Abstract
Protein haze in white wine can be a serious quality defect because consumers perceive hazy wines as "spoiled". Unfortunately, a specific method for the detection, or selective treatment, of such proteins in affected wines does not exist. Herein we investigate on the development of an easy-to-use sensor device that allows detection of haze-forming proteins (HFPs). Such a device is expected to overcome the limitations of the "heat test" currently used to assess the protein content in wine and the amount of bentonite needed to remove such proteins. To this aim, three different approaches were explored. Firstly, an impedimetric immunosensor against chitinases was developed and its performance assessed. Secondly, the exploitation of the dual role of HFPs as biorecognition element and analyte to develop an impedimetric biosensor was evaluated, in what can be considered a very unique strategy, representing a new paradigm in biosensing. Lastly, Fourier transform infrared (FT-IR) spectra were collected for various wine samples and chemometric tools such as discrete wavelet transform (DWT) and artificial neural networks (ANNs) were used to achieve the quantification of HFPs. Detection of HFPs at the μg/L level was achieved with both impedimetric biosensors, whereas the FT-IR-based approach allowed their quantification at the mg/L level in wine samples directly. The sensitivity of the developed methods may enable the rapid assessment of wine protein content.

Abstract
The promising field of organic electronics has ushered in a new era of biosensing technology, thus offering a promising frontier for applications in both medical diagnostics and environmental monitoring. This review paper provides a comprehensive overview of organic electronics' remarkable progress and potential in biosensing applications. It explores the multifaceted aspects of organic materials and devices, thereby highlighting their unique advantages, such as flexibility, biocompatibility, and low-cost fabrication. The paper delves into the diverse range of biosensors enabled by organic electronics, including electrochemical, optical, piezoelectric, and thermal sensors, thus showcasing their versatility in detecting biomolecules, pathogens, and environmental pollutants. Furthermore, integrating organic biosensors into wearable devices and the Internet of Things (IoT) ecosystem is discussed, wherein they offer real-time, remote, and personalized monitoring solutions. The review also addresses the current challenges and future prospects of organic biosensing, thus emphasizing the potential for breakthroughs in personalized medicine, environmental sustainability, and the advancement of human health and well-being.

Abstract
Electronic tongues (ETs) are multisensor systems based on the coupling of different sensors with high stability and cross-sensitivity towards different species, along with an appropriate chemometric tool that allow the classification of samples and/or the quantification of selected analytes. Despite the great advantages that the data processing stage may offer (e.g. allowing to offset matrix effects from the sample itself, or to resolve the presence of interferences, drifts or non-linearities obtained with the sensors), the stability of the sensors response together with its varied cross-sensitivity are of utmost importance. In this regard, despite the progress that has been made over the last years and the increasing number of publications dealing with ETs, researchers have focused mainly on the developed application itself or on the data treatment stage, but very few report on the choice of the sensors. In this direction, herein we explore on the development of a simple methodology that allows the a priori selection of the optimal sensor array to carry out a specific application. Concretely, the usage of principal component analysis (PCA) in combination with different clustering indices is proposed as a simple approach to simultaneously assess the cross-response and the reproducibility of the different sensors in a single step, what allows to define which sensors may constitute an ET array for a given qualitative or quantitative application. The above ideas have been applied to the study case of aromatic essential oils.

Abstract
Generations of sensors have been developed for predicting food sensory profiles to circumvent the use of a human sensory panel, but a technology that can rapidly predict a suite of sensory attributes from one spectral measurement remains unavailable. Using spectra from grape extracts, this novel study aimed to address this challenge by exploring the use of a machine learning algorithm, extreme gradient boosting (XGBoost), to predict twenty-two wine sensory attribute scores from five sensory stimuli: aroma, colour, taste, flavour, and mouthfeel. Two datasets were obtained from absorbance-transmission and fluorescence excitation-emission matrix (A-TEEM) spectroscopy with different fusion methods: variable-level data fusion of absorbance and fluorescence spectral fingerprints, and feature-level data fusion of A-TEEM and CIELAB datasets. The results for externally validated models showed slightly better performance using only A-TEEM data, predicting five out of twenty-two wine sensory attributes with R2 values above 0.7 and fifteen with R2 values above 0.5. Considering the complex biotransformation involved in processing grapes to wine, the ability to predict sensory properties based on underlying chemical composition in this way suggests that the approach could be more broadly applicable to the agri-food sector and other transformed foodstuffs to predict a product's sensory characteristics from raw material spectral attributes.

Abstract
Industrialization and globalization, both on an international and local scale, have caused large quantities of toxic chemicals to be released into the environment. Thus, developing an environmental pollutant sensor platform that is sensitive, reliable, and cost-effective is extremely important. In current years, considerable progress has been made in the expansion of electrochemical sensors and biosensors to monitor the environment using nanomaterials. A large number of emerging biomarkers are currently in existence in the biological fluids, clinical, pharmaceutical and bionanomaterial-based electrochemical biosensor platforms have drawn much attention. Electrochemical systems have been used to detect biomarkers rapidly, sensitively, and selectively using biomaterials such as biopolymers, nucleic acids, proteins etc. In this current review, several recent trends have been identified in the growth of electrochemical sensor platforms using nanotechnology such as carbon nanomaterials, metal oxide nanomaterials, metal nanoparticles, biomaterials and polymers. The integration strategies, applications, specific properties and future projections of nanostructured materials for emerging progressive sensor platforms are also observed. The objective of this review is to provide a comprehensive overview of nanoparticles in the field of electrochemical sensors and biosensors.

Abstract
Fluoroquinolones (FQs) are one of the most important types of antibiotics in the clinical, poultry, and aquaculture industries, and their monitoring is required as the abuse has led to severe issues, such as antibiotic residues and antimicrobial resistance. In this study, we report a voltammetric electronic tongue (ET) for the simultaneous determination of ciprofloxacin, levofloxacin, and moxifloxacin in both pharmaceutical and biological samples. The ET comprises four sensors modified with three different customized molecularly imprinted polymers (MIPs) and a nonimprinted polymer integrated with Au nanoparticle-decorated multiwall carbon nanotubes (Au-fMWCNTs). MWCNTs were first functionalized to serve as a supporting substrate, while the anchored Au nanoparticles acted as a catalyst. Subsequently, MIP films were obtained by electropolymerization of pyrrole in the presence of the different target FQs. The sensors' morphology was characterized by scanning electron microscopy and transmission electron microscopy, while the modification process was followed electrochemically step by step employing [Fe(CN)6]3-/4- as the redox probe. Under the optimal conditions, the MIP(FQs)@Au-fMWCNT sensors exhibited different responses, limits of detection of ca. 1 μM, and a wide detection range up to 300 μM for the three FQs. Lastly, the developed ET presents satisfactory agreement between the expected and obtained values when used for the simultaneous determination of mixtures of the three FQs (R2 ≥0.960, testing subset), which was also applied to the analysis of FQs in commercial pharmaceuticals and spiked human urine samples.

Abstract
Bladder cancer (BC) is the sixth leading cause of death by cancer. Depending on the invasiveness of tumors, patients with BC will undergo surgery and surveillance lifelong, owing the high rate of recurrence and progression. In this context, the development of strategies to support non-invasive BC diagnosis is focusing attention. Voltammetric electronic tongue (VET) has been demonstrated to be of use in the analysis of biofluids. Here, we present the implementation of a VET to study 207 urines to discriminate BC and non-BC for diagnosis and surveillance to detect recurrences. Special attention has been paid to the experimental setup to improve reproducibility in the measurements. PLSDA analysis together with variable selection provided a model with high sensitivity, specificity, and area under the ROC curve AUC (0.844, 0.882, and 0.917, respectively). These results pave the way for the development of non-invasive low-cost and easy-to-use strategies to support BC diagnosis and follow-up. Abstract
Assessment of water and soil quality is critical for the health, economy, and sustainability of any community. The release of a range of life-threatening pollutants from agriculture, industries, and the residential communities themselves into the different water resources and soil requires of analytical methods intended for their detection. Given the challenge that represents coping with the monitoring of such a diverse and large number of compounds (with over 100,000 chemicals registered, yet in continuous increase), holistic solutions such as electronic tongues (ETs) are emerging as a promising tool for a sustainable, simple, and green monitoring of soil and water resources. In this direction, this review aims to present and critically provide an overview of the basic concepts of ETs, followed by some relevant applications recently reported in the literature in environmental analysis, more specifically, the monitoring of water and wastewater, their quality and the detection of water pollutants as well as soil analysis.

Abstract
Sulfamethoxazole (SMX) forms the high harmfulness and causing negative health impacts to well-being human and environment that found to be major drastic concern. It is subsequently important to keep in track for monitoring of SMX through convenient detecting devices which include the requirement of being minimal expense and potential for on location environmental applications. Nanomaterials based design has been proposed to determine the SMX antibiotic which in turn provides the solution for this issue. In spite of the critical advancement accomplished in research, further endeavors are yet to foster the progress on electrochemical sensors with the guide of various functional nanomaterials and guarantee the effective transportability for such sensors with improved coherence. Moreover, it has been noticed that, only few reports on electrochemical sensing of SMX detection using nanomaterials was observed. Hence an in-depth evaluation of electrochemical sensing systems using various nanomaterials for SMX detection was summarized in this review. Additionally this current review centers with brief presentation around SMX hazard evaluation followed by study on the current logical techniques to feature the importance for SMX detection. This review will provide the sum up view towards the future ideas of this field which assists in improving the detecting strategies for SMX detection.

Abstract
The combination of chemometrics and electrochemical sensors modified with molecularly imprinted polymers (MIPs) towards the development of MIP-based electronic tongues (ETs) was explored herein. To demonstrate the potential of such an approach, the simultaneous determination of paracetamol, ascorbic acid and uric acid mixtures in pharmaceutical samples was evaluated. To this aim, MIP-based sensors for the different compounds were prepared by in situ electropolymerization of pyrrole in the presence of p-toluenesulfonate anion (pTS-), which acted as functional doping ion of the polypyrrole (PPy) MIP backbone. Morphological characterization of the MIPs was done by scanning electron microscopy (SEM), while functionalization of the electrodes was monitored electrochemically. Under the optimized measuring conditions, the developed sensors showed a good performance, with good linearity at the μM level (R2 > 0.992, limits of detection between 1 and 24 μM) as well as good repeatability (intra- and inter-day RSD values between 3 and 6% over 30 consecutive measurements). Finally, the quantification of the individual substances in different pharmaceutical samples was achieved by an artificial neural networks (ANNs) model, showing satisfactory agreement between expected and obtained values (R2 > 0.987).

Abstract
In situ analysis of multiple biomarkers in the body provides better diagnosis and enables personalized health management. Since many of these biomarkers are redox-active, electrochemical sensors have shown promising analytical capabilities to measure multiple redox-active molecules. However, the analytical performance of electrochemical sensors rapidly decreases in the presence of multicomponent biofluids due to their limited ability to separate overlapping electrochemical signals generated by multiple molecules. Here we report a novel approach to use charged chitosan-modified electrodes to alter the diffusion of ascorbic acid, clozapine, L-homocysteine, and uric acid—test molecules with various molecular charges and molecular weights. Moreover, we present a complementary approach to use chemometrics to decipher the complex set of overlapping signals generated from a mixture of differentially charged redox molecules. The partial least square regression model predicted three out of four redox-active molecules with root mean square error, Pearson correlation coefficient, and R-squared values of 125 µM, 0.947, and 0.894; 51.8 µM, 0.877, and 0.753; 55.7 µM, 0.903, and 0.809, respectively. By further enhancing our understanding of the diffusion of redox-active molecules in chitosan, the in-situ separation of multiple molecules can be enabled, which will be used to establish guidelines for the effective separation of biomarkers.

Abstract
Heterogeneous tissue models require the assembly and co-culture of multiple types of cells. Our recent work demonstrated taste signal transmission from gustatory cells to neurons by grafting single-stranded DNA into the cell membrane to construct multicellular assemblies. However, the weak DNA linkage and low grafting density allowed the formation of large gustatory cell self-aggregates that cannot communicate with neurons efficiently. This article presents the construction of artificial taste buds exhibiting active intercellular taste signal transmission through the hybridization of gustatory-neuronal multicellular interfaces using bioorthogonal click chemistry. Hybrid cell clusters were formed by the self-assembly of neonatal gustatory cells displaying tetrazine with a precultured embryonic hippocampal neuronal network displaying trans-cyclooctene. A bitter taste signal transduction was provoked in gustatory cells using denatonium benzoate and transmitted to neurons as monitored by intracellular calcium ion sensing. In the multicellular hybrids, the average number of signal transmissions was five to six peaks per cell, and the signal transmission lasted for ∼5 min with a signal-to-signal gap time of 10-40 s. The frequent and extended intercellular signal transmission suggests that the cell surface modification by the bioorthogonal click chemistry is a promising approach to fabricating functional multicellular hybrid clusters potentially useful for cell-based biosensors, toxicity assays, and tissue regeneration.

Abstract
Among basic taste sensations, bitter taste is vital to the survival of mammals due to its indispensable role in toxin prediction or identification, so the identification of bitter compounds is of great value in the pharmaceutical and food industry. Recently, bitter taste receptor (T2Rs)-based biosensors have been developed for specific bitter detection. However, the taste biosensors based on taste cells/tissues suffer from simple function, low sensitivity, low content, and limited parameters. Here, to establish a high-content, highly sensitive, and multifunctional taste biosensor, we developed a multifunctional hybrid integrated cardiomyocyte biosensor (HICB) for bitter detection. Due to the expression of bitter taste receptors in cardiomyocytes, the HICB can recognize the specific bitter agonists by synchronously recording the extracellular field potential (EFP) and mechanical beating (MB) signals from the cultured cardiomyocytes in vitro. Multiple feature parameters were defined and extracted from the electromechanical signals of cardiomyocytes to analyze the specific responses to four typical bitter compounds. The radar map, heat map, and principal component analysis (PCA) were used to visualize and classify the specific responses. Moreover, bitter-induced cardiotoxicity also was chronically evaluated, and these bitter compounds presented an inhibition effect on the electrophysiological and contractile activities of cardiomyocytes. This high-content HICB offers an alternative platform for both bitter detection and cardiotoxicity assessment, showing promising applications in the fields of taste detection and toxicity screening.

Abstract
Molecularly imprinted polymers (MIPs) are artificially synthesized materials to mimic the molecular recognition process of biological macromolecules such as substrate-enzyme or antigen-antibody. The combination of these biomimetic materials with electrochemical techniques has allowed the development of advanced sensing devices, which significantly improve the performance of bare or catalyst-modified sensors, being able to unleash new applications. However, despite the high selectivity that MIPs exhibit, those can still show some cross-response towards other compounds, especially with chemically analogous (bio)molecules. Thus, the combination of MIPs with chemometric methods opens the room for the development of what could be considered a new type of electronic tongues, i.e. sensor array systems, based on its usage. In this direction, this review provides an overview of the more common synthetic approaches, as well as the strategies that can be used to achieve the integration of MIPs and electrochemical sensors, followed by some recent examples over different areas in order to illustrate the potential of such combination in very diverse applications.

Abstract
The current manuscript summarizes different electrochemical sensing systems developed within the last 5 years for the detection of zearalenone (ZEN) in diverse matrices such as food, feed, and biofluids. ZEN is one of the most prevalent non-steroidal mycotoxins that is often found in pre- and post-harvest crops. Crops contamination with ZEN and animal exposure to it via contaminated feed, is a global health and economic concern. The European Union has established various preventive programs to control ZEN contamination, and regulations on the maximum levels of ZEN in food and feed. Electrochemical (bio)sensors are a very promising alternative to sensitive but sophisticated and expensive chromatographic techniques. In the current review, recent developments towards electrochemical sensing of ZEN, sorted by type of transducer, their design, development, and approbation/validation are discussed, and the use of specialized electrochemical instrumentation is highlighted.

Abstract
Herein we investigate the usage of principal component analysis (PCA) and canonical variate analysis (CVA), in combination with the F factor clustering metric, for the a priori tailored selection of the optimal sensor array for a given electronic tongue (ET) application. The former allows us to visually compare the performance of the different sensors, while the latter allows us to numerically assess the impact that the inclusion/removal of the different sensors has on the discrimination ability of the ET. The proposed methodology is based on the measurement of a pure stock solution of each of the compounds under study, and the posterior analysis by PCA/CVA with stepwise iterative removal of the sensors that demote the clustering when retained as part of the array. To illustrate and assess the potential of such an approach, the quantification of paracetamol, ascorbic acid, and uric acid mixtures were chosen as the study case. Initially, an array of eight different electrodes was considered, from which an optimal array of four sensors was derived to build the quantitative ANN model. Finally, the performance of the optimized ET was benchmarked against the results previously reported for the analysis of the same mixtures, showing improved performance.

Abstract
The application of a voltammetric electronic tongue (ET) towards the classification and authentication of vinegar is reported. Vinegar samples of different varieties were analysed with a three-sensor array, without performing any sample pre-treatment, but only an electrochemical cleaning stage between sample measurements to avoid fouling onto the electrode surfaces. Next, the use of discrete cosine transform (DCT) for the compression and reduction of signal complexity in voltammetric measurements was explored, and the number of coefficients was optimized through its inverse transform. Finally, the obtained coefficients were analysed by principal component analysis (PCA) to attempt the discrimination of the different vinegars and by linear discriminant analysis (LDA) to build a model that allows its categorization. Satisfactory results were obtained overall, with a classification rate of 100% for the external test subset (n = 15).

Abstract
BACKGROUND The identification of foodborne pathogenic bacteria types plays a crucial role in food safety and public health. In consideration of long culturing times, tedious operations and the desired specific recognition elements in conventional methods, the alternative fluorescent sensor arrays can offer a high-effective approach in bacterial identification by using multiple cross-reactive receptors. Herein, we achieve this goal by constructing an upconversion fluorescent sensor array based on anti-stokes luminogens featuring a series of functional lanthanide-doped upconversion nanoparticles (UCNPs) with phenylboronic acid, phosphate groups, or imidazole ionic liquid. The prevalent spotlight effect of microorganism and the electrostatic interaction between UCNPs and bacteria endow such sensor array an excellent discrimination property. RESULTS Seven common foodborne pathogenic bacteria including two Gram-positive bacteria (Staphylococcus aureus and Listeria monocytogenes) and five Gram-negative bacteria (Escherichia coli, Salmonella, Cronobacter sakazakii, Shigella flexneri and Vibrio parahaemolyticus) are precisely identified with 100% accuracy via linear discriminant analysis (LDA). Furthermore, blends of bacteria have been identified accurately. Bacteria in real samples (tap water, milk and beef) have been effectively discriminated with 92.1% accuracy. CONCLUSIONS Current fluorescence sensor array is a powerful tool for high-throughput bacteria identification, which overcomes the time-consuming bacteria culture and heavy dependence of specific recognition elements. The high efficiency of whole bacterial cell detection and the discrimination capability of life and death bacteria can brighten the application of fluorescence sensor array.

Abstract
Electrochemical sensors and biosensors have been proposed as fast and cost effective analytical tools, meeting the robustness and performance requirements for industrial process monitoring. In wine production, electrochemical biosensors have proven useful for monitoring critical parameters related to alcoholic fermentation (AF), malolactic fermentation (MLF), determining the impact of the various technological steps and treatments on wine quality, or assessing the differences due to wine age, grape variety, vineyard or geographical region. This review summarizes the current information on the voltamperometric biosensors developed for monitoring wine production with a focus on sensing concepts tested in industry-like settings and on the main quality parameters such as glucose, alcohol, malic and lactic acids, phenolic compounds and allergens. Recent progress featuring nanomaterial-enabled enhancement of sensor performance and applications based on screen-printed electrodes is emphasized. A case study presents the monitoring of alcoholic fermentation based on commercial biosensors adapted with minimal method development for the detection of glucose and phenolic compounds in wine and included in an automated monitoring system. The current challenges and perspectives for the wider application of electrochemical sensors in monitoring industrial processes such as wine production are discussed.

Abstract
Electronic tongue systems equipped with cross-sensitive potentiometric sensors have been applied to pharmaceutical analysis, due to the possibility of various applications and developing new formulations. Many studies already proved the complementarity between the electronic tongue and classical analysis such as dissolution tests indicated by Pharmacopeias. However, as a new approach to study pharmaceuticals, electronic tongues lack strict testing protocols and specification limits; therefore, their results can be improperly interpreted and inconsistent with the reference studies. Therefore, all aspects of the development, measurement conditions, data analysis, and interpretation of electronic tongue results were discussed in this overview. The critical evaluation of the effectiveness and reliability of constructed devices may be helpful for a better understanding of electronic tongue systems development and for providing strict testing protocols.

Abstract
In the course of evolution, nature has endowed humans with systems for the recognition of a wide range of tastes with a sensitivity and selectivity which are indispensable for the evaluation of edibility and flavour attributes. Inspiration by a biological sense of taste has become a basis for the design of instruments, operation principles and parameters enabling to mimic the unique properties of their biological precursors. In response to the demand for fast, sensitive and selective techniques of flavouring analysis, devices belonging to the group of bioelectronic tongues (B-ETs) have been designed. They combine achievements of chemometric analysis employed for many years in electronic tongues (ETs), with unique properties of bio-inspired materials, such as natural taste receptors (TRs) regarding receptor/ligand affinity. Investigations of the efficiency of the prototype devices create new application possibilities and suggest successful implementation in real applications. With advances in the field of biotechnology, microfluidics and nanotechnologies, many exciting developments have been made in the design of B-ETs in the last five years or so. The presented characteristics of the recent design solutions, application possibilities, critical evaluation of potentialities and limitations as well as the outline of further development prospects related to B-ETs should contribute to the systematisation and expansion of our knowledge.

Abstract
Electronic tongues (ETs) have been developed and widely used in food, beverage and pharmaceutical fields, but limited in sensitivity and specificity. In recent years, bioelectronic tongues (BioETs) integrating biological materials and various types of transducers are proposed to bridge the gap between ET system and biological taste. In this work, a bionic in vitro cell-based BioET is developed for bitter and umami detection, utilizing rat cardiomyocytes as a primary taste sensing element and microelectrode arrays (MEAs) as a secondary transducer for the first time. The primary cardiomyocytes of Sprague Dawley (SD) rats, which endogenously express bitter and umami taste receptors, were cultured on MEAs. Cells attached and grew well on the sensor surface, and syncytium was formed for potential conduction and mechanical beating, indicating the good biocompatibility of surface coating. The specificity of this BioET was verified by testing different tastants and bitter compounds. The results show that the BioET responds to bitter and umami compounds specifically among five basic tastants. For bitter recognition, only those can activate receptors in cardiomyocytes can be recognized by the BioET, and different bitter substances could be discriminated by principal component analysis (PCA). Moreover, the specific detections of two bitters (Denatonium Benzoate, Diphenidol) and an umami compound (Monosodium Glutamate) were realized with a detection limit of 10-6 M. The cardiomyocytes-based BioET proposed in this work provides a new approach for the construction of BioETs and has promising applications in taste detection and pharmaceutical study.

Abstract
Cellobiose dehydrogenase (CDH) is a flavocytochrome with a history of bioelectrochemical research dating back to 1992. During the years, it has been shown to be capable of mediated electron transfer (MET) and direct electron transfer (DET) to a variety of electrodes. This versatility of CDH originates from the separation of the catalytic flavodehydrogenase domain and the electron transferring cytochrome domain. This uncoupling of the catalytic reaction from the electron transfer process allows the application of CDH on many different electrode materials and surfaces, where it shows robust DET. Recent X-ray diffraction and small angle scattering studies provided insights into the structure of CDH and its domain mobility, which can change between a closed-state and an open-state conformation. This structural information verifies the electron transfer mechanism of CDH that was initially established by bioelectrochemical methods. A combination of DET and MET experiments has been used to investigate the catalytic mechanism and the electron transfer process of CDH and to deduce a protein structure comprising of mobile domains. Even more, electrochemical methods have been used to study the redox potentials of the FAD and the haem b cofactors of CDH or the electron transfer rates. These electrochemical experiments, their results and the application of the characterised CDHs in biosensors, biofuel cells and biosupercapacitors are combined with biochemical and structural data to provide a thorough overview on CDH as versatile bioelectrocatalyst.

Abstract
Many technical challenges exist in the co-culture of multiple types of cells, including medium optimization, cell-to-cell connection, and selective data acquisition of cellular responses. Particularly, mixed cellular responses limit the precise interpretation of intercellular signal transduction. Here, we report the formation of an agarose gel skin on neurons closely assembled with gustatory cells to selectively stimulate gustatory cells by retarding the diffusion of tastants to neurons. The signal transmission, triggered by denatonium benzoate, from gustatory cells to neurons was monitored using intracellular calcium ion concentrations. The agarose gel skin efficiently suppressed the direct transfer of tastants to neurons, decreasing the number of responsive neurons from 56 to 13% and the number of calcium ion signals per neuron from multiple to single. The assembly of neurons with gustatory cells induced the high level of neuronal responses through taste signal transduction from gustatory cells to neurons. However, the calcium ion signal peaks of free neurons coated with agarose gel were much shorter and weaker than those of neurons closely assembled with gustatory cells. This work demonstrated that agarose gel skin is a simple, fast, and effective means to increase the signal selectivity of cellular responses in the co-culture of multiple types of cells.

Abstract
Electronic nose (enose, EN) and electronic tongue (etongue, ET) have been designed to simulate human senses of smell and taste in the best possible way. The signals acquired from a sensor array, combined with suitable data analysis system, are the basis for holistic analysis of samples. The efficiency of these instruments, regarding classification, discrimination, detection, monitoring and analytics of samples in different types of matrices, is utilized in many fields of science and industry, offering numerous practical applications. Popularity of both types of devices significantly increased during the last decade, mainly due to improvement of their sensitivity and selectivity. The electronic senses have been employed in pharmaceutical sciences for, among others, formulation development and quality assurance. This paper contains a review of some particular applications of EN and ET based instruments in pharmaceutical industry. In addition, development prospects and a critical summary of the state of art in the field were also surveyed.

Abstract
Detection and identification of bitter compounds draw great attention in pharmaceutical and food industry. Several well-known agonists of specific bitter taste receptors have been found to exhibit anti-cancer effects. For example, N-C=S-containing compounds, such as allyl-isothiocyanates, have shown cancer chemo-preventive effects. It is worth noting that human T2R38 receptor is specific for compounds containing N-C=S moiety. Here, a bioinspired cell-based bioelctronic tongue (BioET) is developed for the high-specificity isothiocyanate-induced bitter detection, utilizing human Caco-2 cells as a primary sensing element and interdigitated impedance sensor as a secondary transducer. As an intestinal carcinoma cell line, Caco-2 endogenously expresses human bitter receptor T2R38, and the activation of T2R38 induces the changes of cellular morphology which can be detected by electric cell-substrate impedance sensing (ECIS). After configuration and optimization of parameters including timing of compound administration and cell density, quantitative bitter evaluation models were built for two well-known bitter compounds, phenylthiocarbamide (PTC) and propylthiouracil (PROP). The bitter specific detection of this BioET is inhibited by probenecid and U-73122, and is not elicited by other taste modalities or bitter ligands that do not activate T2R38. Moreover, by combining different computational tools, we designed a ligand-based virtual screening (LBVS) protocol to select ligands that are likely to activate T2R38 receptor. Three computationally predicted agonists of T2R38 were selected using the LBVS protocol, and the BioET presented response to the predicted agonists, validating the capability of the LBVS protocol. This study suggests this unique cell-based BioET paves a general and promising way to specifically detect N-C=S-containing compounds that can be used for pharmaceutical study and drug development.

Abstract
The development of a simple HPLC-UV method towards the evaluation of Spanish paprika's phenolic profile and their discrimination based on the former is reported herein. The approach is based on C18 reversed-phase chromatography to generate characteristic fingerprints, in combination with linear discriminant analysis (LDA) to achieve their classification. To this aim, chromatographic conditions were optimized so as to achieve the separation of major phenolic compounds already identified in paprika. Paprika samples were subjected to a sample extraction stage by sonication and centrifugation; extracting procedure and conditions were optimized to maximize the generation of enough discriminant fingerprints. Finally, chromatograms were baseline corrected, compressed employing fast Fourier transform (FFT), and then analyzed by means of principal component analysis (PCA) and LDA to carry out the classification of paprika samples. Abstract
Artificial chemosensory devices have a wide range of applications in industry, security, and medicine. The development of these devices has been inspired by the speed, sensitivity, and selectivity by which the olfactory system in animals can probe the chemical nature of the environment. In this review, we examine how molecular and cellular components of natural olfactory systems have been incorporated into artificial chemosensors, or bioelectronic sensors. We focus on the biological material that has been combined with signal transduction systems to develop artificial chemosensory devices. The strengths and limitations of different biological chemosensory material at the heart of these devices, as well as the reported overall effectiveness of the different bioelectronic sensor designs, is examined. This review also discusses future directions and challenges for continuing to advance development of bioelectronic sensors.

Abstract
Implementing large arrays of gold nanowires as functional elements of a plasmonic biosensor is an important task for future medical diagnostic applications. Here we present a microfluidic-channel-integrated sensor for the label-free detection of biomolecules, relying on localized surface plasmon resonances. Large arrays (∼1 cm2) of vertically aligned and densely packed gold nanorods to receive, locally confine, and amplify the external optical signal are used to allow for reliable biosensing. We accomplish this by monitoring the change of the optical nanostructure resonance in the presence of biomolecules within the tight focus area above the nanoantennas, combined with a surface treatment of the nanowires for a specific binding of the target molecules. As a first application, we detect the binding kinetics of two distinct DNA strands as well as the following hybridization of two complementary strands (cDNA) with different lengths (25 and 100 bp). Upon immobilization, a redshift of 1 nm was detected; further backfilling and hybridization led to a peak shift of additional 2 and 5 nm for 25 and 100 bp, respectively. We believe that this work gives deeper insight into the functional understanding and technical implementation of a large array of gold nanowires for future medical applications.

Abstract
Screen-printed electrodes based on graphite, carbon nanotubes, carbon nanofibers, and graphene were tested as amperometric detectors for the determination of phenolic compounds by high performance liquid chromatography (HPLC). The chromatographic performance as well as the obtained sensitivity, detection and quantification limits suggest that carbon nanofibers modified screen-printed electrode (SPCE-CNF) is the amperometric sensor that provides the best analytical performance. Upon this confirmation, chromatographic data obtained using SPCE-CNF were exploited by means of linear discriminant analysis (LDA) to successfully characterize and classify 96 Spanish paprika (Capsicum annuum L.) samples with different origin and type: from La Vera (including sweet, bittersweet and spicy types) and from Murcia (including sweet and spicy types).

Abstract
Antibodies are common recognition elements for molecular detection but often the signals generated by their stoichiometric binding must be amplified to enhance sensitivity. Here, we report that an electrode coated with a catechol-chitosan redox capacitor can amplify the electrochemical signal generated from an alkaline phosphatase (AP) linked immunoassay. Specifically, the AP product p-aminophenol (PAP) undergoes redox-cycling in the redox capacitor to generate amplified oxidation currents. We estimate an 8-fold amplification associated with this redox-cycling in the capacitor (compared to detection by a bare electrode). Importantly, this capacitor-based amplification is generic and can be coupled to existing amplification approaches based on enzyme-linked catalysis or magnetic nanoparticle-based collection/concentration. Thus, the capacitor should enhance sensitivities in conventional immunoassays and also provide chemical to electrical signal transduction for emerging applications in molecular communication.

Abstract
In Part I of the present review series, I presented the current state of the water environment by focusing on Japanese cases and discussed the need to further develop microbial biosensor technologies for the actual water environment. I comprehensively present trends after approximately 2010 in microbial biosensor development for the water environment. In the first section, after briefly summarizing historical studies, recent studies on microbial biosensor principles are introduced. In the second section, recent application studies for the water environment are also introduced. Finally, I conclude the present review series by describing the need to further develop microbial biosensor technologies. Abstract
Electronic tongue is a sensor array that aims to discriminate and analyze complex media like food and beverages on the base of chemometrics approaches for data mining and pattern recognition. In this review, the concept of electronic tongue comprising of solid-contact potentiometric sensors with polyaniline and thacalix[4]arene derivatives is described. The electrochemical reactions of polyaniline as a background of solid-contact sensors and the characteristics of thiacalixarenes and pillararenes as neutral ionophores are briefly considered. The electronic tongue systems described were successfully applied for assessment of fruit juices, green tea, beer, and alcoholic drinks They were classified in accordance with the origination, brands and styles. Variation of the sensor response resulted from the reactions between Fe(III) ions added and sample components, i.e., antioxidants and complexing agents. The use of principal component analysis and discriminant analysis is shown for multisensor signal treatment and visualization. The discrimination conditions can be optimized by variation of the ionophores, Fe(III) concentration, and sample dilution. The results obtained were compared with other electronic tongue systems reported for the same subjects.

Abstract
In recent years, nanoplasmonic sensors have become widely used for the label-free detection of biomolecules across medical, biotechnology, and environmental science applications. To date, many nanoplasmonic sensing strategies have been developed with outstanding measurement capabilities, enabling detection down to the single-molecule level. One of the most promising directions has been surface-based nanoplasmonic sensors, and the potential of such technologies is still emerging. Going beyond detection, surface-based nanoplasmonic sensors open the door to enhanced, quantitative measurement capabilities across the biointerfacial sciences by taking advantage of high surface sensitivity that pairs well with the size of medically important biomacromolecules and biological particulates such as viruses and exosomes. The goal of this review is to introduce the latest advances in nanoplasmonic sensors for the biointerfacial sciences, including ongoing development of nanoparticle and nanohole arrays for exploring different classes of biomacromolecules interacting at solid-liquid interfaces. The measurement principles for nanoplasmonic sensors based on utilizing the localized surface plasmon resonance (LSPR) and extraordinary optical transmission (EOT) phenomena are first introduced. The following sections are then categorized around different themes within the biointerfacial sciences, specifically protein binding and conformational changes, lipid membrane fabrication, membrane-protein interactions, exosome and virus detection and analysis, and probing nucleic acid conformations and binding interactions. Across these themes, we discuss the growing trend to utilize nanoplasmonic sensors for advanced measurement capabilities, including positional sensing, biomacromolecular conformation analysis, and real-time kinetic monitoring of complex biological interactions. Altogether, these advances highlight the rich potential of nanoplasmonic sensors and the future growth prospects of the community as a whole. With ongoing development of commercial nanoplasmonic sensors and analytical models to interpret corresponding measurement data in the context of biologically relevant interactions, there is significant opportunity to utilize nanoplasmonic sensing strategies for not only fundamental biointerfacial science, but also translational science applications related to clinical medicine and pharmaceutical drug development among countless possibilities.

Abstract
The steady increase in global consumption puts a strain on agriculture and might lead to a decrease in food quality. Currently used techniques of food analysis are often labour-intensive and time-consuming and require extensive sample preparation. For that reason, there is a demand for novel methods that could be used for rapid food quality assessment. A technique based on the use of an array of chemical sensors for holistic analysis of the sample’s headspace is called electronic olfaction. In this article, a prototype of a portable, modular electronic nose intended for food analysis is described. Using the SVM method, it was possible to classify samples of poultry meat based on shelf-life with 100% accuracy, and also samples of rapeseed oil based on the degree of thermal degradation with 100% accuracy. The prototype was also used to detect adulterations of extra virgin olive oil with rapeseed oil with 82% overall accuracy. Due to the modular design, the prototype offers the advantages of solutions targeted for analysis of specific food products, at the same time retaining the flexibility of application. Furthermore, its portability allows the device to be used at different stages of the production and distribution process.
