Distraction suppresses high-fat flavor perception

Distraction during eating contributes to overeating, and when habitually eating with distraction, this may contribute to the development of obesity. One of the proposed mediating mechanisms is the suppression of intensity perception in odor and taste. The effect of distraction on fat intensity perception in flavor, the multisensory combination of odor, taste, and other sensory aspects, is still unknown. In this study, 32 participants (22 women) performed a flavor perception task while also performing a distracting working memory task. In each trial, participants were instructed to observe and memorize a string of 3 (low cognitive load) or 7 (high cognitive load) consonants. Then they received a small quantity of a high- or low-fat chocolate drink, and after that, they were asked to select the string they tried to memorize from three answer options. Last, they rated the intensity and fattiness of the flavor. As intended, in the working memory task, we observed that with a high cognitive load (relative to a low cognitive load), accuracy decreased and response times increased. Regarding perception of the flavors, we observed that overall, high-fat drinks were rated as more intense and fattier. Cognitive load and fat content interacted, such that for the low-fat drink, intensity and fattiness ratings were similar under both cognitive loads; however, under the high cognitive load (relative to the low cognitive load), intensity and fattiness ratings for the high-fat drink were lower. Our results show that distraction can impact the perception of fat in high-fat drinks. If distraction primarily reduces perception of high-fat foods, this may pose a particular risk of overeating high-calorie foods.

Decreased retronasal olfaction and taste perception in obesity are related to saliva biochemical and microbiota composition

Understanding the individual factors that modulate flavor perception is a central issue for the development of personalized diets strategies to fight obesity. This study aimed to investigate differences in flavor perception between adults with normal weight and those with obesity, as well as some potential biological factors related to these differences. To do that, liking and flavor perception intensity were measured against retronasal olfactory (pineapple, butter, tropical and chocolate) and taste attributes (sweetness, umami and bitter) in 77 individuals grouped as normalweight or obese, according to their body mass index (BMI). Unstimulated saliva was collected from all participants and characterized in terms of salivary flow, total protein content, total antioxidant capacity, total esterase activity and bacterial composition through 16S rDNA amplicon sequencing. The results showed that participants displayed differences in flavor perception according to their BMI group. Thus, the group with obesity showed significant lower liking and intensity scores for low calorie related food aroma (pineapple and tropical), lower taste intensity scores for sweet and umami, and a higher acceptability for umami than the group with normal weight. Significant differences between BMI groups were observed for salivary biochemical variables and specific bacterial taxa, some of which were significantly correlated to flavor intensity. This work suggests for the first time the existence of an oral-brain axis that might contribute to the development or perpetuation of obesity, which opens new and interesting avenues of research.

Free versus droplet-bound aroma compounds in sparkling beverages

The initial experience of a beverage's flavor after opening the bottle is created by a combination of the gas phase and droplet-bound odorants. However, most studies do not consider this combination, and focus on the odor-active components in the liquid or gas phase, separately. To cover this aspect, a filter from pyrolyzed polyacrylonitrile fiber was packed inside thermal desorption unit liner and used for trapping droplet-bound odorants. Additionally, polydimethylsiloxane coated thin-film was applied for extraction of gas-phase aroma. Following trapping/extraction, the devices were desorbed and compounds were separated using GC-MS. The odorants in commercial sparkling beverages were quantified immediately after opening the bottle to mimic real-life conditions of the consumer's experience of the flavor. The reported results provide a more comprehensive understanding of flavor perception in effervescent drinks by considering both gas and droplet phase.

Flavor perception and the risk of malnutrition in patients with Parkinson's disease

Flavor perception involves both olfactory and gustatory function. In patients with Parkinson’s disease (PD), hyposmia is a frequent finding, as well as an increased risk of malnutrition. We performed a pilot study to investigate the relationship between flavor perception and risk of malnutrition in PD patients. 63 PD patients participated to perform an olfactory (Sniffin’ Sticks) and gustatory (Taste Strips) task, and a questionnaire to establish nutritional risk (MUST), which includes BMI measurements. The relationship between olfactory and gustatory function and BMI was analyzed using partial correlations, corrected for disease duration, and regression analysis. Patients displayed a high prevalence of hyposmia (68.3%), and a low prevalence (6.3%) of hypogeusia. A small, but significant correlation was found between olfactory function and BMI (r = 0.261, p = 0.038), and not for gustatory function and BMI (r = 0.137, p = 0.284). Hyposmia, and not hypogeusia, may contribute to weight loss in Parkinson’s disease, and hence increase the risk of malnutrition.
