Abstract
The effects of high oleic oil full-fat (HO-FF) soybean meal (SBM) on broiler meat quality could lead to value-added food products. This experiment evaluated the effects of dietary normal oleic extruded expelled (NO-EE), normal oleic full-fat (NO-FF), or HO-FF SBM on live performance, carcass and parts yield, and breast fatty acid composition. Diets were formulated to be isoenergetic and isonitrogenous. A total of 540 Ross-708 male broilers were raised on floor pens with 18 broilers/pen and 10 replicates/treatment. Data were analyzed in a completely randomized design. Chickens were fed with a starter (0-14 d), grower (15-35 d), or a finisher diet (36-47 d) up to 47 d. Chickens were weighed at 7, 14, 35, and 47 d. At 48 d, 4 broilers per pen were processed. Breast samples were collected and evaluated for quality and fatty acid content. Broilers fed diets with NO-EE were heavier (P < 0.05) than chickens fed diets with full-fat SBM (NO-FF and HO-FF) at d 7, 14, 35 while feed conversion ratio (FCR) of NO-EE was best (P < 0.05) at 7 and 47 d. Carcass yield was also higher for broilers fed NO-EE than the other treatments. Diet did not affect parts yield, breast meat color, cooking, drip loss, white stripping, or SM quality parameters. More breast fillets without wooden breast (score 1) were observed (P < 0.05) for NO-FF than the other 2 treatments. The breast meat fatty acid profile (g fatty acid/100 g of all fatty acids) was significantly affected (P < 0.001) by diet. Broilers fed the HO-FF SBM diet had 54 to 86% more oleic acid, 72.5% to 2.2 times less linoleic acid, and reduced stearic and palmitic acid levels in the breast meat than NO-FF and NO-EE. In conclusion, feeding HO-FF to broilers enriched the oleic acid content of their breast meat while reducing the saturated fatty acid content relative to the NO-FF and NO-EE treatment groups.

Abstract
A 42-days experiment was conducted on a day old birds (n = 400) to evaluate the effect of enzyme supplements in feed on the growth, blood parameters, phosphorous content in bones, and nitrogen retention. Different treatments included: control (C) without enzyme supplement, while the other three groups included enzyme mixture T1 and T2 with two commercially available enzyme mix, and T3 with indigenously produced multi-enzyme complex from Bacillus subtilis KT004404. Birds that were fed with indigenously produced multi-enzyme complex showed significant weight gain as compared to other groups. The total feed intake of the birds fed with enzyme supplements was higher than the birds in the control group. The feed conversion ratio was significantly improved (p < 0.05) in treatment groups (T1, T2, T3) as compared to the control. The blood parameters which were analyzed included uric acid, triglycerides, total cholesterol, and serum proteins i.e. globulin and albumin. Birds fed with the enzyme in the group T1, T2 and T3 exhibited higher (p < 0.05) body weight gain. Tibia ash content was significantly higher (p < 0.05) in T1, T2, and T3 as compared to the control. The results of the current study indicate that supplementing poultry feed with the exogenous multi-enzyme produced from Bacillus subtilis KT004404 improved the growth of the birds, feed utilization, and exhibited beneficial effects on the blood parameters, phosphorous and nitrogen retention in broiler chicken.

Abstract
Simple Summary The studies show how replacing soybean meal with soybean expeller cake or extruded full-fat soybean in feed rations for broiler chickens affects rearing results (weight gain, intake and conversion of feed), carcass composition (dressing percentage, musculature, fattens) and meat quality (physical properties: pH, colour, water holding capacity; the chemical composition: basic components, fatty acids and organoleptic value: flavour, tenderness, palatability and juiciness). Based on the results the use of soybean expeller cake in broiler chicken starter/grower diets can be recommended as it allowed for obtaining the best production and slaughter results. However, from the point of view of the human diet, extruded full-fat soybean should be suggested since it best modified the lipid fraction of muscles. Abstract The study aimed to determine the overall effect of replacing soybean meal completely with soybean expeller cake or extruded full-fat soybean in feed rations for broiler chickens on their carcass composition and meat quality. The experiment involved one hundred and twenty Ross 308 broiler chickens randomly allocated to three equinumerous groups (SBM, SEC, EFS). Each group was divided into five subgroups—each consisting of eight birds of both sexes (1:1). From Day 1 to Day 21 of life the birds were fed with loose starter rations, and from Day 22 to Day 42 they were fed grower rations based on a wheat meal, protein products and mineral and vitamin admixtures. The experimental factor was a protein raw material comprising: SBM group—soybean meal from GM (genetically modified) seeds, SEC—soybean expeller cake from n-GM seeds, and EFS—extruded full-fat soybean from n-GM seeds. The experimental diets were isocaloric and isonitrogenous. It was demonstrated that replacing soybean meal with SEC or EFS in feed rations for broiler chickens led to a significant (p < 0.05) weight gain on Day 42 of rearing by 4.57% and 2.88%, respectively. The chickens fed diets with EFS had worse (more than 4.14%) feed conversion rate (FCR) in comparison to the others (p < 0.05). Broiler chickens from the SBM and SEC groups showed a higher share of breast and leg muscles (by 4.74% and 7.54%) and a lower share of abdominal fat (by 31.1%) and skin with subcutaneous fat (by 18.8% and 13.4%) in comparison with birds from the EFS group (p < 0.05). The highest content of intramuscular fat with the best fatty acids profile was determined in the muscles of birds fed with diets containing EFS, while the muscles of chickens receiving SEC scored the highest. The results provide grounds for recommending SEC in broiler chicken nutrition as it allowed for obtaining the best production and slaughter results, whereas—from the point of view of the human diet—EFS should be recommended since it best modified the lipid fraction of muscles.

Abstract
The study aimed to determine the impact of a 60% inclusion of naked oats in feed rations for Pulawska pigs and Pulawska x Polish Large White (PLW) crossbreds on the fattening performance, carcass composition, and meat quality. It was demonstrated that-independent from their diet-Pulawska pigs showed a daily weight gain about 14.5% lower (p ≤ 0.05), with about 15% higher feed conversion rate. The experimental factors showed no impact on the dressing percentage, meatiness, and backfat thickness, except that the "eye" of the loin was significantly smaller (by 4.55 cm2) in Pulawska pigs. There was no interaction effect (diet/breed) for the pigs' performance results and carcass composition. A 60% inclusion of naked oats in the pigs' diet did not affect the weight of primal cuts in the right-side half-carcass. Compared to Pulawska pigs, crossbreds featured a significantly lower weight of bacon and ribs (by 1.17 kg) but a higher (p ≤ 0.05) weight of fillet (by 1.0 kg) and ham with shin (by 0.43 kg). The diet had no impact on the evaluated muscles, except a reduction (by 2.3 points) in colour lightness (L) of musculus semimembranosus in fattening pigs receiving feed rations with a 60% share of oats. Both muscles in Pulawska pigs showed significantly better (p ≤ 0.05) water-holding capacity and reduced colour lightness (L) in comparison to crossbred pigs. Moreover, the longissimus lumborum muscle of Pulawska pigs had a higher chroma (C) and a lower hue (H). The contents of essential nutrients in the evaluated muscles did not depend on the pigs' diet and breed, except that a higher by 0.3% (p ≤ 0.05) intramuscular fat content was found in the longissimus lumborum muscle of Pulawska pigs. Neither of the experimental factors showed significant impact on the total saturated fatty acids (SFA) and total unsaturated fatty acids (UFA), or on neutral or hypocholesterolemic (DFA) and hypercholesterolemic fatty acids (OFA) in the evaluated muscles. The muscles of Pulawska x PLW pigs contained more (by 1.77% FA in the longissimus lumborum and 1.16% in the semimembranosus) polyunsaturated fatty acids (PUFA) than the muscles of the Pulawska breed (p ≤ 0.05). In addition, naked oats included in the pigs' diet increased (p ≤ 0.05) the share of PUFA in intramuscular fat. The muscles of Pulawska pigs, in comparison to the muscles of crossbreds, showed a significantly improved ratio: by 66% and 69% in the longissimus lumborum and the semimembranosus muscles, respectively. To sum up, a 60% inclusion of naked oats is recommended in the rations of both Pulawska pigs and Pulawska x PLW crossbreds, since it allows satisfactory carcass composition and meat quality to be maintained. Pulawska pigs had worse productivity ratios but showed improved meat quality traits in terms of the n-6/n-3 ratio.

Abstract
Sustainable development in agriculture brings both environmental and economic benefits. Contemporary agriculture is also about increasing nutrient use efficiency, especially nitrogen, as the critical nutrient causing the most significant environmental pressure. This creates the need to produce highly digestible protein feed with high bioavailability, reducing losses of biogenic elements to feces. In this review, the latest trends and the potential for their implementation in sustainable agriculture have been compared, as well as the need to reduce the negative environmental impact of agriculture has been demonstrated. Applying local protein sources to feed animals reduces greenhouse gas emissions associated with transportation. The production of highly digestible fodder leads to a reduction in environmental pollution caused by excessive nitrogen outflows. Another approach indecreasing ammonia emissions from livestock farming is feed protein reduction and amino acid supplementation. All of the aforementioned approaches may result in beneficial long-term changes, contributing to environmental safety, animal welfare and human health.

Abstract
The studies aimed to evaluate the impact of milk thistle seeds in broiler chicken feed rations on rearing results, carcass composition and meat quality. The experiment involved 120 broiler chickens randomly allocated to three equinumerous groups (C, MT02, MT23). Each group was divided into five subgroups of eight chickens each. Over the first 21 days of life the birds were fed starter rations, and over the following 21 days received grower rations. Chicken starter/grower diets in groups MT02 and MT23 were supplemented with ground seeds of milk thistle in the amount of 0/2% (MT02) and 2/3% (MT23). It was demonstrated that Silybum marianum added to feed rations over the whole rearing period (group MT23) increased above 3% the birds' body weight on rearing day 42. (p < 0.05) and decreased about 7% the feed conversion ratio (p < 0.05) in comparison to group C. No effect of feeding on the carcass composition was observed, including on muscularity and fattening grade, although diets containing milk thistle reduced (by 15% and 19% in group MT02 and MT23, respectively) the content of crude fat in chicken leg muscles (p < 0.05). The highest (p < 0.05) content of polyunsaturated fatty acids (PUFA) was determined in the breast (38.06%) and leg (37.63%) muscles of chicken receiving feed rations containing Silybum marianum throughout the rearing period. No effect of nutrition on the evaluated physical properties of muscles was observed, except on the decrease in lightness color (L*) and increase in values a* and C as well as a decrease of water holding capacity of the breast muscles. It was found that Silybum marianum in chicken diets had a positive effect on the evaluated meat flavor characteristics of the muscles. To sum up, based on the study results, including ground seeds of milk thistle in broiler chickens nutrition can be recommended in the amount of 2/3% in starter/grower diets, respectively.

Abstract
Simple Summary A soybean meal, commonly used as a primary source of protein in animal diets, is often obtained from processing genetically modified soybean varieties. The tendency to reduce the use of feeds containing transgenic constituents increases the need for alternative sources of dietary protein. In this study, we fed broiler chickens diets containing either soybean meal or raw chickpea seeds. We examined the effect of such a substitution on broilers’ subcutaneous fat tissue, which has numerous important physiological functions in chickens. Abstract In this study, the effect of soybean meal substitution by raw chickpea seeds on the thermal properties and fatty acid profile of subcutaneous fat tissue of broiler chickens was examined. The experiment, performed on Ross 308 chickens, lasted for 42 days. Tight subcutaneous fat tissue was analyzed using differential scanning calorimetry (DSC) measurements while the fatty acid composition of subcutaneous adipose tissue was determined chromatographically. There was no effect of soybean meal substitution on fat crystallization temperature or crystallization enthalpy. However, the total calorimetric enthalpy of the melting of low-melting monounsaturated and saturated triacylglycerols differed between groups. Fatty acid proportions in the subcutaneous fat tissue of broiler chickens were also altered. Among others, chickpea seed inclusion decreased the content of main saturated acid (palmitic acid) and increased the content of main monounsaturated (oleic) and tri-unsaturated (linolenic) acids. The results show that the soybean meal substitution by raw chickpea seeds in the feed can affect the structural properties of adipose tissue in broiler chickens, including the thermal transformation of unsaturated fatty acids. Due to the numerous physiological functions of subcutaneous fat tissue, understanding these mechanisms can promote the use of alternative protein both in poultry and human nutrition.

Abstract
The aim of the study was to compare the carcass and meat quality of geese fed with soybean meal or yellow lupin. In total, 210 White Kołuda® geese were divided into 2 groups (1, soybean meal (SBM); 2, yellow lupin (YL), potato protein, and brewer's yeast) of 5 replications (21 birds per each). After 16 weeks, 10 geese (5 females, 5 males) from each group were slaughtered. Carcass dissection was done, and major physicochemical traits were analysed (pH, water holding capacity, drip loss, color, and chemical composition of muscles). Weight of leg muscles and their proportion in the carcass were higher (p < 0.05) in SBM. Breast muscles from SBM were characterized by increased (p < 0.05) drip loss, enhanced (p < 0.05) content of protein, water, collagen and connective tissue, and lower (p < 0.05) fat content. Leg muscles from SBM were characterized by higher (p < 0.05) protein and water content but decreased (p < 0.05) salt and fat content compared to YL. The addition of YL (approx. 28%), potato protein, and brewer's yeast had no negative effect on most meat traits and could partly replace SBM as a protein source in geese feeding. Hence, yellow lupin, potato protein and brewer's yeast can be used in geese rearing followed by fattening with oats. Some producers do not have the option of using soybean meal. Small-scale farms use their own crop resources, so lupins can be an alternative source of protein for soybean meal.
