A systematic review of animal based indicators of sheep welfare on farm, at market and during transport, and qualitative appraisal of their validity and feasibility for use in UK abattoirs

Sheep fatigue during transport: Lost in translation?

Although sheep are commonly transported long distances, and sheep welfare during transport is a topic of research and policy discussion, the subject of their fatigue during transport has been under-researched. The current qualitative study, focused on the EU and UK, aimed to critically analyse stakeholder views on issues relating to sheep fatigue, including behavioural indications of fatigue, the interplay between fatigue and other factors, and the practicalities of identifying fatigue in commercial transport conditions. Insight into stakeholder perceptions of these issues could contribute to the body of knowledge regarding sheep fatigue during transport, potentially playing a part in future efforts to improve fatigue understanding and detection. Eighteen experts from different stakeholder groups were interviewed. Reflexive thematic analysis of interview data yielded four themes and three sub-themes. The first theme, "Let's anthropomorphise it a little bit", underscores the pervasiveness of anthropomorphism and suggests using it in a conscious and deliberate way to drive stakeholder engagement and policy change. The second theme, "We think that they're like we are and they're not", cautions against wholesale transfer of human experiences to animals. The third theme, 'See the whole animal', advocates using Qualitative Behaviour Analysis (QBA), proven reliable in other contexts, to deepen and enrich our current understanding of fatigue. The fourth theme, 'Fatigue "never comes up"', highlights the fact that fatigue is rarely if ever discussed in the context of sheep transport. These themes suggest several avenues for future research, including developing QBA-based assessments for fatigue to improve welfare during transport.

Opportunities for Regulatory Authorities to Assess Animal-Based Measures at the Slaughterhouse Using Sensor Technology and Artificial Intelligence: A Review

Animal-based measures (ABMs) are the preferred way to assess animal welfare. However, manual scoring of ABMs is very time-consuming during the meat inspection. Automatic scoring by using sensor technology and artificial intelligence (AI) may bring a solution. Based on review papers an overview was made of ABMs recorded at the slaughterhouse for poultry, pigs and cattle and applications of sensor technology to measure the identified ABMs. Also, relevant legislation and work instructions of the Dutch Regulatory Authority (RA) were scanned on applied ABMs. Applications of sensor technology in a research setting, on farm or at the slaughterhouse were reported for 10 of the 37 ABMs identified for poultry, 4 of 32 for cattle and 13 of 41 for pigs. Several applications are related to aspects of meat inspection. However, by European law meat inspection must be performed by an official veterinarian, although there are exceptions for the post mortem inspection of poultry. The examples in this study show that there are opportunities for using sensor technology by the RA to support the inspection and to give more insight into animal welfare risks. The lack of external validation for multiple commercially available systems is a point of attention.

Influence of the Slaughter Method on the Hygienic Quality of Beef Cattle Meat and Animal Welfare Biomarkers

The main objective of this research was to carry out a comparative study between different types of slaughter in beef cattle with and without stunning. In addition, the hygienic quality of the obtained meat was determined through microbiological analysis and the animal welfare at the time of slaughtering was assessed by means of physiological parameters. A total of 52 blood samples collected at the slaughterhouse during slaughter (10 for each type of slaughter: regular, halal, and halal with stunning; 10 at the time of resting; and 12 from rotating box slaughter) were analysed for physiological parameters indicating animal welfare status, namely, glucose, cortisol, lactate dehydrogenase (LDH) and creatine kinase (CK). In addition, the meat from 30 of the above animals was analysed for aerobic mesophilic bacteria, enterobacteria and coliforms. Moreover, a radiological study of the possible skull damage due to the non-penetrative captive bolt used at the time of stunning in the halal rite slaughter was carried out. A significance difference (p < 0.05) in the microbiological counts per type of slaughter was observed. It was proven that the amounts of glucose, LDH, CK, and cortisol in plasma were influenced (p < 0.05) by the type of slaughter. The halal rite slaughter using stunning with a non-penetrative captive bolt resulted in the best hygienic quality of meat and obtained the lowest values for all animal welfare biomarkers.

The Importance of the Slaughterhouse in Surveilling Animal and Public Health: A Systematic Review

From the point of public health, the objective of the slaughterhouse is to guarantee the safety of meat in which meat inspection represent an essential tool to control animal diseases and guarantee the public health. The slaughterhouse can be used as surveillance center for livestock diseases. However, other aspects related with animal and human health, such as epidemiology and disease control in primary production, control of animal welfare on the farm, surveillance of zoonotic agents responsible for food poisoning, as well as surveillance and control of antimicrobial resistance, can be monitored. These controls should not be seen as a last defensive barrier but rather as a complement to the controls carried out on the farm. Regarding the control of diseases in livestock, scientific research is scarce and outdated, not taking advantage of the potential for disease control. Animal welfare in primary production and during transport can be monitored throughout ante-mortem and post-mortem inspection at the slaughterhouse, providing valuable individual data on animal welfare. Surveillance and research regarding antimicrobial resistance (AMR) at slaughterhouses is scarce, mainly in cattle, sheep, and goats. However, most of the zoonotic pathogens are sensitive to the antibiotics studied. Moreover, the prevalence at the slaughterhouse of zoonotic and foodborne agents seems to be low, but a lack of harmonization in terms of control and communication may lead to underestimate its real prevalence.

Características bovinas y eventos aversivos durante el faenado en un Centro de Beneficio convencional

El objetivo del estudio fue evaluar la influencia de características de bovinos [condición corporal (CC), lesiones prefaenado (LP), estado de preñez (EP) y estado emocional aparente (EEA)], faenados en un centro de beneficio convencional, sobre la frecuencia de eventos aversivos al bienestar animal y calidad cárnica. Se registró el faenado de 99 bovinos, cuantificando los golpes, torceduras de cola, gritos del operario, puntillazos, tiempos de cada etapa, resbalones, caídas, vocalizaciones e intentos de incorporación. Se determinó pH0h, pH1h, pH24h y goteo en el músculo Longissimus dorsi et lumborum. Los datos se analizaron bajo un Diseño Completo al Azar (DCA). Se halló una correlación inversa entre CC y LP (P<0,05), donde bovinos con menor CC presentaron más lesiones en prefaenado. Durante la conducción, más golpes, gritos del operario, tiempo de conducción y tiempo entre derribo y el exanguinado, estaban asociados a bovinos con EEA nervioso. Durante la sujeción, sucedieron más caídas en bovinos del 2/3 de preñez, y el tiempo de sujeción fue mayor en CC<2,75. En el derribo, mayor frecuencia de gritos del operario y número de puntillazos sucedieron en CC>3,25. Bajo las condiciones del estudio, no se encontraron diferencias en el pH y PG% según CC, LP ni EP; sin embargo, bovinos con EEA tranquilo tuvieron menor PG% que EE nervioso (P<0,05), probablemente, con un estado de mayor excitación y estrés. La calidad cárnica es afectada por EEA, pero es necesario establecer mejoras en las prácticas de manejo e insensibilización en el faenado, con el fin de reducir el tiempo de eventos estresantes.

Practical Application of the Five Domains Animal Welfare Framework for Supply Food Animal Chain Managers

The author has worked as a consultant with global commercial supply managers for over 20 years. The focus of this commentary will be practical application of The Five Domains Model in commercial systems. Commercial buyers of meat need simple easy-to-use guidelines. They have to use auditors that can be trained in a workshop that lasts for only a few days. Auditing of slaughter plants by major buyers has resulted in great improvements. Supply chain managers need clear guidance on conditions that would result in a failed audit. Animal based outcome measures that can be easily assessed should be emphasized in commercial systems. Some examples of these key animal welfare indicators are: percentage of animals stunned effectively with a single application of the stunner, percentage of lame animals, foot pad lesions on poultry, and body condition scoring. A farm that supplies a buyer must also comply with housing specifications. The farm either has the specified housing or does not have it. It will be removed from the approved supplier list if housing does not comply. These types of easy to assess indicators can be easily evaluated within the four domains of nutrition, environment, health and behavioral interactions. The Five Domains Framework can also be used in a program for continuous improvement of animal welfare.

Welfare of equidae during transport

In the framework of its Farm to Fork Strategy, the Commission is undertaking a comprehensive evaluation of animal welfare legislation. This opinion deals with the protection of horses and donkeys during transport. While the opinion focuses primarily on road transport of horses, there are specific sections dealing with the transport of horses on roll-on-roll-off ferries, horses transported by air and the transport of donkeys. In addition, the opinion covers welfare concerns in relation to a specific scenario identified by the European Commission related to the transport of horses on long journeys to slaughterhouses. Current practices related to transport of horses during the different stages (preparation, loading and unloading, transit and the journey breaks) are described. Overall, 13 welfare consequences were identified as being highly relevant for the welfare of horses during transport based on severity, duration and frequency of occurrence: gastro-enteric disorders, handling stress, heat stress, injuries, isolation stress, motion stress, prolonged hunger, prolonged thirst, respiratory disorders, resting problems, restriction of movement, sensory overstimulation and separation stress. These welfare consequences and their animal-based measures are described. A variety of hazards were identified related to factors such as inexperienced/untrained handlers, lack of horse training, structural deficiencies of vehicles/facilities, poor driving skills/conditions, horse separation/regrouping, unfavourable microclimatic and environmental conditions and poor husbandry practices. The opinion contains general and specific conclusions in relation to the different stages of transport. Recommendations to prevent hazards and correct or mitigate welfare consequences have been developed. Recommendations were also developed to define quantitative thresholds for microclimatic conditions within the means of transport and for space allowance. The development of welfare consequences over time was assessed in relation to maximum journey time.

The present Opinion deals with protection of cattle (including calves) during transport. Welfare of cattle during transport by road is the main focus, but other means of transport are also covered. Current practices related to transport of cattle during the different stages (preparation, loading/unloading, transit and journey breaks) are described. Overall, 11 welfare consequences were identified as being highly relevant for the welfare of cattle during transport based on severity, duration and frequency of occurrence: group stress, handling stress, heat stress, injuries, motion stress, prolonged hunger, prolonged thirst, respiratory disorders, restriction of movement, resting problems and sensory overstimulation. These welfare consequences and their animal-based measures are described. A variety of hazards, mainly relating to inexperienced/untrained handlers, inappropriate handling, structural deficiencies of vehicles and facilities, poor driving conditions, unfavourable microclimatic and environmental conditions, and poor husbandry practices leading to these welfare consequences were identified. The Opinion contains general and specific conclusions relating to the different stages of transport for cattle. Recommendations to prevent hazards and to correct or mitigate welfare consequences have been developed. Recommendations were also developed to define quantitative thresholds for microclimatic conditions within the means of transport and spatial thresholds (minimum space allowance). The development of welfare consequences over time was assessed in relation to maximum journey duration. The Opinion covers specific animal transport scenarios identified by the European Commission relating to transport of unweaned calves, cull cows, the export of cattle by livestock vessels, the export of cattle by road, roll-on-roll-off ferries and 'special health status animals', and lists welfare concerns associated with these.

Welfare of pigs during transport

In the framework of its Farm to Fork Strategy, the Commission is undertaking a comprehensive evaluation of the animal welfare legislation. The present Opinion deals with protection of pigs during transport. The welfare of pigs during transport by road is the main focus, but other means of transport are also covered. Current practices related to transport of pigs during the different stages (preparation, loading/unloading, transit and journey breaks) are described. Overall, 10 welfare consequences were identified as highly relevant for the welfare of pigs during transport based on the severity, duration and frequency of occurrence: group stress, handling stress, heat stress, injuries, motion stress, prolonged hunger, prolonged thirst, restriction of movement, resting problems and sensory overstimulation. These welfare consequences and their animal-based measures are described. A variety of hazards were identified, mainly relating to factors such as mixing of unfamiliar pigs, inappropriate handling methods and devices, the use of pick-up pens, inexperienced/untrained handlers, structural deficiencies of vehicles and facilities, poor driving conditions, unfavourable microclimatic and environmental conditions and poor husbandry practices leading to these welfare consequences. The Opinion contains general and specific conclusions relating to the different stages of transport of pigs. Recommendations to prevent hazards and to correct or mitigate welfare consequences are made. Recommendations were also developed to define quantitative thresholds for microclimatic conditions and minimum space allowance within means of transport. The development of the welfare consequences over time was assessed in relation to maximum journey duration. The Opinion covers specific animal transport scenarios identified by the European Commission relating to transport of cull sows and 'special health status animals', and lists welfare concerns associated with these.

Welfare of small ruminants during transport

Overall, 11 welfare consequences were identified as being highly relevant for the welfare of sheep during transport based on severity, duration and frequency of occurrence: group stress, handling stress, heat stress, injuries, motion stress, predation stress, prolonged hunger, prolonged thirst, restriction of movement, resting problems and sensory overstimulation. These welfare consequences and their animal-based measures are described. A wide variety of hazards, mainly relating to inappropriate or aggressive handling of animals, structural deficiencies of vehicles and facilities, unfavourable microclimatic and environmental conditions and poor husbandry practices, leading to these welfare consequences were identified. The Opinion contains general and specific conclusions in relation to the different stages of transport. Recommendations to prevent hazards and to correct or mitigate welfare consequences have been developed. The Relationship between Animal Welfare and Farm Profitability in Cage and Free-Range Housing Systems for Laying Hens in China

Several countries and regions have regulations in place to provide standards for the welfare of production animals, which have implications for breeding, management and trade. In the chicken egg production industry, the welfare impacts of this are not well understood. In the past decades, free-range systems were widely used for local chicken breeds in poultry industry in China, but their use has gradually declined due to the lower competitiveness compared to commercial cage systems. However, the practices of free-range systems for hens raising have gradually increased again over the past decade, as consumer individualized demand for higher food quality and animal welfare has increased. We recruited 14 free-range farms and 45 cage farms from Beijing, Shandong, Hebei, Anhui, Yunnan, Gansu and Jiangsu provinces in China, for an evaluation of hen welfare, production and economic outcomes from farm operations. This study provides data for the welfare outcomes of laying hens in China and preliminarily explored the relationship between welfare level and economic income within farming system types. The researchers visited the farms and used Welfare Quality measures to investigate the welfare, and farm self-reported profits. Nonparametric Mann−Whitney U tests were used to compare the welfare scores between cage and free-range rearing farms. Correlation and regression are used for the analysis of the animal welfare scores, economic data, and production metrics. The general income from free-range farms was linearly correlated with red mite score and stocking density (p < 0.001 and p < 0.05, respectively). The results showed less centimeters of feeder and drinker space per animal in the free-range system than in cage systems (p < 0.05 and p < 0.01, respectively). Welfare scores for both the stocking density and beak condition were significantly better in the free-range systems than the cage systems (p < 0.001), as were qualitative behavior assessment scores (p < 0.05). The total egg production and peak egg production in cage farms were much higher than in free-range farms (p < 0.001), and egg loss rate was significantly lower (p < 0.001). While the production efficiency of free-range farms was lower than that of cage farms, general income per 10,000 hens was actually higher. Our results provide some evidence that some welfare indicators and general income (per 10,000 hens) in free-range farms in China were better than those of cage farms. The results indicate that better parasite control and lower stocking densities may result in improved hen welfare on free-range farms and potentially improve profitability. The level of welfare and economic benefits of free-range farms vary widely, and there was potential room for improvement in feeding space, drinking water space and human−animal relationship.

Relationship between Bruises on Carcasses of Beef Cattle and Transport-Related Factors

The assessment of bruises on carcasses at the slaughterhouse has been lately indicated as a valid method to evaluate cattle welfare. However, little is known about the prevalence and the causes of bruises of cattle slaughtered in Italy. The aim of this study was to collect information concerning the prevalence of bruises on the carcasses of beef cattle slaughtered in an Italian abattoir and to determine a relationship between fresh bruises and transport-related factors. In total, 1265 animals were included in this study, with 21.6% of them being positive for at least one bruise, either fresh or old. In most cases, the bruising was mild, with lesions exclusively located in one area of the carcass. Most of the bruised animals (63%) showed at least one red lesion. Occurrence of such red, fresh bruises varied significantly depending on the body parts (p < 0.0001), with the flank being the most affected area (39.5%), followed by the butt (36.0%) and the front (23.8%). The probability of fresh bruising varied significantly depending on the category of each animal (p < 0.0001), with steers showing fewer red bruises than both heifers and veal. Finally, animals transported in conditions of a high density had a lower probability of bruising (p = 0.0003). These findings support the use of a monitoring scheme based on the presence of bruises to assess cattle welfare at the abattoir level in order to provide feedback to farmers and to implement procedures carried out during transport.

Methodological guidance for the development of animal welfare mandates in the context of the Farm to Fork Strategy

This document provides methodological guidance developed by the EFSA Panel on Animal Health and Welfare to produce Scientific Opinions in response to mandates received from the European Commission in the context of the Farm to Fork Strategy. The mandates relate to the welfare of (i) animals during transport, (ii) calves, (iii) laying hens, (iv) broilers, (v) pigs, (vi) ducks, geese and quails, and (vii) dairy cows. This guidance was developed in order to define the methods and strategy to be applied for responding to the Terms of Reference (ToRs) of the mandates. The mandates each consist of a set of General ToRs which refer to the husbandry systems used in the production of each animal species or the current transport practices for free moving animals and animals transported in cages, and a set of specific ToRs for which difficulties in ensuring animal welfare have been identified and where specific scenarios are envisaged. Part I of the guidance includes a description of welfare consequences for the animals. Part II includes a new methodology for providing quantitative recommendations regarding animal welfare. The proposed methodology follows the assumption that the effect of an exposure variable (e.g. space allowance) on animal welfare can be quantified by comparing the expression of an animal-based measure (ABM) under 'unexposed conditions' (e.g. unlimited space) and under high exposure (e.g. restrictive conditions). The level of welfare as assessed through this ABM can be quantified for different levels of the exposure variable (e.g. at increasing space allowances) and quantitative recommendations can thus be provided. The final version of the methodological guidance was endorsed for public consultation, which took place between 14 February 2022 and 31 March 2022. The comments received are integrated in this document.

Efficiency Analysis as a Tool for Revealing Best Practices and Innovations: The Case of the Sheep Meat Sector in Europe

The European sheep meat sector faces technical, market and financial challenges that threaten its economic performance and overall sustainability. At the same time, the sector is characterized by poor and slow adoption of innovations that could help towards facing these challenges. In this study, the technical efficiency of extensive, semi-intensive and intensive sheep meat farms in France, Spain and the UK was explored to reveal the profile of the most efficient ones and identify the best practices and innovations that these farms apply. The most efficient sheep meat farms reared large flocks, used available infrastructure at full capacity and managed human labor in a rational way. These best farms emphasized feeding and grazing innovations, marketing strategies, breeding programs and use of digital technologies. The uptake of such practices and innovations by farms of similar production systems could help to increase the productivity and economic performance of the sheep meat sector.

Abstract

The slow adoption of innovations is a key challenge that the European sheep sector faces for its sustainability. The future of the sector lies on the adoption of best practices, modern technologies and innovations that can improve its resilience and mitigate its dependence on public support. In this study, the concept of technical efficiency was used to reveal the most efficient sheep meat farms and to identify the best practices and farm innovations that could potentially be adopted by other farms of similar production systems. Data Envelopment Analysis was applied to farm accounting data from 458 sheep meat farms of intensive, semi-intensive and extensive systems from France, Spain and the UK, and the structural and economic characteristics of the most efficient farms were analyzed. These best farmers were indicated through a survey, which was conducted within the Innovation for Sustainable Sheep and Goat Production in the Europe (iSAGE) Horizon 2020 project, the management and production practices and innovations that improve their economic performance and make them better than their peers.

Cattle welfare assessment at the slaughterhouse level: Integrated risk profiles based on the animal's origin, pre-slaughter logistics, and iceberg indicators

Detection of on farm and transport animal welfare problems at slaughterhouse level is a key issue for the meat industry; however, usually, the assessments do not include basic aspects of animal health. For that reason, it is necessary to develop an assessment method that has an integrative scope and identifies the risk profiles in animals. Therefore, the aim of the present study was to detect cattle welfare indicators that can be implemented at the slaughterhouse level and to develop integrated risk profiles based on the animal's origin, pre-slaughter logistics, and animal-based indicators. We recorded the origin, commercial category, transportation details, and horn size of 1040 cattle upon arrival at the slaughterhouse. Cattle welfare was measured based on individual scores for vocalizations, stunning shots, carcass bruises, meat pH, severe hoof injuries, and organ condemnations. To characterize operational and logistic practices from the farm to the slaughterhouse, a two-step cluster analysis was applied to the aforementioned variables (production system, cattle type, horn size, journey distance, vehicle type), which identified four clusters: small feedlot and free-range profile (C1, n = 216, 20.8 %), feedlot profile (C2, n = 193, 18.6 %), culled dairy cows profile (C3, n = 262, 25.2 %), and free-range profile (C4, n = 369, 35.5 %). The animal's diet and environmental conditions might have influenced the development of hoof disorders in C1 animals (P = 0.023), the proportion of animals that were re-shot was highest in C2 animals (P = 0.033), and C3 and C4 animals were most likely to suffer injuries such as severe bruising (P = 0.001). In addition, the number of stunning shots, meat pH, carcass bruises, severe hoof injuries, and liver condemnations, explained a significant variation in the incidence of various health and welfare consequences based on an animal's origin, which confirmed their importance as 'welfare iceberg' indicators. The study provided detailed data that can be included into assessment methods for the welfare of slaughter cattle, which can be tailored to specific production systems.

Animal-Based Indicators for On-Farm Welfare Assessment in Sheep

As we keep and use sheep, we need to be able to assess their welfare and deal with welfare problems as they arise. To assess welfare, a comprehensive protocol based on valid and feasible indicators is needed. The aim of this study was to review the scientific literature and identify protocols and indicators for assessing the welfare of sheep. We identified promising protocols, well-known and established indicators, such as lameness or body condition score, as well as novel indicators that still need to be evaluated to prove their validity, such as pruritic behaviour or resting time. This review provides a starting point for the development of valid and feasible on-farm protocols using animal-based indicators to assess sheep welfare.

Abstract

The value society assigns to animal welfare in agricultural productions is increasing, resulting in ever-enhancing methods to assess the well-being of farm animals. The aim of this study was to review the scientific literature to obtain an overview of the current knowledge on welfare assessments for sheep and to extract animal-based welfare indicators as well as welfare protocols with animal-based indicators. By title and abstract screening, we identified five protocols and 53 potential indicators from 55 references. Three out of the five protocols include animal-based as well as resource-based indicators. All of them were assessed as being practicable on-farm but lacking reliability. Some of the single indicators are endorsed by the literature and widely used in the field like assessment of behaviour, lameness or body condition score. Others (e.g., Faffa Malan Chart FAMACHA©, dag score or pain assessment) are regularly mentioned in the literature, but their reliability and usefulness are still subject of discussion. Several indicators, such as pruritic behaviour, eye condition, lying time or tooth loss are relatively new in the literature and still lack evidence for their validity and usefulness. This literature review serves as a starting point for the development of valid and practicable welfare protocols for sheep.

Factors Affecting the Welfare of Unweaned Dairy Calves Destined for Early Slaughter and Abattoir Animal-Based Indicators Reflecting Their Welfare On-Farm

In many dairy industries, but particularly those that are pasture-based and have seasonal calving, "surplus calves," which are mostly male, are killed at a young age because they are of low value and it is not economically viable to raise them. Such calves are either killed on farm soon after birth or sent for slaughter at an abattoir. In countries where calves are sent for slaughter the age ranges from 3-4 days (New Zealand and Australia; "bobby calves") to 3-4 weeks (e.g., Ireland); they are not weaned. All calves are at the greatest risk of death in the 1st month of life but when combined with their low value, this makes surplus calves destined for early slaughter (i.e., <1 month of age) particularly vulnerable to poor welfare while on-farm. The welfare of these calves may also be compromised during transport and transit through markets and at the abattoir. There is growing recognition that feedback to farmers of results from animal-based indicators (ABI) of welfare (including health) collected prior to and after slaughter can protect animal welfare. Hence, the risk factors for poor on-farm, in-transit and at-abattoir calf welfare combined with an ante and post mortem (AM/PM) welfare assessment scheme specific to calves <1 month of age are outlined. This scheme would also provide an evidence base with which to identify farms on which such animals are more at risk of poor welfare. The following ABIs, at individual or batch level, are proposed: AM indicators include assessment of age (umbilical maturity), nutritional status (body condition, dehydration), behavioral status (general demeanor, posture, able to and stability while standing and moving, shivering, vocalizations, oral behaviors/cross-sucking, fearfulness, playing), and evidence of disease processes (locomotory ability [lameness], cleanliness/fecal soiling [scour], injuries hairless patches, swellings, wounds], dyspnoea/coughing, nasal/ocular discharge, navel swelling/discharge); PM measures include assessment of feeding adequacy (abomasal contents, milk in rumen, visceral fat reserves) and evidence of disease processes (omphalitis, GIT disorders, peritonitis, abscesses [internal and external], arthritis, septicaemia, and pneumonia). Based on similar models in other species, this information can be used in a positive feedback loop not only to protect and improve calf welfare but also to inform on-farm calf welfare management plans, support industry claims regarding animal welfare and benchmark welfare performance nationally and internationally.

Abattoir-Based Measures to Assess Swine Welfare: Analysis of the Methods Adopted in European Slaughterhouses

The assessment of swine welfare requires feasible, reliable, and reasonable indicators. On-farm evaluation of pig welfare can provide valuable information to veterinarians and farmers. However, such protocols can result expensive and time-consuming. With this regard, an interest in the appraisal of swine welfare at abattoir has grown over the recent years. In particular, the use of certain lesions collected directly from slaughtered animals to determine the welfare status of pigs has been evaluated by several authors. In the present review, the different methods developed to score lesions collected directly from the body and the viscera of animals slaughtered in European abattoirs ("abattoir-based measures") are presented. The text specifically focuses on the methods currently available in the literature for the scoring of body, pluck and gastric lesions during post-mortem activities. Moreover, the strengths and weaknesses of abattoir-based measures schemes are discussed. To conclude, the future perspectives of the assessment of pig welfare at the slaughterhouse are described, appealing for a benchmarking system that can be systematically used by veterinarians and other professional figures involved in the process.

Review of Livestock Welfare Indicators Relevant for the Australian Live Export Industry

Animal welfare is an important issue for the live export industry (LEI), in terms of economic returns, community attitudes and international socio-political relations. Mortality has traditionally been the main welfare measure recorded within the LEI; however, high mortality incidents are usually acted upon after adverse events occur, reducing the scope for proactive welfare enhancement. We reviewed 71 potential animal welfare measures, identifying those measures that would be appropriate for use throughout the LEI for feeder and slaughter livestock species, and categorised these as animal-, environment- and resource-based. We divided the live export supply chain into three sectors: (1) Australian facilities, (2) vessel and (3) destination country facilities. After reviewing the relevant regulations for each sector of the industry, we identified 38 (sector 1), 35 (sector 2) and 26 (sector 3) measures already being collected under current practice. These could be used to form a 'welfare information dashboard': a LEI-specific online interface for collecting data that could contribute towards standardised industry reporting. We identified another 20, 25 and 28 measures that are relevant to each LEI sector (sectors 1, 2, 3, respectively), and that could be developed and integrated into a benchmarking system in the future.

Welfare of horses from Mexico and the United States of America transported for slaughter in Mexico: Fitness profiles for transport and pre-slaughter logistics

Every year thousands of horses from Mexico and the United States of America (USA) are transported to slaughter in Mexico, but little is known about their welfare or pre-slaughter logistics. In this study, we recorded the origin, sex, age and condition of horses (121 journeys, 2648 animals) upon arrival to an abattoir in northern Mexico, including transport details. Horse welfare was measured indirectly via individual scores for body condition, coat quality, lameness, ocular and nasal discharge, as well as reactivity to a chute restraint test, all performed shortly after unloading. The average journey duration was 9.69 (±7.6) hours for horses from Mexico and 16.77 (±4.51) hours for horses from the USA (77 % of all journeys). The prevalence of ocular discharge, nasal discharge, skin wounds, lameness and diarrhoea, were 23 %, 12 %, 11 %, 9 %, 1 % (respectively) of all the horses observed, with no significant differences between Mexican and American horses (P ≥ 0.05). During the chute test the American horses were calmer than the Mexican ones (P < 0.001), who were more restless and aggressive (P = 0.001). Likewise, vocalizations in their three variants during the restraint, neigh/whinny (P = 0.018), nicker (P < 0.001), and snort (P = 0.018), were more common in horses from Mexico. In order to help characterize fitness for transport, a two-step cluster analysis was applied using the welfare indicators, suggesting the existence of four clusters (C) evaluated on arrival at the abattoir (from good to very poor fitness): good (profile C4, n = 769, 29.1 %), average (profile C1, n = 799 horses, 30.2 %), poor (profile C3, n = 586, 22.1 %) and very poor (profile C2, n = 494, 18.6 %). In fact, the C4 best welfare group had 0% lame, 0% nasal discharge, 16.4 % ocular discharge, 7.9 % skin wounds. Instead, the C2 poorest welfare group had 45.8 % lame, 61.1 % nasal discharge, 42.8 % ocular discharge, and 19.9 % skin wounds. Results show potential for using nasal discharge, lameness and ocular discharge as key indicators of horse fitness and welfare on abattoir. The study provides detailed scientific data to help establish strategies regarding optimal days of recovery post-transport and fattening for homogenization of weights between animals of different origins, logistic planning, and optimization of logistic resources to minimize the biological cost of long-distance transport.

Developing an Animal Welfare Assessment Protocol for Livestock Transported by Sea

Australian livestock industries face increased scrutiny from animal welfare groups and society, and the long-distance transport of livestock by sea has recently gained particular attention. Other than non-compliance with broad regulatory standards and voyage mortality rates, there is minimal information to ascertain the welfare of exported livestock. There is currently no standardised, validated animal welfare assessment protocol for livestock on-farm prior to live export or when undergoing transport. This study describes a novel assessment protocol suitable for use on live feeder and slaughter animals exported by sea from Australia. Health and welfare indicators for use in the livestock export supply chain were identified by reviewing three internationally recognised animal welfare assessment protocols for livestock; Welfare Quality®, AWIN and AssureWel, as well as consulting with industry compliance standards and guidelines. This paper proposes a welfare protocol designed to assess sheep and beef cattle exported by sea from Australia, and incorporates environmental-, resource-, management- and animal-based measures. In collaboration with industry, this welfare protocol can be tested on commercial livestock consignments, and be used for ongoing management, for increased transparency and to provide feedback to operators for continuous improvement.

Modeling Method for Cost and Carbon Emission of Sheep Transportation Based on Path Optimization

Energy conservation, cost, and emission reduction are the research topics of most concern today. The aim of this paper is to reduce the cost and carbon emissions and improve the sustainable development of sheep transportation. Under the typical case of the “farmers–middlemen–slaughterhouses” (FMS) supply model, this paper comprehensively analyzed the factors, sources, and types of cost and carbon emissions in the process of sheep transportation, and a quantitative evaluation model was established. The genetic algorithm (GA) was proposed to search for the optimal path of sheep transportation, and then the model solving algorithm was designed based on the basic GA. The results of path optimization indicated that the optimal solution can be obtained effectively when the range of basic parameters of GA was set reasonably. The optimal solution is the optimal path and the shortest distance under the supply mode of FMS, and the route distance of the optimal path is 245.6 km less than that of random path. From the cost distribution, the fuel power cost of the vehicle, labor cost in transportation, and consumables cost account for a large proportion, while the operation and management cost of the vehicle and depreciation cost of the tires account for a small proportion. The total cost of the optimal path is 26.5% lower than that of the random path, and the total carbon emissions are 36.3% lower than that of random path. Path optimization can thus significantly reduce the cost of different types and significantly reduce the proportion of vehicle fuel power cost and consumables cost, but the degree of cost reduction of different types is different. The result of the optimal path is the key to be explored in this study, and it can be used as the best reference for sheep transportation. The quantitative evaluation model established in this paper can systematically measure the cost and carbon emissions generated in the sheep transportation, which can provide theoretical support for practical application.

The Potential of Post-Mortem Carcass Assessments in Reflecting the Welfare of Beef and Dairy Cattle

There is increasing interest in utilizing meat inspection data to help inform farmers of the health and welfare of their herds. The aim of this study was to determine whether ante-mortem measures of welfare in beef and dairy cattle (N = 305) were associated with post-mortem measures at a United Kingdom (UK) abattoir. Multiple regression analysis was used to determine the ability of ante-mortem measures of lameness, cleanliness, skin lesions, hair loss and body condition in predicting hot carcass weight and the frequency of carcass bruising. For beef cattle, lameness score (p = 0.04), cleanliness score (p = 0.02) and age (p < 0.001), were predictors of carcass bruise score while lameness score (p = 0.03), body condition (p = 0.01) and sex (p < 0.001) were predictors of hot carcass weight. For dairy cattle, sex (p < 0.001) and slaughter day (p < 0.001) were predictors of carcass bruise score while skin lesion score (p = 0.01), body condition (p < 0.001), age (p < 0.001), slaughter day (p < 0.001) and number of moves (p = 0.01) were predictors of hot carcass weight. These results suggest that recording carcass weight and carcass bruising at meat inspection may have potential as a general indicator of health and welfare status in cattle. However, animal characteristics and variables, such as slaughter day and abattoir staffing, should be taken into account when interpreting the results.

Factors Affecting the Welfare of Calves in Auction Markets

Marketing is described as inherently stressful for cattle. When animals are sold through auction markets, travel time and fasting may be prolonged, and the chance of being mixed with unfamiliar animals is increased. Within Chile, 37% of auctioned cattle are “calves”. To assess factors that may be affecting the welfare of calves during handling and penning in markets, twelve markets were visited. Behavioral indicators of welfare during movement and penning were observed. Handling and facilities were also evaluated. We determined variables associated with differences in behavioral indicators of welfare between groups of calves. An increase in group size, number of blows/hits and other negative interactions, presence of aggressive/rough driving, slippery floor, and inadequate lighting were associated with differences in welfare indices during movement. During penning, not mixing calves from different farms was associated with an increase in positive and a decrease in negative behavioral indicators. Increased stocking density was associated with decreased positive indicators. The increased numbers of daily auctioned cattle, passage of time, and calves not mixed with incompatible animals were associated with a decrease in negative indicators and the presence of males was associated with an increase. Variables associated with negative welfare indicators were mainly linked with handling of calves.

Abstract

Marketing cattle through auctions increases marketing time, exposing animals to more stressful events. Within Chile, 37% of auctioned cattle are “calves”. To assess factors that may be affecting the welfare of calves during movement and penning, twelve markets were visited to evaluate behavioral indicators of welfare, handling, and facilities. Behavioral indicators during movement were classified into movement and other behaviors, and indicators during penning were classified into positive or negative behavioral welfare indicators. For each group of calves, an index was calculated based on a proportion of observed behavioral indicators. Statistical models were built to identify variables associated with changes in these indices. Presence of inappropriate driving, inadequate lighting, and slippery floor was associated with a movement index increase (poorer welfare). Negative tactile interactions were associated with an increase, and group size was associated with a decrease in movement index and other behavior indices. During penning, not mixing animals from different sources was associated with an increase and stocking density with a decrease in positive welfare index. Number of auctioned cattle, observation number, and not mixing with incompatible and/or with calves from different sources were factors associated with a decrease in negative welfare index, and the presence of males was associated with an increase. Behavioral welfare indicators were mostly associated with handling.

Welfare Problems in Cattle, Pigs, and Sheep that Persist Even Though Scientific Research Clearly Shows How to Prevent Them

Poor production and handling practices continue to persist that are both detrimental to animal welfare and financially burdensome. These practices continue to persist for three reasons: (1) a segmented marketing chain where a producer is not held financially accountable for losses; (2) failure to measure and assess chronic painful problems such as lame livestock; and (3) repeating old mistakes, such as housing fattening cattle for long periods of time on bare concrete. Two examples of the first type of losses are bruises caused by poor handling and sick cattle at feedlots caused by failure to vaccinate and precondition weaned calves at the farm of origin. In some segmented marketing systems, there is no economic incentive to vaccinate. When the animals get sick, the responsibility gets passed to the next person. Buyers of meat products can reduce these "passed on" losses by source verification. The first step to reducing problems, such as lame livestock, is to measure the percentage of lame animals and work with the producers to reduce them. Also, transportation payments should be changed and contracts should be based on the condition of the animals at delivery.

Using Longitudinal Assessment on Extensively Managed Ewes to Quantify Welfare Compromise and Risks

Sheep managed extensively can be exposed to several welfare challenges during the year, and the risk of some diseases can increase in warmer and wetter seasons. In this study, the welfare of Merino ewes was examined over a calendar year. The welfare of these animals, kept on a single farm with consistent management, varied substantially. Overall, the largest number of ewes experienced compromise and risk to welfare at weaning, indicating that this was the most vulnerable time. The main welfare issues identified were under and over feeding, ewe mortality, lameness, ecto-parasites (flystrike) and mastitis, all of which could be improved by modifying management practices, such as improved nutritional management and monitoring and better tail docking procedures. Future research must consider that significant variation in the on-farm welfare of ewes occurs during a calendar year, which needs to be accounted for when conducting on-farm assessments.

Abstract

This study examined variation in the welfare of extensively managed ewes and potential welfare risks. A total of 100 Merino ewes (aged 2–4 years) were individually identified and examined at three key stages: pregnancy, lactation and weaning. Eight animal-based welfare measures were used to assess welfare: flight distance, body condition score (BCS), fleece condition, skin lesions, tail length, dag score, lameness and mastitis. Data were analysed by ANOVA and McNemar’s statistics. Overall, the average BCS of the group was in agreement with industry recommendations. However, a number of animals were classified with inadequate condition (either too thin or too fat) across the three observation periods. The presence of heavy dags was greatest at mid-lactation (87%, P < 0.0001), lameness was greatest at weaning (14%, P = 0.01), clinical mastitis was 1% annually, and five ewes were lost from the study. Ewes had better health at mid-pregnancy compared to mid-lactation and weaning. The main welfare issues identified were under and over feeding, ewe mortality, lameness, ecto-parasites (flystrike) and mastitis, all of which have the potential to be reduced with improved management practices. Future welfare assessment programs must consider that significant variation in on-farm welfare will occur in extensively managed systems and this needs to be accounted for when evaluating farms.

Animal-Based Measures to Assess the Welfare of Extensively Managed Ewes

The aim of this study was to assess the reliability and practicality of 10 animal-based welfare measures for extensively managed ewes, which were derived from the scientific literature, previous welfare protocols and through consultation with veterinarians and animal welfare scientists. Body condition score, fleece condition, skin lesions, tail length, dag score and lameness are proposed for on-farm use in welfare assessments of extensive sheep production systems. These six welfare measures, which address the main welfare concerns for extensively managed ewes, can be reliably and feasibly measured in the field.

Abstract

The reliability and feasibility of 10 animal-based measures of ewe welfare were examined for use in extensive sheep production systems. Measures were: Body condition score (BCS), rumen fill, fleece cleanliness, fleece condition, skin lesions, tail length, dag score, foot-wall integrity, hoof overgrowth and lameness, and all were examined on 100 Merino ewes (aged 2–4 years) during mid-pregnancy, mid-lactation and weaning by a pool of nine trained observers. The measures of BCS, fleece condition, skin lesions, tail length, dag score and lameness were deemed to be reliable and feasible. All had good observer agreement, as determined by the percentage of agreement, Kendall’s coefficient of concordance (W) and Kappa (k) values. When combined, these nutritional and health measures provide a snapshot of the current welfare status of ewes, as well as evidencing previous or potential welfare issues.

Evaluation of Animal-Based Indicators to Be Used in a Welfare Assessment Protocol for Sheep

Sheep are managed under a variety of different environments (continually outdoors, partially outdoors with seasonal or diurnal variation, continuously indoors) and for different purposes, which makes assessing welfare challenging. This diversity means that resource-based indicators are not particularly useful and, thus, a welfare assessment scheme for sheep, focusing on animal-based indicators, was developed. We focus specifically on ewes, as the most numerous group of sheep present on farm, although many of the indicators may also have relevance to adult male sheep. Using the Welfare Quality^® framework of four Principles and 12 Criteria, we considered the validity, reliability, and feasibility of 46 putative animal-based indicators derived from the literature for these criteria. Where animal-based indicators were potentially unreliably or were not considered feasible, we also considered the resource-based indicators of access to water, stocking density, and floor slipperiness. With the exception of the criteria “Absence of prolonged thirst,” we suggest at least one animal-based indicator for each welfare criterion. As a minimum, face validity was available for all indicators; however, for many, we found evidence of convergent validity and discriminant validity (e.g., lameness as measured by gait score, body condition score). The reliability of most of the physical and health measures has been tested in the field and found to be appropriate for use in welfare assessment. However, for the majority of the proposed behavioral indicators (lying synchrony, social withdrawal, postures associated with pain, vocalizations, stereotypy, vigilance, response to surprise, and human approach test), this still needs to be tested. In conclusion, the comprehensive assessment of sheep welfare through largely animal-based measures is supported by the literature through the use of indicators focusing on specific aspects of sheep biology. Further work is required for some indicators to ensure that measures are reliable when used in commercial settings.

Pre-slaughter cattle welfare indicators for use in commercial abattoirs with voluntary monitoring systems: A systematic review

Animal welfare has become an important subject of public, economic and political concern, leading to the need to validate indicators that are feasible to use at abattoirs. A systematic review was carried out, which identified 72 cattle welfare indicators (CWI) that were classified into four categories (physiological, morphometric, behavioral and meat quality). Their validity and feasibility for use in abattoirs were evaluated as potential measures of cattle welfare during transportation to the abattoir and at the abattoir itself. Several highly valid indicators were identified that are useful to assess welfare at abattoirs, including body condition score, human-animal interactions, vocalizations, falling, carcass bruising, and meat pH. In addition, some intermediate valid indicators are useful and should be investigated further. Information along the food chain could be used systematically to provide a basis for a more-risk-based meat inspection. An integrated system based on the use of key indicators defined for each inspection step with the setting of alarm thresholds could be implemented.

Addressing the Challenges of Conducting Observational Studies in Sheep Abattoirs

There is significant merit in collecting data via video-recording software, but the subsequent potential for hardware issues and sampling difficulties must be recognized and addressed.

Abstract

The competing needs of maintaining productivity within abattoirs, and maintaining high standards of animal welfare, provide fertile grounds for applied research in animal behavior. However, there are challenges involved in capturing useful behavioral data from the supply chain (from paddock to processing plant). The challenges identified in this report are based on a review of the scientific literature as well as field study observations. This article describes those challenges as they relate to collecting behavioral data on livestock-herding dogs, humans and livestock as they interact in abattoirs, and provides insights and recommendations for others embarking on animal studies in confined spaces, as well as in commercial settings. Direct observation of livestock behavior permits animal-welfare assessments and evaluations of the efficacy of operations in unfamiliar and high-pressure contexts, such as abattoirs. This brief report summarizes the factors that must be considered when undertaking in situ studies in abattoirs. There is merit in passive behavioral data-collection using video-recording equipment. However, the potential for hardware issues and sampling difficulties must be anticipated and addressed. Future research directions and recommendations to avoid such issues are discussed. This information will be highly beneficial to future abattoir studies focusing on efficiency and animal welfare at commercial abattoirs. Furthermore, it may also be relevant to any analyses involving large cohorts of animals in a confined environment.
