Occurrence of Chemical Contaminants in Peruvian Produce: A Food-Safety Perspective

The presence of chemical contaminants in agricultural products is a continued food-safety challenge in Peru. This country has robust agriculture potential, but its output of fruits and vegetables is severely impacted by massive mining activities, as well as poor farming practices, including the use of polluted irrigation water, misuse of pesticides, and inadequate postharvest conditions. This review examines the current scientific knowledge on the levels of pesticide residues, heavy metals, and mycotoxins on crops produced in Peru. The available data shows that several crop varieties are contaminated with these classes of chemical contaminants, and at levels that exceed the national and international permissible limits. The abundance of chemical contaminants in produce indicates a relevant food-safety issue, which increases the risks of chronic human diseases, like cancer—a leading cause of death in Peru. Finally, this review presents recommendations to address these contamination problems in produce grown in the Andean country.

Food safety in Peru: A review of fresh produce production and challenges in the public health system

Peru has a commodities-based economy where agriculture plays an essential role in the nation's development. Among agricultural products, fruits and vegetables are foundational to Peruvian culture and a healthy and nutritious diet. Produce is also the primary income source for thousands of small-scale farmers and producers throughout the country. Peru has significant potential to export agricultural and value-added products. Nevertheless, the Peruvian food chain has weak food safety and quality standards, limiting access to international markets. The inherent lack of food safety surveillance and management systems negatively affects public health. In the past decade, fresh and raw produce has been associated with several foodborne outbreaks worldwide, resulting in significant health and economic losses. This alarming situation for public health officials and regulators has called for the strengthening of produce safety standards and food safety risk management for safer food and to reduce the incidence of foodborne illnesses. This review summarizes the current status of produce safety in Peru and explores opportunities (e.g., policy, university capacity development) toward a safer food system.

Modulation of innate immunity in Nile tilapia (Oreochromis niloticus) by dietary supplementation of Bacillus subtilis endospores

Dietary supplementation of probiotics is growing as a scientifically valid alternative to antibiotics for enhancement of overall animal health and productivity in aquaculture. Strains of Bacillus subtilis are regarded as attractive probiotic candidates to the fish farming industry; however, there is a limited number of studies focused on the use of specific strains probiotics in tilapia, and therefore complicating replication. The objective of this study was to examine the effect of the strains NZ86 (NRRL B-50136) and O14VRQ (NRRL B-67221) of B. subtilis on various parameters of the innate immunity in Nile tilapia (Oreochromis niloticus) in a 51-day feeding trial. Supplementation of tilapia with either strain resulted in significant increases (p < 0.05) in plasma lysozyme concentration of varying degrees throughout the trial. Meanwhile, alternative complement activity was significantly elevated (p < 0.05) only after feeding of the NZ86 strain after 14 and 51 days. Conversely, supplementation with O14VRQ resulted in a significant increase (p < 0.05) in the percent of neutrophils in the peripheral blood of tilapia by day 28. At the end of the trial, there was a trend towards increased phagocytic and respiratory burst activities observed in immune organ derived leukocytes. Feeding with either probiotic appeared to have an up-regulation on the gene expression of both pro-inflammatory cytokines in the intestine, yet only O14VRQ was significantly different than the control. Moreover, the occurrence of these results could be associated with supplementation of the probiotic strains, given that Bacillus bacteria were observed to populate the intestines of the dietary treatment groups. These results suggest the potential roles of these B. subtilis probiotic candidates to stimulate immune responses both locally and systemically in tilapia.

Hematologic and plasma chemistry RIs for cultured Striped catfish (Pangasius hypophthalmus) in recirculating aquaculture systems

BACKGROUND

Striped catfish (Pangasius hypophthalmus) is a valuable aquaculture fish species produced primarily in Southeast Asia. In the United States, it is bred as an ornamental species. Striped catfish has high productivity and great demand in numerous countries around the world, yet little is known about its normal physiology.

OBJECTIVES

The objective of this study was to establish hematologic and blood chemistry RIs for healthy juvenile Striped catfish.

METHODS

Blood samples were collected from 70 Striped catfish raised in recirculating aquaculture systems. Whole blood and plasma samples were analyzed for multiple hematologic and chemistry variables using standard techniques.

RESULTS

The RIs for hematology were as follows: PCV 23.5-35.9%, MCV 106.3-156.6 fL, RBC count 1.79-2.75 × 10⁶ cells/μL, thrombocytes 26,318-73,333 cells/μL, total WBC count 36,294-94,286 cells/μL, total lymphocytes 18,997-59,998 cells/μL, small lymphocytes 13,763-51,490 cells/μL, large lymphocytes 715-21,200 cells/μL, granulocytes 4504-18,291 cells/μL, and monocytes 0-7549 cells/μL. Plasma chemistry RIs were the following: ALP 32.7-74.6 U/L, AST 20.3-1235.8 U/L, sodium 135.2-147.7 mmol/L, potassium 3.3-5.0 mmol/L, chloride 120.1-133.6 mmol/L, calcium 2.7-3.6 mmol/L, magnesium 0.9-1.3 mmol/L, phosphorous 1.4-2.7 mmol/L, glucose 4.6-7.6 mmol/L, cholesterol 2.8-5.3 mmol/L, total protein 30-42 g/L, albumin 7-11 g/L, globulin 22-32 g/L, albumin:globulin ratio 0.27-0.37, creatinine 0-8 μmol/L, and osmolality 251.8-327.9 mOsm/kg.

CONCLUSIONS

Reference intervals reported here can help veterinarians and fish health specialists monitor the health status of Striped catfish under recirculating aquaculture conditions for research, exhibition, and production purposes.
