Abstract
Significant volumes of agricultural and industrial waste are produced annually. With the global focus shifting towards sustainable and environmentally friendly practices, there is growing emphasis on recycling and utilizing materials derived from such waste, such as cellulose and lignin. In response to this imperative situation, nanocellulose materials have surfaced attracting heightened attention and research interest owing to their superior properties in terms of strength, stiffness, biodegradability, and water resistance. The current manuscript provided a comprehensive review encompassing the resources of nanocellulose, detailed pretreatment and extraction methods, and present applications of nanocellulose. More importantly, it highlighted the challenges related to its processing and utilization, along with potential solutions. After evaluating the benefits and drawbacks of different methods for producing nanocellulose, ultrasound combined with acid hydrolysis emerges as the most promising approach for large-scale production. While nanocellulose has established applications in water treatment, its potential within the food industry appears even more encouraging. Despite the numerous potential applications across various sectors, challenges persist regarding its modification, characterization, industrial-scale manufacturing, and regulatory policies. Overcoming these obstacles requires the development of new technologies and assessment tools aligned with policy. In essence, nanocellulose presents itself as an eco-friendly material with extensive application possibilities, prompting the need for additional research into its extraction, application suitability, and performance enhancement. This review focused on the wide application scenarios of nanocellulose, the challenges of nanocellulose application, and the possible solutions.

Abstract
The influence of storage stability and simulated gastrointestinal behavior of different extracts of guava leaves extracts (NC: not concentrated, and C10 and C20: concentrated by nanofiltration) was evaluated based on their total phenolic compound (TPC) contents and antioxidant activity as well as on their cytotoxic effects on A549 and Vero cells. The results showed that C10 and C20 presented high stability for 125 days probably due to their high TPC contents and antioxidant activity. The simulated gastrointestinal behavior modified their TPC contents; however, after all digestion steps, the TPC values were higher than 70%, which means that they were still available to exert their bioactivities. Additionally, the cytotoxic effects of these extracts were evaluated before and after the simulated gastrointestinal behavior or under different storage conditions. C10 presented the best selectivity indices (SI) values (IC50 Vero cells/IC50 A549 cells) at both conditions suggesting that it can be considered a potential extract to be developed as a functional food due to its resistance to the gastrointestinal digestion and storage conditions tested.

Abstract
Biopolymer-based films can be activated by the incorporation of active compounds into their matrix. Plant extracts are rich in phenolic compounds, which have antimicrobial and/or antioxidant properties. The aim of this study was to produce gelatin-based active films and nanocomposite films incorporated with "pitanga" (Eugenia uniflora L.) leaf extract (PLE) and/or crystalline nanocellulose extracted from soybean straw (CN), and to study the physicochemical, functional, microstructural, thermal, UV/Vis light barrier, and antioxidant properties of these materials. PLE enhanced some film properties, such as tensile strength (from 30.2 MPa to 40.6 MPa), elastic modulus (from 9.3 MPa to 11.3 MPa), the UV/Vis light barrier, and antioxidant activity, in addition to affecting the microstructural, surface, and color properties. These improvements were even more significant in nanocomposites simultaneously containing PLE and CN (59.5 MPa for tensile strength and 15.1 MPa for elastic modulus), and these composites also had lower moisture content (12.2% compared to 13.5-14.4% for other treatments) and solubility in water (from 48.9% to 44.1%). These improvements may be the result of interactions that occur between PLE's polyphenols and gelatin, mainly in the presence of CN, probably due to the formation of a stable PLE-CN-gelatin complex. These results are relevant for the food packaging sector, as the activated nanocomposite films exhibited enhanced active, barrier, and mechanical properties due to the presence of PLE and CN, in addition to being entirely produced with sustainable components from natural and renewable sources.

Abstract
In this study, we aimed to develop a blended beverage enriched with curcumin. The curcumin was incorporated within a Pickering nanoemulsion that was stabilized with nanocellulose. The nanocellulose was synthesized from coconut milk waste residue using 38 %-42 % sulfuric acid (AC) and 5 and 10 min ultrasound (UL) separately and in combination (ACU). While combined treatment showed an increase in particle size with ultrasonication time, PDI was observed to decrease. ACU with 10 min ultrasonication was further used at 0.05 %, 0.1 %, 0.2 %, and 0.3 % for stabilization of curcumin enriched Pickering nanoemulsion. The curcumin in Pickering nanoemulsion fabricated with 0.1 % of nanocellulose with an average particle size and PDI value of 259.6 nm and 0.284, respectively was found to be the most stable as compared to other Pickering nanoemulsions at different pH levels and temperatures. RP-HPLC analysis revealed that with 0.1 % of nanocellulose, the Pickering nanoemulsion was most stable at 2 pH and 63 °C temperatures. The in vitro release of curcumin from Pickering nanoemulsion added to a blended beverage in intestinal phase was 51.58 %, which was higher than the stomach phase (38.19 %). The outcomes clearly showed Pickering nanoemulsion to be a promising carrier for curcumin encapsulation in beverage.

Abstract
Emulsion-based foods are widely consumed, and their characteristics involving colloidal and oxidative stabilities should be considered. The fabrication of the interfaces by selecting the emulsifier may improve stability and trigger lipolysis, thereby reducing energy uptake from the emulsified food. The present work aimed to develop Okara cellulose crystals (OCs) as a multifunction emulsifier to preserve the physical and chemical stability of a Pickering emulsion via surface modification with phenolic acids. The modification of OC was performed by grafting with the selected phenolics to produce OC-gallic acid (OC-G) and OC-tannic acid (OC-T) complexes. There was a higher phenolic loading efficiency when the OC reacted with gallic acid (ca. 70%) than with tannic acid (ca. 50%). This trend was concomitant with better antioxidant activity of the OC-G than OC-T. Surface modification based on grafting with phenolic acids improved capability of the OC to enhance both the colloidal and oxidative stability of the emulsion. In addition, the cellulosic materials had a retardation effect on the in vitro lipolysis compared to a protein-stabilized emulsion. Surface modification by grafting with phenolic acids successfully provided OC as an innovative emulsifier to promote physico-chemical stability and lower lipolysis of the emulsion.

Abstract
Non-cytotoxic, highly crystalline, and functionalized, thermally stable cellulose nanocrystals are extracted from the stems of Elettaria cardamom, a novel underutilised agromass, by employing a neat green, mild oxalic acid hydrolysis. The protocol involves a chemo-mechanical strategy of coupling hydrolysis with steam explosion and homogenization. The obtained CNC showed a crystallinity index of 81.51 %, an aspect ratio of 17.80 ± 1.03 and a high degradation temperature of about 339.07 °C. The extraction procedure imparted a high negative surface functionalization with a zeta potential value of -34.244 ± 0.496 mV and a polydispersity of 16.5 %. The CNC had no antibacterial activity, according to non-cytotoxic experiments conducted on four bacterial strains. This supports the notion of "One Health" in the context of AMR by demonstrating the safety of antibiotic resistance due to consistent exposure upon environmental disposal. The as-extracted nanocellulose crystals can be a potential candidate for commercial application in wide and diversified disciplines like food packaging, anti-infective surfaces for medical devices, biosensors, bioelectronics etc.

Abstract
Bananas are among the most produced and consumed fruit all over the world. However, a vast amount of banana biomass is generated because banana trees bear fruit only once in their lifetime. This massive amount of biomass waste is either disposed of in agricultural fields, combusted, or dumped at plantations, thus posing environmental concerns. Nanocellulose (NC) extraction from this source can be one approach to improve the value of banana biomass. Owing to its superb properties, such as high surface area and aspect ratio, good tensile strength, and high thermal stability, this has facilitated nanocellulose application in the food industry either as a functional ingredient, an additive or in food packaging. In this review, two different applications of banana biomass NC were identified: (i) food packaging and (ii) food stabilizers. Relevant publications were reviewed, focusing on the nanocellulose extraction from several banana biomass applications as food additives, as well as on the safety and regulatory aspects. Ultimately, further research is required to prompt a perspicuous conclusion about banana biomass NC safety, its potential hazards in food applications, as well as its validated standards for future commercialization.

Abstract
The Andean blueberry (Vaccinium meridionale Sw) is an underutilized wild fruit native to South America. It is known for its antioxidant properties and potential health benefits. In this study, Andean blueberry juice powders were produced via spray drying, using maltodextrin (MD), gum Arabic (GA) or a combination of both (MD:GA) as wall materials. The spray-dried juices were analyzed for the recovery percentage of total polyphenols and monomeric anthocyanins, as well as for their physicochemical and technological properties. Results showed that the type of carrier agent used caused statistically significant differences in the bioactive content and the antioxidant activity of the powders (p < 0.05). It was found that the MD samples has the highest monomeric anthocyanins content (0.88 ± 0.02 mg cyanidin 3-glucoside equivalents/g) and the highest anthocyanins recovery (96.3 ± 1.7%), while the MD:GA powders showed the highest values of total polyphenol content (5.70 ± 0.09 mg gallic acid equivalents/g), DPPH scavenging capacity (2.49 ± 0.02 mg gallic acid equivalents/g) and phenolics recovery (87.2 ± 1.1%). Furthermore, all the spray-dried powders exhibited low moisture content (<5.5%) and water activity (<0.40), as well as high solubility in water (>94%) and good flowability. Future prospects include evaluating the stability of the Andean blueberry juice powders during storage and exploring the formulation of new foods and beverages that incorporate these spray-dried powders.

Abstract
This study investigated the effect of different storage temperatures (35-55 °C) on the bioactive substances and antioxidant properties of Hyeronima macrocarpa berries loaded on nanocellulose. NC was extracted from banana pseudo-stems and presented an interesting surface and porosity properties. The acidified ethanol extract showed better anthocyanin extraction (1317 mg C3G eq./100 g FW) and was used for the preparation of the powdered product, which presented an intense and uniform magenta color, with CIELAB parameters of L* = 59.16, a* = 35.61, and b* = 7.08. The powder exhibited significant stability at storage temperatures of 35 and 45 °C, in which there was no significant loss of anthocyanins or a decrease in antioxidant capacity. In addition, the color was stable for up to 4 months without adding any preservative agent. The anthocyanin-rich extract of H. macrocarpa reached an estimated shelf-life of 315 days (stored at 35 °C), as a result of the impregnation process between the extract and NC, with the ability to protect the bioactives from degradation, due to NC surface properties.

Abstract
Anthocyanins are polyphenolic plant pigments associated with antioxidant and health-promoting properties. However, their application in the food industry is limited due to their poor stability. The purpose of this study was to encapsulate anthocyanin-rich bilberry (Vaccinium myrtillus L.) extract by freeze-drying and to investigate the effects of different wall materials and extract contents on the physicochemical and bioactive properties of the obtained encapsulates. Ethanolic bilberry extract was encapsulated with the use of maltodextrin (16.5–19.5 DE) (MD), gum Arabic (GA), and their combination in a 1:1 w/w ratio (MIX). Bilberry solids to wall material ratios were examined at 20:80, 30:70, and 40:60. All encapsulates showed an attractive red colour and low water activity values (aw ≤ 0.3) that indicated a low risk of microbial spoilage. In general, the biggest losses of total phenolic compounds and anthocyanins during three-week storage in the dark and at room temperature (20 ± 2 °C) were detected in the case of encapsulates with a higher content of bilberry extract (MIX30 and MIX40, and GA30 and GA40, respectively). The use of maltodextrin provided the best protection to bilberry anthocyanins during forced storage. Overall, the obtained encapsulates show suitable potential for the development of food products with added nutritional benefits.

Abstract
A novel biopreservative was developed by immobilizing phlorotannins into nanochitin (NCh). NCh were selected as a host complex to immobilized phlorotannins and the structural properties and antioxidant activity of the NCh-phlorotannins nanocomplex was investigated. The NCh-phlorotannins showed high antioxidant activity, as evidenced by free radical scavenging activity test. Moreover, the effects of NCh-phlorotannins on physical [color, water holding capacity (WHC), and texture], chemical [thiobarbituric acid (TBA) values, total volatile base nitrogen (TVB-N), and pH], microbiological [total viable count], changes of refrigerated sea bass (Lateolabrax japonicus) fillets were also evaluated. Sea bass fillets add with 1.5 g/kg NCh-phlorotannins had lower bacterial growth, pH, TVB-N and TBA as well as better characteristics of texture, color, and WHC than those of the control group during refrigerated storage. The efficiency of NCh-phlorotannins treatment was also better than that of phlorotannins or NCh treatment alone. Therefore, NCh-phlorotannins may be a potential biopreservative to extend the shelf-life of sea bass fillets quality during refrigerated storage.

Abstract
The large-scale industrial use of polysaccharides to obtain energy is one of the most discussed subjects in science. However, modern concepts of biorefinery have promoted the diversification of the use of these polymers in several bioproducts incorporating concepts of sustainability and the circular economy. This work summarizes the major sources of agro-industrial residues, physico-chemical properties, and recent application trends of cellulose, chitin, hyaluronic acid, inulin, and pectin. These macromolecules were selected due to their industrial importance and valuable functional and biological applications that have aroused market interests, such as for the production of medicines, cosmetics, and sustainable packaging. Estimations of global industrial residue production based on major crop data from the United States Department of Agriculture were performed for cellulose content from maize, rice, and wheat, showing that these residues may contain up to 18%, 44%, and 35% of cellulose and 45%, 22%, and 22% of hemicellulose, respectively. The United States (~32%), China (~20%), and the European Union (~18%) are the main countries producing cellulose and hemicellulose-rich residues from maize, rice, and wheat crops, respectively. Pectin and inulin are commonly obtained from fruit (~30%) and vegetable (~28%) residues, while chitin and hyaluronic acid are primarily found in animal waste, e.g., seafood (~3%) and poultry (~4%).

Abstract
The isolation of nanocellulose from different agricultural residues is becoming an important research field due to its versatile applications. This work collects different production processes, including conditioning steps, pretreatments, bleaching processes and finally purification for the production of nanocellulose in its main types of morphologies: cellulose nanofiber (CNF) and cellulose nanocrystal (CNC). This review highlights the importance of agricultural wastes in the production of nanocellulose in order to reduce environmental impact, use of fossil resources, guarantee sustainable economic growth and close the circle of resource use. Finally, the possible applications of the nanocellulose obtained as a new source of raw material in various industrial fields are discussed.

Abstract
Cellulose Nanocrystals, CNC, opportunely functionalized are proposed as reactive fillers in bio-based flexible polyurethane foams to improve, mainly, their mechanical properties. To overcome the cellulose hydrophilicity, CNC was functionalized on its surface by linking covalently a suitable bio-based polyol to obtain a grafted-CNC. The polyols grafted with CNC will react with the isocyanate in the preparation of the polyurethane foams. An attractive way to introduce functionalities on cellulose surfaces in aqueous media is silane chemistry by using functional trialkoxy silanes, X-Si (OR)3. Here, we report the synthesis of CNC-grafted-biopolyol to be used as a successful reactive filler in bio-based polyurethane foams, PUFs. The alkyl silanes were used as efficient coupling agents for the grafting of CNC and bio-polyols. Four strategies to obtain CNC-grafted-polyol were fine-tuned to use CNC as an active filler in PUFs. The effective grafting of the bio polyol on CNC was evaluated by FTIR analysis, and the amount of grafted polyol by thermogravimetric analysis. Finally, the morphological, thermal and mechanical properties and hydrophobicity of filled PUFs were thoughtfully assessed as well as the structure of the foams and, in particular, of the edges and walls of the cell foams by means of the Gibson-Ashby model. Improved thermal stability and mechanical properties of PU foams containing CNC-functionalized-polyol are observed. The morphology of the PU foams is also influenced by the functionalization of the CNC.

Abstract
Andean blueberry (Vaccinium meridionale Swartz) fruits are an underutilized source of anthocyanins and other valuable bioactive phytochemicals. The purpose of this work was to obtain Andean blueberry juice powders via freeze-drying processing and evaluate the effect of maltodextrin as a drying aid on their physicochemical, technological, microstructural, and bioactive characteristics. Andean blueberry juices were mixed with variable proportions of maltodextrin (20–50%); freeze-dried; and characterized in terms of their tristimulus color, Fourier transform infrared spectra (FTIR), moisture content, water activity, morphology, water solubility, flow properties, total polyphenols and anthocyanins content, and DPPH•-scavenging capacity. The powders obtained presented suitable characteristics in terms of their water activity (<0.5), solubility (>90%), and bioactive compound recovery (>70% for total phenolics, and >60% for total monomeric anthocyanins), with antioxidant activities up to 4 mg equivalent of gallic acid/g of dry matter. Although an increased content of maltodextrin resulted in lower concentrations of phytochemicals, as expected, it also favored an increased % recovery (over 90% of total phenolics at the highest maltodextrin proportion) and improved their flow properties. Freeze-dried juice powders are a potential alternative for the stabilization and value addition of this fruit as a new source of functionality for processed foods.

Abstract
The ultrasonic-assisted extraction of total polyphenol from Allium senescens L. (ASL) seeds was conducted, and the antioxidant efficacy of ASL seed extract (ASLSE) was assessed in Harbin dry sausages. ASLSE extracted with 1:30 g/mL water at 150 W for 15 min had the highest antioxidant capacities (P < 0.05). Subsequently, different addition levels (0, 2, 4, 6 and 8 g/kg) of freeze-dried ASLSE were applied in dry sausages during a twelve-day fermentation, and BHT treatment was the positive control. The lower pH values and carbonyl contents were detected in the treatments with 6 and 8 g/kg ASLSE than those in the other treatments at 12 d (P < 0.05). However, there was no difference in the water activity, lipid oxidation and color among the treatments with 6 and 8 g/kg ASLSE and 0.2 g/kg BHT (P > 0.05) at 12 d. These results indicated that 6 g/kg ASLSE could be effective in inhibiting lipid and protein oxidation and reducing color deterioration of dry sausages.

Abstract
The objective of this study was to determine the best operational conditions for obtaining red propolis extract with high antioxidant potential through supercritical fluid extraction (SFE) technology, using carbon dioxide (CO2) as the supercritical fluid and ethanol as the cosolvent. The following parameters were studied: overall extraction curve, S/F (mass of CO2/mass of sample), cosolvent percentage (0, 1, 2 and 4%) and global yield isotherms as a function of different pressures (250, 350 and 450 bar) and temperatures (31.7, 40 and 50 °C). Within the investigated parameters, the best conditions found were an S/F of 131 and the use of ethanol at the highest concentration (4% w/w), which resulted in higher extract yields and higher content of antioxidant compounds. Formononetin, the main biomarker of red propolis, was the compound found at the highest amounts in the extracts. As expected, the temperature and pressure conditions also influenced the process yield, with 350 bar and 40 °C being the best conditions for obtaining bioactive compounds from a sample of red propolis. The novel results for red propolis found in this study show that it is possible to obtain extracts with high antioxidant potential using a clean technology under the defined conditions.

The mechanical performance in the
wet state needs to be significantly
improved and the intrinsic functionalities should be fully utilized
to promote the replacement of fossil-based plastics with renewable
biobased materials. We demonstrate a leather-inspired approach to
produce multifunctional materials with a high wet strength that is
based on tannin-induced precipitation of gelatin grafted onto surface-modified
cellulose nanofibrils (CNF). The leather-inspired CNF-based films
had a wet tensile strength of 33 MPa, a Young’s modulus of
310 MPa, and a strain at failure of 22%, making the wet materials
stronger than, for example, dry conventional low-density polyethylene
and more ductile than paper-based food packaging materials. The tannin-containing
films displayed excellent antioxidant and UV-blocking properties,
rapidly scavenging more than 90% of added free radicals and absorbing
100% of light in the UV-B/UV-C range. This work illustrates the prospect
of combining renewable materials in a leather-inspired approach to
form wet strong and multifunctional films with potential application
in food packaging.
