Abstract
Heavy metals such as cadmium (Cd), arsenic (As), and lead (Pb) pose significant health risks, particularly in Asia, where rice is a staple for nearly three billion people. Despite their known dangers and environmental prevalence, studies addressing their concentrations in rice across different regions and the associated health implications remain insufficient. This review systematically examines the occurrence and impact of these toxic elements, filling a critical gap in the literature. Data from seven countries indicate mean concentrations in the order of Pb > As>Cd, with values of 0.255 ± 0.013, 0.236 ± 0.317, and 0.136 ± 0.150 mg/kg, respectively. Uncertainty analysis shows extensive variability, especially for Cd, with a 95% confidence interval range from 0.220 to 0.992 mg/kg. The typical daily intake of heavy metals through rice consumption, in the order of As>Cd > Pb, frequently exceeds safe limits. Generally, data obtained from various studies showed that children were more prone to heavy metal contamination through rice consumption than adults. This review is fundamental for ongoing monitoring, future research, and management strategies to reduce heavy metal contamination in rice.

Abstract
Polycyclic aromatic hydrocarbons (PAHs) with the properties of structural stability, semi-volatility, and hydrophobicity are toxic and persistent in environments; thus, their transport and fate in agroecosystems is essential for reducing PAH accumulation in the edible parts of crops. Here, we cultivated cabbages (Brassica pekinensis L.) and carrots (Daucus carota L.) in PAH-contaminated soils under the greenhouse and field conditions. After harvesting, we observed a 9.5-46% reduction in soil ∑PAH concentrations. There were 37% of bioconcentration factors (BCFbs) > 1 and 93% of translocation factors (TFab) > 1, while low-molecular-weight (LMW) PAHs had higher BCFbs than high-molecular-weight (HMW) PAHs. The PAH concentrations showed significant and positive correlations among soils, the belowground parts, and the aboveground parts. The toxicity equivalent concentration (TEQBaP) followed the order of cabbage (greenhouse) > cabbage (field) > carrot (greenhouse) > carrot (field), suggesting potentially higher health risks in cabbage relative to carrot and vegetables under the greenhouse relative to field condition. Our study suggested growing carrots under field conditions as a management strategy for reducing the risks of vegetables grown in PAH-contaminated soils.

Abstract
This study investigated the impact of soil type, pH, and geographical locations on the accumulation of arsenic (As), lead (Pb), and cadmium (Cd) in rice grains cultivated in Ghana. One hundred rice farms for the sampling of rice grains and soil were selected from two regions in Ghana-Volta and Oti. The concentrations of As, Pb, and Cd were analyzed using ICP-OES. Speciation modeling and multivariate statistics were employed to ascertain the relations among measured parameters. The results showed significant variations in soil-As, Pb, and Cd levels across different soil types and pH ranges, with the highest soil-As and Cd found in alkaline vertisols. For soil-As and Cd, the vertisols with a pH more than 7.0 exhibited the highest mean concentration of As (2.51 ± 0.932 mgkg-1) and Cd (1.00 ± 0.244 mgkg-1) whereas for soil-Pb, the luvisols of soil types with a pH less than 6.0 exhibited the highest mean concentration of Pb (4.91 ± 1.540 mgkg-1). Grain As, Pb, and Cd also varied across soil types and pH levels. In regards to grain-As, the vertisols soil type, with a pH less than 6.0, shows the highest mean concentration of grain As, at 0.238 ± 0.107 mgkg-1. Furthermore, vertisols soil types with a pH level less than 6.0 showed the highest mean concentration of grain Cd, averaging at 0.231 ± 0.068 mgkg-1 while luvisols, with a pH less than 6.0, exhibited the highest mean concentration of grain Pb at 0.713 ± 0.099 mgkg-1. Speciation modeling indicated increased bioavailability of grains Cd2+ and Pb2+ ions in acidic conditions. A significant interaction was found between soil-Cd and pH, affecting grain-As uptake. The average concentrations of soil As, Pb, and Cd aligned with international standards. Generally, the carcinogenic metals detected in grain samples collected from the Volta region are higher than that of the Oti region but the differences are insignificant, and this may be attributed to geographical differences and anthropogenic activities. About 51% of the study area showed a hazard risk associated with grain metal levels, although, no carcinogenic risks were recognized. This study highlights the complex soil-plant interactions governing metal bioaccumulation and emphasizes the need for tailored strategies to minimize metal transfer into grains.

Abstract
Introduction Heavy metals can enter the environment and food through industrial activities, acid rain, chemical fertilizers, pesticides, and sewage. A large amount of these metals is dangerous because they tend to bio accumulate. A concern with these metals is the long-term, low-dose exposure seen in the general population. HMs can cause disorders in the cardiovascular system through various mechanisms such as the production of free radicals, DNA damage, lipid peroxidation, and oxidative stress. Material and method Food items measured in the present study included rice, bread, and vegetables. 210 participants (105 controls and 105 patients) were randomly selected for this study. The demographic information of the subjects was obtained from the Hoveyzeh Cohort Center. The relationship between heavy metals in food and cardiovascular diseases is investigated by The Generalized Additive Model (GAM). Result The results of the present study showed that when urine Cd was smoothed based on rice Cd, there was a significant correlation between urine Cd and Cd consumed in vegetables and rice. The GAM coefficient for urinary Cd excreted in case-control groups and Cd consumed in vegetables were 479.79(SE: 6.49-73.87) and 818.56(SE: 11.96-68.43), respectively, and for rice consumed, it was 0.03(SE: 0.015-2.103) and 0.04(SE: 0.017-2.338), respectively. The GAM coefficient for As consumption in vegetables and As in urine of case and control groups was 1.61 (SE: 9.48-0.16) and 22.36 (SE: 13.60-1.64), respectively. The same coefficient for rice consumption in case and control groups was 4.5 (SE: 0.62-7.22) and 10.48 (SE: 1.46-7.16), respectively. There was a very strong and significant correlation between the Sr in the urine of both groups and the Sr in the food consumed, so that the urinary Sr in the control group is excreted more than in the cardiovascular group. Conclusion GAM analysis indicates that As in vegetable and rice is more than the standard limitation value. Also, Sr and Cd in vegetables, rice, and bread were more than the standard limitation value. According to the GAM model As had a significant value in rice and vegetables indicating that As is more than the standard limitation value, therefore, it is associated with CVD.

Abstract
BACKGROUND The accumulation of cadmium (Cd) in plants may compromise the growth and development of plants, thereby endangering human health through the food chain. Understanding how plants respond to Cd is important for breeding low-Cd rice cultivars. METHODS In this study, the functions of 12-oxo-phytodienoic acid reductase 1 (OsOPR1) were predicted through bioinformatics analysis. The expression levels of OsOPR1 under Cd stress were analyzed by using qRT-PCR. Then, the role that OsOPR1 gene plays in Cd tolerance was studied in Cd-sensitive yeast strain (ycf1), and the Cd concentration of transgenic yeast was analyzed using inductively coupled plasma mass spectrometry (ICP-MS). RESULTS Bioinformatics analysis revealed that OsOPR1 was a protein with an Old yellow enzyme-like FMN (OYE_like_FMN) domain, and the cis-acting elements which regulate hormone synthesis or responding abiotic stress were abundant in the promoter region, which suggested that OsOPR1 may exhibit multifaceted biological functions. The expression pattern analysis showed that the expression levels of OsOPR1 were induced by Cd stress both in roots and roots of rice plants. However, the induced expression of OsOPR1 by Cd was more significant in the roots compared to that in roots. In addition, the overexpression of OsOPR1 improved the Cd tolerance of yeast cells by affecting the expression of antioxidant enzyme related genes and reducing Cd content in yeast cells. CONCLUSION Overall, these results suggested that OsOPR1 is a Cd-responsive gene and may has a potential for breeding low-Cd or Cd-tolerant rice cultivars and for phytoremediation of Cd-contaminated in farmland.

Abstract
An amino-carboxyl cellulose was synthesized using the grafting of glycine on the aldehyde cellulose through a Schiff base reaction for the adsorption of heavy metals with Cd2+ and Pb2+ as the representative. Higher affinity of the amino-carboxyl cellulose was found at pH 4.5-5.0 for Cd2+ and 4.0-5.5 for Pb2+. The equilibrium was achieved within 30 min. The adsorption capacities of amino-carboxyl cellulose (Cd2+: 85.7 mg g-1, Pb2+: 115.1 mg g-1, Cu2+: 68.2 mg g-1, Co2+: 60.1 mg g-1, Ni2+ 48.5 mg g-1 and Zn2+: 52.8 mg g-1) at 30 °C were observed. A mild increase in the adsorption capacities of Cd2+ and Pb2+ from 15 to 45 °C was observed. Adsorption data correlated well with the Langmuir and pseudo-second order equations, illustrating chemisorption of Cd2+ and Pb2+ by the amino-carboxyl cellulose. The adsorption of the amino-carboxyl cellulose for Cd2+ and Pb2+ was a spontaneous and endothermic. The amino-carboxyl cellulose owned a high reusability after 4 cycles.

Abstract
In the Awash River basin (Ethiopia), massive urbanization and industrialization, driven by rapid development and human settlement, are detrimental to the environment and human health as pollutants such as heavy metals (HMs) find their way into water bodies without proper treatment. The purpose of this study was to assess the HMs content and pollution sources within the basin. In this context, a total of 205 samples were collected from 21 surface water sampling stations. Heavy metal concentrations were measured using the Perkin Elmer NexION 350 ICP-MS with inductively coupled plasma. Findings demonstrate that high levels of HMs, such as Al, Mn, Mo, As, V, Fe, and Ba were exhibited with the value of 1257 μg/L, 626.8 μg/L, 116.7 μg/L, 61.2 μg/L, 100.5 μg/L, 1082.7 μg/L, and 211.7 μg/L, respectively. Among 20 HMs analyzed, 20% of the parameters within the study area were above the WHO limit for drinking water; Al (157 μg/L), V (100.5 μg/L), Fe (1082.7 μg/L), Mn (626.8 μg/L), and Mo (103.8 μg/L) were exhibited at sites along the river system. Likewise, 57% of water samples showed high values of As at many stations down the river systems. In particular, high HM concentrations seen in the upper Awash are primarily controlled by anthropogenic activities such as untreated industrial, agricultural, and domestic discharges, while the high HM concentrations in the middle Awash samples were likely due to the influence from the Lake Beseka that has high HM concentrations due to geological process. In conclusion, securing potable water for the rapidly increasing population in Addis Ababa and in the watersheds of Awash is unsafe to sustain the environment and the human health.

Abstract
The problems of environmental lead (Pb) pollution caused by mining activities have attracted global attention. Preschool children are vulnerable to exposure to Pb from the environment. To investigate the health risk of multiple exposures to Pb via oral ingestion (soil, water, rice, wheat, and vegetables) for preschool children in typical polluted areas, in this study, preschool children in Baiyin city were selected as the potential receptors, Pb concentrations in 28 soil samples and 33 vegetable samples were collected and measured. In addition, the Pb concentrations in local water, rice, and wheat were obtained by searching the literature. The Monte Carlo simulation was used in the uncertainty and sensitivity analysis of the parameters. Results showed that Pb concentrations in spinach, tomato, cushaw, lettuce, broad bean, pea, eggplant, and radish exceeded the standards (GB 2762-2017), and 42.86% of soil samples exceeded screening values (GB 15618-2018). The non-carcinogenic risk was as high as 3.58. Vegetables and wheat were the major contributors in the oral ingestion pathway. Furthermore, the carcinogenic risk of preschool children was 6.02E-06, which was acceptable. Monte Carlo simulations showed that health risk assessment results were most likely to be influenced by Pb concentrations in the media. In conclusion, the food safety of vegetables in soil-polluted areas deserves more attention, and certain measures should be taken to reduce the health risks to preschool children.

Abstract
Brown rice has been advocated for as a healthier alternative to white rice. However, the concentration of arsenic and other pesticide contaminants is greater in brown rice than in white. The potential health risks and benefits of consuming more brown rice than white rice remain unclear; thus, mainstream nutritional messaging should not advocate for brown rice over white rice. This mini-review aims to summarize the most salient concepts related to dietary arsenic exposure with emphasis on more recent findings and provide consumers with evidence of both risks and benefits of consuming more brown rice than white rice. Despite risk-benefit assessments being a challenging new frontier in nutrition, researchers should pursue an assessment to validate findings and solidify evidence. In the interim, consumers should be cognizant that the dose of arsenic exposure determines its toxicity, and brown rice contains a greater concentration of arsenic than white rice.

Abstract
Rises in trace element contents in rice and wheat flour, which are staple foods for almost all the Chinese population, associated with rapid economic development have raised major concerns. This study aimed to assess trace element concentrations in these foods nationwide in China and associated human exposure risks. For these purposes, nine trace elements were measured in 260 rice samples and 181 wheat flour samples with 17 and 12 widely scattered geographical origins in China, respectively. Mean concentrations (mg kg-1) of the trace elements declined in the following orders: Zn > Cu > Ni > Pb > As > Cr > Cd > Se > Co in rice, and Zn > Cu > Ni > Se > Pb > Cr > Cd > As > Co in wheat flour. Significant regional differences in levels of trace elements in both rice and wheat flour were detected (p < 0.05), which may be related to local economic indicators. The hazard index (HI) of trace elements in rice samples from all origins exceeded 1, mainly due to the contribution of As, suggesting a potential non-carcinogenic risk. The total carcinogenic risk (TCR) for rice and wheat flour of all origins exceeded the safe level.

Abstract
This study aimed to assess the prevalence, concentration of AFM1 in human breast milk, and to determine the risk of cancer for infants in sub-Saharan Africa. A systematic literature search was performed using PubMed, CINAHL, Web of science, global health, Cochrane, and Google Scholar electronic databases. A random-effects model was used to estimate the pooled prevalence and concentration of AFM1 in breast milk. The meta-analysis of 8 articles containing 9 studies showed the pooled prevalence of AFM1 in breast milk to be 56.18% (95% CI: 29.65-82.71) and the pooled concentration to be 31.12 ng/L (95% CI: 25.97-36.25). The cancer risk assessment indicated for both male and female 1-month infants in Sierra Leone (HI > 1) is high, and all the rest of the infants are free of risk (HI < 1). The pooled prevalence and mean concentration of AFM1 in breast milk is high. Monitoring of AFB1 concentration of commonly used foods will be of high value in reducing the burden of AFM1.

Abstract
Heavy metal(loid)s (HMs) accumulation in agricultural soils, rice, and wheat is of particular concern in China, while the status and spatio-temporal distribution of HMs in the soil-crops system have been rarely reported at the national scale. This study aimed to summarize the overall pollution status, spatiotemporal patterns, and drivers of HMs in agricultural soil, rice, and wheat nationwide. The metal-polluted data from 1030 agricultural soils, rice, and wheat in China were collected from the literature published from 2000 to 2022. The results showed that Cd was the most prevailing contaminant in soils based on its spatiotemporal distribution and accumulation. The pollution cases and severe pollution percentage of Cd (103 %) and Hg (128 %) show an increasing trend pattern. Mining activities are the main anthropogenic sources of agricultural soil HMs in China. Cd and Pb had the highest exceedance rate in rice (33.5 and 32.2 %) and wheat (25.8 and 30.3 %). The rice from Hunan, Fujian, and Guangxi showed the highest average concentration of Cd and Pb, respectively, while wheat samples from Hubei had the greatest exceedance rate of Pb. Besides, HMs in crops was not usually corresponding to soil HMs but increased gradually from north to south areas. Several mitigation strategies and accurate health risk assessments model of HMs based on bioavailability were also proposed and recommended. Collectively, this review provides valuable information to improve the management of farmland nationwide, optimize the accurate risk assessment, and reduce HMs pollution.

Abstract
Heavy metals from contaminated seafood can have serious consequences for human health. Several studies on the amount of heavy metals in Caspian Sea fish have been conducted to ensure their food safety. This meta-analysis aimed to investigate the levels of five toxic heavy metals; Lead (Pb), Cadmium (Cd), Mercury (Hg), Chromium (Cr), and Arsenic (As) in muscles of commercial fishes of the Caspian Sea with assessing their health risk of developing oral cancer in terms of fish collection place and fish type. A systematic search was performed, and the random effect model was applied for meta-analysis. Finally, 14 studies with 30 different sets of results were included. Our results showed that the pooled estimates for Pb, Cd, Hg, Cr, and As were 0.65 mg/kg (0.52, 0.79), 0.08 mg/kg (0.07, 0.10), 0.11 mg/kg (0.07, 0.15), 1.77 mg/kg (1.26, 2.27), and 0.10 mg/kg (- 0.06, 0.26) respectively. The levels of Pb and Cd were higher than their (FAO/WHO) maximum limits. The Estimated Daily Intake (EDI) of Pb and Cd in Mazandaran, and Hg in Gilan were more than Total Daily Intake (TDI) limits. The consumers' non-carcinogenic risk (THQ) for Hg in Mazandaran and Gilan, and As in Gilan, was unsafe. Carcinogenic risk (CR) for Cr and Cd in all three provinces, and for As in Mazandaran and Gilan, was greater than 1*10 - 4 and was unsafe. The lowest and highest risk levels of oral cancer were for Rutilus kutum and Cyprinus carpio respectively.

Abstract
We aimed to assess the association between rice intake and cognitive function among Qatari adults and test the interactions with health conditions. Data from 1000 adults aged ≥18 years old who attended the Qatar Biobank (QBB) study were used. Rice dietary intake was measured by a food frequency questionnaire (FFQ), and mean reaction time (MRT) was used as an indicator of cognitive function. Linear regression and structure equation models were used. The mean rice consumption was 7.6 times/week (SD 2.0). The sample had a mean MRT of 717 milliseconds (SD 205). Rice consumption was positively associated with MRT. Across the quartiles of rice intake, the regression coefficients (95% CI) for MRT were 0.0 (reference), 22.4 (-7.8, 52.6), 36.3 (5.1, 67.5), and 34.5 (2.6, 66.4). There was a significant interaction between rice intake and hypertension, BMI, and blood lipids in relation to MRT. The association between rice intake and MRT was only observed among those with hypertension, overweight/obesity, low LDL, and low total cholesterol levels. Serum magnesium did not mediate the association. High rice consumption was associated with a higher MRT, especially among those with hypertension, overweight/obesity, low LDL, and or low total cholesterol levels. Further longitudinal studies are needed to confirm the findings.

Abstract
Background Little is known about the association of plant-based diet indices with metabolic syndrome (MetS) and its novel predictive biomarkers, including the atherogenic index of plasma (AIP) and adropin. We aimed to investigate the association of plant-based diets with adropin, atherogenic index of plasma, and MetS and its components in adults. Methods The present population-based cross-sectional study was conducted on a representative sample of adults aged 20-60 years in Isfahan, Iran. Dietary intake was obtained through a validated 168-item semi-quantitative food frequency questionnaire (FFQ). Peripheral blood was obtained after an overnight fast of at least 12 h from each participant. MetS was identified based on the Joint Interim Statement (JIS). AIP was calculated as a logarithmically transformed ratio of triglyceride (TG)/high-density lipoprotein cholesterol (HDL-c), and serum levels of adropin were measured by an ELISA kit. Results A total of 28.7% of subjects had MetS. No significant association was found between the overall plant-based diet index (PDI) and the healthful plant-based diet index (hPDI) with MetS. However, a non-linear association was observed between hPDI and MetS. Subjects in the third quartile of the unhealthful plant-based diet index (uPDI) had higher odds of MetS compared to the first quartile (OR: 2.39; 95% CI: 1.01, 5.66). The highest quartile of PDI (OR: 0.46; 95% CI: 0.21, 0.97) and the third quartile of hPDI (OR: 0.40; 95% CI: 0.18, 0.89) were associated with decreased odds of having high-risk AIP compared to the first quartile, after adjusting for potential confounders. No linear association was found between quartiles of plant-based diet indices and serum levels of adropin. Conclusion Plant-based diet index (PDI) and hPDI were not associated with the prevalence of MetS in adults, while moderate adherence to uPDI increased the prevalence of MetS. In addition, high adherence to PDI and moderate adherence to hPDI were associated with decreased odds of high-risk AIP. No significant association was found between plant-based diet indices and serum adropin levels. To confirm these findings, further studies with prospective designs are warranted.

Abstract
This study aimed to assess pollution by potentially toxic elements (PTEs) in the Zarjoub and Goharroud river basins in northern Iran. Due to exposure to various types of pollution sources, these rivers are two of the most polluted rivers in Iran. They also play an important role in irrigation of paddy fields in the study area, increasing concerns about the contamination of rice grains by PTEs. Hence, we analyzed the concentrations of eight PTEs (i.e., As, Co, Cr, Cu, Mn, Ni, Pb, and Zn) at ten channel bed sediment sampling sites in each river, fifteen samples of paddy soils and fifteen co-located rice samples in the relevant watersheds. Results of the index-based assessment indicate moderate to heavy pollution and moderate toxicity for sediments in the Goharroud River, while both pollution and toxicity of the Zarjoub River sediment were characterized as moderate. Paddy soils in the watersheds were found to be moderate to heavily polluted by PTEs, but the values of the rice bioconcentration factor (RBCF) indicated intermediate absorption for Cu, Zn, and Mn, and weak and very weak absorption for Pb/Ni and As/Co/Cr, respectively. The concentration of Zn, Cu, Pb, and Cr was negatively correlated to the corresponding values of RBCF, highlighting the ability of rice grains to control bioaccumulation and regulate concentrations. Industrial/agricultural effluents, municipal wastewater, leachate of solid waste, traffic-related pollution, and weathering of parent materials were found to be responsible for pollution of the Zarjoub and Goharroud watersheds by PTEs. Mn, Cu, and Pb in rice grains might be responsible for non-carcinogenic diseases. Although weak absorption was observed for As and Cr in rice grains, the concentrations of these elements in rice grains indicate a high level of cancer risk if ingested. This study provides insights to control the pollution of sediment, paddy soils, and rice.

Abstract
The present study aimed to evaluate the potential toxic heavy metal (PTHM) concentrations and associated ecological and health risk of nearby inhabitants (child and adult populations) of the Bokaro thermal power station (BTPS), Jharkhand, India. The fly ash containing PTHMs is released from the thermal power plant and contaminates the soil of the nearby agricultural area, roadside area and residential area. Furthermore, PTHMs cause ecological risk as well as carcinogenic health effects in adults. Inhabitants are exposed to PTHMs through exposure pathways (for instance, direct ingestion, dermal contact and air inhalation), and PTHMs were examined in this study by calculating the estimated daily intake (EDI). The contamination factor (Cf) of Cd exceeded the threshold value throughout the study area, whereas the Cf of Hg was observed higher only in roadside soil (RSS). The geoaccumulation index (Igeo) of Cd was higher in the top soil of agricultural soil (AS) (7.39) and RSS (9.38). The level of PTHMs was monitored slightly higher in the topsoil of RSS. The ecological risk index (Eri) was detected to be the highest in RSS (1628.9). The permissible limit of Cd (0.05 mg kg-1) and Pb (0.1 mg kg-1) for all sampled vegetables and grain crops was surpassed. The transfer factor (TF) of the studied vegetables and grain crops was in the order of Cd > Cr > Pb > Hg > As. The results of the present study concluded that the hazard quotient (HQ) values for all PTHMs analysed in soil throughout the study area were < 1, which indicates that the child population was within the safe limit. However, the adult population was at a high risk of non-carcinogenic health effects due to increased permissible limits of Cd, Pb and Cr in vegetables and grain crops whereas the target carcinogenic risk (TCR) of Pb and Cr was higher and indicated that there may be a health risk of cancer in adults.

Abstract
In Zamfara state, Nigeria, rice is cultivated in fields contaminated with Pb (lead) from artisanal and illicit mining activities. Rice grown in such contaminated agricultural areas risks not only Pb contamination but also contamination from other toxic elements, like arsenic (As); co-contamination of Pb and As in rice cultivated in mining impacted areas has been previously reported and rice is a hyperaccumulator of As. A field study was conducted with ten different commonly-cultivated Nigerian rice varieties in the mining-impacted farmlands of Dareta village, Zamfara State. The aim was to determine the optimal rice variety for cultivation on these contaminated farmlands; an optimal variety would have the lowest contaminant concentrations and highest essential elements concentrations in the rice grains. A total of 300 paired soil and rice plants were collected. The mean As and Pb concentrations in paddy soils were 0.91 ± 0.82 mg kg-1 and 288.5 ± 464.2 mg kg-1, respectively. Mean As (30.4 ± 15.1 μg kg-1) content in rice grains was an order of magnitude lower than the Codex recommendation of 200 μg kg-1 (for milled rice) while the Pb content in all the rice varieties (overall mean of 743 ± 327 μg kg-1) was approximately four times higher than the Codex recommendation of 200 μg kg-1. Contrary to previous studies, a negative correlation was observed between As and Pb in rice grains across all the varieties. Rice variety Bisalayi was the variety with the lowest Pb transfer factor (TF = 0.08), but the average Pb concentration in rice grain was still above the Codex recommendation. Bisalayi also had the highest TF for iron. Variety ART_15, which had the lowest As uptake (TF = 0.10), had the highest TF for essential elements (magnesium, potassium, manganese, zinc, and copper). In areas of Pb contamination, Bisalayi rice may therefore be a suitable variety to choose for cultivation.

Abstract
The safety of drinking and irrigation water is an issue of great concern worldwide. The rational development and utilization of water resources are vital for the economic and societal stability of Altay, an extremely arid area. In this study, three types of water samples (25 river waters, 10 groundwaters, 6 lake waters) were collected from main rivers and lakes in Altay and analyzed for electrical conductivity, total dissolved solids, pH, major ions (i.e., K+, Na+, Ca2+, Mg2+, HCO3-, Cl-, SO42-, NO3-, NO2-, F-), and trace elements (i.e., Al, Li, B, Sc, Ti, Mn, Co, Ni, Cu, Zn, As, Se, Rb, Sr, Mo, I, Ba, U). The water quality index (WQI), hazard quotient, carcinogenic risk, Na percentage, and Na adsorption ratio were then calculated to evaluate the water quality for drinking and irrigation. The results showed that the main hydrochemical type of river waters and groundwaters was Ca-HCO3, whereas that of lake water was mainly Na-SO4. The WQIs (9.39-170.69) indicated that the water quality in Altay ranged from poor to excellent. The concentrations of As, Ni, and U need to be carefully monitored since their average carcinogenic risks (for all waters collected, for adults) reached 0.05686, 0.06801, and 0.14527 and exceeded the safety risk levels (10-4-10-6) by at least 568 times, 680 times, and 1452 times, respectively. The result of Na% and SAR indicated that lake waters (with Na% of 62.92 and SAR of 41.63) and groundwaters (with Na% of 37.88 and SAR of 5.58) in Altay were unsuitable for irrigation, while river water (with Na% of 29.24 and SAR of 3.33) could meet the irrigation quality requirements. The results of this study could help promote reasonable water resource use among three types of waters and population protection in Altay.

Abstract
The release of a large quantity of heavy metals into the Dhaleswari River from the tannery, dyeing, and other industrial setups and their subsequent transfer to food chains through fish consumption have been an alarming issue in Bangladesh. To study the pollution level, a total of seven fish species, namely Heteropneustes fossillis, Channa punctata, Nandus nandus, Chanda nama, Anabas testudineus, Mystus gulio, and Colisa fasciata, were collected in winter from the Dhaleswari River and the total concentrations of Cr, Pb, Ni, and Zn in head and body tissues were analyzed separately. The concentrations of Cr, Pb, and Zn were found 300, 20, and 10 times higher, respectively, than the guideline value of the Food and Agriculture Organization (FAO)/World Health Organization (WHO), indicating possible health risks to humans. In most cases, bioaccumulation factors (BAFs) exceeded the highest limit, expressing that most of the species, especially C. nama, A. testudineus, and C. fasciata, were in the highly bioaccumulative state. The health risks associated with fish consumption were determined in terms of estimated daily intake (EDI), non-carcinogenic risks (THQ), and carcinogenic risk (TR) factors. The THQs for Cr and Pb crossed the maximum value of 1 in all the fish species except Pb in Mystus gulio, which might cause different non-carcinogenic diseases upon consumption of these fishes. In all the fish species, the carcinogenic risk factor for Cr exceeded the standard value (10-4), indicating chronic cancer risk to humans. Although the estimated daily intake (EDI) values did not cross the permissible limit, continuous consumption of contaminated fish from the target area may cause serious health complications. This study revealed that consumption of these fishes exposed people to a higher risk of non-carcinogenic and carcinogenic consequences in terms of human health.

Abstract
The main objectives of this study were PHEs concentration meta-analysis (Fe, Zn, Cr, Ni, Cu, Pb, and Cd) in eggplant irrigated by wastewater and the following estimation of non-carcinogenic (n-CR) risk for the consumers based on countries. According to the results, the rank order of PHEs concentration in eggplant was Fe (88.3 mg/kg -dry weight) > Zn (10.1 mg/kg -dry weight) > Pb (3.0 mg/kg -dry weight) > Ni (2.7 mg/kg -dry weight) > Cu (1.1 mg/kg -dry weight) > Cd (0.9 mg/kg -dry weight) > Cr (0.05 mg/kg -dry weight). Moreover, n-CR risk showed that all investigated countries (China, India, Pakistan, Turkey, and Jordan) except for United Arab Emirates (UAE) had a considerable n-CR in both age groups (adults and children).

Abstract
Onions have medicational features such as anti-cancer, antimicrobial, antiviral, and antifungal. Onions are rich in edible flavonoids. Due to their physiology and ecosystem, onions have the property of accumulating heavy metals. Onion consumption per capita in Iran is higher than in neighboring countries.
Considering the importance of onions consumption in the household diet, controlling of heavy elements' concentration in foodstuffs is important to ensure the safety of an individual's health. This study aimed to evaluate the risk of heavy metals through onion consumption on human health. In this cross-sectional experimental study, 22 onion samples with varieties red, yellow, and white in the two autumn and winter seasons in 2020 were randomly collected from the different provinces of Kurdistan, Hamedan, and Kermanshah. The concentrations of heavy metals were evaluated with an atomic absorption spectrometer. The risks of human health were evaluated by the hazard quotient (HQ) and the obtained results were analyzed with one-way ANOVA and one sample t-test. The obtained findings demonstrated that all collected samples contained heavy metals. For example, the cadmium (Cd) concentration in onion samples in the province of West Azerbaijan, Kurdistan, Hormozgan, Isfahan, and Zanjan was 526.49, 274.49, 69.77, 67.39, 65.69 µg kg−1, respectively. While the standard specified in Iran for the concentration of Cd in onions is 50 μg kg−1. However, the rate of lead (Pb) contamination in samples collected from Isfahan, Hormozgan, Zanjan Khuzestan, Tehran (Varamin) was 296.50, 266.71, 261.49, 215.64, 106.19 µg kg−1, respectively, which less than maximum allowable limit recommended by WHO-FAO (300 µg kg−1). The HQ for non-cancerous diseases for Cd and Pb were 8.6 × 10−2 and 1.6 × 10−1, respectively, and the probability of carcinogenic risk for Pb (8.1 × 10−4) was at the level of acceptable. There is no concern about the non-carcinogenic diseases and carcinogenic risk of consuming heavy metals in onion. Therefore, for optimal management and prevention of further pollution, it is recommended to study the origin and determine the amounts of heavy metals for their potential contamination of foodstuffs from the region's soil, water, and dust.

Abstract
The determination of storage time in seafood could be performed by microbiological, chemical and sensory analysis. Among these mentioned methods color changes are one part of sensory analysis and are prior acceptance criteria from the point of consumers' view. In this study, a feedforward artificial neural network (ANN) model was developed to predict the storage time of seafood based on L*, a* and b* values. A total of 205 data set were compiled from the literature that represents the color changes of different seafood products to train and test the ANN model. Another set of data (n = 45) were used for the validation of developed ANN model. A multi-layer perceptron (MLP) was applied for the determination of agreements between input and output data. The most accurate topology were determined in accordance with the changes in the values of correlation coefficients (R2) and mean square errors (MSE) and found to be 30 neurons in the layer (R2 = 0.81 and MSE = 0.2). The performance of ANN model was evaluated based on 6 criteria such as Mean Absolute Deviation (MAD), Mean Square Errors (MSE), Residual Mean Square Errors (RMSE), Correlation Coefficient (R2), Mean Absolute Error (MAE) and F-test statistics and found to be 0.2, 0.05, 0.002, 0.8, 0.71 and 1.06, respectively. Moreover, predicted and observed storage time values were fitted and regression coefficient was found to be 0.85. In accordance with the results of this study, the proposed ANN model is accurate, reliable, and proper for the estimation of storage time in seafood products.

Abstract
Lead is a toxic, non-biodegradable, and accumulative heavy metal released into the environment by natural and anthropogenic activities. Despite health concerns due to the consumption of lead-contaminated foods, no systematic and comprehensive review studies have been published about the lead occurrence in animal source foods in Iran. The present study aimed to review the papers investigating the Pb contamination in animal-based food groups (including meat, fish, milk and dairy products, egg and honey) in Iran. A comprehensive search was performed with selected keywords in databases of Scopus, Web of science, and Magiran to find articles that had been published from January 2010 to December 2019. Of 371 identified articles on Pb contaminations in foods, 60 articles were selected using PRISMA. The lead concentrations were higher than the maximum recommended limits in 3 of 9 studies on meat and meat products, 12 of 26 studies on fish and canned fish, and 5 of 18 studies on milk and dairy products. However, the Pb contamination observed in studies on honey and egg was not comparable due to the lack of national and international standards. These results represent the importance of environmental monitoring and assessment for reducing exposure of animals to Pb, resulting in an improvement of food safety.

Abstract
BACKGROUND Zanthoxylum bungeanum pericarps (ZBP) are commonly used as food additives and traditional herbal medicines. Several mineral elements are known to have important physiological functions in organisms, whereas others are reported to have toxic effects. We determined levels of macro elements (Mg, S and Ca), essential trace elements (B, Mn, Fe, Cu, Zn, Se and Mo) and toxic elements (Ni, Al, Cr, As, Cd, Hg and Pb) in the pericarps of 19 Z. bungeanum cultivars. Hazard index values and incremental lifetime cancer risks were calculated to express health risks associated with pericarp consumption. Moreover, several chemometric analyses based on the mineral elements were used to distinguish Z. bungeanum cultivars. RESULTS The concentrations of 17 determined elements in the pericarps were ranked: Ca > Mg > S > Fe > Al > Mn > Zn > B > Cu > Ni > Pb > Cr > Mo > As > Cd > Hg > Se. The elements Zn, Cr and As had the highest variations in their concentrations. Cu, Mn, Se, Zn, Al, As, Cd, Cr, Hg, Ni and Pb posed some non-cancer risks, while As and Cd posed cancer risks. Mn, Fe, Zn, and Al were chosen as critical element markers for assessing ZBP using chemometric analyses. CONCLUSION Chemometric analyses could highlight mineral concentration differentiation among the 19 cultivars. The Z. bungeanum cultivar Z12 (from Wudu, Gansu) is best for producing ZBP, and cultivar Z18 (Guanling, Guizhou) can be a reference to classify and evaluate ZBP quality. The results provide valuable information for evaluating the potential safety risks of ZBP and contribute to inter-cultivar discrimination. © 2021 Society of Chemical Industry.

Abstract
This study determined the influence of different cooking procedures on the removal of toxic elements (TEs) including arsenic (As), cadmium (Cd), and lead (Pb) along with other nutrient elements from different commercially available rice brands sold in Bangladeshi markets. We observed 33%, 35%, and 27% average removal of As, Cd, and Pb accordingly from rice when cooked with a rice to water ratio of 1:6 after washing 5 times. We also found a significant reduction in essential elements: Zn (17%), Cu (10%), Mn (22%), Se (49%), and Mo (22%), when rice cooking was performed as in traditional practice. Daily dietary intakes were found to be between 0.36 and 1.67 µg/kgbw for As, 0.06 and 1.15 µg/kgbw for Cd, and 0.04 and 0.17 µg/kgbw for Pb when rice was cooked by the rice cooker method (rice:water 1:2), while in the traditional method (rice:water 1:6) daily intake rates ranged from 0.23 to 1.3 µg/kgbw for As, 0.04 to 0.88 µg/kgbw for Cd, and 0.03 to 0.15 µg/kgbw for Pb for adults. The HQ and ILCR for As, Cd, and Pb revealed that there is a possibility of noncarcinogenic and carcinogenic risk for As but no appreciable risk for Cd and Pb from consumption of rice.

Abstract
Spherical porous materials prepared from the emulsion template used in the water treatment have displayed a vast prospect, as the high surface area, abundant porous structure, convenient operation and excellent adsorption performance. But the tedious fabrication process, high consumption of organic solvent and surfactant limited the application widely. Herein, a facile and eco-friendly spherical porous adsorbent (SPA) is fabricated from the green surfactant-free (corn oil)-in-water Pickering medium internal phase emulsions (Pickering MIPEs) via the convenient ion crosslinking procedure. The Pickering MIPEs synergistically stabilized with the semi-coke (SC), which is the natural particle produced from the shale oil distillation, and sodium alginate (SA) has excellent storage and anti-coalescence stability. The as-prepared porous adsorbent possessed the abundant pore structure, which provided favorable conditions for effective mass transfer in adsorption, and could be tuned by varying the SA dosage. The saturation adsorption capacities of Pb(II) and Cd(II) can be achieved with 460.54 and 278.77 mg/g within 45 min at 25°C, respectively. Overall, this study supplied a viable and eco-friendly route for fabricating the spherical porous adsorbent with a tunable porous structure for heavy metal ion wastewater.

Abstract
Rice (Oryza sativa L.) consumption represents a major route for the exposure to cadmium (Cd) and arsenic (As) in many countries. Two varieties of rice that were grown in soils contaminated with Cd and As were evaluated for the accumulation of these toxins in rice grains and the risks of exposure of local residents to Cd and As when treated with different amounts of silkworm excrement and types of water management. Silkworm excrement, water management and the variety of rice significantly affected the accumulation of Cd and As in rice. The combination of multiple measures can be more effective at reducing heavy metals than the use of single measure, i.e., silkworm excrement management, water management, and the selection of low accumulation variety. The use of a variety that accumulates low amounts of Cd combined with 1% silkworm excrement management can effectively increase the soil pH and electrical conductivity (EC) and decrease the contents of soil available Cd and the transfer coefficients of Cd in rice, subsequently reducing the concentrations of Cd in rice grains and lowering the health risks of the intake of Cd. Similarly, the use of a conventional rice variety combined with alternating periods of drying and wetting in the three weeks before and after the heading stage decreased the contents of soil available As and the transfer coefficient of As in rice, subsequently reducing the accumulation of As in the grains and lowering the health risk of the intake of As. The significantly lower concentrations of Cd and As in rice grains and the risk of intake of Cd and As from rice was observed using a conventional rice variety combined with alternating drying-wetting in the three weeks before and after the heading stage and 1% silkworm excrement management. Thus, the combination of multiple measures in the coexistence of Cd and As in contaminated soils can be a promising strategy to avoid serious health risks and ensure the safety of food for local residents.

Abstract
The present study aimed to assess the potentially toxic elements (PTEs), including copper (Cu), zinc (Zn), arsenic (As), lead (Pb), and mercury (Hg) in refined, rock, and sea salt samples collected (n=60) from Tehran's local market by the aid of an inductively coupled plasma-mass spectrometry (ICP-MS). Besides, the carcinogenic and non-carcinogenic risks for children and adults were estimated with the aid of the Monte Carlo simulation (MCS) method. The rank order of PTEs in refined salt was Pb (13.378 μg/g) > Cu (6.448 μg/g) > Zn (0.363 μg/g) > As (0.184 μg/g) > Hg (0.049 μg/g); in sea salt was Pb (22.972 μg/g) > Cu (3.963 μg/g) > Zn (0.986 μg/g) > As (0.387 μg/g) > Hg (0.224 μg/g); and in rock salt was Cu (31.622 μg/g) > Pb (22.527 μg/g) > Zn (0.638 μg/g) > As (0.235 μg/g) > Hg (0.095 μg/g). It was concluded that the average concentration of some of the investigated PTEs was higher than the national standard limits and Codex's guidelines. A significant non-carcinogenic risk (TTHQ > 1), except for adult consumers, was noted based on the health risk assessment who consume refined salt. All consumers were also at the threshold carcinogenic risk of As (between 10-4 and 10-6). Given the considerable health risks due to consumption (refined, rock, and sea salt), approaching effective monitoring plans to control the PTEs concentrations in salt distributed in Tehran are recommended.

Translocation of Soil Arsenic towards Accumulation in Rice: Magnitude of Water Management to Minimize Health Risk. WATER 2021. Abstract
Globally, the risk of arsenic (As) contamination in soil and rice is well documented across the globe. In Bangladesh, drinking water and rice are two major exposure pathways of As to humans. Therefore, the efficiency of recent technologies to reduce rice As and associated human health risks still need to be deeply investigated. In this direction, a pot experiment was performed to investigate the impact of soil As and agronomic irrigation management on rice (cv. BRRI dhan28) growth, yield, As accumulation, and finally, health risks to humans from consuming rice. Treatment combinations were made with three levels of As (0, 20, and 40 mg kg−1) having two irrigation procedures, including alternate wetting and drying (AWD) and traditional continuous flooding (CF). According to the findings, As pollution in the soil lowered the yield contributing features and rice yield, including panicle length, filled grains per panicle, sterile grains per panicle, 1000-grain weight, grain yield, and straw yield. AWD water management significantly improved the growth performance and productivity of rice. Grain yield was increased by 13% in AWD compared to CF. Rice grain and straw As concentrations were increased to 0.56 mg kg−1 and 15.10 mg kg−1, respectively, in soil with 40 mg kg−1 As and CF water management. AWD treatment significantly reduced grain and straw As contents by 16% and 28%, respectively. Increased grain, straw, and total As uptake was noticed with higher soil As concentrations. The study also found that rising soil As raised non-carcinogenic risks (HQ > 1) and carcinogenic risks (CR > 1.010–4) while AWD lowered health risks compared to CF. Thus, rice farming using AWD irrigation could be a viable and long-term solution for reducing As contamination in rice and associated human health hazards.

Abstract
Potentially toxic elements (PTEs) are of great concern in steel mill wastes. Therefore, in order to use them as potential fertilizers in soil, risk assessments are needed. Three steel mill wastes were tested as possible amendments for soils at seven different doses (0, 0.5, 1, 2, 4, 8, 16 t ha-1): phosphate mud (PM), metallurgical press residue (MPR), and filter press mud (FPM) during rice cultivation in a pot experiment in a Haplic Gleisol. Analysis on rice tissues, including roots, shoots, husk, and grains, were conducted and contents of Cu, Cd, Ni, Zn, Mn, and Pb were assessed. Translocation and bioaccumulation factors were calculated for each element. In general, PTEs are more accumulated in roots and greater contents of Zn and Mn were found, while the lowest ones were found for Pb, probably due to its lack of functional roles during plants development. Higher translocation was observed for Mn, which is associated to the redox conditions of rice cultivation and the high mobility of this element under this condition. Application of steel mill wastes can increase PTE bioavailability and translocation factors, especially PM, but all of the wastes reveal a high hazard index.

Abstract
AbstractThe current study aims to investigate the levels of the toxic metal in agricultural products (legumes, wheat, and potato) collected in Markazi province, Iran, and human health risk by using inductively coupled plasma - optical emission spectrometry (ICP-OES). The levels of arsenic (As) and cadmium (Cd) in all samples were lower than the limit of detection (LOD), while the level of Cd in potato samples was lower than the maximum permisible level (MPL) of the European commission (EC). The non-carcinogenic and carcinogenic risk assessment by direct ingestion of agricultural products was calculated using the United States Environmental Protection Agency (USEPA) method. The highest mean of toxic metals was observed for lead (Pb) in legume samples (562.17 μg kg− 1). Mercury (Hg) and Pb levels in all samples were higher than LOD, while Pb level in wheat samples were lower than of EC. The rank order of Hg and Pb levels in all samples based on target hazard quotient (THQ) value was wheat> potato>legume. The THQ index of Hg and Pb by the deterministic method in wheat was 1.37 and 0.454; in potato 0.139 and 0.104; in legume 0.092 and 0.41, respectively. The carcinogenic risk index was at an acceptable range. The high hazard index values were estimated and the THQ index for Hg in wheat suggests a non-negligible health risk.

Abstract
UNLABELLED Dumping of solid waste in the non-engineered landfill is very common in the developing countries. Among the different disadvantages of this kind of landfilling, leachate is the major concern to public health, which is a toxic byproduct generated from the landfill; and can percolate to the ground water and consequently migrate in surface water. Using systematic review on published data, the present study endeavors to compare the leachate contamination potential of four major landfills of Bangladesh, named Amin Bazar, Matuail, Mogla Bazar and Rowfabad; which are situated in 3 of the 6 big mega cities of Bangladesh and assessed the effects of leachate leakage on surrounding water body as well as on human health. This study, for the first time calculated the leachate pollution index (LPI) for the landfill sites of Bangladesh and found that the LPI of Matuail landfill site (19.81) is much higher which is comparable to some polluted landfill sites of India and Malaysia. The concentrations of several potentially toxic metals found in the surface and ground water in the vicinity of the landfill sites were above the maximum permissible limit values of department of Environment, Bangladesh and World Health Organization (WHO). The human health risk index for toxic heavy metals in different vegetables and rice grain showed high health risk potential for Pb, Cd, Ni, and Mn. The total carcinogenic risk for Ni and Pb are found very high in the edible plants near those landfill sites, suggesting the risk of Ni and Pb induced carcinogenesis by the consumption of those plants. The present conditions of surface, ground water and agriculture products near the landfill sites of Bangladesh are much frightening to the biota and local inhabitants. Abstract
Rice is a worldwide staple food and heavy metal contamination is often reported in rice production. Heavy metal can originate from natural sources or be present through anthropogenic contamination. Therefore, this review summarizes the current status of heavy metal contamination in paddy soil and plants, highlighting the mechanism of uptake, bioaccumulation, and health risk assessment. A scoping search employing Google Scholar, Science Direct, Research Gate, Scopus, and Wiley Online was carried out to build up the review using the following keywords: heavy metals, absorption, translocation, accumulation, uptake, biotransformation, rice, and human risk with no restrictions being placed on the year of study. Cadmium (Cd), arsenic (As), and lead (Pb) have been identified as the most prevalent metals in rice cultivation. Mining and irrigation activities are primary sources, but chemical fertilizer and pesticide usage also contribute to heavy metal contamination of paddy soil worldwide. Further to their adverse effect on the paddy ecosystem by reducing the soil fertility and grain yield, heavy metal contamination represents a risk to human health. An in-depth discussion is further offered on health risk assessments by quantitative measurement to identify potential risk towards heavy metal exposure via rice consumption, which consisted of in vitro digestion models through a vital ingestion portion of rice.

Abstract
The adsorption process using inexpensive adsorbents is one of the methods to remove contaminants from aqueous solutions. Biomass porous carbon based materials are among the most widely used adsorbents in this field. Rice husk is a bio-based adsorbent material for pollutant removal. In this study, the porous carbon material obtained from the rice husk was used for the adsorptive removal of lead (Pb) and arsenic (As) from aqueous solutions. Silica was removed from rice husk structure through the one-step reaction using PTFE. The morphological and crystallographic characteristics of the adsorbent surface were determined by scanning electron microscopy (SEM) and X-ray diffraction (XRD) techniques. The removal efficiency was investigated under different conditions of pH (3–9), contact time (3–90min), adsorbent amount (0.5–6 g/l) and initially adsorbed concentration (10–100 μg/l) by changing the parameters in the adsorption reactions. The Response Surface Method (RSM), a Box-Behnken design (BBD), was used to optimize adsorption of Lead and Arsenic by Rice husk. The removal efficiency was finally calculated using analysis of variance. According to the adsorption analysis results, the removal efficiency of Pb and As in aqueous solutions increased (up to 97%, 85% for Lead and Arsenic) under optimum conditions.

Abstract
Electroplating is a widely used group of industrial processes that make a metal coating on a solid substrate. Our previous research studied the concentrations, characteristics, and chemical composition of nano- and microparticles emitted during different electroplating processes. The objective of this study was to evaluate the environmental toxicity of particulate matter obtained from five different electrochemical processes. We collected airborne particle samples formed during aluminum cleaning, aluminum etching, chemical degreasing, nonferrous metals etching, and nickel plating. The toxicity of the particles was evaluated by the standard microalgae growth rate inhibition test. Additionally, we evaluated membrane potential and cell size changes in the microalgae H. akashiwo and P. purpureum exposed to the obtained suspensions of electroplating particles. The findings of this research demonstrate that the aquatic toxicity of electroplating emissions significantly varies between different industrial processes and mostly depends on particle chemical composition and solubility rather than the number of insoluble particles. The sample from an aluminum cleaning workshop was significantly more toxic for both microalgae species compared to the other samples and demonstrated dose and time-dependent toxicity. The samples obtained during chemical degreasing and nonferrous metals etching processes induced depolarization of microalgal cell membranes, demonstrated the potential of chronic toxicity, and stimulated the growth rate of microalgae after 72 h of exposure. Moreover, the sample from a nonferrous metals etching workshop revealed hormetic dose-response toxicity in H. akashiwo, which can lead to harmful algal blooms in the environment.

Abstract
The present study delineates the interactions of arsenic (As), a carcinogenic metalloid, and thiourea (TU), a non-physiological reactive oxygen species (ROS) scavenger, in rice plants grown in As contaminated fields in West Bengal, India. The study was performed for four consecutive seasons (two boro and two aman) in 2016 and 2017 with two local rice cultivars; Gosai and Satabdi (IET-4786) in a control and two As contaminated experimental fields. Thiourea (0.05% wt/vol) treatment was given in the form of seed priming and foliar spray. Thiourea significantly improved growth and yield of rice plants and reduced As concentration in root, shoot, husk and grains in both cultivars and fields. The reduction in As concentration ranged from 10.3% to 27.5% in four seasons in different fields. The average (four seasons) increase in yield was recorded about ~8.1% and ~11.5% in control, ~20.2% and ~18.6% in experimental field 1, and ~16.2% and ~24.1% in experimental field 2, for gosai and satabdi, respectively. Mean hazard quotient (HQ) and incremental lifetime cancer risk (ILCR) values of As reduced upon TU supplementation for both cultivars as compared to that of non-TU plants. Hence, TU can be effectively used to cultivate rice safely in As contaminated fields.

Abstract
This study was conducted to determine the polycyclic aromatic hydrocarbons (PAHs) levels and health risk of yogurt and butter samples collected from Tehran using MSPE/GC-MS (magnetic solid-phase extraction/gas chromatography-mass spectrometry). The results revealed that the limit of detection (LOD) and limit of quantification (LOQ) were ranged from 0.040 to 0.060 and 0.121 to 0.181 μg/kg, respectively; with recoveries ranged from 86.1% to 100.3%. The highest mean of total PAHs was higher in butter (6.87 ± 1.21 μg/kg) than in yogurt (3.82 ± 0.54 μg/kg). The level of benzo (a)pyrene in all samples was lower than of standard levels of the European Union (EU). The highest value of all PAHs in samples was recorded in the winter season and also in the expiration date. The percentile 95% of the total hazard quotient (THQ) due to the consumption of yogurt and butter recorded 1.33E-02 and 3.69E-04 in adults and 6.12E-02 and 1.75E-03 in children, respectively. The percentile of 95% incremental lifetime of cancer risk (ILCR) due to the ingestion of yogurt and butter recorded 1.17E-06 and 2.02E-08 for adults and 5.51E-06 and 9.46E-08 for children, respectively. The rank order of 7 PAHs in adult and children based on P95% Hazard Quotient (HQ) in all samples was benzo(a)anthracene (BaA) > pyrene (P) > fluorene (F) > fluoranthene (Fl) > acenaphthylene (Ace) > anthracene (A) > naphthalene (NA). According to the Monte Carlo Simulation (MCS) method, health-risk assessment showed that children and adults are not at significant health risk.

Abstract
This study determines the bioaccessibility of toxic and carcinogenic arsenic (As) in composite food samples and evaluates potential exposure from food intake in Bangladesh children. Total As (tAs), inorganic As (iAs) and bioaccessible As (BAs) in food composite samples consumed by children were compared between an exposed and a control group (based on As in drinking water). Total As concentrations in composite food samples of children exposed to mean As level of 331 µg/l in drinking and cooking water ranged from 586 to 1975 µg/kg, dry weight over 76-90 µg/kg in the unexposed group. Average iAs in food composites was 73.9% (range: 49.3-90.8%). The fraction of BAs using gastric and gastrointestinal phases was 91 ± 13% and 98 ± 11%, respectively. Daily intake of iAs in the exposed group ranged from 0.41 to 6.38 µg per kg body weight (BW), which was much higher than the unexposed group (0.08-0.15 µg per kg BW). High iAs content and BAs in composite food samples indicated the elevated risk to exposed children. Further research should include both adults and children using larger sample size to determine overall As exposure from food intake in Bangladesh, attention must be given to lowering of As in food.

Abstract
Water shortage and stress around the world lead to the reuse of wastewater in many sectors while the recycling of water in agriculture as one of the most consumed sectors can boost the contamination of crops by potentially toxic elements (PTEs). Therefore, this study was aimed to investigate the correlation between the accumulation of PTEs (Fe, Zn, Cr, Ni, Cu, Pb, As, Cd, and Se) in edible parts of spinach and radish plants and sewage irrigation by the aid of a meta-analysis. Moreover, the non-carcinogenic risk (N-CR) and carcinogenic risk (CR) for health risk assessment of consumers were assessed through actual total target hazard quotient (TTHQact) and carcinogenic risk (CRact). After the screening process, 51 articles with 75 studies were included. According to findings, the rank order of PTEs in spinach and radish were Fe > Zn > Cr > Cu > Ni > Pb > Cd > As > Se and Fe > Zn > Cr > Ni > Cu > Pb > As > Cd > Se, respectively. PTE adsorption by edible parts of spinach (leafy vegetable) was higher than radish. The health risk assessment shows that residents in Iran, India, and China are at N-CR while the population of Iran, India, and Pakistan are facing CR.

Abstract
The aim of the current study was to evaluate the probabilistic health risk and the concentration of 16 polycyclic aromatic hydrocarbons (PAHs) in commercial tea and coffee samples. For determining the mentioned contaminants in sixty-four samples, a reliable and sensitive technique was validated and developed. The technique is established on magnetic solid-phase extraction and gas chromatography-mass spectrometry analysis (MSPE/GC-MS). The maximum mean of ƩPAHs in coffee samples was 13.75 ± 2.90 μg kg-1, while the minimum mean ƩPAHs in tea samples was 4.77 ± 1.01 μg kg-1. The mean concentration of benzo(a)pyrene (BaP) in samples ranged from 0.64 to 2.07 μg kg-1 which was lower than that of standard levels (10 μg kg-1) established by the European Union (EU). The Monte Carlo simulation results showed that the actual target hazard quotient (THQ) for the adult and children was equal to 1.63E-04 and 1.67E-04, respectively; hence, non-carcinogenic health risk for consumers is negligible. The result of actual incremental lifetime cancer risk (ILCR) was lower than the limits of safe risk (1E-4), indicating no notable possibility of cancer risk due to the digestion of tea and coffee for children and adults. Therefore, it can be concluded that the amount of contamination of popular commercial coffee and tea available in the Iranian market with PAHs is often similar to that found in other countries and was lower than the standard of EU. Thus, the processing conditions of these products must be controlled to prevent the formation of PAHs due to the suspicion of carcinogenicity and mutation.

Abstract
Rice is one of the most valuable nutrients in the diet of most people in the world. The aim of this study was to evaluate the effect of various pre-cooking (washing, soaking) and cooking processes (traditional and rinse) of rice on the amount of toxic and essential elements in the various brands of rice in Iran and assessing human health risks from their carcinogenic and non-carcinogenic effects. For this purpose, totally, 144 sample sizes were examined from three brand (Iranian (n = 48), Pakistani (n = 48), and Indian (n = 48)) in order to the amount of toxic and essential elements using inductively coupled plasma-optical emission spectrometry. The results showed that pre-cooking processes such as washing and soaking in the rinse method were significantly effective in removal toxic metals than the traditional method, so that the most changes were observed for potassium and aluminum metals. The estimated daily intakes of copper, magnesium, manganese, iron, and zinc in different cooking methods were 1.19-1.2%, 0.29-0.32%, 1.01-1.23%, 0.4-0.98%, and 0.9-1.32%, respectively. The Monte Carlo simulation results showed that the rank order of toxic metals of cooked rice based on target hazard quotients value was arsenic > chromium > cadmium > mercury > lead > aluminum, respectively. The result of cancer risk probability was lower than the safe risk limits (1E-4), representing no remarkable cancer risk probability that was due to ingestion of rice for adults and children in Iran. According to the this results, it is recommended to use the rinse method due to further reduction of metals especially toxic metals for rice samples, although the amount of essential elements was also removed by this method.

Abstract
The concentration of PAHs among raw and cooked meat products (sausages and burgers), randomly collected from five regions of Tehran, Iran, was investigated by the aid of a gas chromatography-mass spectrometry (GC-MS), and the risk assessment was conducted. The concentration of 16 types of PAHs in sausage and burger samples was found in the range of 8.08 to 29.55 and 10.18 to 29.85 μg/kg, respectively. The concentrations of some PAHs such as anthracene (A) (14.12 μg/kg) and acenaphthylene (Acl) (13.4 μg/kg) were higher than the European Standard (2 μg/kg). Among the meat products with different meat percentages (50, 70, and 90), the highest level of total PAHs was noted in the product containing 90% meat (19.34 μg/kg), while the highest mean level of PAHs was noted in fried meat products (23.31 μg/kg). A positive and significant correlation between cooking method and brand of product with the concentration of PAHs (p-value < 0.05) was noted. Also, no concern regarding the non-carcinogenic risk due to the ingestion of PAHs via consumption of the meat products was demonstrated by the health risk. However, the carcinogenic risk due to the consumption of sausage and burger was at the tolerable (1E-6 to 1E-4) and considerable (> 1E-4) risk levels, respectively. In this regard, further assessments to control and modify the cooking method among the Iranian population were recommended.

Abstract
Arsenic (As) and mercury (Hg) are toxic elements that are often classified as heavy metals, much like cadmium (Cd) and lead (Pb) and others. In this study, we determined the As and Hg contents in rice samples obtained from commercially available rice in Beijing and the health risks associated with daily dietary exposure to As and Hg by the consumption of this rice. Furthermore, the pollution levels of the rice were evaluated based on the Nemerow index. For this purpose, we collected 353 rice samples from 16 municipal districts in Beijing and determined the As and Hg contents in these samples by microwave digestion and inductively coupled plasma mass spectrometry (ICP-MS). The results were as follows: (i) the average content of As in the collected rice samples was 154.91 μg/kg (95% confidence interval (CI) of 139.90-169.92 μg/kg), and the average content of Hg was 2.02 μg/kg (95% CI of 1.25-2.79 μg/kg), which did not exceed the limits established by China's National Standard; (ii) the Nemerow index indicated that the As and Hg contents in these rice samples were safe; (iii) the dietary exposure to As and Hg by rice consumption was, respectively, 15.35 μg/day and 0.20 μg/day, which accounted for 12.91% and 3.35% of the total dietary exposure, respectively; (iv) the hazard quotients (HQs) of As and Hg by the dietary consumption of rice were, respectively, 0.77 and 0.03, and both the HQ and hazard index (HI is 0.8) were less than one. These results indicate that dietary exposure to As and Hg would have no detrimental effect on the health of the residents in the study area; however, the possible carcinogenesis by As in these residents warrants serious attention.
