Abstract
Life cycle assessments (LCA) often highlight the environmental and health benefits for consumers if western diets substitute red meat. However, the specific trade-off consumer face when asked to substitute a red meat dish is scarcely researched, often neglecting the bouquet of substitution options and/or the price component involved. Four substitution strategies are evaluated within an individually adapted choice based conjoint: the substitution by (1) the same red meat dishes with a halved meat portion size, (2) novel plant-based products that mimic the functionality and taste, (3) authentic plant-based components that just mimic the functionality, and (4) vegetarian dishes that just neglect the meat component if still familiar to consumers. The analysis is executed for three popular red meat dishes to account for consistency across meal scenarios, namely Meatballs, Spaghetti Bolognese and Sausage Buns. The analysis is sensitive to red meat consumption habits to better understand the preferences of consumers that can actually substitute a red meat intake.

Abstract
Conventional empirical studies of foodborne-disease outbreaks (FDOs) in agricultural markets are linear-stochastic formulations hardwiring a world in which markets self-correct in response to external random shocks including FDOs. These formulations were unequipped to establish whether FDOs cause market reaction, or whether markets endogenously propagate outbreaks. We applied nonlinear time series analysis (NLTS) to reconstruct annual dynamics of FDOs in US cattle markets from CDC outbreak data, live cattle futures market prices, and USDA cattle inventories from 1967–2018, and used reconstructed dynamics to detect causality. Reconstructed deterministic nonlinear market dynamics are endogenously unstable—not self-correcting, and cattle inventories drive futures prices and FDOs attributed to beef in temporal patterns linked to a multi-decadal cattle cycle undetected in daily/weekly price movements investigated previously. Benchmarking real-world dynamics with NLTS offers more informative and credible empirical modeling at the convergence of natural and economic sciences.

Abstract
Marbling score (MS) is related to beef auction price (AP) in Korea, but how these relate to marbling texture (i.e. number and distribution of marbling particles [MPs]) is not known. We examined relationships among carcass traits, carcass AP, and image analysis marbling texture traits. In experiment 1, carcass data and longissimus thoracis (LT) were obtained from Korean cattle steers reared under similar feeding conditions. MS, quality grade (QG), and AP were related (P < 0.001) to numbers of coarse MPs and fine MPs and fineness index. In experiment 2, LT images photographed at a slaughterhouse were used in regression analysis within individual QG classes (QGs: 1 [middle], 1+, and 1++ [best]). AP was related (P < 0.001) to numbers of coarse MPs and fine MPs and fineness index in both QGs 1+ and 1++ but not in QG 1. Overall, several marbling texture traits were related to AP, but both MS and QG were more strongly related to AP.

Abstract
This study investigates the substitution and complementary effects for beef mince attributes drawing on data from large choice experiments conducted in the UK and Spain. In both countries, consumers were found to be willing to pay a price premium for the individual use of the labels "Low Fat" (UK: €3.41, Spain: €1.94), "Moderate Fat" (UK: €2.23, Spain: €1.57), "Local" (UK: €1.54, Spain: €1.61), "National" (UK: €1.33, Spain: €1.37), "Organic" (UK: €1.02, Spain: €1.09) and "Low Greenhouse Gas Emissions (GHG)" (UK: €2.05, Spain: €0.96). The results showed that consumers in both countries do not treat desirable food attributes as unrelated. In particular, consumers in Spain are willing to pay a price premium for the use of the labels "Local", "Organic" and "Low GHG" on beef mince that is also labelled as having low or moderate fat content. By contrast, consumers in the UK were found to discount the coexistence of the labels "Low Fat" and "Organic", "Low Fat" and "Low GHG" and "Moderate Fat" and "Low GHG". The results, however, suggest that in the UK the demand for beef mince with moderate (low) fat content can be increased if it is also labelled as "Organic" or "Low GHG" ("Local").

Abstract
This article involved a broad search of applied sciences for milestone technologies we deem to be the most significant innovations applied by the North American pork industry, during the past 10 to 12 years. Several innovations shifted the trajectory of improvement or resolved significant production limitations. Each is being integrated into practice, with the exception being gene editing technology, which is undergoing the federal approval process. Advances in molecular genomics have been applied to gene editing for control of porcine reproductive and respiratory syndrome and to identify piglet genome contributions from each parent. Post-cervical artificial insemination technology is not novel, but this technology is now used extensively to accelerate the rate of genetic progress. A milestone was achieved with the discovery that dietary essential fatty acids, during lactation, were limiting reproduction. Their provision resulted in a dose-related response for pregnancy, pregnancy maintenance and litter size, especially in maturing sows and ultimately resolved seasonal infertility. The benefit of segregated early weaning (12 to 14 days of age) was realized for specific pathogen removal for genetic nucleus and multiplication. Application was premature for commercial practice, as piglet mortality and morbidity increased. Early weaning impairs intestinal barrier and mucosal innate immune development, which coincides with diminished resilience to pathogens and viability later in life. Two important milestones were achieved to improve precision nutrition for growing pigs. The first involved the updated publication of the National Research Council nutrient requirements for pigs, a collaboration between scientists from America and Canada. Precision nutrition advanced further when ingredient description, for metabolically available amino acids and net energy (by source plant), became a private sector nutrition product. The past decade also led to fortuitous discoveries of health-improving components in ingredients (xylanase, soybeans). Finally, two technologies converged to facilitate timely detection of multiple pathogens in a population: oral fluids sampling and polymerase chain reaction (PCR) for pathogen analysis. Most critical diseases in North America are now routinely monitored by oral fluid sampling and prepared for analysis using PCR methods.

Abstract
The cattle tick Rhipicephalus microplus causes significant economic losses to cattle production systems and is a main barrier to the introduction of Bos taurus breeds and their crosses in Brazil. These breeds have the genetic potential to generate animals that are more productive, but they are also more susceptible to R. microplus. One of the alternatives for conventional tick control is the use of strategic control, aiming at delaying or even preventing the development of its resistance to acaricides. The present study aimed to evaluate the economic losses caused by tick infestation on the productive performance of two breeds of beef cattle and to evaluate the economic efficiency of tick strategic control and its impacts on beef cattle production systems. Animal weights were obtained from the literature and were used to calculate the weight loss in kilograms (kg) and the economic loss (US$) caused by R. microplus infestation. The cost/loss ratio of performing strategic control was also calculated. The data show that tick infestation causes economic losses to the breeds and groups of animals evaluated and reduces animal performance (weight loss). The results show a loss of US$34.61/animal in the backgrounding phase and US$7.97/animal in the finishing phase for Brangus animals and its crosses. In conclusion, the data show that strategic control is economically efficient for Brangus animals in the backgrounding phase, independent of the methods used for acaricide application.

Abstract
Although the UK is the largest lamb meat producer in Europe, there are limited data available on sheep flock performance and on how sheep farmers manage their flocks. The aims of this study were to gather evidence on the types of disease control practices implemented in sheep flocks, and to explore husbandry factors associated with flock productivity. A questionnaire focusing on farm characteristics, general husbandry and flock health management was carried out in 648 farms located in the UK over summer 2016. Abattoir sales data (lamb sales over 12 months) was compared with the number of breeding ewes on farm to estimate flock productivity (number of lambs sold for meat per 100 ewes per farm per year). Results of a multivariable linear regression model, conducted on 615 farms with complete data, indicated that farms vaccinating ewes against abortion and clostridial agents and administering a group 4/5 anthelmintic to ewes (as recommended by the Sustainable Control of Parasites in Sheep Initiative) during quarantining had a greater flock productivity than farms not implementing these actions (P<0.01 and 0.02, respectively). Flocks with maternal breed types had higher productivity indexes compared with flocks with either pure hill or terminal breeds (P<0.01). Farms weighing lambs during lactation had greater productivity than those not weighing (P<0.01). Importantly, these actions were associated with other disease control practices, for example, treating individual lame ewes with an antibiotic injection, weaning lambs between 13 and 15 weeks of age and carrying out faecal egg counts, suggesting that an increase in productivity may be associated with the combined effect of these factors. This study provides new evidence on the positive relationship between sheep flock performance and disease control measures and demonstrates that lamb sales data can be used as a baseline source of information on flock performance and for farm benchmarking. Further research is needed to explore additional drivers of flock performance.

Abstract
The increasing global population, limited resource availability, and global focus on reducing greenhouse gas (GHG) emissions put pressure on animal agriculture industries to critically evaluate and optimize the role they play in a sustainable food production system. The objective of this review is to summarize evidence of the various roles that the U.S. beef industry plays in the U.S. and global agricultural systems. As the world's largest beef producer, the United States reaps considerable economic benefit from the beef industry through strong domestic and international demand, as well as employment opportunities for many Americans. Beef production contributes to GHG emissions, land use, and water use, among other critical environmental impacts but provides an important source of essential micronutrients for human consumption. The U.S. beef industry provides sufficient product to meet the protein, vitamin B12, omega-3 and -6 fatty acid requirements of 43, 137, 47, and 487 million people, respectively. In the United States, beef production was estimated to account for 53% of GHG emissions from U.S. animal agriculture and 25% of GHG emissions from all of U.S. agriculture. Footprinting studies suggest that much of the land use and water use associated with beef production are attributed to the development of feed crops or pastureland. On a global scale, beef from U.S. origin is exported to numerous developed and developing countries, representing an important international nutrient routing. Along with other prominent beef-producing nations, the United States continues to pursue a greater level of sustainability in its cattle industry, which will bear important implications for future global food security. Efforts to reduce the environmental impacts of beef production will likely be the strongest drivers of enhanced sustainability.

Abstract
Intensification of cow-calf production may provide a sustainable solution for meeting increasing beef demand in the face of diminishing resources. However, intensification with its greater reliance on cereal grains potentially decreases the upcycling of human-inedible protein into beef. A previously described model was used to evaluate cow-calf intensification on beef's ability to meet human protein requirements. Four scenarios were compared, based on a 1,000 cow herd: 1) Conventional cow-calf production system (0CON), 2) cows limit-fed in confinement for 4 mo after weaning (4CON), 3) cows limit-fed in confinement for 8 mo after breeding (8CON), or 4) cows limit-fed in confinement year-round (12CON). Changes were not made to either the stocker or feedlot segments of the beef value chain. Net protein contribution (NPC) was calculated by multiplying the ratio of human-edible protein (HeP) in beef produced to HeP in feed by the protein quality ratio. A NPC >1 indicates that the production system is positively contributing to meeting human requirements, whereas a NPC <1 indicates the sector or value chain is competing with humans for HeP. Methane was estimated based on proportion of forage in diet and total methane production was reported per kg HeP. In the cow-calf sector, HeP conversion efficiency (HePCE) decreased from 2,640.83 to 0.37 while methane production decreased from 4.53 to 1.82 kg/kg HeP produced as the length of intensification increased from 0CON to 12CON. Decreased HePCE resulted in NPC values for cow-calf sector of 8,036.80, 4.93, 2.19, and 1.28 for 0CON, 4CON, 8CON, and 12CON, respectively. Protein quality ratio of the entire beef value chain increased from 3.15 to 3.33, while HePCE decreased from 0.99 to 0.39 as length of intensification increased from 0CON to 12CON. For the beef value chain, NPC was 3.11, 2.30, 1.73, and 1.31 for 0CON, 4CON, 8CON, and 12CON, respectively. Across the value chain, confinement of cows for 12 mo decreased enteric methane from 3.05 to 1.53 kg/kg HeP (0CON and 12CON, respectfully). Additionally, profitability of the cow-calf operation decreased from $249.34 to $102.16 per cow as intensification increased. Of confinement scenarios, probability of loss to an operation was least (4%) for 4CON. Feed costs increased by $260.79 per cow for 0CON when drought conditions existed (0COND). Total methane production was reduced by intensification and none of the scenarios evaluated competed with humans for HeP.

Abstract
Certain attributes of the hog industry increase the production risk in nodal enterprises of the hog supply chain, leading to high financing costs and eventually resulting in liquidity constraints. When the hog supply chain node enterprises are subjected to external shocks, on the basis of the commercial credit relationship in the supply chain, the entire supply chain generates liquidity risks and systemic risks. We analyze the input and output of the hog supply chain node enterprises under the constraint of liquidity, construct the mathematical model, discuss the dynamic differences of liquidity constraints in different situations, and measures the commercial credit risk and anti-risk ability of the pig supply chain node enterprises. If the external shock is less than a certain value, the current profits of the hog enterprise can entirely make up for the loss caused by external shocks, and the production of the firm will return to its state of equilibrium. If the external shock is large enough, liquidity constraints will seriously restrict the production input of the enterprise, which then leads to a deceleration of production input and may ultimately result in bankruptcy. We believe that the structure of the hog industry supply chain should be constantly adjusted to optimize the industrial upgrading and organizational form of the hog supply chain.

Abstract
Consumer perspectives of beef quality are complex, leading to a market that is increasingly differentiating. Thus, ongoing monitoring and assessment of changes in consumer perspectives is essential to identify changing market conditions. Often only credence and search characteristics are evaluated in consumer studies; therefore the object of the present study is to examine consumer preferences and perceptions towards beef steaks, also including experience characteristics, using a mixed methods approach. For this reason, 55 consumers participated in an experiment in Germany, including a sensory acceptance test, stated willingness to pay, and choice-based conjoint analysis (CBCA). Different quality characteristics were included, but a focus on the quality labels of 'dry aged beef', 'Block House beef', and 'Angus beef' was predominant throughout the experiment with the results showing that quality labels significantly increased overall liking as well as the stated willingness to pay. Quality labels were also the one of the most important characteristics in the conjoint analysis, after origin and price. The results of all applied methods are comparable for the characteristic quality label. The combination of sensory acceptance test and CBCA were additionally able to evaluate all three kinds of beef quality characteristics, which could not be evaluated together only using a single method. This suggests that a mixture of methods should be used to gain better knowledge on the true behavior of beef consumers. Experience and credence characteristics, including beef quality labels, present opportunities for future research as well as the potential for determining product and market differentiation.

Abstract
There is extensive literature addressing acceptable practices of colostrum distribution to new-born calves; however, no economic analyses are available concerning the profitability of this practice. Moreover, the health standards associated with colostrum management have been defined through the observation of reference farms without explicit reference to economic assessments. The objective of the current study was to evaluate the profitability of farm colostrum management and to define the optimal economic situations for given livestock systems and farm situations. The herd-level net value was calculated using the value of calf products, the cost of passive transfer failure and the cost of prevention. This value was determined for various beef and dairy scenarios and the various time periods spent managing colostrum. The maximal net values defined the optimal economic situations and enabled the determination of the optimal times for colostrum management and respective health standards (i.e., the prevalence of disorders at optimum). The results showed that the optimal time farmers should spend on colostrum management is approximately 15 min per calf. Furthermore, farmers should err on the side of spending too much time (> 15 min) on colostrum management rather than not enough, unless the cost of labour is high. This is all the more true that potential long term consequences of passive transfer failure on milk yields were not accounted for here due to scarcity of data, leading to consider this time threshold (15 min) as a minimal recommendation. This potential underestimation may arise from the greater nutrient content and bioactive compounds identified in colostrum although the passive immune transfer is here defined through immunoglobulins only. The present results show that for small farms that cannot hire colostrum managers, this work can be performed by the farmer after subcontracting other tasks. Moreover, the method proposed here—the definition of health standards through economic optimisation—is a promising approach to analysing health conventions in the cattle industry.

Abstract
Meat production is the most important trait in the breeding objectives of sheep production in East Africa. The aim of this study was to investigate breed differences in live weight, conformation, carcass traits and economic values for meat production among Red Maasai and Dorper sheep and their crosses. In total, 88 ram lambs, which were reared at the ILRI experimental station, Kapiti plains Estate in Central Kenya, were used for the study. The lambs were slaughtered at Kenya Meat Commission (KMC) at about 1 year of age. Prior to slaughter, the lambs were weighed, measured and assessed by experienced evaluators, and at the abattoir carcass traits were recorded. Large breed differences were found for most traits. Dorper lambs were heavier at delivery for slaughter and had better carcass grade but lower dressing percentage and fat levels than Red Maasai. Crossbreds were generally better than the parental breeds. Evaluators were willing to pay more for the Dorper lambs for slaughter although carcass weights later were shown not to be higher than for Red Maasai. Evaluators undervalued Red Maasai lambs by 8-13 % compared to Dorper lambs according to the prices quoted per kilogramme live or carcass weight by KMC. Live weight was better than any other live measure in predicting carcass weight. Due to the overall higher ranking of the crossbred lambs for meat production, Dorper may be useful as a terminal sire breed for crossing with Red Maasai ewes.

Abstract
Vacuum-packaged Certified Angus Beef (CAB) subprimals ( = 72) that included the longissimus thoracis (LT), longissimus lumborum (LL), gluteus medius (GM), and infraspinatus (IF) muscles were purchased from a major beef packing facility. Subprimals were allocated to 1 of 3 aging periods (14, 28, or 42 d) and aged at 2°C. After aging, 5 steaks were cut from each subprimal and assigned to pH, water-holding capacity, Warner-Bratzler shear force (WBSF), cooked color, cooking yield, cooking loss, and sensory panel analysis. Infraspinatus steaks were more tender ( < 0.05) than all other steaks, and subprimals aged 14 d had greater ( < 0.05) WBSF values than the other 2 aging periods, regardless of muscle. Water-holding capacity and cook yield were greater ( < 0.05) for LL and LT than IF and GM steaks, whereas purge loss was greater ( < 0.05) for IF and GM than LL and LT steaks. Throughout the aging periods, pH declined for all muscle groups, with IF steaks having the greatest ( < 0.05) pH values among all muscles. Among IF steaks, sensory evaluations of all attributes did not ( ≥ 0.26) differ across aging periods; yet among LT steaks, consumers rated those aged 14 d greater ( < 0.05) in overall impression than LT steaks aged 28 and 42 d. Among LT steaks, those aged 14 d received greater ( < 0.05) flavor ratings than LT steaks subjected to longer aging periods, and LT steaks aged 14 d received the greatest ( < 0.05) overall impression, with consumers giving greater ( < 0.05) overall impression scores to LT steaks aged 42 d over those aged 28 d. Aging period had no effect ( ≥ 0.017) on consumer ratings for flavor, tenderness, juiciness, or overall impression of LL steaks. Among GM steaks, consumers rated steaks aged 14 and 28 d more ( < 0.05) flavorful than those aged 42 d, and consumer ratings for overall impression were greater ( < 0.05) for GM steaks aged 28 d than for GM steaks aged 42 d; however, consumers failed ( = 0.035) to note differences in tenderness scores of GM steaks in response to aging period. Furthermore, consumers indicated a greater ( < 0.05) likelihood to purchase LT steaks aged 14 d over LT steaks aged 28 d, LL steaks aged 42 d over LL steaks aged 14 d, and GM steaks aged 14 and 28 d over GM steaks aged 42 d. These results indicate that consumers struggled to identify steak flavor attributes and suggest that the benefit of aging for premium beef products does not offer a tremendous sensory advantage to the consumer.
