Abstract
Although Ghana is a leading global cocoa producer, its production and yield have experienced declines in recent years due to various factors, including long-term climate change such as increasing temperatures and changing rainfall patterns, as well as drought events. With the increasing exposure of cocoa-producing regions to extreme weather events, the vulnerability of cocoa production is also expected to rise. Supplemental irrigation for cocoa farmers has emerged as a viable adaptation strategy to ensure a consistent water supply and enhance yield. However, understanding the potential for surface and groundwater irrigation in the cocoa-growing belt remains limited. Consequently, this study aims to provide decision-support maps for surface and groundwater irrigation potential to aid planning and investment in climate-smart cocoa irrigation. Utilizing state-of-the-art geospatial and remote sensing tools, data, and methods, alongside in-situ groundwater data, we assess the irrigation potential within Ghana's cocoa-growing areas. Our analysis identified a total area of 22,126 km2 for cocoa plantations and 125.2 km2 for surface water bodies within the cocoa-growing regions. The multi-criteria analysis (MCA) revealed that approximately 80% of the study area exhibits moderate to very high groundwater availability potential. Comparing the MCA output with existing borehole locations demonstrated a reasonable correlation, with about 80% of existing boreholes located in areas with moderate to very high potential. Boreholes in very high potential areas had the highest mean yield of 90.7 l/min, while those in low groundwater availability potential areas registered the lowest mean yield of 58.2 l/min. Our study offers a comprehensive evaluation of water storage components and their implications for cocoa irrigation in Ghana. While groundwater availability shows a generally positive trend, soil moisture and surface water have been declining, particularly in the last decade. These findings underline the need for climate-smart cocoa irrigation strategies that make use of abundant groundwater resources during deficit periods. A balanced conjunctive use of surface and groundwater resources could thus serve as a sustainable solution for maintaining cocoa production in the face of climate change.

Abstract
The current cadmium (Cd) regulations in chocolate threaten the cacao supply chain in several Latin American countries. The factors contributing to Cd accumulation in cacao beans have been poorly studied in Central America. The objective of this research was to identify the location of Cd hotspots as well as soil properties and management practices influencing the Cd concentration in cacao beans. A survey was carried out and soil, leaf, and beans were sampled from 150 farms in the three principal cacao-producing regions in Costa Rica. Total soil Cd concentration ranged from <0.1 to 1.05 (average 0.22 mg kg-1) which is typical of uncontaminated soils. Bean Cd concentration ranged from 0.12 to 3.23 (average 0.56 mg kg-1) and 22% of the samples exceeded the selected threshold of 0.80 mg kg-1, located mostly in the Huetar Caribe and Huetar Norte regions. Variability in bean Cd concentration was better explained by total soil Cd and soil organic carbon (SOC) (R2 = 0.62, p < 0.05). In addition, bean Cd concentration was affected by leaf nutrient content and management practices. Leaf Zn and P were positively correlated with bean Cd while K and Mn were negatively correlated (p < 0.05). Farm altitude and orchard age were also negatively correlated with bean Cd. Overall, this study shows that bean Cd contamination does not reach the extent observed in other Latin American countries such as Ecuador, Colombia, or Honduras. Nevertheless, research is needed in hotspot areas to assess the feasibility of potential mitigation strategies, particularly the use of mineral or organic soil amendments, which may allow better for planning in existing plantations or the expansion into new cacao-growing areas in the country.

Abstract
Allometric models which are used to describe the structure of trees in agroforestry systems are usually extrapolated from models developed for trees in forest ecosystems. This makes quantitative assessment of the functions of shade trees in agroforestry systems challenging since increased availability of light and space in these systems may induce structural differences from those growing under forest conditions. We addressed this issue by providing species-specific allometric information on the structural characteristics of associated shade trees on cocoa agroforestry systems and assessed if allometries conformed to theoretical predictions. At the plot level, stand and soil characteristics affecting tree structural characteristics were assessed. The study was conducted in cocoa agroforestry systems at Suhum, Ghana. The height-diameter at breast height (H-DBH) allometry had the best fits (R2 = 53-89%), followed by the crown area (CA)-DBH allometry (R2 = 27-87%) and then the CA-H allometry (R2 = 22-73%). In general, the scaling exponents of the CA-DBH, H-CA and H-DBH allometries conformed to the metabolic scaling theory (MST). However, both the CA-DBH and H-DBH allometries diverged from the geometric similarity model. Though forest tree species had similar crown areas as fruit trees, they were slenderer than fruit trees. Tree slenderness coefficients were positively correlated with soil P, Ca, Cu and the ratios (Ca + Mg):K, (Ca + Mg):(K + Na) and Ca:Mg, but not C:N while DBH and H were correlated with soil P and C:N ratio. Our results show that critical soil nutrients and their ratios affects shade tree structural attributes (e.g. slenderness and CA), which possibly restrict variations in species-specific allometries to a narrow range on cocoa systems. Furthermore, shade tree species richness and density are better predictors of relative canopy projection area (a proxy for shade intensity) than tree species diversity. In conclusion, the results have implications for shade tree species selection, monitoring of woody biomass and maintenance of biodiversity.

Abstract
Machine learning can be used for social good. The employment of artificial intelligence in smart agriculture has many benefits for the environment: it helps small farmers (at a local scale) and policymakers and cooperatives (at regional scale) to take valid and coordinated countermeasures to combat climate change. This article discusses how artificial intelligence in agriculture can help to reduce costs, especially in developing countries such as Côte d'Ivoire, employing only low-cost or open-source tools, from hardware to software and open data. We developed machine learning models for two tasks: the first is improving agricultural farming cultivation, and the second is water management. For the first task, we used deep neural networks (YOLOv5m) to detect healthy plants and pods of cocoa and damaged ones only using mobile phone images. The results confirm it is possible to distinguish well the healthy from damaged ones. For actions at a larger scale, the second task proposes the analysis of remote sensors, coming from the GRACE NASA Mission and ERA5, produced by the Copernicus climate change service. A new deep neural network architecture (CIWA-net) is proposed with a U-Net-like architecture, aiming to forecast the total water storage anomalies. The model quality is compared to a vanilla convolutional neural network.

Abstract
To investigate the effects of flavanol-rich cacao extract on healthy middle-aged women's fatigue and mood conditions, we conducted a randomized, double-blind, placebo-controlled study in women aged 40-60 years who had reported fatigue and had shown high levels of a serum oxidative stress marker. We randomized the participants (n = 60) into equal groups receiving either a beverage containing cacao flavanols (240 mg/200 mL/day) or a placebo for 8 weeks. Before and after the 8-week treatment, we determined the participants' Chalder fatigue scale (CFS) scores, various mood states, autonomic nervous system (ANS) activity levels, and their ANS balance. The results demonstrated that among the mood states, the indicators of negative mood (e.g., depression, fatigue, and anger) and the total mood disturbance score were significantly lower in the cacao group compared to the placebo group after the treatment (p < 0.05). The change in the index of positive mood (i.e., vigor) from baseline to 8 weeks was significantly higher in the cacao group versus the placebo group (p < 0.05). There were no significant between-group differences in the changes in the CFS score or ANS activity level. The consumption of flavanol-rich cacao extract both suppressed negative moods and promoted positive moods in healthy middle-aged women. These results suggest that cacao flavanols may be a useful food material that can improve variable mood conditions in middle-aged women and support their active lives.

Abstract
Tomato vascular wilt caused by Fusarium oxysporum f. sp. lycopersici (Fol) is one of the most limiting diseases of this crop. The use of fungicides and varieties resistant to the pathogen has not provided adequate control of the disease. In this study, siderophore-producing bacteria isolated from wild cocoa trees from the Colombian Amazon were characterized to identify prominent strategies for plant protection. The isolates were taxonomically classified into five different genera. Eight of the fourteen were identified as bacteria of the Acinetobacter baumannii complex. Isolates CBIO024, CBIO086, CBIO117, CBIO123, and CBIO159 belonging to this complex showed the highest efficiency in siderophore synthesis, producing these molecules in a range of 91-129 µmol/L deferoxamine mesylate equivalents. A reduction in disease severity of up to 45% was obtained when plants were pretreated with CBIO117 siderophore-rich cell-free supernatant (SodSid). Regarding the mechanism of action that caused antagonistic activity against Fol, it was found that plants infected only with Fol and plants pretreated with SodSid CBIO117 and infected with Fol showed higher levels of PR1 and ERF1 gene expression than control plants. In contrast, MYC2 gene expression was not induced by the SodSid CBIO117 application. However, it was upregulated in plants infected with Fol and plants pretreated with SodSid CBIO117 and infected with the pathogen. In addition to the disease suppression exerted by SodSid CBIO117, the results suggest that the mechanism underlying this effect is related to an induction of systemic defense through the salicylic acid, ethylene, and priming defense via the jasmonic acid pathway.

Abstract
Cognitive function is defined as performance in objective tasks that need conscious mind effort. It has been shown that consuming foods rich in flavanols causes neurobiological effects and improves learning, memory, and global cognitive function. This study aimed to investigate the impact of chronic chocolate consumption on cognitive function in healthy adults based on published trials. The PICO strategy was applied to examine the research question in this study. Researchers searched the Web of Science, Science Direct, Pubmed, Scopus, Cochrane Library, and Google Scholar databases. Related articles of randomized controlled trials that evaluated the chronic effect of chocolate on cognitive function were selected (all published from their inception to February 2021). The difference in means of the last and first measurements was the main effect measure between the control and intervention groups. For quantitative data synthesis, weighted mean difference (WMD) and 95% confidence interval (CI) were performed in the random effect model. Of the initial 340 articles identified, seven trials met the eligibility criteria. Chronic chocolate intake significantly reduced executive function time (WMD: -11.77, 95% CI: -22.49, -1.05, p = 0.03) of the participants. Further, the language and executive function (WMD: 6.38, 95% CI: 5.97, 6.80, p < 0.001) was raised by 6.38 times after the intervention with chocolate. We could not perform subgroup analysis due to insufficient trials and significant heterogeneity in some studies. It is concluded that daily consumption of cocoa may provide short and middle-term effects on young adults and make them better cognitive performance in learning, memory, and attention.

Abstract
Grapefruit peel contains a high concentration of naringin- a potent antioxidant with strong bioactive properties. In this study, a new type of functional chocolate fortified with grapefruit peel extract and different concentrations of aqueous methanol and ethanol were evaluated as extraction solvents. A new high-performance liquid chromatography (HPLC) method to analyze the naringin content of the fortified chocolates was developed with a recovery of 107% ± 3.1% and repeatability below 3.5%. A sensory evaluation was conducted to assess the preference for the chocolates among individuals who self-described a preference for bitter flavors. No significant preference was observed in the cases of astringency and aftertaste while the increased bitterness proved to be favorable. However, taste, flavor and overall acceptability were regarded somewhat less favorably. While chocolate proved to be a satisfactory carrier for naringin and had several enjoyable characteristics, further research may focus on improving the organoleptic properties of chocolates fortified by naringin.

Abstract
The encroachment of agricultural expansion into protected areas has led to severe biodiversity loss. To promote sustainable agriculture practices and reverse the anthropogenic pressure, several initiatives such as the Cocoa and Forests Initiative (CFI) and the National Strategy for Reducing Greenhouse Gas Emissions from Deforestation and Forest Degradation (REDD+), have been undertaken. This study examines the adoption of cocoa agroforestry by smallholder farmers in the vicinity of the Taï National Park (TNP) in Southwestern Côte d'Ivoire. A structured questionnaire was administered to 323 cocoa farmers to understand their practices and perceptions of cocoa agroforestry. Results showed that most farmers (95%) grow unimproved cocoa varieties with an average yield of 376 ± 36 kg ha-1 year-1. The majority of farmers (86%) use agroforestry practices in their farming systems, with pruning techniques being used by 82% and fertilizers applied by 27%. Additionally, 54% of farmers are adopting improved agroforestry practices or planting more trees in their cocoa plantations. Factors influencing cocoa agroforestry adoption include gender, the length of residency, the number of cultivated cash crops and the incidence of black pod attacks. These findings highlight the potential to leverage community knowledge in promoting sustainable agricultural practices and generate positive impacts. These results have important implications for future initiatives aiming to promote sustainable agriculture practices and biodiversity conservation in the region. By capitalizing on the adoption of agroforestry and leveraging socioeconomic factors, it is possible to enhance the conservation of the TNP and promote sustainable cocoa farming practices.

Abstract
The objective of this study was to optimize different vacuum drying conditions for cocoa pod husk and cocoa bean shell in order to enhance these by-products for commercial applications. To carry out the optimization, the response surface methodology was applied using a Box-Behnken experimental design with 15 experiments for which different conditions of temperature (X1), drying time (X2) and vacuum pressure (X3) were established. The response variables were the content of total polyphenols, the content of flavanols and the radical scavenging activity evaluated in the extracts of the different experiments. Temperature (50-70 °C), drying time (3-12 h) and vacuum pressure (50-150 mbar) were considered as independent variables. The main factors affecting the response variables were temperature, followed by vacuum pressure. For the content of polyphenols, the optimal response values predicted for the cocoa pod husk was 11.17 mg GAE/g with a confidence limit (95%) of 9.05 to 13.28 mg GAE/g (optimal conditions: 65 °C, 8 h and 75 mbar), while for the cocoa bean shell cocoa was 29.61 mg GAE/g with a confidence limit (95%) of 26.95 to 32.26 mg GAE/g (optimal conditions: 50 °C, 5 h and 100 mbar). Therefore, results of this study suggest a high content of phenolic compounds obtained from these by-products that show relevance as functional ingredients for application in the food, nutraceutical, and cosmeceutical industries.

Abstract
Cocoa is a climate sensitive species that has never been reported to grow or survive outside its natural climate belt (20°N-20°S of the equator). Recent reports claimed that cocoa is currently cultivated in Eswatini (26°S), Botswana (22°S), Namibia (22°S), Lesotho (29°S), and the Republic of South Africa "RSA" (30°S). How true are these reports? Climatological and epidemiological investigations were setup to debunk or support these claims. The clime of RSA was investigated since it was the farthest from the cocoa production clime. A review of the climate data of RSA showed 12.4 and 6.1% increase in night-time and day-time temperatures, respectively i.e., from 9.7 and 24.4°C (1901-1930) to 10.9 and 25.9°C (1991-2020), affirming the influence of global warming. The consistent increase in the moving average from 1901-2021 with a fluctuation in the seasonal variation, validates this research. A global connection was established between climate suitability for cocoa production and cocoa disease/pathogen establishment (r = -0.39, P-value = 0.089) at P<0.05. Further analysis showed that the annual temperature (10.8°C≥Temp≥25.8°C), humidity (62%) and sunshine distribution (8.4hours/month) of RSA was suitable for cocoa farming, even though water availability was below the recommended level (rainfall≥463.6mm and rainy_days≤5days/month), farm irrigation systems are currently in use. Other findings showed that KwaZulu-Natal was 100% suitable for cocoa farming, followed by Gauteng, Mpumalanga (86%), Eastern Cape, Limpopo, Northwest (71%), Free State, Northern Cape, and Western Cape (57%). The estimated black pod disease status of KwaZulu-Natal (8.6%) and Eastern Cape (6.6%) affirmed the conduciveness of RSA for cocoa farming.

Abstract
Dietary flavanols are food constituents found in certain fruits and vegetables that have been linked to cognitive aging. Previous studies suggested that consumption of dietary flavanols might specifically be associated with the hippocampal-dependent memory component of cognitive aging and that memory benefits of a flavanol intervention might depend on habitual diet quality. Here, we tested these hypotheses in the context of a large-scale study of 3,562 older adults, who were randomly assigned to a 3-y intervention of cocoa extract (500 mg of cocoa flavanols per day) or a placebo [(COcoa Supplement and Multivitamin Outcomes Study) COSMOS-Web, NCT04582617]. Using the alternative Healthy Eating Index in all participants and a urine-based biomarker of flavanol intake in a subset of participants [n = 1,361], we show that habitual flavanol consumption and diet quality at baseline are positively and selectively correlated with hippocampal-dependent memory. While the prespecified primary end point testing for an intervention-related improvement in memory in all participants after 1 y was not statistically significant, the flavanol intervention restored memory among participants in lower tertiles of habitual diet quality or habitual flavanol consumption. Increases in the flavanol biomarker over the course of the trial were associated with improving memory. Collectively, our results allow dietary flavanols to be considered in the context of a depletion-repletion paradigm and suggest that low flavanol consumption can act as a driver of the hippocampal-dependent component of cognitive aging.

Abstract
With more than 633 species, Apanteles is the largest genus within the subfamily Microgastrinae (Hymenoptera, Braconidae). We describe three new species reared from pests of commercial fruits, Apanteles ahuacatl Shimbori, Giacomelli & Fernández-Triana sp. n., A. aratiku Shimbori sp. n., and A. mayochinchipe Shimbori sp. n. They parasitize caterpillars in the subfamily Stenomatinae (Depressariidae): the soursop moth Cerconota anonella (Sepp), in fruits of sweetsop (Annona squamosa L.) and atemoya (Annona squamosa x Annona cherimola Mill.) (Annonaceae), the avocado borer Stenoma catenifer Walsingham, in fruits of avocado (Persea americana Mill.) (Lauraceae), and the cacao shoot borer Stenoma decora Zeller, in fruits and shoots of cacao (Theobroma cacao L.) (Malvaceae). The new Apanteles species are included in an expanded version of the key provided by Fernández-Triana et al. (2014) for the Apanteles adelinamoralesae species group. In addition, the previous record of Apanteles stenomae Muesebeck in Brazil is revised and considered to actually represent the species A. yolandarojasae Fernández-Triana.

Abstract
The new EU regulations on maximum levels of cadmium (Cd) in cacao products sparked research on countermeasures to reduce Cd concentrations in cacao beans. This study was set up to test the effects of soil amendments in two established cacao orchards (soil pH 6.6 and 5.1) in Ecuador. Soil amendments included: 1) agricultural limestone at 2.0 and 4.0 Mg ha-1 y-1, 2) gypsum at 2.0 and 4.0 Mg ha-1 y-1 and 3) compost at 12.5 and 25 Mg ha-1 y-1, all amendments were applied at the surface during two subsequent years. Lime application increased the soil pH by one unit down to 20 cm depth. On the acid soil, leaf Cd concentrations decreased by lime application and the reduction factor gradually rose to 1.5 after 30 months. No effects of liming or gypsum on leaf Cd was found in the pH neutral soil. Compost application in the pH neutral soil reduced leaf Cd concentration with factor 1.2 at 22 months but that effect was absent at 30 months after application. Bean Cd concentrations were unaffected by any of the treatments at 22 months after application (acid soil) or 30 months (pH neutral soil) suggesting that any treatment effects on bean Cd might be even more delayed than in leaves. Soil columns experiments in the laboratory showed that mixing lime with compost largely enhanced the depth of lime penetration compared to lime only. Compost + lime reduced 10-3 M CaCl2 extractable Cd in soil without lowering extractable Zn. Our results suggest that soil liming has the potential to lower Cd uptake in cacao in the long term in acid soils and that the compost + lime treatment should be tested at field scale to accelerate the effects of the mitigation.

Abstract
In vivo aroma release and perception of complex food matrices have been underexplored. The aims of this study were to investigate the effects of (i) fat and sugar content of chocolate-hazelnut spreads on in vivo aroma release and perception and (ii) carrier addition (bread, wafer) on in vivo aroma release and perception of chocolate-hazelnut spread using dynamic nose space analysis (PTR-ToF-MS) and dynamic sensory analysis (TCATA). Carriers were combined with spreads varying in fat and sugar content and were spiked with five volatile organic compounds (benzaldehyde, filbertone, 2-methylpyrazine, delta-dodecalactone, isovaleraldehyde). TCATA profiles from a consumer panel without in vivo nose space analysis (n = 72) and a trained panel performing in vivo nose space analysis (n = 8, triplicate) were compared. TCATA profiles of the spread-carrier combinations obtained by both panels showed similarly that attributes related to the carriers were perceived at the beginning of consumption, whereas attributes related to the spreads were perceived after swallowing. Significant (p < 0.05) and small differences were observed for the attributes cocoa, creamy, milky, sticky and toffee between both panels. In the evaluated reformulation range, fat and sugar content of chocolate-hazelnut spreads had only a limited effect on in vivo aroma release and perception. In contrast, addition of carriers strongly affected in vivo aroma release and perception for all target molecules. The addition of carriers to spreads generally increased aroma release (duration and intensity of aroma release) and decreased aroma perception. The addition of carriers generally reduced the time to reach maximum intensity compared to when spreads were eaten alone for the five volatile organic compounds while perception decreased. We conclude that the strong effect of carrier addition on in vivo aroma release and perception of chocolate-hazelnut spreads highlights the importance of investigating toppings/spreads accompanied with carriers rather than in isolation.

Abstract
The growing threat of food insecurity together with some challenges in demography, health, malnutrition, and income instability around the globe has led researchers to take sustainable solutions to ensure secure production and distribution of food. The last decades have been remarkable in the agri-food supply chain for many food industries. However, vast quantities of food by-products and wastes are generated each year. These products are generally disposed in the environment, which could have remarkable adverse effects on the environment and biodiversity. However, they contain significant quantities of bioactive, nutritional, antioxidative, and aroma compounds. Their sustainable use could meet the increased demand for value-added pharmaceutical, nutraceutical, and food products. The amount of agri-food wastes and their disposal in the environment are predicted to double in the next decade. The valorization of these by-products could effectively contribute to the manufacture of cheaper functional food ingredients and supplements while improving regional economy and food security and mitigating environmental pollution. The main aim of this chapter is to present an understanding of the valorization of the wastes and by-products from cacao, coffee and tea processing with a focus on their bioactive, nutritional, and antioxidant capacity.

Abstract
BACKGROUND 3D printing provides a new way of molding chocolate with complex geometrical structures. The screw extruder can efficiently transport the liquid chocolate, which has been adopted to investigate the effect of the profile of the screw flight on the flow. First, the rheological behavior of the liquid chocolate is measured and the Cross equation is demonstrated as the proper rheological model. Then, based on the rheological behavior, an improved lattice Boltzmann method is creatively proposed, for which the effectiveness is validated by the classical Poiseuille flow. Third, the geometrical structure of the screw extruder is analyzed and transformed. The possible changes in the profiles of the screw flights are listed. Finally, the fluid analysis is conducted and the necessary streamlines figures, cloud charts and velocity distributions are obtained. RESULTS The large dip angle in straight cases has an obvious effect on the velocity distribution and the common flow area. The position of the convex point is the additional important factor, whereas the concave profiles are the most moderate in the proposed cases. CONCLUSION The changes in the profiles will affect the chocolate flow. The work is significant for extrusion theory in 3D printing. © 2022 Society of Chemical Industry.

Abstract
Identifying the effectiveness of agricultural interventions is a challenge faced by many international aid initiatives. This article reports on our efforts to document the success of agricultural aid interventions. The study is focused on evaluating cacao projects in Colombia, specifically on assessing the success of the rural Productive Partnerships Project (PAAP). The two approaches used to assess the project's success included the degree of accomplishment of four of the PAAP project's objectives and a measurement of the project performance at the local level, for which an existing performance index was utilized. Quantitative data were obtained from the project's evaluation platform developed by the PAAP project coordinators. Based on our first evaluation approach, we found that the four project objectives evaluated were not fully accomplished. While our results using the performance index provide baseline data for upcoming work assessing cacao projects' performance, the absence of precedent information constrained its interpretation. Finally, the paper offers feasible, affordable, and practical recommendations that could benefit future program planning and evaluation of international aid interventions, particularly on cacao projects worldwide.

Abstract
Nickel is one of the most released trace elements in the environment and in the case of bioaccumulation in foods and beverages derived from cocoa beans can cause risk to human health. It is very important to understand how plants respond to toxic metals and which are the defense strategies they adopt to mitigate their effects. In the present study we used young plants of T. cacao, submitted to increasing Ni doses (0, 100, 200, 300, 400 and 500 mg Ni kg-1 soil) and evaluated them for a period of 30 days. Doses of Ni, from 300 mg of Ni kg-1 onwards in the soil, promoted changes in photosynthetic, antioxidant, osmoregulatory, transcriptomic and translocation levels, evidenced by the increase in the activity of antioxidant enzymes, proline, glycine betaine, upregulation of the metallothionein 2B gene (Mt2b), and lipid peroxidation of the cell membranes. Foliar gas exchange was severely affected at higher doses of Ni. In addition, reduced levels of stomatal conductivity and transpiration rate were observed from 300 mg Ni kg-1 dose onwards in the soil, which consequently affected CO2 assimilation. Phytostabilization and exclusion mechanisms control the translocation of Ni from the root to the shoot and reduce harmful effects on plant metabolism. Our results highlighted the toxicity of Ni, a trace element often underestimated in T. cacao. In particular, it was noted that doses of 100 and 200 Ni kg-1 soil, although high, do not induce toxicity in T. cacao plants. But Ni toxicity is observed from 300 mg Ni kg-1 soil onwards. This study contributed to the understanding of the harmful effects of higher doses of Ni in cacao plants and the biochemical processes the plant uses to mitigate the effects of this metal.

Abstract
Flavan-3-ols, including the flavan-3-ol monomer (-)-epicatechin, are dietary bioactives known to mediate beneficial cardiovascular effects in humans. Recent studies showed that flavan-3-ols could interact with methylxanthines, evidenced by an increase in flavan-3-ol bioavailability with a concomitant increase in flavan-3-ol intake-mediated vascular effects. This study aimed at elucidating flavan-3-ol-methylxanthine interactions in humans in vivo by evaluating the specific contributions of theobromine and caffeine on flavan-3-ol bioavailability. In ileostomists, the effect of methylxanthines on the efflux of flavan-3-ol metabolites in the small intestine was assessed, a parameter important to an understanding of the pharmacokinetics of flavan-3-ols in humans. In a randomized, controlled, triple cross-over study in volunteers with a functional colon (n = 10), co-ingestion of flavan-3-ols and cocoa methylxanthines, mainly represented by theobromine, increased peak circulatory levels (Cmax) of flavan-3-ols metabolites (+21 ± 8%; p < 0.05). Conversely, caffeine did not mediate a statistically significant effect on flavan-3-ol bioavailability (Cmax = +10 ± 8%, p = n.s.). In a subsequent randomized, controlled, double cross-over study in ileostomists (n = 10), cocoa methylxanthines did not affect circulatory levels of flavan-3-ol metabolites, suggesting potential differences in flavan-3-ol bioavailability compared to volunteers with a functional colon. The main metabolite in ileal fluid was (-)-epicatechin-3'-sulfate, however, no differences in flavan-3-ol metabolites in ileal fluid were observed after flavan-3-ol intake with and without cocoa methylxanthines. Taken together, these results demonstrate a differential effect of caffeine and theobromine in modulating flavan-3-ol bioavailability when these bioactives are co-ingested. These findings should be considered when comparing the effects mediated by the intake of flavan-3-ol-containing foods and beverages and the amount and type of methylxanthines present in the ingested matrixes. Ultimately, these insights will be of value to further optimize current dietary recommendations for flavan-3-ol intake. Abstract
Endotoxemia is a condition caused by increasing levels of lipopolysaccharide (LPS) characterized by an impaired systemic response that causes multiple organ dysfunction. Lacticaseibacillus rhamnosus ATCC 9595 is a strain with probiotic potential which shows immunomodulatory properties. The incorporation of this bacterium in food rich in bioactive compounds, such as cupuaçu juice (Theobroma grandiflorum), could result in a product with interesting health properties. This work evaluated the effects of the oral administration of cupuaçu juice fermented with L. rhamnosus on the outcome of LPS-induced endotoxemia in mice. C57BL/6 mice (12/group) received oral doses (100 µL) of saline solution and unfermented or fermented cupuaçu juice (108 CFU/mL). After 5 days, the endotoxemia was induced by an intraperitoneal injection of LPS (10 mg/kg). The endotoxemia severity was evaluated daily using a score based on grooming behavior, mobility, presence of piloerection, and weeping eyes. After 6 h and 120 h, the mice (6/group) were euthanized for analysis of cell counts (in peritoneal lavage and serum) and organ weight. L. rhamnosus grew in cupuaçu juice and produced organic acids without the need for supplementation. The bacteria counts were stable in the juice during storage at 4 °C for 28 days. The fermentation with L. rhamnosus ATCC 9595 changed the metabolites profile of cupuaçu juice due to the biotransformation and enhancement of some compounds. In general, the administration of L. rhamnosus-fermented juice allowed a significant improvement in several characteristics of endotoxemic status (weight loss, hypothermia, severity index, cell migration). In addition, treatment with fermented juice significantly reduced the weight of the spleen, liver, intestine, and kidneys compared to the saline-treated endotoxemic group. Taken together, our data show that short-term intake therapy of cupuaçu juice fermented with L. rhamnosus ATCC 9595 can reduce systemic inflammation in an experimental model of LPS-induced endotoxemia in mice.

Abstract
The use of fluoride (F) in the prevention of dental caries is established. However, a high amount of F intake during tooth development can cause dental fluorosis The aim of this study was to analyze variations in F concentrations in chocolate bars (CB), chocolate cookies (CC), infant cereals (IC), and chocolate milk drinks (CD) to determine the daily intake of F from different sources by children at the age of risk for developing dental fluorosis. Distinct brands of CB, CC, IC, and CD were analyzed. Fluoride was separated by hexamethyldisiloxane-facilitated diffusion. Analysis was made in triplicate with an F ion-specific electrode. F ingestion (mg/kg body weight) was evaluated with the suggested consumption (0.05-0.07 mg/kg/day) for children aged 24 months (12 kg). The concentrations for all the analyzed products ranged from 0.025 to 1.827 µg/g F. The mean (range) F concentrations were CB= 0.210 ± 0.205 µg/g (0.073-0.698, n = 8), CC = 0.366 ± 0.416 µg/g (0.320-1.827, n = 9), IC = 0.422 ± 0.395 µg/g (0.073-1.061, n = 5), and CD = 0.169 ± 0.170 µg/mL (0.025-0.443, n = 12). The products that had the highest concentration in the categories CB, CC, IC, and CD, respectively, were Nescau-Ball (0.698 µg/g), Passatempo (1.827 µg/g), Milnutri (1.061 µg/g), and Toddynho (0.443 µg/mL). The consumption of only one unit of Toddynho (CD) is equivalent to more than 11% of the maximum suggested daily intake for a 24-month-old child (0.07 mg/kg body weight). When one product from each category is consumed together only once a day, this consumption is equivalent to approximately 24% of the suggested daily intake of fluoride for a 24-month-old child. The presence of high levels of fluoride in certain products suggests that they play a significant role in overall fluoride intake. It is crucial to closely monitor the fluoride content of food and drinks that are consumed by children who are at risk for dental fluorosis, and for product labels to clearly display the fluoride concentrations.

Fine-grade cocoa beans are characterized by their great organoleptic quality. Brazilian cocoa producers increasingly privilege organoleptic quality over yield. Catongo and FL89, fine Brazilian cocoa genotypes from Bahia, are characterized by particular flavors (respectively, kerosene and whisky). The beans IMC67, PA121, and P7 from the state of Pará are genotypes that have high resistance to diseases. Solvent-assisted flavor evaporation (SAFE) aroma extraction was used here to identify and quantify the volatile compounds discriminating these genotypes. The results show that the kerosene aroma of Catongo is likely due to the presence, at high levels, of ethyl acetate and isobutyl acetate. On the other hand, ethyl benzoate, heptanoate, and octanoate, trans-2-nonenal, 1-octen-3-ol, and 3-methylbutanol could play a key role in the whisky notes of FL89. Heptan-2-ol, heptan-2-one, nonan-2-one, linalool (although still more concentrated in IMC67 from Pará state), benzaldehyde, and phenylacetaldehyde also discriminate these beans. Other compounds, although not discriminating, appear important in determining their aromatic quality. The PCA showed that cocoa from Pará state formed a cluster due to similar aromas, while FL89 was the most distinct among the genotypes. Beans from Brazil show great potential and diversity for the fine cocoa market.

Abstract
BACKGROUND Falls and decreased physical function increase markedly with age and result in injury, hospitalization, and premature death. Emerging studies show potential benefits of supplemental cocoa extract on physical performance, including grip strength and walking speed in older adults. However, there are no large, long-term randomized controlled trials of effects of supplemental cocoa extract on falls, muscle performance, and/or fall-related injuries. METHODS The COcoa Supplement and Multivitamin Outcomes Study (COSMOS) is a double-blind, placebo-controlled, 2 × 2 factorial trial investigating effects of supplementation with cocoa extract (500 mg/d, including 80 mg (-)-epicatechin) and/or a multivitamin on prevention of cardiovascular disease and cancer in 21,442 women (≥65 years) and men (≥60 years). COSMOS Effects on Falls and Physical Performance is an ancillary study to COSMOS that will clarify effects of cocoa extract and/or multivitamin supplementation on falls, physical performance, and incident fracture outcomes in older adults. Injurious fall(s) resulting in healthcare utilization and recurrent falls were regularly assessed by follow-up questionnaires in the overall cohort. Incident fractures were also assessed by annual questionnaires. Circumstances surrounding falls and any fall-related injuries will be confirmed by medical record review. Effects of the interventions on 2-year changes in physical performance measures (grip strength, walking speed, and the Short Physical Performance Battery) will be tested in a clinic sub-cohort (n = 603). CONCLUSION Results from this ancillary study will determine whether supplemental cocoa extract slows age-related declines in physical performance and decrease injurious and recurrent falls and fall-related injuries and fractures that are major public health problems in older adults.
