Abstract
Walnut oil was extracted using three different eco-friendly extraction methods, solvent extraction (using ethyl acetate [EA] and ethanol [ET]), aqueous enzymatic extraction (AEE), and ultrasound-assisted enzymatic extraction (UAEE), and their lipid yield, lipid composition, physicochemical analysis, mineral composition, total phenols, antioxidant capacity, and antimicrobial activity were analyzed and compared. The AEE technique offered a greater yield (50.6%) than the other extraction methods and gave comparatively higher linoleic acid (66.12%) content. Palmitic, oleic, linoleic, linolenic, and stearic acids were the principal components that GC/MS detected in all the oil samples. UAEE produced the most polyphenols (0.49 mgGAE/g), followed by AEE (0.46 mgGAE/g), EA (0.45 mgGAE/g), and ET (0.35 mgGAE/g). The DPPH assay results were in the order of UAEE (191 μmolTE/kg) > AEE (186 μmolTE/kg) > EA (153 μmolTE/kg) > ET (130 μmolTE/kg). The FRAP assay findings showed a similar pattern: UAEE (112 molTE/kg) > AEE (102 molTE/kg) > EA (96 molTE/kg) > ET (82 molTE/kg). Results suggested that for a higher extraction yield, AEE is the better technique and UAEE is the recommended method for enhancing walnut oil antioxidant capacity. Additionally, it was found that polyphenols considerably increased the antioxidant capacity of walnut oil and are thought to be health-promoting. The results demonstrated the antibacterial effectiveness of the extracted oil against Bacillus subtilis, Bacillus licheniformis, and Staphylococcus aureus. This study provides information about low-cost and ecofriendly technologies of walnut oil extraction for food, cosmetic, and medical uses.

Abstract
The Persian walnut (Juglans regia L.) is the most grown nut tree crop in Central Europe. The aim was to study the full Hungarian walnut assortment with a distinct early spring phenology to detect the difference in phenolic profile in their green husks. Furthermore, the relationship between the presence and concentration of phenolic compounds and the tolerance/resistance of the observed cultivars to walnut bacterial blight was investigated. Examining the samples, significant differences were found between the concentrations of the different groups of phenolic compounds. Walnut blight immunity tests were also performed to clarify the role of phenolic compounds in the nut derived from a non-irrigated orchard. The Hungarian-bred local cultivars contained phenolic compounds in higher concentrations than the domesticated ones. There was a significant correlation between the budburst, as well as the pistillate flowers' receptivity and the concentration of juglone. Cultivars with a low concentration of phenolic compounds were the most susceptible to walnut bacterial blight, except 'Bonifác'.

Abstract
Nuts used as a snack and meal accompaniment supply plant protein and fatty acids that are beneficial for human health; however, they can also provide minerals. The aim of this study was to determine the content of selected elements that are often deficient in the diet (calcium, potassium, magnesium, selenium, and zinc) in nuts and determine whether they can be used to supplement deficiencies in the diet. In this study, we analyzed 10 types of nuts (n = 120 samples) that are consumed and available for sale in Poland. The content of calcium, magnesium, selenium, and zinc was determined by the atomic absorption spectrometry method, and flame atomic emission spectrometry was used for determination of potassium contents. The highest median calcium content was found in almonds (2825.8 mg/kg), the highest potassium content in pistachio nuts (15,730.5 mg/kg), the highest magnesium and selenium contents in Brazil nuts (10,509.2 mg/kg and 4348.7 μg/kg, respectively), and the highest zinc content in pine nuts (72.4 mg/kg). All the tested nuts are a source of magnesium, eight types of tested nuts are a source of potassium, six nut types are a source of zinc, and four nut types are a source of selenium; however, among the tested nuts, only almonds can be considered a source of calcium. Moreover, we found that selected chemometric methods can be useful in the classification of nuts. The studied nuts are valuable products that can be used to supplement the diet with selected minerals and can therefore be labelled as functional products crucial for disease prevention.

Abstract
Se is an essential element in mammals. We review how its bioavailability in soil and the ability of plants to accumulate Se in foods depends on the soil Se profile (including levels and formats), besides to describe how the various selenoproteins have important biochemical functions in the body and directly impact human health. Owing to its favorable characteristics, the scientific community has investigated selenomethionine in most nut matrices. Among nuts, Brazil nuts have been highlighted as one of the richest sources of bioavailable Se. We summarize the most commonly used analytical methods for Se species and total Se determination in nuts. We also discuss the chemical forms of Se metabolized by mammals, human biochemistry and health outcomes from daily dietary intake of Se from Brazil nuts. These findings may facilitate the understanding of the importance of adequate dietary Se intake and enable researchers to define methods to determine Se species.

Abstract
Agricultural products are indispensable for equilibrated diets since they discharge minerals and several bioactive constituents. Considering the increasing demand for organic products, research has been conducted over recent years to investigate whether organically grown food products are chemically different compared to those produced with conventional farming. In this work, a novel inductively coupled plasma atomic emission spectrometric method was developed and validated for the determination of nutrient and toxic elements in walnut oils produced with conventional and organic farming. The method presented good linearity (r2 > 0.9990) for each element at the selected emission line. The limits of detection and limits of quantification ranged between 0.09 μg g−1 to 2.43 μg g−1 and 0.28 μg g−1 to 8.1 μg g−1, respectively. Method accuracy and was assessed by analyzing the certified reference materials BCR 278-R and spiked walnut oil samples. The determined metals were quantified, and the results were analyzed by Student’s t-test to investigate the differences in the elemental profile of the walnut oils according to type of farming (conventional or organic).

Abstract
A high-pressure liquid chromatographic method coupled to diode array detector (HPLC-DAD) was developed for the determination of phenolic compounds that could be used as markers in authentication studies of walnuts belonging to the Chandler variety, originating from Bulgaria, Greece, and France. An ultrasound-assisted extraction (UAE) protocol applied in the extraction of phenolic compounds was optimized. The method was validated and the relative standard deviations (RSD%) of the within-day, and between-day assays was lower than 6.3 and 11.1, respectively, showing adequate precision, and good accuracy ranging from 86.4 (sinapic acid) to 98.4% (caffeic acid) for within-day assay, and from 90.1 (gallocatechin gallate) to 100.6% (gallic acid) for between-day assay. Eighteen phenolic compounds were determined belonging to the classes of phenolic acids and flavonoids. The quantification results were further processed with chemometrics, and a robust partial least square-discriminant analysis (PLS-DA) model was developed for the classification of the samples according to their geographical origin, proposing markers that could be used for the control of walnuts authenticity and the detection of fraudulent incidents.

Abstract
Walnuts (fruits Juglans regia, L.) belong among to the most spread, commercially grown tree nuts in the world. Nuts have grown higher attention in last years as valuable sources of essential elements; they are rich in non-essential fatty acids, proteins, fibre, plant sterols and minerals including potassium and magnesium and antioxidants. Determination of elements distribution in nuts is required not only for evaluation of total intake of essential elements in our food, but it is also useful for gaining data on contamination of foodstuffs by risk elements, but also for monitoring of heavy metal contamination in foodstuffs. Walnut samples were taken from three selected areas in Slovakia. The first location is in the vicinity of the cities Strážske, Humenné and Vranov nad Topľou, the second one is situated close to the city of Prievidza and the last one is close to the city of Vráble. The results of evaluation showed that the content of the elements monitored in location of Vráble did not exceed the limits set by the Regulation of Ministry of Health of Slovak Republic No 2/1994. In the half of samples taken from the location of Strážske, higher content of cadmium as the permitted limit has been found. The samples exceeded the amounts allowed by the Regulation No 2/1994 in contaminated area called "The dangerous triangle". Potential consumption of these walnuts could negatively affect human organism, but only if the kernels from the exact locality would be consumed in very high daily amounts (100-fold higher intake as daily intake according to the Statistical Office of SR).

Abstract
The contents of main components in 45 walnut kernels from 5 walnut-planting provinces in China (Yunnan, Shaanxi, Shandong, Hebei, and Sichuan) were determined using colorimetry, high-performance liquid chromatography, and gas chromatography, including flavonoids, vitamin E, trace elements, fatty acids, and amino acids. The levels of flavonoids and vitamin E were higher in walnuts from Yunnan than in walnuts from the other four provinces. The levels of zinc and iron were relatively higher in walnuts from Shandong, and the calcium content in walnuts from Yunnan was much lower. No obvious difference was found in crude fat concentration for nuts from the five provinces, but differences were observed in the crude protein content. Oleic acid was the predominant unsaturated fatty acids in all walnut species; the monounsaturated fatty acid content was the highest in walnuts from Yunnan. The data obtained here provided insight into differences in walnuts resulting from different growing environments and germplasm genetic traits.

Abstract
Walnut contains many nutrients and bioactive components such as essential fatty acids, polyphenols, fiber, ɤ-tocopherol, folate, minerals, and vegetable protein, and has therefore been regarded as a natural functional food. Walnut-enriched diets have been demonstrated to be useful for heart health, cancer prevention, and metabolic disorders owing to their anti-oxidative and anti-inflammatory properties as well as for the maintenance of a healthy metabolism and immune function. Walnut extracts, either phenolic or lipid, also demonstrated the health effects in animal and cultured cell studies. More recently, the beneficial effects of walnut consumption on non-alcoholic fatty liver disease, which is a hepatic manifestation of obesity, hyperlipidemia, type 2 diabetes mellitus, and metabolic syndrome with substantial hepatic accumulation of triglyceride, have been proposed because walnut and a walnut-containing diet can modulate the etiologic mechanism such as ameliorating systemic and hepatic dyslipidemia, reducing lipotoxicity and inflammation, enhancing immune function, and maintaining gut microbiota balance. Through the extensive literature review we discuss the preventive roles of walnut in the development and progression of non-alcoholic fatty liver disease (NAFLD) and provide mechanistic insights into these effects.

Abstract
To counteract food fraud, this study aimed at the differentiation of walnuts on a global and regional level using an isotopolomics approach. Thus, the multi-elemental profiles of 237 walnut samples from ten countries and three years of harvest were analyzed with inductively coupled plasma mass spectrometry (ICP-MS), and the resulting element profiles were evaluated with chemometrics. Using support vector machine (SVM) for classification, validated by stratified nested cross validation, a prediction accuracy of 73% could be achieved. Leave-one-out cross validation was also applied for comparison and led to less satisfactory results because of the higher variations in sensitivity for distinct classes. Prediction was still possible using only elemental ratios instead of the absolute element concentrations; consequently, a drying step is not mandatory. In addition, the isotopolomics approach provided the classification of walnut samples on a regional level in France, Germany, and Italy, with accuracies of 91%, 77%, and 94%, respectively. The ratio of the model's accuracy to a random sample distribution was calculated, providing a new parameter with which to evaluate and compare the performance of classification models. The walnut cultivar and harvest year had no observable influence on the origin differentiation. Our results show the high potential of element profiling for the origin authentication of walnuts.

Abstract
Edible plant oil (EPO) is an indispensable nutritional resource for human health. Various cultivars of oil-bearing plants are grown worldwide, and the chemical compositions of different plant oils are diverse. The extremely complex components in oils lead to diverse standards for evaluating the quality and safety of different EPOs. The environment poses great challenges to the EPO safety and quality during the entire industrial chain, including plant cultivation, harvesting, oil processing, and storage. Environmental risk factors include heavy metal or pesticide residue pollution, insect or harmful microbial infestation, and rancidity. Here, the diverse components in oil and various oil-producing processes are discussed, including plant species, oil yield, and composition complexity, environmental factors that degrade oil quality. Additionally, we propose a whole-industrial-chain monitoring system instead of current single-link-monitoring approach by monitoring and tracking the quality and safety of EPOs during the entire process of plant cultivation, raw materials harvest, oil process, and EPOs storage. This will provide guidance for monitoring the quality and safety of EPOs, which were challenged by the deteriorating environment.

Abstract
The study designed to evaluate the role of sesame, fenugreek flax, and nuts seeds as best alternatives for therapeutic agents to improve bone mineral status. Effect of these plant seeds on proximate composition, antioxidant potential, mineral, fatty acid, and amino acid profile of supplements was studied. The sesame, fenugreek, and flaxseeds were incorporated with nuts at level of 35% to develop supplement. Improved contents of protein, fat, and NFE were recorded in range of 25.72-32.23, 18.92-23.15, and 34.25%-39.59%, correspondingly. The antioxidant potential of supplements is high (450.56 mg GAE/ 100g) prepared with fenugreek followed by flaxseeds and sesame seeds. Calcium as fundamental bone mineral found greater (525.15%-790.21%) in seed-based supplement. Enhanced contents of Oleic, linoleic, and linolenic acids ranged 17.32-41.78, 21.72-44.23, and 1.00%-47.12%, respectively. Nutritional enriched supplements may be best alternatives for improving bone health by lowering osteoclast and increasing osteoblast mechanism in bone development.

Human Health Risk Assessment and Potentially Harmful Element Contents in the Fruits Cultivated in the Southern Poland. Abstract
The presence of potentially harmful elements (PHEs) in popularly consumed fruits in Poland was determined by inductively coupled plasma mass spectrometry. The As, Cd, Co, Cr, Cu, Hg, Ni, Pb, Se, Sb, Tl, and Zn contents were investigated in 21 fruit species grouped as berry, pome, stone, and shell fruits. The PHE contents belonged to the following ranges (mg/kg wet weight): Cd < limit of detection (LOD)–0.116, Co < LOD–0.062, Cu < LOD–15.5, Ni < LOD–2.23, Pb < LOD–2.07, Sb < LOD–0.240, Tl < LOD–0.110, and Zn 0.37–37.7. Their concentrations exceeded the maximum allowable concentration (MAC) set by European Union regulation for Pb only. Bioconcentration coefficient (BC) values, calculated in accordance to the PHE contents in exchangeable and acid soluble forms in soil after first step of the Community Bureau of Reference (BCR) sequential extraction procedure, revealed that berry fruits had potential for accumulation of Cu, Ni, Sb, and Tl; stone fruits—Cu, Sb, and Tl; pome fruits—Cu, Ni, and Sb, and shell fruit (walnut)—Cu. Human health risk assessment associated with the intake of PHEs in fruits was evaluated in terms of daily intake rates (DIR), and carcinogenic and non-carcinogenic risk by cancer risk (CR) and hazard quotient (HQ), respectively. For Pb margin of exposure (MOE) approach was used for health risk evaluation. Daily intake rates for all PHEs were below the provisional maximum tolerable daily intake (PMTDI) values. The mean total non-carcinogenic risk values were the following: berry fruits HQ = 0.47, pome fruits HQ = 0.36, stone fruits HQ = 0.42, and shell fruits (walnut) HQ = 0.22, indicating no health hazards. The carcinogenic risk for As in walnut only under an adult intake scenario (CR = 1.98 × 10−6) was found to be above the acceptable risk level. The mean Pb health risk, according to Polish statistical intake rates, was acceptable low as the MOE value was equal to 15.7 for adults. In reference to the intake rates recommended by United States Environmental Protection Agency (USEPA), MOE values for Pb indicated acceptable low risk both for adults (MOE = 14.0) and children (MOE = 1.64). In general, the finding of this research revealed no health risk arising from PHE consumption with fruits for the population of Poland.
