Abstract
This study explores upright versus inverted catching and crating of spent laying hens. Both catching methods were compared using a cost-benefit analysis that focused on animal welfare, ergonomic, and financial considerations. Data were collected on seven commercial farms (one floor system and six aviary systems) during depopulation of approximately 3,000 hens per method per flock. Parameters such as wing flapping frequency, catcher bird interaction, incidence of catching damage and hens dead on arrival (DOA) were measured and compared between catching methods. Ergonomic evaluations were performed via catcher surveys and expert assessment of video recordings. The wing flapping frequency was lower (3.1 ± 0.6 vs. 4.0 ± 0.5, P < 0.001) and handling was gentler (1.9 ± 0.5 vs. 4.4 ± 0.5, P < 0.001), both on a 7-point Likert scale, for upright versus inverted catching. However, more person-hours per 1000 hens were required for upright than inverted catching (8.2 ± 3.2 h vs. 4.8 ± 2.0 h, P = 0.011), with only wing bruises being significantly less common for upright than inverted catching (1.1 ± 0.6 % vs. 1.7 ± 0.7%, P = 0.04). Upright catching was 1.8 times more expensive than inverted catching; compensation for this cost would require a premium price of approximately €0.0005 extra per egg. Ergonomically, both catching methods were considered demanding, although catchers (n = 29) preferred inverted catching. In conclusion, this study showed animal welfare benefits of upright vs. inverted catching. Industry adoption of upright catching will depend on compensation of the additional labor costs, adjustments to labor conditions and shorter loading times.

Abstract
A voluntary, producer-driven welfare benchmarking system has been explored as a way of incentivising welfare improvement in pasture-based beef cattle and providing transparency and accountability to the industry. This study aimed to determine the acceptability and feasibility of measures for inclusion in a welfare benchmarking system and how this is influenced by respondents' attitudes and beliefs. A survey was disseminated online to Australian producers in July 2020. Producers were asked to indicate the welfare measures (n = 59) they thought most important to check to determine if cattle on pasture-based farms have a good quality of life (QOL) and the feasibility of collecting animal-based welfare data and completing a stockperson attitudes questionnaire. Basic demographic and attitude data were also collected. Responses from 274 producers were included (52% male) with median land size 340 Ha (range 4-500,000) and herd size 200 head (2-200,000). Feasibility was related to QOL attitudes for 11 of the 17 animal-based measures (p < 0.01-0.02). Feasibility was also related to land or herd size but was not affected by other demographics, such as gender. In all significant dependencies, feasibility was reported as greater in those who thought it important to check the corresponding welfare measure. Producers who rated QOL as very important were also more likely to perceive the collection of animal-based data as feasible. A well-designed and targeted programme to educate producers on why certain welfare measures are important will be crucial to increase uptake and retention in a voluntary producer-driven welfare benchmarking scheme.

Abstract
The present review has two objectives, the first is to investigate the differences in temperament between Bos indicus and Bos taurus breeds and determining the effects on production due to positive treatment and to compare this with negative HAR, by using the Five Domain Model as framework. The second objective is to discuss potential strategies to achieve better HAR when working with Bos indicus cattle. Bos indicus are more reactive and temperamental than Bos taurus cattle. When human animal relationships (HAR) are evaluated, Bos indicus cattle may react with greater intensity. They may be more likely to develop a negative emotional state, especially in extensively raised Bos indicus cattle that are handled only a few times each year. Bos indicus cattle can have positive emotional states when they have frequent positive interactions with people. Interactions with people, both positive and negative, would be in the fourth Domain of the Five Domains model. Cattle that are more reactive during handling may also have lower weight gain, even when they have abundant feed. This would be in the first Domain of Nutrition. When cattle are handled in races and corrals, injuries may be more likely to occur. Injuries and bruises would be in the third Domain of Health. Injuries could be caused by either poor handling practices by people or poor handling facilities. Yelling or electric prod use would be examples of poor HAR. Second Environmental Domain issues may be broken facilities or slick, slippery floors that are associated with falls.

Abstract
Understanding the views of those working along the value chain reliant on livestock is an important step in supporting the transition towards more sustainable farming systems. We recruited 31 delegates attending the Pig Welfare Symposium held in the United States to participate in one of six focus group discussions on the future of pig farming. Each of these six group discussions was subjected to a thematic analysis that identified four themes: (1) technical changes on the farm; (2) farm and industry culture; (3) the farm-public interface; and (4) sustainability. The results of this study illustrate the complexity and diversity of views of those working along the associated value chain within the swine industry. Participants spent the majority of their time discussing current challenges, including technical challenges on the farm and public perception of pig farms. Participants were more hesitant to discuss future issues, but did engage on the broader issue of sustainability, focusing upon economic and environmental aspects.

Abstract
To improve animal welfare for cattle and pigs during transport and at slaughter, online training modules for all staff including employees in the lairage pen, the slaughter line as well as animal welfare officers are developed at Freie Universität Berlin, Germany. Before starting the development of these modules, an expert elicitation survey using a modified Delphi approach was performed to identify action points considered most relevant for animal welfare during transport and slaughter, and as having the potential for improvement through training. In total, 49 participating experts rated predetermined action points of each step in the transport and slaughter process in two survey rounds. The rating scale included numbers 0 (='not relevant', respectively 'no possibility of improvement') to 10 (='very relevant', respectively 'very high possibility of improvement'). None of the action points were rated with a median score of less than 5. Assessment of fitness for transport, unloading at the abattoir, handling at stunning and exsanguination were amongst the highest rated action points, and were therefore selected to develop online training modules. The Delphi approach was seen as a valuable method to include external expertise to select the most relevant action points for the development of online training modules.

Abstract
Treating livestock as senseless production machines has led to rampant depletion of natural resources, enhanced greenhouse gas emissions, gross animal welfare violations, and other ethical issues. It has essentially instigated constant scrutiny of conventional meat production by various experts and scientists. Sustainably in the meat sector is a big challenge which requires a multifaced and holistic approach. Novel tools like digitalization of the farming system and livestock market, precision livestock farming, application of remote sensing and artificial intelligence to manage production and environmental impact/GHG emission, can help in attaining sustainability in this sector. Further, improving nutrient use efficiency and recycling in feed and animal production through integration with agroecology and industrial ecology, improving individual animal and herd health by ensuring proper biosecurity measures and selective breeding, and welfare by mitigating animal stress during production are also key elements in achieving sustainability in meat production. In addition, sustainability bears a direct relationship with various social dimensions of meat production efficiency such as non-market attributes, balance between demand and consumption, market and policy failures. The present review critically examines the various aspects that significantly impact the efficiency and sustainability of meat production.

Abstract
Muslim scholars are not unanimous on the issue of the application of stunning in the halal slaughtering of animals. Appropriate stunning makes animals unconscious instantaneously, thus avoiding unnecessary pain and stress during the slaughtering of animals. The present review comprehensively summarizes the available scientific literature on stunning methods in view of their halal compliance during the slaughter of animals. The issue of maximum blood loss, reversibility of consciousness, and animals remaining alive during the halal cut are the key determinants of approval of stunning in the halal slaughter. Further, missed stuns due to poor maintenance of equipment, improper applications, and poor restraining necessitates additional stunning attempts, which further aggravates pain and stress in animals. Scientific findings suggest that halal-compliant stunning technologies are reversible, do not kill animals prior to the halal cut, and do not obstruct blood loss. There is a need to carry out further research on the refinement of available stunning technologies and their application, proper restraints, proper identification of the death status of animals, and assurance of animal welfare in commercial halal meat production.

Abstract
The work aims to study the economical losses of the condemnation of bovine and buffalo carcasses, in order to estimate the losses in animals slaughtered in Santarém-Pará, Brazil, between 2016 and 2018, with data obtained from the Municipal Department of Agriculture and Fisheries. Sex, age, origin, total number of animals slaughtered and causes of condemnation of carcasses were considered. All analyzes were performed in RStudio version 1.1.463. In this study, 71,277 bovine carcasses and 2,016 buffalo carcasses were inspected, of which 300 bovine and 71 buffalo were condemned. The highest prevalence of causes of condemnation in cattle was recorded for brucellosis (0.0020%) and tuberculosis (0.0019%). In buffaloes, tuberculosis (0.0307%) peritonitis (0,0019%) were the main causes of condemnations. Economical losses were more evident in females, for both species. The projection of economical losses related to the condemnation of carcasses showed a sharp growth for the next three years, if the average growth remains constant. The biggest projected loss was for bovine females, with an accumulated projection of $ 5,451.44. The smallest estimated loss was for buffalo males, projected at more than thirty-two thousand reais. The most important causes of condemnation report the diseases brucellosis and tuberculosis, as the ones with the greatest impact. In the buffalo species this was even more accentuated, even though the number of buffaloes slaughtered is more than 35 times smaller than the number of cattle.

Using Expert Elicitation for ranking hazards, promoters and animal-based measures for on-farm welfare assessment of indoor reared beef cattle: an Italian experience. Vet Res Commun 2023; 47:141-158. Abstract
On-farm welfare assessment gives the opportunity to monitor and improve the quality of the animal life on the farm. In order to build the first Italian public standard for the welfare of indoor reared beef cattle, a list of 25 potential hazards and 22 potential promoters of beef cattle welfare was judged by a group of national experts by taking into account their negative or positive impacts on the welfare-state of the target population. In addition, the experts were asked to rank a list of 11 animal-based measures for identifying the most appropriate and important for measuring negative welfare outcomes in beef cattle. Based on experts' ratings, an "impact score" (ISoverall) was calculated for the proposed measures. Management hazards and promoters were ranked to have a greater impact on beef cattle welfare than housing factors. Keeping cattle in large (≥ 40 animals) and heterogeneous groups obtained the highest ISoverall among the proposed hazards (ISoverall = 5.54), followed by the presence of animals without free access to drinking water (ISoverall = 4.39) and the use of high-concentrate corn silage diets (concentrate > 80% and fiber < 6%) (ISoverall = 4.39). On the other hand, housing animals in small (≤ 20 animals) and homogeneous groups (ISoverall = 5.41), checking them at least twice a day (ISoverall = 4.62) and rearing cattle in loose housing systems with access to an outdoor area/pasture (ISoverall = 4.27) were ranked among the top 3 promoters. Concerning animal-based measures, experts scored lameness, severe respiratory diseases, body condition scoring and mortality rate to be measures most important for assessing serious welfare impairment.

Abstract
IntroductionThe impact of pre-slaughter management practices on fed beef cattle welfare is a multifaceted and well researched subject matter. Factors such as transportation, handling, lairage time and several animal characteristics can directly impact the cattle’s behavior, mobility, blood lactate and cortisol levels, likelihood of injury and ultimately overall cattle welfare. Animal welfare continues to grow as a critical component of slaughter in the fed beef industry, yet a formal review of related research does not exist.MethodsA scoping review was performed in order to (1) catalog pre-slaughter management factors that impact fed beef cattle welfare at the time of slaughter, (2) identify indicators used to evaluate the impact of pre-slaughter management on fed beef cattle welfare at slaughter, and (3) gain further understanding of the relationship between pre-slaughter management factors and fed beef cattle welfare outcome indicators at slaughter. Three data bases were ultimately searched: PubMed, CAB Abstracts, and Web of Science. The concepts used in the database searches were the population of interest (i.e., fed beef cattle), the location in the supply chain, preslaughter management factors, and welfare outcomes.ResultsA total of 69 studies were included in final analysis for this review, including studies from six geographic regions around the globe. Studies involving alternative slaughter methods (e.g., religious stunning or mobile slaughter) were not included in the formal analysis of this review, but still merited an in-depth discussion within this paper. After reviewing the studies, a total of 37 pre-slaughter factors and 69 indicators of welfare were measured throughout. Pre-slaughter management factors were then categorized by: animal characteristics; environmental characteristics; handling; lairage; transportation; and water/feed. Outcomeindicators of welfare were categorized into: behaviors; health, injury and disease; physiological; and stunning and insensibility.DiscussionPre-slaughter factors relating to transportation and handling, and welfare outcomes measured by behaviors and physiology were of the most researched throughout the studies.The results of this review offer a catalogue of commonly researched factors and indicators of welfare measured during the pre-slaughter phase, as well ast he relationships between them. This review also offers further substantial evidence that a multitude of events in the pre-slaughter phase affect fed beef cattle welfare and a collection of highly applicable welfare indicators to expedite further research on the effects of pre-slaughter factors and the application of improved practices.

Abstract
The present study constitutes a review of the scientific articles about animal welfare in terrestrial farmed animals, published in 19 countries of Latin America. The main objectives were to quantify and characterize articles produced between 1992 and 2021 in farm animals' welfare using "Web of Science [v.5.32]" and "CAB Abstracts" databases. A total of 663 articles were found for the period analyzed, which were mainly in English (87%). The countries with the most publications were Brazil (43%), México (25%), Chile (12%), Uruguay (10%), Colombia (4%) and Argentina (2%). Cattle was the farm species most considered in the publications (41%), and the studies addressed mostly the on-farm production stage (76%). There was a rapid increase in the number of articles published in the last 15 years, accounting for 95% of the publications. This could be related to the publication of welfare standards by the World Organization for Animal Health (WOAH) since 2005, the creation of the Collaborating Center for Animal Welfare and Sustainable Livestock Systems-Chile-Uruguay-México in 2009, a Regional Strategy of Animal Welfare prompted by the WOAH in 2012 and the inclusion of animal welfare in the veterinary curriculum. The fact that most articles were in English shows that Latin American researchers have somehow overcome the challenge of publishing in a non-native language and their research can be read/cited worldwide. However considerable gaps in scientific productivity were identified in comparison to European and North American countries. Scientific research concerning the livestock industry in Latin America faces new challenges arising from the need to move toward more sustainable production systems within the One Welfare and One Health frame.

Abstract
Despite evidence-based "improvements" in animal health products and management, losses to bovine respiratory disease have increased with associated animal wastage, welfare concerns, and antimicrobial use; questioning the fitness of current disease-centric paradigms for improving critical outcomes in complex adaptive systems. Systems thinking is used to model a paradigm shift from mental models based on management of failure outcomes in a flawed pass/fail dichotomy to one of managing success outcomes on a continuum. In the proposed wellness paradigm, the notion of health as absence of disease is rejected and replaced with perspective of disease as symptomatic of systems insufficiently supporting wellness.

Abstract
In beef cattle, reactivity to humans or handling by humans is considered a safety issue for farmers and to impact on productivity. Several testing procedures, associated with potential risks for both humans and animals, have been developed, involving simple human approach, free animals individually handled, or restraint in handling facilities. We investigated how such tests may be related to each other and which dimensions they reveal. Of particular interest is the tolerance towards human approach or handling involving human or chute restraint, and whether they could be linked to the daily activity of animals and their growth, potentially enabling this activity to be used as a proxy for evaluating this reactivity to humans and handing. We observed 498 Limousin breeding bulls, of up to 14 months of age, at a bull testing station during standardised behavioural tests involving humans and handling: human approach at the feed barrier or out of the home pen during individual morphological evaluation, docility test where the experimenter attempts to maintain the bull in the corner of a test pen, and during restraint in a chute for weighing. Routinely collected on farm at approximately 8 months of age, bulls' reaction scores to human approach were also available. The animals wore MEDRIA collars with 3D-accelerometers that continually monitored their daily activities (ingestion, rumination, rest, etc.). Three 2-week periods spanning 4 months were analysed. We conducted a varimax-rotated principal component analysis (PCA) on behavioural tests: the first component (23.63% of the variability) summarised scores during restraint in the chute, and the second component (19.36% of the variability) summarised avoidance distance score at the feed barrier, score during morphological evaluation, and docility score. The daily activity of the bulls was consistent across the three 2-week periods that were analysed and was not related to the PCA dimensions (P > 0.1). Animals that could be approached at a closer distance reached a heavier weight at the age of 400 days (P < 0.001). In conclusion, within the limits of the test used, breeding bulls' reactivity to humans or handling comprised at least two dimensions: reactivity to human approach and reactivity to restraint (in the chute); which cannot be predicted from the animal's daily activity. A bull's acceptance of being approached by humans was positively related to its growth.

Abstract
Brazil is a main global producer, exporter, and consumer of farm animal products. Information about the knowledge and attitudes of Brazilian citizens and consumers towards the different dimensions of meat production sustainability can support policy discussions and guide the industry to adopt production systems compatible with societal expectations. Here we provide a historical, social, and economic overview of meat production and consumption in Brazil, review the scientific literature on Brazilian public attitudes towards meat production and consumption, and discuss some actions Brazil is taking to develop more sustainable production systems. We show that Brazilians expect affordable meat products with high organoleptic, sanitary, nutritional qualities and produced under high ethical standards. The pace of discussions and changes in policies and in meat production systems needs to accelerate to follow domestic and international demands and the changes in ethical expectations of society. Constructive dialogue between all interested stakeholders, including citizens and consumers, needs to be fostered to design more sustainable meat production systems.

Abstract
Purpose: The objective of this review is to describe the main technologies (automated activity monitors) available commercially and under research for the detection of estrus and calving alerts in dairy cattle. Sources: The data for the elaboration of the literature review were obtained from searches on the Google Scholar platform. This search was performed using the following keywords: reproduction, dairy cows, estrus detection and parturition, electronic devices. After the search, the articles found with a title related to the objective of the review were read in full. Finally, the specific articles chosen to be reported in the review were selected according to the method of identification of estrus and parturition, seeking to represent the different devices and technologies already studied for both estrus and parturition identification. Synthesis: Precision livestock farming seeks to obtain a variety of information through hardware and software that can be used to improve herd management and optimize animal yield. Visual observation for estrus detection and calving is an activity that requires labor and time, which is an increasingly difficult resource due to several others farm management activities. In this way, automated estrous and calving monitoring devices can increase animal productivity with less labor, when applied correctly. The main devices available currently are based on accelerometers, pedometers and inclinometers that are attached to animals in a wearable way. Some research efforts have been made in image analysis to obtain this information with non-wearable devices. Conclusion and applications: Efficient wearable devices to monitor cows’ behavior and detect estrous and calving are available on the market. There is demand for low cost with easy scalable technology, as the use of computer vision systems with image recording. With technology is possible to have a better reproductive management, and thus increase efficiency.

Abstract
This study aimed to determine the relationship between the metabolome and changes in growth rate (i.e., liveweight change, LWC) and molasses-lick block supplement intake (MLB) of grazing cattle. Weaner beef cattle were fed for 220 days with a sequence of feed types and blood samples, growth rate, and supplement intake were taken on five points in time. The relative abundance (RA) of plasma metabolites were determined using proton nuclear magnetic resonance (NMR). Sixty-four per cent of the metabolites identified were associated with LWC but only 26% with MLB intake (P < 0.05). Periods with faster growth rate showed high availability of amino acids (i.e., valine, leucine, isoleucine, phenylalanine and tyrosine), acetate, and 3-hydroxybutyrate. Periods with lower growth rate were associated with high RA of lipids, choline and acetate. The metabolic profile of individual animals during a period of compensatory growth (after periods of poor performance) showed that high-performing animals were characterised by lower RA of amino acids (i.e., valine, leucine, isoleucine, methylhistidine), creatinine, creatine, pyruvate, 3-hydroxybutyrate, and acetyl groups. It is speculated that high-performing animals have faster uptake of these metabolites from the bloodstream. Cattle growth rate over time was associated with their metabolome which could be used to ensure that the availability of certain metabolites promoting growth is tailored in feed supplements to improve production.

Abstract
Transport by land is an essential component for the commercialization of fattening pigs and can have a negative impact on animal welfare. In slaughterhouses, the presence of dead and non-ambulatory animals is an indicator of poor welfare during transport. The objective of the study was to identify risk factors associated with the frequency of dead and non-ambulatory pigs during transport. A survey was conducted in three Colombian slaughterhouses. Data were collected from 372 batches (n = 18,437 gilts barrows) and transported directly from the farms to the slaughterhouses. Each truck was individually evaluated; a structured survey was administered to drivers, non-ambulatory and dead pigs on arrival were identified and blood samples were obtained from non-ambulatory pigs to assess physiological indicators of stress. Mortality rates per batch at arrival ranged from 0.08 to 0.17% and prevalence of non-ambulatory pigs per batch ranged from 0.84 to 1.37%.The results of the multilevel mixed effects linear regression model identified the following as risk factors associated with the frequency of total transport losses: truck speed (P = 0.04), distance (P < 0.01), transport time (P < 0.01), load size (P < 0.01) and the driver (P < 0.01) including the farm as a fixed effect. This study identified risk factors that increased the probability of total transport losses during land transport under Colombian commercial conditions. But more research that involves commercial drivers is needed to develop effective strategies to improve Colombian pig's transportation chain.

Abstract
Animal husbandry and working conditions for livestock farmers have changed significantly in recent years as agriculture has been exposed to economic as well as health, environmental and ethical challenges. The idea of interdependent welfare between humans and animals is more relevant now than ever. Here, we innovatively bridge two disciplines-ergonomics and applied ethology-to achieve an in-depth observational understanding of real husbandry practice (by farmers, inseminators, vets) at work. Ergonomics aims to gain a detailed understanding of human activity in its physical, sensitive and cognitive dimensions in relation to a task. It also aims to transform work situations through a systemic approach drawing on multiple levers for change. Here, we examine how this analysis holds up to the inclusion of animals as an integral component of the livestock farmer's work situation. Applied ethology studies behaviours in animals managed by humans. It aims to understand how these animals perceive their environment, including how they construct their relationship with the livestock farmer. This paper proposes an original conception of the human-animal relationship in animal husbandry that employs core structural concepts from both disciplines. From an ergonomic point of view, we address the human-animal relations by examining the relationship between 'prescribed' and real work practices, between work and personal life situation, between professional task and human activity. On the applied ethology side of the equation, the human-animal relationship is a process built through communication and regular interactions between two 'partners' who know each other. The goal is to understand how each partner perceives the other according to their multimodal sensory world and their cognitive and emotional capacities, and to predict the outcome of future interactions. We cross-analyse these scientific views to show, based on examples, how and in what way they can intersect to bring better analysis of these human-animal relationships. We reflect on common working hypotheses and situated observational approaches based on indicators (behaviour and animal and human welfare/health). This analysis prompts us to clarify what human-animal relational practice means in animal husbandry work, i.e. a strategy employed by the livestock farmer to work safely and efficiently in a healthy environment, where the animal is treated as a partner in the relationship. In this perspective, the challenge is for the livestock farmer's activity to co-build a positive relationship and avoid being subject to this one.

Abstract
Previous research has clearly shown that short-term stresses during the last few minutes before stunning can result in Pale Soft Exudative (PSE) pork in pigs or increased toughness in beef. Electric prods and other aversive handling methods during the last five minutes are associated with poorer meat quality. Handlers are more likely to use aversive methods if livestock constantly stop and are difficult to move into the stun box. Factors both inside and outside the slaughter plant contribute to handling problems. Some in-plant factors are lighting, shadows, seeing motion up ahead, or air movement. Non-slip flooring is also very important for low-stress handling. During the last ten years, there have been increasing problems with on-farm factors that may make animals more difficult to move at the abattoir. Cattle or pigs that are lame or stiff will be more difficult to move and handle. Some of the factors associated with lame cattle are either poor design or lack of adequate bedding in dairy cubicles (free stalls) and housing beef cattle for long periods on concrete floors. Poor leg conformation in both cattle and pigs may also be associated with animals that are reluctant to move. Indiscriminate breeding selection for meat production traits may be related to some of the leg conformation problems. Other on-farm factors that may contribute to handling problems at the abattoir are high doses of beta-agonists or cattle and pigs that have had little contact with people.

Abstract
The visual, auditory, and physical environment livestock are handled in will have an effect on the ease of movement through races and corrals that are used for veterinary treatment, loading trucks or at slaughter houses. When livestock refuse to move easily through a handling facility, people are more likely to use electric goads (prods) or other aversive methods to move them forward. This is a major animal welfare concern. Modification of the environment can improve livestock movement and reduce aversive handling methods. In existing facilities used for handling cattle, pigs or sheep, simple changes such as, adding a light to a dark race entrance or reducing loud intermittent noise may improve livestock movement. Eliminating distractions such as, a noisy truck near a lairage can also facilitate cattle movement and reduce stopping or turning back. In an outdoor facility, sharp shadows on the floor were more likely to be associated with cattle stopping compared to no shadows or soft faint shadows. The installation of small solid walls to prevent approaching animals from seeing either moving equipment, vehicles or people in front of them may also improve forward livestock movement. Non-slip flooring is essential to prevent slipping and falling during handling. Rebuilding or completely redesigning an existing facility is often not required. Outcome based indicators should be used to assess continuous improvements in handling. Some of the commonly used measurable of handling are slipping and falling, stopping, turning back, vocalization during handling and electric prod use. Collecting data both before and after an environmental modification can be used to determine its effectiveness.

Abstract
In animal production, producers face different problems inherent to production systems. Today society is increasingly concerned about more sustainable systems and animal welfare. Applied ethology can be a tool to solve some of these problems through these approaches. The purpose of this review is to show succinctly some sustainable behavioral technologies whose application favors animal welfare and productivity. The examples cover areas of behavioral problems associated with multiple births, where odor transfer can be used to substitute or add newborns to a foster mother; early weaning, where some alternatives for a gradual break may reduce the stress of separation; early experience on the development of food preferences, where behavioral problems like neophobia can be avoided; early detection of sick animals, where recognition of some specific behaviors could help early identification of diseases, even before the appearance of clinical signs; social isolation on ease of handling, where different techniques have proved their effectiveness modifying the temperament of the animals; design of facilities and management, where it is highlighted how when considering the behavior of the animals in the design and management, better results are obtained; social isolation, facilitation, and buffering, where the presence of other members of the group can modify the consumption and sexual behaviors of pen-mates, or even alleviate suffering; and human-animal interaction on productivity, where the relevance of a positive human-animal interaction is highlighted. After reviewing the scientific literature on the subject, we can conclude that several modern livestock management practices might induce stress in animals, affecting their welfare, health, and productive performance. Applied animal behavior could be a sustainable and effective option to understand and solve some of these problems, and in many cases does not even require a strong economic investment for producers.

Abstract
Simple Summary Research investigating the influence of human-animal interactions on beef cattle production and welfare often occurs during stress-inducing contexts, such as restraint and transport. Given that beef cattle which graze on expansive rangelands do not frequently interact with humans, assessment of animal response to humans may be inaccurate if they are only recorded during such stressful context. Future research aimed at identifying the causes and impacts of individual human–cattle relationships may consider conducting experiments while the cattle are in a low stress context, such as while ruminating, resting, or, grazing. By adapting methods used to research wildlife response to humans, researchers may be able to better understand how animal personality and previous experience can influence cattle production and welfare. Abstract Human-animal interaction (HAI) research spans across many scientific fields and animal taxa. For livestock species, HAI research tends to focus on animals that are managed in close proximity with humans such as poultry, dairy cattle, and swine. Given the nature of rangeland cattle production, HAI research with beef cattle often occurs in and around the processing environment. This high arousal context may skew behavioral and physiological responses by the animals due to the potentially negative interaction. The aim of this review is to describe cattle production on rangelands, examine the considerations and limitations of current HAI research used to evaluate interaction quality or traits of rangeland cattle, identify contexts in which rangeland cattle interact with humans, and provide recommendations for improving future HAI research with rangeland cattle. Current research delineating individual differences in response to humans by beef cattle occur during routine husbandry and management on rangelands (pragmatic) and in a research context (experimental). Human-cattle interactions can be distinguished based on the quality and goal of the interaction into four broad categories: human presence, human approach, human contact, and restraint. Limitations of HAI research with rangeland cattle are identified and reconciled by recommendations for HAI research that can take place outside of the processing environment (i.e., while cattle are ruminating, resting or grazing on rangelands).

Abstract
Understanding temperament is an important part of cattle production since undesirable temperament may cause serious problems associated with aggression, maternal care, and human safety. However, little is known about how farmers define or assess temperament, especially in autochthonous cattle breeds. The aim of this study was to explore perceptions of farmers about the temperament of the Pyrenean cattle breed with special attention to beef cow-calf systems in Spain. The methodology used to obtain the information was focus group discussions (FGD). Farmers defined temperament as a behavioural response to challenging situations imposed by human handling. Specific terms used were related to active or passive reactions to fear (e.g., "strong", "aggressive", "nervous", "fearful"). The speed of response to stimuli was also important. Female temperament was thought to become more docile with age while bull temperament was more variable. Maternal aggressiveness was highlighted as a potential human safety problem, but also desirable in an extensively bred animal who may need to defend calves against predators. Anatomical characteristics were seen as unreliable predictors of temperament, while behavioural indicators were more widely used, such as "alertness", which was a general trait of the breed, and "gaze", which, when associated with an alert expression, suggests a potential threat. Sensory acuity, such as sight and smell, were thought to be related with temperament in some FGDs but there was no overall agreement as to whether different behavioural responses were due to differences in sensory acuity. The results from the study could be useful during training programs or in the development of new genetic selection schemes and evaluation protocols involving cattle temperament.

Simple Summary Animal welfare is difficult to quantify, especially among farmers, in extensive rural sheep farms where there is a low level of animal interaction and a lack of technology. In this study, we searched for iceberg indicators of animal welfare using the Five Domains Model approach, and studied the relationship among sheep flight distance, sheep handling training and job satisfaction in extensive rural sheep systems. A structured survey was used to obtain socio-demographical, job satisfaction and sheep handling training data. A full animal welfare evaluation was performed on all farms; furthermore, a health status examination was also made in which blood and stool samples were taken. Four iceberg indicators were found with the potential to predict overall animal welfare scores on farms, and one to study state of mind in extensive rural sheep systems, as well as interactions among job satisfaction, training in sheep handling and sheep mind state. Abstract Animal welfare for sheep in extensive rural farms is difficult to quantify among rural farmers due to several factors, including the lack of technology and the low level of interaction they have with the animals. The purpose of this study was to search for animal-based iceberg indicators using the Five Domains Model approach and study the relationship between sheep reactive behavior (flight distance), sheep handling training and farmers job satisfaction. Thirteen extensive commercial dual-purpose sheep farms (n = 520 animals) were evaluated in Marulanda, Caldas (Colombia, South America). On-farm Animal Welfare Indicators (AWIN) were assessed using an adapted version of this protocol. Socio-demographic characteristics, sheep handling training and job satisfaction were evaluated using a structured interview. Blood and stool samples were taken to determine Fecal Egg Count and Packed Cell Volume. Bivariate regression models were used to find animal-based indicators that predicted Nutrition, Ambience, Health and Behavior welfare domains, and a Qualitative Behavior Analysis was used for mind state domain analysis. Body condition score (BCS) (p = 0.001), fleece cleanliness (p = 0.03), FAMACHA© Score (p = 0.05), and flight distance in meters (p = 0.19) were found to be indicators, and were useful for predicting overall welfare assessment (R2 = 0.85) on theses farms. Regarding mind welfare domain, Qualitative Behavioral Assessment found two principal components (PC) that explained 82% and 67% of the variance, and described emotional valence and energy levels of sheep, respectively. Sheep handling training (β = −8.75, p = 0.004) and job satisfaction (β = −7.5, p = 0.013) had a negative association with the average flock flight distance. Spearman’s rank correlations were significant (p < 0.001) between Fecal Egg Count, Packed Cell Volume, FAMACHA© Score (FS), Body Weight (BW) and, BCS. The strongest association was observed between Packed Cell Volume (PCV) and Fecal Egg Count (FEC) (r = −0.43), also FS was correlated with PCV (r = −0.28) and FEC (r = 0.21), and BCS was correlated with weight (r = 0.32). We suggest that these animal-based indicators could be useful as iceberg indicators for extensive sheep production systems and may set the ground for more research in small extensive sheep farms to develop strategies to find welfare problems and solutions.

Simple Summary Cattle are transported at least once in their lives, primarily associated with marketing. In Chile one of the main channels for selling animals is auctions. At auction markets, the procedures associated with transport of livestock (loading, unloading and travel) are at least duplicated, affecting their welfare. The aims of this study were to describe the procedures associated with transport and handling of calves (cattle < 9 months old) during marketing through auctions, and to evaluate compliance with Chilean law. A survey of drivers who transport calves from originating farms to markets (OM) and from markets to destination farms (MD) was performed. During loading and unloading, handling by stockpersons, facilities, calf fitness for transport, and behaviour were evaluated using protocols. Most drivers claimed having the training required by law, used bedding material, and provided adequate space for the animals; most OM and MD journeys were less than 2 h. Most calves were assessed as fit for transport. Calves slipped often and some practices associated with poor handling were still observed, mainly during loading. Compliance with the law during transport of calves was adhered to; however, associated handling during unloading and loading is still inadequate, evidencing a need for training. Abstract In Chile, selling animals through livestock markets is common. At markets, stressful events like loading, unloading and travel are at least duplicated. We described procedures associated with transport of calves at 20 markets and evaluated compliance with Chilean law by performing a survey of drivers who transport calves from origin farms to markets (OM) and from markets to destination (MD). During loading and unloading, we evaluated handling by stockpersons, facilities, fitness for transport, and behavioural indicators of the calves through direct observation using protocols. A total of 80% of drivers claimed having the training required by law. The mean travel time was 1 h 31 min for OM and 1 h 44 min for MD journeys (overall range 5 min–40.5 h). Most drivers used bedding material and provided adequate space availability. A total of 99.2% of the observed calves were assessed as fit to transport; slipping, turning back, vocalizing and balking were frequent behaviours observed during loading and unloading. Prohibited practices like prodding and hitting using driving devices were still observed, mainly during loading. Compliance with the law during transport of calves was adhered to; however, the associated handling within markets was still inadequate, evidencing need for training in order to improve animal welfare.

Abstract
Culling is the departure of cows from the herd as a result of sale, slaughter, health, national regulations, salvage, or death. Cull cows are removed from farms with poor health, production, behavior, or other problems, and during pre-slaughter they are sometimes kept without food and water, which compromises their well-being. The objective of the present study was to evaluate the welfare state of culled dairy cows during pre-slaughter using some animal-based measurements and to identify possible associations between them. Data were recorded for 62 different dairy production farms referring to 137 cull cows (n = 60 Holstein and n = 77 Normandy crosses) slaughtered in an abattoir in Colombia (South America). In this study, we evaluated and recorded land transport conditions, the health of animals on arrival to the abattoir, human-animal interaction, stress physiological variables and the association of these variables with characteristic bruises on the carcass, the lairage time, the presence of diseases, and the stage of pregnancy. In total, 98.5% of the cows were very thin, 35.7% were pregnant, and 84.7% had bruising on the carcass. In total, 74.5% had clinical conditions; these included skin lesions (32.4%), mastitis (27.5%), lameness (21.6%), vulvar secretions (8.8%), diarrhea (6.8%), and eye carcinoma (2.9%). The total number of cull cows with bruises during pre-slaughter was associated with lot size, transport time, presence of pregnancy, body score condition, and creatine kinase levels. The results suggest that the cows were not fit for transport because their health was severely affected before they left the farms. The animal-based indicators used in this study are useful for evaluating the welfare of cull dairy cows at abattoirs.

Simple Summary The attitudes and empathy of handlers influence human–animal interaction, thereby affecting their behavior toward animals. In this study, we evaluated the association between the attitude and empathy of livestock handlers towards the animals with the quality of human-livestock interactions. A structured survey instrument was used to assess managers’ attitudes and empathy towards livestock. The quality of handling was assessed by recording the individual behavior of each handler during commercial handling procedures; furthermore, it was ascertained whether the quality of handling was affected throughout the workday. Associations were found between the quality of the interactions used by the handlers towards the animals and the positive or negative attitude and empathy scores. It has been concluded that there is an association between handlers’ attitudes and empathy towards animals and the quality of human-animal interaction pre-slaughter. Abstract The human-animal interactions are a key component of human and animal welfare. The quality of this interaction can therefore be assessed by measuring the reaction response of the animals to the handler’s behavior. The aim of this study was to investigate the association between attitude and empathy towards the animals with the quality of human-livestock interactions. Additionally, we aimed to investigate whether the quality of cattle handling deteriorates as the working day progresses. A total of 18 livestock handlers and 1514 Colombian commercial Zebu steers were evaluated. A questionnaire pack consisting of 50 questions regarding demographic information, attitude and empathy characteristics was applied, using a structured interview. Each handlers’ responses to positive and negative attitude and empathy questions were calculated to produce a composite score. Observations of human-animal interactions were made at three times during the day (5:00, 7:00 and 9:00), each observation lasting 30 min. The handlers had an average age of 39.4 ± 3.4 y (range = 18–66 y), with little schooling but a lot of experience in the trade (17.13 ± 14.21 y). During handling, hitting, prodding and hand raising predominated over other actions (p < 0.05), and in response, the cattle behaved by freezing and running. Significant differences were found in the interactions used by handlers depending on the time of day (p < 0.05). The empathy total score ranged from 20 to 100, and the attitude total score between 24 and 120. The average attitude and empathy scores for handlers were 85.05 ± 6.92 (mean ±SD; range, 73–97) and 74.61 ± 4.72 (mean ±SD; range, 65–83), respectively. It has been concluded that there is an association between handlers’ attitudes and empathy towards animals and the quality of human-animal interaction during pre-slaughter.

Abstract
The aim of this study was to evaluate the relationship between temperament in Nellore bulls with carcass and meat quality traits. In total, 1,400 bulls were studied, and temperament was assessed using two measurements: movement score (MOV) and flight speed test (FS). Both MOV and FS were measured at two time points, with background (MOVb and FSb) temperament measured at yearling age, ~550 d after birth, and the preslaughter (MOVps and FSps) temperament measured at the end of the feedlot period. The change of temperament resulting in an increase or decrease in reactivity was also used to measure meat quality. The traits used to define carcass and meat quality included carcass bruises (BRU), hot carcass weight (HCW, kg), ribeye area (REA, cm2), backfat thickness (BFT, cm), marbling score (MS), meat pH after thawing (pH), presence or absence of dark cutters, color parameters of luminosity (L*), redness (a*) and yellowness (b*), cooking loss (CL, %), and Warner-Bratzler shear force (WBSF, kg). A principal component (PC) analysis was initially applied to the carcass and meat quality traits, followed by logistic regression models and linear mixed models to evaluate the effects of temperament on carcass and meat quality. The risks of carcass bruises and dark cutters did not differ as a function of any temperament trait (P > 0.05). In turn, animals classified as high MOVb (reactive) had lower PC3 values (P = 0.05), CL (P = 0.02), and tended to have lower MS (P = 0.08). In addition, animals classified as high FSb (faster and reactive cattle) produced carcasses with smaller REA (P < 0.01), higher meat pH (P < 0.01), lower color gradients (L*, P = 0.04; b*, P < 0.01), and lower PC1 and PC4 scores (P < 0.01) when compared with the low FSb class. For preslaughter temperament, high MOVps was related to lower color a* (P = 0.04), whereas high FSps was related to lower HCW, MS, and PC2 (P < 0.01) than the calmer ones (low FSps). The reduction in MOV was related to more tender meat, and the reduction in FS to heavier carcass and brighter meat. We conclude that excitable temperament in Nellore cattle may have negative effects in some of the carcass and meat quality attributes assessed, mainly those related to muscle deposition on carcass and color gradients. Measurement of temperament before the cattle entered the feedlot was a better predictor of carcass and meat quality traits, compared with temperament assessment at the end of the feeding period.

Abstract
The rising global demand for animal protein is leading to intensification of livestock production systems. At the same time, societal concerns about sustainability and animal welfare in intensive systems is increasing. This review examines the risks to welfare for beef cattle within commercial feedlots in Australia. Several aspects of the feedlot environment have the potential to compromise the physical and psychological welfare of cattle if not properly monitored and managed. These include, but are not limited to, animal factors such as the influence of genetics, temperament and prior health, as well as management factors such as diet, pen design, resource provision, pregnancy management, and stock-person attitudes and skills. While current industry and producer initiatives exist to address some of these issues, continuous improvements in welfare requires accurate, reliable and repeatable measures to allow quantification of current and future welfare states. Existing measures of welfare are explored as well as proxy indicators that may signal the presence of improved or reduced welfare. Finally, potential future measures of welfare that are currently under development are discussed and recommendations for future research are made.

Abstract
Excessive human population growth, uncontrolled use of natural resources, including deforestation, mining, wasteful systems, biodiversity reduction by agriculture, and damaging climate change affect the existence of all animals, including humans. This discussion is now urgent and people are rethinking their links with the animals we use for clothing, food, work, companionship, entertainment, and research. The concepts of one health, one welfare, and one biology are discussed as a background to driving global change. Nothing should be exploited without considering the ethics of the action and the consequences. This review concerns domesticated animals, including those used for human consumption of meat, eggs, and milk; horses kept for work; and dogs kept for company. Animal welfare includes health, emotional state, and comfort while moving and resting, and is affected by possibilities to show behavior and relationships with others of the same species or with humans. We show some examples of the relations between humans and domesticated animals in the environmental context, including zoonotic diseases, and consider the consequences and the new paradigms resulting from current awareness.

Abstract
The aim of this study was to identify the influence of different catching practices during manual upright handling on broiler welfare and behavior. Catching was examined in a total of 4,595 Cobb broilers with average live weight of 3.2 kg and 42 days old. Six catching practices were evaluated: shed curtain position, loading time, catching method, catching team, height of the crates from the floor, and placement of the bird in the crate. Behavioral welfare indicators were defined as follows: 1) broiler agitation in the catcher's hands, measured when the birds flapped their wings, kicked, or wriggled in the hands; 2) broiler striking the crate entrance as it was being placed in the crate, measured when the birds get the head, wings, or legs, hit at the crate entrance; and 3) broiler agitation in the crate, measured when birds flapped the wings or jumped inside the crate for 3 s or more after placement in the crate. A logistic regression model was used to calculate the chance of occurrence of each behavioral welfare indicator due to the handling factors. All catching practices evaluated in the present study influenced the birds' welfare and behavior. Thus, some procedures during broiler catching potentially improved their behavior, making them less prone to accidents, and consequently improved their welfare. The catching process should be performed with the curtains in the closed position, carrying one broiler per catcher in an upright position while containing its wings, carefully placing the birds inside the crates, and with the crates being positioned at a height of at least 21 cm from the ground. Additionally, it was concluded that more attention should be given to the broiler catchers, since the position of the curtain, loading time, and position of the crate during handling can influence the work done by them, affecting the welfare and behavior of both humans and birds.

Abstract
To support the furtherance of positive animal welfare, there is a need to develop meaningful and practical positive welfare indicators for on-farm welfare assessment. Considering the perspectives of farmers is arguably critical in this regard. Doing so helps ensure positive welfare indicators reflect farmers' existing welfare norms and attitudes and, are thus, of practical relevance to them. However, a key issue for such development is the dearth of knowledge on farmers' perspectives of positive welfare. To address this, this study uses qualitative interviews to directly examine livestock farmers' perspectives of positive welfare. Findings reveal that farmers describe elements of positive welfare which are broadly in line with indicators suggested in the positive welfare literature. These elements include animal autonomy, play, positive affect, positive human-animal relationships, social interaction, and appropriate genetic selection. Additionally, this study finds that farmers construct the reduction of negative aspects of welfare as their primary management concern and mostly construct positive welfare as arising indirectly from this. Insights into the importance that farmers of different sectors and systems give to different aspects of positive welfare indicators are also explored. The implications of these findings and the similitudes between farmers' perspectives and the positive welfare literature are discussed.

Abstract
The number of broilers slaughtered globally is increasing. Ensuring acceptable welfare conditions for birds at the time of slaughter is paramount in meeting legislative and retailer specifications, and in producing high quality meat. There is knowledge that welfare training programs for members of the farming and red meat slaughter industry can improve animal welfare measures and product quality, however there is little evidence of the effects of welfare training in poultry processing plants. In our study, a comprehensive welfare training program was introduced to a Costa Rican and a British commercial broiler primary processing plant, both of which slaughter birds by way of neck cut post electrical water bath stunning. The effects of this program on some welfare and product quality measures were investigated, both immediately and six months post training. The welfare measures that showed significant improvements post training included; flapping at shackling, pre-stun shocks, stun parameters and effective neck cut. Product quality measures including broken wings and red pygostyles also improved, however the positive effect of training was not seen in all quality measures. Welfare training does have the potential to improve broiler welfare and product quality at slaughter, and these data could help the development and targeting of future welfare training courses and encourage the uptake of welfare training in the poultry slaughter industry.
