Abstract
Transitioning towards a more plant-based diet can promote sustainable food consumption while simultaneously addressing environmental and health-related issues. Integrated nudging strategies are effective in promoting healthy eating behaviours. Therefore, this study aimed to investigate the effect of an integrated nudging intervention to promote plant-based meals and determine its effect on promoting sustainable food consumption behaviour. The effects of two versions of a meal on the frequency of choosing a plant-based meal were tested through a quasi-experimental pre-post intervention at three educational context canteens. During the intervention, the priming tools were strategically positioned between the meat meal and the plant-based target meal. In total, 3870 purchases were analysed to observe their choices. Additionally, a total of 508 consumers completed a pre- or post-intervention survey. Approximately 60.5 kg (133.4 lbs) less of food waste was generated during the intervention compared to the baseline with a reduction of 6.5 % per plate. The purchase of plant-based meals increased by about 38% from pre-to during-intervention, while meat-based meals decreased by about 19%. The grams of meal consumed per meat-based plate differed significantly from pre-to post-intervention, while that of plant-based did not differ significantly. The environmental assessment reveals that adopting a more plant-based diet and minimizing food waste for each plate significantly reduces the overall environmental impact of the meal. The integrated nudging strategy indirectly influenced sustainable food consumption behaviour through its effect on attitudes and subjective knowledge. Price-health-conscious consumers exhibited higher sustainable food consumption behaviour. These findings suggest that integrated nudging interventions can effectively shift consumer choices towards sustainable food options by influencing their attitudes and knowledge, eventually benefiting environmental sustainability and public health.

Abstract
According to the Global Food Policy Report 2017, nearly 90% of the projected urban population increase by 2050 is going to be concentrated in Africa and Asia. Parallel evidence suggests that poverty and related challenges of food insecurity and undernutrition are also urbanizing. The dynamics underlying urban nutrition is different from rural ones but also arguably represents a more complex scenario. In this review, we synthesize available evidence on urban nutrition (in)security in the Global South. Although focused on nutrition-centric literature, our review also identifies and discusses studies in the contexts of the broader notion of urban food systems. Articles that analyzed any form of mal/nutrition were eligible for inclusion. One hundred sixty-nine articles were shortlisted based on a systematic search strategy, then expanded through a backward and forward literature survey. Our review identifies key emergent themes from a large body of research on urban food systems, noting that surprisingly few address nutrition directly. Rather, current literature on urban nutrition is scattered and skewed with an overt focus on urban agriculture. Our review reveals that the existing literature with direct nutrition relevance in an urban context can be systematically organized across three themes, i.e., urban agriculture, nutrition transition, and social protection. Noticeably, this literature also draws upon successful interventions having implications for urban nutrition. Finally, the review identifies a few research gaps that hinder a holistic view of urban nutrition. These gaps pertain to gender, equity, water (along with sanitation and hygiene), and local governance.

Abstract
The burden of food contamination and food wastage has significantly contributed to the increased prevalence of foodborne disease and food insecurity all over the world. Due to this, there is an urgent need to develop a smarter food traceability system. Recent advancements in biosensors that are easy-to-use, rapid yet selective, sensitive, and cost-effective have shown great promise to meet the critical demand for onsite and immediate diagnosis and treatment of food safety and quality control (i.e. point-of-care technology). This review article focuses on the recent development of different biosensors for food safety and quality monitoring. In general, the application of biosensors in agriculture (i.e. pre-harvest stage) for early detection and routine control of plant infections or stress is discussed. Afterward, a more detailed advancement of biosensors in the past five years within the food supply chain (i.e. post-harvest stage) to detect different types of food contaminants and smart food packaging is highlighted. A section that discusses perspectives for the development of biosensors in the future is also mentioned.

Abstract
As the lack of resources required to meet the demands of a growing population is increasingly evident, plant-based diets can be seen as part of the solution, also addressing ethical, environmental, and health concerns. The rise of vegetarian and vegan food regimes is a powerful catalyzer of a transition from animal-based diets to plant-based diets, which foments the need for innovation within the food industry. Vegetables and fruits are a rich source of protein, and bioactive compounds such as dietary fibres and polyphenols and can be used as technological ingredients (e.g., thickening agents, emulsifiers, or colouring agents), while providing health benefits. This review provides insight on the potential of plant-based ingredients as a source of alternative proteins, dietary fibres and antioxidant compounds, and their use for the development of food- and alternative plant-based products. The application of these ingredients on meat analogues and their impact on health, the environment and consumers' acceptance are discussed. Given the current knowledge on meat analogue production, factors like cost, production and texturization techniques, upscaling conditions, sensory attributes and nutritional safety are factors that require further development to fully achieve the full potential of plant-based meat analogues.

Abstract
Exploring the factors influencing Food Security and Nutrition (FSN) and understanding its dynamics is crucial for planning and management. This understanding plays a pivotal role in supporting Africa's food security efforts to achieve various Sustainable Development Goals (SDGs). Utilizing Principal Component Analysis (PCA) on data from the FAO website, spanning from 2000 to 2019, informative components are derived for dynamic spatio-temporal modeling of Africa's FSN Given the dynamic and evolving nature of the factors impacting FSN, despite numerous efforts to understand and mitigate food insecurity, existing models often fail to capture this dynamic nature. This study employs a Bayesian dynamic spatio-temporal approach to explore the interconnected dynamics of food security and its components in Africa. The results reveal a consistent pattern of elevated FSN levels, showcasing notable stability in the initial and middle-to-late stages, followed by a significant acceleration in the late stage of the study period. The Democratic Republic of Congo and Ethiopia exhibited particularly noteworthy high levels of FSN dynamicity. In particular, child care factors and undernourishment factors showed significant dynamicity on FSN. This insight suggests establishing regional task forces or forums for coordinated responses to FSN challenges based on dynamicity patterns to prevent or mitigate the impact of potential food security crises.

Abstract
Although edible rhinoceros beetle (Oryctes sp.) larvae are popularly consumed in many countries worldwide, they are prepared using different methods such as boiling, roasting, toasting, and deep-frying, whose effect on nutritional value and microbial safety is scarcely known. Here we investigated the effect of these methods on the nutritional value and microbial safety of Oryctes sp. larvae. Our hypothesis was that cooking the grubs using the four methods had no effect on their nutritional content and microbial loads and diversity. The grubs were analyzed for proximate composition, and fatty and amino acid profiles using standard chemical procedures; and microbial safety using standard culturing procedures. Deep-frying reduced protein and carbohydrate content, but elevated fat content. Boiling lowered ash content, but increased fibre and carbohydrate composition. Roasting and toasting increased protein and ash contents, respectively. Forty fatty acids were detected in the larvae, of which levels of only five were not significantly affected by cooking method, while the levels of the others were differentially affected by the different cooking methods. Amino acid profiles and levels were largely comparable across treatments, but lysine and arginine were higher in all cooked grubs than raw form. All the cooking methods eliminated Enterobacteriaceae, Shigella sp. and Campylobacter sp. from the grubs. Except boiling, all methods reduced total viable count to safe levels. Salmonella sp. were only eliminated by toasting and roasting; while boiling promoted growth of yeast and moulds. Staphylococcus aureus levels exceeded safety limits in all the cooking methods. These findings offer guidance on the type of method to use in preparing the grubs for desired nutritional and safety outcomes.

Abstract
Carbon dots (CDs)-enabled agriculture has been developing rapidly, but small-scale synthesis and high costs hinder the agricultural application of CDs. Herein, biomass-derived carbon dots (B-CDs) were prepared on a gram-level with low cost, and these B-CDs significantly improved crop photosynthesis. The B-CDs, exhibiting small size and blue fluorescence, were absorbed by crops and enhanced photosynthesis via light-harvesting. Foliar application of B-CDs (10 mg·kg-1) could promote chlorophyll synthesis (30-100 %), Ferredoxin (Fd, 40-80 %), Rubisco enzyme (20-110 %) and upregulated gene expression (20-70 %), resulting in higher net photosynthetic rates (130-300 %), dry biomass (160-300 %) and fresh biomass (80-150 %). Further, the B-CDs could increase crop photosynthesis under nutrient deficient conditions, which was attributed to the release of nutrients from B-CDs. Therefore, the B-CDs enhanced the photosynthesis via enhancing light conversion and nutrient supply. This study provides a promising material capable of enhancing photosynthesis for sustainable agriculture production.

Abstract
Food security constitutes a foundational cornerstone for social stability, with the achievement of sustainable agricultural production serving as a vital step towards this objective. Currently, the untimely harvesting of unripe wheat by farmers has led to a decline in food production, thereby posing a significant threat to the sustainability of China's food system and exacerbating food insecurity. Although the Chinese government has implemented various measures in response, their effectiveness has been limited. Limited scholarly literature exists on this particular issue. To advance food security in China, this study develops a tripartite evolutionary game model involving farmers, the government, and breeding enterprises. Adopting a systemic perspective, this study examines the interactions and impact mechanisms among these key actors during the wheat harvesting process. The findings indicate that the government should prioritize policies that enforce penalties. By implementing penalties within a reasonable range, the government can mitigate farmers' production costs and enhance the market price of grain. This approach discourages farmers from harvesting immature wheat and contributes to enhancing food security. Based on the research findings, this paper provides practical recommendations to guide the government in addressing food security governance issues.

Abstract
The physicochemical, structural and functional properties of proso millet protein from waxy and non-waxy proso millet were investigated. The secondary structures of proso millet proteins consisted mainly of a β-sheet and ɑ-helix. The two diffraction peaks of proso millet protein appeared at around 9° and 20°. The solubility of non-waxy proso millet protein was higher than that of waxy proso millet protein at different pH values. Non-waxy proso millet protein had a relatively better emulsion stability index (ESI), whereas waxy proso millet protein had a better emulsification activity index (EAI). Non-waxy proso millet protein showed a higher maximum denaturation temperature (Td) and enthalpy change (ΔH) than its waxy counterpart, indicating a more ordered conformation. Waxy proso millet exhibited higher surface hydrophobicity and oil absorption capacity (OAC) than non-waxy proso millet, suggesting that the former may have potential applications as a functional ingredient in the food industry. There was no significant difference in the intrinsic fluorescence spectra of different waxy and non-waxy proso millet proteins at pH 7.0.

Abstract
IntroductionThe scarcity of resources have affected food production, which has challenged the ability of Iran to provide adequate food for the population. Iterative and mounting sanctions on Iran by the international community have seriously eroded Iran's access to agricultural technology and resources to support a growing population. Limited moisture availability also affects Iran's agricultural production. The aim of this study was to analyze the influence of inflation, international sanctions, weather disturbances, and domestic crop production on the price of rice, wheat and lentils from 2010 to 2021 in Iran.MethodData were obtained from the statistical yearbooks of the Ministry of Agriculture in Iran, Statistical Center of Iran, and the Central Bank of Iran. We analyzed econometric measures of food prices, including CPI, food inflation, subsidy reform plan and sanctions to estimate economic relationships. After deflating the food prices through CPI and detrending the time series to resolve the non-linear issue, we used monthly Climate Hazards group Infrared Precipitation with Stations (CHIRPS) precipitation data to analyze the influence of weather disturbances on food prices.Results and discussionThe price of goods not only provides an important indicator of the balance between agricultural production and market demand, but also has strong impacts on food affordability and food security. This novel study used a combination of economic and climate factors to analyze the food prices in Iran. Our statistical modeling framework found that the monthly precipitation on domestic food prices, and ultimately food access, in the country is much less important than the international sanctions, lowering Iran's productive capability and negatively impacting its food security.

Abstract
Environmental crises and resource depletion have adversely affected the food security around the world. Food security in the future can be guaranteed by sustainable agriculture that respects the environment. So, it is necessary to decrease the energy consumption of resources for agricultural productions to achieve the maximum sustainability. For agricultural productions, environmental and energy issues are completely interrelated, and a comprehensive evaluation is necessary to manage them in all productions. In this study, energy, environmental, and economic indicators in cantaloupe production were studied. The studied energy indices included energy efficiency, energy productivity, net energy gain, and energy intensity. Life cycle method based on ISO 14040 standard was used to evaluate the environmental impacts. This method includes goal statement, identification of inputs and outputs, and a system for assessing and interpreting the environmental impacts of various agricultural productions. Also, for economic analysis, the average prices of inputs and outputs and also net return (NR), gross return (GR), and profit-to-cost ratio were used. The results showed that nitrogen fertilizer (32.28%) and diesel fuel (30.52%) had the highest and cantaloupe seeds (0.39%), and oil consumption in tractor engines (0.43%) had the lowest share of energy consumption, respectively. Energy efficiency, energy productivity, energy intensity, and net energy gain were estimated 0.56, 0.70 kg MJ-1, 1.41 MJ kg-1, and - 11,775.86 MJ ha-1, respectively. The results of the present status of environmental impacts showed that the most effective factor in climate change is direct emissions from the diesel fuel. Also, indirect emissions from phosphorus and urea fertilizers had the highest effect on ecosystem quality. Various machine operations such as primary and secondary plowing, spraying, and transportation were the main causes of high diesel fuel consumption. Economic analysis showed that the profit-to-cost ratio and the productivity values were calculated about 1.6 and 7.27, respectively, which means that for every dollar spent in cantaloupe farms, it produced 7.27 kg of cantaloupe production. The variable costs were estimated at 1154.5 and fixed cost was 1487 $ha-1. Among the variable costs, transportation and fuel costs were the highest with 64.3%. Decreasing the diesel fuel consumption by using appropriate farm management methods and using the reduce tillage methods can play an effective role in reducing the consumption of this input and improving the energy, environmental, and economic indicators in cantaloupe production.

Abstract
The link between meat production and climate change has fostered increasing social debate in recent years. Livestock is a major source of greenhouse gas emissions, among other global problems attached to the meat industry. However, this debate is often presented as one-dimensional, without a comprehensive approach. As the media plays a key role in shaping public perceptions of nutrition, this study aims to examine how the matter of food transition and climate change is addressed by three centre-left media outlets from Germany (Der Tagesspiegel), the United Kingdom (The Guardian) and Spain (El País). A search including the words *meat* and *climate change* in different languages, performed over one year (2021), resulted in a sample of available news items (N = 273). Using quantitative and qualitative methods, we analysed the coverage in terms of scope and use of frames. The results showed a scant number of news items combining climate change and meat consumption, though there were some differences indicating a greater awareness in the United Kingdom. Most of the news items from the three countries applied frames based on solutions from an environmental perspective. Media attention was discontinuous and sometimes determined by political debates, which made it difficult to reflect upon the underlying issues.

Abstract
Many youth in Manitoba are not food secure. Newcomer youth may be more vulnerable to food insecurity. Further, it has been suggested that being food secure does not ensure a nutritionally adequate diet. This study examined survey data from 1,347 grade nine students to describe and compare food security by newcomer status. Survey data were also used to compare the dietary intakes, eating behaviors, and self-reported health of newcomer youth by food security status. Food security status between newcomer and non-newcomer youth was not significantly different, however, being food secure was not enough to have optimal nutritional health and well-being.

Abstract
Ensuring nutrient adequacy for all is a common goal of the international community, but spatial difference is one of the barriers to its development. Exploring nutrient adequacy in coastal areas of China can help regions where food production systems and economic development systems are under mutual stress to reduce nutritional disparities and improve nutrition levels. This paper used the transformation food-to-nutrient model to calculate nutrient production and nutrient consumption in 11 coastal provinces of China and analyzed their spatial patterns, after which spatial differences in nutrient adequacy (including energy, protein and fat) were analyzed. The results showed that nutrient production and nutrient consumption in coastal areas of China showed significant spatial differences, in which nutrient production was mainly concentrated in land food, and the three provinces of Shandong, Jiangsu and Hebei contributed more. Guangdong had the highest nutrient consumption; in contrast, Shanghai, Tianjin, and Hainan had the lowest consumption. Nutrient adequacy was not optimistic, with fat being particularly significant, and nutrient surplus quantity was mainly concentrated in Shandong and Jiangsu and nutrient deficiency quantity was mainly concentrated in Guangdong. Overall, the study area had adequate levels of protein and was deficient in energy and fat levels, with surplus or shortage of 2.41 million tonnes, 2620 billion kcal and 9.97 million tonnes, respectively.

Abstract
The rapid growth of the world population has increased the food demand as well as the need for assurance of food quality, safety, and sustainability. However, food security can easily be compromised by not only natural hazards but also changes in food preferences, political conflicts, and food frauds. In order to contribute to building a more sustainable food system-digitally visible and processes measurable-within this review, we summarized currently available evidence for various information and communication technologies (ICTs) that can be utilized to support collaborative actions, prevent fraudulent activities, and remotely perform real-time monitoring, which has become essential, especially during the COVID-19 pandemic. The Internet of Everything, 6G, blockchain, artificial intelligence, and digital twin are gaining significant attention in recent years in anticipation of leveraging the creativity of human experts in collaboration with efficient, intelligent, and accurate machines, but with limited consideration in the food supply chain. Therefore, this paper provided a thorough review of the food system by showing how various ICT tools can help sense and quantify the food system and highlighting the key enhancements that Industry 5.0 technologies can bring. The vulnerability of the food system can be effectively mitigated with the utilization of various ICTs depending on not only the nature and severity of crisis but also the specificity of the food supply chain. There are numerous ways of implementing these technologies, and they are continuously evolving.

Abstract
Promoting sustainable diets might contribute toward achieving sustainable development goals. Considering the importance of national food-based dietary guidelines (FBDGs), this study aimed to assess and compare the sustainability dimensions of the usual Iranian dietary intakes with sustainable optimal diets based on Iranian (2006 and 2015 versions), Mediterranean, and vegetarian FBDGs. The usual dietary intakes of Iranian households were estimated using household expenditure survey data. Diet sustainability, including environmental (water, carbon, and land) footprints, cost, and nutrient-rich food (NRF) index, was calculated for the usual diet and compared with those of different FBDGs. Using linear and goal programming, optimal food models were calculated by minimizing environmental footprints and cost and maximizing NRF simultaneously for each FBDG, while maintaining nutritional considerations recommended by the FBDGs. Replacing the usual dietary intake of Iranians with the optimal diet based on the 2016 Iranian FBDG was associated with reductions equal to 20.9% for water footprint, 22.48% for carbon footprint, 20.39% for land footprint, 31.83% for cost, and 7.64% increase in NRF index. The optimal model based on the 2016 Iran FBDG was 10% more sustainable compared with the 2005 version. Changing the usual consumption of Iranians to the optimal model based on the Mediterranean pyramid was accompanied by the highest NRF index, lower environmental footprints, and cost compared to other models. The recent Iranian FBDG, compared with the older one, was more sustainable. Considering the dimensions of a sustainable diet for future FBDG revisions is recommended.

Abstract
Due to the importance of sustainability in the world, we follow the missing pieces of the puzzle of sustainable agriculture and food security as a huge gap in the literature. To achieve this goal, a survey was analyzed to assess the linkage between these two concepts in the rural areas in Lorestan province in Iran. The status of food security was assessed using US Household Food Security Survey Module (HFSSM). A standard questionnaire extracted from the related literature was applied to calculate sustainability indicators. The results showed that the status of food security among households with no children (70%) was better than those with one or more children (28%). According to the Tobit model, none of the sustainability dimensions had a significant association with food insecurity. The results support the fact that the assessment of agricultural sustainability at the microeconomic level, short-term period, and a small, specified location cannot lead to reliable results due to the similar behaviors of farmers in these areas. The low level of agricultural sustainability is due to the lack of macroeconomic policies in the region to promote and disseminate the principles of sustainability, lack of plans and actions to promote sustainability by stakeholders and policymakers, ignorance of the target community, as subsistence producers who fall into a deprivation trap. The results suggest that policymakers should use two short-term and long-term strategies to improve the level of agricultural sustainability and increase food security status.

Abstract
Temperature has a large influence on insect abundances, thus under climate change, identifying major drivers affecting pest insect populations is critical to world food security and agricultural ecosystem health. Here, we conducted a meta-analysis with data obtained from 120 studies across China and Europe from 1970 to 2017 to reveal how climate and agricultural practices affect populations of wheat aphids. Here we showed that aphid loads on wheat had distinct patterns between these two regions, with a significant increase in China but a decrease in Europe over this time period. Although temperature increased over this period in both regions, we found no evidence showing climate warming affected aphid loads. Rather, differences in pesticide use, fertilization, land use, and natural enemies between China and Europe may be key factors accounting for differences in aphid pest populations. These long-term data suggest that agricultural practices impact wheat aphid loads more than climate warming.

Spatial Differences in Diet Quality and Economic Vulnerability to Food Insecurity in Bangladesh: Results from the 2016 Household Income and Expenditure Survey. SUSTAINABILITY 2022. Abstract
The study explored the spatial differences in diet quality and economic vulnerability to food insecurity with the association of sociodemographic characteristics at the household level in Bangladesh. This study was a secondary data analysis of Household Income and Expenditure Survey (HIES) data of 2016. Both statistical and spatial analyses were applied while assessing diet qualities in terms of the household dietary diversity score (HDDS), percentage of food energy from staples (PFES), and percentage of expenditure on food (PEF) as an indicator of the economic vulnerability to food insecurity (EVFI). The study’s findings revealed that the quality of people’s diets worsened as they moved from urban to rural area, and EVFI increased as they moved from the center to the periphery of the country. Nationally, the average HDDS was about 6.3, and the average PFES per household per day was about 70.4%. The spatial distribution of HDDS and PFES showed that rural regions in terms of settlements and the north, northwest and southeast regions had mostly low diet diversity. Besides, the average PEF per household per day was about 54%, with the highest in Mymensingh (57.4%) and the lowest in Dhaka division (50.2%). The average PEF in the households illustrated was highest in rural (55.2%) and lowest in the city (45.7%). Overall, based on the PEF at the sub-district level, the medium level of vulnerability comprised the highest share (69%) in Bangladesh. Age, gender, literacy, educational qualification and religion of the household’s head along with the number of earners, monthly income, area of settlements and divisions were significantly correlated with HDDS, PFES and EVFI. The study findings suggest that targeted interventions, including access to education, women empowerment and employment generation programs should be implemented in peripheral areas (north, northwest and southeast) to increase diet quality and minimize economic vulnerability to achieve sustainable food and nutrition security in Bangladesh.

Abstract
Understanding the dynamics of food trade, which involves a corresponding virtual trade in environmental resources, is relevant for its effects on the environment. Among the socioeconomic factors driving the international food market, trade agreements play a significant yet poorly understood role in facilitating access to worldwide trade. Focusing on the global trade of grain from 1993 to 2015, we investigate the role of trade agreements in activating new linkages and increasing traded volumes and their environmental implications. Through a data-driven approach, we show that the activation of a trade agreement among countries induces a more than six-fold increase in the probability of establishing a new link. Also, the presence of a trade agreement over time, not just its activation, relates to a more stable market since it reduces the probability of link deactivation by more than half. The trade links covered by agreements show larger flows and smoother inter-annual fluctuations. Furthermore, trade agreements encourage the development of more water-efficient flows by stimulating the exchange of crops with high water productivity values. The average economic water productivity of crops traded under trade agreements increases by 62% when considering total virtual water and even by 93% when focusing on blue water.

Abstract
The present experiment addressed the effects of two phosphorus regimes (30 and 90 kg ha−1, hereafter P30 and P90) on yield and composition of eggplant fruits in ‘Birgah’ and ‘Dalia’, whether or not these cultivars were grafted onto Solanum torvum ‘Espina’. The P30 regime did not reduce yield, and promoted fruits’ dry matter and total phenols content, along with their concentrations of macronutrients, mesonutrients (S and Na) and micronutrients (mostly Cu, B, Zn); however, their Fe concentrations were depressed. The rootstock ‘Espina’ increased fruit yield, dry matter content, epicarp chroma (in ‘Birgah’) and Ca content, together with their concentrations of B and Zn (especially at P30), but reduced their Fe content, mostly under P30. Thus, the reduced P supply and grafting proved to be effective tools to enhance fruit yield, carpometric and almost all nutritional traits in eggplant, in a framework of more sustainable crop management. However, the reduced fruit concentration of Fe suggests that the affinity of the rootstock with specific micro minerals should be taken into account, along with the option to adopt complementary practices (e.g., targeted micronutrient fertilizations) to manage the micro mineral composition of eggplants.

Abstract
Malnutrition is one of the major challenges the developing world is currently facing, whether it is caused by climate change, terrorism and conflict, or demographic shifts. Poverty is the main cause of malnutrition in this part of the world, and no progress is possible without the alleviation of poverty to reduce malnutrition. Reducing household vulnerability and increasing household resilience is the pathway to sustainable malnutrition management. Malnutrition has been a major threat to the health and development of children in developing countries, presenting as high levels of micronutrient deficiencies, stunting, and global acute malnutrition. The rates of malnutrition of all forms are above the thresholds accepted by the WHO in some regions. To this end, the resilience program on achieving nutrition in a developing country through at-home learning activities for nutritional rehabilitation and dietary promotion (known as FARN) reported, in this case, successful results from both statements from beneficiaries and non-beneficiaries on the reduction and management of malnutrition in their health centers. FARN activity encourages the consumption of locally available foods not only to eradicate malnutrition but also to protect the ecosystem and sustainable nutrition security. This is much like the saying, “Give a man a fish and you feed him for a day. Teach a man to fish and you feed him for a lifetime” to the vulnerable people; parents' knowledge of their child's nutritional status and the use of local-based foods diets showed improvement, which is proof of the impact of the resilience program. It can be concluded that the resilience program through its activities at the level of the selected community significantly affected the factors and degree of persistence of malnutrition and the level of resilience of the populations. Thus, the FARN program showed resounding success in its ability to promote sustainable malnutrition management.

Abstract
Food resource is an important bond that connects human beings and nature. In this study, we investigated the changes in food consumption and nutrition intake in Kazakhstan from a spatial and temporal perspective, from 2001 to 2018. The data were obtained from the Bureau of Statistics, international organizations and our social interview work. After the start of the 21st century, it was found that per capita food consumption significantly increased; however, the consumption of crop, vegetables and milk decreased. Per capita meat consumption was similar in both urban and rural areas. However, some food consumption showed differences between urban and rural areas. Changes of food consumption quantity and structure also had some effects on nutrient intake and the proportion of nutrients. Per capita energy intake in the national, urban and rural areas all increased remarkably. The energy intake changes in eastern states increased much more than that in western states. Protein intake in rural and urban areas was similar; however, the gap between carbohydrates and fat intake in urban and rural areas increased. The intake of protein, carbohydrates and fat in different states showed the same trend. Food consumption and nutrition intake are affected by economic, social and ecological factors.

Abstract
Amino acids are well known as natural stimulators of plant growth and are widely used to promote crop yield and quality. Several studies have been conducted to investigate the effects of amino acid (s) as a foliar spray on a variety of plant species. However, the effects of soil amendment of different concentrations of amino acid water-soluble fertilizer on the physiological characteristics, yield, and quality of pepper remain unclear. Following this, three experimental sets of amino acid water-soluble fertilizer in the ratio 1.8: 2.7: 3.6 kg including control (CK) were conducted in Lintao county, Gansu province. The treatments were applied through furrow method at 6 weeks after planting. The results showed that physiological characteristics of the pepper plants, such as chlorophyll a (1.35 mg g−1), and b (0.67 mg g−1), total chlorophyll (2.02 mg g−1), carotenoid (0.63 mg g−1), ETR (26.25 µmol m−2s−1), Fv/Fm (0.75), Qp (0.92) contents of the leaves were increased by the 1.8 kg treatment while NPQ (71.37%) and root activity (2185.52 µg g−1 h−1) were improved by the 3.6 kg treatment compared to the control. Fertilization with 2.7 kg of amino acid water-soluble fertilizer also had a significant influence on fruit length (25.50 cm), and yield of pepper (37.92 t ha−1) while fruit diameter (24.51 mm), firmness (5.30 kg cm−2), fresh (48.10 g) and dry (4.71 g) weights were higher in the 1.8 kg treatment compared to the control. The lowest rate of fertilizer (1.8 kg) applied again resulted in a significant increase in soluble protein (79.79%), capsaicin (5.80 mg g−1), dihydrocapsaicin (1.08 mg g−1), vitamin C (72.33%) and the essential and non-essential amino acid contents of the pepper which ranged from (235.15 to 11.16 µg g−1) and (1,605.10 to 16.63 µg g−1) respectively, while soluble sugar (9.02%) was enhanced by 3.6 kg treatment compared to the control. The findings suggest that soil amendment with low concentration of amino acid water-soluble fertilizer (1.8 kg) could be successfully used to improve the physiological characteristics and fruit quality of peppers in vegetable production.

Abstract
Recent calls for a global food transformation have centered on simultaneously improving human and environmental health, recognizing that food and nutrient diversity have declined over time while food systems have exacted a heavy climate and ecological toll. Grain legumes and coarse grain crops provide important human nutrition and environmental benefits, but the production and consumption of many of these crops remains relatively low compared to major commodities, such as maize, wheat, rice, and soy. Outstanding hurdles to scaling up these “minor commodity” crops include (among other things) their relatively lower yields, and lower farmer adoption, based partly on actual or perceived profitability and marketability. We hypothesize that these limitations are attributable in part to unequal funding for these crops' research and development (R&D) both on a national and global scale. In the United States, we show that investment patterns for a snapshot of USDA-funded research grants from 2008 to 2019 consistently favor major commodity crops, which received 3 to 4.5 times more funding and 3 to 5 times as many grants than the minor commodity crop groups. This current USDA funding allocation poses a barrier to food system transformations. Achieving nutritious diets for planetary health requires more public agricultural investment toward minor commodity crops and increased collaboration between public health, nutrition, agriculture, and environmental sectors.

Abstract
Serious issues and challenges of the world’s population are represented by dwindling natural food resources and the scale-up of sustainable food manufacturing. Therefore, the valorization of co-products from the food industry represents new methods for food development. The principal goal of the study was to capitalize rose hip (Rosa canina) co-product powder in extrudates, highlighting its influence on extrusion parameters, physicochemical, and nutritional characteristics. The water absorption index, swelling index, and hygroscopicity increased with the rose hip co-product addition. Furthermore, water solubility index, expansion index, porosity, image parameters (area and perimeter) of the extrudates decreased. Lycopene, β-Carotene, Zea-esters, and lutein were the main carotenoids identified in the extrudates; whereas Catechin, Di-gallic acid, Procyanidin dimmer 1, Procyanidin dimmer 2, and Isorhamnetin-glucuronide were the main flavonoids. Strong Pearson correlations were identified between carotenoids, total flavonoids, vitamin C, total folate, and antioxidant activity. Valorization of the Rosa canina powder co-product led to value-added products—corn extrudates—rich in bioactive compounds.

Abstract
This paper reports the findings of an ethnographic study that involved working with local organizations, food advocates, and communities to develop strategies for expanding the nascent Northwest Territories (NWT), Canada agri-food industry. The NWT represents a unique case study in that the fledging agri-food industry has been recognized for its promise in contributing to the core goals of the transitioning NWT food system. The study is guided by two research questions: (1) How is the promise of the emerging NWT agri-food industry framed within the context of the broader food system? (2) Given this framing of the NWT agri-food industry, how can it contribute to the sustainability of the NWT food system and to the goals of food security, poverty reduction, nutrition, and economic development? Grounded in a food systems approach, we used a correlative, evolutionary SWOT analysis to profile the nascent NWT agri-food industry within the context of the existing NWT food system. Through further thematic analysis, we identify and describe two dominant narratives (agri-food industry business case narrative and agri-food industry implications narrative) and key themes within the narratives based on an adapted food systems framework. The agri-food business case narrative highlights discourse articulating the business or commercial viability for a local agri-food value chain to function, evolve, and expand. The agri-food industry implications narrative envisions the ways in which the emerging NWT agri-food industry may interact within the existing NWT food system, highlighting potential environmental, social, cultural, and political implications of an expanding commercial-based agri-food value chain. Within the two narratives, certain subcomponents of the NWT agri-food system appear to be more prevalent, including climate, soil, and ecosystems, policy/regulations/governance, socio-cultural norms, knowledge, inputs, finance, production, and consumption. We make policy and practice recommendations for co-designing an agri-food industry that serves the multiple goals of the NWT food system. As an exploratory, descriptive-structural analysis the study provides a critical empirical basis for future in-depth, fully integrated synthesis of the complex social, cultural, economic, political, and ecological dynamics shaping Northern food systems in transition.

Abstract
BACKGROUND Selenium (Se) and iodine (Io) are important micronutrients for the proper functioning of the thyroid gland, as they are crucial for the synthesis and activation of the thyroid hormones (TH) triiodothyronine (T3) and thyroxine (T4). OBJECTIVE To evaluate the Se and Io nutritional status among schoolchildren. METHODOLOGY Cross-sectional, descriptive and analytical study conducted in 982 schoolchildren aged 6-14 years from public schools in the state of Bahia, Brazil. Sociodemographic and anthropometric variables, as well as urinary Se (USC) and Io concentrations (UIC) using the inductively coupled plasma mass spectrometry (ICP-MS) method and thyroid-stimulating hormone (TSH) from filter paper blood collection, were evaluated. RESULTS The median USC and UIC were 38.7 and 210.0 (IQR: 26.8-52.9 and 129.3-334.1 μg/L, respectively). The prevalence of iodine deficiency and excessive UIC were observed in 17.1% and 30.9% of schoolchildren, respectively. Concomitant low USC and IoD was found in 3.9% of schoolchildren. There was a positive correlation between USC and UIC (r = 0.60; p = 0.00). The median TSH was 0.95 (IQR: 0.69-1.30 µUI/L). CONCLUSIONS This study demonstrates that USC is a good biomarker for assessing Se status, meantime more studies are needed to establish cutoff USC in child population. Despite adequate median intake, a subgroup of schoolchildren had IoD and low USC. The correlation between UIC and USC point at the importance of two micronutrients, raising the question whether measuring Se should be included in monitoring programs that address the prevention of nutritional disturbances.

Abstract
Indigenous communities across the globe, especially in rural areas, consume locally available plants known as Traditional Food Plants (TFPs) for their nutritional and health-related needs. Recent research shows that many TFPs are highly nutritious as they contain health beneficial metabolites, vitamins, mineral elements and other nutrients. Excessive reliance on the mainstream staple crops has its own disadvantages. Traditional food plants are nowadays considered important crops of the future and can act as supplementary foods for the burgeoning global population. They can also act as emergency foods in situations such as COVID-19 and in times of other pandemics. The current situation necessitates locally available alternative nutritious TFPs for sustainable food production. To increase the cultivation or improve the traits in TFPs, it is essential to understand the molecular basis of the genes that regulate some important traits such as nutritional components and resilience to biotic and abiotic stresses. The integrated use of modern omics and gene editing technologies provide great opportunities to better understand the genetic and molecular basis of superior nutrient content, climate-resilient traits and adaptation to local agroclimatic zones. Recently, realizing the importance and benefits of TFPs, scientists have shown interest in the prospection and sequencing of TFPs for their improvements, cultivation and mainstreaming. Integrated omics such as genomics, transcriptomics, proteomics, metabolomics and ionomics are successfully used in plants and have provided a comprehensive understanding of gene-protein-metabolite networks. Combined use of omics and editing tools has led to successful editing of beneficial traits in several TFPs. This suggests that there is ample scope for improvement of TFPs for sustainable food production. In this article, we highlight the importance, scope and progress towards improvement of TFPs for valuable traits by integrated use of omics and gene editing techniques.

Abstract
International food system initiatives have led the efforts to combat the threats to global food security resulting from the failure of the current food systems. This study set out to investigate and assess the contributions of global food system initiatives in tackling the food system challenges. In assessing the food system initiatives, we develop a three-step methodology for Food System Initiative (FSI) selection and then conduct a qualitative evaluation using relevant indicators based on food system failure narratives. Furthermore, the authors synthesize present literature in the context of the extent to which coronavirus disease 2019 (COVID-19) pandemic has compounded food system challenges and, together with the response-to-failure analysis, recreate a resilient transformational framework, which will be an invaluable tool to FSI during and after the COVID-19 era, and guarantee we build back better. The findings show that while considerable effort is being made in addressing food system failures, the current COVID-19 pandemic has exacerbated the challenges and would require a paradigm shift not only in the implementation of conventional food system initiatives but also in the role of food system actors. The food system resilience framework presented provides useful pathway in expanding the understanding of the role of all key stakeholders and in identifying tipping points for building the desired resilience moving forward.

Abstract
The relationship between aquatic foods and food nutrition and security is increasingly recognised in policy and practice, yet many governance instruments do not acknowledge or support this important connection. The most effective policy approaches to support the link between these sectors, or 'best practices' are currently unknown. We reviewed relevant governance instruments from multiple countries to identify how these instruments linked fisheries, aquaculture and food security and nutrition, including the policy framing and evidence of political commitment. Of the documents connecting the sectors (65%), the majority did so in the context of developing the fisheries/aquaculture sector to increase aquatic food availability and/or access (51%), followed by developing the fisheries/aquaculture sector as a livelihoods approach to indirectly improve food security (33%), for example, through income generation. Sectoral links established in the context of nutrition-sensitive approaches to fisheries and aquaculture were less common (5%). Almost one third (29%) of instruments supported the connection between aquatic foods and food security and nutrition across three or more different contexts relevant to food security or food systems, while 12% indicated a very high level of commitment. We recommend some key attributes for future policy development to help build coherence between sectors and to help frame coherent food system-based policies.

Abstract
The COVID-19 pandemic has drawn attention to food insecurity in developed countries. Despite adequate levels of agricultural production, consumers experienced demand-induced scarcity. Understanding the effects on nutrition and the environment is limited, yet critical to informing ecologically embedded mitigation strategies. To identify mitigation strategies, we investigated wheat flour and egg retail shortages in the United Kingdom (UK), focusing on consumer behavior during the COVID-19 lockdown. The 6 Steps for Quality Intervention Development (6SQuID) framework informed the methodology. Mixed qualitative and quantitative methods were used to pinpoint the causes of the shortages, and ecological impacts of consumer behavior were related using survey results (n = 243) and environmental and nutritional databases. This research confirmed consumers' narrowed consideration set, willingness to pay, and significant reliance on processed foods which indicates agronomic biofortification, breeding strategies, selective imports and improved processed food quality are important mitigation strategies. We identified positive and negative synergies in consumer, producer and retailer behavior and related these to mitigation strategies in support of a circular bio-economy for food production. We found that the substitutes or alternative foods consumed during the COVID-19 lockdown were nutritionally inadequate. We identified the most ecological substitute for wheat flour to be corn flour; and for eggs, yogurt. Our findings also indicate that selenium deficiency is a risk for the UK population, especially to the increasing fifth of the population that is vegetarian. Due to the need to implement short-, medium-, and long-term mitigation strategies, a coordinated effort is required by all stakeholders.

Abstract
Introduction: Lebanon, a middle-income Eastern Mediterranean country, continues to face detrimental economic, health and socio-political challenges that are further exacerbated by the COVID-19 pandemic. In parallel, the country has been experiencing a remarkable nutrition transition that has contributed to the burden of malnutrition and non-communicable diseases, all imposing serious repercussions on people's livelihoods, food security, and health. Such circumstances have prodded public demand for guidance on affordable, healthy, and sustainable dietary choices to alleviate the burden to this emerging unfortunate situation. Objective: The purpose of this study is to provide evidence-based sustainable and healthy dietary recommendations which balance the tradeoffs among the health, environmental footprint and cost dimensions of sustainability, while closely resembling the usual food consumption pattern. Methodology: Data from the latest available national food consumption survey was used as the usual food consumption pattern of Lebanese adults. Optimized dietary patterns were calculated using the optimization model Optimeal which produced patterns most similar to the usual diet and simultaneously satisfying the three main sets of constraints: health, environmental footprints, and cost. The identified healthy and sustainable dietary options were vetted by multiple key stakeholders from the government, academia, international, and national non-governmental organizations. Results: Compared to the usual intake, the optimized diet included higher intakes of whole grain bread, dark green vegetables, dairy products, and legumes, and lower intakes of refined bread, meat, poultry, added sugars, saturated fat, as compared to usual national mean consumption. The optimized dietary model resulted in a decrease in the associated environmental footprints: water use (-6%); and GHG (-22%) with no change in energy use. The cost of the optimized diet was not different from that of the usual intake. Conclusion: An evidence-based sustainable and healthy diet was developed for Lebanon providing the population and policy makers with some answers to a complex situation. Findings highlight the need for the development of sustainable food based dietary guidelines for Lebanon to promote diets that are healthy, sustainable, culturally acceptable, and affordable and that can alleviate food insecurity among the general population.

Abstract
Spirulina platensis, microalgae, is emerging as a sustainable source for highly nutritional food ingredient production to cover the food demands of the global population. This study aimed to characterize food prototypes supplemented with microalgae protein isolate to develop health-promoting food products. The nutritional composition (proximate composition, fatty acids, and mineral content) of the spirulina biomass, the structural characterization of spirulina platensis protein (SPP) isolates, and the physicochemical properties of SPP- developed food products were evaluated. High protein (47%), ϒ-Linolenic acid (24.45 g/100 g of fat), iron (16.27 mg/100 g), calcium (207 mg/100 g), and potassium (1675 mg/100 g) content in the spirulina biomass was found. SPP (76% of purity) with sodium alginate produced stable emulsions (>90%) during storage (14 days). Amaranth + SPP pasta resulted in good appearance, texture, color, and high nutritional value in protein (above 30%) and minerals, mainly iron (9–10 mg/100 g) and magnesium (300 mg/100 g), meeting the daily intake recommendations. In addition, the amino acid profile of the pasta was in line with the amino acid pattern requirements for adults. SPP can be considered as potential additive for emulsions stability and provided nutritional and physicochemical desired in the elaborated pasta.

Abstract
Nitrogen is required for proso millet growth and has a critical influence on yield and quality. However, the effect of nitrogen fertilisation on proso millet protein properties remains unclear. This study aimed to investigate how nitrogen fertiliser treatment (180 kg/hm2) affects the structural and functional properties of proso millet protein. In comparison with the control group (N0), nitrogen fertiliser treatment loosened the dense structure of the protein and presented a larger particle size. Nitrogen treatment did not change the main subunit composition, and β-sheet and α-helix were the main secondary structures of proso millet protein based on Fourier transform infrared spectroscopy. In addition, nitrogen fertiliser treatment improved the content of hydrophobic amino acids and β-sheet proportion from proso millet protein, and high water/oil absorption capacity and thermal stability was observed, but the solubility, emulsion stability and foaming properties from proso millet protein decreased. Proso millet proteins exhibited high amino acid content and good functional properties, including solubility, foaming capacity and emulsifying properties, especially the w139 variety. Results show that proso millet protein has great potential for food applications. The above results provide useful information for the food industry to determine emerging gluten-free protein resources.

Abstract
Agri-food systems (AFS) have been central in the debate on sustainable development. Despite this growing interest in AFS, comprehensive analyses of the scholarly literature are hard to find. Therefore, the present systematic review delineated the contours of this growing research strand and analyzed how it relates to sustainability. A search performed on the Web of Science in January 2020 yielded 1389 documents, and 1289 were selected and underwent bibliometric and topical analyses. The topical analysis was informed by the SAFA (Sustainability Assessment of Food and Agriculture systems) approach of FAO and structured along four dimensions viz. environment, economy, society and culture, and policy and governance. The review shows an increasing interest in AFS with an exponential increase in publications number. However, the study field is north-biased and dominated by researchers and organizations from developed countries. Moreover, the analysis suggests that while environmental aspects are sufficiently addressed, social, economic, and political ones are generally overlooked. The paper ends by providing directions for future research and listing some topics to be integrated into a comprehensive, multidisciplinary agenda addressing the multifaceted (un)sustainability of AFS. It makes the case for adopting a holistic, 4-P (planet, people, profit, policy) approach in agri-food system studies.

Abstract
Menus served at public services can be considered as a good opportunity for consumers to demand a service that ensures healthy and environmentally friendly food. It is especially in the sector of nurseries and schools, where these demands make the most sense since they call for the protection of particularly vulnerable population: children. The purpose of this study is to analyze the biweekly menus served at a public Spanish nursery canteen considering the link with the two most recognized environmental indicators: the consumptive water footprint (WF) and the carbon footprint (CF). The WF and CF of the menus vary considerably between menus (619-1359 L·menu-1 and 0.75-2.95 kg CO2eq·menu-1). The assessment has identified non-dairy sources of protein and dairy-based products as the key food categories in all menus. Menus with more meat (mostly beef) and dairy products (mainly cheese) were associated with higher impacts. That is, the average impact of menus with beef is about 2 times greater than the one of all other menus. The distribution and cooking stages presented negligible contributions in terms of greenhouse gases emissions, mainly due to the consumption of local/regional products and low-energy intensive cooking techniques. The most important strategy for reducing environmental impacts is based on reducing the frequency of consumption of beef, so that poultry and lean pork are consumed alternately. This reduction should not compromise the necessary protein intake for toddlers. Attention should also be paid to afternoon snacks that are rich in cold meat and dairy products. Considering these issues, significant reductions in WF and CF indicators could be achieved, up to 550 L·menu-1 and 0.70 kg CO2eq·menu-1. Since eating habits introduced at an early stage are more likely to develop into adult behaviour, children canteen services are an excellent opportunity to promote healthy eating habits in children and their families.

Abstract
The impact of COVID-19 on farmers' livelihoods and food security is a key concern in rural communities. This study investigates the impacts of the livelihood assets on the food security of rural households during the COVID-19 pandemic and determines those factors related to food security. The population of this study includes rural households in Dashtestan county, Bushehr province, in southern Iran. Based on the Krejcie and Morgan sampling table, 293 households were selected using the convenience sampling method. To measure food security, the American standard index and ordinal regression are used to analyze the factors. The results of the food security situation show highly precarious and food insecure situations among the studied rural households. The regression analysis shows that the most important assets affecting the food security of rural households under COVID-19 are financial, psychological, physical, and human assets, respectively. The results can help rural development planners and policymakers to improve both livelihoods and food security in rural communities, not just during the COVID-19 pandemic, but also in its aftermath.

Abstract
The activity concentration of natural radionuclides in farm soil and most common indigenous food crops (maize, potato, cowpea) in oil-producing (Philippi, Uitenhage, and Hertenbos farms) and non-oil-producing (Ukulinga farm) areas of South Africa was measured using a Hyper Pure Germanium detector. Consequently, the transfer of these radionuclides from soil-to-crops was estimated. The mean activity concentration of 226Ra, 232Th, and 40K for farm soil samples are 30.71 ± 11.77, 31.97 ± 8.90, 345.97 ± 98.62 Bq.kg-1 for Philippi; 18.67 ± 6.70, 31.55 ± 11.48, 191.93 ± 33.39 Bq.kg-1 for Uitenhage; 38.03 ± 17.44, 41.18 ± 31.54, 381.89 ± 163.40 Bq.kg-1 for Hartenbos; and 8.47 ± 2.87, 8.65 ± 3.52, 94.22 ± 25.97 ± 25.97 Bq.kg-1 for Ukulinga. The mean activity concentration of 226Ra, 232Th, and 40K for crop samples are 4.54 ± 1.47, 4.87 ± 1.69, 140.18 ± 35.38 Bq.kg-1 for Philippi; 9.17 ± 4.79, 3.85 ± 1.87, 136.75 ± 22.04 Bq.kg-1 for Uitenhage; 7.97 ± 2.91, 4.62 ± 2.40, 105.97 ± 48.65 Bq.kg-1 for Hartenbos; and 4.23 ± 1.63, 2.72 ± 1.19, 48.36 ± 15.55 Bq.kg-1 for Ukulinga. The activity concentration and soil-to-crop transfer factors for 40K were found to be much higher, possibly because this element is critical in crop growth. The results showed that the crop samples' transfer factor is in the order cowpea>potato>maize. This study showed that activity concentrations of 226Ra, 232Th, and 40K in crops and the corresponding transfer factors depend on activity concentrations of the same radionuclides in soil.

Abstract
Food security is a complex phenomenon that determines multiple concerns and initiatives worldwide. The research presented in this paper aims to analyze the food security of children in rural areas, following a project funded by the European Union (EU). The main objective of the research is to investigate the opportunity to implement sustainable programs to ensure hot meals for children in schools located in rural areas of Romania. No similar academic studies were conducted in Romania focused on food security from an economic perspective. An exploratory qualitative research methodology was chosen based on in-depth nondirective interviews among experts. The research results highlight the necessity of optimizing the relationship between the needs of children in rural areas and the food resources available to them within families and schools. The results also suggest that serving hot meals in primary schools in needy areas is appropriate, as poor nutrition among children has negative effects on the educational process and on their long-term development. The conclusions of this paper lead to managerial implications for policymakers wishing to assess the impact of projects employed in schools financed by national and EU funds.
