Abstract
Nitrite is a common ingredient in the industry and agriculture; it is everywhere, like water, food, and surroundings. Recently, several approaches have been developed to measure the nitrite levels. So, this review was presented as a summary of many approaches utilized to detect the nitrite. Furthermore, the types of information that may be acquired using these methodologies, including optic and electrical signals, were discussed. In electrical signal methods, electrochemical sensors are usually developed using different materials, including carbon, polymers, oxides, and hydroxides. At the same time, optic signals receiving techniques involve utilizing fluorescence chromatography, absorption, and spectrometry instruments. Furthermore, these methodologies' benefits, drawbacks, and restrictions are examined. Lastly, due to the efficiency and fast means of electrochemical detectors, it was suggested that they can be used for detecting nitrite in food safety. Futuristic advancements in the techniques used for nitrite determination are subsequently outlined.

Abstract
A ratiometric fluorescent and colorimetric detecting assay for NO2- was realized by a hybrid nanosensor (Co2+-CDs@R-CDs) utilizing firstly through the redox reaction of nitrite (NO2-) with Co2+, of which the hybrid nanosensor Co2+-CDs@R-CDs was fabricated by Co2+-doped carbon dots (Co2+-CDs) and a reference of red-emitting carbon dots (R-CDs). The ratiometric fluorescent linear detection range of NO2- was 2.5-45 μM and the limit of detection (LOD) was 0.068 μM with the response time of 120 s. While, the colorimetric linear detection range of NO2- was 2.5-60 μM and the LOD was 0.075 μM. In addition, a portable smartphone system which could measure the R (red), G (green), and B (blue) values of the fluorescence and the visible color of the coated Co2+-CDs@R-CDs paper strip-based sensor had also been developed and successfully applied to detect NO2- in sausage, pickles and tap water samples.

Abstract
Accurate on-site detection of nitrite in complex matrices remains a significant challenge. Herin, we construct a self-ratio optical bimodal portable kit via co-assembling NaErF4:0.5%Tm@NaYF4@NaYbF4:0.5%Tm@NaYF4 (Er:Tm@Yb:Tm) and nitrogen-doped carbon platinum nanomaterials (Pt/CN) in sodium alginate (SA) hydrogel. Pt/CN nanomaterials are synthesized by high-temperature sintering using a zinc-based zeolite imidazolium framework as a sacrificial template. The Pt/CN nanozyme possesses excellent oxidase-like activity to produce the oxidation state 3,3',5,5'-tetramethylbenzidine (oxTMB). Nitrite mediates diazotization of oxTMB to trigger the change of absorption signals, accompanying the ratio fluorescence response of the Er:Tm@Yb:Tm. Crucially, Er:Tm@Yb:Tm and Pt/CN are embedded in SA hydrogel to fabricate a portable kit with efficient and sensitive performance. An image processing algorithm is used to analyze the nitrite-induced signal change of the portable hydrogel kit, resulting in detection limits of 0.63 μM. This method has great potential for point-of-care applications due to its reliability, long-term stability, accuracy, sensitivity, and portability.

Abstract
Electrochemically active biofilms (EABs) for nitrite detection have high specificity, rapid response, operational simplicity, and extended lifespan advantages. However, their scale production remains challenging due to time-consuming and uniform preparation. In this study, a novel approach was proposed to fast fabricate an EAB biosensor with a synthetic biofilm electrode for nitrite detection. The biofilm electrode was prepared by coating bioinks with varying conductive materials onto the surface of the graphite sheets, showing short incubation time and good reproducibility. Incorporating conductive materials into the bioinks remarkably enhanced the maximum voltage of the first cycle of bioelectrode incubation, with an increase of up to 633% for carbon nanofibers. The nitrite reduction current was amplified by a factor of 2.97, due to the enhancement of extracellular electron transfer (EET). The developed nitrite biosensor exhibited a detection range of 0.1-15 mg NO2--N L-1, with a high sensitivity of 610.8 μA mM-1 cm-2, and a stabilization operation time of at least 280 cycles. This study not only provided valuable insights into conductive materials for synthetic biofilms but also presented a practical approach for the rapid preparation, scale production, and optimization of highly sensitive and stable EAB sensors.

Abstract
As an antioxidant and preservative agent, nitrite (NO2-) plays an essential role in the food industry to maintain freshness or inhibit microbial growth. However, excessive addition of NO2- is detrimental to health, so accurate and portable detection of NO2- is critical for food quality control. Notably, the selectivity of most carbon dots (CDs)-based fluorescence sensors was not enough due to the nonspecific interaction mechanism of hydrogen bond, electrostatic interaction and inner filter effect etc. Herein, a novel fluorescence/UV-vis absorption (FL/UV-vis) dual-mode sensor was developed on basis of mC-CDs, which were prepared by simple solvothermal treatment of m-Phenylenediamine (m-PDA) and cyanidin cation (CC). The fluorescence of these mC-CDs could be selectively responded by NO2- through the specific diazo coupling reaction between NO2- and amino groups on the surface of mC-CDs, thus effectively improving the selectivity of NO2- detection. The CDs-based fluorescence sensor possessed a low detection limit of 0.091 μM and 0.143 μM for FL and UV-vis methods and the excellent linear range of 0.0-60.0 μM. Furthermore, the mC-CDs sensor was employed to detect NO2- in real samples with a recovery rate of 97.11 %-104.15 % for quantitative addition. Moreover, the smartphone-assisted fluorescence sensing platform developed could identify the subtle color changes that could not be distinguished by the naked eye, and had the advantages of fast detection speed and intelligence. More importantly, the portable solid phase sensor based on mC-CDs had been successfully applied to the specific fluorescence identification and concentration monitoring of NO2-. Accordingly, the designed sensor provided a new strategy for the highly selective and convenient sensing of NO2- in food substrates, and paved the way for the wide application of CDs-based nanomaterials in the detection of food safety.

Abstract
A simple and sensitive device for the detection of nitrite and nitrate in environmental waters was developed based on visible light gas-phase molecular absorption spectrometry. By integrating a detection cell (DC), semiconductor refrigeration temperature-controlling system (SRTCY), and nitrite reactor into a sequential injection analysis system, trace levels of nitrite and nitrate in complex matrices were successfully measured. A low energy-consuming light-emitting diode (violet, 400-405 nm) was coupled with a visible light-to-voltage converter (TSL257) to measure the gas-phase molecular absorption. To reduce the interference of water vapor, an SRTCY was used to condense the water vapor on-line before the gas-phase analyte entered the DC. The DC was radiatively heated by the SRTCY to avoid water vapor condensation in the light path. As a result, the obtained baseline noise reduced 3.75 times than that of without SRTCY. Under the optimized conditions, the device achieved limits of detection (3σ/k) of 0.055 and 0.36 mmol/L (0.77 and 5.04 mg N/L) for nitrite and nitrate, respectively, and the linear calibration ranges were 0.1-15 mmol/L (R2 = 0.9946) and 1-10 mmol/L (R2 = 0.9995), respectively. Precisions of 5.2 % and 9.0 % were achieved for ten successive determinations of 0.3 mmol/L nitrite and 1.0 mmol/L nitrate, and the analytical times for nitrite and nitrate determination were 5 and 13 min, respectively. This method was validated against standard methods and recovery tests, and it was applied to the measurement of nitrite and nitrate in environmental waters. Moreover, a device was designed to enable the field measurement of nitrite and nitrate in complex matrices.

Abstract
Nitrite (NO2-) is categorized as a carcinogenic substance and is subjected to severe limitations in water and food. To safeguard the public's health, developing fast and convenient methods for determination of NO2- is of significance. Point-of-care testing (POCT) affords demotic measurement of NO2- and shows huge potential in future technology beyond those possible with traditional methods. Here, a novel ratiometric fluorescent nanoprobe (Ru@MOF-NH2) is developed by integrating UiO-66-NH2 with tris(2,2'-bipyridyl)ruthenium(II) ([Ru(bpy)3]2+) through a one-pot approach. The special diazo-reaction between the amino group of UiO-66-NH2 and NO2- is responsible for the report signal (blue emission) with high selectivity and the red emission from [Ru(bpy)3]2+ offers the reference signal. The proposed probe shows obviously distinguishable color change from blue to red towards NO2- via naked-eye. Moreover, using a smartphone as the detection device to read color hue, ultra-sensitive quantitative detection of NO2- is achieved with a low limit of detection at 0.6 μΜ. The accuracy and repeatability determined in spiked samples through quantitative visualization is in the range of 105 to 117% with a coefficient of variation below 4.3%. This POCT sensing platform presents a promising strategy for detecting NO2- and expands the potential applications for on-site monitoring in food and environment safety assessment.

Abstract
Nitrite is a compound used as a food additive for its preservative action and coloring capability, as well as an industrial agent for its antifreezing action and for preventing corrosion, and it is also used as a pharmaceutical in cyanide detoxification therapy. However, even recently, because of its high toxicity, it has been used as a murder and suicidal agent due to its affordability and ready availability. In this technical report, we describe an electrochemical paper-based device for selectively determining nitrite in complex biofluids, such as blood, cadaveric blood, vitreous humor, serum, plasma, and urine. The approach was validated in terms of the linearity of response, selectivity, and sensitivity, and the accuracy of the determination was verified by comparing the results with a chromatographic instrumental method. A linear response was observed in the micromolar range; the sensitivity of the method expressed as the limit of detection was 0.4 μM in buffer measurements. The simplicity of use, the portability of the device, and the performance shown make the approach suitable for detecting nitrite in complex biofluids, including contexts of forensic interest, such as murders or suicides in which nitrite is used as a toxic agent. Limits of detection of ca. 1, 2, 4, 5, 3, and 4 μM were obtained in vitreous humor, urine, serum and plasma, blood, and cadaveric blood, also highlighting a satisfactory accuracy comprised between 91 and 112%.

Abstract
Nitrite (NO2-) is a widely used food additive and long-term aging of cooked leftovers may also contribute to the formation of NO2-, excessive consumption of NO2- is harmful to human health. Developing an effective sensing strategy for on-site monitoring of NO2- has attracted considerable attention. Herein, a novel colorimetric and fluorometric probe ND-1 based on photoinduced electron transfer effect (PET) was designed for highly selective and sensitive detection of nitrite (NO2-) in foods. The probe ND-1 was strategically constructed by employing naphthalimide as the fluorophore and o-phenylendiamine as the specific recognition site for NO2-. The triazole derivative ND-1-NO2- could be produced exclusively by reacting with NO2-, leading to a visible colorimetric change from yellow to colorless accompanied by a significantly enhanced fluorescence intensity at 440 nm. The probe ND-1 exhibited promising sensing performances towards NO2- including high selectivity, rapid response time (within 7 min), low detection limit (47.15 nM) and wide quantitative detection range (0-35 μM). In addition, probe ND-1 was capable of quantitative detecting of NO2- in real food samples (including pickled vegetables and cured meat products) with satisfactory recovery rates (97.61%-103.08%). Moreover, the paper device loaded by probe ND-1 could be utilized for visual monitoring of NO2- levels variation of stir-fried greens. This study provided a feasible method for the accurate, traceable and rapid on-site monitoring NO2- in foods.

Abstract
Transition metal-N-doped carbon has been demonstrated to mimic natural enzyme activity; in this study, cobalt-nitrogen co-doped carbon (Co-N-C) nanomaterial was developed, and it could be an oxidase mimic. Firstly, Co-N-C with oxidase-like activity boosts the chromogenic reaction of 3,3',5,5'-tetramethylbenzidine (TMB) to produce the oxidized TMB (oxTMB). And the aromatic primary amino group of oxTMB reacts with nitrite (NO2-) to form diazo groups. Based on this background, we developed a cascade system of a Co-N-C-catalyzed oxidation reaction and a diazotization reaction for nitrite determination. The low detection limit (0.039 μM) indicates that Co-N-C is superior compared with the vast majority of previously reported nitrite assays. This study not only provides a novel nanozyme with sufficiently dispersed active sites, but it also further applies it to the determination of nitrite, which is expected to expand the application of nanozymes in colorimetric analysis.

Abstract
Nitrite (NO2-) is extensively found in the daily dietary environment. However, consuming too much NO2- can pose serious health risks. Thus, we designed a NO2--activated ratiometric upconversion luminescence (UCL) nanosensor which could realize NO2- detection via the inner filter effect (IFE) between NO2--sensitive carbon dots (CDs) and upconversion nanoparticles (UCNPs). Due to the exceptional optical properties of UCNPs and the remarkable selectivity of CDs, the UCL nanosensor exhibited a good response to NO2-. By taking advantage of NIR excitation and ratiometric detection signal, the UCL nanosensor could eliminate the autofluorescence thereby increasing the detection accuracy effectively. Additionally, the UCL nanosensor proved successful in detecting NO2- quantitatively in actual samples. The UCL nanosensor provides a simple as well as sensitive sensing strategy for NO2- detection and analysis, which is anticipated to extend the utilization of upconversion detection in food safety.

Abstract
The existence of carcinogenic nitrites in food and the natural environment has attracted much attention. Therefore, it is still urgent and necessary to develop nitrite sensors with higher sensitivity and selectivity and expand their applications in daily life to protect human health and environmental safety. Herein, one-dimensional honeycomb-like carbon nanofibers (HCNFs) were synthesized with electrospun technology, and their specific structure enabled controlled growth and highly dispersed bismuth nanoparticles (Bi NPs) on their surface, which endowed the obtained Bi/HCNFs with excellent electrocatalytic activity towards nitrite oxidation. By modifying Bi/HCNFs on the screen-printed electrode, the constructed Bi/HCNFs electrode (Bi/HCNFs-SPE) can be used for nitrite detection in one drop of solution, and exhibits higher sensitivity (1269.9 μA mM-1 cm-2) in a wide range of 0.1~800 μM with a lower detection limit (19 nM). Impressively, the Bi/HCNFs-SPE has been successfully used for nitrite detection in food and environment samples, and the satisfactory properties and recovery indicate its feasibility for further practical applications.

Abstract
Rational design of fast and sensitive determination of nitrite (NO2-) from a complicated actual sample overtakes a crucial role in constructing a high-efficiency sensing platform. Herein, a visual NO2- sensing platform with outstanding selectivity, sensitivity, and stability based on a surface plasmon resonance (SPR)-enhanced oxidase-like activity has been proposed. Benefiting from the intrinsic photocatalytic activity and limited light penetration of ZnS, the oxidase-like activity based on ZnS decorated on Ag nanowires (Ag@ZnS) is determined. It is demonstrated that the electrons are generated efficiently on the surface of ZnS and then transferred into the hot electrons of Ag with the help of localized SPR excitation, thus greatly oxidating the colorless 3,3',5,5'-tetramethylbenzidine (TMB) to produce dark blue oxidized TMB (oxTMB). When nitrite is added into the reaction system, the oxTMB will selectively react with NO2- to generate diazotized oxTMB, leading to a visual color change from dark blue to light green and subsequently to dark yellow. Owing to the specific recognition between nitrite and oxTMB, the recovery of catalytic activity induced an enhanced colorimetric test with a wider linear range for NO2- determination, an ultralow detection limit of 0.1 μM, excellent selectivity, and practicability for application in real samples. This plasmon-enhanced oxidase-like activity not only provides a smart approach to realize a colorimetric assay with high sensitivity and simplicity but also modulates oxidase-like activities.

Abstract
Nitric oxide as a signaling molecule exerts cytotoxicity known as nitrosative stress at its excess concentrations. In the yeast Saccharomyces cerevisiae, the cellular responses to nitrosative stress and their molecular mechanisms are not fully understood. Here, focusing on the posttranslational modifications that are associated with nitrosative stress response, we show that nitrosative stress increased the protein S-glutathionylation level in yeast cells. Our proteomic and immunochemical analyses demonstrated that the fructose-1,6-bisphosphate aldolase Fba1 underwent S-glutathionylation at Cys112 in response to nitrosative stress. The enzyme assay using a recombinant Fba1 demonstrated that S-glutathionylation at Cys112 inhibited the Fba1 activity. Moreover, we revealed that the cytosolic glutaredoxin Grx1 reduced S-glutathionylation of Fba1 and then recovered its activity. The intracellular contents of fructose-1,6-bisphosphate and 6-phosphogluconate, which are a substrate of Fba1 and an intermediate of the pentose phosphate pathway (PPP), respectively, were increased in response to nitrosative stress, suggesting that the metabolic flow was switched from glycolysis to PPP. The cellular level of NADPH, which is produced in PPP and functions as a reducing force for nitric oxide detoxifying enzymes, was also elevated under nitrosative stress conditions, but this increase was canceled by the amino acid substitution of Cys112 to Ser in Fba1. Furthermore, the viability of yeast cells expressing Cys112Ser-Fba1 was significantly lower than that of the wild-type cells under nitrosative stress conditions. These results indicate that the inhibition of Fba1 by its S-glutathionylation changes metabolism from glycolysis to PPP to increase NADPH production, leading to nitrosative stress tolerance in yeast cells.

Abstract
Multimodal detection is a promising paradigm because of its advantages of expanding usage scenarios and improving reliability. However, it is very challenging to design reasonable strategies to achieve the multimodal sensing of targets. Herein, we developed an unprecedented bimodal ratiometric colorimetric/fluorometric method by exploring a novel bifunctional artificial oxidase mimic, Mn-doped N-rich carbon dots (Mn-CDs), to achieve the high-performance determination of nitrite in complicated matrices. The Mn-CDs exhibited both tunable photoluminescence and high oxidase-like activity, effectively catalyzing the colorless 3,3',5,5'-tetramethylbenzidine (TMB) oxidation to generate blue TMB+. When nitrite was introduced, the TMB+ species generated would specifically react with nitrite to produce diazotized TMB+, resulting in a color change from blue to green and finally to yellow. Simultaneously, the fluorescence of Mn-CDs was quenched by the diazotized TMB+ product via the inner filter effect. Hence, the existence of nitrite could lead to the simultaneous variations of visual color and photoluminescence, providing the principal basis for the bimodal ratiometric colorimetric/fluorometric quantification of the target. With the method, excellent sensitivity, selectivity, reliability, and practicability for nitrite detection were verified. Our work proposes a new bimodal strategy for nitrite measurement using bifunctional CDs-based enzyme mimics, which will inspire future effort on the exploration of promising multifunctional nanozymes and their advanced applications in biochemical sensing.

Abstract
Primary aromatic amines derived carbon dots (PAA-CDs) with the protonated amino groups and high quantum yield of 46% were favorably obtained by one-step solvothermal treatment of m-phenylenediamine (m-PDA) in acidic environment. The interaction between the PAA-CDs and nitrite (NO2-) was inherited the characteristic reaction of m-PDA (a primary aromatic amine) and NO2-, resulting in strong fluorescence quenching and obvious absorption variation of the PAA-CDs. Meanwhile, a chromogenic reaction of diazo coupling can cause significant color changes. Hence, the PAA-CDs were developed for an optical dual-mode and smartphone imaging sensor for NO2- detection in the range of 3.0 ~ 40.0 μM with high selectivity, good sensitivity, and excellent anti-interference capability. A limit of detection (LOD) of 0.024 μM and 0.16 μM was implemented by fluorometry and colorimetry, respectively. For smartphone imaging colorimetry, the LODs of 0.46 μM (visible color) and 0.99 μM (fluorescence color) were acquired. More importantly, the established sensor has been successfully applied for the dynamic detection of NO2- in various food samples with the satisfying results. A smartphone imaging colorimetry method based on the CDs was firstly proposed to visually and quantitatively detect NO2-, which will broaden the application range of the CDs in food safety inspection.

Abstract
Protein tyrosine nitration (PTN), in which tyrosine (Tyr) residues on proteins are converted into 3-nitrotyrosine (NT), is one of the post-translational modifications mediated by reactive nitrogen species (RNS). Many recent studies have reported that PTN contributed to signaling systems by altering the structures and/or functions of proteins. This study aimed to investigate connections between PTN and the inhibitory effect of nitrite-derived RNS on fermentation ability using the yeast Saccharomyces cerevisiae. The results indicated that RNS inhibited the ethanol production of yeast cells with increased intracellular pyruvate content. We also found that RNS decreased the activities of pyruvate decarboxylase (PDC) as a critical enzyme involved in ethanol production. Our proteomic analysis revealed that the main PDC isozyme Pdc1 underwent the PTN modification at Tyr38, Tyr157, and Tyr344. The biochemical analysis using the recombinant purified Pdc1 enzyme indicated that PTN at Tyr157 or Tyr344 significantly reduced the Pdc1 activity. Interestingly, the substitution of Tyr157 or Tyr344 to phenylalanine, which is no longer converted into NT, recovered the ethanol production under the RNS treatment conditions. These findings suggest that nitrite impairs the fermentation ability of yeast by inhibiting the Pdc1 activity via its PTN modification at Tyr157 and Tyr344 of Pdc1.

Abstract
A new eco-friendly, rapid, and sensitive spectrophotometric method was developed to determine small quantities of nitrite, based on a diazotization mechanism. In an acidic solution, sulfathiazole was first diazotized with sodium nitrite, followed by adding phosphate buffer to form a yellow-colored compound, which showed maximum absorption at 450 nm, without the need for the addition of coupling agents such as N-(1-naphthyl) ethylenediamine. The effects of reagents amount and the optimal experimental conditions were examined by Central composite design. The simplified method presented a wide linear range of nitrite between 0.091 μg mL-1 and 1.47 μg mL-1, a sensitivity of 0.447 Abs mL µg-1, a determination coefficient of 0.998, and a low limit of detection of 0.053 μg mL-1. The simplified method was found to be comparable to the Griess method. It was evaluated for the measurements of nitrite using the accuracy profile approach. The validation procedure results established that 80% of the future results would be within the acceptability limit of 10% over the validation domain ranging from 0.174 μg mL-1 to 1.37 μg mL-1. The developed method was furtherly applied in the determination of nitrite using a developed paper-based analytical device that detected a nitrite concentration of 3 μg mL-1 which is considered by the World Health Organization to be the maximal permissible limit of nitrite in drinking water.

Abstract
In this study, we present a highly integrated design of organic optoelectronic devices for Point-of-Need (PON) nitrite (NO2−) measurement. The spectrophotometric investigation of nitrite concentration was performed utilizing the popular Griess reagent and a reflection-based photometric unit with an organic light emitting diode (OLED) and an organic photodetector (OPD). In this approach a nitrite concentration dependent amount of azo dye is formed, which absorbs light around ~540 nm. The organic devices are designed for sensitive detection of absorption changes caused by the presence of this azo dye without the need of a spectrometer. Using a green emitting TCTA:Ir(mppy)3 OLED (peaking at ~512 nm) and a DMQA:DCV3T OPD with a maximum sensitivity around 530 nm, we successfully demonstrated the operation of the OLED–OPD pair for nitrite sensing with a low limit of detection 46 µg/L (1.0 µM) and a linearity of 99%. The hybrid integration of an OLED and an OPD with 0.5 mm × 0.5 mm device sizes and a gap of 0.9 mm is a first step towards a highly compact, low cost and highly commercially viable PON analytic platform. To our knowledge, this is the first demonstration of a fully organic-semiconductor-based monolithic integrated platform for real-time PON photometric nitrite analysis.

Abstract
BACKGROUND Bacterial community successions were surveyed during the processing stages of sugar production using high-throughput sequencing methods. Furthermore, the correlation between bacterial community and nitrate/nitrite content in beet sugar processing were investigated. RESULTS In an analysis of the V3-V4 region of the 16S rDNA gene, 254 122 effective sequences were obtained from samples, which included sugar beet, cossettes, diffusion juice, second-phase diffusion juice, light juice and thick juice. The results showed that dominant genera included Pantoea, Pseudomonas, Leuconostoc and Burkholderia. Moreover, significant changes in bacterial communities were observed in samples. Regarding the relevant nitrogen metabolic potential, this study revealed communities with the ability for nitrate and nitrite metabolism. Furthermore, a shaking experiment involving diffusion juice and second-phase diffusion juice was performed, and results showed that the nitrate level declined 73% and 98% in 36 h, respectively. These results suggested that the bacterial communities contribute to nitrate and nitrite transformation. CONCLUSION This study illustrated that the bacterial communities and their specific effects on the formation of nitrate and nitrite during beet sugar processing. The results presented the basic concept involving the nitrate- and nitrite-forming pathways directly related to the mechanism of bacterial community growth. This study could facilitate an understanding of the correlation between nitrite content and microorganisms to guide beet sugar manufacturers regarding the control of nitrite and nitrate content. © 2021 Society of Chemical Industry.

Abstract
Food additives refer to all kinds of trace substances used in food or food processing to preserve flavor or enhance food taste, appearance, or other qualities. At present, artificial synthetic food additives have gradually replaced the natural food additives and many problems related to food additives, involving the abuse of food additives, excessive additives or even toxic additives. Obviously, food additives can bring people great sensory enjoyment and commercial convenience, but they may also cause potential risks to human health. So, it is of high significance to conduct quantitative analysis on the content of food additives. According to their functions and the regulatory requirements of food additives, this review starts from the classification and structures of various food additives involving colorants, preservatives, antioxidants, sweeteners, emulsifiers, stabilizers, thickeners, gelling agents. It then summarizes and discusses analytical methods for quantification of food additives including modern immunoassays and other biotechnological methods. The proposed review aspires to fill in the knowledge gap of food additives between academia and industry by covering all kinds of analytical methods for quantifying food additives.

Abstract
A fast, efficient, and non-chromatographic method was presented in this study for nitrite, nitrate, and p-nitrophenol (N-compounds) extraction and speciation analysis of environmental samples. By applying ultrasound-assisted solid-liquid extraction (USLE), analytes were efficiently extracted from water, soil, or sediment collected in areas of environmental disaster. These analytes were selectively converted to NO(g) through UV photolysis (NO3-), H2O2/UV photocatalysis (PNP), and direct conversion (NO2-). Following conversion, NO(g) was separated from the liquid phase and determined by high-resolution continuum source molecular absorption spectrometry (HR-CS MAS). The LODs obtained were 0.097 ± 0.004 mg L-1 for nitrite, 0.119 ± 0.004 mg L-1 for nitrate, and 0.090 ± 0.006 mg L-1 for p-nitrophenol. On applying this speciation method to environmental samples, concentrations were found to be up to 0.99 ± 0.03 mg L-1 (NO2-), 49.80 ± 2.5 mg L-1 (NO3-), and 0.10 ± 0.02 mg L-1 (PNP). Finally, addition/recovery study of real water, soil, and sediment samples showed 101 ± 2% recovery for NO2-, 100 ± 1% for NO3-, and 96 ± 5% for PNP.

Abstract
It remains a problem for direct detection of small inorganic nitrite ions using resonance Rayleigh scattering (RRS) method based on the direct dye-binding reaction. In the present study, a redox-derivatization reaction taking only 5 min was introduced prior to nitrite detection. In the redox-derivatization reaction, nitrite ions were reduced by excess iodine ions to generate triiodide ions (I3-), which were further derivatized with a cationic dye (basic violet 1, BV1) to form the ion associates of I3--BV1. Therefore, the RRS signal was significantly enhanced, resulting from the increase of particle size and resonance-enhanced scattering effect. The analytical procedure was performed by just mixing nitrite, oxidant, acid, and dye all-in-one, avoiding the tediousness of a multi-step process or the preparation of nanoparticles. The whole detection process including the redox-derivatization reaction was less than 6 min. The reaction conditions such as concentration of hydrochloric acid, potassium iodide, and BV1, reaction time, and temperature were investigated. Under optimum conditions, the concentration of nitrite was linear with an RRS signal of I3--BV1 ion associates at 320 nm in the range of 0.015-1.2 mg/L. The limit of detection (LOD) was calculated to be 3.0 μg/L. The RRS method was applied to the determination of nitrite in real samples such as pork sausage, milk powder, and water with recovery of 95.2-112%. With advantages of rapidness, high sensitivity, and high selectivity, the method indicates potential applicability for detection of nitrite in complex samples. The method also provides an instructive protocol for detection of analytes that generate no/weak RRS enhancement after the direct dye-binding reaction. Graphical abstract.

Abstract
Nitrite and nitrate are widely found in various water environments but the potential toxicity of nitrite and nitrate poses a great threat to human health. Recently, many methods have been developed to detect nitrate and nitrite in water. One of them is to use graphene-based materials. Graphene is a two-dimensional carbon nano-material with sp2 hybrid orbital, which has a large surface area and excellent conductivity and electron transfer ability. It is widely used for modifying electrodes for electrochemical sensors. Graphene based electrochemical sensors have the advantages of being low cost, effective and efficient for nitrite and nitrate detection. This paper reviews the application of graphene-based nanomaterials for electrochemical detection of nitrate and nitrite in water. The properties and advantages of the electrodes were modified by graphene, graphene oxide and reduced graphene oxide nanocomposite in the development of nitrite sensors are discussed in detail. Based on the review, the paper summarizes the working conditions and performance of different sensors, including working potential, pH, detection range, detection limit, sensitivity, reproducibility, repeatability and long-term stability. Furthermore, the challenges and suggestions for future research on the application of graphene-based nanocomposite electrochemical sensors for nitrite detection are also highlighted.

Abstract
Ionic liquids (ILs) are a class of fluids with unique physicochemical properties employing polymeric substances emerging new materials. Solidification of ILs into porous materials generates porous ionic liquid polymers that combine the unique characteristics of ILs with common porous materials and polymers. In this study, it's the first time the porous ionic liquid polymer was chosen as a sorbent for extraction and speciation of nitrite and nitrate. Porous IL was prepared through polymerization of 1-allyl-3-methylimidazolium bromide monomers in the presence of azobisisobutyronitrile (AIBN) and crosslinking of ethylene glycol dimethyl acrylate (EGDMA). Parameters affecting the adsorbent performance were optimized. Under the optimal conditions, correlation coefficient (R2) was 0.9996 and LOD was 0.1 µg L-1. This method presented the linearity in the concentration range between 0.1-100 µg L-1 and the relative standard deviation was 3.2%. Finally, the adsorption behavior of the obtained sorbent for nitrate and nitrite determination in various real samples was evaluated. The result indicates that the porous ionic liquid polymer showed high adsorption capacity (233 mg g-1). The convenient preparation of the porous ionic liquid material, as well as high adsorption capacity for anionic pollutants predicted its broad application potential in anion removal materials.

Abstract
The successful integration of sample pretreatment stages, sensors, actuators and electronics in microfluidic devices enables the attainment of complete micro total analysis systems, also known as lab-on-a-chip devices. In this work, we present a novel monolithic autonomous microanalyzer that integrates microfluidics, electronics, a highly sensitive photometric detection system and a sample pretreatment stage consisting on an embedded microcolumn, all in the same device, for on-line determination of relevant environmental parameters. The microcolumn can be filled/emptied with any resin or powder substrate whenever required, paving the way for its application to several analytical processes: separation, pre-concentration or ionic-exchange. To promote its autonomous operation, avoiding issues caused by bubbles in photometric detection systems, an efficient monolithic bubble removal structure was also integrated. To demonstrate its feasibility, the microanalyzer was successfully used to determine nitrate and nitrite in continuous flow conditions, providing real time and continuous information.
