Abstract
This study aimed to develop a product that closely replicates the texture and appearance of tripe. The effect of three different proteins (soy protein isolate (SPI), pea protein isolate (PPI), and whey protein isolate (WPI)) at different protein levels and processing conditions (heating (90 °C, 1 h) followed by cooling (4 °C, 12 h) and heating (90 °C, 1h) followed by freezing (-18 °C, 12 h)) of konjac glucomannan (KGM) was analyzed. The optimal formulations for simulating tripe were screened by examining their similarity to real tripe in terms of texture, color, and sensory experience. The screened formulations were also subjected to a preliminary mechanistic investigation. The results show that all three proteins improved the gel's textural properties to varying degrees. At the same concentration, the hardness and chewiness of the KGM/WPI composite gel were significantly higher than those of the other two KGM/protein composite gels, among which the composite gel obtained by adding 8% WPI and 5% KGM heating-frozen (FWK4) had the greatest hardness and chewiness of 4338.07 g and 2313.76, respectively, and the springiness differences in all of the composite gels were small. In addition, the addition of protein increased the whiteness of the hybrid gels, with WPI having the most significant effect on the whiteness of the composite gels (whiteness increased from 30.25 to 62.80 as the concentration of WPI increased from 0 to 10%). Freezing increased composite gel hardness and chewiness, but reduced gel springiness and whiteness. Cluster analysis showed that the composite gel obtained by heating-cooling 8% WPI and 5% KGM (WK4) was very similar to the real tripe in terms of chewiness and whiteness, and WK4 had the highest sensory scores for color, tissue morphology, tactile sensation, taste, and odor. The acceptability score in terms of tissue morphology reached 4.3. Meanwhile, the characterization results of WK4 indicate the presence of large junction areas in the gel network. Fourier transform infrared spectroscopy (FTIR) analysis, X-ray diffraction, and intermolecular force contributions indicated that the incorporation of WPI promoted integral interactions, and that hydrophobic interactions and disulfide bonding played a key role in the WK4 composite gel system. Moreover, scanning electron microscopy (SEM) also showed that the combination of WPI and konjac glucan resulted in a more compact gel structure. This study is informative for the development of the field of bionic tripe processing.

Abstract
Superhydrophilic/underwater superoleophobic materials for the separation of oil-water emulsions by filtration have received much attention in order to solve the pollution problem of oil-water emulsion. In this paper, a fence-like structure on the surface of CNF/KGM (Konjac Glucomannan) materials by a simple method using CNF instead of metal nanowires was successfully developed based on the hydrogen bonding of KGM and CNF. The resulted organic CNF/KGM materials surface has outstanding superhydrophilic (WCA = 0°) in air and superoleophobicity (OCA≥151°) in water, which could separate oil-water mixtures with high separation efficiency above 99.14 % under the pressure of the emulsion itself. The material shows good mechanical properties because of the addition of CNF and has outstanding anti-fouling property and reusability. More importantly, the material can be completely biodegraded after buried in soil for 4 weeks since both of KGM and CNF are organic substances. Therefore, it may have a broad application prospect in the separation of oil-water emulsion because of its outstanding separation properties, simply preparation method and biodegradability.

Abstract
The physicochemical properties of dietary fiber in the gastrointestinal tract, such as hydration properties, adsorption properties, rheological properties, have an important influence on the physiological process of host digestion and absorption, leading to the differences in satiety and glucose and lipid metabolisms. Based on the diversified physicochemical properties of konjac glucomannan (KGM), it is meaningful to review the relationship of structural characteristics, physicochemical properties and glycose and lipid metabolism. Firstly, this paper bypassed the category of intestinal microbes, and explained the potential of dietary fiber in regulating glucose and lipid metabolism during nutrient digestion and absorption from the perspective of colloidal nutrition. Secondly, the modification methods of KGM to regulate its physicochemical properties were discussed and the relationship between KGM's molecular structure types and glycose and lipid metabolism were summarized. Finally, based on the characteristics of KGM, the application of KGM in the main material and ingredients of fat reduction food was reviewed. We hope this work could provide theoretical basis for the study of dietary fiber colloid nutrition science.

Abstract
A new form of konjac fiber was successfully prepared, and it could instantaneously expand when in contact with the digestive fluid. The expanded konjac fiber could inhibit the digestion of the ingested food by competing with the substrate for digestive enzymes and space. The konjac fiber with desirable physical properties was obtained at 4 different freezing temperatures (-20 °C, -40 °C, -80 °C, and -196 °C), and the digestion regulation mechanisms of these fibers were systematically explored. The results showed that the konjac fiber prepared at -20 °C displayed an outstanding performance in delaying gastric emptying and preventing intestinal starch hydrolysis, while the fiber prepared under liquid nitrogen conditions (-196 °C) showed the weakest digestion regulation ability. However, the digestion regulation ability of this novel fiber was highly related to the food rheological property, and it exhibited a stronger interference effect on high-viscosity food. Our novel konjac fibers exhibited a great digestion regulation potential. Our findings provide valuable references for the development of dietary fiber-based satiety-enhancing functional foods.

Abstract
Hydrogel exhibits attractive mechanical properties that can be regulated to be extremely tough, strong and resilient, adhesive and fatigue-resistant, thus enabling diverse applications ranging from tissue engineering scaffolds, flexible devices, to soft machines. As a liquid-filled porous material composed of polymer networks and water, the hydrogel freezes at subzero temperatures into a new material composed of polymer matrix and ice inclusions: the frozen hydrogel displays dramatically altered mechanical properties, which can significantly affect its safety and reliability in practical applications. In this study, based upon the theory of homogenization, we predicted the effective mechanical properties (e.g., Young's modulus, shear modulus, bulk modulus and Poisson ratio) of a frozen hydrogel with periodically distributed longitudinal ice inclusions. We firstly estimated its longitudinal Young's modulus, longitudinal Poisson ratio and plane strain bulk modulus using the self-consistent method, and then its longitudinal and transverse shear modulus using the generalized self-consistent method; further, the results were employed to calculate its transverse Young's modulus and transverse Poisson ratio. We validated the theoretical predictions against both finite element (FE) simulation and experimental measurement results, with good agreement achieved. We found that the estimated transverse Poisson ratio ranges from 0.3 to 0.53 and, at low volume fraction of ice inclusions, exhibits a value larger than 0.5 that exceeds the Poisson ratios of both the polymer matrix and the ice inclusion (typically 0.33-0.35). Compared with other homogenization methods (e.g., the rule of mixtures, the Halpin-Tsai equations, and the Mori-Tanaka method), the present approach is more accurate in predicting the effective mechanical properties (in particular, the transverse Poisson ratio) of frozen hydrogel. Our study provides theoretical support for the practical applications of frozen liquid-saturated porous materials such as hydrogel.

Abstract
Bacterial infection usually represents a threat in medical wound care, due to the increase in treatment complexity and the risk of antibiotic resistance. For presenting interesting characteristics for the use as biomaterial, natural polymers have been explored for this application. Among them, a promising candidate is the konjac glucomannan (KGM) with outstanding biocompatibility and biodegradability but lack of antibacterial activity. In this study, KGM was combined with silver decorated cellulose nanocrystals (CNC-Ag) to prepare membranes by using a recent reported casting-freezing method. The results highlight the potential anti-adhesive activity of the new materials against Staphylococcus aureus upon contact, without the burst release of silver nanoparticles. Furthermore, the incorporation of CNC enhanced the thermal stability of these membranes while preserving the favorable mechanical properties of the KGM-based material. These findings highlight a straightforward approach to enhance the antibacterial properties of natural polymers, which can be effectively useful in medical devices like wound dressings that typically lack such properties.

Abstract
Advanced materials used in the biomedicine field comprises a diverse group of organic molecules, including polymers, polysaccharides, and proteins. A significant trend in this area is the design of new micro/nano gels whose small size, physical stability, biocompatibility, and bioactivity could lead to new applications. Herein a new synthesis route is described to obtain core-shell microgels based on chitosan and Porphyridium exopolysaccharides (EPS) crosslinked with sodium tripolyphosphate (TPP). First, the synthesis of EPS-chitosan gels through ionic interactions was explored, leading to the formation of unstable gels. Alternatively, the use of TTP as crosslinker agent led to stable core-shell structures. The influence of reaction temperature, sonication time, and exopolysaccharide concentration, pH and TPP concentration were determined as a function of particle size and polydispersity index (PDI). The obtained EPS-chitosan gels were characterized by TEM, TGA, and FTIR; followed by the assessment of protein load capacity, stability upon freezing, cytotoxicity, and mucoadhesivity. Experimentation revealed that the core-shell particles size ranges 100-300 nm, have a 52 % loading capacity for BSA and a < 90 % mucoadhesivity, and no toxic effects in mammalian cell cultures. The potential application of the obtained microgels in the biomedical field is discussed.

Abstract
The applications of hydrogels are prominently affected by the modulation of their structure and performance. We herein systematically implemented the modulation of an all-polysaccharide hydrogel consisting of TEMPO-oxidized cellulose nanofibers (TOCN) and cationic guar gum (CGG). Four different factors including the carboxylate content and size of TOCN, the freezing-thawing treatment and solid content of hydrogel were studied to disclose their influence on the structure and property of TOCN/CGG hydrogel. The results indicated that the increase of carboxylate content of TOCN, the number of freezing-thawing cycles and solid content all increased the crosslinking density of hydrogel as a result of the improved interactions. Accordingly, the hydrogels exhibited more compact structures and enhanced rheological properties. The influence of TOCN size on the hydrogel structure and property was demonstrated to be dependent on the compromise between the exposed functional groups of TOCN and their ability in generating entanglements inside the hydrogel. This work helps shed light on the modulation of hydrogel structure and performance, which might facilitate the exploration of hydrogel applications.

Abstract
Konjac glucomannan (KGM) is a natural polysaccharide extracted from konjac tubers that has a topological structure composed of glucose and mannose. KGM can be used as a gel carrier to load active molecules in food preservation. The three-dimensional gel network structure based on KGM provides good protection for the loaded active molecules and allows for sustained release, thus enhancing the antioxidant and antimicrobial activities of these molecules. KGM loaded with various active molecules has been used in aquatic foods preservation, with great potential for different food preservation applications. This review summarizes recent advances in KGM, including: (i) structural characterization, (ii) the formation mechanism, (iii) preparation methods, (iv) functional properties and (v) the preservation of aquatic food.

Abstract
The composite gels of konjac glucomannan (KGM) and corn starch (CS) were prepared and treated by the freeze-thaw method. For KGM-CS gels, as the starch ratio rose from 0 to 100%, storage modulus (G') decreased by 97.7% (from 3875.69 Pa to 87.72 Pa), degradation temperature decreased from 313.32 °C to 293.95 °C, and crystallinity decreased by 16.7%. For F-KGM-CS gels, G' decreased by 99.0% (from 20,568.10 Pa to 204.09 Pa), degradation temperature increased from 289.68 °C to 298.07 °C, and crystallinity decreased by 17.1% with more starch content. The peak in infrared spectroscopy shifted to a higher wavenumber with more starch and to a lower wavenumber by freezing the corresponding composite gels. The detected retrogradation of the composite gels appeared for KGM-CS with 80% starch and F-KGM-CS with 40% starch. The endothermic enthalpy of free water rose by 10.6% and 10.1% with the increase in starch for KGM-CS and F-KGM-CS, respectively. The results of moisture distribution found that bound water migrated to free water and the water-binding capacity reduced with more starch. The results demonstrated that the molecular interaction in composite gels was weakened by starch and strengthened by freezing.

Abstract
In the current study, a method using ethanol to modulate the texture properties of konjac gel during freeze-thaw process was used to prepare konjac emulgel-based fat analogue. A certain amount of ethanol was added to konjac emulsion, heated to form a konjac emulgel, then frozen at −18 °C for 24 h, and finally thawed to obtain konjac emulgel-based fat analogue. The effects of different ethanol contents on the properties of frozen konjac emulgel were explored, and data was analyzed by one-way analysis of variance (ANOVA). The emulgels were compared with pork backfat in terms of hardness, chewiness, tenderness, gel strength, pH, and color. The results showed that the konjac emulgel with 6% ethanol had similar mechanical and physicochemical properties to pork backfat after freeze-thaw treatment. The results of syneresis rate and SEM showed that adding 6% ethanol could not only reduce the syneresis rate, but also effectively weaken the damage to the network structure caused by freeze-thaw treatment. The pH value of konjac emulgel-based fat analogue was between 8.35–8.76, and the L* value was similar to that of pork backfat. The addition of ethanol provided a new idea for the preparation of fat analogues.

Abstract
Freezing has been widely used for long-term food preservation. However, freezing-thawing (FT) treatment usually influences the texture and structure of food gels such as konjac. For their texture control after FT treatment, it is important to clarify the structural change of food gels during the FT process. In this study, we investigated the aggregated structures of konjac glucomannan (GM) gels during the FT process using simultaneous synchrotron small-angle X-ray/wide-angle X-ray scattering (SAXS/WAXS) techniques. The FT treatment resulted in more crystallization of GM, and consequently, a large increase in compressive stress. In-situ SAXS/WAXS measurements revealed the following findings: on freezing, water molecules came out of the aggregated phase of GM and after the thawing, they came back into the aggregated phase, but the aggregated structure did not return to the one before the freezing; the gel network enhanced the inhomogeneity due to the growth of ice crystals during freezing. Furthermore, we examined the influence of additives such as polyvinyl (alcohol) (PVA) and antifreeze glycoprotein (AFGP) on the mechanical and structural properties of freeze-thawed GM gels. Although the addition of PVA and AFGP suppressed the crystallization of GM, it could not prevent the growth of ice crystals and the increase in the inhomogeneity of the gel network. As a result, the compressive stresses for freeze-thawed GM gels containing PVA or AFGP were significantly higher compared with those of GM gels without FT treatments, although they were lower than those of freeze-thawed GM gels. The findings of this study may be useful for not only the texture control of freeze-thawed foods but also the improvement of the mechanical performance of the biomaterials.

Abstract
A prominent research topic in contemporary advanced functional materials science is the production of smart materials based on polymers that may independently adjust their physical and/or chemical characteristics when subjected to external stimuli. Smart hydrogels based on poly(N-isopropylacrylamide) (PNIPAM) demonstrate distinct thermoresponsive features close to a lower critical solution temperature (LCST) that enhance their capability in various biomedical applications such as drug delivery, tissue engineering, and wound dressings. Nevertheless, they have intrinsic shortcomings such as poor mechanical properties, limited loading capacity of actives, and poor biodegradability. Formulation of PNIPAM with diverse functional constituents to develop hydrogel composites is an efficient scheme to overcome these defects, which can significantly help for practicable application. This review reports on the latest developments in functional PNIPAM-based smart hydrogels for various biomedical applications. The first section describes the properties of PNIPAM-based hydrogels, followed by potential applications in diverse fields. Ultimately, this review summarizes the challenges and opportunities in this emerging area of research and development concerning this fascinating polymer-based system deep-rooted in chemistry and material science.

Abstract
This study investigated the effect of ultrasound and enzymatic cross-linking on the freeze-thaw (FT) stability and release properties of whey protein isolate hydrogels. We evaluated the FT stability by the changes in the microstructure, riboflavin retention, syneresis, water holding capacity (WHC), and texture of gels subjected to 3 FT cycles. High-intensity ultrasound (HUS) and transglutaminase (TGase)-mediated cross-linking improved the FT stability of whey protein isolate hydrogels loaded with riboflavin (WPISAR), as demonstrated by a more uniform and denser porous structure, significantly higher riboflavin retention, WHC, and textural properties, and lower syneresis after 3 FT cycles than those of untreated hydrogels. Furthermore, HUS- and TGase-mediated cross-linking decreased protein erosion and swelling ratio of WPISAR in simulated gastrointestinal fluids (SGIF) and reduced the riboflavin release rate in SGIF both with and without the addition of digestive enzymes. After 3 FT cycles, faster riboflavin release occurred due to a more porous structure induced by ice crystal formation compared with their unfrozen counterparts as detected by confocal laser scanning microscopy. High-intensity ultrasound- and TGase-mediated cross-linking alleviated the FT-induced faster riboflavin release rate in SGIF. High-intensity ultrasound- and TGase-treated gel samples showed that both diffusion and network erosion were responsible for riboflavin release regardless of FT. These results suggest that HUS- and TGase-mediated cross-linking improved the FT stability of WPISAR with a high riboflavin retention, and might be a good candidate as a controlled-release vehicle for riboflavin delivery to overcome undesired FT processing.

Abstract
Maintaining a moist and sterile environment is conducive to accelerating wound healing. To develop a natural wound dressing with good water retention capacity and antibacterial activity, we prepared a novel natural multifunctional hydrogel for infected wound healing, which combines the advantages of Aloe polysaccharide (AP) and honey. AP was extracted from Aloe barbadensis, and its structure was characterized by fourier transform infra-red (FT-IR) spectoscopy and nuclear magnetic resonance (NMR) spectroscopy. AP is an acetylated mannan composed of (1 → 4)β-Manp, which is acetylated at C-2, C-3 and C-6 positions. AP/Honey@PVA hydrogel was prepared by cross-linking AP, honey, PVA with borax, which has good mechanical strength and excellent biocompatibility for blood cells, NIH-3T3 cells and L929 cells. The hydrogels showed significant inhibitory effect on Staphylococcus aureus, Escherichia coli and Candida albicans, as well as accelerated the healing of infected full-thickness wound. This study reveals the structure of AP and proves that AP and honey composite hydrogel has potential application prospect in the therapy of infected wounds.

Abstract
Wounds have become one of the causes of death worldwide. The metabolic disorder of the wound microenvironment can lead to a series of serious symptoms, especially chronic wounds that bring great pain to patients, and there is currently no effective and widely used wound dressing. Therefore, it is important to develop new multifunctional wound dressings. Hydrogel is an ideal dressing candidate because of its 3D structure, good permeability, excellent biocompatibility, and ability to provide a moist environment for wound repair, which overcomes the shortcomings of traditional dressings. This article first briefly introduces the skin wound healing process, then the preparation methods of hydrogel dressings and the characteristics of hydrogel wound dressings made of natural biomaterials and synthetic materials are introduced. Finally, the development prospects and challenges of hydrogel wound dressings are discussed.

Abstract
Due to the wonderful property of hydrogels, they can provide a platform for a wide range of applications. Recently, there is a growing research interest in the development of potential hydrogel adsorbents in wastewater treatment due to their adsorption ability toward aqueous pollutants. It is important to prepare such a hydrogel that possesses appropriate robustness, adsorption capacity, and adsorption efficiency to meet the need of water treatment. In order to improve the property of hydrogels, much effort has been made by researchers to modify hydrogels, among which incorporating inorganic components into the polymeric networks is the most common method, which can reduce the product cost and simplify the preparation procedure. Not only can hydrogel be applied as adsorbent, but it also can be used as matrix for catalyst immobilization. In this review, the key advancement on the preparation and modification of hydrogels is discussed, with special emphasis on the introduction of inorganic materials into polymeric networks and consequential changes in the properties of mechanical strength, swelling, and adsorption. Besides, hydrogels used as adsorbents for removal of dyes and inorganic pollutants have been widely explored, but their use for adsorbing emerging contaminants from aqueous solution has not received much attention. Thus, this review is mainly focused on hydrogels' application in removing emerging contaminants by adsorption. Furthermore, hydrogels can be also applied in immobilizing catalysts, such as enzyme and photocatalyst, to remove pollutants completely and avoid secondary pollution, so their progress as catalyst matrix is overviewed.

Abstract
The effect of freezing combined with alkali treatment on physicochemical property of konjac glucomannan (KGM) with different molecular weight was investigated in this work. The properties and structure of degraded KGM was characterized by means of intrinsic viscosity measurement, atomic force microscope (AFM) and Fourier transformation infrared (FT-IR). The results suggested that the intrinsic viscosity of KGM solution gradually decreased during the ultrasonic treatment. The AFM observation indicated that KGM with lower viscosity average molecular weight had smaller height and lateral diameter of molecules. The main repeating units of the KGM chain could not be destroyed no matter how long the KGM was sonicated. Rheometrical studies revealed that with increasing alkali concentration from 0% to 0.36%, both viscosities and shear stress of deacetylated konjac glucomannan (Da-KGM) system were increased and moduli G' were substantially higher in either freezing or unfreezing samples. Da-KGM system performed a solid-like behavior (G' > G'') along the frequency range after freezing treatment. With increasing sonication time, both viscosity and shear stress of unfreezing samples were decreased while had an inverse effect for freezing treated samples. The modulus G' and G'' declined for unfreezing samples but rise significantly for freezing treated samples with increase of sonication time.
