Application of principal component and hierarchical cluster analysis to classify different spices based on in vitro antioxidant activity and individual polyphenolic antioxidant compounds

Theoretical framework to evaluate antioxidant synergistic effects from the coextraction of marjoram, rosemary and parsley

Synergies between compounds in food ingredients have been commonly obtained by the mixing of extracts produced individually. A different approach, based on the coextraction of plants and a new theoretical framework to identify synergistic and antagonistic effects in the coextracts, has been proposed in this study for the first time. The Pressurized Liquid Extraction (PLE) of rosemary and marjoram with parsley at several plant ratios was carried out and the antioxidant activity (ABTS and cellular assays) and phenolic compounds of the extracts were evaluated. Synergistic effects on the antioxidant activity of the extracts were identified from all the plant combinations. The HPLC-PAD analysis of the samples did not show a relation between the concentration of the main phenolic compounds in the coextracts and the observed antioxidant synergistic effects. The proposed theoretical framework may be successfully used for the determination of synergies in the bioactivity of extracts obtained by coextraction.

Effect of parsley (Petroselinum crispum) oil as feed additive on broiler performance, carcass, liver and kidney functions, antioxidant, lipid profile, and immunity

The current study evaluated the effects of parsley essential oil on broiler growth performance, carcass features, liver and kidney functions, immunity and antioxidant activity, and lipid profile. A total of 160 unsexed 7-day broiler chicks (Cobb500) were distributed into five groups; each group contained five replicates with eight birds each. The treatments were (1) basal diet (no additive, T1), (2) basal diet + 0.5 mL parsley essential oil/kg (T2), (3) basal diet + 1 mL parsley essential oil/kg (T3), (4) basal diet + 1.5 mL parsley essential oil/kg (T4), and (5) basal diet + 2 mL parsley essential oil/kg (T5). According to GC-MS analysis, parsley oil contains D-limonene, hexadecanoic acid, α-cyclocitral, globulol, α-pinene, myristicin, cryophyllene, bergapten, α-chamigrene, etc. The current results indicated that the most abundant molecules in parsley oil were D-limonene (18.82%), oleic acid (14.52%), α-cyclocitral (11.75%), globulol (11.24%), α-guaiene (7.34%), apiol (5.45%), and hexadecanoic acid (4.69%). Adding parsley essential oil to the broiler diet quadratically increased body weight (BW) during 1-3 weeks of age. The T5 group recorded the highest value (869.37 g) of BW in comparison to other treatments and the control group. The cholesterol, triglyceride, low-density lipoprotein (LDL) cholesterol, and total immunoglobulin, including immunoglobulin G (IgG) and immunoglobulin M (IgM) levels in the birds fed parsley essential oil were not affected. The T3 group recorded the highest value (159 ng/mL) of superoxide dismutase (SOD) and the lowest value (2.01 ng/mL) of malondialdehyde (MDA) when compared to the control and other treatment. In conclusion, we recommend using parsley oil at levels of 1 mL/kg diet of broiler chicks.

Study on characters associations and path coefficient analysis for quantitative traits of amaranth genotypes from Ethiopia

Selection based on yield alone may not be effective for yield improvement in plant breeding programs. Thus, in order to progress the genetic gains during selection, yield should be considered along with potential yield contributing traits. The objective of this study was to improve the genotype of amaranth and increase the effectiveness of selection in the program by identifying the correlation and path coefficients between yield and its relevant attributes. On 120 genotypes of amaranth planted during two growing seasons in 2020 and 2021, the study was carried out using an alpha lattice design with two replications. The results revealed significant positive phenotypic and genotypic associations on leaf yield, with leaf area, leaf breadth, branch number, leaf number, plant height at flowering, and grain yield all having positive direct effects. Similar strong positive phenotypic and genotypic relationships were found for grain yield and grain sink filling rates. Using path coefficient analysis, the direct and indirect effects of yield-related traits on yield were also determined. In addition to having a strong direct impact on grain output, the grain sink filling rates showed both phenotypic and genotypic evidence of substantial positive relationships with grain yield. It was further suggested that leaf yield in amaranth genotypes may increase through the indirect selection of plant height at maturity, leaf length, and terminal inflorescence lateral length, which showed such significant indirect influences, mostly through leaf area, days to maturity, and days to emergence, which displayed such strong indirect effects, primarily through plant height at flowering. This study consequently shows the need for traits with significant positive indirect impacts via leaf area to be considered indirect selection criteria for improving leaf yield in amaranth genotypes. The grain sink filling rate also significantly improved grain yield indirectly at both the phenotypic and genotypic levels, mainly via days to flowering and leaf yield. This demonstrated that selection that mainly targeted days to flowering, leaf yield, and grain sink filling rate would ultimately boost the grain yield in amaranth genotypes.

Occurrence of Luteolin in the Greek Flora, Isolation of Luteolin and Its Action for the Treatment of Periodontal Diseases

Higher plants possess the ability to synthesize a great number of compounds with many different functions, known as secondary metabolites. Polyphenols, a class of flavonoids, are secondary metabolites that play a crucial role in plant adaptation to both biotic and abiotic environments, including UV radiation, high light intensity, low/high temperatures, and attacks from pathogens, among others. One of the compounds that has received great attention over the last few years is luteolin. The objective of the current paper is to review the extraction and detection methods of luteolin in plants of the Greek flora, as well as their luteolin content. Furthermore, plant species, crop management and environmental factors can affect luteolin content and/or its derivatives. Luteolin exhibits various biological activities, such as cytotoxic, anti-inflammatory, antioxidant and antibacterial ones. As a result, luteolin has been employed as a bioactive molecule in numerous applications within the food industry and the biomedical field. Among the different available options for managing periodontitis, dental care products containing herbal compounds have been in the spotlight owing to the beneficial pharmacological properties of the bioactive ingredients. In this context, luteolin's anti-inflammatory activity has been harnessed to combat periodontal disease and promote the restoration of damaged bone tissue.

Mitigation of heat stress effects on laying hens' performances, egg quality, and some blood parameters by adding dietary zinc-enriched yeasts, parsley, and their combination

Objective

Finding natural, handy and efficient nutritional solutions to prevent and mitigate negative effects caused by environmental heat stress and to be applied to large-scale laying hen industry.

Research design

A 3-weeks trial was conducted on 128 laying hens TETRA-SL LL (50 weeks of age) housed in 8 cages/group, 4 laying hens/cage, 32 laying hens/group, under heat stress conditions (34±1°C). The basal diet on corn and soybean meal was formulated to be isocaloric and isonitrogenic. Compared to Control group diet (C), experimental groups E1 included 1% zinc-enriched yeast; E2 included 2% parsley and E3 included 1% zinc-enriched yeast combined with 2% parsley to minimize the heat stress effects.

Methods

The parsley and the zinc-enriched yeast were analysed for their chemical composition, total polyphenols, antioxidant capacity, minerals, vitamin E and incorporated into the ration structure. Production parameters, egg quality, biochemical and haematological profiles of blood samples were analysed during the trial.

Results

A statistically significant (p < 0.05) average egg weight was noticed on E2 and E3 compared to Control group, and also during the 1st week compared to the 2nd and the 3rd experimental weeks. Average daily feed intake values were highly significant (p < 0.001) on E3 group compared to C, E1, E2, and on the 2nd week compared to the 3rd experimental week (p < 0.021). Feed conversion rate was highly significant (p < 0.001) during the 2nd and the 3rd experimental weeks compared to the 1st week. The average daily egg production was highly significant (p < 0.001) within 1st week compared to the 2nd and 3rd weeks. A highly significant (p < 0.001) yolk coloration was noticed on E2 and E3 groups. The malondialdehyde (MDA) concentration decreased significantly (p < 0.05) to all experimental groups compared to Control group during the 14th and 28th days of storage.

Conclusion

These findings suggest that the two ingredients minimized the heat stress effects on production performance parameters with a demonstrated antioxidant capacity role by delaying the lipid peroxidation during different storage time periods.

Inversion models of aboveground grassland biomass in Xinjiang based on multisource data

Grassland biomass monitoring is essential for assessing grassland health and carbon cycling. However, monitoring grassland biomass in drylands based on satellite remote sensing is challenging.Statistical regression models and machine learning have been used for the construction of grassland biomass models, but the predictive power for different grassland types is unclear. Additionally, the selection of the most appropriate variables to construct a biomass inversion model for different grassland types must be explored. Therefore,1201 ground-truthed data points collected from 2014-2021,including 15 Moderate Resolution Imaging Spectroradiometer (MODIS) vegetation indices,geographic location and topographic data,and meteorological factors and vegetation biophysical indicators were screened for key variables using principal component analysis (PCA). The accuracy of multiple linear regression models, exponential regression models, power function models, support vector machine (SVM) models, random forest (RF) models, and neural network models was evaluated for the inversion of three types of grassland biomass. The results were as follows: (1) The biomass inversion accuracy of single vegetation indices was low, and the optimal vegetation indices were the soil-adjusted vegetation index (SAVI) (R2 = 0.255), normalized difference vegetation index (NDVI) (R2 = 0.372) and optimized soil-adjusted vegetation index (OSAVI) (R2 = 0.285). (2)Grassland above-ground biomass (AGB) was affected by various factors such as geographic location,topography, and meteorological factors, and the inverse models using a single environmental variable had large errors. (3) The main variables used to model biomass in the three types of grasslands were different. SAVI, aspect, slope, and precipitation (Prec.) were selected for desert grasslands; NDVI,shortwave infrared 2 (SWI2), longitude, mean temperature, and annual precipitation were selected for steppe;and OSAVI, phytochrome ratio (PPR), longitude, precipitation, and temperature were selected for meadows. (4) The non-parametric meadow biomass model was superior to the statistical regression model. (5) The RF model was the best model for the inversion of grassland biomass in Xinjiang, and this model had the highest accuracy for grassland biomass inversion (R2 = 0.656, root mean square error (RMSE) = 815.6 kg/ha),followed by meadow (R2 = 0.610, RMSE = 547.9 kg/ha) and desert grassland (R2 = 0.441, RMSE = 353.6 kg/ha).

Application of 5-aminolevulinic acid promotes ripening and accumulation of primary and secondary metabolites in postharvest tomato fruit

5-Aminolevulinic acid (ALA) plays a vital role in promoting plant growth, enhancing stress resistance, and improving fruit yield and quality. In the present study, tomato fruits were harvested at mature green stage and sprayed with 200 mg L-1 ALA on fruit surface. During ripening, the estimation of primary and secondary metabolites, carotenoids, and chlorophyll contents, and the expression levels of key genes involved in their metabolism were carried out. The results showed that ALA significantly promoted carotenoids accumulation by upregulating the gene expression levels of geranylgeranyl diphosphate synthase (GGPPS, encoding geranylgeranyl diphosphate synthase), phytoene synthase 1 (PSY1, encoding phytoene synthase), phytoene desaturase (PDS, encoding phytoene desaturase), and lycopeneβ-cyclase (LCYB, encoding lycopene β-cyclase), whereas chlorophyll content decreased by downregulating the expression levels of Mg-chelatase (CHLH, encoding Mg-chelatase) and protochlorophyllide oxidoreductase (POR, encoding protochlorophyllide oxidoreductase). Besides, the contents of soluble solids, vitamin C, soluble protein, free amino acids, total soluble sugar, organic acid, total phenol, and flavonoid were increased in ALA-treated tomato fruit, but the fruit firmness was decreased. These results indicated that the exogenous ALA could not only promote postharvest tomato fruit ripening but also improve the internal nutritional and flavor quality of tomato fruit.

A Comprehensive Evaluation of Effects on Water-Level Deficits on Tomato Polyphenol Composition, Nutritional Quality and Antioxidant Capacity

Tomatoes have high nutritional value and abundant bioactive compounds. Moderate water deficit irrigation alters metabolic levels of fruits, improving composition and quality. We investigated the effects of water deficit (T1, T2, T3, and T4) treatments and adequate irrigation (CK) on tomato polyphenol composition, antioxidant capacity, and nutritional quality. Compared with CK, the total flavonoid content increased by 33.66% and 44.73% in T1 and T2, and total phenols increased by 57.64%, 72.22%, and 55.78% in T1, T2, and T3, respectively. The T2 treatment significantly enhanced antioxidant’ capacities (ABTS, HSRA, FRAP, and DPPH). There were multiple groups of significant or extremely significant positive correlations between polyphenol components and antioxidant activity. For polyphenols and antioxidant capacity, the classification models divided the treatments: CK and T4 and T1−T3. The contents of soluble solids, soluble protein, vitamin C, and soluble sugar of the treatment groups were higher than those of CK. The soluble sugar positively correlated with sugar−acid ratios. In the PCA-based model, T3 in the first quadrant indicated the best treatment in terms of nutritional quality. Overall, comprehensive rankings using principal component analysis (PCA) revealed T2 > T1 > T3 > T4 > CK. Therefore, the T2 treatment is a suitable for improving quality and antioxidant capacity. This study provides novel insights into improving water-use efficiency and quality in the context of water scarcity worldwide.

Celery Root Phenols Content, Antioxidant Capacities and Their Correlations after Osmotic Dehydration in Molasses

The osmotic dehydration (OD) of celery root in sugar beet molasses was studied at three temperatures (20, 35, and 50 °C) and three immersion periods (1, 3, and 5 h) in order to examine the changes in antioxidant potential and phenolic profile of celery root throughout the process. The antioxidant capacity (AOC) of dehydrated samples was evaluated by spectrophotometric and polarographic assays, the total phenolic content by the Folin-Ciocalteu method, and the individual phenolic compounds by HPLC-DAD. As a result of OD in molasses, the AOC and phenols content in samples increased proportionally to the augmentation of temperature and the immersion time. Vanillic acid, syringic acid, and catechin were detected in dehydrated samples as a result of transfer from molasses. Compared to fresh celery root, the content of identified phenols in osmodehydrated samples was improved from 1.5 to 6.2 times. Strong correlations between applied assays were obtained, except for the DPPH. Based on the correlation analysis chlorogenic acid, gallic acid, chrysin, catechin, and kaempferol showed the greatest contribution to the overall AOC of osmodehydrated celery root. Molasses, an agro-industrial waste from sugar production, could be valorized as a valuable osmotic solution.

Chemical Structure, Sources and Role of Bioactive Flavonoids in Cancer Prevention: A Review

There has been a major shift in the collective mindset around the world in recent decades, both in terms of food and in terms of the treatment of chronic diseases. Increasing numbers of people are choosing to prevent rather than treat, which is why many consumers are choosing plant-based diets, mainly due to their bioactive compounds. A significant case of bioactive compound is flavonoids-a wide subclass of an even wider class of phytochemicals: polyphenols. Flavonoids are a broad topic of study for researchers due to their potential in the prevention and treatment of a broad range of cancers. The aim of this review is to inform/update the reader on the diversity, accessibility and importance of flavonoids as biomolecules that are essential for optimal health, focusing on the potential of these compounds in the prevention of various types of cancer. Along with conventional sources, this review presents some of the possible methods for obtaining significant amounts of flavonoids based on a slightly different approach, genetic manipulation.

Bioactive compounds of parsley (Petroselinum crispum), chives (Allium schoenoprasum L) and their mixture (Brazilian cheiro-verde) as promising antioxidant and anti-cholesterol oxidation agents in a food system

This study determined the bioactive composition and antioxidant potential of parsley, chives and their mixture (Brazilian cheiro-verde). Additionally, the effect of these herbs against cholesterol oxidation in grilled sardines (Sardinella brasiliensis) was also investigated. Ultra-high Performance Liquid Chromatography-Electrospray Ionization-Mass Spectrometry (UHPLC-ESI-MS) analyses revealed the presence of phenolic acids (caffeic, chlorogenic, and ferulic acids) and flavonoids (apigenin, kaempferol, catechin) in the herbs. Higher levels of phenolics (2.10 ± 0.02 mg GAE/g) and carotenoids (205.95 ± 0.17 µg/g) were determined in parsley extracts. Moreover, parsley also presented higher antioxidant capacity by DPPH (59.21 ± 0.07 %) and ORAC (109.94 ± 18.7 µM TE/g) than the other herbs. In vivo analyses demonstrated that the herbs' extracts decreased the damage on Saccharomyces cerevisiae cells exposed to H₂O₂, except the chives extract at 10 μg/mL. Higher levels of cholesterol oxidation products (COPs) were determined after grilling. The total COPs increased from 61.8 ± 0.7 (raw fish) to 139.7 ± 10.1 µg/g (control). However, the addition of herbs effectively reduced cholesterol oxides formation, this effect was more pronounced in fish containing 4% parsley and 4% cheiro-verde. Promising results were found for cheiro-verde; however, it did not present synergic antioxidant effects.

Rosemary Leaf Extract Inhibits Glycation, Breast Cancer Proliferation, and Diabetes Risks

Advanced glycation end products (AGEs) generated from glycation can cause inflammation-related diseases such as diabetes and cancer. The bioactive compounds of rosemary extract (RE) were extracted and incubated with sugar-protein rich food and breast cancer cell MCF-7 to investigate its inhibitory effect on glycation and cancer cell proliferation, respectively. The diabetic rat was dosed with RE to investigate its effect on blood glucose, serum malondialdehyde (MDA), cholesterol (CHO), triglycerides (TG), low-density lipoproteins (LDLs), anti-oxidation capacity (T-AOC), superoxide dismutase (SOD) activity, anti-oxidation capacity alkaline phosphatase (ALP), glutamate pyruvate transaminase (GPT), and glutamate oxaloacetate transaminase (GOT). The results show that RE contained seven major phenolics ranging from 17.82 mg/g for rosemarinic acid to 0.01 mg/g for ferulic acid on dry weight basis. It significantly lowered AGEs, carboxymethyl lysine (CML), and protein glycation in a sugar-protein rich intermediate-moisture-food (IMF) model. Furthermore, the survival rates of MCF-7 cells decreased to 6.02 and 2.16% after 96 h of incubation with 1.0 and 2.0 mg/mL of RE, respectively. The blood glucose, MDA, CHO, TG, and LDLs in diabetic rats of RE treatment were decreased. The RE treatment also enhanced the T-AOC and SOD activity. Furthermore, the RE treatment improved liver function through improving ALP, GPT, and GOT activities in diabetic rats. The results provide important information for the nutriaceutical and pharmaceutical application of rosemary extract.

Comprehensive Evaluation of the Postharvest Antioxidant Capacity of Majiayou Pomelo Harvested at Different Maturities Based on PCA

Majiayou pomelo (Citrus grandis L. Osbeck, MP) is a famous local red pulp pomelo from the Jiangxi province in China that is rich in natural active substances. In order to investigate the postharvest antioxidant capacities of MP pulp and determine the optimal harvesting time, fruits that were harvested at three different maturities (185, 200, and 215 days after full bloom) were observed for 180 days of preservation at ambient temperature. An abundance of ascorbic acid and lycopene in the MP pulp was found during storage, and in Harvest I, these substances were significantly higher than in Harvest II and Harvest III fruit (p < 0.05). The activity of ascorbate peroxidase (APX), peroxidase (POD), and catalases (CAT) in Harvest I and Harvest II were far higher after 90 days. The radical scavenging ability of 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical, superoxide anion radical (O₂^-•), and hydroxyl radical (•OH) in Harvest I and Harvest II were higher. There was a significantly positive correlation (p < 0.01) between the antioxidant components (ascorbic acid, lycopene, carotenoids, total phenols, and total flavonoids), enzyme activity, and radical scavenging ability. The comprehensive scores determined by principal component analysis (PCA) in Harvest I and II were higher than those in Harvest III. Therefore, the optimal harvesting period of MP for each year is determined to be early November. The study provides a theoretical basis for the maintenance of the postharvest fruit value and the regulation of fruit functional components.

Genotype-Related Differences in the Phenolic Compound Profile and Antioxidant Activity of Extracts from Olive (Olea europaea L.) Leaves

The phenolic compound contents and antioxidant activities of the leaf extracts of nine olive genotypes were determined, and the obtained data were analysed using chemometric techniques. In the crude extracts, 12 compounds belonging to the secoiridoids, phenylethanoids, and flavonoids were identified. Oleuropein was the primary component for all genotypes, exhibiting a content of 21.0 to 98.0 mg/g extract. Hydroxytyrosol, verbascoside, luteolin 7-O-glucoside, and luteolin 4'-O-glucoside were also present in noticeable quantities. Genotypes differed to the greatest extent in the content of verbascoside (0.45⁻21.07 mg/g extract). The content of hydroxytyrosol ranged from 1.33 to 4.03 mg/g extract, and the aforementioned luteolin glucosides were present at 1.58⁻8.67 mg/g extract. The total phenolic content (TPC), DPPH^• and ABTS^•+ scavenging activities, ferric reducing antioxidant power (FRAP), and ability to inhibit the oxidation of -carotene-linoleic acid emulsion also varied significantly among genotypes. A hierarchical cluster analysis enabled the division of genotypes into three clusters with similarity above 60% in each group. GGE biplot analysis showed olive genotypes variability with respect to phenolic compound contents and antioxidant activities. Significant correlations among TPC, FRAP, the values of both radical scavenging assays, and the content of oleuropein were found. The contents of 7-O-glucoside and 4'-O-glucoside correlated with TPC, TEAC, FRAP, and the results of the emulsion oxidation assay.

Wild edible fool's watercress, a potential crop with high nutraceutical properties

Background

Fool's watercress (Apium nodiflorum) is an edible vegetable with potential as a new crop. However, little information is available regarding the antioxidant properties of the plant and the individual phenolics accounting for this capacity are unknown.

Methods

The antioxidant properties of twenty-five wild populations were analysed and individual phenolics present in the species reported and compared with celery and parsley. The antioxidant activity was measured as the 2,2-diphenyl-1-picrylhydrazyl hydrate (DPPH) free radical scavenging capacity, and the total phenolics content (TPC) via the Folin-Ciocalteu procedure. The individual phenolics constituents were determined via high performance liquid chromatography (HPLC) as aglycones.

Results

The average DPPH and TPC of fool's watercress were 28.1 mg Trolox g^-1 DW and 22.3 mg of chlorogenic acid equivalents g^-1 DW, respectively, much higher than those of celery and parsley. Significant differences for both DPPH and TPC, which may be explained by either genotype or environmental factors, were detected among groups established according to geographical origin. Quercetin was identified as the major phenolic present in the leaves of the species, unlike parsley and celery, in which high amounts of apigenin and luteolin were determined. Quercetin represented 61.6% of the phenolics targeted in fool's watercress, followed by caffeic acid derivatives as main hydroxycinnamic acids.

Discussion

The study reports the high antioxidant properties of fool's watercress based on a large number of populations. Results suggest that quercetin accounts for an important share of the antioxidant capacity of this potential new crop. The study also provides a basis for future breeding programs, suggesting that selection by geographical locations may result in differences in the antioxidant properties.

Inhibition of the formation of amyloid-like fibrils with spices, especially cloves

During the study of inhibition of amyloid fibril formation, α-chymotrypsin protein was developed in 55% ethanol at pH 7.0. We investigated the inhibitory effect of different spices on amyloid fibril formation using turbidity measurements and Congo red binding assays. We found that all spices except the black pepper and caraway seed prevented fibril formation. The highest inhibition was measured with the clove, which reduced the amount of aggregates by 90%. We studied the inhibitory effect of the cloves at different concentrations on aggregation, it was found that the inhibitory activity of clove is dependent on concentration. We have measured the total phenolic content of the spice extracts too. Based on all these findings we have come to the following conclusion: Our results indicate that spices can contain other compounds too - not only phenolic compounds - which influence the formation of amyloid fibrils, and the effectiveness of various phenolic compounds are different.

The increase of current atmospheric CO2 and temperature can benefit leaf gas exchanges, carbohydrate content and growth in C4 grass invaders of the Cerrado biome

Leaf gas exchanges, carbohydrate metabolism and growth of three Brazilian Cerrado invasive African grasses were evaluated after growing for 75 days under doubled CO₂ concentration and temperature elevated by 3 °C. Results showed that although the species presented photosynthetic C4 metabolism, they all had some kind of positive response to increased CO₂. Urochloa brizantha and Megathyrsus maximus showed increased height for all induced environmental conditions. Urochloa decumbens showed only improvement in water use efficiency (WUE), while U. brizantha showed increased CO₂ assimilation and M. maximus presented higher biomass accumulation under doubled CO₂ concentration. The most significant improvement of increased CO₂ in all three species appears to be the increase in WUE. This improvement probably explains the positive increase of photosynthesis and biomass accumulation presented by U. brizantha and M. maximus, respectively. The increase in temperature affected leaf carbohydrate content of M. maximus by reducing sucrose, glucose and fructose content. These reductions were not related to thermal stress since photosynthesis and growth were not harmed. Cellulose content was not affected in any of the three species, just the lignin content in U. decumbens and M. maximus. All treatments promoted lignin content reduction in U. brizantha, suggesting a delay in leaf maturation of this species. Together, the results indicate that climate change may differentially promote changes in leaf gas exchanges, carbohydrate content and growth in C4 plant species studied and all of them could benefit in some way from these changes, constituting a threat to the native Cerrado biodiversity.

Storage of Fruits and Vegetables in Refrigerator Increases their Phenolic Acids but Decreases the Total Phenolics, Anthocyanins and Vitamin C with Subsequent Loss of their Antioxidant Capacity

It is of paramount importance for consumers, scientists and industrialists to understand how low-temperature storage of food items affects their bioactive compounds and properties. This study evaluated the effects of cold storage on total phenolics (TP), phenolic acids profile (PA), total anthocyanins (TA), total ascorbic acid (Vit. C) and antioxidant activity (AA) of 19 fruits and vegetables, collected from local Indian markets and stored in refrigerator (4 °C) during 15 days. Content of TP was highest in dill and amaranth and decreased (up to 29.67%) with storage. Leafy vegetables (amaranth, dill, onion, fenugreek and spinach) contained higher amounts of the 12 PA revealed by UPLC-UV; ellagic, gallic, sinapic and vanillic acids levels were the highest; chlorogenic acid (ρ = 0.423), syringic acid (ρ = 0.403) and sinapic acid (ρ = 0.452) mostly correlated with TP; and the PA increased during storage. Highest contents of Vit C estimated by AOAC, DCPIP and DNP methods were found in amaranth, dill and pomegranate, and decreased with storage. Pomegranate showed highest TA levels and low-temperature storage did not significantly increase TA, which was the largest contributor of TP in fruits and vegetables (ρ = 0.661). Storage induced a drastic decrease of AA, which mostly correlated with TP (ρ = 0.808, 0.690 and 0.458 for DPPH, ABTS and FRAP assays, respectively). Spearman’s correlation confirmed by principal component analysis demonstrated that dill, pomegranate and amaranth had the highest overall antioxidant capacity, whereas orange juice and carrot showed the lowest. The results provide support for a key-role of TP, followed by Vit. C and TA in antioxidant capacity of fruits and vegetables, which could be interesting dietary sources of natural antioxidants for prevention of diseases caused by oxidative stress.

Effect of Various Concentration of β-Cyclodextrin Inclusion Complexes Containing trans-Cinnamaldehyde by Molecular Self-Assembly

β-Cyclodextrin inclusion complexes with trans-Cinnamaldehyde (β-CD–CIN) were manufactured with various self-assembly conditions. The encapsulation efficiency of the β-CD–CIN was >90%. Interestingly, the β-CD–CIN had high retention of CIN (>80%) during assembling time at higher β-CD concentration. CIN was released fastest from lowest β-CD–CIN and molar ratio of CIN. In the microscopic observations, higher-concentration β-CD complexes were larger and more easily aggregated. Many individual particles became aggregated or combined with each other to form a single particle. The concentrations of the wall material and core material as well as the self-assembly or storage time affected characteristics of the inclusion complexes.

The association between chromaticity, phenolics, carotenoids, and in vitro antioxidant activity of frozen fruit pulp in Brazil: an application of chemometrics

A total of 19 Brazilian frozen pulps from the following fruits: açai (Euterpe oleracea), blackberry (Rubus sp.), cajá (Spondias mombin), cashew (Anacardium occidentale), cocoa (Theobroma cacao), coconut (Cocos nucifera), grape (Vitis sp.), graviola (Annona muricata), guava (Psidium guajava), papaya (Carica papaya), peach (Prunus persica), pineapple (Ananas comosus), pineapple and mint (A. comosus and Mentha spicata), red fruits (Rubus sp. and Fragaria sp.), seriguela (Spondias purpurea), strawberry (Fragaria sp.), tamarind (Tamarindus indica), umbu (Spondias tuberosa), and yellow passion fruit (Passiflora edulis) were analyzed in terms of chromaticity, phenolic compounds, carotenoids, and in vitro antioxidant activity using ferric reducing antioxidant power (FRAP) and 1,1-diphenyl-2-picrylhydrazyl (DPPH) assays. Data were processed using principal component analysis (PCA) and hierarchical cluster analysis (HCA). Antioxidant capacity was measured by DPPH and FRAP assays, which showed significant (P < 0.01) correlation with total phenolic compounds (r = 0.88 and 0.70, respectively), total flavonoids (r = 0.63 and 0.81, respectively), and total monomeric anthocyanins (r = 0.59 and 0.73, respectively). PCA explained 74.82% of total variance of data, and the separation into 3 groups in a scatter plot was verified. Three clusters also suggested by HCA, corroborated with PCA, in which cluster 3 was formed by strawberry, red fruits, blackberry, açaí, and grape pulps. This cluster showed the highest contents of total phenolic compounds, total flavonoids, and antioxidant activity.

Comprehensive evaluation of antioxidant activity: a chemometric approach using principal component analysis

A novel chemometric approach is described for evaluating the radical scavenging activity of biogenic amine related compounds by using the 2,2-diphenyl-1-picrylhydrazyl (DPPH) procedure and principal component analysis (PCA) tool. By a comprehensive chemometric investigation of variations in the radical scavenging profiles provided by the full-range UV-Vis spectra for different test duration and different relative concentrations (different molar ratio - [AH]/[DPPH]) of the investigated compounds, new antioxidant activity evaluation parameters were proposed. The new proposed parameters (PC1, mPC1, maxPC1) are in good agreement with the reference DPPH results (% RSA and IC50 derived from the reference DPPH test), obtained for the investigated amines and reference antioxidants. Much more, the PCA profiles are better patterns for the comprehensive characterization of radical scavenging activity of compounds, allowing visualization of complex information by a simple graphical representation and underlying the (dis)similarity of compounds related both to the reaction kinetics and compounds concentration.

Evolution of phenolic compounds from color and flavor problems to health benefits

Early studies focused on the negative effects on color and flavor of foods, followed by exploration of the antioxidant properties and the associated health benefits. The growing body of evidence suggests that plant-based polyphenols may help prevent or delay the onset of a multiplicity of diseases. Newer work suggests that a variety of polyphenols can alter the expression of genes in the inflammatory pathway. Data also show that the absorption of the polyphenols is very limited. Insulin resistance and endothelial and mitochondrial dysfunction are hallmarks of the metabolic syndrome and aging and occur at the early stages of the disease. There is limited clinical evidence that certain polyphenolic metabolites by virtue of their anti-inflammatory activities can improve insulin sensitivity and endothelial and mitochondrial function, suggesting that polyphenols are good for disease prevention. The goal of this review is to summarize the evolution and emphasize the potential benefits of polyphenols.
