metals in the game meat value chain has not yet been implemented.

Abstract
Simple Summary Due to its chemical composition, roe and red deer meat can be a valuable component of a well-balanced diet for the modern consumer; however, the raw material from the carcasses of animals living in the wild can show differences in nutritional value. The present study provides an analysis of the content of basic nutrients (protein, fat, crude ash), Fe, Cd and Pb and fatty acid profile based on which the health-promoting value of wild-harvested roe deer and red deer meat was evaluated. Sixty carcasses were selected for chemical analysis; 30 of roe deer (15 does and 15 bucks) and 30 of red deer (15 hinds and 15 stags). The study leads to the conclusion that the evaluated meat of roe deer and red deer had high dietary value as it contained a high protein and low fat content and had an advantageous fatty acids composition. The noted content of cadmium and lead in the haunch of roe and red deer was significantly lower than permissible standard values, which corroborates that the meat is healthy and safe for consumers. Abstract The present studies aimed to analyse and assess the health-promoting properties of the musculus semimembranosus (MS) of roe and red deer harvested in the wild. The experimental materials comprising the carcasses of roe deer (15 does and 15 bucks) and red deer (15 hinds and 15 stags) were selected for analysis based on the following criteria: age of animals at harvest—3–4 years; time that passed from the harvest of animals to carcass cutting—48–54 h. After chilling the carcasses for 24 h at +2 °C, the haunches were cut from the carcasses and transported to the laboratory in isothermal ice-packed containers. Samples of the musculus semimembranosus were analysed to determine the chemical composition (proximate components, energy value, Fe, Pb, Cd, fatty acids). More (p ≤ 0.05) dry matter and total protein and less (p ≤ 0.05) crude fat was found in the musculus semimembranosus of roe deer in comparison to red deer. No significant influence of the animal’s sex was observed in the content of the evaluated nutrients, apart from crude fat content, which was increased in the haunch of females from both species. The energy content in the muscle of roe deer was 10% higher than the energy value of MS in red deer (p ≤ 0.05). The content of iron was significantly (p ≤ 0.05) higher (6.64 mg/kg) in the meat of red deer compared to the meat of roe deer (31.68 mg/kg). Roe deer haunch contained more lead but less cadmium than red deer haunch. Irrespective of sex, the lipid fraction of red deer muscle contained more saturated fatty acids (SFA). Intramuscular fat (IMF) in roe deer meat contained a higher percentage of polyunsaturated fatty acids (PUFA). The atherogenicity (AI) and thrombogenicity (TI) index values were significantly lower in roe deer haunch, and the hypocholesterolaemic-to-hypercholesterolaemic fatty acids ratio (HH) was lower (p ≤ 0.05) in red deer meat. To sum up, the evaluated roe deer and red deer haunch featured high dietary value as it contained a high protein and low fat content and had an advantageous fatty acids composition. As regards the content of cadmium and lead, roe deer and red deer haunch can be considered safe for consumers.

Abstract
The long-term anthropogenic release of mercury (Hg) into the environment has led to contamination of the biosphere, with all forms of Hg showing toxic effects and the ability to accumulate in organisms. Since the 1970s, efforts have been made in Western Europe to reduce Hg emissions and for the economic use of Hg, leading to a reduction in Hg exposure to humans and entire ecosystems. The purpose of this research was to present the total mercury (THg) burden in three mustelids (the piscivorous Eurasian otter and American mink, and the invertebrativorous European badger) inhabiting north-western Poland (mostly floodplains) and other European countries (literature data). Moreover, we wanted to investigate whether reductions in the environmental Hg burden in Europe have resulted in reductions in liver and kidney levels in wild terrestrial mammals (Eurasian otter, wild boar, red deer, roe deer, cervids, leporids, rodents, and ecotrophic groups: piscivorous mustelids, non-mustelids whose diets include aquatic prey, canids and other carnivores, omnivores, herbivores), between samples collected before and after 2000. We revealed significantly higher nephric THg levels in roadkilled than in trapped American minks. As roadkilled piscivorous mustelids from the same floodplain had similar hepatic and nephric THg concentrations, we suggest that the European research on Hg ecotoxicology should more often use alien American mink instead of the protected Eurasian otter. Badgers inhabiting Polish and other European floodplains bioaccumulated higher amounts of THg than those from other areas, and as such, may be recommended as bioindicator of mercury soil contamination. Our analysis of abundant data on mammalian hepatic and nephric THg concentrations (excluding non-piscivores mustelids) showed that in 12 of 21 cases, Hg concentrations had dropped significantly since 2000. This data signals a reduction in Hg contamination in terrestrial mammals, such as the Eurasian otter, and may be reason for cautious optimism.

Abstract
It has been known for centuries that lead is toxic to humans. Chronic exposure to lead, even at low levels, is associated with an elevated risk of cardiovascular and chronic kidney disease in adults and of impaired neurodevelopment and subsequent cognitive and behavioural development in the foetus and young children. Health agencies throughout the world have moved from assuming that there are tolerable levels of exposure to lead to a recognition that valid 'no-effect' thresholds cannot currently be defined. Formerly, the most important exposure pathways were occupational exposure, water from lead plumbing, paints, petrol additives and foods. Regulation of products and improved health and safety procedures at work have left dietary lead as the main remaining pathway of exposure in European countries. Ammunition-derived lead is now a significant cause of dietary lead exposure in groups of people who eat wild game meat frequently. These are mostly hunters, shoot employees and their families, but also some people who choose to eat game for ethical, health or other reasons, and their children. Extrapolation from surveys conducted in the UK and a review of studies of game consumption in other countries suggest that approximately 5 million people in the EU may be high-level consumers of lead-shot game meat and that tens of thousands of children in the EU may be consuming game contaminated with ammunition-derived lead frequently enough to cause significant effects on their cognitive development.

Abstract
Animals living in anthropogenic habitats bear a multitude of costs, which are directly or indirectly associated with human activities. Among others, an elevated exposure to environmental pollution can have negative consequences for wildlife populations. We examined the differences in the concentrations of trace elements between the field and forest ecotype of the European roe deer (Capreolus capreolus). Naturally, roe deer inhabited various types of woodlands (forest ecotype), but within the last century, they adapted to life in a human-transformed agricultural areas (field ecotype), which could be associated with an increased exposure to pollution. In this study, we measured concentrations of seven trace metals (barium, copper, iron, lead, manganese, strontium, zinc) and fluoride in skull bones and permanent teeth of more than 230 roe deer from 8 study plots in East-Central Europe. We found that field roe deer had higher concentrations of four trace metals (copper, iron, lead, strontium) and fluoride compared with forest roe deer. These differences were consistent with variations in the general level of environmental contamination within the study plots, as assessed with trace element content in wild plants. Our study indicates that bone and teeth of the European roe deer can be used as a valid indicator of environmental pollution. Also, we expect that elevated exposure of field roe deer to environmental pollution can have negative consequences for wild populations of this species, as well as for the consumers of venison.

Abstract
This study represents the first investigation into the accumulation of chemical elements in small mammals inhabiting the territory of a great cormorant colony. Trapping was done in the Juodkrantė great cormorant colony, one of the largest colonies in Europe. The accumulation of 20 chemical elements in the bodies (muscle and bones) of yellow-necked mice (Apodemus flavicollis) was investigated using the energy-dispersive x-ray fluorescence equipment Spectro Xepos HE. Two groups of positively inter-correlated chemical elements (Mg, Al, P, Ca and Al, S, Cl, K) were identified. The concentrations of five elements differed significantly between mice trapped in different zones of the colony with differing intensities of cormorant influence: the values of K and Cu in A. flavicollis increased in line with an increase in the influence of the cormorants, while the concentrations of Rb and Pb decreased. The concentrations of Mn differed between zones, but were not related to the intensity of bird influence. Differences in the concentration of Zn (ANOVA F = 24.38; p < 0.001), Fe (F = 4.60; p < 0.05) and Mo (F = 4.47; p < 0.05) were related to the gender factor, all concentrations being higher in females. The concentrations of Zn were age-dependent, being highest in adult individuals (21.7 ± 4.5 μg g-1) and exceeding those in subadult (19.4 ± 3.4 μg g-1) individuals or juveniles (16.7 ± 1.3 μg g-1). In general, the concentrations of accumulated elements in A. flavicollis from the territory of the cormorant colony were lower than in rodents from industrially polluted sites.

Abstract
This was a comparative study of the heavy metal levels (Zn, Pb, Cd, Co, Mn, Fe, Cr and Cu) in eggs from free grazing duck, small-scale, and large-scale farms in central and western regions of Thailand. A questionnaire was used to gather demographic data for the analysis of heavy metal contamination in feed, drinking water and wastewater. The correlation between the amounts of heavy metal contamination in eggs was studied against the heavy metals found in feed, drinking water and wastewater. The levels of Pb, Cd, Cr and Cu in eggs from large-scale farms were significantly higher than small farms and free grazing farms at P < 0.001. Zn in eggs from free grazing farms was higher than in the small farms and large-scale farms sampled. The contamination of Pb in eggs from all types of farms exceeded the standard limits of ACFS 6703-2005. The average levels of Pb in the eggs from small-scale farms correlated significantly with the level of Pb found in the feed at P < 0.05, while the average levels of Pb in eggs from free grazing duck farms correlated significantly with the levels of Pb found in the drinking water at P < 0.05. Additionally, the average level of Cu in duck egg from large-scale farms correlated significantly with the level of Cu found in the feeds at P < 0.001. Furthermore, from a calculation of the provisional tolerable daily intake (WHO-FAO) of heavy metals in this study, it was concluded that consumers face health risks from Cd contamination. Thus, heavy metal contamination, especially Pb and Cd in duck egg, must be of concern due to the health risks and the route of crucial heavy metals contamination should be elucidated and long - term monitoring of heavy metals posing health effects in farm systems should be carried out.

Abstract
This study aims to analyse consumer preferences for red deer meat (RDM) (Cervus elaphus) by conducting a case study in northern Italy. This analysis considers how the attitudes of consumers towards wild game meat and hunting might influence such preferences. This goal is achieved by combining the results of a k-means clustering analysis of the attitudes collected by means of two valuation scales with a discrete choice experiment (CE). According to our results, a positive attitude towards wild game meat has an effect on the willingness to pay (WTP) for RDM that is more than 3 times greater than being in favour of hunting. An analysis of the heterogeneity of consumer preferences allowed us to identify the presence of an important niche market for RDM served as carpaccio. Examining only the mean estimates for carpaccio without considering heterogeneity would lead to neglecting 18% of the sample with a positive willingness to pay for this attribute level.

Abstract
The toxicity of lead has been known for a long time, and no safe uptake level can be derived for humans. Consumers’ intake via food should therefore be kept as low as possible. Game meat can contain elevated levels of lead due to the use of lead ammunition for hunting. A risk assessment conducted in 2010 by the German Federal Institute for Risk Assessment including various consumption scenarios revealed a possible health risk for extreme consumers of game meat hunted with lead ammunition (i.e. hunters and members of hunters’ households). Babies, infants, children and women of childbearing age were identified as vulnerable group with regards to the developmental neurotoxicity of lead. It was noted, that a sound data base was required in order to refine the assessment. Therefore, the research project “Safety of game meat obtained through hunting” (LEMISI) has been conducted in Germany, with the aims of determining the concentrations of lead (as well as of copper and zinc) brought into the edible parts of game meat (roe deer (Capreolus capreolus) and wild boar (Sus scrofa)) due to using either lead or non-lead hunting ammunition, whilst concurrently taking geogenic (i.e. “background”) levels of lead into account. Compared to non-lead ammunition, lead ammunition significantly increased lead concentrations in the game meat. The use of both lead and non-lead ammunition deposited copper and zinc in the edible parts of game meat, and the concentrations were in the range of those detected regularly in meat of farm animals. For the average consumer of game meat in Germany the additional uptake of lead only makes a minor contribution to the average alimentary lead exposure. However, for consumers from hunters’ households the resulting uptake of lead–due to lead ammunition—can be several times higher than the average alimentary lead exposure. Non-lead bullets in combination with suitable game meat hygienic measures are therefore recommended in order to ensure “state of the art consumer health protection”.

Abstract
This study aimed to estimate the consumption of meat and products derived from hunting by the consumer population and, specifically, by hunters and their relatives. For this purpose, a survey was conducted on the frequency of consuming meat from the four most representative game species in Spain, two of big game, wild boar (Sus scrofa) and red deer (Cervus elaphus), and two of small game, rabbit (Oryctolagus cuniculus) and red partridge (Alectoris rufa), as well as of processed meat products (salami-type sausage) made from those big game species. The survey was carried out on 337 habitual consumers of these types of products (hunters and their relatives). The total mean game meat consumption, per capita in this population group, is 6.87 kg/person/year of meat and 8.57 kg/person/year if the processed meat products are also considered. Consumption of rabbit, red partridge, red deer and wild boar, individually, was 1.85, 0.82, 2.28 and 1.92 kg/person/year, respectively. It was observed that hunters generally registered a larger intake of game meat, this being statistically significant in the case of rabbit meat consumption. Using probabilistic methods, the meat consumption frequency distributions for each hunting species studied were estimated, as well as the products made from big game species and the total consumption both of meat by itself and that including the products made from it. The consumption frequency distributions were adjusted to exponential ones, verified by the test suitable for it according to Akaike Information Criterion (AIC), Bayesian Information Criterion (BIC), the Chi-squared and Kolmogorov-Smirnov statistics. In addition, the consumption percentiles of the different distributions were obtained. The latter could be a good tool when making nutrition or contaminant studies since they permit the assessment of exposure to the compound in question.

Abstract
The objective of this study was to evaluate influence of dietary palygorskite (Pal) supplementation on growth performance, mineral accumulations in the tissues (livers, kidneys, and muscles), antioxidant capacities, and meat quality of broilers fed lead (Pb)-contaminated diet. One-hundred forty-four male broiler chicks were randomly divided into three treatment groups, receiving a corn-soybean meal basal diet (the control group), the basal diet contaminated with 10 mg/kg Pb (the Pb group), and the basal diet with 10-g/kg Pal supplementation and 10-mg/kg Pb contamination (the Pal/Pb group) from 1 to 42 days of age, respectively. Treatments did not affect growth performance of broilers in the 42-day study (P > 0.05). Compared with the control group, Pb contamination increased Pb accumulation in the livers, kidneys, and muscles (P < 0.05); elevated malondialdehyde accumulation in the livers, kidneys, and breast muscles; glutathione peroxidase activity in the livers and superoxide dismutase activity in the kidneys (P < 0.05); exacerbated drip loss in the pectoralis muscles (P < 0.05); and reduced glutathione peroxidase activity in the pectoralis muscles (P < 0.05) of broilers at 42 days of age. The values of these parameters were reversed in the Pal/Pb group to levels comparable with those in the control group (P < 0.05). Additionally, Pal supplementation reduced redness value in the pectoralis muscles (P < 0.05), and decreased Cu concentration in the pectoralis muscles and livers at 42 days of age as well as its accumulation in the kidneys at both 21 and 42 days of age compared with the other two groups (P < 0.05). The results suggested that dietary Pal supplementation would decrease Pb residue in the tissues, alleviate oxidative stress, and affect meat quality of broilers exposed to Pb.

Game animals, such as the roe deer (Capreolus capreolus), have long been used as bioindicators of environmental contamination. Most ecotoxicological research on ungulates has focused on trace element content in soft tissues and antlers. Also, only fragmentary information exists about whether and how trace element concentrations vary with the age of wild-living animals and whether these age-related patterns are similar for different types of tissues. The purpose of this study was to measure concentrations of seven trace metals (barium, copper, iron, lead, manganese, strontium, zinc) and fluoride in bone and teeth of roe deer and to determine whether significant variation is evident with individual age. For this purpose, we collected permanent molars and fragments of mandible bone from more than 130 female roe deer in Central Poland. We found that concentrations of four trace elements (barium, manganese, zinc, and fluoride) in teeth of deer showed positive linear relationships with individual age. No such trends were recorded for trace element content in bone. We suggest that these striking differences in age-related patterns of trace element bioaccumulation between bone and permanent teeth of roe deer might be explained by higher turnover rate and constant remodelling of bone tissue. The results suggest that analysis of permanent teeth may be useful for assessing throughout-life intoxication by environmental pollution in the roe deer and possibly in other mammal species. Our study reinforces the need to carefully account for age-related variation in ecotoxicological research on wild-living animals.

Abstract
The muscle, liver, kidney and fat samples of 20 roe deer of both sexes originating from a hunting area in central Hungary were investigated for the presence of heavy metals such as As, Cd, Hg and Pb, and their contents were evaluated for possible health risk to consumers. Both As and Hg were found at a level below the limit of detection (< 0.5 mg/kg wet weight) in all samples. The median of the measured Cd concentrations was significantly higher in both the kidney and the liver (p = 0.0011) of bucks than of does. In bucks, Cd levels exceeded the respective maximum limits laid down in the European legislation in four kidney and three muscle samples, whereas in does, the measured concentrations were below the respective limits in all samples. The detected amounts of Pb exceeded the maximum limits in the kidney of one buck and eight does, in the liver of two bucks and six does, in the muscle of six bucks and nine does, whereas in all fat tissues of both bucks and does. The concentration of Pb (p = 0.02) was significantly greater in the kidney of does compared to roebucks. Based on data obtained from the present study, the consumption of organs and tissues of the investigated roe deer could be objectionable from food-toxicological point of view and may pose risk to the high consumers of wild game due to their cadmium and lead contents.

Abstract
Venison is an attractive product for consumers concerned with healthy lifestyle; however, it can contain high levels of toxic elements, and therefore, it is a possible source of hazardous contaminants in human diet. Antlers are suitable bioindicators of environmental metal contamination, and herein, we assessed the ability of trace element levels in antlers to indicate levels in edible soft tissues. We determined the concentrations of lead (Pb), cadmium (Cd), mercury (Hg), arsenic (As), copper (Cu), zinc (Zn), and iron (Fe) in the liver, kidney, muscle, and antlers of 14 free-ranging red deer (Cervus elaphus) from northeastern Poland using atomic absorption spectrometry. We found the highest concentrations of Pb (0.321 ± 0.165 mg/kg), As (0.045 ± 0.074 mg/kg), Zn (105.31 ± 16.33 mg/kg), and Fe (220.92 ± 117.18 mg/kg) in antlers; of Cd (4.974 ± 1.90 mg/kg) and Hg (0.048 ± 0.102 mg/kg) in kidney; and of Cu (7.29 ± 7.02 mg/kg) in the liver. A positive relationship between concentrations in antlers and muscle was found only for Cu (p = 0.001), and it therefore appears that red deer antlers cannot be used as an index for element concentrations in soft tissues. While our results confirm that the Mazury region is little polluted, consumption of red deer offal from this area should be limited according to extant legal limits set for livestock consumption.

Abstract
UNLABELLED The aim of the study was to determine content of 17 elements (Co, Cd, Cu, Cr, Ni, Pb, Zn, Mn, Fe, Mg, Na, Ca, K, N, C, S and P) and their bioaccumulation factors (BCF) in bay bolete (Boletus badius (Fr.) Fr.) fruiting bodies (caps and stalks) and underneath soil samples collected from forest sites in lubuskie voivodeship in Poland. Forty-eight samples of Boletus badius (Fr.) Fr. fruiting bodies and the same number of underneath soil substrate samples were collected in forest sites of Sulęcin Forest District in western Poland. Copper and zinc were absorbed most strongly from soil substrate, which is performed by bioaccumulation factors (BCFCap/Soil = 16.57 and 11.60, respectively), wherein Pb, Co, Cr, Fe and Mn were excluded from bioaccumulation (BCF < 1.0). The mean content of Cd in caps and stalks was 1.44 ± 0.88 and 2.01 ± 1.26 mg kg-1 dry weight, respectively and in contrary to Pb (≈3.00 ± 2.66 and 2.01 ± 1.26 mg kg-1 d. w.) this metal is strongly accumulated from subsoil (BCFCap/Soil = 11.12 and BCFStipe/Soil = 10.83). The fruiting bodies of Boletus badius were distinguished by elevated content of Cr, Zn, Pb and Cd. Few statistically significant metal-to-metal correlations were observed. The correlation between forest habitat types and metals concentrations was also analysed. An attempt of estimation of Pb and Cd safe dose for human consumption was made. IN CONCLUSION mushrooms can be a good source of some micro- and macroelements, but they also contain a great amount of toxic heavy metals.
