Abstract
The European carcass grading scheme (EUROP) places large emphasis on meat yield and therefore on quantitative traits such as carcass conformation and superficial fat coverage. However, it falls short in considering sensory properties and consumer satisfaction. In contrast, the Meat Standards Australia (MSA) grading scheme considers, among others, animals' ossification, marbling, and ultimate pH as primary indicators of beef eating quality. This study aims to characterize MSA carcass grading scheme applied to the Italian beef production system, considering its significant role in European beef market. The study involved 3204 Charolais, Limousin, and crossbred young bulls and heifers slaughtered in a commercial Italian abattoir. Data collection spanned a broad range of variables, including animal characteristics, MSA traits, and EUROP carcass grading traits. Regardless of the sex of the animal, no significant relationship was observed between MSA traits and EUROP carcass grading scores. Factors such as sex, age, and arrival season at the fattening unit significantly affected most of MSA traits. Females had significantly higher marbling score, and lower ossification score and hump height than males. Animals imported in autumn and winter had significantly lower marbling score, but similar ossification score compared to those imported in spring and summer. Older females had the highest marbling scores. While further research is needed to assess whether the MSA grading scheme can be adapted to all different European rearing systems, results of this study are a prelude to the potential benefits that the MSA grading scheme can bring to the European beef industry.

Abstract
The aim of this study was to evaluate the effect of genetic groups and diets with different sources of nonprotein nitrogen (NPN) on the carcass and meat characteristics of beef heifers. The meat from 40 heifers (20 ½ Angus ½ Nellore (A × N) and 20 ½ Charolais ½ Nellore (L × N)), finished in feedlots, was used. The heifers were fed diets containing different sources of NPN-(1) a diet with livestock urea and protected urea (LPU) and (2) a diet with extruded urea (EU)-in a completely randomized design with a 2 × 2 factorial arrangement. Carcass, composition and meat quality evaluations were carried out. There were no significant interactions between diet and genetic group for most of the variables evaluated (p > 0.05). The A × N heifers had higher hot carcass weights (305.73 vs. 279.80 kg), loin eye areas (80.87 vs. 75.45 cm2), subcutaneous fat thicknesses (8.69 vs. 6.35 mm) and lower shear forces (6.98 vs. 7.7 kg) compared to the C × N heifers (p < 0.05). The meat from the A × N heifers had higher proportions of saturated fatty acids (49.41 vs. 47.95%), with no effects on the proportions of monounsaturated (47.57%) and polyunsaturated (4.01%) fatty acids. The A × N heifers had better carcass and meat characteristics, while the C × N heifers had meat and fat with better fatty acid profiles.

Abstract
Antisense long non-coding RNAs (lncRNAs) played a crucial role in the precise regulation of essential biological processes and were abundantly present in animals. Many of these antisense lncRNAs have been identified as key roles in adipose tissue accumulation in livestock, underscoring their vital role in the regulation of animal physiology. Nonetheless, the functional roles of these antisense lncRNAs in regulating adipogenesis and the specific molecular mechanisms these processes were still unclear, which was a significant gap in current scientific research. In this study, we identified and characterized SERPINE1AS2, a novel natural antisense lncRNA, was highly expressed in the fat tissues of adult cattle and calves. Its expression gradually increased during the differentiation of intramuscular adipocytes. Through functional studies, we observed that knockdown of SERPINE1AS2 inhibited the proliferation and adipogenesis of intramuscular adipocytes, while overexpression of SERPINE1AS2 produced the opposite effect. RNA sequencing (RNA-seq) analysis following SERPINE1AS2 knockdown revealed that differential expression genes (DEGs) were significantly enriched in key signaling pathways, notably the MAPK, Wnt, and mTOR signaling pathways. Furthermore, SERPINE1AS2 interacted with Plasminogen Activator Inhibitor-1 (PAI1), forming RNA dimers through complementary base pairing and consequently influencing PAI1 expression. Interestingly, studies on PAI1 suggested that reduced expression facilitated adipogenesis and the downregulation of PAI1 alleviated the inhibitory effect of reduced SERPINE1AS2 on adipogenesis. In summary, this study suggested that SERPINE1AS2 played a crucial role in the adipogenesis of bovine intramuscular adipocytes by modulating the expression of PAI1. SERPINE1AS2 also regulated adipogenesis by engaging in the MAPK, Wnt, and mTOR signaling pathways. Our results suggested that SERPINE1AS2 had a complex regulatory mechanism on adipogenesis in intramuscular adipocytes.

Abstract
The aim of this experiment was to evaluate growth, body development and ingestive behavior of Nelore and crossbred heifers. Twenty-two contemporary heifers (eight Nelore, seven Nelore × Angus (½ Angus) and seven Nelore × Pantaneiro (½ Pantaneiro) crosses) were evaluated. The variables evaluated were weight, subcutaneous fat thickness [assessed by ultrasound in the longissimus dorsi (SFT) and biceps femoris (SFTP8)] morphometric measures and ingestive behavior (determined between 7 am and 5 pm). The daily gain differed between the breeds (P < 0.05), being greater for the ½ Pantaneiro than Nelore and equal to ½ Angus at the end of the study. The ½ Angus heifers differed (P < 0.01) from the other breeds for SFT (4.36 mm), with no difference between Nelore (2.77 mm) and ½ Pantaneiro (3.38 mm). The SFTP8 was greater (P < 0.01) (5.36 mm) in ½ Angus heifers than t others crossbreed, and greater in ½ Pantaneiro than in Nelore (4.28 vs 3.29 mm). The heart girth and rump width between the ilia were larger (P < 0.01) for the ½ Angus than ½ Pantaneiro and Nelore (169 cm; 41.6 cm, respectively). Substernal height was greatest (P < 0.01) for the Nelore (69.1 cm), reflecting the greater anterior and posterior height. The ½ Angus spent the longest time (P < 0.05) walking and less time grazing. Idleness also differed (P < 0.05) throughout the day. Crossbred heifers exhibited better performance and development than Nelore. The grazing pattern of ½ Pantaneiro heifers was identical to Nelore, but walked less, gained more weight, and exhibited better carcass finishing.

Abstract
Beef production in Uruguay is based on pasture (~85%) or concentrate (~15%), resulting in differences in meat quality. The objective of this study was to compare the oxidative stability and color of beef from these two systems during refrigerated retail display. For these purposes, the Semimembranosus muscle was removed from ten Aberdeen Angus steers raised and fed on pasture (130 days prior to slaughter) and from another ten steers fed concentrate (100 days prior to slaughter), sliced. The muscles were placed in a refrigerated showcase for 3, 6, and 9 days. The contents of β-carotene, α-tocopherol, and fatty acids were determined before the meat was placed on display. Lipid and protein oxidation, color, and heme iron content were determined before and during display. The meat from pasture-fed steers had a lower intramuscular fat content (1.78 ± 0.15 vs. 4.52 ± 0.46), lower levels of monounsaturated fatty acids, a lower n-6/n-3 ratio, less lipid and protein oxidation, lower L* and a* values, and higher levels of α-linolenic acid, DHA, total n-3, β-carotene, and α-tocopherol. In conclusion, the meat from pasture-fed steers was more stable during retail display from an oxidative point of view, which may be due to its higher levels of antioxidant compounds such as β-carotene and α-tocopherol and had a healthier fatty acid profile for consumers.

Abstract
Abstract. This study aimed to evaluate the effect of sex on the chemical composition, fatty acid profile, and nutritional indexes of the Longissimus lumborum muscle of feedlot cattle fed a whole shelled corn diet. A total of 40 Nellore cattle were used, of which 20 animals were uncastrated bulls and 20 were heifers, with an average body weight of 411 ± 20.82 and 274 ± 17.80 kg, respectively. The diet was composed of 85 % whole shelled corn and 15 % protein–vitamin–mineral supplement. The chemical composition, fatty acid profile, and the nutritional value of the meat of the animals were evaluated. The chemical composition of the Longissimus lumborum muscle was similar among sexes (p>0.05). Differences were observed in the saturated (17 : 0, 18 : 0, and 21 : 0) and monounsaturated (16 : 1 cis-9, 17 : 1
cis-10, 18 : 1 cis-9, and 18 : 1 trans-7) fatty acid composition between sexes (p<0.05), and the polyunsaturated fatty acid (18 : 2 cis-9 and cis-12, 18:2
cis-9 and trans-11, 20 : 3 n-6, and 22 : 6 n-3) content also showed sex differences (p<0.05). The total number of saturated and polyunsaturated fatty acids was higher in bulls, and the total number of monounsaturated fatty acids was higher in heifers (p<0.05). Indicators of nutritional quality, such as the n-6 : n-3 ratio, thrombogenicity index, and Δ-9-desaturase C14, Δ-9-desaturase C16, and Δ-9-desaturase C18 indexes, were different between the sexes (p<0.05). In conclusion, sex was not found to influence chemical composition but did affect the fatty acid profile and nutritional indexes in the meat of feedlot cattle fed a whole shelled corn diet.

Abstract
From a large feeding trial study consisting of 299 bulls and steers, 15 carcasses exhibited stress-related syndromes manifested by atypical color and pH which were then selected for subsequent analysis. Samples of longissimus thoracis et lumborum muscle with postmortem pH in the range of 5.5-6.9 were subjected to a 14-day aging period at 2°C. Sensory panel tenderness, connective tissue, juiciness, and flavor intensity of high pH (6.4-6.9) meat were significantly different (p < .05) from samples of intermediate pH (6.0-6.1) as well as normal pH (5.5). Muscles at pH 6.0-6.1 were the toughest samples. This was confirmed by Warner-Bratzler shear force (WBSF), residual force, and myofibril fragmentation index. Palatability attributes of normal pH (5.5) samples were significantly different (p < .05) from dark-cutting beef in terms of tenderness and flavor and at the high pH extreme. The increase in WBSF at pH 6.0-6.1, lack of extensive degradation of muscle proteins, and the decreased sarcomere length resulted in tougher meat than low or high pH muscles. Sodium dodecyl-sulfate polyacrylamide gel electrophoresis of meat at the high pH extreme (6.7-6.9) revealed that the breakdown of troponin-T to 30 kD was complete while at intermediate pH (6.0-6.1) was incomplete. In addition, the appearance of a 'doublet' on high-molecular-weight resolution gels may also account for the greater tenderness experienced by sensory panelists.

Beef derived from grass-fed cattle is a specific quality criterion. The effect of grass silage intake on quality characteristics, i.e., fatty acids, fat-soluble vitamins, and lipid-derived volatile composition of intramuscular and perirenal fat from fattening bull weaners were studied. Visible (VIS) and near-infrared (NIR) spectra were also obtained from perirenal fat. Perirenal fat analysis was performed for feeding differentiation purposes. A total of 22 Tudanca breed 11-month-aged bulls were finished on three different diets: grass silage and a commercial concentrate ad libitum (GS-AC), grass silage ad libitum and the commercial concentrate restricted to half of the intake of the GS-AC group (GS-LC), and barley straw and concentrate ad libitum (Str-AC). Feeding had a significant effect (p < 0.05) on γ-linolenic acid and the ratio n-6/n-3 fatty acids. Furthermore, β-carotene content was greater in beef from silage groups than in the Str-AC group. Feeding also affected the perirenal fat composition. Beef from silage-fed bulls and straw-fed bulls could be differentiated by fatty acid percentages, especially 18:0, t-18:1, and c9-18:1, β-carotene content, b* colour value, and carotenoid colour index. However, the VIS or NIR spectra data showed poor differentiating performance, and the volatile composition did not have appreciable differentiation power.

Abstract
Simple Summary Because the estrus in cattle is thought to be energy-consuming if the animals are not planned to breed, spaying in cattle has recently been applied to improve daily weight gain and meat quality. However, postoperative changes in ligation-spaying method with the silicon ring to ovaries via transvaginal methods in heifers have not been clearly identified. This retrospective study presented that heifers spayed with this method exhibited no estrus signs at the pubertal age and the ligated ovaries disappeared within a month post-surgery due to ischemic necrosis. Whereas ovarian steroid hormone levels in spayed heifers were not changed following the puberty, luteinizing hormone level at the pubertal age was higher than unspayed controls. Although carcass weight and yield were similar between groups at the pubertal age upon slaughtering, the spayed animals presented higher marbling degree than that of controls. These results may contribute to develop new management strategies for livestock. Abstract Although spaying prepubertal heifers has routinely been conducted to control cattle herd and improve meat quality, understandings of the postoperative changes following new spaying methods with the silicon ring on the ovaries via colpotomy remain limited. Therefore, as a retrospective study, 28 cases of spayed heifers were reviewed for postoperative changes after employing this method, with inclusion criteria including complete medical records for clinical observation, ultrasonography, measuring reproductive hormones, and tracking slaughter records. No mortality and heat signs at the pubertal age postoperatively occurred in spayed animals. On ultrasonography during rectal examination, the ovaries were enlarged without any folliculogenesis from one week, while massive ovarian edema appeared from two weeks, and ovaries were no longer palpable at four weeks post-surgery. In hormones, whereas estrogen and progesterone levels did not change from prepubertal to pubertal age in spayed animals, luteinizing hormone levels progressively increased during this period and reached a higher level at pubertal period than unspayed controls. Although carcass weight and yield were similar between groups upon slaughter at pubertal age, the spayed animals presented higher carcass quality (marbling degree) than that of controls. These results may contribute to develop herd management strategies, including control of estrus in cattle.

Abstract
Simple Summary Beef fattening systems present a large diversity according to the effect of the type (genetics and gender) of animals fattened, the nutrition programs, the housing conditions, and days on feed, resulting in different carcass traits and meat qualities. New beef fattening systems are arising in Mediterranean countries raising crossbred Angus bulls seeking new marketing opportunities. One of the strengths of the present study is that all animals of the three compared different production systems, two conventional (crossbred heifers, Holstein bulls) and one innovative (crossbred Angus bulls), were raised following their own commercial program (days on feed, nutrition) under the same housing, care, and weather conditions. Furthermore, the carcass and meat quality parameters were analyzed by using a common methodology. With this experimental design, potential factors like the housing conditions or the methodology used to analyze carcass and meat quality (aging time, cooling temperatures, lab equipment) did not interfere in data interpretation. The results indicated that fattening crossbred Angus bulls is suitable in an intensive fattening program but technical data (performance, meat quality or consumer preferences) do not support it as a better alternative to the current Holstein bull production. Abstract The aim of this study was to characterize three different commercial dairy beef fattening systems for intensive Mediterranean fattening programs differing in gender, breed, nutrition, and days of feed in order to describe their performance, behavior, and carcass and meat quality when they were raised simultaneously under the same housing and care conditions. Treatments were three different production systems: (1) crossbred Holstein x beef breeds such as Charolais or Limousine heifers, slaughtered at 10 months of age (CBH10, n = 41); (2) Holstein bulls, slaughtered at 11 months of age (HB11, n = 42); and (3) crossbred Holstein x Angus bulls, slaughtered at 12 months of age (CAB12, n = 37). According to our results, moving from a production system based on Holstein bulls to the crossbred Angus production system has no technical support as no large production and meat quality improvements were observed, and only marketing strategies for meat differentiation and consumer trends could favor this decision.

Abstract
The problem of increasing the production of beef to provide the population with domestically-produced meat is mainly being solved by selective breeding of dairy and combined breeds. Therefore, there is a need for the development and introduction of complex measures to increase meat productivity of young cattle, especially regarding the completeness of diet and optimal content of mineral elements in it. The study was conducted on bulls of the Ukrainian Black-Spotted Dairy breed starting from the age of 6 up to the age of 15 months. At the end of the experiment, the animals were slaughtered, 5 from each group. The study was aimed at determining the effect of the protein-vitamin premix Intermix Fattening on the slaughter parameters, morphological composition of carcass and flesh composition by quality grades, chemical composition of the muscle tissue. Statistical analysis of the results revealed that feeding bulls with the supplement increased pre-slaughter live weight by 7.1% and slaughter weight by 9.8%. After meat separation, more edible parts of carcass were obtained in the absolute value. The weight of paired carcass was 9.5% higher. Intake of the diet with protein-vitamin premix influenced the bulls’ characteristics of growth and development of musculature and bones, intensity of fat deposition, leading to 10.8% increase in flesh and no statistical decrease in the yield of bones compared with the carcass weight. Muscle-bone ratio equaled 4.27 in the control, and 4.56 in the experimental animals. Meatiness index of the young animals that had received the supplement with the diet was higher by 11.1%. Flesh of carcasses of bulls belonging to the experimental group had higher content of valuable grades of beef. We obtained 27.3% more flesh of the highest quality and 11.5% of the first-grade quality. In the muscle tissue and the longissimus of the bulls that had been consuming the premix, the concentration of dry matter was higher by 0.78%, and protein by 0.85%. Use of the Intermix protein-vitamin premix would lead to an increase in live weight of animals, and therefore significantly increase the yield of meat and improve the morphological composition of the bulls’ carcasses.

Abstract
Cooking induces modifications in meat structure and composition, affecting its sensory and nutritional properties. These changes depend on the cooking method and meat characteristics. In the present study, beef were cooked in three different ways-grilling, boiling, and sous-vide cooking-with two endpoint temperatures, 55 °C and 77 °C, to better understand the general impact of cooking on the structure of fatty meat. Light microscopy was used to visualize muscle, connective, and adipose tissues. After cooking, muscle fibers were more compact, which can be attributed to perimysium shrinkage and water transfer, for all cooking processes except grilling at 55 °C. The cross-sectional area of muscle fibers was not impacted by cooking, regardless of the temperature or cooking method. Connective tissue between adipocytes was affected by cooking at 77 °C, but not at 55 °C. Despite the cooking method used, cooking to well-done (77 °C) clearly affected the structure of the perimysium of beef, possibly because of collagen denaturation.

Abstract
Quality refers to the characteristics of products that meet the demands and expectations of the end users. Beef quality is a convergence between product characteristics on one hand and consumers’ experiences and demands on the other. This paper reviews the formation of consumer beef quality perception, the main factors determining beef sensory quality, and how to measure and predict beef eating quality at scientific and industrial levels. Beef quality is of paramount importance to consumers since consumer perception of quality determines the decision to purchase and repeat the purchase. Consumer perception of beef quality undergoes a multi-step process at the time of purchase and consumption in order to achieve an overall value assessment. Beef quality perception is determined by a set of quality attributes, including intrinsic (appearance, safety, technological, sensory and nutritional characteristics, convenience) and extrinsic (price, image, livestock farming systems, commercial strategy, etc.) quality traits. The beef eating qualities that are the most valued by consumers are highly variable and depend mainly on the composition and characteristics of the original muscle and the post-mortem processes involved in the conversion of muscle into meat, the mechanisms of which are summarized in this review. Furthermore, in order to guarantee good quality beef for consumers in advance, the prediction of beef quality by combining different traits in scenarios where the animal, carcass, and muscle cuts can be evaluated is also discussed in the current review.

Abstract
The effects of castration, supplementation, and implant protocol (IP) on growth, carcass characteristics, and meat quality of grass-fed cattle were evaluated. Two experiments followed a two-way ANOVA and a 2 × 2 factorial arrangement. Experiment-I, 99 bulls were evaluated for: (a) supplementation (mineral (MS) or strategic protein-energy supplementation (SS)), and (b) IP (repeated (day-0 and day-90) Zeranol-72 mg implantation (Zeranol–Zeranol) or Trenbolone Acetate-140 mg/Estradiol-20 mg (day-0) followed by Zeranol-72 mg (day-90) (TBA/E2–Zeranol)). Experiment II, 50 animals were evaluated for: (a) IP (like Experiment-I), and (b) male class (steers vs. bulls). In Experiment-I, SS bulls had greater growth rate, carcass yield, and yield of high-valued boneless lean cuts than MS bulls, while decreasing (p < 0.05) time to harvest. Steaks from SS-bulls on TBA/E2–Zeranol IP were more (p = 0.05) tender than SS/Zeranol–Zeranol counterparts. Experiment-II bulls had greater growth than steers, but decreased (p < 0.05) carcass quality aspects. Zeranol–Zeranol increased (p < 0.01) meat tenderness of steers. Interactions (p < 0.05) affected cutability (Experiment-II) and meat sensory traits (Experiment-I/II). The SS improved growth, carcass yield, and shortened days until harvest of bulls, while TBA/E2–Zeranol IP positively affected tenderness in bull meat only. Castration improved carcass quality while the implant effects on cutability and tenderness were male-class dependent.

Abstract
This paper reviews the current state of knowledge on beef carcass and meat quality, with particular emphasis on on-farm and processing factors associated with its high and inconsistent variability. The diversity of livestock systems comes from the diversity of breeds (dairy or beef), ages and gender (bulls, steers, heifers, cull cows) used to produce either mainly beef or beef and milk. In addition, there are factors linked to farming practices (including diet, especially grazing) which significantly influence the sensory, nutritional, technological and extrinsic (such as image) quality attributes of meat. These can become factors of positive differentiation when controlled by the application and certification of technical specifications. Finally, preslaughter (such as stress), slaughter (such as the chilling and hanging method of carcasses) and postslaughter (such as ageing, packaging and cooking) conditions have a strong influence on the microbiological, sensory, technological and image quality attributes of beef. In this review, potential synergisms or antagonisms between the different quality attributes are highlighted. For example, finishing cattle on grass, compared to indoor fattening on a high concentrate diet, has the advantage of producing leaner meat with a higher proportion of omega-3 fatty acids while exhibiting superior oxidative stability, but with the consequence of a darker meat colour and lower productivity, as well as higher seasonality and land surface requirements. Moreover, the control of on-farm factors is often guided by productivity (growth rate, feed conversion ratio) and carcass quality attributes (weight, conformation and fatness). Genetic selection has often been oriented in this direction, without taking other quality attributes into account. Finally, the interactions between all these factors (and especially between on-farm and slaughter or processing factors) are not considered in the quality grading schemes in European countries. This means that positive efforts at farm level may be mitigated or even eliminated by poor slaughtering or processing conditions. All these considerations explain why between-animal variability in quality can be high, even when animals come from the same farming system. The ability to predict the sensory and nutritional properties of meat according to production factors has become a major objective of the supply chain.

Effects of Sex Class, a Combined Androgen and Estrogen Implant, and Pasture Supplementation on Growth and Carcass Performance and Meat Quality of Zebu-Type Grass-Fed Cattle. Abstract
Forty-seven Zebu calves were used to determine the effects of class (bull or steer), supplementation (SUPPL, a poultry litter-based supplement or mineral supplementation), and implant (20 mg estradiol combined with 120 mg of trenbolone acetate or no implant) on growth and carcass performance and beef eating quality. The average daily gain (ADG) of implanted cattle significantly increased for steers, but not for bulls. The SUPPL treatment increased ADG by 8.63% from day 0 to end, and shortened in 73.3 d the time to reach 480 kg BW (p < 0.01). Compared to bulls, the steer carcasses exhibited more desirable maturity and finish scores, thicker back fat (p < 0.05), and yielded greater (p < 0.01) percentages of high-value boneless subprimals (HVBLS) (+1.64%) and total cuts (1.35%). The SUPPL bulls dressed 2.63 and 1.63% greater than non-supplemented bulls and SUPPL steers, respectively (p < 0.05). Meat sensory quality was subtly affected (p < 0.05) by sex class or supplementation. The implant did not affect (p > 0.05) shear force or sensory ratings. The supplementation improved key growth performance traits while it adversely affected tenderness-related sensory traits. The implant enhanced the rate of gain of steers only, without improving cut-out yields or inducing adverse effects on palatability traits in both steers and bulls.

Abstract
Data on chemical body composition of cattle serve as a basis for recommendations on energy and nutrient requirements. Relevant data of growing dual-purpose Fleckvieh (German Simmental) bulls are scarce and originate from old trials, covering low rates of gain and live weights. Hence, the aim of the study was to analyze the body tissue distribution, chemical composition, and composition of body weight gain of growing Fleckvieh bulls within a 120–780 kg live weight range. Results showed that body composition changed during growth but was not affected by dietary energy concentration. Changes in body composition were characterized by increasing shares of fat tissue and ether extract. Body tissues as blood, organs, gastrointestinal tract, and bone proportionately decreased during growth, while muscle and tendon proportions remained constant. The bulls featured enhanced growth potential and high muscle and protein gain throughout the described weight range. The requirements for metabolizable protein in relation to energy decrease with increasing live weight of the animals.

Construction of beef quality through official quality signs, the example of Label Rouge. Animal 2021; 16 Suppl 1:100357. Abstract
The European Union promotes high-quality food products and protects agricultural traditions. With that vision, Regulation (EU) 1151/2012 defines quality schemes such as protected designations of origin, protected geographical indications and optional quality terms that link quality and tradition to legal labels. These quality schemes are completed by national initiatives. Label Rouge is an official regulated sign of premium quality in France that explicitly aims at higher product quality. Each Label Rouge product has to comply with production and processing conditions stated in its published specifications. Here, we analyse commitments made under Label Rouge books of specifications for beef to show how the Label Rouge quality-sign constructs quality. In order to provide a frame, product quality has been broken down into a set of seven quality attributes: commercial, organoleptic, nutritional, safety, technological, convenience and image-value, where image-value quality attributes encompass the ethical, cultural and environmental dimensions associated with how a food is produced and processed, and its origin. The specifications highlight 'communicative certified characteristics' (characteristics set out in the specifications that are certified and communicated to the public) and specify how the meat needs to be farmed and processed to attain superior quality. Analysis of all 16 Label Rouge books of specifications for beef, based on scientific expertise and the literature, showed that commitments in these specifications are linked to the seven groups of quality attributes and that they concern the whole continuum of the chain, from animal type to on-farm conditions, transport to slaughter and through to meat ageing. Commitments concerning the whole herd and the selection of label-eligible animals, carcasses and meat particularly enhance organoleptic and image-value attributes. Label Rouge builds quality through commitments on the production, transport and beef ageing conditions, and offers a strong referent for the beef sector on how to better meet more qualitative consumers' expectations.

Abstract
Livestock is an important commodity playing a major role in the global economy. Red meat plays an important role in human life, as it is a good source of animal protein and energy. The fatty acid content of beef has been shown to impact the eating experience and nutritional value of beef. Therefore, this study aimed to identify genomic regions which can account for genetic variation in meat fatty acid content. Genotypes imputed to the Illumina BovineHD 770K BeadChip were used in this study. Thirty-six 1-Mb genomic regions with a posterior probability of inclusion (PPI) greater than 0.90 were identified to be associated with variation in the content of at least one fatty acid. The genomic regions (1Mb) which were associated with more than one fatty acid trait with high genetic variance and harbored good candidate genes were on Chromosome (Chr) 6 (fatty acid binding protein 2), Chr 19 (thyroid hormone receptor alpha, fatty acid synthase), Chr 26 (stearoyl-CoA desaturase), and Chr 29 (thyroid hormone responsive, fatty acid desaturase 2, and fatty acid desaturase 3). Further studies are required to identify the causal variants within the identified genomic regions. Findings from the present study will help to increase understanding of the variation in fatty acid content of beef and help to enhance selection for beef with improved fatty acid composition.

Abstract
This study aimed to explore the differences in fat deposition between female (FYs) and male yaks (MYs). Compared with MYs, the tenderness, L*, marbling, absolute content of fat, and most fatty acids (FAs) of longissimus dorsi (LD) in FYs were higher or better (p < 0.05), whereas the relative content of polyunsaturated fatty acids (PUFAs) and n-3 PUFAs were lower (p < 0.01). The absolute content of fat, C18:0, cis-C18:2, cis-C18:1, and C24:0 were positively correlated with L*45 min, b*24 h, tenderness, and marbling score of LD in FYs and MYs (p < 0.05), respectively. LPL, FATP2, ELOVL6, HADH, HACD, and PLINS genes play a crucial role in improving the marbling score and tenderness of yak meat. The results of gene expression and protein synthesis showed the effect of gender to FA biosynthesis, FA transport, lipolysis, and FA oxidation in the adipose tissue of yak was realized by the expressions of ME1, SCD, ACSL5, LPL, FABP1, PLIN4, and PLIN2 in peroxisome proliferators-activated receptor (PPAR) signaling. This study established a theoretical basis for the improvement of the meat quality of yak and molecular breeding.

Abstract
Simple Summary Evaluation of Fogera cattle breed during the different seasons would help to determine their response to heat stress. This would assist in designing intervention strategies for the anticipated climate change. Therefore, this study aimed to determine physiological, hematological, biochemical, and growth parameters of Fogera cattle calves to heat stress in different seasons. We observed that the heart rate and respiration rate were increased by six beats per minute and four breaths per minute when the temperature-humidity index increased from 66 to 78, respectively. The positive relationship between the temperature–humidity index and physiological parameters further confirms that calves were good at thermoregulation at a temperature–humidity index value of 66. Thus, the temperature-humidity index value of 66 can be considered as optimum for high weight gain and normal physiological response to heat stress in Fogera cattle calves under their current production system. However, some more amelioration strategies such as better nutrition, availability of shade, and routine health management practice will further strengthen the resilience of the breed to heat stress in the future. Abstract Fogera cattle are among indigenous breeds of cattle in the northern part of Ethiopia. However, their response to heat stress (HS) under different seasonal variations has not been well investigated. This study was aimed to determine physiological, hematological, biochemical, and growth parameters of Fogera cattle calves to HS during dry season, short rainy, and long rainy. A total of 72 calves (24 for each season) that were 6 months of age with an equal number of males and females were evaluated for physiological, hematological, biochemical, and growth parameters. Daily ambient temperature (AT) and relative humidity (RH) were recorded two times per day during the study periods from which the daily average temperature–humidity index (THI) was calculated. The study revealed higher AT and THI during dry and short seasons while higher RH was observed during the long rainy season. Physiological parameters except rectal temperature were affected by the seasons. Hematological parameters were also affected by season except for packed cell volume. Biochemical and growth parameters were also significantly affected by the seasons. THI was positively related with physiological but negatively with growth parameters. Thus, the THI value of 66 can be considered as optimum for high weight gain and normal physiological response to HS in Fogera cattle calves under their current production system.

Abstract
Health-conscious consumers increasingly demand healthier, tastier, and more nutritious meat, hence the continuous need to meet market specifications and demand for high-quality lamb. We evaluated the longissimus dorsi muscle of 147 Tattykeel Australian White (TAW) sheep fed on antioxidant-rich ryegrass pastures exclusive to MAGRA lamb brand for meat eating quality parameters of intramuscular fat (IMF) content, fat melting point (FMP) and omega-3 long-chain polyunsaturated fatty acids (n-3 LC-PUFA). The aim was to assess the impact of linebreeding and gender on pasture-fed lamb eating quality and to test the hypothesis that variation in healthy lamb eating quality is a function of lamb gender and not its antioxidant status or inbreeding coefficient (IC). After solid-phase extraction and purification, phenolics and antioxidant enzyme activities were analysed by high-performance liquid chromatography and mass spectrometry. IMF and fatty acid composition were determined using solvent extraction and gas chromatography, respectively. IC was classified into low (0-5%), medium (6-10%) and high (>10%) and ranged from 0-15.6%. FMP and IMF ranged from 28 to 39 °C and 3.4% to 8.2%, with overall means of 34.6 ± 2.3 °C and 4.4 ± 0.2%, respectively, and n-3 LC-PUFA ranged from "source" to "good source" levels of 33-69 mg/100 g. Ewes had significantly (P ˂ 0.0001) higher IMF, C22:5n-3 (DPA), C22:6n-3 (DHA), C18:3n-6, C20:3, C22:4n-6, C22:5n-6, total monounsaturated (MUFA), PUFA and Σn-3 fatty acids and lower total saturated fatty acids (SFA) and FMP, than rams. As IC increased, there were no differences in FMP and IMF. Folin-Ciocalteu total phenolics, ferric reducing antioxidant power and antioxidant activities of glutathione peroxidase, catalase and superoxide dismutase enzymes did not differ by either gender or IC. This study provides evidence that IC is inconsequential in affecting antioxidant status, IMF, FMP and n-3 LC-PUFA in linebred and pasture-fed TAW sheep because the observed variation in individual fatty acids was mainly driven by gender differences between ewes and rams, hence the need to accept the tested hypothesis. This finding reinforces the consistent healthy eating quality of MARGRA lamb brand from TAW sheep regardless of its linebred origin.

Abstract
Objective The objective of this study was to compare growth performance, carcass traits and meat quality in young bulls, steers and heifers produced by crossing Limousin bulls with Holstein-Friesian cows, fattened semi-intensively and slaughtered at 18 months of age. Methods Thirty-one young calves were reared in a conventional production system, and were fed milk replacer, hay and concentrate. At 6 months of age, the animals were divided into groups based on gender, and were fed a total mixed ration composed of grass silage, concentrates I and II in a semi-intensive production system. At the end of the fattening period (18 months), the animals were slaughtered, carcass quality was evaluated, and samples of musculus longissimus thoracis were collected to determine the proximate composition and quality of meat. Results Bulls were characterized by the highest percentage share of the most valuable cuts in the carcass, and three-rib sections from bull carcasses had the highest lean meat content with low intramuscular fat content (0.93%). No significant differences in carcass conformation, dressing percentage or the percentage share of round in the right half-carcass were found between bulls vs. steers and heifers. Heifers and steers had higher carcass fat content than bulls, which had a positive influence on the sensory properties of beef. In comparison with the meat of bulls, the meat of steers and heifers was characterized by more desirable physical properties and sensory attributes (water-holding capacity, shear force, color lightness, aroma, juiciness, tenderness, flavor). Conclusion Under the semi-intensive production system, heifers and steers had higher carcass fat content than bulls, which had a positive effect on the sensory properties of beef. Bulls are better suited for intensive systems, which contribute to improving the quality of their meat. The results of this study may encourage producers to breed steers and heifers for beef.

Abstract
Marbling is one of the primary carcass attributes utilized in most beef grading systems for eating quality evaluation. In Europe, the current beef grading system is the EUROP grid, which is focused on carcass commercial value and production yield rather than eating quality estimation. The aim of this study was to investigate the relationship between marbling and the most common scores for carcass classification in Europe. If there are strong associations between marbling and European classification scores, marbling score may be estimated from the carcass characteristics. However, this study indicated that European classification scores explain only a slight proportion of the variance in marbling score (32%, 46%, 34% and 21% for the entire cattle group, young bulls, females and steers, respectively). Therefore, whereas the EUROP grid is well adapted to estimate yield, it does not reflect marbling at all. The European beef industry should take into account additional indicators related to beef palatability to assist the determination of the commercial value of carcasses.

Transcriptome profiling of longissimus lumborum in Holstein bulls and steers with different beef qualities. PLoS One 2020; 15:e0235218. Abstract
Previous research regarding Holstein cows has mainly focused on increasing milk yield. However, in order to maximize the economical profits of Holstein cattle farming, it is necessary to fully take advantage of Holstein bulls to produce high-grade beef. The present study aims to investigate different transcriptomic profiling of Holstein bulls and steers, via high-throughput RNA-sequencing (RNA-seq). The growth and beef quality traits of Holstein steers and bulls were characterized via assessment of weight, rib eye area, marbling score, shear force and intramuscular fat percentage of the longissimus lumborum (LL) muscle. The results indicated that castration improved the meat quality, yet reduced the meat yield. Subsequently, RNA-seq of the LL muscle from Holstein steers and bulls revealed a total of 56 differentially expressed genes (DEGs). We performed the functional enrichment analysis in Gene Ontology (GO) annotations of the DEGs using GOseq R package software and Kyoto Encyclopedia of Genes and Genomes (KEGG) pathway analysis using KOBAS tool. Through the integrated analysis of DEGs with reported QTLs and SNPs, seven promising candidate genes potentially affecting the beef quality of LL muscle following castration were discovered, including muscle structural protein coding genes (MYH1, MYH4, MYH10) and functional protein coding genes (GADL1, CYP2R1, EEPD1, SHISA3). Among them, MYH10, GADL1, CYP2R1, EEPD1 and SHISA3 were novel candidate genes associated with beef quality traits. Notably, EEPD1 was associated with both meat quality and reproduction traits, thus indicating its overlapping role in responding to hormone change, and subsequently inducing beef quality improvement. Our findings provide a complete dataset of gene expression profile of LL in Holstein bulls and steers, and will aid in understanding how castration influence meat yield and quality.

Abstract
BACKGROUND This study was conducted to assess whether there are differences in consumer liking of beef. Samples were collected from different groups and analyses were conducted, including quantitative descriptive analysis, consumer panels and instrumental analyses. Palatability traits, such as aroma liking, tenderness, juiciness, flavour liking and overall liking (OL), were rated by consumers. RESULTS Warner-Bratzler shear force was negatively associated with tender mouthfeel and consumer tenderness score. Cluster analysis identified four groups of clusters, which were described as 'easily pleased', 'bull beef liker', 'tender beef liker' and 'fastidious' consumers. Cluster group 2 awarded a higher score for bulls and located in a separate region on the external preference map. CONCLUSION External preference mapping showed the association between consumer liking of beef and sensory attributes. © 2019 Society of Chemical Industry.

Abstract
Context Nutrition in early life can affect the long-term performance of livestock. Aims The present study evaluated the effects of rearing Wagyu × Holstein Friesian heifer calves either on a concentrate pelleted starter (CS; 90% DM, 19.3% crude protein (CP), and 13.8 MJ metabolisable energy (ME) per kilogram DM) or a forage starter (FS, ensiled alfalfa, Medicago sativa; 45% DM, 18.5% CP and 9.7 MJ metabolisable energy per kilogram DM) on lifetime growth, blood metabolites, carcass traits and meat quality. Methods Calves (n = 60) were allocated either to CS or FS diets. All calves received their solid feeds ad libitum from Week 1 and were fed milk in group pens (n = 10/pen) at 4 L/calf.day until Week 7, then 2 L/calf.day for 2 weeks. Calves were transferred to pasture 1 week after milk removal, with starter feeds removed by Week 15. All heifers were then managed as one group on a pasture-based diet until slaughter at 26–30 months of age (average of 483 kg liveweight). Key results Calves offered the CS diet were 14 kg heavier than were calves on the FS diet at 15 weeks (P < 0.001). However, liveweight was similar between the groups by the time of slaughter (P > 0.1). All blood parameters studied were similar (P > 0.05) between the treatments at 12 months and at slaughter. Depth of eye muscle and subcutaneous fat, measured using ultrasonography before slaughter, carcass weight and meat pH, marbling, shear force, moisture loss during cooking, total fat and fat and meat colour were also similar between the treatments (P > 0.05). Some potential was found for using blood markers to predict carcass traits and meat quality. Conclusions Solid feed type during rearing had little effect on liveweight or meat characteristics from 12 months of age to slaughter of Wagyu × Friesian heifers. Implications Calves can be reared on FS diets with similar long-term production performance as on CS diets.

Abstract
Context
In the largest beef-producing countries in the world, the slaughter of female cows accounts for ~30–40% of all beef produced.
Aims
The objective of this study was to evaluate the replacement of a protein–energy supplement (PES) by a same-cost maize-based supplement (MBS) on the performance and final product of Nellore heifers grazing Brachiaria brizantha cv. Marandu pasture during the wet season in Brazil.
Methods
Ninety-six Nellore heifers of bodyweight (BW) 281 ± 7.55 kg and aged 23 months were used. Six were slaughtered at the start of the experiment. The remaining 90 heifers received one of the following three supplements with their predominantly pasture diet for 133 days: control, mineral salt ad libitum; PES, with protein 250 g/kg dry matter (DM) and total digestible nutrient 600 g/kg DM, offered at 3 g/kg BW.day (as-fed basis); MBS, with crude protein 90 g/kg DM and total digestible nutrient 850 g/kg DM, offered at 7 g/kg BW.day (as-fed basis). The variables were evaluated in a completely randomised block design with 30 heifers per treatment.
Key results
Average daily gain and final BW were similar (P > 0.05) in PES and MBS treatments, and relative to the control increased (P < 0.01) average daily gain by ~24% and final BW by 7%. Pasture intakes were decreased, with substitution levels of 8.0% for heifers receiving PES and 10.4% for those receiving MBS. Carcass weight (kg/day) and carcass gain (g carcass/kg BW) were greater (P < 0.001) for heifers receiving MBS and PES than for the control group. Backfat depth was greater (P < 0.001) in heifers receiving MBS (7.91 mm) than in those receiving PES (6.25 mm), and the lowest (P < 0.001) measurement was observed in the control group (4.85 mm).
Conclusions
Maize-based supplement (7 g/kg BW.day) provided the same growth rate as PES (3 g/kg BW.day) but yielded heavier and slightly fatter carcasses of pasture-finished Nellore heifers during the wet season (133 days) with a similar cost, and with more total digestible nutrients than pasture plus mineral salt.
Implications
Maize-based supplement provided to Nellore heifers on pasture may improve performance despite lower pasture intakes but needs to be evaluated carefully in terms of costs involved.

Abstract
OBJECTIVE The objective of this study was to compare the quality of dry-aged beef from cull Hanwoo cows slaughtered at 60 or 80 months old. METHODS A total of eight cull Hanwoo carcasses with a quality grade of 3 (low-grade) were selected and divided into two age groups: 63.5±2.5 months old (n = 4) and 87.8±4.5 months old (n = 4). Whole longissimus thoracis et lumborum from the 11th rib to the last lumbar vertebrae, including the back fat, was removed from the carcass at 24 h postmortem and aged for 50 days in darkness at a temperature of 2°C±1°C, a relative humidity of 85% and an air flow of 2 m/s. The sampling was performed aseptically after 0, 20, 24, 40, and 50 days of aging. RESULTS Regardless of the aging period, aging increased the lightness (p<0.05), redness (p<0.05) and yellowness (p<0.05) at initial blooming (90 min after slicing) and the overall acceptance (p<0.05). No further tenderization effect was found after 20 days of aging, but aging for 50 days significantly increased the lipid oxidation (p<0.05). The generation of aroma volatiles in the roast steak from aged samples was higher (p<0.05) than that of non-aged samples. No significant effect of age at slaughter was found on the color, pH, water-holding capacity, cooking loss, shear force value, bacterial counts, volatile basic nitrogen, consumer acceptance, lipid oxidation, fatty acid composition or aroma volatiles. CONCLUSION The quality of dry-aged beef obtained from cull Hanwoo cows slaughtered at either 60 or 80 months old with similar quality grade was comparable and extending dry aging for more than 40 days is not recommended considering the costs and further lipid oxidation.

Abstract
The intramuscular adipose tissue deposition in the skeletal muscle of beef cattle is a highly desired trait essential for high-quality beef. In contrast, the excessive accumulation of crosslinked collagen in intramuscular connective tissue contributes to beef toughness. Recent studies revealed that adipose tissue and connective tissue share an embryonic origin in mice and may be derived from a common immediate bipotent precursor in mice and humans. Having the same linkages in the development of adipose tissue and connective tissue in beef, the lineage commitment and differentiation of progenitor cells giving rise to these tissues may directly affect beef quality. It has been shown that these processes are regulated by some key transcription regulators and are subjective to epigenetic modifications such as DNA methylation, histone modifications, and microRNAs. Continued exploration of relevant regulatory pathways is very important for the identification of mechanisms influencing meat quality and the development of proper management strategies for beef quality improvement.

Abstract
The objective of this study was to determine whether sire breed and/or castration had an effect on meat quality of M. longissimus thoracis et lumborum (LTL) muscle from crossbred bulls and steers and to investigate the relationship amongst the traits examined. Warner–Bratzler shear force (WBSF), intramuscular fat (IMF)%, cook-loss%, drip-loss%, colour (L*, a*, b*) and ultimate pH (upH) were determined in the LTL muscle from eight beef sire breeds representative of the Irish herd (Aberdeen Angus, Belgian Blue, Charolais, Hereford, Limousin, Parthenaise, Salers and Simmental). The results indicate that IMF%, cook-loss% and drip-loss% were associated with breed (p < 0.05); while WBSF, IMF% and cook-loss% differ between genders (p < 0.05). Steer LTL had a greater IMF% and exhibited reduced WBSF and cook-loss% in comparison to the bull LTL (p < 0.05). This study provides greater insight into how quality traits in beef are influenced by breed and gender and will support the industry to produce beef with consistent eating quality.

Abstract
A genome-wide association study (GWAS) was performed to investigate the genetic markers associated with carcass traits of Hanwoo (Bos taurus coreanae) steer in the Gangwon region of Korea. Hanwoo steer (139) from the Gangwon region were genotyped with Bovine SNP50K BeadChip, and 35,769 SNPs were analyzed for five specific carcass traits after applying several filters. A total of seven quantitative trait loci were detected, of which four, one, and 2 SNPs were detected on various B. taurus autosomal chromosomes (BTA) by the respective model. The four significant SNPs associated with backfat thickness were ARS-BFGL-NGS–41475 on BTA 5, ARS-BFGLNGS- 36359 on BTA 19, ARS-BFGL-NGS-56813 on BTA 22, and Hapmap25048-BTA-138242 on BTA 25. Among the detected SNPs, one and two SNPs were associated with marbling score (ARS-BFGL-NGS-110066 on BTA 23) and meat colour (BTB-01920239 on BTA 15 and ARS-BFGL-NGS-24934 on BTA 18). In this GWAS, we identified three positional candidate genes for carcass traits, backfat thickness (Fibulin-2, FBLN2; Sorting nexin 29, SNX29) and meat colour (WW domain containing oxidoreductase, WWOX). Our results suggest that the candidate SNP markers do affect the genomic selection of associated carcass traits for Hanwoo in the Gangwon region.

Abstract
Life cycle assessment (LCA) is widely regarded as a useful tool for comparing the environmental impacts of multiple livestock production systems. While LCA results are typically communicated in the form of environmental burdens per mass unit of the end product, it is increasingly becoming recognized that the product quality also needs to be accounted for to truly understand the value of a farming system to society. To date, a number of studies have examined environmental consequences of different food consumption patterns at the diet level; however, few have addressed nutritional variations of a single commodity attributable to production systems, leaving limited insight into how on-farm practices can be improved to better balance environment and human nutrition. Using data from seven livestock production systems encompassing cattle, sheep, pigs, and poultry, this paper proposes a novel framework to incorporate nutritional value of meat products into livestock LCA. The results of quantitative case studies demonstrate that relative emissions intensities associated with different systems can be dramatically altered when the nutrient content of meat replaces the mass of meat as the functional unit, with cattle systems outperforming pig and poultry systems in some cases. This finding suggests that the performance of livestock systems should be evaluated under a whole supply chain approach, whereby end products originating from different farm management strategies are treated as competing but separate commodities.

Abstract
Abstract. When dairy cattle production predominates, the quantity and quality of beef
can be increased through commercial crossing of beef bulls with dairy cows
and creating herds for the purpose of beef production. This experiment was
conducted to compare carcass traits in young bulls and steers, produced by
crossing Holstein-Friesian (HF) cows with Hereford (HH) bulls and slaughtered
at 15 and 18 months of age. One half of 32 young
bulls were castrated at 2 or 3 weeks of age. Starting at 7 months of age,
they received grass silage supplemented with concentrates. At the end of the
fattening period, the animals were slaughtered, carcass quality and the
quality of meat from m. longissimus thoracis were evaluated. It was found
that unlike steers, bulls can be slaughtered at a later age because their
carcass traits improved over time and carcass fat content increased only
insignificantly. Meat from steers had higher intramuscular fat content (1.20
and 2.35 % in bulls and steers slaughtered at 15 months of age,
respectively; 1.89 and 3.79 % in bulls and steers slaughtered at 18
months of age, respectively), it was tenderer and juicier than meat from
bulls, and its sensory quality improved with age. The intramuscular fat (IMF)
of steers was characterized by a more desirable n-6 ∕ n-3 polyunsaturated
fatty acid (PUFA) ratio, whereas the IMF of bulls had higher concentrations
of conjugated linoleic acid and n-3 PUFAs. Beef from steers is a good choice
for consumers who appreciate high-quality meat. The results of this study may
encourage producers to raise steers for beef.

Abstract
Our main objective was to evaluate the effects of feeding α-amylase (Amaize, Alltech Inc., Nicholasville, KY, USA) for 140 days on skeletal muscle and liver gene transcription in beef steers. Steers fed Amaize had lower average daily gain (p = .03) and gain:feed ratio (p = .05). No differences (p > .10) in serum metabolites or carcass traits were detected between the two groups but Amaize steers tended (p < .15) to have increased 12th rib fat depth. Microarray analysis of skeletal muscle revealed 21 differentially expressed genes (DEG), where 14 were up-regulated and seven were down-regulated in Amaize-fed steers. The bioinformatics analysis indicated that metabolic pathways involved in fat formation and deposition, stress response, and muscle function were activated, while myogenesis was inhibited in Amaize-fed steers. The quantitative PCR results for liver revealed a decrease (p < .01) in expression of fatty acid binding protein 1 (FABP1) and 3-hydroxybutyrate dehydrogenase 1 (BDH1) with Amaize. Because these genes are key for intracellular fatty acid transport, oxidation and ketone body production, data suggest a reduction in hepatic lipid catabolism. Future work to investigate potential positive effects of Amaize on cellular stress response, muscle function, and liver function in beef cattle appears warranted.

Abstract
This study investigated the effects of animal, carcass and muscle characteristics on initial color traits of steaks from 887 Charolais cattle. First, the fixed factors of year of birth, experiment and sex had strong impacts on color traits. From the covariates, increased age lead to intense color (low h*, -1.55 units) and darker and vivid meat (high a*, b* and C*: +4.56, +3.41 and +5.61, respectively). Increases in fatness score and carcass fat weight were associated with increases in a*, b* and C* (redness; +2.90 to +4.06 for a*; yellowness; +2.60 to +3.76 for b*; and vividness, +3.87 to +5.49 for C*) and a darker colored lean (L*; -1.56 to -3.23). As pH24h increased, a* (less red) and C* (less vivid) decreased (-3.06), whereas hue angle increased (+2.69) leading to poorer color. The selection of animals for high degree of muscularity or slaughter weight resulted in lighter and darker meat, respectively. The studied covariates could be used as indicators of Charolais beef color traits.

Abstract
The objective of this study was to evaluate the influence a finishing diet containing natural additives fed for 94 days on animal performance, carcass, and meat quality characteristics of crossbred bulls (1/2 Angus × 1/2 Nellore). Forty-eight bulls (initial BW 318 ± 4.7 kg and initial age 22 months) were used in a completely randomised design. Bulls were fed one of four diets: (1) CON – Control; (2) CCO – addition of 4 g/animal.day of a mix of essential oils from castor bean and cashew; (3) MIX – addition of 4 g/animal.day of a mix of essential oils (oregano oils, castor bean, cashew); (4) YST – addition of 4 g/animal.day of yeast. Bulls were finished in feedlot (in individual pens) and slaughtered at an average weight of 469 ± 6.7 kg. Final BW, hot carcass weight and average daily gain were greater (P < 0.05) in MIX diet than in the three other diets. However, DM intake, G : F, fat thickness, longissimus muscle area, marbling, and meat colour were similar (P > 0.05) among the four diets. The carcass conformation score was higher (P < 0.05) for bulls that were fed with the YST diet and similar for the three other diets. Meat from CCO had a reduced (P < 0.05) cooking loss when compared with CON diet. Shear force from MIX diet had lesser values (P < 0.05) than meat from YST diet, and it was similar among CON and CCO diets. There was no diet effect (P > 0.05) on lipid oxidation, moisture, ash, and total lipids contents. C14:0, C14:1 n-9, C16:0, C18:1 n-9, C18:1 n-7 and C18:3 n-6 fatty acids in intramuscular fat from the longissimus muscle were affected by the inclusion of additives in the diets. SFA, MUFA, PUFA, n-3 and n-6 fatty acid percentages, and the ratios PUFA : SFA and n-6 : n-3 were similar (P > 0.05) among diets. In conclusion, adding a mix of oregano, castor bean, and cashew oils in the diet improved the performance of the bulls, but meat characteristics did not significantly change.

Abstract
Essential oils are natural extracts from plants which can be included in cattle diets as an alternative to additives, such as ionophores, to improve the shelf life of meat. The aim of this study was to evaluate the sensory acceptability of meat from 57 crossbred (1/2 Angus–1/2 Nellore) animals of different sexes [heifers n = 30, and young bulls n = 27], finished in feedlot with isoenergetic and isonitrogenous diets, which differed in the level of supplementation (0.0, 3.5 or 7.0 g/animal/day) with a commercial mix of essential oils (Mixoil®) from seven plants: oregano, garlic, lemon, rosemary, thyme, eucalyptus and sweet orange. The Longissimus thoracis muscle, aged for 24 h, was evaluated by 120 consumers who scored tenderness acceptability, flavour acceptability and overall acceptability using a hedonic 9-point scale. The inclusion of essential oils affected tenderness acceptability and flavour acceptability (P ≤ 0.01), with a tendency (P < 0.10) for overall acceptability. Meat from heifers was more appreciated by consumers than that from young bulls in all attributes (P ≤ 0.001), however, different groups of consumers had different preferences. The inclusion of a mix of essential oils in beef diets was well accepted by consumers, and could improve the acceptability of meat from young bulls, when is added at a concentration of 3.5 g/animal/day during the last 4 months of fattening.

Abstract
The objective of this study was to investigate the effects of peroral administration of chromium-enriched yeast on glucose tolerance in Holstein calves, assessed by insulin signaling pathway molecule determination and intravenous glucose tolerance test (IVGTT). Twenty-four Holstein calves, aged 1 month, were chosen for the study and divided into two groups: the PoCr group (n = 12) that perorally received 0.04 mg of Cr/kg of body mass daily, for 70 days, and the NCr group (n = 12) that received no chromium supplementation. Skeletal tissue samples from each calf were obtained on day 0 and day 70 of the experiment. Chromium supplementation increased protein content of the insulin β-subunit receptor, phosphorylation of insulin receptor substrate 1 at Tyrosine 632, phosphorylation of Akt at Serine 473, glucose transporter-4, and AMP-activated protein kinase in skeletal muscle tissue, while phosphorylation of insulin receptor substrate 1 at Serine 307 was not affected by chromium treatment. Results obtained during IVGTT, which was conducted on days 0, 30, 50, and 70, suggested an increased insulin sensitivity and, consequently, a better utilization of glucose in the PoCr group. Lower basal concentrations of glucose and insulin in the PoCr group on days 30 and 70 were also obtained. Our results indicate that chromium supplementation improves glucose utilization in calves by enhancing insulin intracellular signaling in the skeletal muscle tissue.

Abstract
Growth hormone secretagogue receptor 1a (GHSR1a), growth hormone (GH), growth hormone receptor (GHR), non-SMC condensin I complex, subunit G (NCAPG) and stearoyl-CoA desaturase (SCD), are known to play important roles in growth and lipid metabolisms. Single and epistatic effects of the five genes on carcass, price-related and fatty acid (FA) composition traits were analyzed in a commercial Japanese Black cattle population of Ibaraki Prefecture. A total of 650 steers and 116 heifers for carcass and price-related traits, and 158 steers for FA composition traits were used in this study. Epistatic effects between pairs of the five genes were found in several traits. Alleles showing strain-specific differences in the five genes had significant single and epistatic effects in some traits. The data suggest that a TG-repeat polymorphism of the GHSR1a.5'UTR-(TG)n locus plays a central role in gene-gene epistatic interaction of FA composition traits in the adipose tissue of Japanese Black cattle.

Abstract
BACKGROUND Fatty acid composition of muscle is an important trait contributing to meat quality. Recently, genome-wide association study (GWAS) has been extensively used to explore the molecular mechanism underlying important traits in cattle. In this study, we performed GWAS using high density SNP array to analyze the association between SNPs and fatty acids and evaluated the accuracy of genomic prediction for fatty acids in Chinese Simmental cattle. RESULTS Using the BayesB method, we identified 35 and 7 regions in Chinese Simmental cattle that displayed significant associations with individual fatty acids and fatty acid groups, respectively. We further obtained several candidate genes which may be involved in fatty acid biosynthesis including elongation of very long chain fatty acids protein 5 (ELOVL5), fatty acid synthase (FASN), caspase 2 (CASP2) and thyroglobulin (TG). Specifically, we obtained strong evidence of association signals for one SNP located at 51.3 Mb for FASN using Genome-wide Rapid Association Mixed Model and Regression-Genomic Control (GRAMMAR-GC) approaches. Also, region-based association test identified multiple SNPs within FASN and ELOVL5 for C14:0. In addition, our result revealed that the effectiveness of genomic prediction for fatty acid composition using BayesB was slightly superior over GBLUP in Chinese Simmental cattle. CONCLUSIONS We identified several significantly associated regions and loci which can be considered as potential candidate markers for genomics-assisted breeding programs. Using multiple methods, our results revealed that FASN and ELOVL5 are associated with fatty acids with strong evidence. Our finding also suggested that it is feasible to perform genomic selection for fatty acids in Chinese Simmental cattle.

Abstract
To investigate the physico-chemical and sensory properties of striploin muscles, 90 Hanwoo carcasses (QG 1+ ) were randomly selected within six maturity levels (4 to 9 according to age in months). Results demonstrated that the protein contents at maturity levels 4 and 5 were significantly higher than 9. No significant difference in fat, moisture and collagen contents were found at different maturity levels (P > 0.05). The quantity of collagen type I and ratio of type I to III were observed at higher maturity levels; collagen type III showed significantly high levels (P > 0.05) at low maturity and decreased with increase in maturity levels. Warner-Bratzler shear force (WBSF) was significantly lower in groups 4 to 6, whereas water holding capacity (WHC) was significantly higher than maturity level 8 and 9 groups (P < 0.05). There were no significant differences in cooking loss among the maturity level groups (P > 0.05). Color properties, L* values of striploin muscle from maturity level 4 were significantly different from level 9 (P < 0.05). Sensory evaluation at level 4-6 groups had significantly higher tenderness and overall likeness scores than level 9 (P < 0.05). The maturity levels were significantly correlated with age, fat, protein content, WHC, WBSF, cooking loss, CIE L* values and sensory properties like tenderness, juiciness, flavor-likeness and overall likeness.

Abstract
Forty Nellore heifers were fed (73days) with different diets: with or without essential oils (clove and/or rosemary essential oil) and/or active principle blend (eugenol, thymol and vanillin). The pH, fat thickness, marbling, muscle area and water losses (thawing and drip) were evaluated 24h post mortem on the Longissimus thoracis, and the effects of aging (14days) was evaluated on the meat cooking losses, color, texture and lipid oxidation. Antioxidant activity was also evaluated. Treatments had no effect (P>0.05) on pH, fat thickness, marbling, muscle area, thawing and drip losses. However, treatments affected (P<0.05) cooking losses, color, texture and lipid oxidation. The diets with essential oil and the active principle blend reduced the lipid oxidation and reduced the color losses in relation to control diet. Aging affected (P<0.05) texture and lipid oxidation. The essential oil and active principles or its blend have potential use in animal feed aiming to maintain/improve meat quality during shelf-life.
