Abstract
The low bioavailability of polyphenolic compounds due to poor solubility and stability is a major challenge. Encapsulation of polyphenols in zein-based composite nanoparticles can improve the water dispersion, stability, targeted delivery, and controlled release of polyphenols in the gastrointestinal tract. In this study, we investigated the fluorescence properties, bioactivity, and microstructural characteristics of polyphenols during digestion, revealing that zein nanoparticles protect polyphenols from gastric degradation and promote their sustained release in the small intestine. The effects of different ionic species and salt ion concentrations on the digestive properties of polyphenol complex delivery systems have also been explored. In addition, the formation of "protein corona" structures during digestion may affect bioavailability. These findings highlight the potential of nanoparticle formulations to improve polyphenol stability and absorption. The results of this study may provide new insights and references for the study of polyphenol bioavailability enhancement.

Abstract
BACKGROUND Pigmented maize consumption is of much interest because of its high anthocyanin content and multiple health benefits. OBJETIVES This study was aimed to assess the effect of consuming blue maize tortillas on the anxiolytic capacity, preserve emotional memory, and the expression of brain-derived neurotrophic factor (BDNF) in rats subjected to chronic stress. METHODS Sixty-four 3-month-old male Wistar rats were used, divided into eight groups (n = 8). Four groups were subjected to chronic stress by movement restriction (7 h/daily/7 consecutive days) and the remaining four groups were subjected to standard management. The treatments were commercial food, blue tortilla, anthocyanin extract, or white tortilla, administered for nine weeks to stressed or unstressed animals. In the eighth week, the animals were subjected to the restraint stress model. Subsequently, anxiety-like behaviour was assessed using the elevated plus-maze, and memory and emotional learning were evaluated by the step-down passive avoidance test. The animals were then sacrificed to quantify the relative expression of hippocampal BDNF by RT-qPCR. RESULTS The consumption of anthocyanin extract or tortilla made with blue corn decreased anxiety-like behaviours, additionally, it improved the ability to retain emotionally relevant information, and it upregulated BDNF mRNA expression. PERSPECTIVE Thus, the analyse of the impact of blue tortilla consumption on the nervous system is now necessary to guarantee the nutraceutical value of this food.

Abstract
The prominent flavonoids apigenin and chrysin have been demonstrated to have systemic benefits. Our previous work was first to establish the impact of apigenin and chrysin on cellular transcriptome. In the current study, we have revealed the ability of apigenin and chrysin to alter the cellular metabolome based on our untargeted metabolomics. Based on our metabolomics data, both these structurally related flavonoids demonstrate diverging and converging properties. Apigenin demonstrated the potential to possess anti-inflammatory and vasorelaxant properties through the upregulation of intermediate metabolites of alpha-linolenic acid and linoleic acid pathways. Chrysin, on the other hand, exhibited abilities to inhibit protein and pyrimidine synthesis along with downregulation of gluconeogenesis pathways based on the altered metabolites detected. Chrysin-mediated metabolite changes are mostly due to its ability to modulate L-alanine metabolism and the urea cycle. On the other hand, both the flavonoids also demonstrated converging properties. Apigenin and chrysin were able to downregulate metabolites involved in cholesterol biosynthesis and uric acid synthesis, namely 7-dehydrocholesterol and xanthosine, respectively. This work will provide understanding regarding the diverse therapeutic potential of these naturally occurring flavonoids and help us in curbing an array of metabolic complications.

Abstract
Research continues to provide compelling insights into potential health benefits associated with diets rich in plant-based natural products (PBNPs). Coupled with evidence from dietary intervention trials, dietary recommendations increasingly include higher intakes of PBNPs. In addition to health benefits, PBNPs can drive flavor and sensory perceptions in foods and beverages. Chardonnay marc (pomace) is a byproduct of winemaking obtained after fruit pressing that has not undergone fermentation. Recent research has revealed that PBNP diversity within Chardonnay marc has potential relevance to human health and desirable sensory attributes in food and beverage products. This review explores the potential of Chardonnay marc as a valuable new PBNP ingredient in the food system by combining health, sensory, and environmental sustainability benefits that serves as a model for development of future ingredients within a sustainable circular bioeconomy. This includes a discussion on the potential role of computational methods, including artificial intelligence (AI), in accelerating research and development required to discover and commercialize this new source of PBNPs.

Abstract
Long-term exposure to sunlight and/or blue light causes vision damage to people of all ages. Dietary pigments and polyphenols have been shown to have photoprotective potential for eyes; however, many unknowns regarding the protective mechanism remain. In this study, we used ultraviolet B (UVB) irradiation-induced retinal Müller cells (RMCs) to screen for dietary polyphenols and pigment compounds with effective photoprotective activity. Fucoxanthin (FX) was shown to have the best therapeutic effect, and the mechanism was evaluated via lipidomics analysis. Both intra- and extracellular ROS, mitochondrial depolarization, and DNA damage induced by UVB irradiation were inhibited by FX. Meanwhile, FX modulated the MAPK signaling pathway, which is correlated with apoptosis and inflammation. Our lipidomics data revealed that FX regulated lipid metabolism disorder and protected the membrane structure. These results confirm the effective photoprotective effects of FX, which may lead to new insights into FX-functionalized photoprotective foods.

Abstract
Tart Montmorency cherries (MC) are a particularly rich source of anthocyanins and other polyphenols that have been shown to elicit antioxidant, anti-inflammatory and vasomodulatory actions. The current study aimed to determine the influence of chronic MC supplementation on cognitive function and mood. In a 3-month double-blinded, placebo-controlled parallel study, middle-aged adults (mean ± sd: 48 ± 6 years) were randomly assigned to either 30 ml twice daily of MC (n 25) or the same amount of an isoenergetic placebo (n 25). Cognitive function and mood were assessed before and after supplementation using a computerised cognitive task battery and visual analogue scales. Cerebral blood flow was also monitored by near-infrared spectroscopy during the task battery, and questionnaires were administered to determine subjective sleep and health status and plasma metabolomics were analysed before and after supplementation. After 3 months, the MC resulted in higher accuracy in digit vigilance (mean difference: 3·3, 95 % CI: 0·2, 6·4 %) with lower number of false alarms (mean difference: -1·2, 95 % CI: -2·0, -0·4) compared with the placebo. There was also a treatment effect for higher alertness (mean difference: 5·9, 95 % CI: 1·3, 10·5 %) and lower mental fatigue ratings (mean difference -9·5, 95 % CI: -16·5, -2·5 %) with MC. Plasma metabolomics revealed an increase in a number of amino acids in response to MC intake, but not placebo. These data suggest an anti-fatiguing effect of MC supplementation as well as the ability to improve sustained attention during times of high cognitive demand, this could be related to changes in amino acid metabolism.

Abstract
People are at high risk of exposure to endogenous and exogenous acrolein (ACR). ACR can cause a multitude of illnesses, including cardiovascular disease, Alzheimer's disease, and diabetes. In this study, we investigated the reaction pathway of cardamonin (CAR) or alpinetin (ALP) with ACR and the interconversion of CAR and ALP in vitro at 37 °C in phosphate-buffered saline using liquid chromatography-tandem mass spectrometry (LC-MS/MS). Subsequently, ACR adducts of CAR, ALP, and their metabolites, for example, CAR-ACR-1, ALP-ACR, mono-ACR-pinocembrin chalcone (PIN-ACR), and mono- and di-ACR-naringenin (NAR-ACR and NAR-2ACR), were detected in urine samples, but only CAR-ACR-1 and ALP-ACR were detected in fecal samples from the CAR- and ALP-treated mouse groups using ultraperformance liquid chromatography-MS/MS, respectively. Quantitative analyses showed that CAR, ALP, and their metabolites markedly scavenged ACR in a dose-dependent manner in vivo. Furthermore, we also found that the metabolites of CAR or ALP remained and promoted the ACR-trapping ability.

Abstract
To display the capability of the phenolic acid nutraceutical ferulic acid (FLA) in optimizing the in vitro/in vivo properties of the antiviral drug amantadine hydrochloride (AMH) and achieve synergistically enhanced antiviral effects, thereby gaining some new insights into pharmaceutical cocrystals of antiviral drugs with phenolic acid nutraceuticals, a cocrystallization strategy of dual optimization was created. Based on this strategy, the first drug-phenolic acid nutraceutical cocrystal of AMH with FLA, namely AMH-FLA-H2O, was successfully assembled and completely characterized by employing single-crystal X-ray diffraction and other analytical techniques. The cocrystal was revealed to be composed of AMH, FLA, and water molecules in the ratio of 3 : 1 : 1.5, and charge-assisted hydrogen bonds containing chloride ions crucially maintained the crystal lattice together with water molecules. The in vitro/in vivo properties of the cocrystal were systematically evaluated via both theoretical and experimental methods, and the results indicate that the dissolubility of AMH is down-regulated by two-thirds in the cocrystal, resulting in its potential for sustained pharmacokinetic release and the elimination of the adverse effects of AMH. More importantly, the enhanced antiviral effects of the current cocrystal were proven against four viral strains, and the pharmaceutical synergy between AMH and FLA was realized with a combination index (CI) of less than 1. Thus, the present work provides a novel crystalline product with bright commercial prospect for the classical antiviral drug AMH and also establishes an avenue for the synergetic antiviral application of nutraceutical phenolic acids via the cocrystallization strategy of dual optimization.

Abstract
Consumption of phytochemicals-rich foods shows the health effect on some chronic diseases. However, the bioaccessibility of these phytochemicals is extremely low, and they are often consumed in the diet along with the food matrix. The food matrix can be described as a complex assembly of various physical and chemical interactions that take place between the compounds present in the food. Some studies indicated that the physiological response and the health benefits of phytochemicals are resultant in these interactions. Some food substrates inhibit the absorption of phytochemicals via this interaction. Moreover, processing technologies have been developed to facilitate the release and/or to increase the accessibility of phytochemicals in plants or breakdown of the food matrix. Food processing processes may disrupt the activity of phytochemicals or reduce bioaccessibility. Enhancement of functional and sensorial attributes of phytochemicals in the daily diet may be achieved by modifying the food matrix and food processing in appropriate ways. Therefore, this review concisely elaborated on the mechanism and the influence of food matrix in different parts of the digestive tract in the human body, the chemical interaction between phytochemicals and other compounds in a food matrix, and the various food processing technologies on the bioaccessibility and chemical interaction of dietary phytochemicals. Moreover, the enhancing of phytochemical bioaccessibility through food matrix design and the positive/negative of food processing for dietary phytochemicals was also discussed in this study.

Abstract
Boophone disticha (B. disticha) is a bulbous tropical and subtropical flowering plant widespread in Africa, which is frequently used to treat several human ailments. Until the present, there is no scientific validation on the biological activity of this plant from the Eastern Cape Province of South Africa and as a result, this study aimed to assess the bioactive compounds, free radicals scavenging and anticancer potentials of crude bulb extracts (chloroform, acetone, and ethanol) of Boophone disticha obtained from this geographical location. Standard biochemical techniques and Gas-chromatography mass spectrometry (GCMS) analysis were used to pinpoint the bioactive compounds in the crude extracts sequel to their antioxidant potentials against radicals such as 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2′-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS), hydrogen peroxide and nitric oxide as well as their ferric ion reducing power. In addition, their cytotoxicity effects against Human cervix adenocarcinoma (HeLa) cells were assessed as an in vitro model for anticancer. The phytochemical evaluation of the crude extracts showed the presence of phenolics, flavonoids, and alkaloids. GCMS profiles confirmed the presence of some bioactive compounds in the crude extracts of B. disticha that could be responsible for their biological activities. The plant extracts possessed considerable antioxidant activity and exhibited dose-dependent radicals’ inhibition from all assays carried out. Furthermore, the cytotoxicity effects against HeLa cells recorded inhibition concentration (IC50) of 1.5, 1.6, and 1.9 µg/mL for acetone, chloroform, and ethanolic extracts of B. disticha, respectively. Findings from the present study suggest that B. disticha could be a good prospective source of antioxidant and anticancer agents. Therefore, further research on the isolation and purification of compounds from these extracts are indispensable.

Abstract
A wide-scope analytical method was developed and validated for the determination of tropane alkaloids (TAs) in honey samples. A simple and fast extraction procedure, using a mixture of methanol/water/formic acid (75/25/0.4, v/v/v) as extraction solvent, followed by a clean-up with graphitized black carbon (GBC) and magnesium sulphate was optimized, and compounds were analysed by liquid chromatography coupled to high resolution mass spectrometry (LC-HRMS-Orbitrap). Validation of the proposed method provided adequate linearity (R2 > 0.99), trueness (recoveries 71-120%) and precision (relative standard deviation, RSD ≤ 20.1%), with limits of quantitation (LOQs) at 20 µg/kg (except anisodamine and scopolamine at 40 µg/kg) and a significant matrix effect (≤-50%). Nineteen honey samples were analysed, but only one was positive, containing 27 µg/kg of scopolamine. Additionally, a post-targeted screening was performed, and 47% of samples were contaminated with different herbicides, insecticides and veterinary drugs. Therefore, the proposed analytical method is a powerful tool for both targeted TAs and post-targeted contaminant analyses.

Abstract
This study investigated the phytochemical characteristics and antioxidant activity in leaves, roots, stem, flower, and seed parts of Datura alba (D. alba). The study also assessed the heavy metal (Cr, Mn, Zn, and Cu) accumulation in each part of the plant. Among the phytochemicals, alkaloids were found only in leaves while tannins, flavonoids, and phenols were present in all parts of the plant. For antioxidant activity, free radical scavenging assay for 2,2-diphenyl-1-picrylhydrazyl (DPPH) was performed using ascorbic acid as the standard. Higher activity was shown by stem extract in methanol and leaf extract in n-hexane, ethyl acetate, and chloroform. Furthermore, all the target heavy metals were detected in all plant sections with the highest concentration of Zn in leaves and Cu in stem, root, flower, and seed. Due to stronger antioxidant potential and phytochemical composition, D. alba could prove as valuable prospect in pharmaceutical formulations by taking part in the antioxidant defense system against generation of free radicals.

Abstract
The aim of this work was to extract phenolic compounds from Chardonnay grape marc employing a microwave-assisted extraction (MAE). Firstly, the effect of solvent concentration (30-60%), solid mass (1.0-2.0 g) and extraction time (5-15 min) on the recovery of phenolic content and antioxidant capacity was evaluated using a response surface methodology (RSM). The optimal parameters found by RSM were 48% ethanol for the solvent content, 10 min for the extraction time, and 1.77 g for the solid mass. The extraction was carried out at room temperature to increase scaling-up opportunities at industrial level. It was found that the phenolic profile was mainly composed of flavanols, such as procyanidins, catechin and epicatechin. Furthermore, the polyphenols obtained by MAE showed a DPPH· inhibition value of 87 ± 5% and the total phenolic content was 1.21 ± 0.04 mg GAE/mL. Finally, it was observed that the degradation temperature of the extract (≈ 200 °C) was above the temperature commonly used for the manufacture of protein films by thermo-mechanical processes. This highlights the potential use of this extract as a bioactive additive in protein film forming formulations for food and pharmaceutical applications.
