Abstract
BACKGROUND An essential component in the development of sustainable pig production is the reduction of nitrogen excretion in fattening pigs. Pig feeds typically contain high levels of dietary crude protein, and due to incomplete conversion to muscle tissue, excess nitrogen is excreted, resulting in environmental problems such as nitrate pollution and greenhouse gas emissions. Therefore, improving protein efficiency (PE), i.e., the proportion of dietary protein that remains in the carcass, is desirable. The aim of this study was to estimate the heritability (h2) of PE and its genetic correlations with phosphorus efficiency, three performance, seven meat quality and two carcass quality traits when pigs were fed a 20% protein-restricted diet, using 1071 Swiss Large White pigs. To determine PE, the intake of feed with known nutrient content was accurately recorded for each pig and the nitrogen and phosphorus content of the carcass was determined using dual-energy X-ray absorptiometry. RESULTS We found an average PE of 0.39 ± 0.04 and a heritability of 0.54 ± 0.10. PE showed a high genetic correlation with phosphorus efficiency (0.61 ± 0.16), moderate genetic correlations with feed conversion ratio (- 0.55 ± 0.14) and average daily feed intake (- 0.53 ± 0.14), and a low genetic correlation with average daily gain (- 0.19 ± 0.19). While PE has favourable genetic correlations with the performance traits and some meat quality traits, there is a potentially unfavourable correlation of PE with meat colour (redness [rg = - 0.27 ± 0.17]; yellowness [rg = - 0.31 ± 0.18]) and intra-muscular fat (IMF; rg = - 0.39 ± 0.15). Feed conversion ratio (FCR) also showed unfavourable genetic correlations with meat lightness, redness yellowness, IMF and cooking loss. CONCLUSIONS PE is a heritable trait that can be considered in breeding programs to reduce the environmental impact of pig production. We found no strong negative correlation of PE with meat quality traits, and that there is potential to indirectly select for improved phosphorus efficiency. Selecting nutrient efficiencies might be a more suitable strategy to reduce nitrogen pollution from manure than focusing on FCR because the latter also shows genetic antagonism with some meat quality traits in our population.

Abstract
The aim of the present study was to estimate the chemical composition (water, lipid, protein, mineral, and energy contents) of carcasses measured postmortem using dual-energy X-ray absorptiometry (DXA) scans of cold half-carcass or 11th rib cut. One hundred and twenty beef-on-dairy (dam: Swiss Brown, sire: Angus, Limousin, or Simmental) bulls (n = 66), heifers (n = 42), and steers (n = 12) were included in the study. The reference carcass composition measured after grinding, homogenization, and chemical analyses was estimated from DXA variables using simple or multiple linear regressions with model training on 70% (n = 84) and validation on 30% (n = 36) of the observations. In the validation step, the estimates of water and protein masses from the half-carcass (R2 = 0.998 and 0.997; root mean square error of prediction [RMSEP], 1.0 and 0.5 kg, respectively) and 11th rib DXA scans (R2 = 0.997 and 0.996; RMSEP, 1.5 and 0.5 kg, respectively) were precise. Lipid mass was estimated precisely from the half-carcass DXA scan (R2 = 0.990; RMSEP = 1.0 kg) with a slightly lower precision from the 11th rib DXA scan (R2 = 0.968; RMSEP = 1.7 kg). Mineral mass was estimated from half-carcass (R² = 0.975 and RMSEP = 0.3 kg) and 11th rib DXA scans (R2 = 0.947 and RMSEP = 0.4 kg). For the energy content, the R2 values ranged from 0.989 (11th rib DXA scan) to 0.996 (half-carcass DXA scan), and the RMSEP ranged from 36 (half-carcass) to 55 MJ (11th rib). The proportions of water, lipids, and energy in the carcasses were also precisely estimated (R2 ≥ 0.882) using either the half-carcass (RMSEP ≤ 1.0%) or 11th rib-cut DXA scans (RMSEP ≤ 1.3%). Precision was lower for the protein and mineral proportions (R2 ≤ 0.794, RMSEP ≤ 0.5%). The cattle category (sex and breed of sire) effect was observed only in some estimative models for proportions from the 11th rib cut. In conclusion, DXA imaging of either a cold half-carcass or 11th rib cut is a precise method for estimating the chemical composition of carcasses from beef-on-dairy cattle.

Abstract
Simple Summary Pig producers are required to supply consistent lean carcasses to the market. However, the pig production cycle contains seasonal variation in carcass fatness, such that pigs finished in spring have a greater carcass backfat thickness than those finished in summer. Our experiment showed that when sows were mated in summer they had an increased incidence of born-light progeny (≤1.1 kg), which when finished in spring, had increased fatness. This finding provides a novel explanation for the seasonal variation of carcass fatness and sets a research direction for future mitigation strategies. Abstract The backfat of pig carcasses is greater in spring than summer in Australia. The unexplained seasonal variation in carcass backfat creates complications for pig producers in supplying consistent lean carcasses. As a novel explanation, we hypothesised that the increased carcass fatness in spring was due to a greater percentage of born-light progeny from sows that were mated in summer and experienced hot conditions during early gestation. The first part of our experiment compared the birth weight of piglets born to the sows mated in summer (February, the Southern Hemisphere) with those born to sows mated in autumn (May; the Southern Hemisphere), and the second part of the experiment compared the growth performance and carcass fatness of the progeny that were stratified as born-light (0.7–1.1 kg) and born-normal (1.3–1.7 kg) from the sows mated in these two seasons. The results showed that the sows mated in summer experienced hotter conditions during early gestation as evidenced by an increased respiration rate and rectal temperature, compared with those mated in autumn. The sows mated in summer had a greater proportion of piglets that were born ≤1.1 kg (24.2% vs. 15.8%, p < 0.001), lower average piglet birth weight (1.39 kg vs. 1.52 kg, p < 0.001), lower total litter weights (18.9 kg vs. 19.5 kg, p = 0.044) and lower average placental weight (0.26 vs. 0.31 kg, p = 0.011) than those mated in autumn, although litter sizes were similar. Feed intake and growth rate of progeny from 14 weeks of age to slaughter (101 kg live weight) were greater for the born-normal than born-light pigs within the progeny from sows mated in autumn, but there was no difference between the born-light and normal progeny from sows mated in summer, as evidenced by the interaction between piglet birth weight and sow mating season (Both p < 0.05). Only the born-light piglets from the sows mated in summer had a greater backfat thickness and loin fat% than the progeny from the sows mated in autumn, as evidenced by a trend of interaction between piglet birth weight and sow mating season (Both p < 0.10). In conclusion, the increased proportion of born-light piglets (0.7–1.1 kg range) from the sows mated in summer contributed to the increased carcass fatness observed in spring.

Abstract
A study was conducted to evaluate the effects of divergent genetic selection for residual feed intake (RFI) on nitrogen (N) metabolism and lysine utilization in growing pigs. Twenty-four gilts (body weight [BW] 66 ± 5 kg) were selected from generation nine of the low RFI (LRFI; n = 12) and high RFI (HRFI; n = 12) Iowa State University Yorkshire RFI selection lines. Six pigs from each genetic line were assigned to each of two levels of lysine intake: 70% and 100% of estimated requirements based on the potential of each genetic line for protein deposition (PD) and feed intake. For all diets, lysine was first limiting among amino acids. Using isotope tracer, N-balance, and nutrient digestibility evaluation approaches, whole-body N metabolism and the efficiency of lysine utilization were determined for each treatment group. No significant interaction effects of line and diet on dietary N or gross energy digestibility, PD, and the efficiency of lysine utilization for PD were observed. The line did not have a significant effect on PD and digestibility of dietary N and GE. An increase in lysine intake improved N retention in both lines (from 15.0 to 19.6 g/d, SE 1.44, in LRFI pigs; and from 16.9 to 19.8 g/d, SE 1.67, in HRFI pigs; P < 0.01). At the low lysine intakes and when lysine clearly limited PD, the efficiency of using available lysine intake (above maintenance requirements) for PD was 80% and 91% (SE 4.6) for the LRFI and HRFI pigs, respectively (P = 0.006). There were no significant effects of line or of the line by diet interaction on N flux, protein synthesis, and protein degradation. Lysine intake significantly increased (P < 0.05) N flux (from 119 to 150, SE 8.7 g/d), protein synthesis (from 99 to 117, SE 10.6 g of N/d), and protein degradation (from 85 to 100, SE 6.6 g of N/d). The protein synthesis-to-retention ratio tended to be higher in the LRFI line compared with the HRFI line (6.5 vs. 5.8 SE 0.62; P = 0.06), indicating a tendency for the lower efficiency of PD in this group. Collectively, these results indicate that genetic selection for low RFI is not associated with improvements in lysine utilization efficiency, protein turnover, and nutrient digestibility.

Abstract
The use of non-invasive techniques to estimate body composition in animals in vivo conforms to the desire to improve the welfare of animals during research and also has the potential to advance scientific research. The purpose of the present study was to determine a predictive equation of the dual energy X-ray absorptiometry (DXA) method for broilers by comparing the measurement of body composition using DXA with that by chemical analysis. In total, 720 day-old Cobb500 broilers were distributed into a split-plot arrangement 3 (crude protein concentrations of diets) × 2 (genders) × 2 (methods of chemical body evaluation), with six replications of 20 birds each. To promote the modification of the body composition of broilers, diets varied in the crude protein concentration, which was 70%, 100% and 130% of the required. Two hundred and sixteen birds in different ages were evaluated by its bodyweight, lean, fat and ash contents. The data were submitted to ANOVA and it was demonstrated that the dietary crude protein levels applied allowed a greater variation of the body composition of the birds. Also, the results indicated that the DXA method did not predict fat mass, lean mass or bone mineral content as well as did chemical composition analysis, resulting in the need to develop regression equations for improving the in vivo prediction of these chemical components. The regression equations developed here enable the feather-free body composition of individual broilers to be directly estimated throughout growth using the DXA non-invasive technique.

Abstract
Different approaches were evaluated to improve the accuracy of carcass yield predictions of Canadian lamb carcasses using manually obtained measurements and dual-energy X-ray absorptiometry (DEXA). Several linear carcass measurements were obtained from a population of commercial lamb carcasses representative of the variability in Canadian slaughter plants (n = 155). Carcass measures were categorized into four sets according to when each measure could be obtained in the slaughter process. Each set of carcass measurements were subjected to stepwise regression and used to develop models for the estimation of lean meat and saleable yield percentages. Tissue depth measures (at the GR site) explained 44% of variation in lean meat yield in hot carcasses and 53% in cold carcasses. When additional parameters were included with cold GR, the regression model explained 61.9% of the variability in lean meat yield. Saleable yield predictions were less accurate (R2 < 0.40); the greatest degree of variability was predicted when the model included ribeye area (R2 = 0.39). The DEXA scans obtained on carcass sides were able to predict about 78% of variability in carcass lean meat yield and 91% of fat content. This information could be used by the lamb meat industry to establish new carcass classification systems based on more accurate lean meat yield values.

Abstract
Dietary ractopamine increases lean tissue deposition and responses increase as dose is increased provided sufficient dietary lysine is supplied. In Australia, diets supplemented with ractopamine (RAC) are formulated with 0.56 g available lysine per MJ digestible energy. The present study was conducted to investigate the interactions between dietary RAC and lysine on growth and carcass characteristics in ad libitum fed (13.8 MJ/kg) boars and gilts. The study involved 108 individually penned pigs at 17 weeks of age (64.1 ± 0.57 kg) in a 2 by 2 by 3 factorial design, with the respective factors being sex (gilt or boar), dietary lysine (low and high, i.e. 0.56 or 0.65 g available lysine/MJ digestible energy, respectively) and dietary RAC (0, 5 or 20 mg/kg) for 28 days. Over the 28-day study duration, both lysine diets containing dietary RAC were sufficient to elicit a response in average daily gain (ADG) (+5.8%, P = 0.026) and carcass weight (3%, P = 0.045), but not in feed efficiency (FE) (P = 0.555). However, over the period of the first 7 days, there were interactions between the effects of RAC and lysine for FE (P = 0.025) and ADG (P = 0.023), with both traits being responsive only to dietary RAC containing the high lysine, which increased FE (+9.1%, P = 0.002) and ADG (+7.2%, P = 0.068). Dietary RAC improved FE in the latter stages of the study, namely Days 15–21 (+5.7%, P = 0.031) and Days 22–28 (+4.9%, P = 0.040). The high RAC diet reduced carcass P2 backfat (–16.5%, P < 0.001) and fat tissue deposition (–6.2%, P = 0.074) and high lysine tended to reduce fat tissue deposition (–13.3%, P = 0.072). A sex by lysine interaction (P = 0.043) was observed for lean tissue deposition at 28 days, such that only the high-lysine diet increased lean deposition in boars (+11%, P < 0.05) but not in gilts. Dietary RAC tended to increase lean deposition (+14.0%, P = 0.067) in the first 14 days; however, only the high RAC diet increased lean deposition (+9.6%, P < 0.05) over 28 days. In conclusion, the current recommended supplementation levels of lysine for commercial gilts and boars fed RAC may limit the response to dietary RAC if the feeding regime is for short durations and boars will not maximise their lean tissue deposition rates.

Abstract
Fifty crossbred (Large White × Landrace × Duroc) female finisher pigs were used to determine the effect of nutritional strategies on intramuscular fat content. The dietary treatments were (A) Control: commercial grower and finisher diet, (Day 68–166), (B) –15% P : E and –vitamin A: a 15% reduced protein : energy grower diet with no supplemental vitamin A (Day 68–110), followed by a commercial finisher diet (Day 111–166), (C) sugar: a grower diet supplemented with 10% sugar (Day 68–110), followed by a commercial finisher diet (Day 111–166), (D) zinc: a grower diet supplemented with 250 ppm zinc (Day 68–110), followed by a commercial finisher diet (Day 111–166), and (E) lecithin: a diet supplemented with 3 g/kg lecithin in the grower and finisher diet (Day 68–166). The effects of lecithin supplementation on compression characteristics of the M. semitendinosus were also studied. These data indicate that there were no significant effects of dietary manipulations on intramuscular fat content. During the grower phase (Day 68–110) pigs offered the low protein : energy and vitamin A-deficient diet had a poorer feed : gain compared with those offered diet containing supplemental sugar. Dietary lecithin supplementation decreased (P < 0.05) hardness and chewiness values for the M. semitendinosus compared with pigs offered the Control diet. Pigs offered the lecithin-supplemented diet also tended (P = 0.090) to have lower cook loss compared with pigs offered the Control diet. Dietary zinc supplementation during the grower phase improved (P < 0.05) the carcass dressing % compared with pigs offered the other diets. Dietary sugar or zinc increased (P < 0.05) the amount of lean in the belly and may be a means to control the rapid rise in the ratio of fat to lean in the belly during the finisher phase. These data indicate that dietary lecithin supplementation has the potential to improve the tenderness of pork but that intramuscular fat is difficult to manipulate nutritionally from an already moderate amount.

Abstract
BACKGROUND Increasing prevalence of obesity and overweight in the Western world, continue to be a major health threat and is responsible for increased health care costs. Dietary intervention studies show a strong positive association between saturated fat intake and the development of obesity and cardiovascular disease. This study investigated the effect of positional distribution of palmitic acid (Sn-1, 2 & 3) of palm oil on cardiovascular health and development of obesity, using weaner pigs as a model for young children. METHODS Male and female weaner piglets were randomly allocated to 4 dietary treatment groups: 1) pork lard (LRD); 2) natural palm olein (NPO); 3) chemically inter-esterified PO (CPO) and 4) enzymatically inter-esterified PO (EnPO) as the fat source. Diets were formulated with 11% lard or with palm olein in order to provide 31% of digestible energy from fat in the diet and were balanced for cholesterol, protein and energy across treatments. RESULTS From 8 weeks onwards, pigs on EnPO diet gained (P<0.05) more weight than all other groups. Feed conversion efficiency (feed to gain) over the 12 week experimental period did not vary between treatment groups. Plasma LDL-C content and LDL-C/HDL-C ratio in pigs fed natural PO tended to be lower compared to all other diets. The natural PO lowered (P<0.02) the plasma triglyceride (TG) content relative to the lard or EnPO diets, but was not different from the CPO diet. The natural PO diet was associated with lower (P<0.05) saturated fat levels in subcutaneous adipose tissue than the CPO and EnPO diets that had lower saturated fat levels than the lard diet. Female pigs had lower lean and higher fat and fat:lean ratio in the body compared with male pigs. No difference in weight gain or blood lipid parameters was observed between sexes. CONCLUSIONS The observations on plasma TG, muscle and adipose tissue saturated fatty acid contents and back fat (subcutaneous) thickness suggest that natural palm oil may reduce deposition of body fat. In addition, dietary supplementation with natural palm oil containing palmitic acid at different positions in meat producing animals may lead to the production of meat and meat products with lower saturated fats. An increase in fat content and a decrease in lean content in female pigs resulted in an increased body fat:lean ratio but gender had no effect on blood lipid parameters or insulin concentrations.

Abstract
One hundred and sixty female Large White × Landrace pigs were obtained at 3 weeks of age, average liveweight (LW) 5.5 ± 0.08 kg, stratified on LW and allocated to four treatments in a factorial design that consisted of two housing treatments, conventional (C) or deep-litter (D), across two growth periods: early (3–13 weeks of age) and late (13–24 weeks of age). At 13 weeks of age eight pigs per treatment (n = 32) were slaughtered, and the remaining pigs (n = 128) moved to new pens where they remained until slaughter at 24 weeks of age. Moving pigs into a new housing system caused a growth reduction, as indicated by significantly lower LW (P = 0.003), compared with pigs that remained within the same housing system, regardless of whether the new system was C or D. Carcass composition results indicated that pigs finished in the D system (24 weeks of age) were not fatter than pigs raised in C housing, with pigs raised entirely in C housing tending to be the fattest (P = 0.090). There was an effect of housing on fat distribution within the carcass where pigs finished in D housing had significantly less fat in the belly primal compared with pigs finished in the C facilities (35.3 versus 31.2%, P = 0.030). These findings suggest that the strategy of moving pigs from D housing to C housing for finishing, to reduce carcass fatness and improve pig growth performance, was not successful as pigs were fatter, lighter and less efficient than pigs of the same age housed in D from wean to finish.

Abstract
Sixty entire male pigs (Large White × Landrace × Duroc crossbred) were individually reared from 45 to 114 kg liveweight in a 2 by 3 factorial experiment to determine the interactive effects of sex (entire male pigs v. male pigs immunologically castrated using Improvac with vaccinations administered at 13 weeks of age and 5 weeks before slaughter) and a ractopamine feeding program (constantly fed 0 or 5 ppm ractopamine for 26 days before slaughter v. a step-up program where 5 ppm of ractopamine was fed for 14 days followed by 10 ppm ractopamine for the final 12 days before slaughter) on growth performance, carcass composition and pork quality. Following the second vaccination, immunocastrated pigs ate more (P < 0.001) and grew faster (P < 0.05) than entire male pigs without affecting feed conversion efficiency. Dietary ractopamine supplementation for the last 26 days before slaughter improved feed conversion ratio (P = 0.024) and daily gain (P = 0.046). Dietary ractopamine supplementation also increased carcass total tissue (P = 0.023) and total lean (P = 0.027) content without affecting the objective meat quality (P > 0.05) in both entire and immunocastrated male pigs. The effects of dietary ractopamine and immunocastration were additive, such that pigs that were immunocastrated and received ractopamine grew 18% faster than control entire males. However, a step-up program of ractopamine supplementation did not provide further improvements in growth performance and carcass composition when compared with constant 5 ppm ractopamine supplementation. These findings indicate that ractopamine supplementation improved growth performance in entire and immunocastrated male pigs, thereby offering a means of improving growth performance of entire males without detrimental effects on pork quality.

Abstract
An experiment was conducted to examine the effect of continual fluctuations in feed intake on grower-finisher pig growth performance and carcass fat-to-lean ratio (F:L). Sixty individually housed female pigs (Landrace x Large White) with initial BW of 29.8 +/- 0.4 kg were randomly allocated to 1 of 4 feeding regimens (n = 15): 1) ad libitum throughout (AL); 2) 85% of the mean intake of the AL group during the previous week (R); 3) 70% of the mean intake on 1 d, and on the following day, 100% of the amount consumed by the AL group during the preceding week, with this pattern repeated every 2 d throughout (D); and 4) 70% of the mean intake for 3 consecutive days, and 100% of the amount consumed by the AL group for the next 3 d, with this pattern repeated throughout the experiment (3-D). Pigs receiving each treatment were fed the same diets during the weaner (10 to 20 kg), grower (20 to 50 kg), finisher 1 (50 to 70 kg), and finisher 2 (70 kg to slaughter at approximately 104 kg) growth phases. Pigs receiving fluctuated feed intake either by the D or 3-D feeding regimen showed a pattern of growth similar to that of pigs on the R feeding regimen. Pigs on the R and 3-D regimens were lighter at 28 d (P < 0.05) and pigs on the R, D, and 3-D regimens were lighter at 63 d (P < 0.05) than pigs on the AL regimen. Pigs on the R, D, or 3-D feeding regimens had a greater G:F between 15 to 42 d of the experiment than pigs fed AL throughout (P < 0.05). The R, D, and 3-D feeding regimens seemed to have some effect on carcass weight and dressing percentage, and pigs had a decreased P2 (located 65 mm from the midline of the carcass at the last thoracic rib) backfat depth (P < 0.05) compared with pigs fed AL. Pigs on the AL and 3-D feeding regimens had thicker subcutaneous fat at the last lumbar vertebrae on the dorsal edge of the loin than pigs on the R feeding regimen (P < 0.05). Carcass and visceral fat content and the F:L in the carcass and primal cuts, as measured by dual energy x-ray absorptiometry, were not different among treatments. However, pigs on the AL and 3-D feeding regimens had decreased estimated bone content in the carcass compared with pigs on the R and D feeding regimens (P < 0.05). The results indicated that continual fluctuation in feed intake either every other day or every 3 d had minimal effects on growth and carcass F:L compared with pigs fed the same restricted amount throughout the experiment.

Abstract
A 5 × 4 factorial experiment was designed in which lambs representing five genotypes were slaughtered at four ages (110, 236, 412 and 662 days of age). The genotypes represented were Poll Dorsetgrowth × Border Leicester Merino, Poll Dorsetgrowth × Merino, Poll Dorsetmuscling × Merino, Merino × Merino and Border Leicester × Merino. Both sexes (ewes and wethers) were represented for each genotype and slaughter age combination. In total, 595 animals were slaughtered and the carcass composition and intramuscular fat were measured. Carcass composition [fat, ash and protein (lean)] was determined by dual energy X-ray absorptiometry, with the intramuscular fat percentage determined using near-infrared spectroscopy following removal and weighing of the entire longissimus thoracis et lumborum (LL) muscle. Analysis revealed that the proportion of intramusular fat in the loin relative to total carcass fat decreases as animals mature, thus indicating that intramusular fat deposition occurs early in the maturation of sheep. Furthermore, as animals became heavier and older the accretion rate of intramuscular fat in the LL muscle slowed down. Both genotype (P < 0.05) and sex (P < 0.001) were found to impact on this pattern, with Border Leicester × Merino animals exhibiting the largest increase in intramuscular fat proportion in the LL muscle (4.92 and 5.50% at 22 months of age for ewes and wethers, respectively). The Poll Dorsetgrowth × Border Leicester Merino animals were found to have the greatest absolute levels of intramuscular fat in the whole LL muscle (80.95 and 97.60 g at maturity for ewes and wethers, respectively). The amount of intramuscular fat significantly increased as the sheep became older and fatter; however, these differences were quantitatively small. As such, finishing prime lambs to high levels of total carcass fatness would have little effect on any eating quality benefits associated with increased intramuscular fat proportion.

Abstract
Hot carcase weight (HCW) and the GR tissue depth (total tissue depth over the 12th rib, 110mm from the midline) were measured on 312 crossbred (Poll Dorset×Merino) lambs with a mean live weight of 47kg. At a position 30mm distal to the lumbar-sacral junction, the depth (RMD) of the rump muscles was measured along with subcutaneous fat depth overlaying the m. gluteus medius (RFD). The subcutaneous fat depth over the m. longissimus (loin) at the 12th rib was measured (Fat C), as was the depth and width of the loin cross section (EMD and EMW, respectively). The right side of each carcase was scanned by a dual energy X-ray bone densitometer and fat and lean weight determined and the percentage of lean and fat content in the carcases calculated. HCW alone accounted for 26% of the variation in percentage lean content (LC), with GR measurement being the single best predictor of LC (R(2)=48.1; r.s.d.=1.89). RFD provided a less accurate and precise estimate of LC (R(2)=37.3; r.s.d.=2.07) than either GR or Fat C (R(2)=46.5; r.s.d.=1.92). Inclusion of HCW with either GR or Fat C provided a small improvement in the amount of variation in LC which could be explained. The measurement of breeding animals by ultrasound includes the terms weight, Fat C and EMD. These predictors when combined explained 49% of the variation in LC whereas by comparison measures of weight, RFD and RMD only explained 42% of the variation in LC. The current method of measuring fat depth over the 12th/13th rib is practical and measurement over the rump does not present an advantage based on the results of this study.

Abstract
Fat depth over the M. longissimus thoracis et lumborum (LL) at the 12th rib (USFat C) and the depth of the LL (USEMD) were measured before slaughter using a real-time ultrasound machine in 147 mixed sex, 22-month-old sheep of five genotypes. Equivalent measures were obtained on the carcasses (Fat C and EMD) and each carcass side was scanned by dual energy X-ray absorptiometry to provide an estimate of composition (percentage lean and fat). There was a significant (P < 0.001) correlation between USFat C and Fat C (fat depth over the LL at the 12th rib measured on the carcass) at r = 0.67. This was also the case for USEMD and EMD (muscle depth of the LL at the 12th rib measured on the carcass) with a significant (P < 0.001) correlation of r = 0.55. Liveweight per se was a poor predictor of Fat C and was of minimal value when used in combination with ultrasonic fat depth measurements. The prediction of Fat C was significantly underestimated by USFat C and this increased as the animals became fatter. The relationship between carcass and ultrasonic measurements of EMD was poor, but better when liveweight was used in combination with USEMD. The prediction of EMD was significantly overestimated by USEMD and this increased as the animals became heavier. Combining USFat C measurement with liveweight significantly (P < 0.001) improved the accuracy (R2) and precision (r.s.d.) with which either the percentage of fat or lean could be estimated. Measurement of USEMD was of no value for the estimation of the percentage of fat or lean. There was no significant (P > 0.05) sex effect on any of the relationships. Ultrasonic measurement of subcutaneous fat depth and muscle depth in heavy fat animals is subject to undefined error, but still provides a means to predict in vivo fat levels and muscle depth. However, the bias associated with the predictions suggest caution should be exercised when measuring heavy fat sheep and the need for further work to confirm the findings of the present study.

Abstract
This study compares the carcass composition of different genotypes of Australian sheep slaughtered at four ages (110, 236, 412 and 662 days of age, or 4, 8, 14 and 22 months of age). The genotypes used were Poll Dorsetgrowth × Border Leicester Merino (PDg × BLM), Poll Dorsetgrowth × Merino (PDg × M), Poll Dorsetmuscling × Merino (PDm × M), Merino × Merino (M × M) and Border Leicester × Merino (BL × M). Approximately 150 mixed sex animals were slaughtered at each age and the right sides (half carcass) were scanned by dual energy X-ray absorptiometry (DXA) for chemical lean, fat and bone mineral percentages of the carcass. Carcass lean percentage decreased (P < 0.001) across sire groups from Merino to Poll Dorset to Border Leicester at each age, while fatness increased (P < 0.001) in the opposite direction. With age, the magnitude of difference between genotypes for fatness became greater. There was a marked increase (P < 0.01) in ash mineral percentages in M × M and PDg × M genotypes relative to other genotypes in the 14- and 22-month groups. There were no differences (P > 0.1) between PDg × M and PDm × M in either chemical lean or fat percentages at any age but ash mineral percentage was higher in the PDg × M genotype at older ages (P < 0.05). This in turn led to differences in chemical lean : ash mineral content at later ages between PDg × M and PDm × M. Wethers had higher chemical lean (P < 0.05) and lower fat (P < 0.05) percentages in the carcass than ewes at all ages but ash mineral and chemical lean : ash mineral content did not differ between sexes. It was clear that the level of chemical lean or fat or ash mineral composition reached by some genotypes at one age was equivalent to that reached by other genotypes at the next measurement age. Those genotypes that reach a specification at younger ages will be more productive for meat production. Purebred Merino genetics will always be less productive in terms of carcass weight and muscle related productive traits (loin weight, semitendinosus muscle weight, eye muscle area) than BL and PD genetics, but the relative productivity of PD and BL genetics will depend on the traits used in the specification [see also Ponnampalam EN, Hopkins DL, Butler KL, Dunshea FR, Warner RD (2007) Genotype and age effects on sheep meat production. 2. Abstract
Porcine somatotropin (pST) treatment of pigs consistently improves daily gain and feed conversion ratio but the daily injections involved can be problematic. The sulfhydryl compound cysteamine hydrochloride (CSH) increases somatotropin secretion in several species, possibly through inhibition of somatostatin secretion. Therefore, it is possible that dietary CSH supplementation may provide a dietary means of increasing pST secretion and improving growth performance in finisher pigs. Eighteen female crossbred (Large white × Landrace) gilts (59.2 kg) were allocated to one of three treatments with the respective factors being a control diet, dietary CSH (0.7 g/kg) and intramuscular pST (5 mg/day) for 5 weeks. After slaughter the whole half carcass was cut into primal cuts which were then dissected to a retail level into lean, fat, bone and rind. Over the first 2 weeks of the study daily gain was increased by both pST (+46%, P < 0.001) and CSH (+12%, P < 0.05) while feed conversion ratio was decreased by pST (–30%, P < 0.001) and CSH (–9.4%, P = 0.08) over this period. Over the entire 5 weeks there was a large and sustained increase in daily gain in pigs treated with pST (+38%, P < 0.001), while dietary CSH tended to cause a more modest increase in daily gain (+7.4%, P = 0.06). As a result, final liveweight (+10.6 and +2.0 kg, respectively) and carcass weight (+5.8 and +1.6 kg, respectively) were increased by pST and CSH. Back fat was decreased by both pST and CSH (–1.7 and 1.0 mm, respectively). Total dissectible tissue was increased by pST (+9.1%, P < 0.001) and CSH (+3.3%, P < 0.05). In pigs treated with pST, the increased tissue was primarily as lean (+11.1%, P < 0.008) and bone (+17.8%, P = 0.017), whereas an accumulation of non significant increases in lean, rind and bone was responsible for the increased dissectible tissue in the carcass of pigs supplemented with CSH. In conclusion, dietary CSH increased daily gain and carcass weight and decreased FCR and P2 backfat, with responses being most pronounced over the first 2 weeks of dietary supplementation and not as great as those caused by exogenous pST treatment.

Abstract
A Hologic QDR4500W dual energy X-ray absorptiometer (DXA) was used to measure body composition in 60 sheep half carcasses ranging from 8 to 28 kg. Half carcasses were from ewes and wethers of mixed genetics. Values determined by DXA, including total tissue mass (TTM), lean tissue mass (LTM), fat tissue mass (FTM) and bone mineral content (BMC), for the half carcass were evaluated by comparison with chemically determined composition. In the case of BMC, the relationship was with chemically determined ash content. Liveweight and chemically determined lean, fat and ash were strongly related to DXA-derived values for TTM, LTM, FTM and BMC, respectively (R2 = 0.999, 0.986, 0.989 and 0.920, respectively). However, because DXA estimates were different from chemically determined values in this sample of carcasses, they needed to be adjusted with the use of appropriate regression equations to correct the in-built algorithms. These data demonstrate the efficacy of DXA as a non-destructive method for determining the composition of the sheep half carcass.

Abstract
The growth and carcass characteristics of 627 crossbred lamb progeny from 20 Poll Dorset sires was studied. The sires were selected on the basis of Australian sheep breeding values (ASBVs) for postweaning growth (PWWT), depth of loin muscle (PEMD) and depth of subcutaneous fat (PFAT). Lambs were weaned either at 20- or 30-kg liveweight and then within each of these groups were maintained at their weaning weight for 55 days or fully fed, giving four treatment groups. Restricted lambs were realimented subsequent to the period of feed restriction and all lambs within each treatment group were slaughtered when their mean liveweight reached 45 kg. After adjusting for the weaning group and weaning age, liveweight at weaning depended on birthweight, rearing type and sex. For the late-weaning group, it also depended on whether the lamb was born as a single or a multiple and on sire ASBVs for PWWT and PEMD. This was such that liveweight increased by 0.14 ± 0.05 kg for each unit increase in sire ASBV for PWWT and decreased by 0.55 ± 0.20 kg for a unit increase in sire ASBV for PEMD. During the period of feed restriction, sire ASBV for PWWT had an effect on the growth rate of lambs in all treatments with a coefficient of 1.67 ± 0.52. Lamb growth rate during the realimentation phase increased with increasing ASBVs for PWWT at a rate estimated as 2.21 ± 0.49 g/day for each unit increase in PWWT. Early-weaned (20 kg), restricted lambs grew on average 26.0 ± 3.4 g/day faster during the refeeding period than the early-weaned, fully fed lambs, and for late-weaned lambs (30 kg) the difference was 35.5 ± 5.4 g/day. Lambs subjected to a restricted intake of pasture produced carcasses 0.79 ± 0.32 mm fatter on average than those fully fed as measured at the GR site (110 mm from the midline over the 12th rib). As the sire PFAT ASBV increased, the carcasses of the progeny were fatter at the GR site, fat C site (over the longissimus muscle at the 12th rib), the rump site (30-mm distal to the lumbar–sacral junction over the gluteus medius muscle) and in terms of carcass fat percentage. As the sire PEMD ASBV increased, progeny carcasses had larger loin muscle cross sectional areas, and as the sire PFAT ASBV increased, there was a decrease in loin cross sectional area. There was no impact of treatment group on lean percentage. As the sire PFAT ASBV increased, the carcasses contained less lean and as PEMD ASBV increased, the carcasses contained more lean equating to a potential 2% increase given the range of ASBVs in the experiment, which represents ~0.4 kg lean on average.

Abstract
Fifteen Large White × Landrace male pigs were used to investigate the influence of animal size and subregional analysis technique on dual energy X-ray absorptiometry body composition measurements and their repeatability. Pigs were scanned in triplicate with an Hologic QDR4500A X-ray absorptiometer at the beginning of the study (3 weeks of age, liveweight 5–10 kg) and then every 4 weeks until 19 weeks of age. Measurements made by dual energy X-ray absorptiometry included total tissue mass, lean tissue mass, fat tissue mass and bone mineral content. The QDR4500 software allows the scanned image to be divided into head, arms, legs and trunk using an in-built regional analysis grid that contains algorithms unique to each region. Different regional grid manipulations were performed at each scan to evaluate the effects of incorporating subregions into a whole body analysis over time. The dual energy X-ray absorptiometry measurements were highly repeatable and measurement repeatability improved as animal size increased. When results were averaged across regional grid placement and scan time, the most repeatable measurement was total tissue mass (CV = 0.21%), followed by lean tissue mass (CV = 0.59%), bone mineral content (CV = 2.50%) and fat tissue mass (CV = 2.71%). The placement of the regional analysis grid influenced the repeatability of all measurements except for total weight; however, this influence reduced with increasing animal size. It is recommended that the body of the scan image be positioned in the arm region and the head in the head region of the software regional analysis grid to measure whole body composition in pigs because it provides the most repeatable measure overall. Animal placement into the trunk region or utilising the full regional analysis option as specified by the manufacturer provided less repeatable results.

Abstract
The present study investigated the potential of dual energy X-ray absorptiometry to determine the effect of dietary protein on live pig body composition compared with the standard methods. The experiment utilised 48 Large White × Landrace gilts, stratified on liveweight at 17 weeks of age (initial liveweight about 60 kg), and allocated within strata to diets containing either 85 or 100% of dietary protein requirements. The diets were fed ad libitum and contained 14.6 or 16.7% protein, respectively. Pigs were housed individually to allow weekly measurement of feed intake and liveweight. A Hologic QDR4500A dual energy X-ray absorptiometer was used to determine lean, fat and ash composition of pigs initially and 4 weeks later at the end of the experiment. Daily gain was increased by about 200 g in pigs fed the protein-adequate diet, but feed intake was not affected. Therefore, pigs fed adequate protein had a lower feed conversion ratio (2.92 v. 3.52 g/g, P<0.001). Feeding the protein-adequate diet increased lean deposition by about 150 g/day (577 v. 429 g/day, P<0.001) and ash deposition by about 4 g/day (28.7 v. 25.0 g/day, P<0.001), but did not affect fat accretion. This resulted in carcasses with a higher lean content (54.0 v. 50.7 kg, P<0.001) and ash content (2.35 v. 2.28 kg, P<0.05) but unaltered fat content. Therefore, an inadequate level of dietary protein leads to suboptimal growth in lean tissue and bone mineral, with no pronounced effect on fat. These observations were substantiated by chemical analysis and available corrective equations were useful in correcting differences between dual energy X-ray absorptiometry outputs and chemical values. After correction, dual energy X-ray absorptiometry estimates differed less than 5% from the chemical values for lean, protein, water and ash and 10% for lipid. In addition, reduced standard error of the differences around most dual energy X-ray absorptiometry measurements, relative to chemical analysis, allowed small changes in body composition to be detected with increased confidence. These data support the efficacy of using dual energy X-ray absorptiometry in nutritional studies of pigs.

Abstract
A number of technologies that increase feed efficiency and lean tissue deposition while decreasing fat deposition have been developed in an effort to improve profitability of animal production. In general, the mode of action of these metabolic modifiers is to increase muscle deposition while often simultaneously reducing fat deposition. However, there have been some concerns that the focus on increasing production efficiency and lean meat yield has been to the detriment of meat quality. The aim of this review is to collate data on the effects of these metabolic modifiers on meat quality, and then discuss these overall effects. When data from the literature are collated and subject to meta-analyses it appears that conservative use of each of these technologies will result in a 5-10% (0.3-0.5kg) increase in shear force with a similar reduction in perception of tenderness. However, it should be borne in mind that the magnitude of these increases are similar to those observed with similar increases in carcass leanness obtained through other means (e.g. nutritional, genetic selection) and may be an inherent consequence of the production of leaner meat. To counter this, there are some other metabolic factors and dietary additives that offer some potential to improve meat quality (for example immuncastration) and it is possible that these can be used on their own or in conjunction with somatotropin, approved β-agonists, anabolic implants and CLA to maintain or improve meat quality.

Abstract
The present study was designed to determine whether porcine somatotropin (pST) reduces whole animal and belly fat using dual energy X-ray absorptiometry and manual dissection. The study utilised 24 Large White × Landrace gilts selected at 16 weeks of age with an approximate liveweight of 80 kg and housed in individual pens. Gilts were stratified on liveweight into 8 blocks and 1 pig from each block was assigned to either 0, 5 or 10 mg per day of pST. Pigs were fed ad libitum a wheat-based diet containing 200 g crude protein, 10.2 g available lysine and 14.6 MJ DE/kg, to ensure that responses to pST were expressed. Feed intake and liveweight were measured on a weekly basis. An Hologic QDR4500A dual energy X-ray absorptiometer was used to determine lean, fat and ash composition of pigs initially and again 4 weeks later at the end of the experiment. After slaughter, the composition of the whole half carcass as well as the shoulder, ham, belly and loin primal cuts was determined with dual energy X-ray absorptiometry and verified with manual dissection. Daily pST treatment decreased feed intake (3440, 2710 and 2537 g/day for 0, 5 or 10 mg pST per day, respectively; P<0.001) and decreased feed conversion ratio (2.95, 2.18 and 2.03 g/g; P<0.001) even though there was no significant effect on daily gain. Pigs treated with pST deposited more lean tissue (620, 839 and 873 g/day; P<0.05) and less fat (384, 218 and 176 g/day; P<0.001) than control animals, but there was no effect of pST on ash deposition. As a consequence, pigs treated with 5 and 10 mg pST/day contained 5 and 9 kg less dissectible fat than control gilts, respectively. A dose dependent decrease in belly, loin, ham and shoulder fat was also observed, although the decrease in belly fat was more pronounced than for the whole carcass and other primal cuts. Overall, pST treatment has the potential to decrease carcass and especially belly fat in pigs and increase consumer acceptance of pork in markets that place a premium on carcass fat and lean yield in the belly region. The results determined with dual energy X-ray absorptiometry were confirmed by manual dissection.
