Abstract
Emulsions are thermodynamically unstable systems that tend to separate into two immiscible phases over time. The interfacial layer formed by the emulsifiers adsorbed at the oil-water interface plays an important role in the emulsion stability. The interfacial layer properties of emulsion droplets have been considered the cutting-in points that influence emulsion stability, a traditional motif of physical chemistry and colloid chemistry of particular significance in relation to the food science and technology sector. Although many attempts have shown that high interfacial viscoelasticity may contribute to long-term emulsion stability, a universal relationship for all cases between the interfacial layer features at the microscopic scale and the bulk physical stability of the emulsion at the macroscopic scale remains to be established. Not only that, but integrating the cognition from different scales of emulsions and establishing a unified single model to fill the gap in awareness between scales also remain challenging. In this review, we present a comprehensive overview of recent progress in the general science of emulsion stability with a peculiar focus on interfacial layer characteristics in relation to the formation and stabilization of food emulsions, where the natural origin and edible safety of emulsifiers and stabilizers are highly requested. This review begins with a general overview of the construction and destruction of interfacial layers in emulsions to highlight the most important physicochemical characteristics of interfacial layers (formation kinetics, surface load, interactions among adsorbed emulsifiers, thickness and structure, and shear and dilatational rheology), and their roles in controlling emulsion stability. Subsequently, the structural effects of a series of typically dietary emulsifiers (small-molecule surfactants,proteins, polysaccharides, protein-polysaccharide complexes, and particles) on oil-water interfaces in food emulsions are emphasized. Finally, the main protocols developed for modifying the structural characteristics of adsorbed emulsifiers at multiple scales and improving the stability of emulsions are highlighted. Overall, this paper aims to comprehensively study the literature findings in the past decade and find out the commonality of multi-scale structures of emulsifiers, so as to deeply understand the common characteristics and emulsification stability behaviour of adsorption emulsifiers with different interfacial layer structures. It is difficult to say that there has been significant progress in the underlying principles and technologies in the general science of emulsion stability over the last decade or two. However, the correlation between interfacial layer properties and physical stability of food emulsions promotes revealing the role of interfacial rheological properties in emulsion stability, providing guidance on controlling the bulk properties by tuning the interfacial layer functionality.

The Influence of the Surface Chemistry of Cellulose Nanocrystals on Ethyl Lauroyl Arginate Foam Stability. Polymers (Basel) 2022; 14:polym14245402. Abstract
Guanidine-based surfactant ethyl lauroyl arginate (LAE) and cellulose nanocrystals (CNCs) form complexes of enhanced surface activity when compared to pure surfactants. The LAE-CNC mixtures show enhanced foaming properties. The dynamic thin-film balance technique (DTFB) was used to study the morphology, drainage and rupture of LAE-CNC thin liquid films under constant driving pressure. A total of three concentrations of surfactant and the corresponding mixtures of LAE with sulfated (sCNC) and carboxylated (cCNC) cellulose nanocrystals were studied. The sCNC and cCNC suspension with LAE formed thin films, with stability increasing with surfactant concentration and with complex rheological properties. In the presence of LAE, the aggregation of CNC was observed. While the sCNC aggregates were preferentially present in the film volume with a small fraction at the surface, the cCNC aggregates, due to their higher hydrophobicity, were preferentially located at film interfaces, forming compact layers. The presence of both types of aggregates decreased the stability of the thin liquid film compared to the one for the LAE solution with the same concentration. The addition of CNC to LAE was critical for foam formation, and foam stability was in qualitative agreement with the thin films' lifetimes. The foam volume increased with the LAE concentration. However, there was an optimum surfactant concentration to achieve stable foam. In particular, the very resistant foam was obtained with cCNC suspensions that formed the interfaces with a complex structure and rheology. On the other hand, at high LAE concentrations, the aggregates of CNC may exhibit antifoaming properties.

Abstract
In our previous study (Mustan et al. 2021) we showed that foams formed from two oil-soluble nonionic surfactants (Span 60 and Brij 72) can remain stable for more than 10 days at room temperature at high sugar concentration. The major aim of the current study is to reveal the interrelation between the surfactant structure and foam stability by investigating 6 polyoxyethelene alkyl ethers and 12 fatty acid esters with a wide variety of hydrophobic chain lengths (C12; C16; C18 and C18:1) and hydrophilic head-groups (sorbitol, glycerol, sucrose). Foams stable for more than 100 days at room temperature are obtained when sucrose palmitate or stearate (P1670 or S1670) are used as surfactants. This exceptional foam stability is related to the gelation of the aqueous phase and to the formation of solid adsorption layer with zero surface tension upon compression, thus preventing water drainage and decelerating the bubble Ostwald ripening. The foam stability decreases with (i) increasing the number of EO groups in polyoxyethylene alkyl ethers and in fatty acid sorbitan esters; (ii) decreasing the number of C-atoms in the surfactant tail for all studied surfactants; (iii) addition of double bond in the surfactant tail. The lower foam stability in all three cases is related to the worse packing of the surfactant molecules within the adsorption layer, leading to faster Ostwald ripening and subsequent bubble coalescence. The diesters present as admixture in the fatty acid esters play an important role in the foam stabilization by further compacting the adsorption layers and lowering the rate of Ostwald ripening. These conclusions can be used as a predictive tool for surfactant selection in the development of food or pharmaceutical foam concentrates that can be diluted before final use.

Abstract
We present a series of experiments with droplets of aqueous cyclodextrin-surfactant solutions, in which the volume is reduced after the equilibrium spherical shape is reached. The final shape of the drop after this perturbation is found to be dependent on the concentration of inclusion complexes in the bulk of the solution. These inclusion complexes are formed by two cyclodextrin molecules and one surfactat molecule. We propose a model to describe these dynamical processes. Dipole–dipole interactions on the surface of the drop trigger a competition between water surface tension and dipole–dipole interaction energies. The results of the model reproduce the spherical and rod-like shapes found in the experiments.

Abstract
The saponin escin, extracted from horse chestnut seeds, forms adsorption layers with high viscoelasticity and low gas permeability. Upon deformation, escin adsorption layers often feature surface wrinkles with characteristic wavelength. In previous studies, we investigated the origin of this behavior and found that the substantial surface elasticity of escin layers may be related to a specific combination of short-, medium-, and long-range attractive forces, leading to tight molecular packing in the layers. In the current study, we performed atomistic molecular dynamics simulations of 441 escin molecules in a dense adsorption layer with an area per molecule of 0.49 nm2. We found that the surfactant molecules are less submerged in water and adopt a more upright position when compared to the characteristics determined in our previous simulations with much smaller molecular models. The number of neighbouring molecules and their local orientation, however, remain similar in the different-size models. To maintain their preferred mutual orientation, the escin molecules segregate into well-ordered domains and spontaneously form wrinkled layers. The same specific interactions (H-bonds, dipole-dipole attraction, and intermediate strong attraction) define the complex internal structure and the undulations of the layers. The analysis of the layer properties reveals a characteristic wrinkle wavelength related to the surface lateral dimensions, in qualitative agreement with the phenomenological description of thin elastic sheets.

Abstract
The present article reviews techniques to address central flow assurance and separation issues. It is our purpose to update the need for extended information in order to draw adequate conclusions about the reason for irregularities in production and how this is related to individual components or fractions in the crude oil. Our intention is to show that the mass related analysis (such as SARA, MS etc.) are insufficient for a validation of the early stage predictions concerning irregularities. The review introduces a set of new characterization and fractionation techniques such as interfacial rheology, SANS, and NMR, where the central theme is the functionality of the components and not just their mass. Two crude oil-related issues are addressed: Wax precipitation and deposition, and crude oil/water resolution. First, bulk techniques to characterize wax precipitation are reviewed. The influence of the chemistry of other crude oil components (asphaltenes) and wax inhibitor on the precipitation is highlighted. Secondly, in aqueous systems, interfacial w/o conditions are important for the stability of dispersed systems. Asphaltenes have a crucial and important role in the stability of crude oil emulsions. Here special attention is directed to properties like interfacial viscosity and elasticity as well as the adsorbed layer structure determination. Small molecular changes in these properties will have dramatic influence on the stability of the heterogeneous systems. A good example is inhibitor functionality.

Abstract
HYPOTHESIS Saponins are natural surfactants which can provide highly viscoelastic interfaces. This property can be used to quantify precisely the effect of interfacial dilatational elasticity on the various rheological properties of bulk emulsions. EXPERIMENTS We measured the interfacial dilatational elasticity of adsorption layers from four saponins (Quillaja, Escin, Berry, Tea) adsorbed on hexadecane-water and sunflower oil-water interfaces. In parallel, the rheological properties under steady and oscillatory shear deformations were measured for bulk emulsions, stabilized by the same saponins (oil volume fraction between 75 and 85%). FINDINGS Quillaja saponin and Berry saponin formed solid adsorption layers (shells) on the SFO-water interface. As a consequence, the respective emulsions contained non-spherical drops. For the other systems, the interfacial elasticities varied between 2 mN/m and 500 mN/m. We found that this interfacial elasticity has very significant impact on the emulsion shear elasticity, moderate effect on the dynamic yield stress, and no effect on the viscous stress of the respective steadily sheared emulsions. The last conclusion is not trivial, because the dilatational surface viscoelasticity is known to have strong impact on the viscous stress of steadily sheared foams. Mechanistic explanations of all observed effects are described.

Abstract
Liquid-fluid interfaces provide a platform both for structuring liquids into complex shapes and assembling dimensionally confined, functional nanomaterials. Historically, attention in this area has focused on simple emulsions and foams, in which surface-active materials such as surfactants or colloids stabilize structures against coalescence and alter the mechanical properties of the interface. In recent decades, however, a growing body of work has begun to demonstrate the full potential of the assembly of nanomaterials at liquid-fluid interfaces to generate functionally advanced, biomimetic systems. Here, a broad overview is given, from fundamentals to applications, of the use of liquid-fluid interfaces to generate complex, all-liquid devices with a myriad of potential applications.

Abstract
Hydrophobins are abundant amphipathic proteins produced by fungi. They have been interacting with oils in natural environments for millions of years; therefore, it is sensible to consider them as surfactants and dispersants for cleaning oil spills. To better understand the properties of these amphipathic proteins in seawater, a particular hydrophobin known as cerato-ulmin (CU; mass 7627 g/mol) was studied. CU is adept at forming strong membranes, as indicated by the capacity to stabilize gas-filled bubbles and oil-filled droplets with cylindrical and other nonspherical shapes. The limits of this unusual ability were tested using a wide variety of solvent conditions, including various salt solutions, alcohols, simple hydrocarbons (i.e., cyclohexane, dodecane), acids, and bases. CU concentrations ranged from 20 to 200 μg/mL. The bubbles and other structures made by CU in the presence of various gases span an enormous range of size, from nanometers to millimeters. After larger objects float to the surface, smaller structures remain, and these were found by light scattering to have a hydrodynamic diameter of ∼200 nm.

Abstract
Hydrophobins are a family of small-sized proteins featuring a distinct hydrophobic patch on the protein's surface, rendering them amphiphilic. This particularity allows hydrophobins to self-assemble into monolayers at any hydrophilic/hydrophobic interface. Moreover, stable pure protein bilayers can be created from two interfacial hydrophobin monolayers by contacting either their hydrophobic or their hydrophilic sides. In this study, this is achieved via a microfluidic approach, in which also the bilayers' adhesion energy can be determined. This enables us to study the origin of the adhesion of hydrophobic and hydrophilic core bilayers made from the class II hydrophobins HFBI and HFBII. Using different fluid media in this setup and introducing genetically modified variants of the HFBI molecule, the different force contributions to the adhesion of the bilayer sheets are studied. It was found that in the hydrophilic contact situation, the adhesive interaction was higher than that in the hydrophobic contact situation and could be even enhanced by reducing the contributions of electrostatic interactions. This effect indicates that the van der Waals interaction is the dominant contribution that explains the stability of the observed bilayers.

Abstract
Enhancing oil recovery from currently available reservoirs is a major issue for petroleum companies. Among the possible strategies towards this, chemical flooding through injection of surfactants into the wells seems to be particularly promising, thanks to their ability to reduce oil/water interfacial tension that promotes oil mobilization. Environmental concerns about the use of synthetic surfactants led to a growing interest in their replacement with surfactants of biological origin, such as lipopeptides and glycolipids produced by several microorganisms. Hydrophobins are small amphiphilic proteins produced by filamentous fungi with high surface activity and good emulsification properties, and may represent a novel sustainable tool for this purpose. We report here a thorough study of their stability and emulsifying performance towards a model hydrocarbon mixture, in conditions that mimic those of real oil reservoirs (high salinity and high temperature). Due to the moderate interfacial tension reduction induced in such conditions, the application of hydrophobins in enhanced oil recovery techniques does not appear feasible at the moment, at least in absence of co-surfactants. On the other hand, the obtained results showed the potential of hydrophobins in promoting the formation of a gel-like emulsion ‘barrier’ at the oil/water interface.

Abstract
The coassembly kinetics of graphene oxide (GO) nanosheets and diblock copolymers at the water/toluene interface is probed by tracking the dynamic interfacial tension using pendant drop tensiometry. The diblock copolymer significantly enhances the surfactancy of the GO nanosheets at the interface. It is found that diblock copolymers rapidly adsorb to the water/toluene interface and enhance the adsorption affinity of GO nanosheets to the interface. The continuous adsorption of GO at the interface leads to a random loose packing state, at which the adsorbed GO and diblock copolymers start to form an elastic film. After this transition, GO continues to adsorb to the interface, however, at a much slower speed, yielding a more solidlike elastic film in the long time equilibrium limit.

Abstract
Drop-shape analysis using pendant or sessile drops is a well-established experimental technique for measuring the interfacial or surface tension, and changes thereof. The method relies on deforming a drop by either gravity or buoyancy and fitting the Young-Laplace equation to the drop shape. Alternatively one can prescribe the shape and measure the pressure inside the drop or bubble using pressure tensiometry. However, when an interface with a complex microstructure is present, extra and anisotropic interfacial stresses may develop due to lateral interactions between the surface-active moieties, leading to deviations of the drop shape or even a wrinkling of the interface. To extract surface-material properties of these complex interfaces using drop-shape analysis or pressure tensiometry, the Young-Laplace law needs to be generalized in order to account for the extra and anisotropic stresses at the interface. In the present work, we review the different approaches that have been proposed to date to extract the surface tension as the thermodynamic state variable, as well as other rheological material properties such as the compression and the shear modulus. To evaluate the intrinsic performance of the methods, computer generated drops are subjected to step-area changes and then subjected to analysis using the different methods. Shape-fitting methods, now combined with an adequate constitutive method, do however perform rather poorly in determining the elastic stresses, especially at small area strains. An additional measurement o f the pressure or capillary-pressure tensiometry is required to improve the sensitivity. However, pressure-based methods still require the knowledge of the undeformed reference state, which may be difficult to achieve in practice. Moreover, it is not straightforward to judge from what point onwards one needs to go beyond the Young-Laplace equation. To overcome these limitations, a method based on stress fitting, which uses a local force balance method, is introduced here. One aspect of this new method is the use of the Chebyshev transform to numerically describe the contour shape of the drop interface. For all methods we present a detailed error analysis to evaluate if, and with what precision, surface material parameters can be extracted. Depending on the desired information, different ideal experimental conditions and most suitable methods are discussed, in addition to having a criterion to investigate if extra and anisotropic stresses matter.

Abstract
BslA is a protein secreted by Bacillus subtilis which forms a hydrophobic film that coats the biofilm surface and renders it water-repellent. We have characterised three orthologues of BslA from Bacillus amyloliquefaciens, Bacillus licheniformis and Bacillus pumilus as well as a paralogue from B. subtilis called YweA. We find that the three orthologous proteins can substitute for BslA in B. subtilis and confer a degree of protection, whereas YweA cannot. The degree to which the proteins functionally substitute for native BslA correlates with their in vitro biophysical properties. Our results demonstrate the use of naturally-evolved variants to provide a framework for teasing out the molecular basis of interfacial self-assembly.

Abstract
The high interfacial activity of protein-polymer conjugates has inspired their use as stabilizers for Pickering emulsions, resulting in many interesting applications such as synthesis of templated micro-compartments and protocells or vehicles for drug and gene delivery. In this study we report, for the first time, the stabilization of Pickering emulsions with conjugates of a genetically modified transmembrane protein, ferric hydroxamate uptake protein component A (FhuA). The lysine residues of FhuA with open pore (FhuA ΔCVFtev) were modified to attach an initiator and consequently controlled radical polymerization (CRP) carried out via the grafting-from technique. The resulting conjugates of FhuA ΔCVFtev with poly(N-isopropylacrylamide) (PNIPAAm) and poly((2-dimethylamino)ethyl methacrylate) (PDMAEMA), the so-called building blocks based on transmembrane proteins (BBTP), have been shown to engender larger structures. The properties such as pH-responsivity, temperature-responsivity and interfacial activity of the BBTP were analyzed using UV-Vis spectrophotometry and pendant drop tensiometry. The BBTP were then utilized for the synthesis of highly stable Pickering emulsions, which could remain non-coalesced for well over a month. A new UV-crosslinkable monomer was synthesized and copolymerized with NIPAAm from the protein. The emulsion droplets, upon crosslinking of polymer chains, yielded micro-compartments. Fluorescence microscopy proved that these compartments are of micrometer scale, while cryo-scanning electron microscopy and scanning force microscopy analysis yielded a thickness in the range of 11.1 ± 0.6 to 38.0 ± 18.2 nm for the stabilizing layer of the conjugates. Such micro-compartments would prove to be beneficial in drug delivery applications, owing to the possibility of using the channel of the transmembrane protein as a gate and the smart polymer chains as trigger switches to tune the behavior of the capsules.

Abstract
The general mechanisms of structure and form generation are the keys to understanding the fundamental processes of morphogenesis in living and non-living systems. In our recent study (Denkov et al., Nature 528 (2015) 392) we showed that micrometer sized n-alkane drops, dispersed in aqueous surfactant solutions, can break symmetry upon cooling and "self-shape" into a series of geometric shapes with complex internal structure. This phenomenon is important in two contexts, as it provides: (a) new, highly efficient bottom-up approach for producing particles with complex shapes, and (b) remarkably simple system, from the viewpoint of its chemical composition, which exhibits the basic processes of structure and shape transformations, reminiscent of morphogenesis events in living organisms. In the current study, we show for the first time that drops of other chemical substances, such as long-chain alcohols, triglycerides, alkyl cyclohexanes, and linear alkenes, can also evolve spontaneously into similar non-spherical shapes. We demonstrate that the main factors which control the drop "self-shaping", are the surfactant type and chain length, cooling rate, and initial drop size. The studied surfactants are classified into four distinct groups, with respect to their effect on the "self-shaping" phenomenon. Coherent explanations of the main experimental trends are proposed. The obtained results open new prospects for fundamental and applied research in several fields, as they demonstrate that: (1) very simple chemical systems may show complex structure and shape shifts, similar to those observed in living organisms; (2) the molecular self-assembly in frustrated confinement may result in complex events, governed by the laws of elasto-capillarity and tensegrity; (3) the surfactant type and cooling rate could be used to obtain micro-particles with desired shapes and aspect ratios; and (4) the systems studied serve as a powerful toolbox to investigate systematically these phenomena.

Abstract
Intrinsically interfacially active proteins have garnered considerable interest recently owing to their potential use in a range of materials applications. Notably, the fungal hydrophobins are known to form robust and well-organized surface layers with high mechanical strength. Recently, it was shown that the bacterial biofilm protein BslA also forms highly elastic surface layers at interfaces. Here we describe several self-assembled structures formed by BslA, both at interfaces and in bulk solution, over a range of length scales spanning from nanometres to millimetres. First, we observe transiently stable and highly elongated air bubbles formed in agitated BslA samples. We study their behaviour in a range of solution conditions and hypothesize that their dissipation is a consequence of the slow adsorption kinetics of BslA to an air-water interface. Second, we describe elongated tubules formed by BslA interfacial films when shear stresses are applied in both a Langmuir trough and a rheometer. These structures bear a striking resemblance, although much larger in scale, to the elongated air bubbles formed during agitation. Taken together, this knowledge will better inform the conditions and applications of how BslA can be used in the stabilization of multi-phase materials.This article is part of the themed issue 'Soft interfacial materials: from fundamentals to formulation'.

Abstract
Here, we review the principle and applications of two recently developed methods: the capillary meniscus dynamometry (CMD) for measuring the surface tension of bubbles/drops, and the capillary bridge dynamometry (CBD) for quantifying the bubble/drop adhesion to solid surfaces. Both methods are based on a new data analysis protocol, which allows one to decouple the two components of non-isotropic surface tension. For an axisymmetric non-fluid interface (e.g. bubble or drop covered by a protein adsorption layer with shear elasticity), the CMD determines the two different components of the anisotropic surface tension, σs and σφ, which are acting along the "meridians" and "parallels", and vary throughout the interface. The method uses data for the instantaneous bubble (drop) profile and capillary pressure, but the procedure for data processing is essentially different from that of the conventional drop shape analysis (DSA) method. In the case of bubble or drop pressed against a substrate, which forms a capillary bridge, the CBD method allows one to determine also the capillary-bridge force for both isotropic (fluid) and anisotropic (solidified) adsorption layers. The experiments on bubble (drop) detachment from the substrate show the existence of a maximal pulling force, Fmax, that can be resisted by an adherent fluid particle. Fmax can be used to quantify the strength of adhesion of bubbles and drops to solid surfaces. Its value is determined by a competition of attractive transversal tension and repulsive disjoining pressure forces. The greatest Fmax values have been measured for bubbles adherent to glass substrates in pea-protein solutions. The bubble/wall adhesion is lower in solutions containing the protein HFBII hydrophobin, which could be explained with the effect of sandwiched protein aggregates. The applicability of the CBD method to emulsion systems is illustrated by experiments with soybean-oil drops adherent to hydrophilic and hydrophobic substrates in egg yolk solutions. The results reveal how the interfacial rigidity, as well as the bubble/wall and drop/wall adhesion forces, can be quantified and controlled in relation to optimizing the properties of foams and emulsions.

Abstract
Hydrophobins are amphiphilic proteins produced by fungi. Cerato-ulmin (CU) is a hydrophobin that has been associated with Dutch elm disease. Like other hydrophobins, CU stabilizes air bubbles and oil droplets through the formation of a persistent protein film at the interface. The behavior of hydrophobins at surfaces has raised interest in their potential applications, including use in surface coatings, food foams, and emulsions and as dispersants. The practical use of hydrophobins requires an improved understanding of the interfacial behavior of these proteins, alone and in the presence of added surfactants. In this study, the adsorption behavior of CU at air/water interfaces is characterized by measuring the surface tension and interfacial rheology as a function of adsorption time. CU is found to adsorb irreversibly at air/water interfaces. The magnitude of the dilatational modulus increases with adsorption time and surface pressure until CU eventually forms a rigid film. The persistence of this film is tested through the sequential addition of strong surfactant sodium dodecyl sulfate (SDS) to the bulk liquid adjacent to the interface. SDS is found to coadsorb to interfaces precoated with a CU film. At high concentrations, the addition of SDS significantly decreases the dilatational modulus, indicating disruption and displacement of CU by SDS. Sequential adsorption results in mixed layers with properties not observed in interfaces generated from complexes formed in the bulk. These results lend insight to the complex interfacial interactions between hydrophobins and surfactants.

Abstract
Fungal hydrophobin is a family of low molecular weight proteins consisting of four disulfide bridges and an extraordinary hydrophobic patch. The hydrophobic patch of hydrophobins and the molecules of gaseous CO2 may interact together and form the stable CO2-nanobubbles covered by an elastic membrane in carbonated beverages. The nanobubbles provide the required energy to provoke primary gushing. Due to the hydrophobicity of hydrophobin, this protein is used as a biosurfactant, foaming agent or encapsulating agent in food products and medicine formulations. Increasing demands for using of hydrophobins led to a challenge regarding production and purification of this product. However, the main issue to use hydrophobin in the industry is the regulatory affairs: yet there is no approved legislation for using hydrophobin in food and beverages. To comply with the legislation, establishing a consistent method for obtaining pure hydrophobins is necessary. Currently, few research teams in Europe are focusing on different aspects of hydrophobins. In this paper, an up-to-date collection of highlights from those special groups about the bio-chemical and physicochemical characteristics of hydrophobins have been studied. The recent advances of those groups concerning the production and purification, positive applications and negative function of hydrophobin are also summarised.

Abstract
The hydrophobins are proteins that form the most rigid adsorption layers at liquid interfaces in comparison with all other investigated proteins. The mixing of hydrophobin HFBII with other conventional proteins is expected to reduce the surface shear elasticity and viscosity, E(sh) and η(sh), proportional to the fraction of the conventional protein. However, the experiments show that the effect of mixing can be rather different depending on the nature of the additive. If the additive is a globular protein, like β-lactoglobulin and ovalbumin, the surface rigidity is preserved, and even enhanced. The experiments with separate foam films indicate that this is due to the formation of a bilayer structure at the air/water interface. The more hydrophobic HFBII forms the upper layer adjacent to the air phase, whereas the conventional globular protein forms the lower layer that faces the water phase. Thus, the elastic network formed by the adsorbed hydrophobin remains intact, and even reinforced by the adjacent layer of globular protein. In contrast, the addition of the disordered protein β-casein leads to softening of the HFBII adsorption layer. Similar (an even stronger) effect is produced by the nonionic surfactant Tween 20. This can be explained with the penetration of the hydrophobic tails of β-casein and Tween 20 between the HFBII molecules at the interface, which breaks the integrity of the hydrophobin interfacial elastic network. The analyzed experimental data for the surface shear rheology of various protein adsorption layers comply with a viscoelastic thixotropic model, which allows one to determine E(sh) and η(sh) from the measured storage and loss moduli, G' and G″. The results could contribute for quantitative characterization and deeper understanding of the factors that control the surface rigidity of protein adsorption layers with potential application for the creation of stable foams and emulsions with fine bubbles or droplets.

Abstract
The majority of bacteria in the natural environment live within the confines of a biofilm. The Gram-positive bacterium Bacillus subtilis forms biofilms that exhibit a characteristic wrinkled morphology and a highly hydrophobic surface. A critical component in generating these properties is the protein BslA, which forms a coat across the surface of the sessile community. We recently reported the structure of BslA, and noted the presence of a large surface-exposed hydrophobic patch. Such surface patches are also observed in the class of surface-active proteins known as hydrophobins, and are thought to mediate their interfacial activity. However, although functionally related to the hydrophobins, BslA shares no sequence nor structural similarity, and here we show that the mechanism of action is also distinct. Specifically, our results suggest that the amino acids making up the large, surface-exposed hydrophobic cap in the crystal structure are shielded in aqueous solution by adopting a random coil conformation, enabling the protein to be soluble and monomeric. At an interface, these cap residues refold, inserting the hydrophobic side chains into the air or oil phase and forming a three-stranded β-sheet. This form then self-assembles into a well-ordered 2D rectangular lattice that stabilizes the interface. By replacing a hydrophobic leucine in the center of the cap with a positively charged lysine, we changed the energetics of adsorption and disrupted the formation of the 2D lattice. This limited structural metamorphosis represents a previously unidentified environmentally responsive mechanism for interfacial stabilization by proteins.

Abstract
Saponins are a diverse class of natural, plant derived surfactants, with peculiar molecular structure consisting of a hydrophobic scaffold and one or several hydrophilic oligosaccharide chains. Saponins have strong surface activity and are used as natural emulsifiers and foaming agents in food and beverage, pharmaceutical, ore processing, and other industries. Many saponins form adsorption layers at the air-water interface with extremely high surface elasticity and viscosity. The molecular origin of the observed unique interfacial visco-elasticity of saponin adsorption layers is of great interest from both scientific and application viewpoints. In the current study we demonstrate that the hydrophobic phase in contact with water has a very strong effect on the interfacial properties of saponins and that the interfacial elasticity and viscosity of the saponin adsorption layers decrease in the order: air > hexadecane ≫ tricaprylin. The molecular mechanisms behind these trends are analyzed and discussed in the context of the general structure of the surfactant adsorption layers at various nonpolar phase-water interfaces.

Abstract
The dependence of the dilational surface elasticity on the surface pressure of the spread monolayers of polystyrene microparticles is studied at the water-air interface. The surface rheological measurements together with the data from optical methods allow the division of the whole range of surface pressures into three zones characterized by different monolayer structures. The extremely high surface elasticity (∼500 mN m(-1)) at surface pressures close to 30 mN m(-1) is similar to the results for the adsorption layer of the complexes formed between silica particles and surfactant molecules and is probably caused by strong hydrophobic attraction between the particles. At the same time, some other characteristic features of the viscoelasticity of the monolayers of polysterene microparticles differ strongly from the properties of previously studied systems.

Abstract
Here, we investigate the surface shear rheology of class II HFBII hydrophobin layers at the oil/water interface. Experiments in two different dynamic regimes, at a fixed rate of strain and oscillations, have been carried out with a rotational rheometer. The rheological data obtained in both regimes comply with the same viscoelastic thixotropic model, which is used to determine the surface shear elasticity and viscosity, E(sh) and η(sh). Their values for HFBII at oil/water interfaces are somewhat lower than those at the air/water interface. Moreover, E(sh) and η(sh) depend on the nature of oil, being smaller for hexadecane in comparison with soybean-oil. It is remarkable that E(sh) is independent of the rate of strain in the whole investigated range of shear rates. For oil/water interfaces, E(sh) and η(sh) determined for HFBII layers are considerably greater than for other proteins, like lysozyme and β-casein. It is confirmed that the hydrophobin forms the most rigid surface layers among all investigated proteins not only for the air/water, but also for the oil/water interface. The wide applicability of the used viscoelastic thixotropic model is confirmed by analyzing data for adsorption layers at oil/water interfaces from lysozyme and β-casein - both native and cross-linked by enzyme, as well as for films from asphaltene. This model turns out to be a versatile tool for determining the surface shear elasticity and viscosity, E(sh) and η(sh), from experimental data for the surface storage and loss moduli, G' and G''.
