Abstract
Emotions are present in almost everything we do, including meat procurement, preparation and consumption. This paper examines the main drivers of this consumption, including sensory and hedonic properties, physiological needs, historical reasons and habits, social influence, ethical motives, practical aspects and other determinants, exploring the meat-related emotions as both an outcome of consumption and as consumption drivers. Emotions are affected by multiple factors relating to the context, the information provided, and the type of product. Positive emotions such as pleasure, satisfaction, proudness and joyfulness have been described in relation to meat, as well as some neutral or negative ones. To enhance positive emotions and increase meat liking, it is essential to improve animal welfare and promote a more sustainable production, focusing on nutritional and sensory quality and providing consumers with reliable information.

Abstract
While Switzerland has made some progress over the past few decades in treating men and women more equally, this study intends to find out whether Swiss men and women's food consumption patterns also converged between 1990 and 2017. After analysing 1.8 million observations of one-member households' food baskets, we found that gender gaps are increasing significantly for 16 of 70 studied foods, decreasing significantly for another 16 of 70 studied foods and not changing significantly for more than half of the studied foods. On average, the gender gap in food consumption in Switzerland has increased over time. We conclude that behavioural differences between genders and culturally induced gender differences (e.g., unequal career chances) are largely unrelated.

Abstract
Influenced by nutritional science, feeding children is generally thought of in terms of children's health and well-being. Here, I ask whether child veganism, with its focus on animal welfare and environmental concerns, challenges this model. Drawing from reproductive studies, I focus on Swiss vegan parents' ideas about food to illuminate a "multispecies," less anthropocentric form of childcare. While their ethic opens up new perspectives on health and childcare, I discuss how "sustainable" reproductive practices can also solidify gender stereotypes and modes of ordering species.

Abstract
Consumer awareness of meat-associated health and environmental risks is increasing and motivates a shift toward consuming meat alternatives. This is also reflected in efforts invested in studying meat alternatives from the perspective of nutritional, environmental, and consumer sciences. Despite shared research interest, these studies cannot be readily compared and interpreted because there is no clear consensus on what meat alternatives are. Scholarly debates on acceptance, nutritional value, and environmental advantages of meat alternatives would benefit from a clear definition of meat alternatives. With the goal of defining meat alternatives, relevant scientific literature in the past 10 years was systematically searched and screened guided by the scoping review Preferred Reporting Items for Systematic Reviews and Meta-Analyses extension. The initial search resulted in >100,000 hits, which was reduced to 2465 papers. Next, titles and abstracts were scrutinized using Rayyan.ai, resulting in 193 articles considered for the present review. Article screening and data extraction was performed using ATLAS.ti software. Three major themes were identified to define meat alternative products including: 1) producing and sourcing of ingredients; 2) product characteristics (that is, sensory characteristics, nutritional value, and health profile, social and environmental sustainability profile); and 3) consumer characteristics concerning the marketing and consumption context. Meat alternatives are multifaceted, that is, certain products can be considered as meat alternatives in some context, but not in another context. For any product, it is impossible to unequivocally state that it is a meat alternative. There is a lack of consensus from the diverse literature on what constitutes meat alternatives. However, products may be qualified as meat alternatives according to three key criteria as proposed in a taxonomy: 1) production and sourcing, 2) product characteristics, and/or 3) consumption. We recommend researchers (and other stakeholders) to do so as it allows for better informed future discussions of meat alternatives.

Abstract
In the present research, we analyzed how to promote a plant-based diet by involving 428 volunteers in a 2-week mobile app intervention. We compared messages promoting the addition of legumes versus messages promoting the replacement of meat with legumes. Messages were either combined or not combined with dynamic norms (i.e., information that more and more people are enacting the behavior). We compared these messages with a control condition (i.e., no message intervention) and we also analyzed the moderation effect of receivers' identification with flexitarians (i.e., people who occasionally eat animal products) and attitudes towards them. In the short term, addition messages increased legume consumption more than replacement messages, especially in people with a negative evaluation of flexitarians and low identification with them. In the long term, increased legume consumption was recorded only when addition messages were combined with dynamic norms. As for meat consumption, the replacement messages were more effective in reducing it in the short term than in the long term, especially in people with positive attitudes towards flexitarians. However, replacement messages combined with dynamic norms were more effective in the long term than in the short term. These results advance our comprehension of how to tailor dietary messages.

Abstract
Although insects have long been part of the human diet in many countries, they are poorly received and accepted in European and North American countries. Therefore, this cross-sectional observational study, based on a structured questionnaire, aimed to evaluate the level of acceptability of entomophagy among young adults in a Swiss university context. The variable “acceptability of consuming insects” (ACI) was calculated according to the perception of entomophagy of each participant. The ACI was related to various socio-demographic and behavioral aspects. A total of 290 responses were validated and analyzed. The mean ACI score was 3.7 out of 6.0 (SD 1.1). Most participants responded that the most likely reason for eating insect foods was curiosity. The most common reason for not eating such foods was disgust. None of the socio-demographic variables showed a significant association with ACI. Generally, participants in this study showed a potential interest in entomophagy—on a theoretical level, as measured here by the ACI. In practice, however, there are still barriers, including disgust, which contribute to the low consumption of these foods, at least in Switzerland.

Abstract
'Less but better' is a pragmatic approach to tackling the sustainability challenges of meat consumption and production. Definitions of 'less' and 'better' lack clarity. Here we explore interpretations of these concepts, finding increasing use of 'less but better' in the literature from Western, high-income settings. Despite discrepancies among interpretations of 'less' meat, existing quantifications indicate that significant reduction is needed to achieve desirable food system outcomes. Interpretations of 'better' meat incorporate the delivery of environmental sustainability, improved animal welfare and better health or nutrition, but lack clear principles and omit many sustainability themes. Practices and outcomes are seldom linked, and diverging narratives on interactions between 'less' and 'better' exist. A shared vision of livestock systems with improved sustainability across multiple indicators is needed to establish principles for 'less but better' in order for decision-making to deliver desired outcomes.

Abstract
Given overwhelming evidence that current levels of meat consumption jeopardize human and planetary health, there is a need for governmental action to reduce meat consumption (i.e., Meat Curtailment Policies, or MCPs). However, few such policies are actually being implemented, in part due to fear of backlash. Better understanding the ideological underpinning of backlash is thus crucial for designing strategies that can further the much needed transition towards more plant-based diets. To address this issue, this study unravels the diverse ideological notions informing backlash in discourse against MCPs. Data consists of three news articles in right-wing publications and over 2700 corresponding comments, posted on Facebook in response to policy proposals to reduce animal protein consumption in the Netherlands. Analysis of the data is based on a framework for ideological discourse analysis, which enables the identification of ideological notions through recognizing semantic and formal structures in text. The research reveals that next to the well documented notions related to neoliberalism (e.g., freedom of choice) and carnism (e.g., meat is normal), populist notions are a significant ideological basis of backlash. In addition, ideological notions related to populism, such as anti-elitism, are interlocked with carnism and neoliberalism. The analysis contributes to a better understanding of the socio-political nature of backlash against MCPs. It suggests that while notions related to carnism can explain how people justify their meat consumption, such notions are only partly relevant for explaining resistance to MCPs. Such resistance is not just an individual response, but a theme around which groups of people converge, through shared ideologies.

Abstract
Meat consumption is increasingly being seen as unsustainable. However, plant-based meat alternatives (PBMA) are not widely accepted yet. PBMA aim to imitate the experience of eating meat by mimicking animal meat in its sensory characteristics such as taste, texture, or aesthetic appearance. This narrative review explores the motivational barriers to adopting PBMA while focusing on food neophobia, social norms and rituals, as well as conflicting eating goals that prevent consumers from switching to a plant-based diet. Based on the key characteristics of these motivational barriers, which are informed by research findings in consumer psychology and marketing, solutions are discussed that can help counter the barriers.

Abstract
The behavior of vegetable consumption in the context of sustainable development has become a point of interest. Determining the barriers and the drivers for developing a sustainable consumption pattern, including food, should be a priority for every nation, as so to be able to design targeted food policies that would contribute to this development. Reducing the pressure on resources by diminishing meat consumption and increasing vegetable consumption is one of the global directions that should be followed. The situation of the current status of vegetable consumption in Romania is, therefore, important. Through an empirical quantitative analysis, the vegetable consumption pattern of Romanian consumers is presented. The results show that the respondents lack proper environmental education and concern, but unconsciously are aware of sustainability criteria such as choosing local and seasonal vegetables, choosing according to the freshness of the vegetables, and wasting little of these purchases. The main barriers determined in developing more sustainable vegetable choices in the case of Romanian consumers are income and time availability restrictions. It is also important to have the ability to identify the local, seasonal, and organic vegetables through specific labels, and to provide the local producers with the ability to sell their products in supermarkets, at fair prices. These would be the main drivers for developing a sustainable vegetable choice. Adding to that, an awareness campaign at the national level regarding the importance of individual choice would contribute to educating towards a sustainable purchasing pattern.

Abstract
The first Swiss national dietary survey (MenuCH) was used to screen disease burdens and greenhouse gas emissions (GHG) of Swiss diets (vegan, vegetarian, gluten-free, slimming), with a focus on gender and education level. The Health Nutritional Index (HENI), a novel disease burden-based nutritional index built on the Global Burden of Disease studies, was used to indicate healthiness using comparable, relative disease burden scores. Low whole grain consumption and high processed meat consumption are priority risk factors. Non-processed red meat and dairy make a nearly negligible contribution to disease burden scores, yet are key drivers of diet-related GHGs. Swiss diets, including vegetarian, ranged between 1.1–2.6 tons of CO2e/person/year, above the Swiss federal recommendation 0.6 ton CO2e/person/year for all consumption categories. This suggests that only changing food consumption practices will not suffice towards achieving carbon reduction targets: Systemic changes to food provisioning processes are also necessary. Finally, men with higher education had the highest dietary GHG emissions per gram of food, and the highest disease burden scores. Win–win policies to improve health and sustainability of Swiss diets would increase whole grain consumption for all, and decrease alcohol and processed meat consumption especially for men of higher education levels.
