Abstract
The present research aims to describe how turkey meat and carcass quality traits define the interest of the scientific community through the quality standards of journals in which studies are published. To this end, an analysis of 92 research documents addressing the study of turkey carcass and meat quality over the last 57 years was performed. Meat and carcass quality attributes were dependent variables and included traits related to carcass dressing, muscle fiber, pH, colorimetry, water-holding capacity, texture, and chemical composition. The independent variables comprised publication quality traits, including journal indexation, database, journal impact factor (JIF), quartile, publication area, and JIF percentage. For each dependent variable, a data-mining chi-squared automatic interaction detection (CHAID) decision tree was developed. Carcass or piece yield was the only variable that did not show an impact on the publication quality. Moreover, color and pH measurements taken at 72 h postmortem showed a negative impact on publication interest. On the other hand, variables including water-retaining attributes, colorimetry, pH, chemical composition, and shear force traits stood out among the quality-enhancing variables due to their low inclusion in papers, while high standards improved power.

Abstract
The present study aims to develop a statistical tool for turkey breed traceability testing based on meat and carcass quality characteristics. To this end, a comprehensive meta-analysis was performed, collecting data from a total of 75 studies approaching meat and carcass attributes of 37 turkey strains and landraces since the late 1960s. A total of 22 meat and carcass traits were considered variables, grouped in the following clusters: carcass dressing traits, muscle fiber properties, pH, colorimetry, water-capacity traits, texture-related attributes, and nutritional composition of the meat. Once the multicollinearity analysis allowed the deletion of redundant variables, cold carcass weight, slaughter weight, muscle fiber diameter, sex-female, carcass/piece weight, meat redness, ashes, pH24, meat lightness, moisture, fat, and water-holding capacity showed explanatory properties in the discriminating analysis (p < 0.05). In addition, strong positive and negative correlations were found among those variables studied. Carcass traits were positively associated, particularly slaughter weight and cold carcass weight (+0.561). Among meat physical traits, pH showed positive correlations with drip loss (+0.490) and pH24 (+0.327), and water-holding capacity was positively associated with cholesterol (+0.434) and negatively associated with collagen (-0.398). According to nutritional traits, fat and ash showed a strong correlation (+0.595), and both were negatively associated with moisture (-0.375 and -0.498, respectively). Strong negative correlations were found as well between meat protein and fat (-0.460) and between collagen and cholesterol (-0.654). Finally, the Mahalanobis distance suggested a clustering pattern based on meat and carcass characteristics that report information about interbreeding and variety proximity. This study establishes a departure point in the development of a tool for breed traceability guaranteeing aimed at enhancing distinguished, local breed-based turkey meat.

Abstract
The present research aimed to determine the main differences in meat and carcass quality traits among turkey genotypes worldwide and describe the clustering patterns through the use of a discriminant canonical analysis (DCA). To achieve this goal, a comprehensive meta-analysis of 75 documents discussing carcass and meat characteristics in the turkey species was performed. Meat and carcass attributes of nine different turkey populations were collected and grouped in terms of the following clusters: carcass dressing traits, muscle fiber properties, pH, color-related traits, water-retaining characteristics, texture-related traits, and meat chemical composition. The Bayesian ANOVA analysis reported that the majority of variables statistically differed (p < 0.05), and the multicollinearity analysis revealed the absence of redundancy problems among variables (VIF < 5). The DCA reported that cold carcass weight, slaughter weight, sex-male, carcass/piece weight, and the protein and fat composition of meat were the traits explaining variability among different turkey genotypes (Wilks' lambda: 0.488, 0.590, 0.905, 0.906, 0.937, and 0.944, respectively). The combination of traits in the first three dimensions explained 94.93% variability among groups. Mahalanobis distances cladogram-grouped populations following a cluster pattern and suggest its applicability as indicative of a turkey genotype's traceability.

Abstract
BACKGROUND Faba bean (FB) can be used in poultry diets as a protein source alternative to soybean meal. This study evaluated the effect of extrusion of low-tannin FB and phytase supplementation on performance, phosphorus (P) and nitrogen (N) retention, and gut microbiota activity in broiler chickens. Raw or extruded FB meal was included in broiler diet at 300 g kg-1 . The experimental treatments additionally differed in nutrient level (adequate, or calcium, P, and protein reduced) and phytase supplementation. RESULTS Broiler performance was not affected by the dietary treatments. Extrusion and a reduced nutrient content did not affect P and N retention coefficients, but they increased when the reduced diets were supplemented with phytase. In the ileal digesta, FB extrusion increased the activities of bacterial α- and β-glucosidase, β-galactosidase, and β-glucuronidase, but acetate and total short-chain fatty acids (SCFAs) concentrations were higher only in birds fed extruded FB supplemented with phytase. In the cecal digesta, FB extrusion increased the activities of bacterial α- and β-glucosidase, α-galactosidase and β-glucuronidase, and phytase supplementation decreased β-glucosidase and β-glucuronidase activities, but acetate, butyrate and valerate and total SCFA concentrations were lower in birds fed extruded FB. CONCLUSION Good performance of broilers could be obtained using diets containing 300 g kg-1 raw FB. The extrusion process does not improve FB nutritive value and may negatively affect the activity of cecal microbiota. Phytase supplementation allows lowering calcium, inorganic P, and protein level in diets with FB, and reduces P and N excreted in droppings, with a positive effect on the environment. © 2020 Society of Chemical Industry.

Abstract
The aim of the study was to evaluate the effect of feed containing faba bean on the physicochemical properties of breast and leg muscles. The study was conducted on 340 Ross 308 broiler chickens reared for 6 weeks. The control group received feed based on soybean meal. The treatment group received a feed mixture with faba bean as the source of protein. Different sources of protein in the diet were also associated with changes in the content of n-6 fatty acids (C16:0, C22:4) and the n-6/n-3 ratio in breast muscles, which was higher (P < 0.05) in treatment group. The collagen content was higher (P < 0.05) in breast muscles from control group. The study revealed that the use of faba bean as a substitute for soybean meal had no significant effect (P > 0.05) on water holding capacity, drip loss, or major chemical components of breast and leg muscles. The P/S ratio, AI and TI, and the content of cholesterol in breast muscles were comparable (P > 0.05) in both groups. The values of lightness (L*) for leg muscles were lower (P < 0.05) in treatment group. The use of faba bean instead to soybean meal in diets for broiler chickens had positive effects on meat quality traits.

Abstract
Feeding faba beans (Vicia faba L.) to grass carp (Ctenopharyngodon idellus) increases muscle compactness but decreases growth and motility. The lipid metabolism of grass carp was examined to assess potential effects of feeding faba beans on physiological properties using a total of 180 fish. The treatment group was fed faba beans for 120 days and a commercial diet for another 30 days. The control group received a commercial diet for 150 days. Fish were sampled every month. Weight gain was significantly lower in the treatment group than in the control. Hardness, springiness, chewiness, cohesiveness, and gumminess of the dorsal muscle increased significantly with the feeding faba beans from 30 to 120 days, which was not reversed by the subsequent feeding of commercial diet. Fat accumulation increased significantly in the treatment group as suggested by the condition factor, viscera index, hepatopancreatic index, and intraperitoneal fat index (IPFI), hepatopancreas, and muscle fat content but was not affected by subsequent feeding with the commercial diet. Serum triglyceride and total cholesterol levels were significantly reduced in the experimental diet group. In the hepatopancreas and intraperitoneal fat IPF, monounsaturated fatty acids showed significantly higher content in faba bean feeding fish, whereas polyunsaturated fatty acid content showed the reversed pattern. In the hepatopancreas, the activities of the lipogenic enzymes malate dehydrogenase and glucose 6-phosphate dehydrogenase were higher in the treatment than in the control group. Moreover, the treatment group showed lower mRNA levels of carnitine palmitoyltransferase-1. Overall, our results clearly demonstrate increasing lipid accumulation in the viscera of faba bean-fed grass carp.

Abstract
Recently, advanced synchrotron radiation-based Fourier transform infrared microspectroscopy (SR-IMS) has been developed as a rapid, direct, non-destructive and bioanalytical technique. To date, there has been very little application of this technique to study the molecular structure make-up in pulse seeds. Thus, the objectives of this study were to detect the interactive association between protein molecular structure and nutrient availability of newly developed Vicia faba varieties. Two different varieties of faba beans (CDC Snowdrop = low-tannin variety; vs. FB9-4 = high-tannin variety) were selected for this study. The molecular spectra data were collected by using SR-IMS. The ratio of both amide I to II area and height were higher (P < 0.01), while the ratio of α-helix to β-sheet was lower (P < 0.05) in CDC Snowdrop compared to FB9-4. The crude protein (CP) content and the predicted truly digestible nutrients as well as the bioenergy values did not vary between two varieties. The CDC Snowdrop had exhibited a higher (P < 0.01) rapidly degradable CP fraction (75.99 vs. 71.45% on CP) and a lower (P < 0.01) moderately degradable CP fraction (19.43 vs. 22.85% on CP), resulting in a higher (P < 0.01) rumen degradable protein and a lower (P < 0.01) rumen undegradable protein content than that of FB9-4 variety. However, the total supply of digestible rumen undegraded feed protein was higher (P < 0.05) in FB9-4 than CDC Snowdrop. Strong positive correlations were found between the ratio of α-helix to β-sheet and CP contents (R = 0.86, P < 0.01) as well as the truly digestible CP contents (R = 0.83, P < 0.01); respectively. In conclusion, the results of this study reveal that the protein are metabolized differently between different type of faba bean varieties and the advanced SR-IMS molecular spectroscopy can be used to rapidly delineate protein molecular structure motifs along with their nutritive value in ruminant livestock system.

Abstract
The technological, nutritional, and sensorial quality of breasts and thighs with drumsticks of turkey male and female breeders was characterized by comparison with breasts and thighs with drumsticks of growing male and female turkeys from the Grademaker line (hybrid turkeys, n = 20 birds per sex and per physiological stage). The breeder turkeys were slaughtered at 397 and 410 days of age and 10.42 and 32.67 kg of body weight for the females and males, respectively. The standard turkeys were slaughtered at 75 and 103 days of age and 5.89 and 13.48 kg of body weight for the females and males, respectively. The differences observed between males and females on one hand and between standard and breeder turkeys on the other hand were mainly induced by differences in slaughter ages and sexual dimorphism on body weight. The meat of female breeders had characteristics close to those of female and male standard turkeys, whereas the meat of male breeders was clearly distinguishable, particularly by displaying lower tenderness and water holding capacity.

Abstract
Faba bean (FB) seeds can be a good protein-energy component in animal feed. However, the presence of anti-nutritional substances is a negative feature of FB seeds. The aim of this study was to examine the influence of different levels of unprocessed FB seeds in feed on the gut-bone axis and metabolic profile in broilers. Ninety six, 1-day-old Ross 308 broiler chickens were randomly selected to one of the 3 dietary treatments (32 chickens in each, divided into 8 pens with 4 birds per each pen): the control group fed standard diet with soybean meal and without FB seeds, group I fed 8/15% (starter/grower) of high-tannin FB seeds, and group II fed 16/22% of high-tannin FB seeds. Bone mechanical examination, hematological and serum biochemical analysis as well histomorphometry of small intestine and liver tissue were performed. The intake of high-tannin FB seeds, irrespective of their amount, did not alter the bone geometric, mechanical and densitometric parameters nor influenced basal hematological parameters, however it resulted in: decreased serum concentration of total cholesterol and calcium; a reduced longitudinal myenteron of small intestine; increased mucosa and villus epithelium thickness, villus length, thickness and absorptive surface in duodenum; increased number of active crypts in jejunum; unchanged collagen area, intercellular space, and total cell number in the liver; decreased number of multinuclear hepatocyte cells. Moreover, the livers of birds fed the higher dose of high-tannin FB seeds had lymphocytic infiltrates in portal tracts and sinusoids. Feeding of unprocessed high-tannin FB seeds exerted an influence on the gastrointestinal tract by increased absorptive surface. In conclusion, the dietary inclusion of unprocessed high-tannin FB seeds had no negative effects on broiler growth, tibial bone mechanical properties and intestinal characteristics. Unprocessed high-tannin FB seeds may be used in broiler diets, but their dietary levels should not be higher than those discussed.

Abstract
To evaluate phenolic compounds and whether the combination of a tanniferous fruit and soybean oil could improve the performance, meat characteristics, and fatty acid (FA) profile in lambs, an experiment was conducted over 40 days with twenty creole male lambs (23.71 ± 3.46 kg). The lambs were allotted in a completely randomised design, with factorial arrangement 2 × 2, with the following dietary treatments: (1) control diet, (2) 2% Caesalpinia coriaria ground fruit dry matter (DM), (3) 2% soybean oil DM, and (4) 2% Caesalpinia coriaria fruit plus 2% soybean oil. The concentration of condensed tannins (CT) in Caesalpinia coriacea was 21.71 g/kg DM. No interactions were detected (P > 0.05) among soybean oil and Caesalpinia coriaria, and there were no differences in daily gain, intake, and feed conversion. Soybean oil reduced (P < 0.05) DM digestibility (68.05 versus 59.56%). In fat from the longissimus thoracis et lumborum (LTL) muscle, only linoleic acid presented differences (P < 0.05) between treatments. The combination of Caesalpinia coriacea fruit and soybean oil did not improve lamb performance at the included levels.

Abstract
It seems that faba bean (FB) seeds could be a good protein-energy component in animal feed, but the presence of anti-nutritional substances limits their use as a substitute of soybean meal. The aim of the study was to examine the influence of different concentrations of raw, low-tannin, FB seeds on the gut-bone axis in Ross 308 broilers. One-day old chickens were randomly subjected to one of the 3 dietary treatments: the control group was fed standard diet based on soybean meal and without FB seeds, and two groups were fed 8%/15% and 16%/22% of raw low-tannin FB seeds in the starter and grower, respectively. On the 35th day, hematological and serum biochemical analyses as well histomorphometry of the small intestine and liver tissue and bone mechanical tests were performed. The diet type had no effect on the body weight gain and feed conversion ratio. However, the basal intestinal structures were significantly reduced in birds fed the lower concentration of FB. The enlargement of nerve plexuses was dependent on the concentration used in the diet and, additionally, on the kind of plexus and location in the intestinal tract. The liver was characterized by an increase in non-hepatocytes. There was no influence of the low-tannin FB seeds on most of the analyzed serum parameters in the 35-day-old broiler chickens, except the decreased concentration of total cholesterol and Ca in both experimental groups, triglycerides in group I, and P and uric acid in group II. Furthermore, the increasing concentration of the dietary low-tannin FB did not influence the activities of AspAT (except the group fed the higher amount of FB), ALAT, and LDH. The broiler chickens had no visible leg lesions and no problem in the locomotor function, but the tibiae were lighter mainly in birds fed the higher concentration of FB seeds. Geometric analysis revealed reduction of the cross section area and wall thickness, indicating a decline in the bone midshaft, which influenced the densitometric parameters and the results of mechanical tests. In conclusion, the dietary inclusion of raw low-tannin FB seeds had no negative effects on broiler growth, but disturbed the intestine structure and tibia characteristics. Therefore, all these negative effects necessitate additional examinations before inclusion of raw low-tannin FB seed into poultry diet.

Abstract
Municipal sludge compost (MSC) is commonly used as fertilizer or an amendment in barren soils. However, MSC-borne Cd is of great concern in food safety because of its toxicity. Loess subsoil (LS) is barren and lacks nutrients, but it has a strong ability to absorb and stabilize heavy metals. Hence, LS may be amended with MSC and may reduce the bioavailability of Cd. To simulate the dose effect of the accumulated MSC-borne Cd in amended LS, pot experiments were conducted to study the bioavailability of Cd and other mineral nutrition elements in broad bean (Vicia faba L.) under Cd stress. Plant height and dry biomass remarkably increased as the physicochemical properties of LS were significantly improved; however, they were not significantly influenced by the added Cd. The Cd in the plants grown in MSC amended-LS (P2) mainly accumulated in roots (32.12 mg kg-1) and then in stems and leaves (6.00 mg kg-1). Less Cd (0.74 mg kg-1) accumulated in the edible parts, where the Cd concentration was 53% lower than that in the edible parts of plants grown in LS (P1). The decreased Cd concentrations in the P2 beans may be due to the biomass dilution effect. Notably, the Cd concentrations in the beans exceeded the national safety limit value (0.2 mg kg-1) when the Cd treatment levels exceeded 2 mg kg-1 in LS and 6 mg kg-1 in amended LS. The MgCl2 extraction procedures can be used to assess Cd bioavailability in amended soil-plant systems. The potential antagonism of Zn and Cu against Cd toxicity in the soil-plant system may explain why this plant can tolerate higher Cd concentrations after MSC application.

Abstract
Natural phenol polymers are widely represented in nature and include a variety of classes including tannins and lignins as the most prominent. Largely consumed foods are rich sources of phenol polymers, notably black foods traditionally used in East Asia, but other non-edible, easily accessible sources, e.g., seaweeds and wood, have been considered with increasing interest together with waste materials from agro-based industries, primarily grape pomace and other byproducts of fruit and coffee processing. Not in all cases were the main structural components of these materials identified because of their highly heterogeneous nature. The great beneficial effects of natural phenol-based polymers on human health and their potential in improving the quality of food were largely explored, and this review critically addresses the most interesting and innovative reports in the field of nutrition and biomedicine that have appeared in the last five years. Several in vivo human and animal trials supported the proposed use of these materials as food supplements and for amelioration of the health and production of livestock. Biocompatible and stable functional polymers prepared by peroxidase-catalyzed polymerization of natural phenols, as well as natural phenol polymers were exploited as conventional and green plastic additives in smart packaging and food-spoilage prevention applications. The potential of natural phenol polymers in regenerative biomedicine as additives of biomaterials to promote growth and differentiation of osteoblasts is also discussed.
