Abstract
Selenium (Se) is an essential micronutrient for both human and animals. Plants serve as the primary source of Se in the food chain. Se concentration and availability in plants is influenced by soil properties and environmental conditions. Optimal Se levels promote plant growth and enhance stress tolerance, while excessive Se concentration can result in toxicity. Se enhances plants ROS scavenging ability by promoting antioxidant compound synthesis. The ability of Se to maintain redox balance depends upon ROS compounds, stress conditions and Se application rate. Furthermore, Se-dependent antioxidant compound synthesis is critically reliant on plant macro and micro nutritional status. As these nutrients are fundamental for different co-factors and amino acid synthesis. Additionally, phytohormones also interact with Se to promote plant growth. Hence, utilization of phytohormones and modified crop nutrition can improve Se-dependent crop growth and plant stress tolerance. This review aims to explore the assimilation of Se into plant proteins, its intricate effect on plant redox status, and the specific interactions between Se and phytohormones. Furthermore, we highlight the proposed physiological and genetic mechanisms underlying Se-mediated phytohormone-dependent plant growth modulation and identified research opportunities that could contribute to sustainable agricultural production in the future.

Abstract
Sesame (Sesamum indicum) is abundant in a diverse range of lignans, including sesamin, and γ-tocopherol, constituting a cluster of bioactive phenolic compound used for food and medicinal purposes. Cardiovascular diseases remain a leading global health challenge, demanding vigilant prevention and innovative treatments. This study was carried out to evaluate the effect of plant mediated SeNPs on sesame metabolic profile and to screen and check the effect bioactive compounds against CVD via molecular drug docking technique. Three sesame germplasms TS-5, TH-6 and Till-18 were treated with varying concentrations (10, 20, 30, 40 and 50 ppm) of plant-mediated selenium nanoparticles (SeNPs). There were three groups of treatments group-1 got only seed pretreatments of SeNPs, Group-2 with only foliar applications of SeNPs and Group-3 with both seed pretreatments and foliar applications of SeNPs. It was found that plants treated with 40 ppm of SeNPS in group 3 exhibited the highest total phenolic and flavonoid content. Total phenolic content at T4 was highest for TS-5 (134%), TH-6 (132%), and Till-18 (112%). LCMS analysis revealed a total of 276 metabolites, with phenolics, flavonoids, and free fatty acids being most abundant. KEGG analysis indicated enrichment in free fatty acid and phenylalanine tryptophan pathways. ADMET analysis and virtual screening resulted in total of five metabolic compounds as a potential ligand against Hemoglobin beta subunit. Lowest binding energy was achieved by Delta-Tocopherol (-6.98) followed by Lactoflavin (-6.20) and Sesamin (-5.00). Lipinski rule of five revealed that all the compounds completely safe to be used as drug against CVD and specifically for HBB. It was concluded that bioactive compounds from sesame could be an alternative source of drug for CVD related problems and especially for HBB.

Abstract
Arsenic (As) is a heavy toxic metalloid found in air, water and soil that adversely affects the plant growth by inducing oxidative stress in plants. Its contamination of rice is a serious problem throughout the world. Selenium (Se) is a beneficial micronutrient for plants that acts as an antioxidant at low doses and protect the plants against number of environmental stresses either by modulating the primary metabolic pathways or regulating the production of phenolic compounds. In the present investigation, effect of Se on different phenolics, enzymes related to their metabolism and antioxidative potential were studied in As stressed rice leaves. Rice plants were grown in pots containing sodium arsenate (2-10 mg As(V) kg-1 soil) and sodium selenate (0.5-1 mg Se kg-1 soil), both alone and in combination and leaf samples were analyzed for various biochemical parameters. Phenolic constituents increased in rice leaves with As(V) treatment from 2 to 5 mg kg-1 soil and leaves exposed to As(V) @ 5 mg kg-1 soil exhibited 1.7, 1.9 and 2.5 fold increase in total phenolics, o-dihydroxyphenols and flavonols, respectively at grain filling stage. Binary application of Se + As improved various phenolic constituents, FRAP, reducing power and antioxidant activities as compared to control. PAL, TAL and PPO activities increased from 1.3 to 4.6 fold in combined As + Se treatment at both the stages. Anthocyanin contents showed a decline (10.8 fold) with increasing As doses and its content improved at both the stages with maximum increase of 3.76 fold with As5+Se1 combination. Binary application of As + Se improved gallic acid, chlorogenic acid, 3-hydroxy benzoic acid and kaempferol contents than control whereas catechin and coumaric acid showed the reverse trend. Application of Se can modulate phenolic constituents in leaf and grains of rice Cv PR126 due to As stress that helped plants to adapt to excess As and resulted in improved plant growth.

Abstract
To investigate the effectiveness of selenium (Se) and Se nanoparticles (Se-NPs) in improving biochemical and physiological characteristics of savoury in drought stress conditions, a factorial experiment based on the completely randomised design with three replications was used. Results demonstrate that Se-NPs considerably enhanced several biochemical parameters, such as relative water content (RWC), antioxidant enzymes activity, and total soluble protein in drought and normal conditions. At the stress level from 100 to 40% of field capacity, a gradual decrease in chlorophyll and CARs contents was observed and under stress and normal conditions, the application of Se-NPs (10 mg L-1) led to an increase in the content of pigments. Total soluble protein, total phenolic and flavonoid contents showed significant increases in plants treated with Se-NPs under drought stress. Generally, the use of Se-NPs in drought stress conditions can be effective in improving the growth, biochemical, and physiological characteristics of savoury.

Abstract
Agricultural productivity is constantly being forced to maintain yield stability to feed the enormously growing world population. However, shrinking arable and nutrient-deprived soil and abiotic and biotic stressor (s) in different magnitudes put additional challenges to achieving global food security. Though well-defined, the concept of macro, micronutrients, and beneficial elements is from a plant nutritional perspective. Among various micronutrients, selenium (Se) is essential in small amounts for the life cycle of organisms, including crops. Selenium has the potential to improve soil health, leading to the improvement of productivity and crop quality. However, Se possesses an immense encouraging phenomenon when supplied within the threshold limit, also having wide variations. The supplementation of Se has exhibited promising outcomes in lessening biotic and abiotic stress in various crops. Besides, bulk form, nano-Se, and biogenic-Se also revealed some merits and limitations. Literature suggests that the possibilities of biogenic-Se in stress alleviation and fortifying foods are encouraging. In this article, apart from adopting a combination of a conventional extensive review of the literature and bibliometric analysis, the authors have assessed the journey of Se in the "soil to spoon" perspective in a diverse agroecosystem to highlight the research gap area. There is no doubt that the time has come to seriously consider the tag of beneficial elements associated with Se, especially in the drastic global climate change era.

Abstract
Physicochemical and phytochemical assessment of leaf mustard (Brassica juncea L.) grown in different agroclimatic conditions is essential to highlight their compositional variability and evaluate the most suitable bunch of agroclimatic and agronomic practices. B. juncea is one of the important leafy vegetables that serve as source of vitamin A and C and iron, and plenty of antioxidants. This in situ research was executed to assess the quality variability of B. juncea grown in different agroecosystems. Leaves' samples of B. juncea were procured from 15 farmers' fields exhibiting different agroclimatic conditions i.e., elevation, nutrient management, temperature, irrigation, and tillage practices. Leaves' samples were subjected to physicochemical and phytochemical analysis, i.e., moisture, pH, TSS, ascorbic acid, carotenoids, phenolics, flavonoids, and antioxidant potential. In the leaves' samples of B. juncea, the target properties were found to vary significantly (P ≤ 0.05) in different agroclimatic conditions. The moisture content, ascorbic acid, phenolic content, carotenoids, and antioxidants were found in the range of 62.7-79.3%, 74-91 mg/100 g, 49.2-49.2 mg GAE/100 g, 436.3-480 mg β carotene/100 g, 32.7-46.67%, respectively. This study elaborates the significant variation of physicochemical and phytochemical attributes of B. juncea due to the prevailing agroclimatic conditions. This necessitates the appropriate choice of B. juncea concerning its composition and ecological conditions of its cultivation in the prospective health benefits.

Abstract
Summer-autumn tea is characterized by high polyphenol content and low amino acid content, resulting in bitter and astringent teast. However, these qualities often lead to low economic benefits, ultimately resulting in a wastage of tea resources. The study focused on evaluating the effects of foliar spraying of glucosamine selenium (GLN-Se) on summer-autumn tea. This foliar fertilizer was applied to tea leaves to assess its impact on plant development, nutritional quality, elemental uptake, organoleptic quality, and antioxidant responses. The results revealed that GlcN-Se enhanced photosynthesis and yield by improving the antioxidant system. Additionally, the concentration of GlcN-Se positively correlated with the total and organic selenium contents in tea. The foliar application of GlcN-Se reduced toxic heavy metal content and increased the levels of macronutrients and micronutrients, which facilitated adaptation to environmental changes and abiotic stresses. Furthermore, GlcN-Se significantly improved both non-volatile and volatile components of tea leaves, resulting in a sweet aftertaste and nectar aroma in the tea soup. To conclude, the accurate and rational application of exogenous GlcN-Se can effectively enhance the selenium content and biochemical status of tea. This improvement leads to enhanced nutritional quality and sensory characteristics, making it highly significant for the tea industry.

Abstract
Selenium (Se) is an essential trace element that plays a crucial role in maintaining the health of humans, animals, and certain plants. It is extensively present throughout the Earth's crust and is absorbed by crops in the form of selenates and selenite, eventually entering the food chain. Se biofortification is an agricultural process that employs agronomic and genetic strategies. Its goal is to enhance the mechanisms of crop uptake and the accumulation of exogenous Se, resulting in the production of crops enriched with Se. This process ultimately contributes to promoting human health. Agronomic strategies in Se biofortification aim to enhance the availability of exogenous Se in crops. Concurrently, genetic strategies focus on improving a crop's capacity to uptake, transport, and accumulate Se. Early research primarily concentrated on optimizing Se biofortification methods, improving Se fertilizer efficiency, and enhancing Se content in crops. In recent years, there has been a growing realization that Se can effectively enhance crop growth and increase crop yield, thereby contributing to alleviating food shortages. Additionally, Se has been found to promote the accumulation of macro-nutrients, antioxidants, and beneficial mineral elements in crops. The supplementation of Se biofortified foods is gradually emerging as an effective approach for promoting human dietary health and alleviating hidden hunger. Therefore, in this paper, we provide a comprehensive summary of the Se biofortification conducted over the past decade, mainly focusing on Se accumulation in crops and its impact on crop quality. We discuss various Se biofortification strategies, with an emphasis on the impact of Se fertilizer strategies on crop Se accumulation and their underlying mechanisms. Furthermore, we highlight Se's role in enhancing crop quality and offer perspective on Se biofortification in crop improvement, guiding future mechanistic explorations and applications of Se biofortification.

Abstract
BackgroundSelenium (Se) and zinc (Zn) are essential antioxidant enzyme cofactors. Foliar Se/Zn application is a highly effective method of plant biofortification. However, little is known about the effect of such applications on the concentration of trace elements and phytochemicals with pro-oxidant or antioxidant activity in pea (Pisum sativum L.).MethodsA 2-year pot experiment (2014/2015) was conducted to examine the response of two pea varieties (Ambassador and Premium) to foliar-administered sodium selenate (0/50/100 g Se/ha) and zinc oxide (0/375/750 g Zn/ha) at the flowering stage. Concentrations of selected trace elements (Fe, Cu, and Mn), total phenolic content (TPC), total flavonoid content (TFC), and total antioxidant activity (ABTS, FRAP) of seeds were determined.Results and conclusionsSe/Zn treatments did not improve the concentration of trace elements, while they generally enhanced TPC. Among examined treatments, the highest TPC was found in Ambassador (from 2014) treated with 100 g Se/ha and 750 g Zn/ha (2,926 and 3,221 mg/100 g DW, respectively) vs. the control (1,737 mg/100 g DW). In addition, 50 g of Se/ha increased TFC vs. the control (261 vs. 151 mg/100 g DW) in Premium (from 2014), 750 g of Zn/ha increased ABTS vs. the control (25.2 vs. 59.5 mg/100 g DW) in Ambassador (from 2015), and 50 g of Se/ha increased FRAP vs. the control (26.6 vs. 18.0 mmol/100 g DW) in Ambassador (from 2015). In linear multivariable regression models, Zn, Mn, Cu, and TPC best explained ABTS (R = 0.577), while Se, Cu, and TPC best explained the FRAP findings (R = 0.696). This study highlights the potential of foliar biofortification with trace elements for producing pea/pea products rich in bioactive plant metabolites beneficial for human health.

Abstract
Selenium (Se), being an essential micronutrient, enhances plant growth and development in trace amounts. It also protects plants against different abiotic stresses by acting as an antioxidant or stimulator in a dose-dependent manner. Knowledge of Se uptake, translocation, and accumulation is crucial to achieving the inclusive benefits of Se in plants. Therefore, this review discusses the absorption, translocation, and signaling of Se in plants as well as proteomic and genomic investigations of Se shortage and toxicity. Furthermore, the physiological responses to Se in plants and its ability to mitigate abiotic stress have been included. In this golden age of nanotechnology, scientists are interested in nanostructured materials due to their advantages over bulk ones. Thus, the synthesis of nano-Se or Se nanoparticles (SeNP) and its impact on plants have been studied, highlighting the essential functions of Se NP in plant physiology. In this review, we survey the research literature from the perspective of the role of Se in plant metabolism. We also highlight the outstanding aspects of Se NP that enlighten the knowledge and importance of Se in the plant system. Graphical abstract

Abstract
Biofortification of Brassica oleracea with selenium (Se) is highly valuable both for human Se status optimization and functional food production with direct anti-carcinogenic activity. To assess the effects of organic and inorganic Se supply for biofortifying Brassica representatives, foliar applications of sodium selenate and selenocystine (SeCys2) were performed on Savoy cabbage treated with the growth stimulator microalgae Chlorella. Compared to sodium selenate, SeCys2 exerted a stronger growth stimulation of heads (1.3 against 1.14 times) and an increase of leaf concentration of chlorophyll (1.56 against 1.2 times) and ascorbic acid (1.37 against 1.27 times). Head density was reduced by 1.22 times by foliar application of sodium selenate and by 1.58 times by SeCys2. Despite the greater growth stimulation effect of SeCys2, its application resulted in lower biofortification levels (2.9 times) compared to sodium selenate (11.6 times). Se concentration decreased according to the following sequence: leaves > roots > head. The antioxidant activity (AOA) was higher in water extracts compared to the ethanol ones in the heads, but the opposite trend was recorded in the leaves. Chlorella supply significantly increased the efficiency of biofortification with sodium selenate (by 1.57 times) but had no effect in the case of SeCys2 application. Positive correlations were found between leaf and head weight (r = 0.621); head weight and Se content under selenate supply (r = 0.897-0.954); leaf ascorbic acid and total yield (r = 0.559), and chlorophyll (r = +0.83-0.89). Significant varietal differences were recorded for all the parameters examined. The broad comparison performed between the effects of selenate and SeCys2 showed significant genetic differences as well as important peculiarities connected with the Se chemical form and its complex interaction with Chlorella treatment.

Abstract
Selenium (Se) biofortification of aromatic plants is a promising strategy to produce valuable functional food with high biological activity and enhanced essential oil yield. The experiment carried out in 2021 and 2022 on A. annua treated with sodium selenate or nano-Se sprayed on foliar apparatus demonstrated a significant increase in photosynthetic pigments, pectin, waxes, macro- and microelements and a decrease in malonic dialdehyde (MDA) accumulation. Contrary to literature reports, neither selenate nor nano-Se showed a beneficial effect on essential oil accumulation; the oil yield did not differ between the selenate treated and control plants but was halved by the nano-Se application. Extremely high variations in the number of essential oil components, as well as in the eucalyptol, artemisia ketone, camphor and germacrene D ratio in the 2021 and 2022 experiments were recorded. The analysis of the 2016-2022 data for oil yield and composition in the control plants revealed a direct correlation between the number of components and of solar flares, and a negative correlation between oil yield and the percentage of spotless days. Both control plants and plants fortified with selenium showed higher levels of germacrene D and lower levels of artemisia ketone in 2022, characterized by more remarkable solar activity compared to 2021. Nano-Se supply resulted in the highest percentage of germacrene D accumulation. The results of the present research highlight the importance of the solar activity effect on the essential oil yield and quality of aromatic plants.

Abstract
Selenium and iodine are essential trace elements for both humans and animals. Among other things, they have an essential role in thyroid function and the production of important hormones by the thyroid gland. Unfortunately, in many areas, soils are deficient in selenium and iodine, and their amount is insufficient to produce crops with adequate contents to cover the recommended daily intake; thus, deficiencies have an endemic character. With the introduction of iodized table salt in the food industry, the thyroid status of the population has improved, but several areas remain iodine deficient. Furthermore, due to the strong relationship between iodine and selenium in metabolic processes, selenium deficiency often compromises the desired positive impact of salt iodization efforts. Therefore, a considerable number of studies have looked for alternative methods for the simultaneous supplementation of selenium and iodine in foodstuff. In most cases, the subject of these studies is crops; recently, meat has also been a subject of interest. This paper reviews the most recent strategies in agriculture to fortify selenium and iodine in crop plants, their effect on the quality of the plant species used, and the potential impact of food processing on their stability in fortified crops.

Abstract
Se has beneficial effects on plants, through the stimulation of plant productivity, the reduction of abiotic stresses, and the improvement in N metabolism. Therefore, we investigated the effect of the foliar application of different concentrations of Se (0, 4, 8 and 16 μmol L-1) on lettuce plants grown in an aquaponics system (fish water) compared with a control (conventional soilless fertigation). The NO3- concentration supplied by the fish water was 47% of the control solution. The results showed a reduction in the fresh weight of lettuce plants irrigated with the fish water mixture treatment, along with an increase in sugar concentration. However, the application of Se at 4 and 16 μmol L-1, prompted a relief of this stress, reducing both lipid peroxidation and the sugar content, and increasing the nitrate concentration. In addition, in the case of the highest concentration of Se (16 μmol L-1), the values of nitrate were comparable those control plants. We show the importance of sprayed Se in increasing the efficiency of N utilization, in addition to lessening environmental issues for aquaponics culture.

Abstract
Lamb's lettuce (Valerianella locusta L. Laterr.) is a leafy green vegetable that is rich in various biological active compounds and is widely used in ready-to-eat salads. The cultivation conditions and growth stage could affect the secondary metabolism in plants and thereby modify their food value. In the present study, the effect of selenium (Se) application in various concentrations (5.0, 10.0, and 20.0 µM) on the contents of Se, phenolic compounds, vitamin C, carotenoids, chlorophylls, and antioxidant activity of hydrophilic and lipophilic extracts of lamb's lettuce harvested at three growth stages (38, 52, and 66 days after sowing (DAS)) was studied. Se application significantly increased the Se concentration in the shoots (up to 124.4 μg g-1 dry weight), as well as the contents of chlorogenic acid, total flavonoids, total phenolics, ascorbic acid, chlorophyll b, and the antioxidant activity of hydrophilic and lipophilic extracts. A higher content of phenolic compounds and higher antioxidant activity of hydrophilic extracts was observed at the first growth stage (38 DAS). On the contrary, higher contents of lipophilic compounds (chlorophyll a, chlorophyll b, lutein, β-carotene) and higher antioxidant activity of lipophilic extracts were found for shoots harvested at later stages (52 and 66 DAS).

Abstract
Production of functional food with high levels of selenium (Se) and iodine (I) obtained via plant biofortification shows significant difficulties due to the complex interaction between the two elements. Taking into account the known beneficial effect of silicon (Si) on plant growth and development, single and joint foliar biofortification of chervil plants with potassium iodide (150 mg L-1) and sodium selenate (10 mg L-1) was carried out in a pot experiment with and without Si nanoparticles foliar supplementation. Compared to control plants, nano-Si (14 mg L-1) increased shoot biomass in all treatments: by 4.8 times with Si; by 2.8 times with I + Si; by 5.6 times with Se + Si; by 4.0 times with I + Se + Si. The correspondent increases in root biomass were 4.5, 8.7, 13.3 and 10.0 times, respectively. The growth stimulation effect of Se, I and I + Se treatments resulted in a 2.7, 3.5 and 3.6 times increase for chervil shoots and 1.6, 3.1 and 8.6 times for roots, respectively. Nano-Si improved I biofortification levels by twice, while I and Se enhanced the plant content of each other. All treatments decreased nitrate levels, compared to control, and increased the photopigment accumulation. Improvement of total antioxidant activity and phenolic content was recorded only under the joint application of Se + I + Si. Foliar nano-Si treatment affected other element content in plants: decreased Na+ accumulation in single and joint supplementation with Se and I, restored Fe, Mn and Cr amount compared to the decreased levels recorded in separately Se and I fortified plants and promoted Al accumulation both with or without Se and I biofortification. The results of this research suggest high prospects of foliar nano-Si supply for enhancing both growth and joint I/Se biofortification of chervil.

Abstract
The latest data link the chronic consumption of large amounts of fructose present in food with the generation of hypertension and disturbances in carbohydrate and lipid metabolism, which promote the development of obesity, non-alcoholic fatty liver disease, insulin resistance, and type 2 diabetes. This effect is possible after fructose is absorbed by the small intestine cells and, to a lesser extent, by hepatocytes. Fructose transport is dependent on proteins from the family of glucose transporters (GLUTs), among which GLUT5 selectively absorbs fructose from the intestine. In this study, we examined the effect of four phenolic-rich extracts obtained from A. graveolens, B. juncea, and M. chamomilla on fructose uptake by Caco-2 cells. Extracts from B. juncea and M. chamomilla most effectively reduced fluorescent fructose analogue (NBDF) accumulation in Caco-2, as well as downregulated GLUT5 protein levels. These preparations were able to decrease the mRNA level of genes encoding transcription factors regulating GLUT5 expression-thioredoxin-interacting protein (TXNIP) and carbohydrate-responsive element-binding protein (ChREBP). Active extracts contained large amounts of apigenin and flavonols. The molecular docking simulation suggested that some of identified phenolic constituents can play an important role in the inhibition of GLUT5-mediated fructose transport.

Abstract
The essentiality of selenium (Se) and iodine (I) to human beings and the widespread areas of selenium and iodine deficiency determine the high significance of functional food production with high levels of these elements. In this respect, joint biofortification of agricultural crops with Se and I is especially attractive. Nevertheless, in practice this topic has raised many problems connected with the possible utilization of many Se and I chemical forms, different doses and biofortification methods, and the existence of wide species and varietal differences. The limited reports relevant to this subject and the multiplicity of unsolved questions urge the need for an adequate evaluation of the results obtained up-to-date, useful for developing further future investigations. The present review discusses the outcome of joint plant Se-I biofortification, as well as factors affecting Se and I accumulation in plants, paying special attention to unsolved issues. A particular focus has been given to the prospects of herb sprouts production enriched with Se and I, as well as the interactions between the latter microelements and arbuscular-mycorrhizal fungi (AMF).

Abstract
Agronomic biofortification of crops with selenium (Se) is an important strategy to minimize hidden hunger and increase nutrient intake in poor populations. Selenium is an element that has several physiological and biochemical characteristics, such as the mitigation of different types of abiotic stress. Selenoproteins act as powerful antioxidants in plant metabolism through the glutathione peroxidase (GSH) pathway, and provide an increased activity for enzymatic (SOD, CAT, and APX) and non-enzymatic (ascorbic acid, flavonoids, and tocopherols) compounds that act in reactive oxygen species (ROS) scavenging system and cell detoxification. Selenium helps to inhibit the damage caused by climate changes such as drought, salinity, heavy metals, and extreme temperature. Also, Se regulates antenna complex of photosynthesis, protecting chlorophylls by raising photosynthetic pigments. However, Se concentrations in soils vary widely in the earth's crust. Soil Se availability regulates the uptake, transport, accumulation, and speciation in plants. Foliar Se application at the concentration 50 g ha-1 applied as sodium selenate increases the antioxidant, photosynthetic metabolism, and yield of several crops. Foliar Se application is a strategy to minimize soil adsorption and root accumulation. However, the limit between the beneficial and toxic effects of Se requires research to establish an optimal dose for each plant species under different edaphoclimatic conditions. In this review, we present the compilation of several studies on agronomic biofortification of plants with Se to ensure food production and food security to mitigate hidden hunger and improve the health of the population.

Abstract
Iodine (I) and selenium (Se) are essential to human and animal development. There is a worldwide deficit of I and Se in the diet of humans, as well as in animals. It is advisable to enrich plants with these elements to ensure adequate uptake in animals and humans. The aim of this study was to determine the efficacy of the application of I and Se in the cultivation of carrot crops, to better understand the metabolic pathways and processes of I applied through foliar spray. Carrots were fertilized with 4-fold foliar applications of I and Se, which were applied as the liquid fertilizers "I + Se", "Solo iodine" and "Solo selenium", all containing an organic stabilizer, in two field trials. Foliar nutrient applications of I and Se were translocated by the plant for storage in the roots. The level of enriched I and Se in the roots was considered safe for the consumer. The Recommended Daily Allowance values for I and Se in the roots of 100 g of fresh carrots are 4.16% and 4.37%, respectively. Furthermore, I and Se accumulated in the roots to a level that was physiologically tolerated by carrot. Biofortification through foliar feeding did not impact negatively on the yield or quality of the carrot crop. Iodides applied via foliar application were the dominant form of I in the plant tissues and were included in the metabolic process of the synthesis of iodosalicylates, iodobenzoates, iodotyrosine (I-Tyr), and plant-derived thyroid hormone analogs. No synergistic or antagonistic interaction between I and Se, with respect to the effectiveness of biofortification in roots, was observed in any treatments. The molar ratio of I:Se in the roots after foliar application of both elements was approximately 1.6:1 and was similar to the control (1.35:1).

Abstract
Human iodine (I) shortage disorders are documented as an imperative world-wide health issue for a great number of people. The World Health Organization (WHO) recommends I consumption through ingestion of seafood and biofortified food such as vegetables. The current work was carried out to appraise the effects of different I concentrations (0, 50, 250, and 500 mg L−1), supplied via foliar spray on curly endive grown in the fall or spring–summer season. Head fresh weight, stem diameter, head height, and soluble solid content (SSC) were negatively correlated to I dosage. The highest head dry matter content was recorded in plants supplied with 250 mg I L−1, both in the fall and spring–summer season, and in those cultivated in the fall season and supplied with 50 mg I L−1. The highest ascorbic acid concentration was recorded in plants cultivated in the spring–summer season and biofortified with the highest I dosage. The highest fructose and glucose concentrations in leaf tissues were obtained in plants cultivated in the spring–summer season and treated with 250 mg I L−1. Plants sprayed with 250 mg I L−1 and cultivated in the fall season had the highest I leaf concentration. Overall, our results evidently suggested that an I application of 250 mg L−1 in both growing seasons effectively enhanced plant quality and functional parameters in curly endive plants.

Abstract
Soil depletion with absorbed forms of microelements is a realistic problem leading to the formation of many human, plant, animal diseases related with micronutrient deficiencies. Searching for new ways to solve this problem is a crucial for the agro-chemical approach to food production. There are many research papers on plant micronutrient fertilization. However, there is still a lack of systematic review of the literature, which summarizes the most recent knowledge on biofortification of food of plant origin with microelements. This work is a systematic review which presents the various methodologies and compares the results of the applied doses and types of fertilizer formulation with the yield and micronutrient content of edible parts of plants. The PRISMA protocol-based review of the most recent literature data from the last 5 years (2015-2020) concerns enrichment of plants with selenium and iodine. These elements, in contrast to other microelements (zinc, manganese, iron, copper and others) are given to plants most often in anionic form: selenium - SeO32- and SeO42-, iodine - I- and IO3-, making them a separate subgroup of microelements. The review focuses on original research papers (not reviews), collected in 3 popular scientific databases: Scopus, Web of Knowledge, PubMed. This study shows how to effectively cope with hidden hunger taking into account the significance of optimized fertilization. Based on the collected data, the best method of micronutrients administration an integrated fortification strategy for selected trace elements and prospects in research/action development was proposed. It was found that the best way to enrich plants with selenium is foliar fertilization with Se(VI), in increased doses. The effectiveness of fortification is supported by the balanced nutrients fertilization, the presence of microorganisms and selection of plant varieties. Foliar fertilization, in increased doses with iodide (I-) is in turn an effective way to enrich plants with iodine.

Abstract
The interactions between the uptake of selenium (as selenite and selenate) and iodine (as iodate and iodide) by red chicory (Cichorium intybus L. var. foliosum Hegi) and their effects on selected morphological and physiological characteristics were investigated. Seedlings were transplanted to the field, and at the onset of head formation, the plants were foliar-sprayed with the following solutions: Milli-Q water (control), Se (IV), Se (VI), I (-I), I (V), Se (IV) + I (-I), Se (IV) + I (V), Se (VI) + I (-I) and Se (VI) + I (V). The different treatments had no significant effects on the yield (39.8-51.5 t ha-1) and mass (970-1200 g) of the chicory heads. The selenium content in Se-treated plants was up to 5.5-times greater than the control plants. The iodine content in the chicory leaves enriched with I was 3.5-times greater than the control plants. Iodide or iodate, applied together with selenite in the spray solution, increased the uptake of Se by chicory plants, while both forms of iodine, applied together with selenate, reduced the uptake of Se. Plants treated with I (V) had lower amounts of chlorophyll a and carotenoids than the control, while respiratory potential was higher than the control, which indicated the possible presence of stress in I (V)-treated plants. However, the potential photochemical efficiency of photosystem II was similar and close to the theoretical maximum (0.83) in the control and treated groups, which indicated that all of the plants were in good condition. Furthermore, the plant mass and yield were comparable in the control and treated groups. Molecular studies, like gene expression analysis, would represent a major upgrade of the present study by defining the mechanisms of Se and I uptake and their interactions and by enhancing the knowledge of the Se and I transporters.

Abstract
Selenium (Se) is a widely distributed trace element with dual (beneficial or toxic) effects for humans, animals, and plants. The availability of Se in the soil is reliant on the structure of the parental material and the procedures succeeding to soil formation. Anthropogenic activities affect the content of Se in the environment. Although plants are the core source of Se in animal and human diet, the role of Se in plants is still debatable. A low concentration of Se can be beneficial for plant growth, development, and ecophysiology both under optimum and unfavorable environmental conditions. However, excess Se results in toxic effects, especially in Se sensitive plants, due to changing structure and function of proteins and induce oxidative/nitrosative stress, which disrupts several metabolic processes. Contrary, Se hyperaccumulators absorb and tolerate exceedingly large amounts of Se, could be potentially used to remediate, i.e., remove, transfer, stabilize, and/or detoxify Se-contaminants in the soil and groundwater. Thereby, Se-hyperaccumulators can play a dynamic role in overcoming global problem Se-inadequacy and toxicity. However, the knowledge of Se uptake and metabolism is essential for the effective phytoremediation to remove this element. Moreover, selecting the most efficient species accumulating Se is crucial for successful phytoremediation of a particular Se-contaminated area. This review emphasizes Se toxicity in plants and the environment with regards to Se biogeochemistry and phytoremediation aspects. This review follows a critical approach and stimulates thought for future research avenues.

Abstract
Selenium (Se) is a widely distributed trace element with dual (beneficial or toxic) effects for humans, animals, and plants. The availability of Se in the soil is reliant on the structure of the parental material and the procedures succeeding to soil formation. Anthropogenic activities affect the content of Se in the environment. Although plants are the core source of Se in animal and human diet, the role of Se in plants is still debatable. A low concentration of Se can be beneficial for plant growth, development, and ecophysiology both under optimum and unfavorable environmental conditions. However, excess Se results in toxic effects, especially in Se sensitive plants, due to changing structure and function of proteins and induce oxidative/nitrosative stress, which disrupts several metabolic processes. Contrary, Se hyperaccumulators absorb and tolerate exceedingly large amounts of Se, could be potentially used to remediate, i.e., remove, transfer, stabilize, and/or detoxify Se-contaminants in the soil and groundwater. Abstract
The elements selenium (Se) and iodine (I) are both crucial for the normal functioning of the thyroid. Biofortification with these elements is particularly feasible in areas where they show a deficit. Iodine and selenium can have positive effects on different plants when applied at the correct concentrations. The effects of their simultaneous addition on plant physiology and biochemistry, as well as on seed germination and sprout biomass, were studied in pumpkin (Cucurbita pepo L. ssp. pepo). To study the effect of Se and I on sprouts, sprouts were grown from seeds soaked in solutions of different forms of Se, I and their combination in the growth chamber experiment. In the field experiment, pumpkins plants were foliarly treated with the same concentrations and forms of Se and I. The combination of Se and I treatments enhanced the germination of the soaked seeds, with no significant differences between Se and I treatments for sprout mass. The yield of pumpkins and seed production were unaffected by Se and I foliar application. The anthocyanin levels and respiratory potential measured via the electron transport system's activity showed different patterns according to treatments and plant parts (sprouts, leaves, seeds). The redistribution of Se and I from seeds to sprouts was significant. The accumulation of Se was higher in sprouts from the seeds treated with Se together with I, compared to sprouts from the seeds treated with Se alone. Interactions between Se and I were also noted in the seeds, which developed in the treated plants.

Abstract
The essentiality of selenium (Se) and iodine (I) for the human organism and the relationship between these two trace elements in mammal metabolism highlight the importance of the joint Se–I biofortification to vegetable crops in the frame of sustainable farming management. A research study was carried out in southern Italy to determine the effects of the combined inoculation with arbuscular mycorrhizal fungi (AMF) and biofortification with Se and I on plant growth, seed yield, quality, and antioxidant and elemental status, as well as residual biomass chemical composition of chickpea grown in two different planting times (14 January and 28 February). The AMF application improved the intensity of I and Se accumulation both in single and joint supply of these elements, resulting in higher seed yield and number as well as dry weight, and was also beneficial for increasing the content of antioxidants, protein, and macro- and microelements. Earlier planting time resulted in higher values of seed yield, as well as Se, I, N, P, Ca, protein, and antioxidant levels. Se and I showed a synergistic effect, stimulating the accumulation of each other in chickpea seeds. The AMF inoculation elicited a higher protein and cellulose synthesis, as well as glucose production in the residual biomass, compared to the single iodine application and the untreated control. From the present research, it can be inferred that the plant biostimulation through the soil inoculation with AMF and the biofortification with Se and I, applied singly or jointly, proved to be effective sustainable farming tools for improving the chickpea seed yield and/or quality, as well as the residual biomass chemical composition for energy production or beneficial metabolite extraction.

Abstract
Biofortification of garlic and onion plants with selenium and arbuscular mycorrhizal fungi inoculation are considered beneficial for producing functional food with anticarcinogenic properties. The effects of arbuscular mycorrhizal fungi (AMF) inoculation, sodium selenate foliar application, and the combination AMF + selenium (Se), compared to an untreated control, were assessed regarding the bulb yield, biochemical characteristics, and mineral composition. AMF + Se application resulted in the highest yield, monosaccharides, and Se content in both garlic and onion bulbs; and an increase of ascorbic acid and flavonoids in onion, and flavonoids in garlic. The highest bulb concentrations of P and K were recorded under the AMF + Se application, Ca was best affected by AMF, and Mg accumulation was highest under all the treatments in garlic and upon AMF + Se application in onion bulbs. Contrary to garlic, onion bulbs were characterized by a remarkable increase in microelements (B, Cu, Fe, Mn, Si, Zn) under the AMF + Se treatment. Selenium, either with or without AMF application, promoted the accumulation of B and Si in onion and Mo and Zn in garlic bulbs. It can be inferred that the interaction between AMF and Se is highly specific, differing for garlic and onion grown in similar environmental conditions in Grozny region, Chechen Republic.

Abstract
BACKGROUND Selenium (Se) is an essential element for mammals and its deficiency in the diet is a global problem. Plants accumulate Se and thus represent a major source of Se to consumers. Agronomic biofortification intends to enrich crops with Se in order to secure its adequate supply by people. SCOPE The goal of this review is to report the present knowledge of the distribution and processes of Se in soil and at the plant-soil interface, and of Se behaviour inside the plant in terms of biofortification. It aims to unravel the Se metabolic pathways that affect the nutritional value of edible plant products, various Se biofortification strategies in challenging environments, as well as the impact of Se-enriched food on human health. CONCLUSIONS Agronomic biofortification and breeding are prevalent strategies for battling Se deficiency. Future research addresses nanosized Se biofortification, crop enrichment with multiple micronutrients, microbial-integrated agronomic biofortification, and optimization of Se biofortification in adverse conditions. Biofortified food of superior nutritional quality may be created, enriched with healthy Se-compounds, as well as several other valuable phytochemicals. Whether such a food source might be used as nutritional intervention for recently emerged coronavirus infections is a relevant question that deserves investigation.

Abstract
Poor seed germination is a crucial yield-limiting factor when winter wheat is sown under low temperature. The objective of this study was to evaluate the role of ascorbic acid (AsA) in the extenuation of the harmful effects of low temperature at early and reproductive stages of wheat during 2016–2017 (15 November to 15 December). A two-year experiment was conducted using a randomized complete block design with split plot arrangement and with three replicates. Sowing dates (15 November and 15 December) were allotted to the main plot while seed priming (control, hydro-priming, and AsA priming) were allotted to the sub-plot. Results demonstrated that AsA priming significantly boosted different yield characteristics including chlorophyll content, tillers per unit area, number of grains per spike, and 1000-grain weight, contributing higher productivity and biomass during 2016–2017. The results further revealed that AsA could induce the up-regulation of diverse antioxidants (super oxide dismutase (SOD), peroxidase (POD), and catalase (CAT)), thus offsetting the adverse effects of sub-supra optimum temperatures of late sowing wheat. It is therefore concluded in this work that AsA priming enhances stand establishment, yield and yield-related traits, antioxidant enzyme activities, and chlorophyll contents when wheat is sown under low temperature.

Abstract
Sea fennel is an herbaceous aromatic and edible halophyte, naturally occurring in coastal areas of the Mediterranean basin. Besides its scientific interest as a salt-tolerant species it exhibits considerable nutritional value and economical potential. As sea fennel is distributed in maritime areas, where natural iodine is available in high concentrations, the aim of this study was to evaluate whether sea fennel has the potential to accumulate elevated iodine concentrations under cultivation. A biofortification experiment in a hydroponic system applying two forms of iodine, KI and KIO3 in different concentrations was set up and monitored using sophisticated targeted elementary and metabolite analysis. The biofortification potential and possible effects on nutritional value were investigated. This study revealed that both iodine forms increased the iodine content of sea fennel tissues. Nutritional and health promoting components, biomass production but also antioxidant potential were stable or even improved under the iodine treatments.

Abstract
Selenium (Se) and zinc (Zn) are necessary mineral nutrients for human body but millions of people have an inadequate intake of them, and eat food enriched with Se and Zn may minimize these problems. Chinese cabbage is an important food in people's daily life. The aim of this study was to evaluate the effects of single Se, Zn and their combination treatment in soil on their accumulation, antioxidant system and lipid peroxidation in roots and leaves of Chinese cabbage using soil pot culture experiment. When 0.5 mg kg-1 Se +30 mg kg-1 Zn and 1.0 mg kg-1 Se +30 mg kg-1 Zn were spiked in soils, Zn concentrations in roots and leaves of Chinese cabbage were significantly increased (p < 0.05) by 20.2%, 37.8% and 17.9%, 34.1% respectively compared to the treatment of 30 mg kg-1 Zn added, and the latter was significantly higher (p < 0.05) than that of former, indicating Se significantly promoted Zn accumulation. Almost all physiological indexes including POD, SOD, CAT, APX, GR, Chlorophyll a, Chlorophyll b, Carotenoids, MDA and Free proline in the treatments of Se or Zn spiked were significantly improved (p < 0.05) or basically unaffected compared to the control without Se or Zn added. The biomass change trends were similar with these indexes either. These results showed that the addition in soil of Se and Zn significantly increased their accumulation in Chinese cabbage without affected its formal growth. Particularly, the addition of Se promoted Zn accumulation. The conclusions were more important reference for the production practice of cash crop enriched of Se and Zn either.

Abstract
Research was carried out on onion landrace (Ramata di Montoro) for seed production in southern Italy, with the aim to evaluate the effects on yield and quality of four bulb planting times in factorial combination with four densities, using a split plot design with three replicates. The number of flower stalks per plant, their height and diameter, and the inflorescence diameter decreased with the bulb planting delay and density increase. The highest plant leaf area and LAI (leaf area index), seed yield, number, and mean weight were recorded with the earliest planting time, with the lowest bulb density eliciting the highest plant leaf area but the lowest LAI and seed yield per hectare. The ratio between seeds and inflorescence weight, and seed germinability, decreased with the planting delay and density increase. Seed oil, protein, and antioxidant content (polyphenols and selenium) were highest with the last crop cycle. The polyunsaturated fatty acids, predominant in oil, increased with planting time delay, whereas the monounsaturated fatty acids decreased. Linoleic, oleic, and palmitic acid prevailed among polyunsaturated, monounsaturated, and saturated fatty acids, respectively. Planting from 20 December to 10 January with 3.3 cold-stored bulbs per m2 was the most effective combination in terms of seed yield per hectare, whereas seed oil content and quality were the best, with the last crop cycle starting on 21 February, independent of bulb density.

Abstract
The aim of the study was to evaluate the antioxidant activity of selenium in the roots of Cucumis sativus L. seedlings pre-treated with selenium (Se) in the form of sodium selenite at concentrations of 1, 5, and 10 µM, and then subjected to a water deficit (WD). It has been hypothesized that Se, in low concentrations, alleviates an oxidative stress caused by a WD in the cucumber roots. A WD was introduced by the surface dehydration of roots. The aim of the research was to compare the changes accompanying oxidative stress in plants growing in the presence of Se and in its absence. The study concerns the generation of reactive oxygen species (ROS)—superoxide anions (O2•−), hydrogen peroxide (H2O2), and hydroxyl radicals (•OH)—as well the activities of the antioxidant enzymes lowering the ROS level—ascorbate peroxidase (APX), peroxidase (POX), catalase (CAT), and superoxide dismutase (SOD). A WD caused oxidative stress, i.e., the enhanced generation of ROS. Selenium at the concentrations of 1 and 5 μM increased the tolerance of cucumber seedlings to oxidative stress caused by a WD by increasing the activities of the antioxidant enzymes, and it also limited the damage of plasma membranes as a result of the inhibition of lipid peroxidation.

Abstract
Microgreens constitute an emerging class of fresh, healthy foods due to their nutritional composition. In this study the content of minerals and antioxidant bioactive compounds, and for the first time bioaccessibility, were evaluated in broccoli (Brassica oleracea L. var. italica Plenck), green curly kale (Brassica oleracea var. sabellica L.), red mustard (Brassica juncea (L.) Czern.) and radish (Raphanus sativus L.) hydroponic microgreens. Macro- (K, Ca, Mg) and oligo-elements (Fe, Zn), ascorbic acid, total soluble polyphenols, total carotenoids, total anthocyanins, total isothiocyanates and total antioxidant capacity (Trolox Equivalent Antioxidant Capacity and Oxygen Radical Absorbance Capacity) were determined before and after the standardized simulated gastrointestinal digestion process. All microgreens provided relevant amounts of vitamin C (31-56 mg/100 g fresh weight) and total carotenoids (162-224 mg β-carotene/100 g dry weight). Mineral content was comparable to that normally found in hydroponic microgreens and the low potassium levels observed would allow their dietetic recommendation for patients with impaired kidney function. Both total soluble polyphenols and total isothiocyanates were the greatest contributors to the total antioxidant capacity after digestion (43-70% and 31-63% bioaccessibility, respectively) while macroelements showed an important bioaccessibility (34-90%). In general, radish and mustard presented the highest bioaccessibility of bioactive compounds and minerals. Overall, the four hydroponic Brassicaceae microgreens present a wide array of antioxidant bioactive compounds.

Abstract
Plant biofortification with selenium in interaction with the application of an arbuscular mycorrhizal fungi (AMF)-based formulate, with the goal of enhancing Se bioavailability, is beneficial for the development of the environmentally friendly production of functional food with a high content of this microelement. Research was carried out in order to assess the effects of an AMF-based formulate and a non-inoculated control in factorial combination with two selenium treatments with an organic (selenocystine) or inorganic form (sodium selenate) and a non-treated control on the yield, quality, antioxidant properties, and elemental composition of shallot (Allium cepa L. Aggregatum group). Selenocystine showed the best effect on the growth and yield of mycorrhized plants, whereas sodium selenate was the most effective on the non-inoculated plants. The soluble solids, total sugars, monosaccharides, titratable acidity, and proteins attained higher values upon AMF inoculation. Sodium selenate resulted in higher soluble solids, total sugars and monosaccharide content, and titratable acidity than the non-treated control, and it also resulted in higher monosaccharides when compared to selenocystine; the latter showed higher protein content than the control. Calcium, Na, S, and Cl bulb concentrations were higher in the plants inoculated with the beneficial microorganisms. Calcium and sodium concentrations were higher in the bulbs of plants treated with both the selenium forms than in the control. Selenocystine-treated plants showed enhanced accumulation of sulfur and chlorine compared to the untreated plants. The AMF inoculation increased the bulb selenium content by 530%, and the Se biofortification with selenocystine and sodium selenate increased this value by 36% and 21%, respectively, compared to control plants. The AMF-based formulate led to increases in ascorbic acid and antioxidant activity when compared to the non-inoculated control. The bulb ascorbic acid was increased by fortification with both selenium forms when compared to the non-treated control. The results of our investigation showed that both AMF and selenium application represent environmentally friendly strategies to enhance the overall yield and quality performances of shallot bulbs, as well as their selenium content.
