Leveraging microalgae as a sustainable ingredient for meat analogues

As the world's population and income levels continue to rise, there is a substantial increase in the demand for meat, which poses significant environmental challenges due to large-scale livestock production. This review explores the potential of microalgae as a sustainable protein source for meat analogues. The nutritional composition, functional properties, and environmental advantages of microalgae are analyzed. Additionally, current obstacles to large-scale microalgal food production are addressed, such as strain development, contamination risks, water usage, and downstream processing. The challenges associated with creating meat-like textures and flavors using techniques like extrusion and emulsion formation with microalgae are also examined. Lastly, considerations related to consumer acceptance, marketing, and regulation are summarized. By focusing on improvements in cultivation, structure, sensory attributes, and affordability, microalgae demonstrate promise as a transformative and eco-friendly protein source to enhance the next generation of meat alternatives.

Fatty Acid and Amino Acid Profiles of Seven Edible Insects: Focus on Lipid Class Composition and Protein Conversion Factors

This study is based on the fatty acid and amino acid profiles of seven edible insect species: Acheta domesticus, Alphitobius diaperinus, Blaptica dubia, Galleria mellonella, Locusta migratoria, Tenebrio molitor, and Zophobas morio. The aim of the present study is to provide new data on the fatty acid distributions among lipid classes as well as the species-specific protein conversion factor (Kp) of a wide range of insects in order to further improve the nutritional characterisation of insects as food. Oleic acid was the predominant fatty acid in all insects except for A. domesticus, in which a significantly higher percentage of linoleic acid was found. The majority of the lipids were neutral lipids. A significant amount of α-linolenic acid in the phospholipid fraction of L. migratoria was shown, while in T. molitor, phospholipids were the only fraction in which a measurable amount of docosahexaenoic acid was found. Overall, in most insects, the phospholipid fraction had the highest polyunsaturated fatty acid content compared to the other classes, which may be protective in terms of auto-oxidative stability. Kp values in the range of 4.17 to 6.43 were obtained. Within the nutritional quality indices, all insects showed healthy fatty acids and high-quality amino acid profiles.

Implementing micronutrient fortification programs as a potential practical contribution to achieving sustainable diets

Due to sustainability concerns related to current diets and environmental challenges, it is crucial to have sound policies to protect human and planetary health. It is proposed that sustainable diets will improve public health and food security and decrease the food system's effect on the environment. Micronutrient deficiencies are a well-known major public health concern. One-third to half of the world's population suffers from nutrient deficiencies, which have a negative impact on society in terms of unrealised potential and lost economic productivity. Large-scale fortification with different micronutrients has been found to be a useful strategy to improve public health. As a cost-effective strategy to improve micronutrient deficiency, this review explores the role of micronutrient fortification programmes in ensuring the nutritional quality (and affordability) of diets that are adjusted to help ensure environmental sustainability in the face of climate change, for example by replacing some animal-sourced foods with nutrient-dense, plant-sourced foods fortified with the micronutrients commonly supplied by animal-sourced foods. Additionally, micronutrient fortification considers food preferences based on the dimensions of a culturally sustainable diet. Thus, we conclude that investing in micronutrient fortification could play a significant role in preventing and controlling micronutrient deficiencies, improving diets and being environmentally, culturally and economically sustainable.

Two-phase microalgae cultivation for RAS water remediation and high-value biomass production

The overall goal of this study was to provide solutions to innovative microalgae-based technology for wastewater remediation in a cold-water recirculating marine aquaculture system (RAS). This is based on the novel concept of integrated aquaculture systems in which fish nutrient-rich rearing water will be used for microalgae cultivation. The produced biomass can be used as fish feed, while the cleaned water can be reused, to create a highly eco-sustainable circular economy. Here, we tested three microalgae species Nannochloropis granulata (Ng), Phaeodactylum tricornutum (Pt), and Chlorella sp (Csp) for their ability to remove nitrogen and phosphate from the RAS wastewater and simultaneously produce high-value biomass, i.e., containing amino acids (AA), carotenoids, and polyunsaturated fatty acids (PUFAs). A high yield and value of biomass were achieved for all species in a two-phase cultivation strategy: i) a first phase using a medium optimized for best growth (f/2 14x, control); ii) a second "stress" phase using the RAS wastewater to enhance the production of high-value metabolites. Ng and Pt performed best in terms of biomass yield (i.e., 5-6 g of dry weight, DW.L^-1) and efficient cleaning of the RAS wastewater from nitrite, nitrate, and phosphate (i.e., 100% removal). Csp produced about 3 g L^-1 of DW and reduced efficiently only nitrate, and phosphate (i.e., about 76% and 100% removal, respectively). The biomass of all strains was rich in protein (30-40 % of DW) containing all the essential AA except Methionine. The biomass of all three species was also rich in PUFAs. Finally, all tested species are excellent sources of antioxidant carotenoids, including fucoxanthin (Pt), lutein (Ng and Csp) and β-carotene (Csp). All tested species in our novel two-phase cultivation strategy thus showed great potential to treat marine RAS wastewater and provide sustainable alternatives to animal and plant proteins with extra added values.

Review: Current challenges in poultry nutrition, health, and welfare

The poultry industry has benefited greatly from advances in genetics, nutrition, housing and management strategies. Geneticists have made welfare and health traits important components of selection programs, and in general, modern, high-producing poultry are healthier than 30 years ago. However, increased productivity means that the birds are closer to their physiological limits, and nutrition, environment and management have become increasingly important. The move away from in-feed antibiotic growth promotors has resulted in challenges in maintaining gut health and consequently, bird performance. However, as the industry adapts to production without the use of antibiotic growth promotors, long-term benefits may be realized due to a reduction in antimicrobial resistance. Intensive selection for meat yield and efficiency are associated with an increased risk of muscle myopathies that affect bird health and meat quality. As genetic selection increased broiler production traits, it became necessary to restrict parent stock nutrient intake in order to prevent excessive muscle and fat deposition, reduce metabolic disease, and maintain ovarian control. With continued selection for broiler production traits, the degree of restriction implemented has become a welfare issue. Additionally, recent research suggests that highly efficient broiler lines may have limited fat deposition and therefore energy reserves to support sexual maturation and egg production, especially if typical broiler breeder BW targets are maintained. A re-examination of broiler breeder feeding programs is necessary to maintain productivity and welfare. Modern laying hens are capable of laying cycles in excess of 100 weeks of age. This has reduced the use of stress-inducing forced molting programs and reduces the total number of hens needed to meet the demand for egg production. The important role of the skeletal system in eggshell deposition demands that skeletal development during rearing be carefully managed to avoid shell and skeletal problems at the end of the production cycle. As the production potential of modern poultry continues to increase through genetic and genomic selection, even greater care must be paid in order to maintain bird health and welfare. The poultry industry has successfully faced many challenges in the past and is likely to overcome the existing challenges as well.

Residual feed intake breeding value associated with growth, carcass traits, meat quality, bone properties and humoral immunity in Japanese quail

Improved feed efficiency (FE) is one of the most important achievements in animal breeding programs. The present investigation aimed to determine the phenotypic correlations of residual feed intake (RFI) breeding value with some traits in growing Japanese quail. A total of 48 birds (24 males and 24 females) were selected from 220 quail chicks divided into three classes based on breeding values (BV) for RFI including low (LBV; n = 16), medium (MBV; n = 16), and high-BV (HBV; n = 16) were used to test FE. The effects of three groups of BV on the studied traits including carcass traits, meat quality, humoral immunity, and bone properties were evaluated. The BV for RFI was positively correlated with feed conversion ratio (FCR) and feed intake (FI) but not with metabolic BW (MBW^0.75). Live body weight, carcass, breast, and thigh weight in the LBV-RFI group were significantly greater than those in the HBV-RFI group. The BV for RFI had a negative correlation with live body weight and thigh weight. Our findings suggested that the selection of LBV-RFI quails may be useful to increase live body weight without any adverse impact on meat quality and bone properties, and live body weight can be implemented in breeding programs as an indirect selection indicator for improvement of FE in quails.

Modeling a localized metropolitan food system in the Midwest USA: Life cycle impacts of scenarios for Des Moines, Iowa

Food systems are energy-intensive, causing ≈25 % of anthropogenic global warming potential (GWP) and contributing to challenges across the food-energy-water nexus. The state of Iowa, USA, is of particular interest as a rainfed agricultural region of the upper Midwest; despite its highly productive landscape, a large proportion of food consumed by Iowa residents is imported. This study focused on the Des Moines Metropolitan Statistical Area (DM-MSA), a six-county area in central Iowa with a 2020 population of ≈700,000. A life cycle assessment approach was used to quantify environmental impacts (GWP, fossil energy and water consumption, land use); scenarios modeled provision and consumption of 50 % of nutritional requirements for the current DM-MSA population by food group (e.g., grains, proteins, vegetables). The four DM-MSA food system scenarios were: 1) current conditions (baseline), 2) local production for 50 % of food, 3) consumption changed to follow USA dietary guidelines, and 4) combined changes to production and consumption. Localizing food production reduced all environmental impacts more than following USA dietary guidelines. Compared to the baseline, 50 % local production scenarios reduced GWP and energy consumption (18-24 %) and water use (35-41 %) annually. Decreases by food group were least for protein (-10 % GWP) and greatest for fruits and vegetables (-58-62 % GWP). Local scenario alternatives could further reduce some environmental impacts if paired with a nutritionally- and environmentally-optimized diet (EAT-Lancet) providing the greatest change (-30-38 % for GWP and energy use) compared to the local scenario. A 50 % local production scenario for the DM-MSA could decrease GWP by 102 million CO_2eq yr^-1 and water use by 44 billion L yr^-1. However, this would require dietary changes based on seasonal food availability. Further development and co-simulation with other metropolitan-scale biophysical and social models will enhance understanding of food system drivers and support effective decision-making for urban food system improvements in the Midwest.

Comparative Analysis of the Liver Transcriptome of Beijing You Chickens and Guang Ming Broilers under Salmonella enterica Serovar Typhimurium Infection

Salmonella enterica serovar Typhimurium (ST) is a food-borne pathogen that can infect animals and humans. It is currently the most common bacterial pathogen that negatively affects the poultry industry. Although different chicken breeds have been observed to exhibit diverse resistance to ST infection, the underlying genetic mechanisms remain unclear and the genes involved in this differential disease resistance need to be identified. To overcome this knowledge gap, we used a liver transcriptome analysis to screen differentially expressed genes (DEGs) in two different chicken breeds (local Beijing You (BY) and commercial Guang Ming No. 2 broiler line B (GM)) before and after ST infection. We also performed weighted gene co-expression network analysis (WGCNA) to detect hub genes, and employed selection signal analysis of candidate genes. Three promising genes (EGR1, JUN and FOS) were eventually identified, and were significantly and differentially expressed in the same breed under different conditions, and in the two breeds after ST infection. Hub genes, such as PPFIA4 and ZNF395, were identified using WGCNA, and were associated with the ratio of heterophils to lymphocytes (H/L), an indicator of disease resistance. the present study identified several genes and pathways associated with resistance to ST infection, and found that BY had greater resistance to ST infection than GM. The results obtained provide valuable resources for investigating the mechanisms of resistance to ST infection in different chicken breeds.

Consumers' Acceptability and Perception of Edible Insects as an Emerging Protein Source

In recent years in Western Europe, studies on entomophagy have drawn the attention of many researchers interested in identifying parameters that could improve the acceptability of insect consumption in order to introduce insects as a sustainable source of protein into the future diet. Analysing the factors involved in consumer acceptability in the Mediterranean area could help to improve their future acceptance. A cross-sectional study was conducted using an ad-hoc questionnaire in which 1034 consumers participated. The questionnaire responses allowed us to study the areas relevant to acceptance: neophobia, social norms, familiarity, experiences of consumption and knowledge of benefits. Only 13.15% of participants had tried insects. Disgust, lack of custom and food safety were the main reasons for avoiding insect consumption. Consequently, preparations with an appetising appearance need to be offered, with flours being the most accepted format. The 40-59-year-old age group was the one most willing to consume them. To introduce edible insects as food in the future, it is important to inform people about their health, environmental and economic benefits because that could increase their willingness to include them in their diet.

Scale-Up of Alfalfa (Medicago sativa) Protein Recovery Using Screw Presses

As a consequence of the increased demand for proteins for both feed and food, alternative protein sources from green plants such as alfalfa (Medicago sativa) have come into focus, together with methods to recover these proteins. In this study, we have investigated the use of screw presses for protein recovery from alfalfa at laboratory and pilot scale. We found that using a pilot scale screw press, with a working pressure of 6 bar, 16% of the total protein was recovered in one pressing, and that after rehydrating and repressing the alfalfa up to ten times, 48% of the total protein could be recovered. The green alfalfa protein concentrate was analyzed for total protein, amino acid profile, protein digestibility, color, ash, fiber and fat content. It was found that repetitive pressings lowered the digestibility of the protein pool and reduced the total protein concentration due to dilution. To achieve the best quality protein at the highest concentrations, it is recommended to press the alfalfa no more than twice, which results in an alfalfa protein concentrate with more than 32% soluble protein and greater than 82% digestibility.

Edible Insect Consumption for Human and Planetary Health: A Systematic Review

This systematic review aimed to examine the health outcomes and environmental impact of edible insect consumption. Following PRISMA-P guidelines, PubMed, Medline ProQuest, and Cochrane Library databases were searched until February 2021. Twenty-five articles met inclusion criteria: twelve animal and six human studies (randomized, non-randomized, and crossover control trials), and seven studies on sustainability outcomes. In animal studies, a supplement (in powdered form) of 0.5 g/kg of glycosaminoglycans significantly reduced abdominal and epididymal fat weight (5-40% and 5-24%, respectively), blood glucose (10-22%), and total cholesterol levels (9-10%), and a supplement of 5 mg/kg chitin/chitosan reduced body weight (1-4%) and abdominal fat accumulation (4%) versus control diets. In other animal studies, doses up to 7-15% of edible insect inclusion level significantly improved the live weight (9-33%), reduced levels of triglycerides (44%), cholesterol (14%), and blood glucose (8%), and increased microbiota diversity (2%) versus control diet. In human studies, doses up to 7% of edible insect inclusion level produced a significant improvement in gut health (6%) and reduction in systemic inflammation (2%) versus control diets and a significant increase in blood concentrations of essential and branched-chain amino acids and slowing of digestion (40%) versus whey treatment. Environmental indicators (land use, water footprint, and greenhouse gas emissions) were 40-60% lower for the feed and food of edible insects than for traditional animal livestock. More research is warranted on the edible insect dose responsible for health effects and on environmental indicators of edible insects for human nutrition. This research demonstrates how edible insects can be an alternative protein source not only to improve human and animal nutrition but also to exert positive effects on planetary health.

Harvest of quality-controlled bovine myogenic cells and biomimetic bovine muscle tissue engineering for sustainable meat production

Alternative technology for meat production holds the potential to alleviate ethical, environmental, and public health concerns associated with conventional meat production. Cultured meat produced using cell culture technology promises to become a viable alternative to animal-raised meat for the future of the food industry. In this study, biomimetic bovine muscle tissue was artificially fabricated from myogenic cells extracted from bovine meat. Our primary culture method relies on three key factors; a sequential digesting process, enzymatic treatment with pronase, and coating with laminin fragment on culture dishes. This method allows the efficient collection of large numbers of primary cells from bovine cheek meat, purifies the myogenic cells from the cell mixture, and then continuously grows the myogenic cells in vitro. In addition, using our "quality control" methods, we were able to determine the "cell quality", including the proliferative and differentiation capability in each step of the primary culture. Furthermore, to mimic native bovine meat, the quality-controlled bovine myogenic cells were cultured on a micropatterned thermoresponsive substrate stimulating a native-like aligned structure of cells, which were then transferred onto a fibrin-based gel. This gel-based culture environment promoted structural and functional maturation of the myogenic cells, resulting in the production of bovine muscle tissues with sarcomere structures, native-like membrane structures, and contractile ability. We believe that these biomimetic features of "tissue-engineered meat" are important for the production of future cultured meat, which will need native-like nutrients, texture and taste. Therefore, our meat production approach will provide a new platform to produce more native biomimetic tissue-engineered meat in the near future.

Protein by-products: Composition, extraction, and biomedical applications

Significant upsurge in animal by-products such as skin, bones, wool, hides, feathers, and fats has become a global challenge and, if not properly disposed of, can spread contamination and viral diseases. Animal by-products are rich in proteins, which can be used as nutritional, pharmacologically functional ingredients, and biomedical materials. Therefore, recycling these abundant and renewable by-products and extracting high value-added components from them is a sustainable approach to reclaim animal by-products while addressing scarce landfill resources. This article appraises the most recent studies conducted in the last five years on animal-derived proteins' separation and biomedical application. The effort encompasses an introduction about the composition, an overview of the extraction and purification methods, and the broad range of biomedical applications of these ensuing proteins.

Forage grass growth under future climate change scenarios affects fermentation and ruminant efficiency

With an increasing human population access to ruminant products is an important factor in global food supply. While ruminants contribute to climate change, climate change could also affect ruminant production. Here we investigated how the plant response to climate change affects forage quality and subsequent rumen fermentation. Models of near future climate change (2050) predict increases in temperature, CO₂, precipitation and altered weather systems which will produce stress responses in field crops. We hypothesised that pre-exposure to altered climate conditions causes compositional changes and also primes plant cells such that their post-ingestion metabolic response to the rumen is altered. This “stress memory” effect was investigated by screening ten forage grass varieties in five differing climate scenarios, including current climate (2020), future climate (2050), or future climate plus flooding, drought or heat shock. While varietal differences in fermentation were detected in terms of gas production, there was little effect of elevated temperature or CO₂ compared with controls (2020). All varieties consistently showed decreased digestibility linked to decreased methane production as a result of drought or an acute flood treatment. These results indicate that efforts to breed future forage varieties should target tolerance of acute stress rather than long term climate.

New Technology Tools and Life Cycle Analysis (LCA) Applied to a Sustainable Livestock Production

Agriculture 4.0, a combination of mechanical innovation and information and communication technologies (ICT) using precision farming, omics technologies and advanced waste treatment techniques, can be used to enhance the biological potential of animal and crop productions and reduce livestock gaseous emissions. In addition to animal proteins being excellent nutritional ingredients for the human diet, there is a growing concern regarding the amount of energy spent converting vegetable crops into animal protein and the relevant environmental impacts. Using the value chain analysis derived from the neoclassic production theory extended to industrial processing and the market, the hypothesis to be tested concerns the sustainability and convenience of different protein sources. The methodology implies the use of life cycle analysis (LCA) to evaluate the efficiency of different livestock diet ingredients. The use of feeding products depend upon various factors, including cost reduction, consumer acceptance, incumbent industry response, civil society support, policy consensus, lower depletion of natural resources, improved sustainable agri-food supply chain and LCA. EU policy makers should be aware of these changes in livestock and market chains and act proactively to encourage the use of alternative animal proteins.

Nutrient provision capacity of alternative livestock farming systems per area of arable farmland required

Although climate impacts of ruminant agriculture are a major concern worldwide, using policy instruments to force grazing farms out of the livestock industry may diminish opportunities to produce nutritious food without exacerbating the food-feed competition for fertile and accessible land resources. Here, we present a new set of quantitative evidence to demonstrate that, per unit of overall nutrient value supplied by a given commodity, the demand for land suitable for human-edible crop production is considerably smaller under ruminant systems than monogastric systems, and consistently so at both farm and regional scales. We also demonstrate that imposition of a naïvely designed “red meat tax” has the potential to invite socioeconomic losses far greater than its environmental benefits, due largely to the induced misallocation of resources at the national scale. Our results reiterate the risk inherent in an excessively climate-focused debate on the role of livestock in human society and call for more multidimensional approaches of sustainability assessment to draw better-balanced policy packages.

Antimicrobial resistance in Chilean marine-farmed salmon: Improving food safety through One Health

Aquaculture is seen as an essential requirement for improving food security and nutrition. Fish such as salmonids are a primary source of protein and essential nutrients. Aquaculture provide income for communities across the world and have a smaller carbon footprint than terrestrial animal-production systems. However, fish diseases are a constant threat, and the use of antibiotics is a source of concern due to its adverse impacts on the environment and human health. Chilean salmon farming has made several efforts to reduce the use of antibiotics for the eradication of piscirickettsiosis, a disease caused by the gram-negative bacteria Piscirickettsia salmonis. Excessive amounts of antibiotics continue to be used in Chilean aquaculture, playing an important role in the emerging public health crisis of antimicrobial resistance. Without doubt, P. salmonis is becoming increasingly resistant to important frontline antimicrobial classes, with severe implications for the future treatment of infectious human and animal diseases. Antimicrobial-resistant bacteria as well as antibiotic residues from salmon production are spreading in the environment, and thus both salmon food commodities and wild organisms can become a source of resistant bacteria that can be transmitted to humans as foodborne contaminants. This urgent threat needs to be addressed by implementing national strategies in compliance with international standards that include both prudent antimicrobial use in marine salmon farms and the investment towards a One Health approach, which combines human, animal and environmental health.

Edible Insects: Preliminary Study about Perceptions, Attitudes, and Knowledge on a Sample of Portuguese Citizens

This study investigated the knowledge, attitudes, consumption habits, and degree of acceptability of edible insects (EI) or derived products among Portuguese consumers. This work consisted of a questionnaire survey, undertaken on a sample of 213 participants. For the treatment of data, basic descriptive statistics were used, complemented with chi-square tests to assess some associations between categorical variables. Moreover, a tree classification analysis was carried out using a classification and regression tree (CRT) algorithm with cross-validation. The results indicated that people tend to have correct perceptions about the sustainability issues associated with the use of insects as alternative sources of protein; however, the level of knowledge and overall perception about their nutritive value is low. Regarding the consumption of EI, it was found that only a small part of the participants had already eaten them, doing it mostly abroad, by self-initiative, in a restaurant or at a party or event. Additionally, it was found that the reluctance to consume insects is higher if they are whole, but when they are transformed into ingredients used in food formulations, the level of acceptance increases. Furthermore, men have shown to have a better perception about EI, be more informed about sustainability, and have a higher level of acceptability when compared to women. As a final conclusion, it was observed that the Portuguese still show some resistance to adhere to the use of insects as replacements for meat products, but the market of insect based products can be a good alternative to overpass the neophobia associated with this type of food.

Identification of a Candidate Starch Utilizing Strain of Prevotella albensis from Bovine Rumen

The inclusion of starch-rich feedstuffs, a common practice in intensive ruminant livestock production systems, can result in ruminal acidosis, a condition that can severely impact animal performance and health. One of the main causes of acidosis is the rapid accumulation of ruminal short chain fatty acids (SCFAs) resulting from the microbial digestion of starch. A greater understanding of ruminal bacterial amylolytic activities is therefore critical to improving mitigation of acidosis. To this end, our manuscript reports the identification of a candidate starch utilizer (OTU SD_Bt-00010) using batch culturing of bovine rumen fluid supplemented with starch. Based on 16S rRNA gene sequencing and metagenomics analysis, SD_Bt-00010 is predicted to be a currently uncharacterized strain of Prevotella albensis. Annotation of de novo assembled contigs from metagenomic data not only identified sequences encoding for α-amylase enzymes, but also revealed the potential to metabolize xylan as an alternative substrate. Metagenomics also predicted that SCFA end products for SD_Bt-00010 would be acetate and formate, and further suggested that this candidate strain may be a lactate utilizer. Together, these results indicate that SD_Bt-00010 is an amylolytic symbiont with beneficial attributes for its ruminant host.

Association of residual feed intake with growth performance, carcass traits, meat quality, and blood variables in native chickens

Improving feed efficiency is a primary goal in poultry breeding strategies. Residual feed intake (RFI) in chickens typically calculated during the growing period is a measure of feed efficiency that is independent of the level of production. The objective of this study was to evaluate phenotypic correlations of growth performance, carcass traits, meat quality, and blood variables with RFI in growing native chickens. A total of 1,008 chickens were selected for the experiment to derive RFI. After the RFI measurement period of 42 d, 25 chickens with low RFI values, 25 chickens with medium RFI values, and 25 chickens with high RFI values were selected. The RFI was significantly positively correlated with feed conversion ratio and average daily feed intake, while it was not significantly correlated with initial body weight (BW), final BW, average daily body weight gain, and metabolic BW0.75. The abdominal fat weight and yield of high RFI group were significantly greater than those of medium and low RFI groups, and the abdominal fat yield was significantly positively correlated with RFI. Moreover, the plasma insulin-like growth factor 1 (IGF-1) content of low RFI group was significantly greater than those of high and medium RFI groups. The plasma concentrations of adrenocorticotropic hormone, triiodothyronine (T3), and cortisol of high RFI birds were significantly greater than that of low RFI birds. RFI was significantly positively correlated with plasma concentrations of T3 and cortisol, while it was significantly negatively correlated with plasma concentration of IGF-1. In addition, the serum levels of glucose and triglyceride of high RFI birds were significantly lower than that of low RFI birds. The serum low-density lipoprotein cholesterol (LDL-C) content of high RFI group was significantly greater than that of medium and low RFI groups, and it was significantly positively correlated with RFI. Our data suggested that selection of chickens with low RFI values may be beneficial to reduce fat deposition in native chickens without affecting the meat quality. Circulating IGF-1, T3, cortisol, and LDL-C concentrations can be used as indirect selection indicators of feed efficiency in native chickens. The effect of IGF-1, T3, cortisol, and LDL-C on feed efficiency of native chickens should be carefully examined and validated in future breeding programs.

Pulse Consumption among Portuguese Adults: Potential Drivers and Barriers towards a Sustainable Diet

The transition from diets rich in animal products to plant-based protein foods—like pulses—is crucial, for both environmental sustainability and human health. The aim of this study was to characterize the current consumption and to describe the drivers of and barriers to pulse intake in Portugal. Using a quantitative approach, a semi-structured questionnaire was distributed online, and 1174 valid responses were obtained. The most consumed pulses were beans and peas, consumed at least once a week by 48.3% and 44.4% of the sample, respectively. When participants were asked about the possibility of replacement, even partially, of animal products for pulses, 15.0% stated they would not substitute even in a food scarcity scenario. In the qualitative study, ten individuals involved at different steps of pulses’ supply and value chain were interviewed in order to study individual behaviors and experiences linked knowledge and consumption of pulses. It was noticed that the lack of recognition of their nutritional value, the high cooking time and the effect of the anti-nutritional factors were commonly pointed out as barriers. The identification and understanding of perceived barriers for that low consumption will leverage the development of new strategies to promote this promising alternative.

Is There Scope for a Novel Mycelium Category of Proteins alongside Animals and Plants?

In the 21st century, we face a troubling trilemma of expanding populations, planetary and public wellbeing. Given this, shifts from animal to plant food protein are gaining momentum and are an important part of reducing carbon emissions and consumptive water use. However, as this fast-pace of change sets in and begins to firmly embed itself within food-based dietary guidelines (FBDG) and food policies we must raise an important question-is now an opportunistic time to include other novel, nutritious and sustainable proteins within FBGD? The current paper describes how food proteins are typically categorised within FBDG and discusses how these could further evolve. Presently, food proteins tend to fall under the umbrella of being 'animal-derived' or 'plant-based' whilst other valuable proteins i.e., fungal-derived appear to be comparatively overlooked. A PubMed search of systematic reviews and meta-analytical studies published over the last 5 years shows an established body of evidence for animal-derived proteins (although some findings were less favourable), plant-based proteins and an expanding body of science for mycelium/fungal-derived proteins. Given this, along with elevated demands for alternative proteins there appears to be scope to introduce a 'third' protein category when compiling FBDG. This could fall under the potential heading of 'fungal' protein, with scope to include mycelium such as mycoprotein within this, for which the evidence-base is accruing.

Dairy Cow Health and Greenhouse Gas Emission Intensity

The purpose of this review is to identify the main influencing factors related to dairy cow health as it impacts the intensity of greenhouse gas emissions considering known data presented in the literature. For this study, we define the emission intensity as CO2 equivalents per kilogram of milk. In dairy cows, a high dry matter (DM) intake (25 kg/d) leads to an higher absolute methane emission compared to a lower DM intake (10 kg/d). However, the emission intensity is decreased at a high performance level. The emissions caused by DM intake to cover the energy requirement for maintenance are distributed over a higher milk yield. Therefore, the emission intensity per kilogram of product is decreased for high-yielding animals with a high DM intake. Apart from that, animal diseases as well as poor environmental or nutritional conditions are responsible for a decreased DM intake and a compromised performance. As a result, animal diseases not only mean reduced productivity, but also increased emission intensity. The productive life-span of a dairy cow is closely related to animal health, and the impact on emission intensity is enormous. A model calculation shows that cows with five to eight lactations could have a reduced emission intensity of up to 40% compared to animals that have left the herd after their first lactation. This supports the general efforts to increase longevity of dairy cows by an improved health management including all measures to prevent diseases.

Assessment of yield gaps on global grazed-only permanent pasture using climate binning

To meet rising demands for agricultural products, existing agricultural lands must either produce more or expand in area. Yield gaps (YGs)-the difference between current and potential yield of agricultural systems-indicate the ability to increase output while holding land area constant. Here, we assess YGs in global grazed-only permanent pasture lands using a climate binning approach. We create a snapshot of circa 2000 empirical yields for meat and milk production from cattle, sheep, and goats by sorting pastures into climate bins defined by total annual precipitation and growing degree-days. We then estimate YGs from intra-bin yield comparisons. We evaluate YG patterns across three FAO definitions of grazed livestock agroecosystems (arid, humid, and temperate), and groups of animal production systems that vary in animal types and animal products. For all subcategories of grazed-only permanent pasture assessed, we find potential to increase productivity several-fold over current levels. However, because productivity of grazed pasture systems is generally low, even large relative increases in yield translated to small absolute gains in global protein production. In our dataset, milk-focused production systems were found to be seven times as productive as meat-focused production systems regardless of animal type, while cattle were four times as productive as sheep and goats regardless of animal output type. Sustainable intensification of pasture is most promising for local development, where large relative increases in production can substantially increase incomes or "spare" large amounts of land for other uses. Our results motivate the need for further studies to target agroecological and economic limitations on productivity to improve YG estimates and identify sustainable pathways toward intensification.

Evaluation of net protein contribution, methane production, and net returns from beef production as duration of confinement increases in the cow-calf sector1

Intensification of cow-calf production may provide a sustainable solution for meeting increasing beef demand in the face of diminishing resources. However, intensification with its greater reliance on cereal grains potentially decreases the upcycling of human-inedible protein into beef. A previously described model was used to evaluate cow-calf intensification on beef's ability to meet human protein requirements. Four scenarios were compared, based on a 1,000 cow herd: 1) Conventional cow-calf production system (0CON), 2) cows limit-fed in confinement for 4 mo after weaning (4CON), 3) cows limit-fed in confinement for 8 mo after breeding (8CON), or 4) cows limit-fed in confinement year-round (12CON). Changes were not made to either the stocker or feedlot segments of the beef value chain. Net protein contribution (NPC) was calculated by multiplying the ratio of human-edible protein (HeP) in beef produced to HeP in feed by the protein quality ratio. A NPC >1 indicates that the production system is positively contributing to meeting human requirements, whereas a NPC <1 indicates the sector or value chain is competing with humans for HeP. Methane was estimated based on proportion of forage in diet and total methane production was reported per kg HeP. In the cow-calf sector, HeP conversion efficiency (HePCE) decreased from 2,640.83 to 0.37 while methane production decreased from 4.53 to 1.82 kg/kg HeP produced as the length of intensification increased from 0CON to 12CON. Decreased HePCE resulted in NPC values for cow-calf sector of 8,036.80, 4.93, 2.19, and 1.28 for 0CON, 4CON, 8CON, and 12CON, respectively. Protein quality ratio of the entire beef value chain increased from 3.15 to 3.33, while HePCE decreased from 0.99 to 0.39 as length of intensification increased from 0CON to 12CON. For the beef value chain, NPC was 3.11, 2.30, 1.73, and 1.31 for 0CON, 4CON, 8CON, and 12CON, respectively. Across the value chain, confinement of cows for 12 mo decreased enteric methane from 3.05 to 1.53 kg/kg HeP (0CON and 12CON, respectfully). Additionally, profitability of the cow-calf operation decreased from $249.34 to $102.16 per cow as intensification increased. Of confinement scenarios, probability of loss to an operation was least (4%) for 4CON. Feed costs increased by $260.79 per cow for 0CON when drought conditions existed (0COND). Total methane production was reduced by intensification and none of the scenarios evaluated competed with humans for HeP.

Net protein contribution of beef feedlots from 2006 to 2017

Feedlot efficiency increases as technologies are adopted and new feed ingredients, especially byproducts, become available and incorporated into diets. Byproduct availability increased in response to the renewable fuels standard of 2005, creating substantial amounts of feedstuffs best used by ruminants. Cereal grains have been partially replaced with human-inedible byproducts, as they provide comparable levels of energy in cattle diets. To evaluate the effects of changes in diet and feedlot production practices on net protein contribution (NPC) and human-edible protein conversion efficiency (HePCE) across time, a deterministic NPC model was used. NPC was assessed for the feedlot industry using lot level production data from 2006 to 2017 for eight commercial feedlots. Ingredient and nutrient composition was collected for a representative starter and finisher diet fed for each year from each feedlot. NPC was calculated by multiplying human-edible protein (HeP) in beef produced per unit of HeP in feed by the protein quality ratio (PQR). Systems with NPC &gt;1 positively contribute to meeting human protein requirements; NPC &lt; 1 indicates competition with humans for HeP. NPC was regressed on year to evaluate temporal change in NPC. Feedlots were categorized as increasing NPC (INC; slope &gt; 0) or constant NPC (CON; slope = 0) according to regression parameter estimates. Four feedlots were categorized as INC and four were CON. The rate of change in PQR was similar for CON and INC (P ≥ 0.79), although rates of change among INC and CON differed for byproduct and cereal grain inclusion (P ≤ 0.01) across years evaluated. Feedlots categorized as INC reduced HeP consumed by 2.39% per year, but CON feedlots did not reduce HeP consumed each year (0.28%). Cattle received and shipped by INC were lighter than those in CON feedlots (P &lt; 0.01). Across years, INC produced more HeP (20.9 vs. 19.2 kg/hd) than CON (P &lt; 0.01), and both feedlot types tended to improve HeP gained over time (0.1 kg per year; P = 0.10). Differences in slope over time for INC and CON were observed for conversion efficiency of HeP (P &lt; 0.01). NPC increased 0.027 units per year for INC (P &lt; 0.01) and was 0.94 in 2017. NPC by the feedlot sector improved from 2006 to 2017, decreasing the amount of human-edible feeds required to produce more high-quality protein from beef.

Impact of coccidiostat and phytase supplementation on gut microbiota composition and phytate degradation in broiler chickens

BACKGROUND

There is good evidence for a substantial endogenous phytase activity originating from the epithelial tissue or the microbiota resident in the digestive tract of broiler chickens. However, ionophore coccidiostats, which are frequently used as feed additives in broiler diets to prevent coccidiosis, might affect the bacterial composition and the abundance of phytase producers in the gastrointestinal tract. The aim of the present study was to investigate whether supplementation of a frequently used mixture of the coccidiostats Narasin and Nicarbazin alone or together with a phytase affects microbiota composition of the digestive tract of broiler chickens, characteristics of phytate breakdown in crop and terminal ileum, and precaecal phosphorus and crude protein digestibility.

RESULTS

Large differences in the microbial composition and diversity were detected between the treatments with and without coccidiostat supplementation. Disappearance of myo-inositol 1,2,3,4,5,6-hexakis(dihydrogen phosphate) (InsP6) in the digestive tract, precaecal P digestibility, inorganic P in blood serum, and the concentration of inositol phosphate isomers in the crop and ileum digesta were significantly affected by phytase supplementation, but not by coccidiostat supplementation. Crude protein digestibility was increased by coccidiostat supplementation when more phosphate was available. Neither microbial abundance and diversity nor any other trait measured at the end of the experiment was affected by coccidiostat when it was only supplemented from day 1 to 10 of age.

CONCLUSIONS

The coccidiostats used herein had large effects on overall microbiota composition of the digestive tract. The coccidiostats did not seem to affect endogenous or exogenous phytase activity up to the terminal ileum of broiler chickens. The effects of phytase on growth, phosphorus digestibility, and myo-inositol release were not altered by the presence of the coccidiostats. The effects of phytase and coccidiostats on nutrient digestibility can be of significant relevance for phosphorus and protein-reduced feeding concepts if confirmed in further experiments.

Invited review: Plant polyphenols and rumen microbiota responsible for fatty acid biohydrogenation, fiber digestion, and methane emission: Experimental evidence and methodological approaches

The interest of the scientific community in the effects of plant polyphenols on animal nutrition is increasing. These compounds, in fact, are ubiquitous in the plant kingdom, especially in some spontaneous plants exploited as feeding resources alternative to cultivated crops and in several agro-industry by-products. Polyphenols interact with rumen microbiota, affecting carbohydrate fermentation, protein degradation, and lipid metabolism. Some of these aspects have been largely reviewed, especially for tannins; however, less information is available about the direct effect of polyphenols on the composition of rumen microbiota. In the present paper, we review the most recent literature about the effect of plant polyphenols on rumen microbiota responsible for unsaturated fatty acid biohydrogenation, fiber digestion, and methane production, taking into consideration the advances in microbiota analysis achieved in the last 10 yr. Key aspects, such as sample collection, sample storage, DNA extraction, and the main phylogenetic markers used in the reconstruction of microbial community structure, are examined. Furthermore, a summary of the new high-throughput methods based on next generation sequencing is reviewed. Several effects can be associated with dietary polyphenols. Polyphenols are able to depress or modulate the biohydrogenation of unsaturated fatty acids by a perturbation of ruminal microbiota composition. In particular, condensed tannins have an inhibitory effect on biohydrogenation, whereas hydrolyzable tannins seem to have a modulatory effect on biohydrogenation. With regard to fiber digestion, data from literature are quite consistent about a general depressive effect of polyphenols on gram-positive fibrolytic bacteria and ciliate protozoa, resulting in a reduction of volatile fatty acid production (mostly acetate molar production). Methane production is also usually reduced when tannins are included in the diet of ruminants, probably as a consequence of the inhibition of fiber digestion. However, some evidence suggests that hydrolyzable tannins may reduce methane emission by directly interacting with rumen microbiota without affecting fiber digestion.

Meeting Global Feed Protein Demand: Challenge, Opportunity, and Strategy

Feed protein supplements are one of the most expensive and limiting feed ingredients. This review offers a comprehensive analysis of how the expected expansion of animal production, driven by the rising world population and living standards for more animal-sourced foods, is creating a global shortage of feed protein supply. Because ruminants, chickens, and pigs contribute to 96% of the global supply of animal protein and aquaculture is growing fast, means of meeting the feed protein requirements of these species are elaborated. Geographic variation and interdependence among China, Europe, and North America in the demand and supply of feed protein are compared. The potential and current state of exploration into alternative feed proteins, including microalgae, insects, single-cell proteins, and coproducts, are highlighted. Strategic innovations are proposed to upgrade feed protein processing and assessment, improve protein digestion by exogenous enzymes, and genetically select feed-efficient livestock breeds. An overall successful and sustainable solution in meeting global feed protein demands will lead to a substantial net gain of human-edible animal protein with a minimal environmental footprint.

Estimation of human-edible protein conversion efficiency, net protein contribution, and enteric methane production from beef production in the United States

A model was developed to estimate beef's contribution toward meeting human protein requirements using a summative model of net protein contribution (NPC) and methane production. NPC was calculated by multiplying the ratio of human-edible protein (HeP) in beef to the HeP in feedstuffs by the protein quality ratio (PQR). PQR describes the change in biological value of HeP that occurs when plant-derived HeP is converted to beef. An NPC > 1 indicates that the production system is positively contributing to meeting human requirements; systems with NPC < 1 reduce the net protein available to meet human requirements. Scenarios were arranged as a 2 × 2 factorial with two sets of dietary inputs and two sets of production parameters. Dietary inputs represented either inputs used in a previous report estimating HeP (previous diet; PD) or inputs more representative of conventional beef production systems (current diet; CD). Production parameters were either drawn from previous reports (previous parameters; PP) or chosen to characterize current industry standards (current parameters; CP). The HeP conversion efficiency (HePCE) for current industry diets and production parameters (CDCP) (kg HeP yield/kg HeP input) was greatest in the cow-calf sector (2,640.83) compared with stocker (5.22) and feedlot (0.34), and other scenarios followed a similar trend. In addition, the entire production system had an HePCE of 0.99 for CDCP; the previous model diets and production parameters (PDPP) scenario estimated HePCE to be 0.46, and other scenarios were in between. For the CDCP scenario, 56%, 10%, and 34% of the HeP were produced in the cow-calf, stocker, and feedlot sectors; PDPP was similar (59%, 13%, and 28%, respectively). PQR averaged 3.04, 3.04, and 2.64 for cow-calf, stocker, and feedlot sectors, respectively, indicating each sector enhances the biological value of the HeP fed. The NPC was greatest for the cow-calf sector (8,794), followed by the stocker and feedlot sectors (8.85 and 0.23, respectively). The entire beef value chain had a PQR of 2.68 and NPC ranged from 1.01 to 3.11, which correspond to PDPP and CDCP, respectively. Overall, 3.05 kg of CH₄ were produced per kilogram HeP for CDCP and 2.58 for PDPP, with the cow-calf sector being greater than the feedlot sector (4.53 vs. 0.94 kg CH₄/kg HeP, CDCP). Our results suggest that each individual beef sector and the entire value chain produce more high-quality HeP than is consumed in production. Accordingly, beef is a net contributor to meeting human protein requirements.

Invited review: Resource inputs and land, water and carbon footprints from the production of edible protein of animal origin

Abstract. The objective of this review is to analyze crucial factors in the output from the production of proteins in food of animal origin, such as milk, meat and eggs. We then consider inputs such as land, water, fuel, minerals and feed, as well as characterize emissions. Finally, we estimate footprints for land (land footprint, LF), water (water footprint, WF) and greenhouse gas emissions (i.e., carbon footprint, CF) during the production process. The wide range of different land and water inputs per unit feed between various studies largely influences the results. Further influencing factors are species and categories of animals that produce edible protein, their yields and the feeding of animals. Coproducts with no or low humanly edible fractions and grassland as feed contribute to a lower need for arable land and lower LF, WF and CF. The most efficient land use or the lowest LF per kilogram of edible protein was estimated for higher milk and egg yields; the highest LF values were calculated for beef, followed by pork. The lowest WF and CF were calculated for edible protein of chicken meat and eggs. Edible protein from ruminants is mostly characterized by a higher CF because of the high greenhouse gas potential of methane produced in the rumen. A key prerequisite for further progress in this field is the harmonization of data collection and calculation methods. Alternatives to partial or complete replacement of protein of terrestrial animals, such as marine animals, insects, cell cultures, single-cell proteins or “simulated animal products” from plants, as well as changing eating patterns and reducing food losses are mentioned as further potential ways for more efficient feed production. For all those dealing with plant or animal breeding and cultivation and all those who are working along the whole food production chain, it is a major challenge to enhance the production of more food for more people with, at the same time, less, limited resources and lower emissions.

Beneficial microbial signals from alternative feed ingredients: a way to improve sustainability of broiler production?

More sustainable broiler meat production can be facilitated by the increased use of cheap by‐products and local crops as feed ingredients, while not affecting animal performance and intestinal health, or even improving intestinal health, so that antibiotic usage is further reduced. To achieve this, knowledge of the relationship between the taxonomic and functional microbiota composition and intestinal health is required. In addition, the relationship between the novel feed sources, the substrates present in these feed sources, and the breakdown by enzymes and microbial networks can be crucial, because this can form the basis for development of tailored feed‐type specific solutions for optimal digestion and animal performance.
