Abstract
BACKGROUND AND OBJECTIVE Yeasts have the remarkable capability to transform and integrate inorganic selenium into their cellular structures, thereby enhancing its bioavailability and reducing its toxicity. In recent years, yeasts have attracted attention as potential alternative sources of protein. METHODS This study explores the selenium accumulation potential of two less explored yeast strains, namely the probiotic Saccharomyces boulardii CCDM 2020 and Pichia fermentas CCDM 2012, in comparison to the extensively studied Saccharomyces cerevisiae CCDM 272. Our investigation encompassed diverse stress conditions. Subsequently, the selenized yeasts were subjected to an INFOGEST gastrointestinal model. The adherence and hydrophobicity were determined with undigested cells RESULTS: Stress conditions had an important role in influencing the quantity and size of selenium nanoparticles (SeNPs) generated by the tested yeasts. Remarkably, SeMet synthesis was limited to Pichia fermentas CCDM 2012 and S. boulardii CCDM 2020, with S. cerevisiae CCDM 272 not displaying SeMet production at all. Throughout the simulated gastrointestinal digestion, the most substantial release of SeCys2, SeMet, and SeNPs from the selenized yeasts occurred during the intestinal phase. Notably, exception was found in strain CCDM 272, where the majority of particles were released during the oral phase. CONCLUSION The utilization of both traditional and non-traditional selenized yeast types, harnessed for their noted functional attributes, holds potential for expanding the range of products available while enhancing their nutritional value and health benefits.

Abstract
The combination of selenium and tea infusion, both with antioxidant properties, has potentially complementary mechanisms of action. Se-enriched tea has been considered as a possible Se supplement and a functional beverage to reduce the health risk of Se deficiency. This work investigated the interactions between plant catechins present in tea infusions and selenium species based on changes in the concentration of both reagents, their stability in aqueous solutions, and the possibilities of selenonanoparticles (SeNPs) formation. Selenium species exhibited instability both alone in their standard solutions and in the presence of studied catechins; selenocystine appeared as the most unstable. The recorded UV-Vis absorption spectra indicated the formation of SeNPs in the binary mixtures of catechins and selenite. SeNPs have also formed with diameters smaller than 100 nm when selenite and selenomethionine were added to tea infusions. This is an advantage from the point of view of potential medical applications.

Abstract
Selenium (Se) is a trace mineral found in plants with a distinct sulfuric odor that is cardioprotective and reported to have low toxicity. West Java, Indonesia, has a variety of plants with a distinct odor that are consumed raw, such as jengkol (Archidendron pauciflorum). This study is conducted to determine the Se content of jengkol using the fluorometric method, where the jengkol extract is separated, and the Se content is detected using high-pressure liquid chromatography (HPLC), combined with fluorometry. Two fractions with the highest Se concentration (A and B) are found and characterized using liquid chromatography mass spectrometry to predict the organic Se content by comparing the results with those in the external literature. The Se content of fraction (A) is found to be selenomethionine (m/z 198), gamma glutamyl-methyl-selenocysteine-(GluMetSeCys; m/z 313), and the Se-sulfur (S) conjugate of cysteine-selenoglutathione (m/z 475). Furthermore, these compounds are docked on receptors involved in cardioprotection. The receptors are peroxisome proliferator-activated receptor-γ (PPAR-γ), nuclear factor kappa-B (NF-κB), and phosphoinositide 3-kinase (PI3K/AKT). The interaction of receptor and ligan that has the lowest binding energy of the docking simulation is measured with molecular dynamic simulation. MD is performed to observe bond stability and conformation based on root mean square deviation, root mean square fluctuation, radius gyration, and MM-PBSA parameters. The results of the MD simulation show that the stability of the complex organic Se compounds tested with the receptors is lower than that of the native ligand, while the binding energy is lower than that of the native ligand based on the MM-PSBA parameter. This indicates that the predicted organic Se in jengkol, i.e., gamma-GluMetSeCys to PPAR-γ, gamma-GluMetSeCys AKT/PI3K, and Se-S conjugate of cysteine-selenoglutathione to NF-κB, has the best interaction results and provides a cardioprotection effect, compared to the molecular interaction of the test ligands with the receptors.

Abstract
Oxidative damage induced by ethanol and its metabolites is one of the factors that fuels the development of alcoholic liver disease (ALD). Selenium (Se) is an effective cofactor for glutathione peroxidase (GPx), and has antioxidant effects that improve ALD. In patients with ALD, ethanol-induced oxidative damage inhibits the synthesis of related Se-containing proteins such as: selenoprotein P (Sepp1), albumin (ALB), and GPx in the liver, thus decreasing the overall Se level in patients. Both Se deficiency and excess can affect the expression of GPx, resulting in damage to the antioxidant defense system. This damage enhances oxidative stress by increasing the levels of reactive oxygen species (ROS) in the body, which aggravates the inflammatory response, lipid metabolism disorder, and lipid peroxidation and worsens ALD symptoms. A cascade of oxidative damages caused by ALD will deplete selenium deposition in the body, stimulate the expression of Gpx1, Sepp1, and Gpx4, and thus mobilize systemic selenoproteins, which can restore GPx activity in the hepatocytes of ALD patients, reduce the levels of reactive oxygen species and alleviate oxidative stress, the inflammatory response, lipid metabolism disorder, and lipid peroxidation, thus helping to mitigate ALD. This review provides a reference for future ALD studies that evaluate the regulation of Se levels and contributes to studies on the potential pathological mechanisms of Se imbalance in ALD.

Abstract
Selenium (Se) is an important microelement with numerous positive effects on human health and diseases. It is important to specify that the status and consumption of Se are for a specific community as the levels of Se are extremely unpredictable between different populations and regions. Our existing paper was based on the impacts of Se on human health and disease along with data on the Se levels in Middle Eastern countries. Overall, the findings of this comprehensive review show that the consumption and levels of Se are inadequate in Middle Eastern nations. Such findings, together with the growing awareness of the importance of Se to general health, require further work primarily on creating an acceptable range of blood Se concentration or other measures to determine optimal Se consumption and, consequently, to guarantee adequate Se supplementation in populations at high risk of low Se intake.

Abstract
Nowadays, there is an increase attention on the effect of selenium (Se) on metabolic processes of microorganisms. Strains belonging to the genus of Yarrowia are of great biotechnological interest for various industries. In this study, we evaluated the effect of 10 mg/L of Se on the growth and lipid production of two Yarrowia lipolytica strains: the ACA DC 50109 and one more with increased oleagenicity, derived after ALE methodology (referred here as Y. lipolytica ALE_70). The presence of Se in the growth medium negatively affected both cell mass production and total lipid accumulation, for both Y. lipolytica strains. Fractionation of total lipids showed an inhibition on neutral lipid (NL) synthesis and consequently, an increase of polar lipids (glycolipids plus sphingolipids, and phospholipids) on the lipids of the Se-enriched ACA DC 50109 strain; however, the NL/polar ratio of the Se-enriched ALE_70 indicated that Se, apart from the inhibition of NL synthesis, provoked also the accumulation of polar lipids in this strain. In addition, the fatty acid (FA) composition was differently affected by Se. Se-enriched total lipids of the ALE_70 strain were enriched in linoleic acid (C18:2 n-6), which resulted in increase of the unsaturated index. On the other hand, Se-enriched lipids of the ACA DC 50109 strain were more saturated, as the percentage of palmitic (C16:0) and stearic (C18:0) acids increased in the total FAs. Moreover, it seems that Se influenced the activity or the expression of desaturases and elongase in both strains. Finally, the supplementation of growth medium with Se affected cell morphology, as well as the size and distribution of lipid droplets inside the yeast cells. According to our opinion, Se caused stress conditions and the consequence of that was the occurrence of metabolic disorders that affected cell mass, lipid content, and/or morphological structures. The results of the present study suggest that further research should be carried out to understand the background of the lipogenesis process in yeast cells cultured under stress conditions.

Abstract
Selenium-enriched potato is a good supplement for selenium-deficient populations. This study evaluated the influence of two most common cooking methods, including boiling and frying, on selenium content, speciation, and in vitro bioaccessibility of selenium-biofortified potato tubers. After foliar application of 200 μg/mL sodium selenite, potato tubers with 1.33 μg Se/g were obtained. Peeling resulted in 53.4%-69.9% loss of selenium in tubers. The total selenium content decreased by approximately 43.3% after boiling, among which up to 38.5% of the lost selenium is found in the boiling water. Nearly 31.7% of selenium was lost via volatilization during frying. Both cooking methods significantly enhanced the bioaccessibility of Se(IV) in tubers. Whereas SeMeCys became less bioaccessible after boiling. SeMet and SeCys2 in fired tubers were not accessible after digestion. This study suggested that boiling is more appropriate for cooking selenium-enriched potatoes.

Abstract
Low molecular weight selenium containing metabolites in the leaves of the selenium hyperaccumulator Cardamine violifolia (261 mg total Se per kg d.w.) were targeted in this study. One dimensional cation exchange chromatography coupled to ICP-MS was used for purification and fractionation purposes prior to LC-Unispray-QTOF-MS analysis. The search for selenium species in full scan spectra was assisted with an automated mass defect based filtering approach. Besides selenocystathionine, selenohomocystine and its polyselenide derivative, a total number of 35 water soluble selenium metabolites other than selenolanthionine were encountered, including 30 previously unreported compounds. High occurrence of selenium containing hexoses was observed, together with the first assignment of N-glycoside derivatives of selenolanthionine. Quantification of the most abundant selenium species, selenolanthionine, was carried out with an ion pairing LC - post column isotope dilution ICP-MS setup, which revealed that this selenoamino acid accounted for 30% of the total selenium content of the leaf (78 mg (as Se) per kg d.w.).

Abstract
Selenium (Se) was found to inhibit the growth of the yeast Candida utilis ATCC 9950. Cells cultured in 30 mg selenite/L supplemented medium could bind 1368 µg Se/g of dry weight in their structures. Increased accumulation of trehalose and glycogen was observed, which indicated cell response to stress conditions. The activity of antioxidative enzymes (glutathione peroxidase, glutathione reductase, thioredoxin reductase, and glutathione S-transferase) was significantly higher than that of the control without Se addition. Most Se was bound to water-insoluble protein fraction; in addition, the yeast produced 20–30 nm Se nanoparticles (SeNPs). Part of Se was metabolized to selenomethionine (10%) and selenocysteine (20%). The HPLC-ESI-Orbitrap MS analysis showed the presence of five Se compounds combined with glutathione in the yeast. The obtained results form the basis for further research on the mechanisms of Se metabolism in yeast cells.

Abstract
Selenium (Se) at very low doses has important functions for humans. Unfortunately, the low levels of Se in soils in various regions of the world have implemented the agronomic biofortification of crops by applying Se-enriched fertilizers (mainly based on selenate). Lately, the use of nanofertilizers is growing in interest as their low size reduces the amount of chemicals and minimizes nutrient losses in comparison with conventional bulk fertilizers. However, the knowledge on their fate and environmental impact is still scarce. This study aims to evaluate the biotransformation of chitosan-modified Se nanoparticles (Ch-SeNPs) as well as their effect on the metabolism of essential metals (Fe, Cu, Zn and Mo) when applied to hydroponic cultivation of R. sativus and B. juncea. In house-synthesized Ch-SeNPs were characterized in both synthesis and hydroponic culture media by transmission electron microscopy (TEM), dynamic light scattering (DLS) and nanoparticle tracking analysis (NTA). The composition of one-tenth strength Hoagland's solution did not affect the size, shape and concentration in number of particles per mL of Ch-SeNPs. The plants were grown inside a box at 25 °C during the months of May-July in 2018. After a week of treatment with Ch-SeNPs, plants were harvested and divided into roots and aerial part. The biotransformation of Ch-SeNPs was evaluated through a process of enzymatic hydrolysis and subsequent analysis by HPLC-ICP-MS and HPLC-ESI-MS/MS. The results confirmed the transformation of Ch-SeNPs to seleno-amino acids: Selenomethionine (SeMet), Semethylselenocysteine (SeMetSeCys) and ɣ-glutamyl-Se-MetSeCys. Moreover, Multiple-way analysis of variance (ANOVA) and principal component analysis (PCA) showed that, regardless the plant species, Ch-SeNPs supplementation affected the absorption of Zn.

Accumulation of Selenium in Candida utilis Growing in Media of Increasing Concentration of this Element. APPLIED SCIENCES-BASEL 2020. Abstract
Selenium is considered an essential component of all living organisms. Studies on the enrichment of yeast cells with selenium, using the ability of cell biomass to bind this element, are being reported more and more. Yeast cultures were cultivated in YPD medium enriched with Na2SeO3 salts for 72 h at 28 °C on a shaker utilizing reciprocating motion. Selenium in cell biomass was determined with the use of ICP–MS. It was observed that the addition of selenium to the experimental medium (in the range of 4–100 mg/L) increased the content of this element in the yeast cell biomass. During the extension of cultivation time, the number of yeast cells and biomass yield exhibited a decreasing trend. Based on the obtained results, it was concluded that yeast cells exhibited the ability to accumulate selenium in both logarithmic and stationary growth phases. The dose of 20 and 30 mg/L of selenium in the culture medium meets the expectations in terms of both the content of selenium bound to yeast cells (1944 ± 110.8 μg/g dry weight) under 48-h cultivation. The obtained results confirmed that the Candida utilis ATCC 9950 strain exhibits the ability to bind selenium, which means that the biomass of these yeasts may be used as a natural source of selenium in the diet of humans and animals.

Abstract
Selenium is a micronutrient that is essential for the proper functioning of all organisms. Studies on the functions of selenium are rapidly developing. This element is a cofactor of many enzymes, for example, glutathione peroxidase or thioredoxin reductase. Insufficient supplementation of this element results in the increased risk of developing many chronic degenerative diseases. Selenium is important for the protection against oxidative stress, demonstrating the highest activity as a free radical scavenger and anti-cancer agent. In food, it is present in organic forms, as exemplified by selenomethionine and selenocysteine. In dietary supplementation, the inorganic forms of selenium (selenite and selenate) are used. Organic compounds are more easily absorbed by human organisms in comparison with inorganic compounds. Currently, selenium is considered an essential trace element of fundamental importance for human health. Extreme selenium deficiencies are widespread among people all over the world. Therefore, it is essential to supplement the deficiency of this micronutrient with selenium-enriched food or yeast cell biomass in the diet.

Abstract
Selenite is extremely biotoxic, and as a result of this, exploitation of microorganisms able to reduce selenite to non-toxic elemental selenium (Se0) has attracted great interest. In this study, a bacterial strain exhibiting extreme tolerance to selenite (up to 100 mM) was isolated from the gut of adult Monochamus alternatus and identified as Proteus mirabilis YC801. This strain demonstrated efficient transformation of selenite into red selenium nanoparticles (SeNPs) by reducing nearly 100% of 1.0 and 5.0 mM selenite within 42 and 48 h, respectively. Electron microscopy and energy dispersive X-ray analysis demonstrated that the SeNPs were spherical and primarily localized extracellularly, with an average hydrodynamic diameter of 178.3 ± 11.5 nm. In vitro selenite reduction activity assays and real-time PCR indicated that thioredoxin reductase and similar proteins present in the cytoplasm were likely to be involved in selenite reduction, and that NADPH or NADH served as electron donors. Finally, Fourier-transform infrared spectral analysis confirmed the presence of protein and lipid residues on the surfaces of SeNPs. This is the first report on the capability of P. mirabilis to reduce selenite to SeNPs. P. mirabilis YC801 might provide an eco-friendly approach to bioremediate selenium-contaminated soil/water, as well as a bacterial catalyst for the biogenesis of SeNPs.
