Abstract
Teff [Eragrostistef (Zucc.)] is one of the most important cereal crops in Ethiopia which is part of the traditional dish of the people in the form of Injera. Interest in Teff has increased noticeably due to its very attractive nutritional profile and the gluten-free nature of the grain. It is a gluten-free cereal, among the major cereal crops, Teff accounts for the largest average annual acreage in the country. It also accounts for the second-largest average annual production, next to maize. The study endeavored to review the harvest and postharvest losses, the causes of these losses, and possible solutions to reduce the postharvest losses of the Teff crop in Ethiopia. There are inadequate postharvest research works conducted in Ethiopia, and most of the limited studies are focused on cereals other than Teff. Teff farming in Ethiopia is dominated by traditional methods of harvesting and postharvest handling. The application of modernharvest and postharvest technologies during Teff production and handling is critically low. As a result, a considerable loss of Teffgrain (16-30 %) in the harvest and postharvest stages has been recorded. The largest share of this loss is observed during the harvesting stage due to shattering, scattering, animal feeding, and contamination with unwanted parts. Lack of awareness of postharvest losses, limited access and availability of postharvest technologies, and low attention given to postharvest research, extension, and infrastructure have also contributed their share to these losses. Transforming the traditional practice into mechanized farming, modern postharvest technologies, and supporting the system by further research works and pieces of training on loss prevention methods could potentially minimize the harvest and postharvest losses of Teff in the country.

Abstract
We aim to provide a practical approach to assess anemia and its primary causes, both in clinical settings and in the context of public health programs. Anemia remains a global challenge; thus, to achieve goals for anemia reduction and assess progress, standardized approaches are required for the assessment of anemia and its causes. We first provide a brief review of how to assess anemia, based on hemoglobin concentrations and cutoffs that correspond to age, sex, and physiologic status. Next, we discuss how to assess the likely causes of anemia in different settings. The causes of anemia are classified as non-nutritional (for example, because of infection, inflammation, blood loss, or genetic disorders) or nutrition-specific (for example, because of deficiencies of iron, vitamin A, riboflavin, vitamin B12, or folate). There is an important overlap between these 2 categories, such as the increased likelihood of iron deficiency in the context of inflammation. Given the multifaceted nature of anemia etiology, we introduce a framework for anemia assessment based on the "ecology of anemia," which recognizes its many overlapping causes. This conceptual framework is meant to inform what data on anemia causes may need to be collected in population surveys. The framework has a supporting table with information on the diagnostic tests, biomarkers and proposed cutoffs, characteristics, and feasibility of collecting the myriad information that can help elucidate the anemia etiology. We also provide examples of how this framework can be applied to interpret the anemia risk factor data from population-based surveys that can inform decisions about context-specific interventions. Finally, we present research gaps and priorities related to anemia assessment.

Abstract
Non-communicable diseases (NCDs) lead to a dramatic burden on morbidity and mortality worldwide. Diet is a modifiable risk factor for NCDs, with Mediterranean Diet (MD) being one of the most effective dietary strategies to reduce diabetes, cardiovascular diseases, and cancer. Nevertheless, MD transferability to non-Mediterranean is challenging and requires a shared path between the scientific community and stakeholders. Therefore, the UNESCO Chair on Health Education and Sustainable Development is fostering a research project-"Planeterranea"-aiming to identify a healthy dietary pattern based on food products available in the different areas of the world with the nutritional properties of MD. This review aimed to collect information about eating habits and native crops in 5 macro-areas (North America, Latin America, Africa, Asia, and Australia). The information was used to develop specific "nutritional pyramids" based on the foods available in the macro-areas presenting the same nutritional properties and health benefits of MD.

Prevalence and predictors of anemia among pregnant women in Ethiopia: Systematic review and meta-analysis. PLoS One 2022; 17:e0267005. Abstract
Background
In Ethiopia limited information is available regarding the prevalence and predictors of anemia in pregnancy. This systematic review and meta-analysis estimated the pooled prevalence of anemia among pregnant women in Ethiopia and also identified its predictors.
Materials and methods
The published primary studies were searched in the following electronic databases; PubMed/Medline, Google scholars, AJOL, and EMBASE. All primary studies published from 01/01/2010 to 30/05/2020 and written in English language were included without restriction on study setting and design. Critical appraisal of all available articles was done and extracted data was analyzed using STATA software version 14. The pooled prevalence of anemia was presented using a forest plot. The I2 statistical test for heterogeneity, and the Egger’s and Begg’s tests for publication bias were used. The relative risk was used to assess the association of predictor variables with anemia.
Result
After screening 274 articles, sixty studies were included in the analysis. The pooled prevalence of anemia among pregnant women was 26.4(95% CI: 23.1, 29.6). Sub-group analysis showed higher pooled prevalence from community-based studies than institutional-based studies. Factors that were protective against maternal anemia included urban residence, formal education and smaller family size. Short birth interval and not having antenatal care (ANC) are associated with a higher risk of maternal anemia. Women with low dietary diversity [RR: 2.61(95% CI, 1.85, 3.68)], mid-upper arm circumference (MUAC) less than 23 cm [RR: 2.35(95% CI, 1.53, 3.68)] and those not taking iron-folic acid [RR: 1.53(95% CI: 1.30, 1.81)] also had a higher risk of anemia.
Conclusion
Almost one in four pregnant women in Ethiopia had anemia. Being literate, living in urban areas with small family size and adequate birth spacing, as well as good dietary diversity are associated with a lower risk of anemia in pregnancy.

Abstract
ABSTRACT Background: Food for the Muyu tribe was an actualization of daily life over the belief in the religious dimension that is adopted and lived. This study aims to explore the food taboo among the Muyu tribe in Indonesia.Methods: The authors conducted the case study in Mindiptana, Boven Digoel, Papua. The study carried out data collection by participatory observation, in-depth interviews, and document searches. The authors carried out the report using an ethnographic approach an emically perspective.Results: Belief in the lord of wild animals, the lord of fruits and plants, and the lord of sago, was so thick that many spells appear to hunt and search for food in the forest, which was a form of recognition of the power of these. The Muyu tribe had restrictions on several types of food. Food can be taboo based on its physical form; meanwhile, because of Muyu people's belief that there was a bad quality inherent in these food ingredients. It was especially closely related to ritual practice for men as a process of undergoing initiation as a big man. The Muyu intended women taboo for mothers who are pregnant and breastfeeding. Abstinence for pregnant Muyu women was often related to the fetus in the womb. For children, especially for boys, it was almost the same as abstinence for adult Muyu men. This abstinence applies to boys who were prepared to be tómkót, especially when undergoing the initiation process.Conclusions: The food taboo applies to all Muyu people, both men, women, and children.

Abstract
Recommendations for antenatal calcium supplementation to prevent preeclampsia could substantially reduce maternal mortality, but adherence to multiple daily doses may constrain effectiveness. World Health Organization guidelines recommend 3 daily calcium supplements (1.5-2 g/d), taken separately from 1 iron-folic acid (IFA) supplement; however, limited data suggest lower calcium doses may also be effective. We conducted mixed-methods household trials to identify strategies for supporting adherence and integrating calcium into antenatal IFA supplementation programming in Ethiopia. Participants were randomly assigned to 3 regimens varying in dose and timing and were later given a choice of regimens. Semistructured interviews conducted over 6 weeks explored acceptability, barriers, and facilitators and offered opportunities to choose calcium pill type. Interviews were transcribed, translated, and analyzed thematically. Calcium adherence was measured using medication event monitoring. All participants (N=48) agreed to try supplementation. Adherence barriers included forgetting to take pills when busy or travelling and perceived side effects. Midday doses were the most challenging because of farming, market, and social events; women avoided taking supplements in public due to fear of being perceived as HIV positive. Social support from families, visual reminders, and anticipated benefits motivated adherence. More participants (75%) selected chewable versus conventional supplements due to organoleptic properties, but this preference declined over time. Adherence rates did not substantially differ across regimens with 2 (81.1%), 3 (83.4%), or 4 (77.1%) pill-taking events. Women indicated that the 2-event regimen was more acceptable than 3- and 4-event regimens, but this acceptability was not associated with higher adherence. Consequently, mean daily calcium consumption (811.3 mg) was lower than for 3-event (1,251.1 mg) and 4-event (1,156.4 mg) regimens. Integrating calcium into antenatal IFA supplementation is acceptable to Ethiopian women, with a 3-event regimen yielding the highest consumption rates. Despite women experiencing challenges with midday dosing and stigma, using simple home-based strategies and being counseled on the purpose of supplementation were more effective than reducing dosage for mitigating barriers and improving adherence.

Abstract
Grains are a substantial source of macronutrients and energy for humans. Lactic acid (LA) fermentation is the oldest and most popular way to improve the functionality, nutritional value, taste, appearance and safety of cereal foods and reduce the energy required for cooking. This literature review discusses lactic acid fermentation of the most commonly used cereals and pseudocereals by examination of the microbiological and biochemical fundamentals of the process. The study provides a critical overview of the indispensable participation of lactic acid bacteria (LAB) in the production of many traditional, ethnic, ancient and modern fermented cereals and beverages, as the analysed literature covers 40 years. The results reveal that the functional aspects of LAB fermented foods are due to significant molecular changes in macronutrients during LA fermentation. Through the action of a vast microbial enzymatic pool, LAB form a broad spectrum of volatile compounds, bioactive peptides and oligosaccharides with prebiotic potential. Modern applications of this ancient bioprocess include the industrial production of probiotic sourdough, fortified pasta, cereal beverages and "boutique" pseudocereal bread. These goods are very promising in broadening the daily menu of consumers with special nutritional needs.

Abstract
Background Anemia remains a major public health problem among children under five years old in Ethiopia, rising unexpectedly from 44% national prevalence in 2011 to 57% in 2016. In this study, we investigated the household, maternal and child-related dietary and non-dietary factors associated with hemoglobin (Hb) level of infants and young children. Method We analyzed data from a nationally representative sample of 2902 children aged 6–23 months, included in the 2016 Ethiopian demographic and health survey (EDHS). Hierarchical linear regression analysis was done to identify the factors associated with Hb level. We reported adjusted β (aβ) with 95% confidence interval (CI). Result Overall, 72% of children under 2 years of age were anemic in Ethiopia in 2016. Household factors: rich household wealth category (aβ = 0.48, 95%CI = 0.33–0.63, P < 0.001), and agrarian regions (aβ = 0.64, 95%CI = 0.40–0.88, P < 0.001) were significantly associated with a higher mean Hb level. Maternal factors: secondary and above education level (aβ = 0.69, 95%CI = 0.23–1.16, P = 0.004), and being not anemic (aβ = 0.40, 95%CI = 0.26–0.53, P < 0.001) were significantly associated with a higher mean Hb level. Child factors: age below 12 months (aβ = 0.72, 95%CI = 0.57–0.88, P < 0.001), female sex (aβ = 0.16, 95%CI = 0.03–0.30, P = 0.019), being not underweight (aβ = 0.22, 95%CI = 0.02–0.42, P = 0.031), average birth size (aβ = 0.25, 95%CI = 0.08–0.42, P = 0.003), no history of recent infection (aβ = 0.18, 95%CI = 0.02–0.33, P = 0.025), currently breastfeeding (aβ = 0.28, 95%CI = 0.12–0.44, P = 0.002), vitamin A supplementation (aβ = 0.17, 95%CI = 0.06–0.28, P = 0.021), and frequent meal feeding (aβ = 0.11, 95%CI = 0.05–0.16, P = 0.034) were significantly associated with a higher mean Hb level. Conclusion Hb level was associated with various dietary and non-dietary influences originating from household, maternal, and child levels. A comprehensive approach, addressing the multi-factorial nature of Hb status, might stand an important consideration to reverse the recent rise in anemia prevalence in Ethiopia.

Abstract
BACKGROUND There are pervasive pregnancy-related food taboos and myths (PRFT) in Ethiopia. The evidence, however, is limited on whether PRFT contributes to the burden of maternal anemia. Thus, this study was aimed to determine the magnitude of PRFT, the reasons for adherence to PRFT, and the association of adherence to PRFT with anemia, among pregnant Ethiopian women. METHODS The study was case-control in design and recruited a sample of 592 pregnant women attending antenatal care in four health facilities in Addis Ababa, Ethiopia. Participants were classified into anemic cases (n = 187) and non-anemic controls (n = 405) based on their hemoglobin level. PRFT was assessed by the participants' subjective reporting of avoidance of certain food items during the current pregnancy due to taboo reasons. The specific types of food items avoided and the underlying reasons for the avoidance were also assessed. The relation of PRFT with anemia was evaluated by multiple logistic regression analysis, controlling for covariate factors. RESULT Almost a fifth of the study participants (18.2%) avoided one or more food items due to PRFT. Adherence to PRFT was 26.2 and 14.6% among the anemic and the non-anemic individuals, respectively. The food items most avoided due to adherence to PRFT were green chili pepper, organ meat, and dark green leafy vegetables like spinach, lettuce, kale, and broccoli. The underlying reasons for the adherence to PRFT were largely traditionally held beliefs and misconceptions. After controlling for covariates, PRFT was significantly and independently associated with a higher odds of anemia [adjusted odds ratio (AOR) = 2.12, 95% confidence interval (CI) = 1.32-3.42, P = 0.002]. CONCLUSION PRFT might be contributing to the burden of maternal anemia in Ethiopia. It is time for public health authorities in Ethiopia to recognize PRFT as a public health risk, strengthen maternal nutrition counseling, and create public awareness of the consequences of PRFT.
