Abstract
In this study, the heavy metal (Al, Mn, Co, Cu, Zn, As, Se, Cd, Sn, Pb and Hg) concentrations were determined in a total of seventy-two infant formula samples manufactured by sixteen different brands in Türkiye. During the analyses, inductively coupled plasma MS was used in evaluating the nutritional profile and the toxicological risk associated with the consumption of these products. Given the analysis results, the highest Pb content was found in milk-based 'beginner' formulas (0-6 months, three samples) packed in metal containers. The highest concentration of Mn was found in powdered infant formula (Brand 3) that is suitable for 9-12-month-olds. Mn level was found to be above the limit values in nine samples (12·5 %). Cd level exceeded the limit values in two infant formula samples of Brand 3 (0·038 µg/g) and Brand 15 (0·023 µg/g). Therefore, the mean Cd concentration found here reaches the maximum limit set by the European Union commission legislation. Cu was detected in all infant formulas. The highest concentration was determined in Brand 1 (9-12 months, seven samples) and found to be 2·637 (sd 1·928) µg/g. This value is much higher than the reference values set in the national and international standards. Based on the results achieved here, the estimated daily intake (EDI) and target hazard quotient values for all the metals in infant formulas were found lower than < 1. These findings suggest that the baby foods examined would not pose any health risk. The daily intakes exceeding the baby nutrition values recommended by the WHO would pose health risk since they would exceed the EDI levels.

Abstract
BACKGROUND The infant population is particularly sensitive, so the risk posed by their diet must be analyzed. The aims of the present study were (i) to determine the contents of 38 elements in 159 samples of ready-to-eat baby food sold in Spain and (ii) to estimate the dietary intakes and risk assessments of these elements in name brands and store brands in infants ranging between 6 and 12 months of age. METHODS A list of essential, non-essential/toxic elements, rare earth elements (REEs), and other hi-tech-related elements that are currently considered as emerging environmental pollutants were measured in ready-to-eat baby foods by ICP-MS. RESULTS Fish purees showed the highest concentrations of mercury (28.1 ng/g) and arsenic (346.2 ng/g). The levels of manganese, molybdenum, and chromium exceed the adequate intake, being higher in the case of store brands. The acute hazard index was above 1 for molybdenum and manganese. A risky consumption of thallium and mercury was observed, being higher among name brands. The risk associated with the consumption of REEs was low, although its presence should be highlighted. CONCLUSIONS This is the first time that these chemical elements have been measured in ready-to-eat purees for babies. The presence of some of them, such as mercury, should be sufficient to monitor the levels of these contaminants in food intended for such a sensitive population as children.

Abstract
As toxic metals, Hg and Cd are a concern for food safety and human health; their rapid and portable analysis is still a challenge. A portable and rapid Hg-Cd analyzer constructed from a metal-ceramic heater (MCH)-based electrothermal vaporizer (ETV), an on-line catalytic pyrolysis furnace (CPF), a composite Pt/Ni trap, and a homemade miniature atomic absorption spectrometer (AAS) was proposed for grain analysis in this work. To enhance sensitivity, a new folded light path was designed for simultaneous Hg and Cd analysis using charge coupled device (CCD) in AAS. To eliminate the grain matrix interference, a catalytic pyrolysis furnace with aluminum oxide fillers was utilized to couple with a composite Pt/Ni trap. The method limits of detection (LODs) were 1.1 μg/kg and 0.3 μg/kg for Hg and Cd using a 20 mg grain sample, fulfilling the real sample analysis to monitor the grain contamination quickly; linearity R2 > 0.995 was reached only using standard solution calibration, indicating the sample was free of grain matrix interference. The favorable analytical accuracy and precision were validated by analyzing real and certified reference material (CRM) grains with recoveries of 97-103% and 96-111% for Hg and Cd, respectively. The total analysis time was less than 5 min without sample digestion or use of any chemicals, and the instrumental size and power consumption were <14 kg and 270 W, respectively. Compared with other rapid methods, this newly designed Hg-Cd analyzer is proven to be simple, portable, and robust and is, thus, suitable to quickly monitor Hg and Cd contamination in the field to protect grain and food safety.

Abstract
Concerns have been raised regarding toxic-element (arsenic, cadmium, lead, and mercury) contamination of commercially available infant foods around the world. Young children are vulnerable to the effects of toxic elements, based on higher absorption levels and potentially poorer detoxification capacities. Toxic-element exposures in early life exact high societal costs, but it is unclear how much dietary exposure to these elements contributes to adverse health outcomes. Well-designed epidemiological studies conducted in different geographical and socioeconomic contexts need to estimate dietary toxicant exposure in young children and to determine whether causal links exist between toxicants in children's diets and health outcomes. This commentary outlines the methodological considerations and data needs to advance such research.

Abstract
Mercury contamination is one of the most severe issues in society due to its threats to public health and the ecological system. However, traditional methods for mercury ion detection are still limited by their time-consuming procedures, requirement of expensive instruments, and low selectivity. In recent decades, tremendous progress has been made in the development of functional nucleic acid-based, especially DNAzyme sensors for mercury (Ⅱ) (Hg2+) determination, including RNA-cleaving DNAzymes and G-quadruplex-based DNAzymes in particular. Researchers have heavily studied the construction of Hg2+ sensors, mainly originating from in vitro selection-derived DNAzymes, by incorporating T-Hg2+-T recognition moieties in existing DNAzyme scaffolds, and interfacing Hg2+-sensitive sequences with nanomaterials. In the last case, the employment of materials (as quenchers, signal transducers and DNA immobilizers) enriches the application scenarios of current Hg2+-DNAzymes, due to a combination of their functions. We summarize a broad range of sensing approaches, including optical, electrochemical, and other sensing methods, and compare their features. This review elaborates on the rational design strategies for engineering DNAzymes to selectively sense Hg2+, critically discusses their properties in different application scenarios, and summarizes recent advances in this field. Additionally, current progress, challenges and future perspectives are also discussed. This minireview provides deeper insights into the chemistry of these functional nucleic acids when working with Hg2+, explains the design ideas of DNAzyme-sensors in each platform, and reveals potential opportunities in developing more advanced DNAzyme sensors for the highly selective and sensitive recognition of Hg2+. ENVIRONMENTAL IMPLICATION: Mercury is one of the most toxic metallic contaminants due to its high toxicity, non-biodegradability, and serious human health risks when accumulated in the body. In the recent decade, intensive studies have focused on exploring mercury sensors by combining DNAzymes with various sensing methods, paving a promising avenue to gain ultra-high sensitivity and selectivity. However, so far, no review has introduced the recent advances on DNAzyme-based sensors for mercury detection in a critical way. In this review, we comprehensively summarized the studies on DNAzyme-based sensors for mercury detection using various sensing techniques including optical, electrochemical and other sensing methods.

Abstract
Toxic elements have a negative impact on health, especially among infants and young children. Even low levels of exposure can impair the normal growth and development of children. In young children, all organs and metabolic processes are insufficiently developed, making them particularly vulnerable to the effects of toxic elements. The aim of this study is to estimate the concentration of toxic elements in products consumed by infants and young children. The health risk of young children due to consumption of ready-made products potentially contaminated with As (arsenic), Cd (cadmium), Hg (mercury), and Pb (lead) was also assessed. A total of 397 samples (dinners, porridges, mousses, snacks "for the handle", baby drinks, dairy) were analyzed for the content of toxic elements. Inductively coupled plasma mass spectrometry (ICP-MS) was used to assess As, Cd, and Pb concentration. The determination of Hg was performed by atomic absorption spectrometry (AAS). In order to estimate children's exposure to toxic elements, the content of indicators was also assessed: estimated daily intake (EDI), estimated weekly intake (EWI), provisional tolerable weekly intake (PTWI), provisional tolerable monthly intake (PTMI), the benchmark dose lower confidence limit (BMDL), target hazard quotient (THQ), hazard index (HI), and cancer risk (CR). The average content of As, Cd, Hg, and Pb for all ready-made products for children is: 1.411 ± 0.248 µg/kg, 2.077 ± 0.154 µg/kg, 3.161 ± 0.159 µg/kg, and 9.265 ± 0.443 µg/kg, respectively. The highest content As was found in wafer/crisps (84.71 µg/kg); in the case of Cd, dinners with fish (20.15 µg/kg); for Hg, dinners with poultry (37.25 µg/kg); and for Pb, fruit mousse (138.99 µg/kg). The results showed that 4.53% of the samples attempted to exceed Pb, and 1.5% exceeded levels of Hg. The highest value of THQ was made in the case of drinks, for Cd and Pb in mousses for children, and Hg for dairy products. The THQ, BMDL, and PTWI ratios were not exceeded. The analyzed ready-to-eat products for children aged 0.5-3 years may contain toxic elements, but most of them appear to be harmless to health.

Abstract
Cereal-based foods, including breakfast (BC) and infant cereals (IC), are among the first solid foods introduced to infants. BC and IC are sources of macro and micronutrients that have beneficial effects on health, but can also be sources of harmful chemical and microbiological contaminants and nutrients that may lead to adverse health effects at high consumption levels. This study was performed under the RiskBenefit4EU project with the aim of assessing the health impact associated with consumption of BC and IC by Portuguese children under 35 months. Adverse effects associated with the presence of aflatoxins, Bacillus cereus, sodium and free sugars were assessed against the benefits of fiber intake. We applied a risk-benefit assessment approach, and quantified the health impact of changes in consumption of BC and IC from current to various alternative consumption scenarios. Health impact was assessed in terms of disability-adjusted life years. Results showed that moving from the current consumption scenario to considered alternative scenarios results in a gain of healthy life years. Portuguese children can benefit from exchanging intake of IC to BC, if the BC consumed has an adequate nutritional profile in terms of fiber, sodium and free sugars, with levels of aflatoxins reduced as much as possible.

Abstract
Infants and toddlers are highly sensitive to contaminants in food. Chronic exposure can lead to developmental delays, disorders of the nervous, urinary and immune systems, and to cardiovascular disease. A literature review was conducted mainly in PubMed, Google Scholar and Scopus databases, and took into consideration papers published from October 2020 to March 2021. We focused on contaminant content, intake estimates, and exposure to contaminants most commonly found in foods consumed by infants and children aged 0.5-3 years. In the review, we included 83 publications with full access. Contaminants that pose a high health risk are toxic elements, acrylamide, bisphenol, and pesticide residues. Minor pollutants include: dioxins, mycotoxins, nitrates and nitrites, and polycyclic aromatic hydrocarbons. In order to reduce the negative health effects of food contamination, it seems reasonable to educate parents to limit foods that are potentially dangerous for infants and young children. An appropriate varied diet, selected cooking techniques, and proper food preparation can increase the likelihood that the foods children consume are safe for their health. It is necessary to monitor food contamination, adhere to high standards at every stage of production, and improve the quality of food for children.

Abstract
Durum wheat grains, which are mostly used for the production of pasta and several baked goods, represent a main source of vegetable proteins and calories. Concurrently, many contaminants, including toxic trace elements, may accumulate in them, posing a potential severe hazard to human health. In this context, for official control and food safety purposes, 346 samples of whole durum wheat imported into the Italian market from six countries (Australia, Canada, Kazakhstan, Russia, Turkey, and the United States) during the period 2015-2020 were analysed for cadmium (Cd), lead (Pb), and mercury (Hg) content using inductively coupled plasma mass spectrometry (ICP-MS). All the analysed samples were compliant with Food Agriculture Organization-World Health Organization and European Union regulations. The mean values were 0.0322 and 0.0162 mg kg-1, respectively, for Cd and Pb, while all samples showed levels below the limit of detection (0.004 mg kg-1) for Hg. The results were construed in terms of seasonality, year, and country of production, and compared with reference tolerance values. Confirming previous exposure studies, the obtained data and the dietary intake assessment showed that durum wheat-based products may have a significant impact on exposure to Pb and Cd (20-50%) in the overall population, particularly in more sensitive and/or exposed subgroups (infants, toddlers, and females).

Abstract
The concentrations of heavy metals, such as chromium (Cr), arsenic (As), cadmium (Cd), mercury (Hg), and lead (Pb), in different muscles and edible offal of consumed pork from the city of Nanjing and related health risks were evaluated. The results showed that the detected Hg concentrations from 6 of 80 samples exceeded the maximum allowable concentration (GB 2762-2017). Moreover, most of the edible offal, especially the kidneys, contained more heavy metals than the other parts, although the concentrations among the samples were significantly different (P < 0.05). In addition, the health risk evaluation revealed that the estimated daily intake of all the samples was far below the recommended limit, and all the target hazard quotients and total target hazard quotients were less than 1, which is considered safe for human health. Nevertheless, the Hg concentrations over the acceptable limit should receive sufficient attention, considering the long-term consumption of pork. PRACTICAL APPLICATION: Currently, no reports have been available on the heavy metal assessment of pork, though pork is widely consumed in many non-Muslim communities. In this study, the concentrations of heavy metals in different muscles and edible offal of consumed pork were determined and their related health risks were evaluated. This study will provide a significant reference to understand the quality and safety of pork in China or other similar developing countries.

Abstract
Methylmercury (MeHg) in rice has attracted growing health concern over the past decade, due to the accumulation of high MeHg levels, which may pose potential health risk to humans. Rice is the staple food in Sri Lanka; nevertheless, the presence of micro pollutants, such as MeHg has been not investigated. Therefore, commercial rice samples from the Sri Lankan market (n = 163) were measured to reveal the total mercury (THg) and MeHg levels. THg (mean: 1.73 ± 0.89 ng/g, range: 0.21-6.13 ng/g) and MeHg concentrations (mean: 0.51 ± 0.37 ng/g; range: 0.03-3.81 ng/g) were low. Compared to the fish MeHg exposure, the rice MeHg exposure was generally lower in different consumption groups, suggesting that rice plays a less role than fish in MeHg exposure in Sri Lanka. Babies (infants and toddlers) at one year old may face fish MeHg exposure (0.17 μg/kg bw/day) higher than the reference dose for MeHg (RfD)-0.1 μg/kg bw/day, which was more than 5 times that of rice MeHg exposure (0.031 μg/kg bw/day). Future studies in Sri Lanka should focus on health impacts under long-term overexposure of MeHg, especially in vulnerable populations. Some diet changes should be made to mitigate MeHg exposure levels in Sri Lankans.

Abstract
Exposure to food toxins generate multiple adverse health effects. Heavy metals, antibiotics residue, mycotoxins, pesticides and some food additives are examples of the most important food toxins. The common mechanism of toxicity and carcinogenicity effects of food toxins is the generation of oxidative stress that leads to DNA damages. Moreover, based on epidemiologic evidence unhealthy eating habits and food toxicities are associated with cancers occurrence. Therefore, application of bioactive food additives as harmless or safe components in food industry is expensive. Nigella sativa L. is a broadly used herb-drug for various diseases all over the world and has been used as preservative and food additive. Based on various studies N. sativa has shown various pharmacological activities including therapeutic efficacy against different human diseases and antioxidant anti-inflammatory effects against environmental toxins. N. sativa decreases the adverse health effects induced by mentioned food toxins via modulating the action of antioxidant enzymes such as glutathione peroxidase (GPx), glutathione-S-transferase catalase and act as reactive oxygen species (ROS) scavengers in different organs. Besides, N. sativa and thymoquinone (TQ) have protective effects on food products through removal and inhibition of various toxic compounds. Therefore, in the present review we will describe all protective effects of N. sativa and its main constituents, TQ, against food induced toxicities.
