Abstract
Screening and quantifying antioxidants from food samples, their antioxidant activity, as well as the assessment of food oxidation is critical, not only for ensuring food quality and safety, but also to understand and relate these parameters to the shelf life, sensory attributes, and health aspects of food products. For this purpose, several methods have been developed and used for decades, which regardless of their effectiveness, present a certain number of drawbacks mainly related to extensive sample preparation and technical complexity, time requirements, and the use of hazardous chemicals. Electrochemical sensors and biosensors are gaining popularity in food analysis due to their high sensitivity, specificity, rapid response times, and potential for miniaturisation and portability. Furthermore, other modern methods using whole living cells such as the cellular antioxidant activity assay, the antioxidant power 1 assay, and the catalase-like assays, may interpret more realistic antioxidant results rather than just reporting the ability to scavenge free radicals in isolated systems with extrapolation to reality. This paper provides an overview of electrochemical sensors, biosensors, and cellular antioxidant assays, and reviews the latest advancements and emerging trends in these techniques for determining oxidants and antioxidants in complex food matrices. The performances of different strategies are described for each of these approaches to provide insights into the extent to which these methods can be exploited in the field and inspire new research to fill the current gaps.

Abstract
The burden of food contamination and food wastage has significantly contributed to the increased prevalence of foodborne disease and food insecurity all over the world. Due to this, there is an urgent need to develop a smarter food traceability system. Recent advancements in biosensors that are easy-to-use, rapid yet selective, sensitive, and cost-effective have shown great promise to meet the critical demand for onsite and immediate diagnosis and treatment of food safety and quality control (i.e. point-of-care technology). This review article focuses on the recent development of different biosensors for food safety and quality monitoring. In general, the application of biosensors in agriculture (i.e. pre-harvest stage) for early detection and routine control of plant infections or stress is discussed. Afterward, a more detailed advancement of biosensors in the past five years within the food supply chain (i.e. post-harvest stage) to detect different types of food contaminants and smart food packaging is highlighted. A section that discusses perspectives for the development of biosensors in the future is also mentioned.

Abstract
Flaviviruses affect the lives of millions of people in endemic regions and also have the potential to impact non-endemic areas. Factors such as climate change, global warming, deforestation, and increased travel and trade are linked to the spread of flaviviruses into new habitats and host species. Given the absence of specific treatments and the limited availability of vaccines, it is imperative to understand the biology of flaviviruses and develop rapid and sensitive diagnostic tests. These measures are essential for preventing the transmission of these potentially life-threatening pathogens. Flavivirus infections are mainly diagnosed using conventional methods. However, these techniques present several drawbacks, including high expenses, time-consuming procedures, and the need for skilled professionals. The search for fast, easy-to-use, and affordable alternative techniques as a feasible solution for developing countries is leading to the search for new methods in the diagnosis of flaviviruses, such as biosensors. This review provides a comprehensive overview of different biosensor detection strategies for flaviviruses and describes recent advances in diagnostic technologies. Finally, we explore their future prospects and potential applications in pathogen detection. This review serves as a valuable resource to understand advances in ongoing research into new biosensor-based diagnostic methods for flaviviruses.

Abstract
Food safety and human health remain significant concerns in the food industry. Detecting food contaminants and diagnosing diseases are critical aspects. Ferritin, an iron storage protein widely found in nature, offers unique advantages. Its hollow protein nanocage structure, distinct interfaces, hydrophobic or hydrophilic channels, and B-C loop regions recognized by transferrin receptor 1 make ferritin versatile for detecting heavy metals, free radicals, and bioimaging both in vitro and in vivo. This review summarizes ferritin's general characteristics, its specific properties as biosensors, and its applications in food safety and in vivo imaging. It emphasizes not only ferritin's role in detecting heavy metals like mercury and chemical hazards but also its potential in early diagnosing chronic diseases such as tumors, macrophages, and kidney diseases. Further research into ferritin promises advancements in enhancing food safety and improving human health diagnostics.

Abstract
Foodborne diseases remain a worldwide concern, despite the advances made in sanitation, pathogen surveillance and food safety management systems. The methods routinely applied for detecting pathogens in foods are time consuming, labor intensive and usually require trained and qualified individuals. The objective of this review was to highlight the use of biosensors, with a focus on the electrochemical devices, as promising alternatives for detecting foodborne pathogens. These biosensors present high speed for obtaining results, with the possibility of evaluating foods in real time, at low cost, ease of use, in addition to being compact and portable. These aspects are considered advantageous and suitable for use in food safety management systems. This work also shows some limitations for the application of biosensors, and we present perspectives with the development and use of nanomaterials.

Abstract
Seafood product labels with accurate allergen contents can avoid and/or minimize allergic reactions. Therefore, an electrochemical immunosensor for the analysis of β-parvalbumin (β-PV, a major fish allergen) was developed. Screen-printed carbon electrodes were nanostructured with reduced graphene oxide and gold nanoparticles. The platform was characterized by scanning electron microscopy and elemental analysis. In a sandwich-type assay (∼75 min), the antigen-antibody interaction was detected by chronoamperometry using horseradish peroxidase and TMB-H2O2. A linear range of 25-3000 ng/mL, a sensitivity of 2.99 µA.mL/ng, and a limit of detection of 9.9 ng/mL (corresponding to 0.40 ng in the analysed aliquot) were obtained. The selectivity and possible interferences were assessed by analysing several other food allergens and a marine toxin. The sensor was applied to the analysis of 17 commercial foods and the effect of culinary processing (e.g., grilled, canned, smoked) on the β-PV concentration was assessed. Traces of β-PV were successfully quantified and ELISA was used to assess the results.

Abstract
Chloropropanols are among the major food contaminants, and quantifying their content in food is a key food-safety issue. In response to the demand for highly sensitive and selective analysis, the scientific community is committed to continuous innovation and optimization of various analytical techniques. This paper comprehensively reviews the latest developments in chloropropanol analysis technologies and systematically compares and analyzes the working principles, application conditions, advantages, and challenges of these methods. Gas chromatography-mass spectrometry is the preferred choice for chloropropanol analysis in complex sample matrices owing to its high resolution, sensitivity, and accuracy. Electrochemical methods provide strong support for the real-time monitoring of chloropropanols because of their high selectivity and sensitivity towards electrochemically active molecules. Other techniques offer innovative solutions for the rapid and accurate analysis of chloropropanol at different levels. Finally, innovative directions for the development of chloropropanol analysis methods for food safety are highlighted.

Abstract
Global population growth tremendously impacts the global food industry, endangering food safety and quality. Mycotoxins, particularly Ochratoxin-A (OTA), emerge as a food chain production threat, since it is produced by fungus that contaminates different food species and products. Beyond this, OTA exhibits a possible human toxicological risk that can lead to carcinogenic and neurological diseases. A selective, sensitive, and reliable OTA biodetection approach is essential to ensure food safety. Current detection approaches rely on accurate and time-consuming laboratory techniques performed at the end of the food production process, or lateral-flow technologies that are rapid and on-site, but do not provide quantitative and precise OTA concentration measurements. Nanoengineered optical biosensors arise as an avant-garde solution, providing high sensing performance, and a fast and accurate OTA biodetection screening, which is attractive for the industrial market. This review core presents and discusses the recent advancements in optical OTA biosensing, considering engineered nanomaterials, optical transduction principle and biorecognition methodologies. Finally, the major challenges and future trends are discussed, and current patented OTA optical biosensors are emphasized for a particular promising detection method.

Abstract
Layered double hydroxides (LDHs) have been widely studied for biomedical applications due to their excellent properties, such as good biocompatibility, degradability, interlayer ion exchangeability, high loading capacity, pH-responsive release, and large specific surface area. Furthermore, the flexibility in the structural composition and ease of surface modification of LDHs makes it possible to develop specifically functionalized LDHs to meet the needs of different applications. In this review, the recent advances of LDHs for biomedical applications, which include LDH-based drug delivery systems, LDHs for cancer diagnosis and therapy, tissue engineering, coatings, functional membranes, and biosensors, are comprehensively discussed. From these various biomedical research fields, it can be seen that there is great potential and possibility for the use of LDHs in biomedical applications. However, at the same time, it must be recognized that the actual clinical translation of LDHs is still very limited. Therefore, the current limitations of related research on LDHs are discussed by combining limited examples of actual clinical translation with requirements for clinical translation of biomaterials. Finally, an outlook on future research related to LDHs is provided.

Abstract
Pathogenic microorganisms pose significant threats to human health, food safety and environmental integrity. Rapid and accurate detection of these pathogens is essential to mitigate their impact. Fast, sensitive detection methods such as biosensors also play a critical role in preventing outbreaks and controlling their spread. In recent years, biosensors have emerged as a revolutionary technology for pathogen detection. This review aims to present the current developments in biosensor technology, investigate the methods by which these developments are used in the detection of pathogenic bacteria and highlight future perspectives on the subject.

Abstract
There is a significant need for fast, cost-effective, and highly sensitive protein target detection, particularly in the fields of food, environmental monitoring, and healthcare. The integration of high-affinity aptamers with metal-based nanomaterials has played a crucial role in advancing the development of innovative aptasensors tailored for the precise detection of specific proteins. Aptamers offer several advantages over commonly used molecular recognition methods, such as antibodies. Recently, a variety of metal-based aptasensors have been established. These metallic nanomaterials encompass noble metal nanoparticles, metal oxides, metal-carbon nanotubes, carbon quantum dots, graphene-conjugated metallic nanostructures, as well as their nanocomposites, metal-organic frameworks (MOFs), and MXenes. In general, these materials provide enhanced sensitivity through signal amplification and transduction mechanisms. This review primarily focuses on the advancement of aptasensors based on metallic materials for the highly sensitive detection of protein targets, including enzymes and growth factors. Additionally, it sheds light on the challenges encountered in this field and outlines future prospects. We firmly believe that this review will offer a comprehensive overview and fresh insights into metallic nanomaterials-based aptasensors and their capabilities, paving the way for the development of innovative point-of-care (POC) diagnostic devices.

Abstract
Electrochemical biosensors based on immobilized enzymes are among the most popular and commercially successful biosensors. The literature in this field suggests that modification of electrodes with nanomaterials is an excellent method for enzyme immobilization, which can greatly improve the stability and sensitivity of the sensor. However, the poor stability, weak reproducibility, and limited lifetime of the enzyme itself still limit the requirements for the development of enzyme electrochemical biosensors for food production process monitoring. Therefore, constructing sensing technologies based on enzyme electrochemical biosensors remains a great challenge. This article outlines the construction principles of four generations of enzyme electrochemical biosensors and discusses the applications of single-enzyme systems, multi-enzyme systems, and nano-enzyme systems developed based on these principles. The article further describes methods to improve enzyme immobilization by combining different types of nanomaterials such as metals and their oxides, graphene-related materials, metal-organic frameworks, carbon nanotubes, and conducting polymers. In addition, the article highlights the challenges and future trends of enzyme electrochemical biosensors, providing theoretical support and future perspectives for further research and development of high-performance enzyme chemical biosensors.

Abstract
Recently, there has been intense competition among food industries worldwide as they strive to fulfill the ever-growing consumer expectations regarding both the quantity and quality of food. The increasing demand for high-quality food has motivated researchers and academics to constantly innovate and develop real-time and precise tools for monitoring food quality. One such tool that has emerged is biosensors, which have already been widely investigated; however, no bibliometric reviews have discussed biosensor use holistically, comprehensively, and objectively. Therefore, this review aimed to analyze the trend of biosensor publications for monitoring food quality based on the number of documents published from 1991 to 2021, analyze the contribution of various journals, institutions, and cooperation between countries, highlight the most influential authors and articles, and predict the development of this topic. The Method used in this study is bibliometric analysis which consists of four stages, namely data mining from the Scopus database which are limited to data for the last 30 years (1991-2021), refining data, data visualization and interpretation data. There are 604 articles obtained from Scopus and visualization shows that biosensor use for monitoring food quality has significantly increased in the past three decades. Biosensors and Bioelectronics is the leading journal in publishing manuscripts on the topic of biosensors. In terms of the largest contribution, China produced the highest number of publications on related topics, while the United States has the highest collaborations between countries. Moreover, Whitcombe MJ has the most influential articles, while Wang S had the largest number of outputs. The frequently used keywords are "biosensors," "food safety," and "food analysis." These results are important references to determine the state of the art and directions for further investigations.

Abstract
Increased anthropogenic activities are confronted as the main cause for rising environmental and health concerns globally, presenting an indisputable threat to both environment and human well-being. Modern-day industrialization has given rise to a cascade of concurrent environmental and health challenges. The global human population is growing at an alarming rate, posing tremendous pressure on future food security, and healthy and environmentally sustainable diets for all. To feed all, the global food production needs to increase by 50% by 2050, but this increase has to occur from the limited arable land, and under the present-day climate variabilities. Pesticides have become an integral component of contemporary agricultural system, safeguarding crops from pests and diseases and their use must be reduce to fulfill the SDG (Sustainable Development Goals) agenda . However, their indiscriminate use, lengthy half-lives, and high persistence in soil and aquatic ecosystems have impacted global sustainability, overshot the planetary boundaries and damaged the pure sources of life with severe and negative impacts on environmental and human health. Here in this review, we have provided an overview of the background of pesticide use and pollution status and action strategies of top pesticide-using nations. Additionally, we have summarized biosensor-based methodologies for the rapid detection of pesticide residue. Finally, omics-based approaches and their role in pesticide mitigation and sustainable development have been discussed qualitatively. The main aim of this review is to provide the scientific facts for pesticide management and application and to provide a clean, green, and sustainable environment for future generations.

Abstract
We summarize the application of multivariate optimization for the construction of electrochemical biosensors. The introduction provides an overview of electrochemical biosensing, which is classified into catalytic-based and affinity-based biosensors, and discusses the most recent published works in each category. We then explore the relevance of electrochemical biosensors for food safety analysis, taking into account analytes of different natures. Then, we describe the chemometrics tools used in the construction of electrochemical sensors/biosensors and provide examples from the literature. Finally, we carefully discuss the construction of electrochemical biosensors based on design of experiments, including the advantages, disadvantages, and future perspectives of using multivariate optimization in this field. The discussion section offers a comprehensive analysis of these topics.

Abstract
Foodborne diseases have arisen due to the globalization of industry and the increase in urban population, which has led to increased demand for food and has ultimately endangered the quality of food. Foodborne diseases have caused some of the most common public health problems and led to significant social and economic issues worldwide. Food quality and safety are affected by microbial contaminants, growth-promoting feed additives (β-agonists and antibiotics), food allergens, and toxins in different stages from harvesting to storage and marketing of products. Electrochemical biosensors, due to their reduced size and portability, low cost, and low consumption of reagents and samples, can quickly provide valuable quantitative and qualitative information about food contamination. In this regard, using nanomaterials can increase the sensitivity of the assessment. Magnetic nanoparticle (MNP)-based biosensors, especially, are receiving significant attention due to their low-cost production, physicochemical stability, biocompatibility, and eco-friendly catalytic characteristics, along with magnetic, biological, chemical and electronic sensing features. Here, we provide a review on the application of iron-based magnetic nanoparticles in the electrochemical sensing of food contamination. The types of nanomaterials used in order to improve the methods and increase the sensitivity of the methods have been discussed. Then, we stated the advantages and limitations of each method and tried to state the research gaps for each platform/method. Finally, the role of microfluidic and smartphone-based methods in the rapid detection of food contamination is stated. Then, various techniques like label-free and labelled regimes for the sensitive monitoring of food contamination were surveyed. Next, the critical role of antibody, aptamer, peptide, enzyme, DNA, cells and so on for the construction of specific bioreceptors for individual and simultaneous recognition by electrochemical methods for food contamination were discussed. Finally, integration of novel technologies such as microfluidic and smartphones for the identification of food contaminations were investigated. It is important to point out that, in the last part of each sub-section, attained results of different reports for each strategy were compared and advantages/limitations were mentioned.

Abstract
Food security is significantly affected by the mass production of agricultural produce and goods, the growing number of imported foods, and new eating and consumption habits. These changed circumstances bring food safety issues arising from food spoilage to the fore, making food safety control essential. Simple and fast screening methods have been developed to detect pathogens and biomarkers indicating the freshness of food for safety. In addition to the traditional, sequential, chemical analytical and microbiological methods, fast, highly sensitive, automated methods suitable for serial tests have appeared. At the same time, biosensor research is also developing dynamically worldwide, both in terms of the analytes to be determined and the technical toolkit. Consequently, the rapid development of biosensors, including electrochemical-based biosensors, has led to significant advantages in the quantitative detection and screening of food contaminants. These techniques show great specificity for the biomarkers tested and provide adequate analytical accuracy even in complex food matrices. In our review article, we summarize, in separate chapters, the electrochemical biosensors developed for the most important food groups and the food safety issues they can ensure, with particular respect to meat and fish products, milk and dairy products, as well as alcoholic and non-alcoholic beverages.

Abstract
Foodborne viruses have been recognized as important threats to food safety and human health. Rapid and accurate detection is one of the most crucial measures for food safety control. With the development of biology, chemistry, nanoscience, and related interdisciplines, detection strategies have been devised and advanced continuously. This review mainly focuses on the progress of detection methods for foodborne viruses. The current detection methods for foodborne viruses are summarized, including traditional electron microscopy and cultural isolation, immunoassay, molecular technology, biosensors, and newly emerging CRISPR/Cas-based detection technology. Furthermore, a comparison of the detection methods was objectively discussed. This review provides a comprehensive account of foodborne virus detection methods from fundamentals to state-of-the-art and illustrates the advantages and disadvantages of the current methods and proposes the future trends and directions for foodborne virus detection. It is hoped that this review can update current knowledge and present blueprints in order to accelerate futuristic development.

Abstract
In recent years, microbial volatile organic compounds (mVOCs) produced by microbial metabolism have attracted more and more attention because they can be used to detect food early contamination and flaws. So far, many analytical methods have been reported for the determination of mVOCs in food, but few integrated review articles discussing these methods are published. Consequently, mVOCs as indicators of food microbiological contamination and their generation mechanism including carbohydrate, amino acid, and fatty acid metabolism are introduced. Meanwhile, a detailed summary of the mVOCs sampling methods such as headspace, purge trap, solid phase microextraction, and needle trap is presented, and a systematic and critical review of the analytical methods (ion mobility spectrometry, electronic nose, biosensor, and so on) of mVOCs and their application in the detection of food microbial contamination is highlighted. Finally, the future concepts that can help improve the detection of food mVOCs are prospected.

Abstract
The connection of macrosystems with microsystems for in-line measurements is important in different biotechnological processes as it enables precise and accurate monitoring of process parameters at a small scale, which can provide valuable insights into the process, and ultimately lead to improved process control and optimization. Additionally, it allows continuous monitoring without the need for manual sampling and analysis, leading to more efficient and cost-effective production. In this paper, a 3D printed microfluidic (MF) chip for glucose (Glc) sensing in a liquid analyte is proposed. The chip made in Poly(methyl methacrylate) (PMMA) contains integrated serpentine-based micromixers realized via stereolithography with a slot for USB-like integration of commercial DropSens electrodes. After adjusting the sample's pH in the first micromixer, small volumes of the sample and enzyme are mixed in the second micromixer and lead to a sensing chamber where the Glc concentration is measured via chronoamperometry. The sensing potential was examined for Glc concentrations in acetate buffer in the range of 0.1-100 mg/mL and afterward tested for Glc sensing in a cell culturing medium. The proposed chip showed great potential for connection with macrosystems, such as bioreactors, for direct in-line monitoring of a quality parameter in a liquid sample.

Abstract
UNLABELLED The coronavirus disease 2019 (COVID-19) is a highly contagious and fatal disease caused by severe acute respiratory syndrome coronavirus 2 (SARS-CoV-2). In general, the diagnostic tests for COVID-19 are based on the detection of nucleic acid, antibodies, and protein. Among different analytes, the gold standard of the COVID-19 test is the viral nucleic acid detection performed by the quantitative reverse transcription polymerase chain reaction (qRT-PCR) method. However, the gold standard test is time-consuming and requires expensive instrumentation, as well as trained personnel. Herein, we report an ultrasensitive electrochemical biosensor based on zinc sulfide/graphene (ZnS/graphene) nanocomposite for rapid and direct nucleic acid detection of SARS-CoV-2. We demonstrated a simple one-step route for manufacturing ZnS/graphene by employing an ultrafast (90 s) microwave-based non-equilibrium heating approach. The biosensor assay involves the hybridization of target DNA or RNA samples with probes that are immersed into a redox active electrolyte, which are detectable by electrochemical measurements. In this study, we have performed the tests for synthetic DNA samples and, SARS-CoV-2 standard samples. Experimental results revealed that the proposed biosensor could detect low concentrations of all different SARS-CoV-2 samples, using such as S, ORF 1a, and ORF 1b gene sequences as targets. This microwave-synthesized ZnS/graphene-based biosensor could be reliably used as an on-site, real-time, and rapid diagnostic test for COVID-19. Abstract
Vitamins are essential for sustaining daily activities and perform crucial roles in metabolism, such as preventing vascular events and delaying the development of diabetic nephropathy. The ultrasensitive assessment of thiamine in foods is required for food quality evaluation. A mini-platform utilizing two 3D sensors based on nanographene and gold nanoparticles paste modified with protoporphyrin IX and protoporphyrin IX cobalt chloride is proposed for the detection of thiamine in blueberry syrup, multivitamin tablets, water, and a biological sample (urine). Differential pulse voltammetry was utilized for the characterization and validation of the suggested sensors. The sensor modified with protoporphyrin IX has a detection limit of 3.0 × 10-13 mol L-1 and a quantification limit of 1.0 × 10-12 mol L-1, whereas the sensor modified with protoporphyrin IX cobalt chloride has detection and quantification limits of 3.0 × 10-12 and 1.0 × 10-11 mol L-1, respectively. High recoveries (values greater than 95.00%) and low RSD (%) values (less than 5.00%) are recorded for both 3D sensors when used for the determination of thiamine in blueberry syrup, multivitamin tablets, water, and urine, demonstrating the 3D sensors' and suggested method's high reliability.

Abstract
Screen-printed electrodes (SPEs) are promising candidates for fabricating biosensing platforms in the laboratory and industry due to the various advantages they involve. The primary method for fabricating SPEs is 2D printing. However, commercial SPEs have some limitations due to the specific ports and connections they require, inflexible design, high prices, and decreased efficiency after a short time. This article introduces high performance, feasible, and cost-effective gold SPEs based on the combination of printed circuit board substrate (PCBs) and sputtering methods for electrochemical biosensing platforms. First, we discuss a general gold SPE development procedure that helps researchers to develop specific designs. The final developed version of SPEs was characterized in the second step, showing positive performance in electrochemical parameters because of the optimization of design and fabrication steps. In the study’s final phase, SPEs were used to fabricate a simple platform for breast cancer cell detection as a proof of concept without using any linker or labeling step. The designed immunosensor is very simple and cost-effective, showing a linear calibration curve in the range of 10 − 2× 102 cells mL−1 (R2 = 0.985, S/N = 3). This research can be used as a reference for future studies in SPEs-based biosensors because of the flexibility of its design and the accessibility of the manufacturing equipment required.

Abstract
One of the biggest economic and environmental sustainability problems is the over-reliance on petroleum chemicals in polymer production. This paper presents an overview of the current state of knowledge on biopolymers combined with biosensors in terms of properties, compounding methods and applications, with a focus on medical and environmental aspects. Therefore, this article is devoted to environmentally friendly polymer materials. The paper presents an overview of the current state of knowledge on biopolymers combined with biosensors in terms of properties, compounding methods and applications, with a special focus on medical and environmental aspects. The paper presents the current state of knowledge, as well as prospects. The article shows that biopolymers made from renewable raw materials are of great interest in various fields of science and industry. These materials not only replace existing polymers in many applications, but also provide new combinations of properties for new applications. Composite materials based on biopolymers are considered superior to traditional non-biodegradable materials due to their ability to degrade when exposed to environmental factors. The paper highlights the combination of polymers with nanomaterials which allows the preparation of chemical sensors, thus enabling their use in environmental or medical applications due to their biocompatibility and sensitivity. This review focuses on analyzing the state of research in the field of biopolymer-sensor composites.

Abstract
The present information age is characterized by an ever-increasing digitalization. Smart devices quantify our entire lives. These collected data provide the foundation for data-driven services called smart services. They are able to adapt to a given context and thus tailor their functionalities to the user’s needs. It is therefore not surprising that their main resource, namely data, is nowadays a valuable commodity that can also be traded. However, this trend does not only have positive sides, as the gathered data reveal a lot of information about various data subjects. To prevent uncontrolled insights into private or confidential matters, data protection laws restrict the processing of sensitive data. One key factor in this regard is user-friendly privacy mechanisms. In this paper, we therefore assess current state-of-the-art privacy mechanisms. To this end, we initially identify forms of data processing applied by smart services. We then discuss privacy mechanisms suited for these use cases. Our findings reveal that current state-of-the-art privacy mechanisms provide good protection in principle, but there is no compelling one-size-fits-all privacy approach. This leads to further questions regarding the practicality of these mechanisms, which we present in the form of seven thought-provoking propositions.

Abstract
In the present work, an aptasensing method based on integration of RNA on Cu-MOF was developed for detection of C-Reactive Protein (CRP). Cu-MOF showed stimulated fluorescence and mimetic peroxidase enzymatic activity at the time and can be used as dual-signal transduction. CRP binding RNA was used as a highly selective recognition element and immobilized on the Cu-MOF. The immobilized RNA can block the peroxidase activity and fluorescence of the signal traducer probe. Adding CRP to the RNA/Cu-MOF will release RNA from the surface of Cu-MOF and recover both the stimulated fluorescence and peroxidase activity. A biosensor was built for detection of CRP using the two modes of transduction, either colorimetry or fluorometry. A dynamic linear range was obtained from 0.1 to 50 ng mL -1with a limit of detection (LOD) as small as 40 pg mL -1was calculated in fluorescence mode and 240 pg mL -1 as LOD in colorimetry mode. The LODs are lower than the LOD of nephelometric techniques used in clinical practice and is comparable to the normal clinical cutoff value in high-sensitivity CRP assays (1 μg/mL). The aptasensor was successfully applied for detection of CRP in Covid-19 patients with spike recoveries between 84 and 102% and RSD from 0.94% to 2.05%.

Nanozymes have piqued the curiosity of scientists in recent years because of their ability to demonstrate enzyme-like activity combined with advantages such as high stability, inexpensive availability, robust activity, and tunable properties. In this review, we discuss recent developments of nanozyme-based sensors to detect biomarkers associated with food quality and safety. First, we present a brief introduction to this topic, followed by discussing the different types of sensors used in food biomarker detection. We then highlight recent studies on nanozyme-based sensors to detect food markers such as toxins, pathogens, antibiotics, growth hormones, metal ions, additives, small molecules, and drug residues. In the subsequent section, we discuss the challenges and possible solutions towards the development of nanozyme-based sensors for application in the food industry. Finally, we conclude the review by discussing future perspectives of this field towards successful detection and monitoring of food analytes.

Abstract
Electrochemical biosensors and biofuel cells are finding an ever-increasing practical application due to several advantages. Biosensors are miniature measuring devices, which can be used for on-the-spot analyses, with small assay times and sample volumes. Biofuel cells have dual benefits of environmental cleanup and electric energy generation. Application of nanomaterials in biosensor and biofuel-cell devices increases their functioning efficiency and expands spheres of use. This review discusses the potential of nanomaterials in improving the basic parameters of bioelectrochemical systems, including the sensitivity increase, detection lower-limit decrease, detection-range change, lifetime increase, substrate-specificity control. In most cases, the consideration of the role of nanomaterials links a certain type of nanomaterial with its effect on the bioelectrochemical device upon the whole. The review aims at assessing the effects of nanomaterials on particular analytical parameters of a biosensor/biofuel-cell bioelectrochemical device.

Abstract
The purpose of this study was to investigate the influence of the parameters of the grain air-sieve cleaner in laboratory conditions on the external quality of food maize (Zea mays L.) kernel in terms of the design for the selection of a suitable sieve mesh for cleaning procedures. The object of the research was maize kernel, variety Pionier P0216, year of cultivation 2019. The available laboratory equipment was used in the study. To evaluate the external quality of food maize kernel, indicators were determined, which were investigated before and after cleaning. An Asus notebook computer with software from Microsoft Windows XP and Ofice 2010 was used to evaluate the measurement results. These results were achieved: an average bulk density of 846.77 kg.m-3 was found in the input sample of food maize kernel after harvest, admixtures before cleaning reached an average of 19.1% and impurities of 2.76%, cleanliness of kernels before cleaning averaged 76.9%, the output after cleaning expressed in terms of bulk density reached an average value of 851.15 kg.m-3, admixtures after cleaning reached 0.07% and impurities 4.21%, clean kernels after cleaning reached 94.86% and damage kernels after cleaning decreased slightly by separation of fragments and chipped kernels. In conclusion, it was stated that the laboratory technique for post-harvest treatment of grain is at a high level worldwide. Currently, the issue of post-harvest processing of grain in Slovakia is addressed at an average level. Post-harvest processing and storage of grain in terms of enginery and technological and economic aspects is little researched in the Slovak Republic, so these issues are open to further research.

Abstract
This paper reports on the refractometric detection of water-adulterated milk using an optical fiber sensor whose principle of operation is based on multimode interference (MMI). The device is manufactured in a simple way by splicing a segment of coreless multimode fiber (NC-MMF) between two single-mode fibers (SMFs); neither functionalization nor deposition of a sensing material is required. MMI takes place in the NC-MMF and, when fed with a broadband spectrum, a transmission peak appears at the output of the MMI device due to its inherent filter-like response, whose position depends on the effective refractive index (RI) of the medium surrounding the NC-MMF. Therefore, when the sensor is immersed in different milk−water mixtures, the peak wavelength shifts according to the RI of the mixture. In this way, adulterated milk can be detected from the wavelength shift of the transmission peak. The system was tested with two commercial brands of milk, and adulterations were clearly distinguished in both cases. In the range of interest, from no dilution up to 50% dilution, the sensor exhibits a linear response with a sensitivity of −0.04251 and −0.03291 nm/%, respectively, for the two samples tested. The measurement protocol is repeatable and allows for locating the peak wavelength within <0.34 nm over several repetitions using different samples with the same concentration. A thermal sensitivity of 0.85 nm/°C was obtained, which suggests that the temperature needs to be maintained as fixed during the measurements. The approach presented can be extended to other scenarios as a quality control tool in beverages for human consumption, showing the advantages of simple construction, high sensitivity, and the potential for real-time monitoring.

A Portable Battery-Operated Sensor System for Simple and Rapid Assessment of Virgin Olive Oil Quality Grade. CHEMOSENSORS 2022. Abstract
Virgin olive oil quality is assessed by chemical as well as sensory analysis. Two of the most important parameters that define the quality of virgin olive oils are the free acidity and the peroxide index. These chemical parameters are usually determined by manual titration procedures that must be carried out in a laboratory by trained personnel. In this paper, a portable sensor system to support the quality grade assessment of virgin olive oil is presented. The system is battery operated and characterized by small dimensions, light weight and quick measurement response (about 30 s). The working principle is based on the measurement of the electrical conductance of an emulsion between a chemical reagent and the olive oil sample. Two different chemical reagents have been investigated: (1) a hydro-alcoholic solution (HAS), made of 60% ethanol and 40% distilled water; (2) 100% distilled water (DW). Tests have been carried out on a set of 40 olive oil samples. The results have shown how, for most of the fresh virgin olive oil samples (31 samples out of 40), the free acidity can be estimated with good accuracy from the electrical conductance of the emulsion using HAS as the reagent. In the case of the full set of samples, the emulsion electrical conductance, using HAS as the reagent, is a function of both the sample free acidity as well as the compounds produced by oil oxidation, and a compensation method based on the measured electrical conductance, using DW as the reagent, has been introduced to improve the accuracy in the estimated free acidity. Tests have also been carried out on the full set of samples, using a k-nearest neighbors algorithm, to demonstrate the feasibility of olive oil classification according to the quality grade. The results have shown how measurements carried out using only the HAS reagent provide better classification accuracy than measurements carried out using both the HAS and DW reagents. The proposed system can be a low-cost alternative to standard laboratory analyses to evaluate the quality grade of virgin olive oil.

Abstract
Diverse chemicals and some physical phenomena recently introduced in nanotechnology have enabled scientists to develop useful devices in the field of food sciences. Concerning such developments, detecting foodborne pathogenic bacteria is now an important issue. These kinds of bacteria species have demonstrated severe health effects after consuming foods and high mortality related to acute cases. The most leading path of intoxication and infection has been through food matrices. Hence, quick recognition of foodborne bacteria agents at low concentrations has been required in current diagnostics. Lateral flow assays (LFAs) are one of the urgent and prevalently applied quick recognition methods that have been settled for recognizing diverse types of analytes. Thus, the present review has stressed on latest developments in LFAs-based platforms to detect various foodborne pathogenic bacteria such as Salmonella, Listeria, Escherichia coli, Brucella, Shigella, Staphylococcus aureus, Clostridium botulinum, and Vibrio cholera. Proper prominence has been given on exactly how the labels, detection elements, or procedures have affected recent developments in the evaluation of diverse bacteria using LFAs. Additionally, the modifications in assays specificity and sensitivity consistent with applied food processing techniques have been discussed. Finally, a conclusion has been drawn for highlighting the main challenges confronted through this method and offered a view and insight of thoughts for its further development in the future.

Abstract
Detection of microbial contamination in water is imperative to ensure water quality. We have developed an electrochemical method for the detection of E. coli using bi-functional magnetic nanoparticle (MNP) conjugates. The bi-functional MNP conjugates were prepared by terminal-specific conjugation of anti-E. coli IgG antibody and the electroactive marker ferrocene. The bi-functional MNP conjugate possesses both E. coli-specific binding and electroactive properties, which were studied in detail. The conjugation efficiency of ferrocene and IgG antibodies with amine-functionalized MNPs was investigated. Square-wave voltammetry enabled the detection of E. coli concentrations ranging from 101-107 cells/mL in a dose-dependent manner, as ferrocene-specific current signals were inversely dependent on E. coli concentrations, completely suppressed at concentrations higher than 107 cells/mL. The developed electrochemical method is highly sensitive (10 cells/mL) and, coupled to magnetic separation, provides specific signals within 1h. Overall, the bi-functional conjugates serve as ideal candidates for electrochemical detection of waterborne bacteria. This approach can be applied for the detection of other bacteria and viruses.

Abstract
Nickel is naturally present in drinking water and many dietary items, which expose the general population to nickel ingestion. This heavy metal can have a variety of harmful health effects, causing allergies and skin disorders (i.e., dermatitis), lung, cardiovascular, and kidney diseases, and even certain cancers; therefore, nickel detection is important for public health. Recent innovations in the development of biosensors have demonstrated they offer a powerful new approach over conventional analytical techniques for the identification and quantification of user-defined compounds, including heavy metals such as nickel. We optimized five candidate nickel-biosensing receptors, and tested each for efficiency of binding to immobilization elements on screen-printed electrodes (SPEs). We characterized the application of nickel-detecting biosensors with four different cultivated vegetables. We analyzed the efficiency of each nickel-detecting biosensor by potentiostat and atomic absorption spectrometry and compared the results from the sample analytes. We then analyzed the performance characteristics and responses of assembled biosensors, and show they are very effective at measuring nickel ions in food, especially with the urease-alginate biosensor affixed to silver SPEs, measured by cyclic voltammetry (sensitivity-2.1921 µA Mm-1 cm-2 and LOD-0.005 mg/L). Given the many advantages of biosensors, we describe an optimization pipeline approach to the application of different nickel-binding biosensors for public health, nutrition, and consumer safety, which are very promising.

Abstract
Glyphosate (GLY) is the main ingredient in the weed killer Roundup and the most widely used pesticide in the world. Studies of the harmful effects of GLY on human health began to become more wide-ranging after 2015. GLY is listed by the International Agency for Research on Cancer (IARC) as a carcinogenic hazard to humans. Moreover, GLY has the property to complex with transition metals and are stable for long periods, being considered a high-risk element for different matrices, such as environmental (soil and water) and food (usually genetically modified crops). Since that, it was noticed an increment in the development of new analytical methods for its determination in different matrices like food, environmental and biological fluids. Noteworthy, the application of electrochemical techniques for downstream detection sparked interest due to the ability to minimize or eliminate the use of polluting chemicals, using simple and affordable equipment. This work aims to review the contribution of the electroanalytical methods for the determination of GLY in different food and environmental matrices. Parameters such as the electrochemical transduction techniques based on the electrical measurement signals, receptor materials for electrodes preparation, and the detection mechanisms are described in this review. The literature review shows that the electrochemical sensors are powerful detection system that can be improved by their design and by their portability to fulfil the needs of the GLY determination in laboratory benches, or even in situ analysis.

Abstract
The rapid development of nanomaterials has provided a good theoretical basis and technical support to solve the problems of food safety inspection. The combination of functionalized composite nanomaterials and well-known detection methods is gradually applied to detect hazardous substances, such as chemical residues and toxins, in agricultural food products. This review concentrates on the latest agro-food safety inspection techniques and methodologies constructed with the assistance of new hybrid micro/nanoentities, such as molecular imprinting polymers integrated with quantum dots (MIPs@QDs), molecular imprinting polymers integrated with upconversion luminescent nanoparticles (MIPs@UCNPs), upconversion luminescent nanoparticles combined with metal-organic frameworks (UCNPs@MOFs), magnetic metal-organic frameworks (MOFs@Fe3O4), magnetic covalent-organic frameworks (Fe3O4@COFs), covalent-organic frameworks doped with quantum dots (COFs@QDs), nanobody-involved immunoassay for fast inspection, etc. The presented summary and discussion favor a relevant outlook for further integrating various disciplines, like material science, nanotechnology, and analytical methodology, for addressing new challenges that emerge in agro-food research fields.

Abstract
Food allergies have seriously affected the life quality of some people and even endangered their lives. At present, there is still no effective cure for food allergies. Avoiding the intake of allergenic food is still the most effective way to prevent allergic diseases. Therefore, it is necessary to develop rapid, accurate, sensitive, and reliable analysis methods to detect food allergens from different sources. Aptamers are oligonucleotide sequences that can bind to a variety of targets with high specificity and selectivity, and they are often combined with different transduction technologies, thereby constructing various types of aptamer sensors. In recent years, with the development of technology and the application of new materials, the sensitivity, portability, and cost of fluorescence sensing technology have been greatly improved. Therefore, aptamer-based fluorescence sensing technology has been widely developed and applied in the specific recognition of food allergens. In this paper, the classification of major allergens and their characteristics in animal and plant foods were comprehensively reviewed, and the preparation principles and practical applications of aptamer-based fluorescence biosensors are summarized. In addition, we hope that this article can provide some strategies for the rapid and sensitive detection of allergens in food matrices.

Abstract
Prostate cancer is currently diagnosed using the conventional gold standard methods using prostate-specific antigen (PSA) as the selective biomarker. However, lack of precision in PSA screening has resulted in needless biopsies and delays the treatment of potentially fatal prostate cancer. Thus, identification of glycans as novel biomarkers for the early detection of prostate cancer has attracted considerable attention due to their reliable diagnostic platform compared with the current PSA systems. Therefore, biosensing technologies that provide point-of-care diagnostics have demonstrated the ability to detect various analytes, including glycosylated micro- and macro-molecules, thereby enabling versatile detection methodologies. This highlight article discusses recent advances in the biosensor-based detection of prostate cancer glycan biomarkers and the innovative strategies for the conjugation of nanomaterials adapted to biosensing platforms. Finally, the article is concluded with prospects and challenges of prostate cancer biosensors and recommendations to overcome the issues associated with prostate cancer diagnosis.

Abstract
Chitosan is a biopolymer derived from chitin. It is a non-toxic, biocompatible, bioactive, and biodegradable polymer. Due to its properties, chitosan has found applications in several and different fields such as agriculture, food industry, medicine, paper fabrication, textile industry, and water treatment. In addition to these properties, chitosan has a good film-forming ability which allows it to be widely used for the development of sensors and biosensors. This review is focused on the use of chitosan for the formulation of electrochemical chemosensors. It also aims to provide an overview of the advantages of using chitosan as an immobilization platform for biomolecules by highlighting its applications in electrochemical biosensors. Finally, applications of chitosan-based electrochemical chemosensors and biosensors in food safety are illustrated.

Abstract
Food is a basic necessity for life, growth, survival, and maintaining a proper body function. Rising food demand leads both producers and consumers to search for alternative food sources with high nutritional value. However, food products may never be completely safe. The oxidation reaction may alter both the physicochemical and immunological properties of food products. Maillard and caramelization nonenzymatic browning reactions can play a pivotal role in food acceptance through the ways they influence quality factors such as flavor, color, texture, nutritional value, protein functionality, and digestibility. There is a multitude of adulterated foods that portray adverse risks to the human condition. To maintain food safety, the packaging material is used to preserve the quality and freshness of food products. Food safety is jeopardized by plenty of pathogens by the consumption of adulterated food resulting in multiple foodborne illnesses. Though different analytical tools are used in the analysis of food products, yet, adulterated food has repercussions for the community and is a growing issue that adversely impairs human health and well-being. Thus, pathogenic agents' rapid and effective identification is vital for food safety and security to avoid foodborne illness. This review highlights the various analytical techniques used in the analysis of food products, food structure, and quality of food along with chemical reactions in food processing. Moreover, we have also discussed the effect on health due to the consumption of adulterated food and focused on the importance of food safety, including the biodegradable packaging material.

Abstract
Food safety monitoring assays based on synthetic recognition structures such as aptamers are receiving considerable attention due to their remarkable advantages in terms of their ability to bind to a wide range of target analytes, strong binding affinity, facile manufacturing, and cost-effectiveness. Although aptasensors for food monitoring are still in the development stage, the use of an electrochemical detection route, combined with the wide range of materials available as transducers and the proper immobilization strategy of the aptamer at the transducer surface, can lead to powerful analytical tools. In such a context, employing aryldiazonium salts for the surface derivatization of transducer electrodes serves as a simple, versatile and robust strategy to fine-tune the interface properties and to facilitate the convenient anchoring and stability of the aptamer. By summarizing the most important results disclosed in the last years, this article provides a comprehensive review that emphasizes the contribution of aryldiazonium chemistry in developing electrochemical aptasensors for food safety monitoring.

Abstract
Safety and quality are key issues for the food industry. Consequently, there is growing demand to preserve the food chain and products against substances toxic, harmful to human health, such as contaminants, allergens, toxins, or pathogens. For this reason, it is mandatory to develop highly sensitive, reliable, rapid, and cost-effective sensing systems/devices, such as electrochemical sensors/biosensors. Generally, conventional techniques are limited by long analyses, expensive and complex procedures, and skilled personnel. Therefore, developing performant electrochemical biosensors can significantly support the screening of food chains and products. Here, we report some of the recent developments in this area and analyze the contributions produced by electrochemical biosensors in food screening and their challenges.

Abstract
Acrylamide, a food processing contaminant with demonstrated genotoxicity, carcinogenicity, and reproductive toxicity, is largely present in numerous prominent and commonly consumed food products that are produced by thermal processing methods. Food regulatory bodies such as the U.S. Food and Drug Administration (U.S. FDA) and European Union Commission regulations have disseminated various acrylamide mitigation strategies in food processing practices. Hence, in the wake of such food and public health safety efforts, there is a rising demand for economic, rapid, and portable detection and quantification methods for these contaminants. Since conventional quantification techniques like liquid chromatography-mass spectrometry (LC-MS) and gas chromatography-mass spectrometry (GC-MS) methods are expensive and have many drawbacks, sensing platforms with various transduction systems have become an efficient alternative tool for quantifying various target molecules in a wide variety of food samples. Therefore, this present review discusses in detail the state of robust, nanomaterials-based and other bio/chemical sensor fabrication techniques, the sensing mechanism, and the selective qualitative and quantitative measurement of acrylamide in various food materials. The discussed sensors use analytical measurements ranging from diverse and disparate optical, electrochemical, as well as piezoelectric methods. Further, discussions about challenges and also the potential development of the lab-on-chip applications for acrylamide detection and quantification are entailed at the end of this review.

Abstract
Food packaging encompasses the topical role of preserving food, hence, extending the shelf-life, while ensuring the highest quality and safety along the production chain as well as during storage. Intelligent food packaging further develops the functions of traditional packages by introducing the capability of continuously monitoring food quality during the whole chain to assess and reduce the insurgence of food-borne disease and food waste. To this purpose, several sensing systems based on different food quality indicators have been proposed in recent years, but commercial applications remain a challenge. This review provides a critical summary of responsive systems employed in the real-time monitoring of food quality and preservation state. First, food quality indicators are briefly presented, and subsequently, their exploitation to fabricate intelligent packaging based on responsive materials is discussed. Finally, current challenges and future trends are reviewed to highlight the importance of concentrating efforts on developing new functional solutions.
