Abstract
This study aimed to assess the efficacy of a multi-hurdle process combining mild High Hydrostatic Pressure (HHP) treatments and Thyme Oil (TO) edible films as a non-thermal method to combat pathogenic E. coli (aEPEC and STEC) in raw cow's-milk cheese stored at 7 °C and packaged under modified atmosphere. Changes in headspace atmosphere of cheese packs and treatment effects on Lactic Acid Bacteria (LAB) counts and diarrheagenic E. coli strains (aEPEC and STEC) were evaluated over a 28 d storage period. The results demonstrated that the combined treatment exhibited the most significant antimicrobial effect against both strains compared to individual treatments, achieving reductions of 4.30 and 4.80 log cfu/g after 28 d of storage for aEPEC and STEC, respectively. Notably, the synergistic effect of the combination treatment resulted in the complete inactivation of intact cells for STEC and nearly completed inactivation for aEPEC by the end of the storage period. These findings suggest that the combination of HHP with selected hurdles could effectively enhance microbial inactivation capacity, offering promising alternatives for improving cheese safety without affecting the starter microbiota.

Abstract
Most of the Escherichia coli turned into serious pathogens or developed antibiotic resistance, mainly due to their ability to show different phenotypic traits. In order to overcome the resistance to these antibiotics, the use of essential oils (EOs) is of great significance against highly pathogenic microorganisms. This study has been made to compare the in vitro antibacterial activity and further validated the same through the molecular docking study of 13 antibiotics such as ciprofloxacin, chloramphenicol, erythromycin, ampicillin, cefotaxime, rifampicin, kanamycin, vancomycin, streptomycin, penicillin, nalidixic acid, trimethoprim, and polymyxin, and 10 EOs such as garlic, tulsi, neem, clove, thyme, peppermint, coriander, tea, lavender, and eucalyptus against the target protein (DNA gyrase) of E. coli MTCC443. E. coli Microbial Type Culture Collection 443 was found to be highly sensitive to ciprofloxacin (zone of inhibition [ZOI], 2.5 cm ±0.1) and chloramphenicol (ZOI, 1.8 cm ±0.1), whereas garlic oil (ZOI, 5.5 cm ±0.1) and coriander oil (ZOI, 4.4 cm ±0.1) were found comparatively most effective. Further, the in silico investigation observed the same; ciprofloxacin (binding affinity: -7.2 kcal/mol) and chloramphenicol (binding affinity: -6.6 kcal/mol). Penicillin (binding affinity: -4.2 kcal/mol) and polymyxin (binding affinity: -0.3 kcal/mol) were found to be least effective against the tested microbe, whereas vancomycin (binding affinity: +0.8 kcal/mol) had no effect on it. Garlic (binding affinity: -7.8 kcal/mol), coriander (binding affinity: -6.8 kcal/mol), peppermint (binding affinity: -6.2 kcal/mol), and neem (binding affinity: -6.2 kcal/mol) oil exhibited the potent antibacterial activity against E. coli MTCC443, whereas thyme (binding affinity: -6.1 kcal/mol), tea tree (binding affinity: -4.9 kcal/mol), and tulsi (binding affinity: -3.8 kcal/mol) oil were observed moderately effective. Eucalyptus (binding affinity: -2.9 kcal/mol) and lavender (binding affinity: -2.8 kcal/mol) oil were found to be the least effective among all the oils tested. The pharmacokinetics and networking were performed to the pharmacology of the potential compounds.

Abstract
The present experiment was conducted to investigate the effects of F. subpinnata powder (FSP) on the performance, carcass characteristics, blood parameters, immune system, microbial population, intestinal morphology, and percentage of fatty acids in the breast meat of broiler chickens. A total of 300 day-old male chickens from the ROSS 308 strain were used in the form of a completely random design with four treatments of five replicates (15 birds each). The experimental treatments were, respectively, (1) control with base diet (without additives), (2) base diet + 1% FSP, (3) base diet + 2% FSP, and (4) base diet + 3% FSP. The results showed that the feed intake and weight gain increased in the treatments containing 2% and 3% FSP when compared to the control (P < 0.05). Cholesterol and ALT levels in the treatment containing 3% FSP were lower that the control (P < 0.05), while the concentration of glutathione peroxidase enzyme in the treatment containing 3% FSP significantly increased (P < 0.05). Thymus weight and antibodies produced against AIV in all three levels of FSP increased significantly compared to the control (P < 0.05). The population of lactobacilli and coliforms in the treatments containing FSP increased and decreased significantly compared to the control (P < 0.05). The length and width of the intestinal villi of the chickens that were fed with 3% of FSP had a significant increase compared to the control (P < 0.05). The percentage of saturated fatty acids in the breast decreased significantly with the consumption of all three levels of FSP (P < 0.001). In general, the results showed that the use of 3% FSP in the broiler diet increased the efficiency of growth performance and enzyme activity, while strengthening the immune system, favorably altering the intestinal microbial population, and reducing the fat in breast meat.

Abstract
The objective of this research was to assess the effectiveness of three specific dried herbs (rosemary, thyme, and oregano) in combating microbial spoilage in sheep lump cheese. This was achieved by comparing them with a control group and cheeses treated with corresponding 1% essential oils (Rosmarinus officinalis, Origanum vulgare, Thymus vulgaris). All cheese samples were vacuum-sealed and stored at 4 °C for 15 days. Analysis of total viable counts of viable bacteria (TVC), coliform bacteria (CB), lactic acid bacteria (LAB), and microscopic filamentous fungi (MFF) was conducted on days 0, 5, 10, and 15. The results revealed that, at the end of the storage period, dried oregano-treated samples exhibited the lowest TVC count (5.80 log CFU/g), while dried rosemary-treated samples showed the lowest CB count (3.27 log CFU/g). Moreover, the lowest MFF count (2.40 log CFU/g) was observed in oregano essential oil-treated samples. Additionally, dried oregano-treated samples displayed the highest LAB count (4.49 log CFU/g) at the experiment's conclusion. Furthermore, microorganism identification from sheep cheese was performed using MALDI-TOF MS Biotyper technology, revealing that the most frequently isolated bacteria were Citrobacter braakii and Hafnia alvei (Enterobacteriaceae family), along with Lacticaseibacillus paracasei (Lactobacillaceae family). In summary, all the natural substances examined exhibited inhibitory effects against the studied microorganisms, with oregano essential oil and dried oregano demonstrating the strongest inhibitory effects. This supports their potential use as cost-effective natural preservatives to extend the shelf life of sheep lump cheese.

Abstract
Cheddar cheese-derived bioactive peptides are considered a potential component of functional foods. A positive impact of bioactive peptides on diet-related chronic, non-communicable diseases, like obesity, cardiovascular diseases, and diabetes, has been observed. Bioactive peptides possess multifunctional therapeutic potentials, including antimicrobial, immunomodulatory, antioxidant, enzyme inhibitory effects, anti-thrombotic, and phyto-pathological activities against various toxic compounds. Peptides can regulate human immune, gastrointestinal, hormonal, and neurological responses, which play an integral role in the deterrence and treatment of certain diseases like cancer, osteoporosis, hypertension, and other health disorders, as described in the present review. This review summarizes the categories of the Cheddar cheese-derived bioactive peptides, their general characteristics, physiological functions, and possible applications in healthcare.

Abstract
Ursolic acid (UA) is a plant-derived molecule with relevant anti-aging activity, which makes this molecule a potential functional active ingredient in cosmetic formulations. The main objectives of this study were to optimize the UA extraction process from Annurca apple (AA) with sunflower oil as a lyophilic food-grade solvent using Response Surface Methodology (RSM) to determine the potential cosmetic application of the obtained extract. The results of RSM analysis showed a maximum UA yield of 784.40 ± 7.579 (μg/mL) obtained under the following optimized conditions: sunflower oil as extraction solvent, 68.85 °C as extraction temperature, and 63 h as extraction time. The HPLC-DAD-HESI-MS/MS analysis performed on the extract obtained under these conditions, named Optimized Annurca Apple Oleolyte (OAAO), led to the identification of twenty-three phenolic and terpenoid molecules and the quantification of eight of them. To explore the biological properties of OAAO, the in vitro antioxidant activity was evaluated by DPPH, ABTS, and FRAP assays, resulting in 16.63 ± 0.22, 5.90 ± 0.49, and 21.72 ± 0.68 μmol Trolox equivalent/g extract, respectively. Moreover, the permeation study has shown that OAAO may be considered a safe and functional ingredient in potential cosmetic formulations.

Abstract
Aims This work examines the available scientific evidence about the efficiency of essential oils (EO) as an alternative therapy to traditional treatment of fungal infections, including onychomycosis, assessing the effect of the three EO most frequently studied for their antifungal activity (thyme, cinnamon and tea tree EO) against three causative agents of fungal diseases in humans: Trichophyton rubrum, Trichophyton mentagrophytes complex and Candida albicans. Methods and Results The PRISMA statement protocol was followed to conduct a bibliographical search and 54 articles that met all the inclusion criteria were retrieved. Differences were observed in the MIC and MFC values depending on the micro‐organism strain and the EO used. The lowest MIC were observed with Cinnamomum zeylanicum EO (0.013–1120 μl ml−1) against the three micro‐organisms. For MFC, the lowest value was found for Thymus vulgaris EO (4.2 μl ml−1) against Trichophyton rubrum. Conclusions The antifungal effects of EO could be a very promising solution to overcome the therapeutic shortcomings of antimycotic medication. More experiments are needed to examine the properties of these oils to devise effective and nonaggressive therapies for treatment of dermatophytosis. Significance and Impact of Study The results indicate that EO remain good candidates for future treatments and could provide a solution for failed medications and/or adverse reactions to current pharmacological treatments.

Abstract
This experiment was performed to evaluate the effects of selected natural feed additives (thyme extract, organic acid, probiotic, and prebiotic) on performance, intestinal morphology, and composition of fecal nutrients with two crude protein levels diet (10% reduced crude protein level and the recommended level) in broilers. In this experiment, 388 Ross-308 strain broilers from 1 to 42 days in three experimental periods including starter (1 to 10 days), grower (11 to 24 days), and finisher (25 to 42 days) were used in a completely randomized design (8 treatments, 4 replicates, and 12 chickens in 5 × 2 factorial arrangements). According to the results, use of feed additives along with both levels of crude protein had significant effects on performance, intestinal morphology, and fecal nutrient levels (P < 0.05). A 10% decrease in crude protein level of diet caused to decrease in daily weight gain and an increase in feed conversion ratio in the starting period (P < 0.05). Decreased dietary crude protein levels in growing and finishing period had insignificant effects on chicken's performance (P > 0.05). During the experiment period, the use of feed additives on diets with lower than normal crude protein levels had no effect on the average feed intake, daily weight gain, and feed conversion ratio of chickens (P > 0.05). Lower crude protein level changed the intestinal morphology (P < 0.05). The use of feed additives had significant effects on the nutrient content of feces (P < 0.05). Overall, results showed that a 10% reduction in crude protein level of diet compared to normal crude protein levels changed the intestinal morphology and nutrient content of feces while having adverse effects on the performance of chickens.

The present study evaluates the concentration of potentially toxic elements (PTEs), including Pb, Cd, As, Fe, Zn, Cu, and Ni, in vegetable oils through a meta-analytic approach. The published studies in relation to the concentrations of PTEs in vegetable oils were retrieved from major international databases such as PubMed, Scopus, Web of Science, and Embase followed by meta-analysis. Moreover, the health risk assessment was evaluated using total target hazard quotient (TTHQ) by a Monte Carlo simulation (MCS) model. According to the results of 51 articles included among 958 retrieved studies, the concentrations of the PTEs were as follows: Cd ≈As (0.110 mg/kg) > Pb (0.086 mg/kg) in cottonseed, canola, and olive oil and Fe (12.964 mg/kg) > Zn (1.044 mg/kg) > Ni (0.893 mg/kg) > Cu (0.264 mg/kg) in cottonseed, olive, and soybean for trace elementals, respectively. Based on the continent type, the higher concentration of Cd, As, and Pb was related to PAHO (American region) and AFRO (African region), and the higher concentrations of Fe, Zn, Cu, and Ni were observed in WPRO (Western Pacific Region), EMRO (Eastern Mediterranean Region), and AFRO. On the other hand, non-carcinogenic health risk assessment of the PTEs indicated that there was a different risk pattern in various countries, and the TTHQ level in adult groups was lower than 1. It can be concluded that the consumption of vegetable oils is safe and does not pose risk to the health of consumers.

Abstract
The novel coronavirus infection is also called COVID-19 (coronavirus disease 2019). The infection has affected millions of people worldwide and caused morbidity as well mortality in patients with pre-existing chronic conditions such as metabolic, respiratory and cardiovascular disorders. The severity of the disease is mostly seen in people with low immunity and chronic sufferers of respiratory, cardiovascular and metabolic disorders. To date, there is no specific treatment available for COVID-19. Precaution and prevention are the most recommended options followed for controlling the spread of infection. Trace elements such as zinc, calcium, iron and magnesium play an important role in boosting the immunity of the host system. These components assist in the development and functioning of lymphocytes, cytokines, free radicals, inflammatory mediators and endothelial functioning. This review summarizes the common dietary supplements that are regularly consumed in Saudi Arabia and are known to contain these vital trace elements. Data available in Google Scholar, NCBI, PUBMED, EMBASE and Web of Science about COVID-19, micronutrients, trace elements and nutritional supplements of Saudi Arabia was collected. By highlighting the traditionally used dietary components containing the essential elements, this review could provide useful knowledge crucial for building immunity in the population.

Abstract
Chrysanthemum is one of the most consumed and most valuable cut flowers worldwide. In this study, the effectiveness of three concentrations of either thyme oil (300,400 and 500 mg/l) or clove oil (150,250 and 500 mg/l) as additives in holding the postharvest solutions of chrysanthemum ‘‘Arctic Queen White’’ cut flowers were investigated. The experiments were carried out as a completely randomized design in three replicates. Many postharvest characteristics have been evaluated, such as the vase life of cut flowers, diameters of head flowers and stem, dry matter of flowers, total vase water uptake, total loss of water, relative fresh weight. Additionally, the chlorophyll contents, total sugar, and bacterial counts were determined. The results showed that the longest vase life of cut chrysanthemum was 36.50, 33.40 days, and 35.88, 31.33 days by addition of either the thyme oil (500 mg/l) or clove oil (250 mg/l) in holding solution as compared with distilled water (18.09 and 17.22 days) in both seasons. The highest total vase water uptake and relative fresh weight were (225.00, 211.05 g/flower/day) and (79.89, 70.37 %) of cut chrysanthemum treated with 500 mg/l thyme oil in both seasons. Whereas the lowest total water loss in the two seasons was 155.11 and 156.60 g/flower/day was found with 400 mg/l thyme oil. The greatest chlorophyll a, b, carotenoids, and total sugar contents obtained from treated cut chrysanthemum with 500 mg/l thyme oil (6.89, 2.37, 5.99 mg/g, and 0.88 mg/gm D.W, respectively). Furthermore, the treatment of cut flowers with selected oils has significantly decreased the bacterial growth compared to the control. Whereas the minimum bacterial activities were <1 C.F.U/ml with cut chrysanthemum fortified with 500 mg/l thyme and clove oils. Moreover, the superlative treatments with thyme (500 mg/l) and clove (250 mg/l) showed a prime state of xylem vessels comparable with the control.thus, the usage (addition) of thyme and clove oils as a natural preservative in holding solutions instead of chemicals would be of great economic and environmental impact (Values).

Abstract
This study investigated the effect of potato peel extract (PPE), orally administrated to rabbits, on serum blood metabolites and ameliorating oxidative stress induced by cold stress under Egyptian winter conditions. Twenty-four bucks grouped into three treatments (8 animals per group) were used for the experiment. The animals received 1.5 ml of water orally, containing 0 (PPE0), 25 (PPE25) or 50 (PPE50) mg PPE/kg live weight. Bucks were randomly assigned into three homogenous equal groups according to the level of PPE. Treatments were applied to each animal every two days over a period of three months including one month as an adaptation period. At the 8th week of the experiment, blood samples were collected from each buck and at the end of the experiment, bucks were slaughtered, and some organs were collected and weighed. The PPE improved (p < 0.05) blood total protein, albumin, globulin and glucose. The blood concentration of total lipid, cholesterol, triglyceride, low density lipoprotein and very low-density lipoprotein (were increased (p < 0.02) in PPE rabbits. Furthermore, PPE extract doses decreased (p < 0.001) oxidant thiobarbituric reactive substance (TBARS) in both blood and liver. Other liver and blood antioxidant system enzymes such as catalase, glutathione peroxidase, and superoxide dismutase were improved (p < 0.005) by PPE supplementation. Overall, oral administration of PPE up to 50 mg/kg live weight can have positive effects on rabbit health under cold stress.

Abstract
Thyme (Thymus spp.) volatiles predominantly consisting of monoterpenes and sesquiterpenes, serve as antimicrobial, antiseptic and antioxidant in phytomedicine. They also play a key role in plants as secondary metabolites via their potential role against herbivores, attracting pollinators and abiotic stress tolerance. Plant volatiles are affected by different environmental factors including drought. Here, the effect of prolonged water deficit stress on volatile composition was studied on the sensitive and tolerant thyme plant cultivars (T. vulgaris Var. Wagner and T. vulgaris Var. Varico3, respectively). Volatile sampling along with morpho–physiological parameters such as soil moisture, water potential, shoot dry weight, photosynthetic rate and water content measurements were performed on one-month-old plants subsequent to water withholding at 4-day intervals until the plants wilted. The tolerant and sensitive plants had clearly different responses at physiological and volatile levels. The most stress-induced changes on the plants’ physiological traits occurred in the photosynthetic rates, where the tolerant plants maintained their photosynthesis similar to the control ones until the 8th day of the drought stress period. While the analysis of the volatile compounds (VOCs) of the sensitive thyme plants displayed the same pattern for almost all of them, in the tolerant plants, the comparison of the pattern of changes in the tolerant plants revealed that the changes could be classified into three separate groups. Our experimental and theoretical studies totally revealed that the most determinant compounds involved in drought stress adaptation included α-phellandrene, O-cymene, γ-terpinene and β-caryophyelene. Overall, it can be concluded that in the sensitive plants trade-off between growth and defense, the tolerant ones simultaneously activate their stress response mechanism and continue their growth.

Abstract
This study was conducted to evaluate the effect of Zingiber officinale and Thymus vulgaris aqueous extracts as a natural antioxidant on liver and kidney functions and antioxidant status of growing rabbits. A total of 24 V-line male rabbits, 3 months old, 1.465 ± 0.12 kg average body weight (BW) were used in a complete randomized design. The rabbits were weighed individually and assigned randomly to four groups (6 animals/each). The first group (G1) was taken fresh water and served as control, rabbits of the second group (G2) were taken 100 mg/kg BW in drinking water of the Z. officinale aqueous extract daily. The third group (G3) was taken 50 mg/kg BW in drinking water of the T. vulgaris aqueous extract daily and the fourth group (G4) was taken 100 mg/kg BW of the Z. officinale aqueous extract plus 50 mg/kg BW of the T. vulgaris aqueous extract in drinking water daily. The oral administration of ginger and/or thyme aqueous extracts increased (p < .001) serum protein profile compared with control group. Moreover, results of group 2 showed significant (p < .001) decrease in cholesterol, triglyceride and very low-density lipoprotein cholesterol compared with group 3 and 4. Serum urea, uric acid and creatinine levels were significantly (p < .001) decreased in treated groups compared with control group. Oral administration of ginger and/or thyme aqueous extracts to growing rabbits increased (p < .001) total antioxidant capacity and glutathione content and the activity of superoxide dismutase, catalase and glutathione-S-transferase compared with the control group. In conclusion, the current study showed that oral administration of ginger and thyme aqueous extracts to growing rabbits showed no adverse effects on liver and kidney function parameters, histological structures and improved antioxidant status.

Abstract
Diabetes mellitus (DM) is a chronic, lifelong condition threatening human health. Rosmarinus officinalis oil (RO) could have a future role in DM therapy. This study evaluated the composition and antioxidative potential of RO. Antidiabetic traits of RO in streptozotocin (STZ)-induced diabetic rats was also studied considering the ameliorative impact against embryogenesis defects using in vitro and in vivo biochemical, histological, and genetic assays. RO was investigated for fatty acids and bioactive compounds (tocols and total phenolic compounds), and antiradical potential against DPPH• radicals. The genetic effects were investigated using comet assay and DNA fragmentation test. DM was induced to albino rats by injecting 60 mg/kg of STZ, while RO (100 mg/kg b.w.) was administered. The pregnant animals were divided into four groups; control (C), RO-treated (RO), diabetic (D), and combined diabetic with RO-treated (D-RO). The study was conducted for 180 days. In RO, the contents of polyunsaturated fatty acids, monounsaturated fatty acids, and saturated fatty acids were 42.3%, 41.7%, and 15.8%, respectively. The levels of α-, β-, γ-, and δ-tocopherols were 280, 20, 1,025, and 35 mg/100 g RO, respectively. RO contained 7.2 mg GAE/g of total phenolic compounds (TPC), while RO quenched 70% of DPPH• radicals. While glucose levels reached the highest in DM rats, treating STZ-induced diabetic animals with RO-resoluted serum glucose levels. RO reduced the highest levels of serum chemistry parameters were recorded in DM animals. Histological photographs of maternal and fetus liver exhibited degenerated hepatic cells and congestion central vein. Comet cells and DNA fragments were significantly decreased in D-RO group comparing to the DM group. RO exhibited antidiabetic capabilities, and thus, it could be utilized as a functional ingredient in novel foods, nutraceuticals, and dietary supplements for diabetic patients. PRACTICAL APPLICATIONS: RO is rich in bioactive phytochemicals (tocols and phenolic compounds) with antiradical and antihyperglycemic capabilities. Tocols and phenolics are active in radical scavenging of reactive nitrogen species (i.e., peroxynitrite and nitrogen dioxide), and in the prevention of DNA bases nitration. Our results demonstrated that RO could improve the disturbed metabolism of carbohydrate in STZ-diabetic animals. The potential mode of action of bioactive compounds in RO most likely encompasses the intracellular pathway involved in glucose homeostasis or insulin signaling. In addition, the suppression of oxidative stress by phenolic compounds could provide to the antidiabetic impacts of RO. Our data supported that RO could be utilized to ameliorate DM. Protection with RO directed high protection of the maternal organs and offspring against the oxidative stress of diabetes due to the antihyperlipidemic effects and the antioxidant capabilities of RO.

Abstract
In recent years, growing attention has been given to traditional medicine. In traditional medicine a large number of plants have been used to cure neurodegenerative diseases such as Alzheimer's disease (AD) and other memory related disorders. Crocus sativus (C. sativus), Nigella sativa (N. sativa), Coriandrum sativum (C. sativum), Ferula assafoetida (F. assafoetida), Thymus vulgaris (T. vulgaris), Zataria multiflora (Z. multiflora) and Curcuma longa (C. longa) were used traditionally for dietary, food additive, spice and various medicinal purposes. The Major components of these herbs are carotenoids, monoterpenes and poly phenol compounds which enhanced the neural functions. These medicinal plants increased anti-oxidant, decreased oxidant levels and inhibited acetylcholinesterase activity in the neural system. Furthermore, neuroprotective of plants occur via reduced pro-inflammatory cytokines such as IL-6, IL-1β, TNF-α and total nitrite generation. Therefore, the effects of the above mentioned medicinal and their active constituents improved neurodegenerative diseases which indicate their therapeutic potential in disorders associated with neuro-inflammation and neurotransmitter deficiency such as AD and depression.

Abstract
Infectious diseases caused by pathogens and food poisoning caused by spoilage microorganisms are threatening human health all over the world. The efficacies of some antimicrobial agents, which are currently used to extend shelf-life and increase the safety of food products in food industry and to inhibit disease-causing microorganisms in medicine, have been weakened by microbial resistance. Therefore, new antimicrobial agents that could overcome this resistance need to be discovered. Many spices-such as clove, oregano, thyme, cinnamon, and cumin-possessed significant antibacterial and antifungal activities against food spoilage bacteria like Bacillus subtilis and Pseudomonas fluorescens, pathogens like Staphylococcus aureus and Vibrio parahaemolyticus, harmful fungi like Aspergillus flavus, even antibiotic resistant microorganisms such as methicillin resistant Staphylococcus aureus. Therefore, spices have a great potential to be developed as new and safe antimicrobial agents. This review summarizes scientific studies on the antibacterial and antifungal activities of several spices and their derivatives.
