Characterising the emotional reactivity of cows to understand and predict their stress reactions to the slaughter procedure

Towards the use of on-farm slaughterhouse

Slaughter on the farm can address the concerns of farmers by meeting the needs of short distribution channels while better preserving animal welfare and meat quality. It can support conventional slaughter, by compensating for the significant decrease in the number of slaughterhouses in recent decades. The review describes first the different stages of slaughter and their possible impacts on animals' stress, welfare and consequences on their meat quality. The second part takes stock of recent thinking on the subject of slaughter and the regulation and technological advances that have led to the development of mobile slaughter units. A non-exhaustive list of mobile slaughter units currently in use in different countries is presented. Although these units can only absorb a small percentage of the total amounts of animals slaughtered, they are a welcome alternative to current slaughter practices for certain types of production and distribution, provided that the animal welfare and all aspects of meat quality are garanteed.

Impact of Social Buffering and Restraint on Welfare Indicators during UK Commercial Horse Slaughter

Current legislation in the United Kingdom stipulates that horses should not be slaughtered within sight of one another. However, abattoir personnel anecdotally report that, for semi-feral horses unused to restraint, co-slaughtering alongside a conspecific could reduce distress through social buffering and improve safety, but there is a lack of evidence to support this. CCTV footage from an English abattoir was assessed retrospectively with welfare indicators from when horses entered the kill pen until they were killed. Of 256 horses analysed, 12% (32/256) were co-slaughtered (alongside a conspecific) and 88% (224/256) individually. Co-slaughtered horses moved more in the pen, but individually slaughtered horses showed more agitated behaviour, required more encouragement to enter the kill pen, and experienced more slips or falls. Unrestrained horses (40%; 102/256) showed increased agitation, movement, and agonistic behaviour towards the operator and resisted entry to the kill pen compared to restrained horses (60%; 154/256). Positive interactions between conspecifics were seen in 94% (30/32) of co-slaughtered horses, and only 6% (1/16) showed a startled response to the first horse being shot, with a median time of 15 s between shots. This study highlights the impact that both conspecific and human interactions can have on equine welfare at slaughter. Semi-feral or unrestrained horses appear to experience increased distress compared to horses more familiar with human handling, and the presence of a conspecific at slaughter mitigated this.

Animal Welfare during Transport and Slaughter of Cattle: A Systematic Review of Studies in the European Legal Framework

Literature related to European transport and slaughter processes were included in this systematic review. The publication period is limited to the past twelve years since the European Animal Welfare Transport Regulation was enacted in 2009. Three different databases were used. The final screening resulted in the inclusion of 19 articles in this review. When handling cattle during transport and slaughter, personnel have an important impact and may inflict stress on the animals. Other factors, such as the group composition and health status prior to transport, can have a strong negative effect on animal welfare. At the abattoir, constructional conditions and the resulting environmental influences can have a negative impact on welfare as well. These include increased noise levels due to the lack of noise dampening and changing light conditions. Stress in cattle can be assessed, e.g., by measuring stress hormones or heart rate. Effective stunning is an important welfare-relevant step in the slaughtering process. Some signs of unconsciousness, such as immediate body collapse or absence of the corneal reflex, can be easily assessed. Expertise and continuous training of all personnel involved are important measures in stress reduction.

Contemporary Knowledge on the Assessment of Temperament in Cattle and Its Impact on Production and Reproduction Including Some Immunological, Genetic and Metabolic Parameters

Temperament is associated with the well-being, health, production and reproduction of cattle. In order to increase the population of individuals with the desired temperament, its evaluation should be standardized and be made one of the obligatory elements of breeding and veterinary examination. A number of different tests are used for temperament assessment. In this article, the importance of temperament correlation with some metabolic, genetic, immunological, production and reproductive parameters have been shown, pointing at its influence on the economy and cattle handling. The most common methods for assessing the temperament of cattle are presented, including long-time scales of temperament assessment. At the same time, the relationship of the temperament of cattle with production efficiency, immunity and reproductive indicators has been shown, indicating that its correct assessment is an important aspect of the proper development of the herd and the associated economic growth.

Role of the endoplasmic reticulum in the search for early biomarkers of meat quality

Defects in meat quality such as dark, firm and dry (DFD) beef have been related to high levels of oxidative stress that produce cellular alterations that may affect to the process of meat quality acquisition. Despite the important role of endoplasmic reticulum (ER) in the cellular response to oxidative stress, its function in the muscle-to-meat conversion process has not yet been studied. In this study, differences in muscular antioxidant defense and the unfolded protein response (UPR) of the ER in CONTROL (normal pH₂₄) and dark, firm, and dry (DFD, pH₂₄ ≥ 6.2) beef at 24 h post-mortem were analyzed to understand the changes in the muscle-to-meat conversion process related to meat quality defects. DFD meat showed poor quality, lower antioxidant activity (P < 0.05) and higher UPR activation (P < 0.05), which indicates higher oxidative stress what could partly explain the occurrence of meat quality defects. Therefore, the biomarkers of these cellular processes (IRE1α, ATF6α, and p-eIF2α) are putative biomarkers of meat quality.

Influence of the Slaughter Method on the Hygienic Quality of Beef Cattle Meat and Animal Welfare Biomarkers

The main objective of this research was to carry out a comparative study between different types of slaughter in beef cattle with and without stunning. In addition, the hygienic quality of the obtained meat was determined through microbiological analysis and the animal welfare at the time of slaughtering was assessed by means of physiological parameters. A total of 52 blood samples collected at the slaughterhouse during slaughter (10 for each type of slaughter: regular, halal, and halal with stunning; 10 at the time of resting; and 12 from rotating box slaughter) were analysed for physiological parameters indicating animal welfare status, namely, glucose, cortisol, lactate dehydrogenase (LDH) and creatine kinase (CK). In addition, the meat from 30 of the above animals was analysed for aerobic mesophilic bacteria, enterobacteria and coliforms. Moreover, a radiological study of the possible skull damage due to the non-penetrative captive bolt used at the time of stunning in the halal rite slaughter was carried out. A significance difference (p < 0.05) in the microbiological counts per type of slaughter was observed. It was proven that the amounts of glucose, LDH, CK, and cortisol in plasma were influenced (p < 0.05) by the type of slaughter. The halal rite slaughter using stunning with a non-penetrative captive bolt resulted in the best hygienic quality of meat and obtained the lowest values for all animal welfare biomarkers.

Investigating the impact of pre-slaughter management factors on indicators of fed beef cattle welfare – a scoping review

Introduction

The impact of pre-slaughter management practices on fed beef cattle welfare is a multifaceted and well researched subject matter. Factors such as transportation, handling, lairage time and several animal characteristics can directly impact the cattle’s behavior, mobility, blood lactate and cortisol levels, likelihood of injury and ultimately overall cattle welfare. Animal welfare continues to grow as a critical component of slaughter in the fed beef industry, yet a formal review of related research does not exist.

Methods

A scoping review was performed in order to (1) catalog pre-slaughter management factors that impact fed beef cattle welfare at the time of slaughter, (2) identify indicators used to evaluate the impact of pre-slaughter management on fed beef cattle welfare at slaughter, and (3) gain further understanding of the relationship between pre-slaughter management factors and fed beef cattle welfare outcome indicators at slaughter. Three data bases were ultimately searched: PubMed, CAB Abstracts, and Web of Science. The concepts used in the database searches were the population of interest (i.e., fed beef cattle), the location in the supply chain, preslaughter management factors, and welfare outcomes.

Results

A total of 69 studies were included in final analysis for this review, including studies from six geographic regions around the globe. Studies involving alternative slaughter methods (e.g., religious stunning or mobile slaughter) were not included in the formal analysis of this review, but still merited an in-depth discussion within this paper. After reviewing the studies, a total of 37 pre-slaughter factors and 69 indicators of welfare were measured throughout. Pre-slaughter management factors were then categorized by: animal characteristics; environmental characteristics; handling; lairage; transportation; and water/feed. Outcomeindicators of welfare were categorized into: behaviors; health, injury and disease; physiological; and stunning and insensibility.

Discussion

Pre-slaughter factors relating to transportation and handling, and welfare outcomes measured by behaviors and physiology were of the most researched throughout the studies.The results of this review offer a catalogue of commonly researched factors and indicators of welfare measured during the pre-slaughter phase, as well ast he relationships between them. This review also offers further substantial evidence that a multitude of events in the pre-slaughter phase affect fed beef cattle welfare and a collection of highly applicable welfare indicators to expedite further research on the effects of pre-slaughter factors and the application of improved practices.

Transcriptome profiling reveals stress-responsive gene networks in cattle muscles

In meat-producing animals, preslaughter operations (e.g., transportation, mixing unfamiliar animals, food and water deprivation) may be a source of stress with detrimental effects on meat quality. The objective of this work was to study the effect of emotional and physical stress by comparing the transcriptomes of two muscles (M. longissimus thoracis, LT and M. semitendinosus, ST) in Normand cows exposed to stress (n = 16) vs. cows handled with limited stress (n = 16). Using a microarray, we showed that exposure to stress resulted in differentially expressed genes (DEGs) in both muscles (62 DEGs in LT and 32 DEGs in ST, of which eight were common transcription factors (TFs)). Promoter analysis of the DEGs showed that 25 cis transcriptional modules were overrepresented, of which nine were detected in both muscles. Molecular interaction networks of the DEGs targeted by the most represented cis modules helped identify common regulators and common targets involved in the response to stress. They provided elements showing that the transcriptional response to stress is likely to (i) be controlled by regulators of energy metabolism, factors involved in the response to hypoxia, and inflammatory cytokines; and (ii) initiate metabolic processes, angiogenesis, corticosteroid response, immune system processes, and satellite cell activation/quiescence. The results of this study demonstrate that exposure to stress induced a core response to stress in both muscles, including changes in the expression of TFs. These factors could relay the physiological adaptive response of cattle muscles to cope with emotional and physical stress. The study provides information to further understand the consequences of these molecular processes on meat quality and find strategies to attenuate them.

Religious slaughtering: Implications on pH and temperature of bovine carcasses

The main objective of this study was to investigate the influence of different types of slaughtering on the variations of pH and temperature. Ninety entire male beef cattle, belonging to the Charolais breed, were distributed in three groups based on method of slaughtering. A total of 30 subjects (group K) were slaughtered without stunning, according to the Koscher rite; thirty bovines (group T) were stunned with a captive bolt gun, following the common slaughtering reported by Council Regulation (EC) 1099/2009; other thirty animals (group H) were slaughtered without stunning, based on Halal procedures. The temperature and pH values of carcasses were determined at 3, 6 and 24 h post-mortem, respectively. At 24 h post-mortem of the 30 carcasses evaluated for each group, muscle temperature decreased in all three types of slaughtering. In particular, the average temperature was 4.0, 4.9 and 3.0 °C for traditional, Halal and Koscher slaughtering, respectively. Moreover, at the same time step (24 h post-mortem), muscle pH decreased showing values equal to 5.72, 5.83, 5.81 for traditional, Halal and Koscher slaughtering, respectively. The findings of the present study may be useful to highlight the influence of slaughtering method on pH and, more generally, on meat quality. Additionally, our results show that, in slaughtering carried out without prior stunning, the carcass could be more susceptible to alterations because of the high pH values.

Cattle welfare assessment at the slaughterhouse level: Integrated risk profiles based on the animal's origin, pre-slaughter logistics, and iceberg indicators

Detection of on farm and transport animal welfare problems at slaughterhouse level is a key issue for the meat industry; however, usually, the assessments do not include basic aspects of animal health. For that reason, it is necessary to develop an assessment method that has an integrative scope and identifies the risk profiles in animals. Therefore, the aim of the present study was to detect cattle welfare indicators that can be implemented at the slaughterhouse level and to develop integrated risk profiles based on the animal's origin, pre-slaughter logistics, and animal-based indicators. We recorded the origin, commercial category, transportation details, and horn size of 1040 cattle upon arrival at the slaughterhouse. Cattle welfare was measured based on individual scores for vocalizations, stunning shots, carcass bruises, meat pH, severe hoof injuries, and organ condemnations. To characterize operational and logistic practices from the farm to the slaughterhouse, a two-step cluster analysis was applied to the aforementioned variables (production system, cattle type, horn size, journey distance, vehicle type), which identified four clusters: small feedlot and free-range profile (C1, n = 216, 20.8 %), feedlot profile (C2, n = 193, 18.6 %), culled dairy cows profile (C3, n = 262, 25.2 %), and free-range profile (C4, n = 369, 35.5 %). The animal's diet and environmental conditions might have influenced the development of hoof disorders in C1 animals (P = 0.023), the proportion of animals that were re-shot was highest in C2 animals (P = 0.033), and C3 and C4 animals were most likely to suffer injuries such as severe bruising (P = 0.001). In addition, the number of stunning shots, meat pH, carcass bruises, severe hoof injuries, and liver condemnations, explained a significant variation in the incidence of various health and welfare consequences based on an animal's origin, which confirmed their importance as 'welfare iceberg' indicators. The study provided detailed data that can be included into assessment methods for the welfare of slaughter cattle, which can be tailored to specific production systems.

Assessment of Stress by Serum Biomarkers in Calves and Their Relationship to Ultimate pH as an Indicator of Meat Quality

The routine handling of cattle during the rearing period and during antemortem events is an inevitable source of animal stress that can have negative impacts on the quality of meat, resulting in economic losses for the meat industry. This study assesses the breed, the farm management system, and the pre-mortem handling of animals and their impact on serum stress biomarkers, as well as their relationship with pH_u. The findings indicate that breed, together with farm management, had the highest impact; cortisol, lactate, and serum amyloid A were identified as potential stress biomarkers in relation to pH_u. We believe that these findings might help in the assessment of stress in cattle at the stage prior to slaughter.

Abstract

Seventy-eight calves from Asturiana de los Valles, Retinta, and Rubia Gallega breeds, under extensive and intensive farm systems and animal mixing and non-mixing conditions, and during the transport and lairage in slaughterhouses, were studied. This research aimed to study the effect of breed, farm system and mixing conditions on serum biomarkers (cortisol, lactate, glucose, serum amyloid A, haptoglobin, and C-reactive protein) and their relationship with pH_u at slaughter time, and to evaluate the response of the serum biomarkers of calves throughout fattening period. Moreover, this study aims to evaluate the response of the biomarkers in each breed during the fattening period. At slaughter time, cortisol and lactate were affected by BreedxFarm; Retinta showed the opposite pattern to the others and revealed the highest glucose in extensive farm systems. Rubia Gallega in mixing revealed the highest Amyloid A and haptoglobin. Extensive calves in mixing conditions showed the highest glucose. There was a relationship among the variables cortisol, lactate, Amyloid A, and pH_u. Slaughter time was a major stressor, and the stress response was mainly affected by breed. At slaughter, several biomarkers should be considered.

Factors Affecting the Welfare of Unweaned Dairy Calves Destined for Early Slaughter and Abattoir Animal-Based Indicators Reflecting Their Welfare On-Farm

In many dairy industries, but particularly those that are pasture-based and have seasonal calving, "surplus calves," which are mostly male, are killed at a young age because they are of low value and it is not economically viable to raise them. Such calves are either killed on farm soon after birth or sent for slaughter at an abattoir. In countries where calves are sent for slaughter the age ranges from 3-4 days (New Zealand and Australia; "bobby calves") to 3-4 weeks (e.g., Ireland); they are not weaned. All calves are at the greatest risk of death in the 1st month of life but when combined with their low value, this makes surplus calves destined for early slaughter (i.e., <1 month of age) particularly vulnerable to poor welfare while on-farm. The welfare of these calves may also be compromised during transport and transit through markets and at the abattoir. There is growing recognition that feedback to farmers of results from animal-based indicators (ABI) of welfare (including health) collected prior to and after slaughter can protect animal welfare. Hence, the risk factors for poor on-farm, in-transit and at-abattoir calf welfare combined with an ante and post mortem (AM/PM) welfare assessment scheme specific to calves <1 month of age are outlined. This scheme would also provide an evidence base with which to identify farms on which such animals are more at risk of poor welfare. The following ABIs, at individual or batch level, are proposed: AM indicators include assessment of age (umbilical maturity), nutritional status (body condition, dehydration), behavioral status (general demeanor, posture, able to and stability while standing and moving, shivering, vocalizations, oral behaviors/cross-sucking, fearfulness, playing), and evidence of disease processes (locomotory ability [lameness], cleanliness/fecal soiling [scour], injuries hairless patches, swellings, wounds], dyspnoea/coughing, nasal/ocular discharge, navel swelling/discharge); PM measures include assessment of feeding adequacy (abomasal contents, milk in rumen, visceral fat reserves) and evidence of disease processes (omphalitis, GIT disorders, peritonitis, abscesses [internal and external], arthritis, septicaemia, and pneumonia). Based on similar models in other species, this information can be used in a positive feedback loop not only to protect and improve calf welfare but also to inform on-farm calf welfare management plans, support industry claims regarding animal welfare and benchmark welfare performance nationally and internationally.

Understanding the Determination of Meat Quality Using Biochemical Characteristics of the Muscle: Stress at Slaughter and Other Missing Keys

Despite increasingly detailed knowledge of the biochemical processes involved in the determination of meat quality traits, robust models, using biochemical characteristics of the muscle to predict future meat quality, lack. The neglecting of various aspects of the model paradigm may explain this. First, preslaughter stress has a major impact on meat quality and varies according to slaughter context and individuals. Yet, it is rarely taken into account in meat quality models. Second, phenotypic similarity does not imply similarity in the underlying biological causes, and several models may be needed to explain a given phenotype. Finally, the implications of the complexity of biological systems are discussed: a homeostatic equilibrium can be reached in countless ways, involving thousands of interacting processes and molecules at different levels of the organism, changing over time and differing between animals. Consequently, even a robust model may explain a significant part, but not all of the variability between individuals.

Welfare of cattle at slaughter

The killing of cattle for human consumption (slaughtering) can take place in a slaughterhouse or on farm. The processes of slaughtering that were assessed for welfare, from the arrival of cattle until their death (including slaughtering without stunning), were grouped into three main phases: pre-stunning (including arrival, unloading from the truck, lairage, handling and moving of cattle); stunning (including restraint); and bleeding. Stunning methods were grouped into two categories: mechanical and electrical. Twelve welfare consequences that cattle may be exposed to during slaughter were identified: heat stress, cold stress, fatigue, prolonged thirst, prolonged hunger, impeded movement, restriction of movements, resting problems (inability to rest or discomfort during resting), social stress, pain, fear and distress. Welfare consequences and their relevant animal-based measures are described. In total, 40 welfare hazards that could occur during slaughter were identified and characterised, most of them related to stunning and bleeding. Staff were identified as the origin of 39 hazards, which were attributed to the lack of appropriate skill sets needed to perform tasks or to fatigue. Measures to prevent and correct hazards were identified, and structural and managerial measures were identified as those with a crucial role in prevention. Outcome tables linking hazards, welfare consequences, animal-based measures, origin of hazards, and preventive and corrective measures were developed for each process. Mitigation measures to minimise welfare consequences are proposed.

Animal-Based Measurements to Assess the Welfare of Dairy Cull Cows during Pre-Slaughter

Culling is the departure of cows from the herd as a result of sale, slaughter, health, national regulations, salvage, or death. Cull cows are removed from farms with poor health, production, behavior, or other problems, and during pre-slaughter they are sometimes kept without food and water, which compromises their well-being. The objective of the present study was to evaluate the welfare state of culled dairy cows during pre-slaughter using some animal-based measurements and to identify possible associations between them. Data were recorded for 62 different dairy production farms referring to 137 cull cows (n = 60 Holstein and n = 77 Normandy crosses) slaughtered in an abattoir in Colombia (South America). In this study, we evaluated and recorded land transport conditions, the health of animals on arrival to the abattoir, human-animal interaction, stress physiological variables and the association of these variables with characteristic bruises on the carcass, the lairage time, the presence of diseases, and the stage of pregnancy. In total, 98.5% of the cows were very thin, 35.7% were pregnant, and 84.7% had bruising on the carcass. In total, 74.5% had clinical conditions; these included skin lesions (32.4%), mastitis (27.5%), lameness (21.6%), vulvar secretions (8.8%), diarrhea (6.8%), and eye carcinoma (2.9%). The total number of cull cows with bruises during pre-slaughter was associated with lot size, transport time, presence of pregnancy, body score condition, and creatine kinase levels. The results suggest that the cows were not fit for transport because their health was severely affected before they left the farms. The animal-based indicators used in this study are useful for evaluating the welfare of cull dairy cows at abattoirs.

Livestock Handling at the Abattoir: Effects on Welfare and Meat Quality

Low-stress handling that uses behavioral principles can help reduce bruises and improve meat quality in cattle, pigs, and sheep. Short-term stressors before stunning, such as electric prod use or jamming in the race, may increase Pale, Soft, Exudative meat in pork and reduce tenderness in beef. Longer term stresses may increase Dark, Firm and Dry meat. Continuous assessment of livestock handling practices is recommended. Handlers should be trained to move small groups of livestock. They also need to understand behavioral principles. The most important ones are flight zone and the point of balance at the shoulder. Calm animals will be easier to handle. Simple economical improvements in races and lairages can help facilitate animal movement through the facility. The movement of livestock can often be improved by (1) installation of a light at a dark stun box entrance, (2) moving lamps to reduce reflections on shiny metal, (3) installation of solid shields to prevent incoming animals from seeing people on moving conveyors, (4) redirection of air flow at the stun box entrance, or (5) in elevated conveyor restrainers, use of a false floor to prevent entering animals from seeing the “visual cliff ” effect. Continuous assessment and supervision are required to maintain low-stress handling methods.

Dataset of lipids, antioxidative status and color attributes in cows meat from slaughter to storage: Impacts of diet supplementations and pre-slaughter stress

This data article presents a dataset with 34 values of the fatty acids composition and of indicators of lipid oxidation determined in the Longissimus dorsi and Semitendinosus from 71 Normand cull-cows at slaughter, after muscle aging and after meat storage periods under different packaging conditions. Cows were subjected to 3 feeding diets and 2 slaughter protocols relative to pre-slaughter stress. The indicators of lipids, FA composition, antioxidative enzymes activities, antioxidative status and global lipid oxidation of the muscles, and meat at different time points and under different aging and storage conditions, may be used to increase our understanding of the evolution of oxidation and consequences on color development. Modelling and Validation of Computer Vision Techniques to Assess Heart Rate, Eye Temperature, Ear-Base Temperature and Respiration Rate in Cattle

Animal monitoring normally requires procedures that are time- and labour-consuming. The implementation of novel non-invasive technologies could be a good approach to monitor animal health and welfare. This study aimed to evaluate the use of images and computer-based methods to track specific features of the face and to assess temperature; respiration rate and heart rate in cattle. The measurements were compared with measures obtained with conventional methods during the same time period. The data were collected from ten dairy cows that were recorded during six handling procedures across two consecutive days. The results from this study show over 92% of accuracy from the computer algorithm that was developed to track the areas selected on the videos collected. In addition, acceptable correlation was observed between the temperature calculated from thermal infrared images and temperature collected using intravaginal loggers. Moreover, there was acceptable correlation between the respiration rate calculated from infrared videos and from visual observation. Furthermore, a low to high relationship was found between the heart rate obtained from videos and from attached monitors. The study also showed that both the position of the cameras and the area analysed on the images are very important, as both had large impact on the accuracy of the methods. The positive outcomes and the limitations observed in this study suggest the need for further research

Abstract

Precision livestock farming has emerged with the aim of providing detailed information to detect and reduce problems related to animal management. This study aimed to develop and validate computer vision techniques to track required features of cattle face and to remotely assess eye temperature, ear-base temperature, respiration rate, and heart rate in cattle. Ten dairy cows were recorded during six handling procedures across two consecutive days using thermal infrared cameras and RGB (red, green, blue) video cameras. Simultaneously, core body temperature, respiration rate and heart rate were measured using more conventional ‘invasive’ methods to be compared with the data obtained with the proposed algorithms. The feature tracking algorithm, developed to improve image processing, showed an accuracy between 92% and 95% when tracking different areas of the face of cows. The results of this study also show correlation coefficients up to 0.99 between temperature measures obtained invasively and those obtained remotely, with the highest values achieved when the analysis was performed within individual cows. In the case of respiration rate, a positive correlation (r = 0.87) was found between visual observations and the analysis of non-radiometric infrared videos. Low to high correlation coefficients were found between the heart rates (0.09–0.99) obtained from attached monitors and from the proposed method. Furthermore, camera location and the area analysed appear to have a relevant impact on the performance of the proposed techniques. This study shows positive outcomes from the proposed computer vision techniques when measuring physiological parameters. Further research is needed to automate and improve these techniques to measure physiological changes in farm animals considering their individual characteristics.

Lipid oxidation, pre-slaughter animal stress and meat packaging: Can dietary supplementation of vitamin E and plant extracts come to the rescue?

Normand cull-cows received a diet enriched in n-3 polyunsaturated fatty acids (PUFA), known to enhance nutritional quality, but to decrease beef lipid stability. Half of the cows received a supplementation of vitamin E and plant extracts rich in polyphenols during the finishing period. Half of each feeding group was slaughtered under limited, the others under added stress conditions. Longissimus thoracis (LT) and Semitendinosus (ST) were evaluated after storage under air, or 70% O₂/30% CO₂ or vacuum conditions. Irrespectively of diet, pre-slaughter stress i) increased post-mortem malondialdehyde (MDA) formation except in vacuum-stored meat, ii) decreased vitamin A levels in the LT, iii) decreased vitamin E levels in meat stored in 70% O₂/30% CO₂ and total anti-oxidant status in vacuum stored meat. Effects were global; dietary supplementation with vitamin E and plant extracts was associated with lower MDA levels and MetMb percentage and higher levels of vitamin A and E.

Plasma indicators of bovine health: Impacts of diet supplementations and pre-slaughter stress

This data article reports the values of indicators of bovine health determined in the plasma of Normand cull-cows at different times of the about 100 days lasting finishing period and at slaughter. The data constitute a large dataset based on the quantification of metabolites and the evaluation of enzymes activities allowing the determination of antioxidant capacity, oxidative stress level, energy and lipid metabolisms, activity of the Hypothalamo-Pituitary-Adrenal axis and the hepatic status in cull-cows.

Pre-slaughter cattle welfare indicators for use in commercial abattoirs with voluntary monitoring systems: A systematic review

Animal welfare has become an important subject of public, economic and political concern, leading to the need to validate indicators that are feasible to use at abattoirs. A systematic review was carried out, which identified 72 cattle welfare indicators (CWI) that were classified into four categories (physiological, morphometric, behavioral and meat quality). Their validity and feasibility for use in abattoirs were evaluated as potential measures of cattle welfare during transportation to the abattoir and at the abattoir itself. Several highly valid indicators were identified that are useful to assess welfare at abattoirs, including body condition score, human-animal interactions, vocalizations, falling, carcass bruising, and meat pH. In addition, some intermediate valid indicators are useful and should be investigated further. Information along the food chain could be used systematically to provide a basis for a more-risk-based meat inspection. An integrated system based on the use of key indicators defined for each inspection step with the setting of alarm thresholds could be implemented.

ANIMAL BEHAVIOR AND WELL-BEING SYMPOSIUM: Interaction between coping style/personality, stress, and welfare: Relevance for domestic farm animals

This paper will argue that understanding animal welfare and the individual vulnerability to stress-related disease requires a fundamental understanding of functional individual variation as it occurs in nature as well as the underlying neurobiology and neuroendocrinology. Ecological studies in feral populations of mice, fish, and birds start to recognize the functional significance of phenotypes that individually differ in their behavioral and neuroendocrine response to environmental challenge. Recent studies indicate that the individual variation within a species may buffer the species for strong fluctuations in the natural habitat. Similarly, evolutionary ancient behavioral trait characteristics have now been identified in a range of domestic farm animals including cattle, pigs, and horses. Individual variation in behavior can be summarized in a 3-dimensional model with coping style, emotionality, and sociality as independent dimensions. These dimensions can be considered trait characteristics that are stable over time and across situations within the individual. This conceptual model has several consequences. First, the coping style dimension is strongly associated with differential stress vulnerability. Social stress studies show that proactive individuals are resilient under stable environmental conditions but vulnerable when outcome expectancies are violated. Reactive individuals are, in fact, rather flexible and seem to adapt more easily to a changing environment. A second consequence relates to genetics and breeding. Genetic selection for one trait usually implies selection for other traits as well. It is discussed that a more balanced breeding program that takes into account biologically functional temperamental traits will lead to more robust domestic farm animals. Finally, the relationship between temperamental traits, animal production, fitness, and welfare is discussed.

The effects of body posture and temperament on heart rate variability in dairy cows

Reactivity of cattle affects many aspects of animal production (e.g. reduced milk and meat production). Animals have individual differences in temperament and emotional reactivity, and these differences can affect how animals react to stressful and fear-eliciting events. Heart rate variability (HRV) is a good indicator of stress and balance of the autonomous nervous system, and low parasympathetic activity is connected with higher emotional reactivity. The study had two specific aims: (1) to compare HRV in dairy cows for standing and lying postures (no earlier results available), and (2) to assess whether dairy cows' emotional reactivity is connected to their HRV values. Eighteen dairy cows were subjected twice to a handling test (HT): morning (HT1) and afternoon (HT2), to evaluate emotional reactivity (avoidance score, AS). HRV was measured during HT (standing). HRV baseline values, both standing and lying down, were measured one week before HTs. HRV was analyzed with time and frequency domain analyses and with the Recurrence Quantification Analysis (RQA). Heart rate (HR), low-frequency/high-frequency band ratio (LH/HF), % determinism (%DET) and longest diagonal line segment in the recurrence plot (Lmax) were higher (p<0.05) while the cows were standing than when lying down, whereas the root mean square of successive R-R intervals (RMSSD) (p<0.05) and power of the high-frequency band (HF) (p<0.1) were higher while the animals were lying down. HR, the standard deviation of all interbeat intervals (SDNN), RMSSD, HF, power of the low-frequency band (LF), % recurrence (%REC), %DET, Shannon entropy (p<0.05), and HF (p<0.1) were higher during the handling test compared to standing baseline values. AS (i.e. tendency to avoid handling) correlated positively with SDNN (r=0.48, p<0.05), RMSSD (r=0.54, p<0.05), HF, RMSSD (r=0.46, p<0.1) and LF (r=0.57, p<0.05), and negatively with %DET (r=-0.53, p<0.05), entropy (r=-0.60, p<0.05) and Lmax (r=-0.55, p<0.05) in the baseline HRV measurements. AS correlated positively with SDNN (r=0.43, p<0.1) and HF (r=0.53, p<0.05) during HT. Some HRV parameters (HR, LF, %REC, %DET) indicated that the handling test may have caused stress to the experimental cows, although some HRV results (SDNN, RMSSD, HF, entropy) were controversial. The correlations between HRV variables and AS suggest that the emotional reactivity of the cow can be assessed from the baseline values of the HRV. It is debatable, however, whether the handling test used in the present study was a good method of causing mild stress in dairy cattle, since it may have even induced a positive emotional state. The posture of the cow affected HRV values as expected (based on results from other species), so that while standing a shift towards more sympathetic dominance was evident. Our results support the idea that linear (time and frequency domain) and non-linear (RQA) methods measuring HRV complement each other, but further research is needed for better understanding of the connection between temperament and HRV.

Livestock transport from the perspective of the pre-slaughter logistic chain: a review

New developments in livestock transport within the pre-slaughter chain are discussed in terms of three logistic nodes: origin, stopovers and slaughterhouse. Factors as transport cost, haulier, truck specifications, micro-environment conditions, loading density, route planning, vehicle accidents and journey length are discussed as well as causes of morbidity, mortality, live weight and carcass damage. Taking into account current trends towards increased transport times, logistics stopovers and mixed transport, there is a need to develop systems of evaluation and decision-making that provide tools and protocols that can minimize the biological cost to animals, which may have been underestimated in the past.

Win–win strategies for high beef quality, consumer satisfaction, and farm efficiency, low environmental impacts and improved animal welfare

Meat quality includes intrinsic qualities (the characteristics of the product itself) and extrinsic qualities (e.g. animal health and welfare, environmental impacts, price). There is still a high level of variability in beef palatability, which induces consumer dissatisfaction. We also observe a general trend towards an increasing importance of healthiness and safety (intrinsic) and environmental issues and animal welfare (extrinsic). Most grading systems describe carcasses using only animal traits (e.g. weight, conformation, fatness, animal age and sex). In North American and Asian countries, emphasis has been put on maturity and marbling. The European system is mainly based on yield estimation. The Meat Standards Australia grading scheme, which predicts beef palatability for each cut, proved to be effective in predicting beef palatability in many other countries. Some genetic markers are available to improve beef quality. In addition, gene and protein expression profiling of the bovine muscle revealed that the expression level of many genes and the abundance of many proteins may be potential indicators of muscle mass, tenderness, flavour or marbling of meat. The integration of all these parameters is likely to predict better beef palatability. The integration of extrinsic qualities in the prediction model increases the difficulty of achieving a global evaluation of overall meat quality. For instance, with respect to environmental issues, each feeding system has its own advantages and disadvantages. Despite this, win–win strategies have been identified. For example, animals that were less stressed at slaughter also produced more tender meat, and in some studies the most economically efficient farms had the lowest environmental impact. In other cases, there are trade-offs among and between intrinsic and extrinsic qualities. In any case, the combination of the different integrative approaches appears promising to improve the prediction of overall beef quality. A relevant combination of indicators related to sensory and nutritional quality, social and environmental considerations (such as e.g. carbon footprint, animal welfare, grassland biodiversity, rural development) and economic efficiency (income of farmers and of other stakeholders of the supply chain, etc.) will allow the prediction of the overall quality of beef mainly for consumers but also for any stakeholder in the supply chain.

Eating quality of beef from free-range and confined Podolian young bulls

The purpose of the present study was to assess the effect of grazing on meat quality of young Podolian bulls by using 6 free-ranging (FR) and 6 confined (CON) animals slaughtered at 18 mo of age (Exp. 1). A second experiment (Exp. 2) was performed the subsequent year where the age at slaughter was 15 mo of age (6 animals/group). Quantitative descriptive sensory analysis, water-holding capacity (WHC; thawing, centrifugation, and cooking losses), and shear force (only in Exp. 2) were evaluated on LM, aged 8 d. Both experiments showed that CON animals produced beef with greater overall beef flavor (P < 0.01 and P < 0.05 in Exp. 1 and 2, respectively) and odor intensities (P < 0.10 and P < 0.05 in Exp. and 1 and 2, respectively) and increased malondialdehyde contents (P < 0.01 and P < 0.05 in Exp. 1 and 2, respectively). In Exp. 2 beef from FR bulls showed higher sensory tenderness as compared with CON bulls (P < 0.05) and a lower shear force (P < 0.05). In Exp. 1, beef obtained from FR bulls showed lower centrifugation and greater thawing losses compared with samples from bulls from group CON (P < 0.05) whereas rearing system did not affect any WHC variables in Exp. 2. The results obtained from the 2 experiments were generally consistent. The different results occasionally observed (e.g., sensory tenderness and WHC) is attributed to the different ages at slaughter used in the 2 experiments (18 and 15 mo). In particular, at an earlier age at slaughter (15 mo) the effect of FR on meat quality was beneficial on sensory tenderness and mechanical properties. Therefore, given the additional costs of maintaining the bulls for another 3 mo when slaughtered at 18 mo of age, a reduced age at slaughter of FR bulls may be suggested to avoid the decrement of herbage mass availability inducing the consumption of high amounts of concentrate.

Housing of growing rabbits in individual, bicellular and collective cages: fear level and behavioural patterns

During growth (27 to 75 days of age), a total of 384 rabbits were kept in 72 individual cages, 48 bicellular cages (2 rabbits/cage) and 24 collective cages (9 rabbits/cage). To evaluate the effects of the housing system on the fear level and behavioural patterns of rabbits at the two ages (39 to 45 days and 66 to 73 days), a tonic immobility test and an open-field test were conducted and their behaviour was video recorded. In the tonic immobility test, the number of attempts to induce immobility (1.38) was lower, and the duration of immobility (47.8 s) was higher (0.05 < P < 0.01) in the rabbits housed in individual cages than in those kept in bicellular (1.72 attempts and 25.0 s of immobility) and collective cages (1.99 attempts and 25.0 s of immobility). During the open-field test, the rabbits from individual and bicellular cages showed higher latency (38.8 and 40.3 v. 27.0 s), a lower number of total (73.3 and 81.7 v. 91.9) and central displacements (3.6 and 2.8 v. 5.4) and a shorter running time (11.8 and 13.6 s v. 17.7 s) and the time biting the pen (5.5 and 9.1 s v. 28.2 s) compared with the rabbits kept in collective cages (0.05 < P < 0.001). During the 24-h video recording, the rabbits in individual and bicellular cages spent less time allogrooming (0.34% and 0.19% v. 1.44%), moving (0.74% and 0.60% v. 1.32%) and running (0.08% and 0.03% v. 0.21%) than the rabbits in the collective cages (0.01 < P < 0.001). The lowest numbers of alerts and hops were observed in the rabbits kept in bicellular cages. With increasing age, a lower number of rabbits were sensitive to the immobility test and more rabbits entered the pen spontaneously during the open-field test (P < 0.001). In conclusion, the rabbits in individual cages exhibited the highest fear level and incomplete behavioural patterns; the rabbits housed in collective cages showed the lowest fear levels and had the possibility of expressing a wider range of behaviour; and the rabbits in bicellular cages exhibited an inconsistent pattern of fear in the tonic immobility and open-field tests. Probably, these rabbits were in a less stressful condition compared with animals in individual cages because social contacts were allowed, even if freedom of movement was more limited.

Effects of feed deprivation on behavioral reactivity and physiological status in Holstein cattle

The present study evaluated whether feed deprivation can increase reactivity to stressful events, such as those that can occur at slaughter. Therefore, effects of 30 h of feed deprivation on behavior, including reactions to psychological stressors, and physiological status in cattle were determined. Sixteen Holstein cows (Exp. 1) and 32 Holstein heifers (Exp. 2) were either fed (FE) or 30-h feed deprived (FD). Throughout the first day of feed deprivation and during evening feed distribution to control animals, FD heifers and cows were more active than controls (P < 0.05). In Exp. 1, during a feeding test, in response to a sudden air blast arising from the bucket from which the cow was feeding, FD cows showed a longer latency to return to feed (P = 0.0002), spent less time in the bucket air blast zone (P = 0.008) and less time motionless (P = 0.03), and tended to withdraw over a longer distance (P = 0.07) than FE cows. In Exp. 2, during a reactivity test, FD heifers spent more (P = 0.0001) time motionless in response to social isolation than FE heifers. In Exp. 2, one-half of the FE and FD heifers were subjected to an additional physical and psychological stressor just before the reactivity test by driving them for 5 min through a labyrinth. Within heifers subjected to the additional stressor, FD heifers were less accepting of being detained (P = 0.05) and stroked (P = 0.003) by a familiar stockperson in a corner of the test arena. Compared with FE animals, FD heifers and FD cows had greater plasma cortisol concentrations (P < 0.05). Feed-deprived cows also had reduced β-hydroxybutyrate concentrations (P = 0.02) compared with FE cows. Thus, in cattle, FD influenced some of the classical indicators of energy metabolism and exacerbated reactivity to sudden events. In addition, when additional stressors were applied, FD cattle were more reluctant to accept handling. Results indicate that a multifactorial origin of stressors during the slaughter period may synergistically increase psychological stress of cattle.

Reduction of the olfactory cognitive ability in horses during preslaughter: stress-related hormones evaluation

As horses may perceive several odour signals of danger at slaughter, application of mentholated ointment to their nostrils may limit their perception of danger. To assess the effect of the application of a mentholated ointment to horse nostrils on the stress response during pre-slaughter handling, plasma levels were evaluated for cortisol, beta-endorphin, epinephrine and norepinephrine prior to and after stunning. Twenty draught-type horses were divided into control (n=10) and treated (n=10) groups and a mentholated ointment applied to the nostrils of the treated horses following blood sampling in lairage 45 min prior to slaughter. Treatment did not affect plasma concentrations of beta-endorphin or cortisol but significantly reduced the concentrations of epinephrine and norepinephrine observed in post-stun plasma. These results indicated that mentholated ointment applied to the nostrils of horses pre-slaughter reduced their adrenergic response to the slaughter environment, implying that the stress response may be reduced with this technology.
