Abstract
The study aimed to investigate the potentially toxic trace elements (PTEs) Pb, Cd, Hg, Mo, and Cu in dairy products sold in Yerevan's markets and to assess the related exposure and possible health risks among the adult population residing in the capital city of Armenia, Yerevan. The PTEs contents were determined in widely consumed dairy products (pasteurized milk, sour cream, matsoun and cheese from cow milk) using graphite furnace atomic absorption spectrometry. PTE contents were in the range of 7.90E-04 (Pb in pasteurized milk) to 6.75E-01 (Cu in cheese) mg/kg. Food consumption was assessed by the 24-h dietary recall method. The PTE daily intakes and margin of exposure (MOE) were calculated by the deterministic approach. The results indicated potential health concerns for the contribution of dairy products to the overall dietary intake of Pb and Cd. MOEs of Pb and Cd (8.71 and 8.80, respectively) estimated for high consumers of cheese (90 g/day and more) were lower than 10. The pilot data set provides the first comprehensive appraisal on the dairy products contamination by PTEs in the Caucasus region. The results point out further attention to sources of Pb and Cd in Armenian dairy products, including environment and farm characteristics.

Abstract
Calcium (Ca) is a key micronutrient of high relevance for human nutrition that also influences the texture and taste of dairy products and their processability. In bovine milk, Ca is presented in several speciation forms, such as complexed with other milk components or free as ionic calcium while being distributed between colloidal and serum phases of milk. Partitioning of Ca between these phases is highly dynamic and influenced by factors, such as temperature, ionic strength, pH, and milk composition. Processing steps used during the manufacture of dairy products, such as preconditioning, concentration, acidification, salting, cooling, and heating, all contribute to modify Ca speciation and partition, thereby influencing product functionality, product yield, and fouling of equipment. This review aims to provide a comprehensive understanding of the influence of Ca partition on dairy products properties to support the development of kinetics models to reduce product losses and develop added-value products with improved functionality. To achieve this objective, approaches to separate milk phases, analytical approaches to determine Ca partition and speciation, the role of Ca on protein-protein interactions, and their influence on processing of dairy products are discussed.

Abstract
Fluoride is highly present in the environment, especially in water and its derivatives. Excessive fluoride contribution to diet poses a health risk. Tea leaves accumulate fluoride and the consumption of tea (Camellia sinensis) could pose a risk to human by the excessive fluoride intake. Ninety tea samples were analyzed by potentiometry using a selective fluoride ion electrode. Mixed tea samples (2.82 ± 1.11 mg/L) and black tea samples (2.28 ± 0.79 mg/L) recorded the highest fluoride levels. The contribution of drinking water is important for increasing fluoride levels in teas. The daily consumption of two cups (250 mL per cup) of mixed and black teas prepared with La Laguna tap water does pose a health risk for children (4-8 years old) because of the high contribution percentages (74.4% and 63.6%, respectively) of the Tolerable Upper Intake Level set in 2.5 mg/day by the EFSA (European Food Safety Authority). A minor consumption in children (4-8 years old) and adults during pregnancy is advisable.

Abstract
The inflorescence of Musa paradisiaca, known as “banana heart” is a structure that includes flowers and bracts of banana, commonly used as food source worldwide. The aims of this study were (1) to determine the mineral components of Musa paradisiaca and (2) to compare the obtained results with previously reported data of Recommendation Dietary Allowances (RDAs) and edible plant permissible limits set by FAO/WHO. The samples were digested using microwave-assisted equipment, while elemental contents were determined by inductively coupled plasma optical emission spectroscopy (ICP OES). Metal (Mg, Ca, Cr, Ni, Cu, Fe, and Zn) and nonmetal (S and P) contents were detected. According to RDA, the inflorescences could be excellent sources of Mg, P, Cr, Cu, Zn, and Fe for females, males, and pregnant women, all age 31–50 y, as well as children (4–8 y). Bracts are good source of Zn for male and pregnant women and good source of Fe for children. All the samples contained considerable amounts of Mg, Ca, P, Ni, Cu, Zn, and Fe, which were quite low to induce deleterious effects (UL). FAO/WHO limits for edible plants have not yet been established for S, P, Mg, and Ca, but Ni and Zn are below of those limit values. However, Cr and Cu concentrations are higher than the values established for edible plants and may pose a threat to human health. Farmers should be encouraged by government agencies, not only for sustainability of production but also to ensure the storage and trade of banana tree inflorescence.

Abstract
Mate is an infusion made from the dried leaves of yerba mate (Ilex paraguariensis). Yerba mate may be an important source of essential elements but could contain toxicologically relevant metals. Macroelements (Ca, Mg, Na, K), trace elements (B, Ba, Sr, V, Li, Ni, Fe, Zn, Cu, Cr, Co, Mn, Mo), and toxic metals (Al, Cd, Pb) content have been determined in 32 samples of yerba mate by ICP-OES (inductively coupled plasma-optical emission spectrometry) with the aim of determining the element content of yerba mate leaves and the influence of temperature in the extraction of these elements from the plant to the infusion, and estimating the dietary intake for each element studied. The highest element contents have been found in infusions prepared with hot distilled water (70-75 °C); the most noteworthy are K (303 mg/L), Mn (4.85 mg/L), and Al (4.52 mg/L). The consumption recommended by the producers (500 mL infusion/day) contributes significantly to the daily intake of essential elements such as Mn, Mg, and Cu. This consumption does not pose a health risk, although it is necessary to assess the risk/benefit of Ni intake from mate consumption for people with impaired renal function (500 mL/day accounts for 52.2% of the TDI).

Abstract
An analyser was constructed on the basis of on-line connection of capillary electrophoresis over a short separation path with continuous mini-dialysis sample collection. The developed instrument was employed for simultaneous determination of the majority minerals K+, Ca2+, Na+ and Mg2+ (and possibly NH4+ ions) in commercially available unflavoured yoghurts. The cations are released from the organic structures by digestion with boiling 6 mol/L HCl. They were separated from residues of the organic matrix by a dialysis probe and were transferred to a stream of water. From the continuous stream, the dialysate was injected into the separation capillary through a flow-gating interface. Within the reliability interval, the determined total mineral content was equal to their contents stated on the yoghurt labels and the content determined by flame atomic absorption spectrometry and complexometric titration. The relative standard deviation of the electrophoretic determination is mostly about 5%.

Abstract
The levels of toxic metals (Al, Cd, Pb) and trace metals (B, Ba, Cu, Fe, Mn, Sr, Zn) were analyzed by inductively coupled plasma optical emission spectrometry (ICP-OES) in the muscle (sirloin and chuck) and liver from a total of 180 samples of steers (less than 2 years old) (Bos taurus) of foreign and local origin slaughtered on the island of La Palma (Canary Islands, Spain). As regards toxic metals, Al was the metal with the highest contents in both tissues of the foreign steers (3.75 mg/kg in the muscle and 55.3 mg/kg in the liver) and the local steers (5.60 mg/kg in the muscle and 8.65 mg/kg in the liver). In conclusion, the present study confirmed that beef is a source of trace elements, mainly Fe and Zn. In addition, the consumption of this type of beef did not show significant intakes of toxic metals (Al, Cd, and Pb) and, therefore, the consumption of the steer muscle and liver does not pose a toxicological risk for Spanish consumers.

Abstract
A novel, simple, and low-cost spray painting technique has been developed for the fabrication of microfluidic paper-based devices. The devices that we developed utilize aerosol spray paint to build hydrophobic barriers and employ a hole puncher to obtain paper-based patterned layers and paper dots without using any specialized instruments (e.g., without a laser cutter). The entire manufacturing process is extremely simple, inexpensive, and rapid, which means that it can be applied broadly. Furthermore, the application of the device to iron detection was demonstrated. A linear relationship between the colour value and the iron concentration was observed from 0 to 0.02 g/L. The developed microfluidic paper-based device for iron detection exhibited a low detection limit (0.00090 g/L), good selectivity, and acceptable recovery.

Abstract
Benzo [a] pyrene (BaP), the most ubiquitous polycyclic aromatic hydrocarbons (PAHs) found in sludge, can impact the composting processes of sewage sludge as well as the quality of compost produced. In the present study, we investigated the effects of BaP at various concentrations on physicochemical characteristics, heavy metal passivation, and microbial community during the composting processes. The removal efficiency of BaP at 5 and 20 mg kg-1 after composting was 51.1% and 74.2%, respectively. In comparison with the control, the content of residual Cu, Pb, Cr and Ni in 5 mg kg-1 BaP contained system declined dramatically on the second day of composting, while such content in 20 mg kg-1 BaP system significantly decreased on the 8th day. Regardless of the presence of BaP in the sludge, composting process had a positive passivation effect on Cu, Pb, Cr and Ni. A stronger inhibitory effect of BaP at higher concentration was observed on microorganism, which reduced microbial abundance and species in the composting, and influenced microbial diversity. Besides, microbial communities in BaP-containing composting would improve the transformation of silicates and minerals, increase the concentration of humus and extend the passivation time of heavy metals. As these results verified, composting process could remove BaP from the sludge effectively, and BaP had a significant impact on heavy metal passivation and abundance and composition of microbial community during the composting process.

Abstract
Mineral and trace elements (Ca, Fe, K, Mg, Na, Pb, Cd, Cr, Cu, and Mn) in commercial strawberry-flavored yogurts and fermented whey beverages in Brazil were investigated. K, Ca, Na, Mg and Fe concentrations ranged from 1.6 to 1.4, 1.4 to 1.1, 0.74 to 0.68, 0.16 to 0.11, and 0.01 mg g-1 for yogurts and whey beverages, respectively. Similar concentrations of the minerals were observed for both products, except Mg (0.16 mg g-1 in yogurts and 0.11 mg g-1 in whey beverages). Cd, Cr, Cu, Mn, and Pb was found below the detection limit (21.4 to 94.1 μg g-1), demonstrating safety levels for consumption. Regarding the mineral daily intake, consumption of 100 g of the product has relevance for calcium in infants (>40%) and children between 4 and 8 years (>13%), and a greater contribution of yogurt over whey beverage was observed. PLSDA model suggested that Mg analytical determination should be performed to ensure the identity of the product.

Abstract
Algae are becoming increasingly common because of their importance in vegan and vegetarian diets. Although they are a source of essential minerals, vitamins and antioxidants, these marine organisms have a high absorption capacity that can lead to the accumulation of toxic metals which are dangerous in humans. The objective of this study is to determine the content of toxic metals (Al, Cd, Pb and Hg) in edible seaweed samples marketed in Spain (Europe) to assess the toxicological risk from the intake of these metals. A total of 73 European and Asian algae samples marketed in Tenerife (Canary Islands, Spain) were analyzed by ICP - OES (Inductively Coupled Plasma - Optical Emission Spectrometry) and by CV-AAS (Cold Vapor - Atomic Absorption Spectrophotometry). The major toxic metal was Al, whose highest level was recorded in seaweed salad (57.5 mg Al/kg dry weight). Regarding the origin, the highest concentrations of Al (38.9 mg/kg dw), Cd (0.59 mg/kg dw) and Pb (0.40 mg/kg dw) were found in Asian algae, which may be due to the high levels of industry in the Asian countries. However, the highest concentration of Hg (0.017 mg/kg dw) was found in European algae. The consumption of 5 g of dehydrated seaweed per day represents a percentage of contribution to the tolerable weekly intake of Cd of 22.7%, this percentage may entail a risk when considering total Cd intake. However, the consumption of 5 g a day of dehydrated seaweed would not, pose a risk to the health of adults.

Abstract
Cheeses are an important source of essential elements. Nevertheless, the level of some metals could pose a health risk. Therefore, the concentration of trace elements and toxic metals (Cr, Cu, Li, Ni, Sr, Pb, Cd, and Al) has been determined in artisanal cheeses from different geographical locations, and the intake of these metals from cheese consumption has been evaluated. The metal concentration was determined in a total of 90 cheese samples from different locations by using inductively coupled plasma atomic emission spectroscopy. The highest concentration of Al (35.1 ± 4.42 mg/kg, wet weight) was found in artisanal cheeses from Zamora (Spain), followed by Sr (6.85 ± 0.35 mg/kg, wet weight) in artisanal cheeses from Cadiz (Spain). A daily consumption of 23.2 g of cheese provides a significant dietary contribution for Al of 0.82% of its tolerable weekly intake of 1 mg/kg of body weight per week. Canary Islands cheeses have a higher metal content than the non-Canary cheese, which could be because of the volcanic characteristics of the island soils. The intake of toxic metals and trace elements poses no risk to the health of adults.

Abstract
This work presents, for the first time, DPV methodology of indirect aluminum (III) determination in tea leaves and infusions using the renewable silver amalgam electrode. A self-referencing strategy was proposed which relies on alternate voltammetric curves registration with and without conditioning of the electrode surface. The developed procedure utilizing formation of aluminum-Alizarin S complex shows linearity in the range of 2-50 μg L-1 of Al(III) concentration, with r > 0.997. In the case of the electrode conditioning LOD is 0.2 μgL-1 and repeatability expressed by CV is 1-2%. Introducing an additional operation i.e. electrode activation results in decrease of sensitivity from 0.0162 to 0.0043 μA/μgL-1. The method was verified using CRM (tea leaves). Due to the wide variety of tea origin, types and producers, four most popular sorts (black, green, red and white) were chosen, made by one manufacturer. It was demonstrated that the proposed methodology may be applied in Al(III) determination in tea leaves and infusions. Al(III) extraction effectiveness was also examined. It was verified, that lemon juice addition during brewing increases aluminum concentration in infusions. Using Principal Components Analysis it was demonstrated that automatic distinction of infusions brewed with and without lemon juice, based on unprocessed voltammetric signal, may be successfully realized.

Abstract
The levels of 20 metals (aluminum, boron, barium, calcium, cadmium, cobalt, chromium, copper, iron, potassium, lithium, magnesium, manganese, molybdenum, sodium, nickel, lead, strontium, vanadium, and zinc) were analyzed in muscle and liver tissue of Trachurus picturatus marketed in the Canary Islands (Spain) by using inductively coupled plasma optical emission spectrometry. In the liver samples, the mean concentrations in milligrams per kilogram wet weight (wt) of Al (14.7), B (0.99), Ba (1.64), Ca (314), Cd (2.52), Co (0.15), Cu (4.07), Fe (106), Li (3.89), Mn (0.85), Mo (0.16), Na (1510), Ni (0.51), Pb (0.36), Sr (3.54), V (0.78), and Zn (23.13) were higher than those detected in the muscle samples in milligrams per killogram wet wt, which were as follows: Al (8.76), B (0.07), Ba (0.30), Ca (210), Cd (0.01), Co (0.01), Cu (1.51 ), Fe (7.33), Li (1.08), Mn (0.12), Mo (0.01), Na (697), Ni (0.11), Pb (0.04), Sr (1.45), V (0.01), and Zn (4.69). The mean concentrations of Cr, K, and Mg (0.14, 1,904, and 243 mg/kg wet wt, respectively) were higher in muscle than in liver (0.05, 1,333 and 236 mg/kg wet wt, respectively). The mean concentrations of Cd and Pb (0.01 and 0.04 mg/kg wet wt) in muscle did not exceed the maximum limits established by a European Commission regulation (0.1 mg of Cd/kg and 0.3 mg of Pb/kg, respectively). Considering a mean daily consumption of fish muscle for the adult population of 31.9 g/day published in the report on food consumption by the Spanish Ministry of Agriculture and Fisheries, Food and Environment, Mg made the highest contributions to the intake (2.58% for adult women of 60 kg and 2.22% for men of 70 kg), and the estimated intakes of Al (0.35 to 0.46 mg/day), Cd (0.55 to 0.74 mg/day) and Pb (1.66 to 5.53 mg/day) were below the respective established tolerable intakes. In conclusion, the results of this study show that the consumption of muscle from this benthopelagic species can be considered safe in terms of maximum legal limits, while consumption of liver is discouraged as a major source of exposure to toxic metals, such as Al, Cd, and Pb.

Abstract
Cephalopods are an important source of nutrients and some of the most widely consumed marine foods. However, because of contamination of the oceans and the bioaccumulative nature of toxic metals, these foods may pose a health risk. For this reason, the concentrations of some trace elements (chromium [Cr], lithium, strontium [Sr], copper [Cu], and nickel) and toxic metals (aluminum [Al], cadmium, and lead) were determined in 65 frozen samples of cuttlefish, octopus, common squid, and shortfin squid by inductively coupled plasma optical emission spectrometry to evaluate dietary intake and toxic risk. Sr was the major trace element (3.03 mg/kg) in cuttlefish; however, Cu (1.57 mg/kg) was found in the highest concentration in common squid. Among the toxic metals, Al had the highest concentration (3.09 mg/kg) in common squid. Al can pose an important health risk to individuals with kidney problems and to children because these groups are most vulnerable to the toxic effects. Significant differences among the four cephalopod types were found in the concentrations of most of the metals examined. Taking into account the average consumption of cephalopods, the contribution of toxic metals does not pose a risk to the health of adults.

Abstract
The concentrations of 20 metals (Na, K, Ca, Mg, V, Mn, Fe, Cu, Zn, Cr, Mo, Co, B, Ba, Sr, Ni, Si, Al, Pb, and Cd) in cage-reared hens’ eggs have been determined in this study using inductively coupled plasma atomic emission spectroscopy (ICP-OES). There were significant differences in the metal content depending on the edible part of the egg, with the yolk having the greater concentrations of metals. The daily consumption of eggs (24.3 g/person/day for children and 31.2 g/person/day for adults) contributes to the intake of trace metals, notably Fe (3.8% children, 3.2% women, and 6.5% men) and Zn (4.5% children, 6.6% women, and 4.9% men). In addition, the consumption of eggs does not imply a high contribution of toxic metals.
