Abstract
Medicinal plants, increasingly utilized in functional foods, possess potent therapeutic properties and health-promoting functions, with carbohydrates playing a crucial role and exhibiting a range of effects, such as antioxidant, antitumor, immune-enhancing, antibacterial, anticoagulant, and hypoglycemic activities. However, comprehensively, accurately, rapidly, and economically assessing the quality of carbohydrate components is challenging due to their diverse and complex nature. Additionally, the purification and identification of carbohydrates also guarantee related efficacy research. This paper offers a thorough review of research progress carried out by both domestic and international scholars in the last decade on extracting, purifying, separating, identifying, and determining the content of carbohydrate components from functional foods, which are mainly composed of medicinal plants, and also explores the potential for achieving comprehensive quantitative analysis and evaluating structure-activity relationships of carbohydrate components. These findings aim to serve as a valuable reference for the future development and application of natural carbohydrate components in functional food and medicine.

Abstract
Chicken meat processing generates a substantial number of byproducts, which are either underutilized or improperly disposed. In this study, we employed in silico approaches to identify antioxidant peptides in chicken liver byproducts. Notably, the peptide WYR exhibited remarkable 2,2-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt (ABTS) radical scavenging activity with an IC50 of 0.13 ± 0.01 mg/mL and demonstrated stability under various conditions, including thermal, pH, NaCl, and simulated gastrointestinal digestion. Molecular docking analysis revealed significant hydrogen bonding interactions, while molecular dynamics showed differential stability with ABTS and 2,2-Diphenyl-1-picrylhydrazyl (DPPH). WYR exhibited improved stress resistance, decreased levels of reactive oxygen species (ROS), elevated the activities of superoxide dismutase (SOD) and catalase (CAT), and modulated the expression of crucial genes through the insulin/insulin-like growth factor (IIS) signaling pathway, mitogen-activated protein kinase (MAPK), and heat shock transcription factor-1 (HSF-1) pathways. These effects collectively contributed to the extension of Caenorhabditis elegans' lifespan. This study not only provides an effective method for antioxidant peptide analysis but also highlights the potential for enhancing the utilization of poultry byproducts.

Abstract
ETHNOPHARMACOLOGICAL RELEVANCE Sea buckthorn (Hippophae rhamnoides L.) is an edible fruit with a long history in China as a medicinal plant. The fruits of H. rhamnoides are rich in a variety of nutrients and pharmacological active compounds. As one of the most important active ingredients in sea buckthorn, polysaccharides have attracted the attention of researchers due to their antioxidant, anti-fatigue, and liver protective qualities. AIM OF THE REVIEW This review summarizes recent studies on extraction, purification, structural characterization and pharmacological activities of polysaccharides from sea buckthorn. In addition, the relationship between the structure and the activities of sea buckthorn polysaccharides (SBPS) were discussed. This review would provide important research bases and up-to-date information for the future in-depth development and application of sea buckthorn polysaccharides in the field of pharmaceuticals and functional foods. MATERIALS AND METHODS By inputting the search term "Sea buckthorn polysaccharides", relevant research information was obtained from databases such as Web of Science, Google Scholar, PubMed, China Knowledge Network (CNKI), China Master Theses Full-text Database, and China Doctoral Dissertations Full-text Database. RESULTS The main extraction methods of SBPS include hot water extraction (HWE), ultrasonic assisted extraction (UAE), microwave-assisted extraction (MAE), flash extraction (FE), and ethanol extraction. More than 20 polysaccharides have been isolated from sea buckthorn fruits. The chemical structures of sea buckthorn polysaccharides obtained by different extraction, isolation, and purification methods are diverse. Polysaccharides from sea buckthorn display a variety of pharmacological properties, including antioxidant, anti-fatigue, liver protection, anti-obesity, regulation of intestinal flora, immunoregulation, anti-tumor, anti-inflammatory, and hypoglycemic activities. CONCLUSIONS Sea buckthorn has a long medicinal history and characteristics of an ethnic medicine and food. Polysaccharides are one of the main active components of sea buckthorn, and they have received increasing attention from researchers. Sea buckthorn polysaccharides have remarkable pharmacological activities, health benefits, and broad application prospects. In addition, further exploration of the chemical structure of SBPS, in-depth study of their pharmacological activities, identification of their material basis, characterization of disease resistance mechanisms, and potential health functions are still directions of future research. With the accumulation of research on the extraction and purification processes, chemical structure, pharmacological effects, molecular mechanisms, and structure-activity relationships, sea buckthorn polysaccharides derived from natural resources will ultimately make significant contributions to human health.

Abstract
Selenylation modification has been widely developed to improve the biological effects of natural polysaccharides. In this study, a purified new polysaccharide (MSP-4) was isolated from Morchella Sextelata, and selenized into SeMSP-4 using the HNO3-Na2SeO3 method. The selenium (Se) content of SeMSP-4 was 101.81 ± 9.90 mg/kg, and the molecular weight of SeMSP-4 was 1.23 × 105 Da. The FT-IR, XRD and AFM results showed that MSP-4 was successfully combined with the Se element. The structure characters of SeMSP-4 were analyzed by methylation analysis combined with 1D and 2D NMR spectroscopy. And, the radical scavenging test revealed that SeMSP-4 exhibited higher antioxidant capacities in vitro than MSP-4. The cytotoxicity analysis indicated that SeMSP-4 could dose-dependently inhibit the proliferation of HepG2 and HeLa cells, but did not show a cytotoxic effect on normal cells (HEK293). Furthermore, SeMSP-4 stimulation significantly increased the macrophage viability and enhanced NO production in macrophage cells. This study suggested that SeMSP-4 could be utilized as a potential selenium source with antioxidant, antitumor, and immunostimulatory activities.

Abstract
The dried root of Pueraria mirifica (P. mirifica) is an edible foodstuff widely used in Asian countries. P. mirifica is known for its high starch content. The isolation of polysaccharides from high-starch plant parts is challenging due to the interference of starch. Therefore, this study aimed to develop a technique for isolating and investigating the structure and activity of non-glucan polysaccharides from P. mirifica (PMP). An effective starch removal process was developed using α-amylase hydrolysis and thorough membrane dialysis. Four non-glucan polysaccharides were isolated, and PMP-2 was subjected to structural elucidation. The results indicated that PMP-2 has a molecular weight of 124.4 kDa and that arabinose and galactose are the main components, accounting for 27.8 % and 58.5 %, respectively. Methylation and NMR analysis suggested that PMP-2 is an Arabinogalactan composed of 1,6-linked Galp and 1,4-linked Galp as the main chain, with arabinan and rhamnose as side chains. Furthermore, PMP-C and PMP-2 exhibited concentration-dependent antioxidant activities against DPPH, ABTS, and hydroxyl radicals and certain immunomodulatory activities related to the release of NO, TNF-α and IL-6. These findings suggest that PMP-2 has potential therapeutically active ingredient in functional foods. The developed method successfully removed starch and isolated non-glucan polysaccharides from the high-starch content plant P. mirifica and can be applied to other high-starch plants.

Abstract
A novel water-soluble Amygdalus persica L. flowers polysaccharide (APL) was successfully isolated and purified from Amygdalus persica L. flowers by hot water extraction. Its chemical components and structure were analyzed by IR, GC-MS, and HPLC. APL consisted of rhamnose, arabinose, mannose and glucose in a molar ratio of 0.17:0.034:1.0:0.17 with an average molecular weight of approximately 208.53 kDa and 15.19 kDa. The antioxidant activity of APL was evaluated through radical scavenging assays using 1,1-diphenyl-2-picrylhydrazyl (DPPH), 3-ethylbenzthiazoline-6-sulfonic acid (ABTS), Hydroxyl radical scavenging, Superoxide radical scavenging, and the reducing power activity was also determined in vitro. Besides, in vivo antioxidant experiment, zebrafish (Danio rerio) embryos were treated with different concentrations of APL and then exposed to LPS to induce oxidative stress. Treatment with APL at 50 or 100 µg/mL significantly reduced LPS-induced oxidative stress in the zebrafish, demonstrating the strong antioxidant activity of APL. Moreover, the effect of APL on zebrafish depigmentation was tested by analyzing the tyrosinase activity and melanin content of zebrafish embryos. APL showed a potential reduction in the total melanin content and tyrosinase activity after treatment. This work provided important information for developing a potential natural antioxidant in the field of cosmetics and food.

Abstract
The Sapotaceae family encompasses the genus Pouteria spp., comprising approximately 1,250 species of fruits cherished by consumers for their delightful assortment and flavors. Over the years, extensive research has been devoted to exploring the natural bioactive compounds present in these fruits, with the primary goal of preventing and/or mitigating the risk of degenerative diseases. Despite their widespread popularity in numerous countries, the chemistry, nutritional content, and biological potential of these fruits remain relatively unexplored. This comprehensive review aims to shed light on the principal volatile and non-volatile chemical components found in Pouteria fruits, which present notable antioxidant properties. By doing so, a broad perspective on the current trends in characterizing these compounds and their potential applications were provided, as well as the associated health benefits. Additionally, the prospects and potential applications of Pouteria fruits in the food industry were explored herein.

Abstract
This study involved the extraction of an exopolysaccharide (EPS) from Azotobacter salinestris AZ-6, which was isolated from soil cultivated with leguminous plants. In a medium devoid of nitrogen, the AZ-6 strain displayed a maximum EPS yield of 1.1 g/l and the highest relative viscosity value of 3.4. The homogeneity of the polymer was demonstrated by the average molecular weight of 1.61 × 106 Da and a retention time of 17.211 min for levan. The presence of characteristic functional groups and structural units of carbohydrate polymers has been confirmed through spectroscopic analyses utilizing Fourier-transform infrared (FT-IR) and nuclear magnetic resonance (NMR) techniques. Thermogravimetric analysis (TGA) revealed a noteworthy decrease in weight (74 %) in the temperature range spanning from 260 to 350 °C. X-ray diffraction (XRD) was utilized to verify the crystalline and amorphous characteristics of EPS-AZ-6. The EPS-AZ-6 exhibited significant cytotoxicity against the MCF-7 tumor cell line, as evidenced by an IC50 value of 6.39 ± 0.05 μg/ml. It also demonstrated a moderate degree of cytotoxicity towards HepG-2 cell line, as indicated by an IC50 value of 29.79 ± 0.41 μg/ml. EPS-AZ-6 exhibited potent antioxidant and in vitro antibacterial properties. These characteristics suggest the potential application value of EPS-AZ-6 in the food industry and pharmaceutical applications.

Abstract
Red ginseng and Ophiopogon japonicus are both traditional Chinese medicines. They have also been used as food in China for thousands of years. These two herbs were frequently used in many traditional Chinese patent medicines. However, the carbohydrate compositions of these two herbs were not normally used during the production of said medicine, such as Shenmai injection, resulting in a large amount of waste composed of carbohydrates. In this study, the extraction conditions were optimized by response surface methodology. The Shenmai injection waste polysaccharide was extracted by using distilled water that was boiled under the optimized conditions. The Shenmai injection waste polysaccharide (SMP) was thereby obtained. SMP was further purified by anion exchange chromatography and gel filtration. With this method, a neutral polysaccharide fraction (SMP-NP) and an acidic polysaccharide fraction (SMP-AP) were obtained. The results of structure elucidation indicated that SMP-NP was a type of levan, and SMP-AP was a typical acidic polysaccharide. SMP-NP exhibited potential stimulation activity on the proliferation of five different Lactobacilli strains. Therefore, SMP-AP could promote the antioxidant defense of IPEC-J2 cells. These findings suggest that Shenmai injection waste could be used as a resource for prebiotics and antioxidants.

Abstract
In order to provide a reference for improving the physicochemical properties of starch, the study of starch polyphenol complex interaction has aroused considerable interest. As a common method of starch modification, ultrasound can make starch granules have voids and cracks, and make starch and polyphenols combine more closely. In this research, canistel seed starch was modified by ultrasonic treatment alone or combined with quercetin. The molecular structure, particle characteristics and properties of starch were evaluated. With the increase of ultrasonic temperature, the particle size of the dextrinized starch granules increased, but the addition of quercetin could protect the destruction of starch granule size by ultrasonic; X-ray diffraction and infrared spectra indicated that quercetin was bound to the surface of canistel seed starch through hydrogen bonding, and the complex and the original starch had the same crystal structure and increased crystallinity; by molecular simulation, quercetin bound inside the starch molecular helix preserved the crystalline helical configuration of starch to some extent and inhibited the complete unhelicalization of starch molecules. Meanwhile, hydrogen bonding was the main driving force for the binding of starch molecules to quercetin, and van der Waals interactions also promoted the binding of both. In the physicochemical properties, as the temperature increased after the combination of ultrasonic modified starch combined with quercetin, the solubility, swelling force and apparent viscosity of the compound increased significantly, and it has higher stability and shear resistance.

Abstract
The set scenario of this work was to investigate the production, physicochemical characteristics, and anti-inflammatory activities of exopolysaccharides from salinity-induced Auxenochlorella protothecoides. The results demonstrated that 10 ‰ salinity manipulation endowed preferable exopolysaccharide production by A. protothecoides. Under this salinity stress, ACPEPS1A and ACPEPS2A were purified from exopolysaccharide production by anion chromatography and molecular exclusion chromatography. ACPEPS1A exhibited a molecular weight (Mw) of 132 kDa and mainly consisted of galactose. ACPEPS2A was a heteropolysaccharide with an Mw of 170 kDa and the main monosaccharides of galactose and rhamnose with separate molar percents of 42.41 % and 35.29 %, respectively. FTIR, 1H and 13C NMR supported that monosaccharide components of ACPEPS1A and ACPEPS2A possessed both α- and β-configuration pyranose rings. Further evidence indicated that ACPEPS1A and ACPEPS2A could effectively inhibit the inflammatory response in lipopolysaccharide (LPS) induced RAW264.7 cells by quenching inflammatory factor levels such as ROS, iNOS, TNF-α, and IL-6. The potential anti-inflammatory possibilities were that the monosaccharides of ACPEPS1A and ACPEPS2A possessed higher affinity with receptors on the macrophage surface than LPS and hampered LPS-induced inflammation. The findings of this work would favor innovative applications of exopolysaccharides from microalgae in complementary medicines or functional foods.

Abstract
In this study, we propose a simple route for the fabrication of bio-based composite films from cellulose nanofibres (CNF) and lignin. First, CNFs were periodate oxidised to obtain dialdehyde cellulose nanofibres (DACNF). Subsequently, lignin nanoparticles (LNPs) with diameters between 50 and 150 nm were prepared using kraft lignin and mixed with DACNF to fabricate DACNF-LNP nanocomposite films via a condensation reaction. The addition of LNPs rendered the films with high ultraviolet-shielding and antioxidant properties. The water contact angle increased for the composite films compared with that of pure CNF film, while the water vapor transmission rate (WVTR) decreased. The mechanical properties of the nanocomposite films were significantly improved by the addition of LNPs. The dry tensile stress of DACNF-LNPs5 with 5 % LNPs significantly increased from 47 to 164 MPa. It was also higher than that of CNF-LNPs5 (105 MPa), in which CNFs were not periodate oxidised. After immersion in water for 1 h, the wet tensile strength of DACNF-LNPs5 was 31 MPa, 3 times higher than that of CNF-LNPs5 (7 MPa). These results indicate that the water-resistant properties of the composite films were significantly enhanced. The films prepared from green and renewable bioresources exhibited potential applications in food packaging and biomedical materials.

Abstract
The optimization of extraction, chemical characterization, and the evaluation of antioxidant activity and α-amylase inhibition capacities of the cell wall polysaccharides extracted from Aspergillus niger ATCC 1004 were studied in this paper. The response surface methodology through a factorial design of three levels indicated the optimal conditions for extraction: pH 13 and 180 min. Characterization results showed that the polysaccharide is glucogalactan, consisting of β-D-galactose-linked units (1 → 6) and β-D-linked glucose (1 → 3). The antioxidant activity was evaluated through three in vitro assays. It could effectively scavenge DPPH, ABTS and hydroxyl radicals with inhibition rates of 82.12%, 75.87% and 79.24, respectively, at 6.4 mg/mL, which were higher than those of the other polysaccharides. For inhibitory activity against α-amylase, a blocking effect of 53.7% was observed at a concentration of 2 mg/mL. Therefore, the cell wall polysaccharides of Aspergillus niger, (1 → 3)(1 → 6)-β-D-glucogalactan, seem to be a promising source for use as an antioxidant, in addition to holding an in vitro hypoglycemic potential.

Abstract
The polysaccharides from C. cicadae were extracted by ultrasonically-assisted enzymatic extraction (UAEE). Response surface analysis was used to determine the optimum parameters as follows: addition of enzymes, 0.71%; extraction temperature, 60°C; extraction time, 18 min; liquid-solid ratio, 46:1 (mL/g). The extraction yield of polysaccharide was 3.66 ± 0.87%. A novel polysaccharide fraction (JCH-a1) from C. cicadae was extracted and then purified by cellulose DEAE-32 and Sephadex G-100 anion exchange chromatography. The analysis results showed that the molar ratio of galactose, glucose, and mannose in JCH-a1 cells (60.7 kDa) was 0.89:1:0.39. JCH-a1 with a triple helix contains more α-glycosides and has strong thermal stability. Moreover, JCH-a1 showed strong antioxidant activity and acted as a strong inhibitor of α-glucosidase in vitro. In addition, JCH-a1 can prolong the lifespan of C. elegans. The present study might provide a basis for further study of JCH-a1 as an antioxidant and hypoglycemic food or drug.

Abstract
In this work, we exploited an efficient method to release hemicellulosic polysaccharides (BLHP) from bamboo (Phyllostachys pubescens Mazel) leaves assisted by a small amount of phosphotungstic acid. Structural unit analysis proved that BLHP-A1 and BLHP-B1 samples possessed abundant low-branch chains in →4)-β-D-Xylp-(1→ skeleton mainly consisting of Xylp, Manp, Glcp, Galp, and Araf residues. According to the results of the antioxidant activity assays in vitro, both of the two fractions demonstrated the activity for scavenging DPPH⋅ and ABTS+ radicals and exhibited relatively a high reducing ability compared to the recently reported polysaccharides. Moreover, the antioxidant activities of purified polysaccharides were evaluated against H2O2-induced oxidative stress damage in HepG2 cells. BLHP-B1 showed more activity for preventing damages from H2O2 in HepG2 cells by improving the enzyme activities of SOD, CAT, and GSH-Px and decreasing the production of MDA as well as suppressing reactive oxygen species (ROS) formation. This study implied that BLHP could demonstrate its attenuation ability for oxidative stress in HepG2 cells.

Abstract
Apple pectin was a high-ester polysaccharide, and tomato pectin was a low-ester one. The weight-average molecular weight (Mw) of AP was about 243 kDa, and that of TP was about 19 kDa. Two pectins presented semi-rigid chain conformation in aqueous solution. Elucidated the mechanism about shear thickening of two pectins.
In this study, apple pectin (AP) and tomato pectin (TP) were demonstrated to be a high-ester (74.8%) polysaccharide with the weight-average molecular weight (Mw) of ∼ 243 kDa and a low-ester (45.9%) polysaccharide with the Mw of ∼ 19 kDa, respectively. The semi-rigid chain conformations of pectic polysaccharides in NaNO3 aqueous solution were deduced according to the Smidsrød “B values” of AP (0.025) and TP (0.029), while AP and TP exhibited higher stiffness in water due to the electric repulsion of carboxyl groups, which was visually observed by AFM images. Under steady shear, the shear-thickening behaviors of AP and TP in NaNO3 aqueous solutions were observed in the shear rate range of < 1 s−1, which were attributed to the disruption of the ordered arrangement induced by semi-rigid pectin chains into randomly entangled structure by weak shear force. AP exhibited stronger shear-thickening behavior due to the formation of more entanglements resulted from the higher Mw and longer side chains highly branched at rhamngalacturonan region. This study provides the scientific basis for the construction of the relationship of steady-shear property with chain conformation and molecular weight of pectin.

Abstract
Morchella is the famous medicinal fungi in the ascomycetes. In this study, a new water-soluble polysaccharide (MSP-3-1) with an average molecular weight of 2.35 × 107 Da was extracted and purified from fruiting bodies of cultivated M. Sextelata. The structural characterization and biological activities of purified polysaccharide was further investigated. The results indicated that MSP-3-1 was mainly a α-glucan, mainly consisting of mannose (Man), glucose (Glc) and galactose (Gal) in a ratio of 5.10: 91.39: 3.51. Its surface morphology exhibited irregular lamellar structures with small voids. And the particle size analysis showed that MSP-3-1 was the homogeneous nanoparticle in water solution. Furthermore, the antioxidant activity analysis showed that MSP-3-1 possessed certain scavenging activity against hydroxyl radicals, DPPH radicals and ABTS radicals in a dose-dependent manner. Immunological tests suggested that MSP-3-1 could significantly promote the proliferation, phagocytosis and nitric oxide (NO) production of macrophage RAW264.7. Thus, our results will provide a theoretical basis for the development and utilization of Morchella Sextelata polysaccharides as an immunmodulatory component in functional foods.

Abstract
Ultrasound assisted aqueous two-phase extraction of polysaccharides from Cornus officinalis fruit was modeled by response surface methodology (RSM) and artificial neural network (ANN), and optimized using genetic algorithm coupled with ANN (GA-ANN). Statistical analysis showed that the models obtained by RSM and ANN could accurately predict the Cornus officinalis polysaccharides (COPs) yield. However, ANN prediction was more accurate than RSM. The optimum extraction parameters to achieve the highest COPs yield (7.85 ± 0.09)% was obtained at the ultrasound power of 350 W, extraction temperature of 51 ℃, liquid-to-solid ratio of 17 mL/g, and extraction time of 38 min. Subsequently, the crude COPs were further purified via DEAE-52 and Sephadex G-100 chromatography to obtain a homogenous fraction (COPs-4-SG, 33.64 kDa) that contained galacturonic acid, arabinose, mannose, glucose, and galactose in a molar ratio of 34.82:14.19:6.75:13.48:12.26. The structure of COPs-4-SG was also characterized with UV-vis, fourier-transform infrared spectroscopy (FT-IR), atomic force microscopy (AFM), scanning electron microscopy (SEM), Congo-red test, and circular dichroism (CD). The findings provide a feasible way for the extraction, purification, and optimization of polysaccharides from plant resources.

Abstract
The by-products produced from fruit processing industries could be a potential hazard to environmental pollution. However, these by-products contain several biologically active molecules (essential fatty acid, phenolic compounds, flavonoids, coloring pigments, pectin, proteins, dietary fibers, and vitamins), which can be utilized for various applications in the food, pharmaceutical, cosmetic and textile industries. Nevertheless, during extraction, these bioactive compounds' recovery must be maximized using proper extraction technologies, keeping both economy and environment under consideration. In addition, the characteristics of the extract obtained from those by-products depend mainly on the parameters considered during the extraction process. In this review, an overview of different technologies used to extract bioactive compounds from fruit industry by-products such as seeds and peels has been briefly discussed, along with their mechanisms, process, advantages, disadvantages, and process parameters. In addition, the characteristics of the extracted bioactive compounds have also been briefly discussed in this review.

Abstract
Pleurotus placentodes, a fungus, belongs to the Pleurotaceae family. The aim of the present study was to characterize the structure of a novel polysaccharide from fruiting bodies of P. placentodes (PPp-W) and evaluate its anticoagulant activity in vitro. The high-performance liquid chromatography and GC–MS analysis indicated that PPp-W with a molecular weight of 27.4 kDa was mainly composed of mannose (17.56%), glucose (6.37%), galactose (44.89%), and fucose (1.22%) with a certain amount of 3-O-methyled galactose. SEM, XRD, and AFM combined with Congo red test revealed that PPp-W was an irregular curly sheet with triple-helix conformation. The FT-IR, methylation, and nuclear magnetic resonance analysis indicated that PPp-W contained→6)-α-D-Galp-(1→, →6)-3-O-Me-α-D-Galp-(1→and →2, 6)-α-D-Galp-(1→ as main chain, partially substituted at O-2 and O-6 by non-reducing ends of β-D-Manp-(1→ and β-L-Fucp-(1→ with a small amount of α-1,3-linked-Glcp in backbone. PPp-W could significantly prolong APTT (12.9 ± 0.42 s, p < 0.001) and thrombin time (39.9 ± 0.28 s, p < 0.01) compared with the control group (11.45 ± 0.071 s and 38.05 ± 0.21 s), which showed that PPp-W had anticoagulant activity. These studies suggested that PPp-W was a 3-O-methylated heteroglycan and might be suitable for functional foods and natural drugs as an anticoagulant ingredient, which provided a basis for the application of polysaccharides from P. placentodes.

Abstract
Mesona chinensis Benth has been consumed as a functional food for many years. It is widely believed that storage times affect its health benefits. In this study, Mesona chinensis Benth polysaccharides with two different storage times (fresh and storage for 1 year) were prepared, namely, FMP and AMP. The physicochemical properties and bioactivity were comparatively assessed. Results indicated that FMP was mainly composed of galacturonic acid, galactose, and glucose with a molecular weight of 44.39 kDa. AMP was composed of galacturonic acid, galactose, and fructose with a molecular weight of 64.34 kDa. However, the principal structural characteristics of polysaccharides remained stable. Furthermore, assays of antioxidant activity showed that Mesona chinensis Benth polysaccharide had an antioxidant effect against DPPH radical, ABTS radical cation, among which FMP was stronger. Additionally, flow cytometry indicated that the apoptosis rate of FMP and AMP on HepG2 tumor cells was 22.50 ± 1.25% and 15.49 ± 1.30%, respectively. In general, antioxidant and antitumor activities of Mesona chinensis Benth polysaccharides were decreased as the storage for 1 year. The change of physicochemical properties was responsible for the enhanced bioactivities. These results explained how polysaccharides contributed to the decreased health benefits of Mesona chinensis Benth during storage. Comparatively investigated the polysaccharides of fresh Mesona chinensis Benth and sample storage for 1 year (FMP/AMP). Storage times affected the structural and physicochemical properties of Mesona chinensis Benth polysaccharide (MP). FMP and AMP both enhanced gel properties of wheat starch. FMP exhibited superior biological activities compared with AMP. This study might promote the application of MP.

Abstract
Hirsutella sinensis, the anamorph of Ophiocordyceps sinensis (syn. Cordyceps sinensis), is a great substitute for precious and rare wild Cordyceps sinensis to effectively treat a variety of lung and kidney diseases. In this study, an α-glucan (named as HSWP-2a) was obtained by hot water extraction, DEAE-cellulose separation, and Sepharose CL-6B purification from H. sinensis mycelia. Different from known α-glucans, HSWP-2a is an α-(1 → 4)-D-glucan that branched at O-6, O-3, or O-2 with a terminal 1-linked α-D-Glcp as side chain, with an average molecular weight of 870.70 kDa. Immunological tests showed that HSWP-2a could remarkably enhance the phagocytosis of macrophages and increase the production of NO, IL-1β, IL-6, and TNF-α, via activating the p38, JNK, and NF-κB signaling pathways. Moreover, HSWP-2a could significantly promote splenic lymphocyte proliferation. Taken together, HSWP-2a may be potentially utilized as a natural immunomodulatory agent.

Abstract
The crude polysaccharides (NLCEP) were extracted from Notarchus leachii freeri eggs strings by the saltextractionmethod. The extraction conditions were optimized using the single-factorexperimentmethod and response surface method (RSM). The results showed that the maximum extraction yield of NLCEP was obtained under the following conditions: NaCl solution concentration of 2.96 %, raw material to liquid ratio of 1: 40 g/mL, extraction time of 2 h and extraction temperature of 69 °C. A new novel pure polysaccharide fraction named as NLCEPs-1 was fractionated from NLCEP by using DEAE-Cellulose 52 and Sephadex G-100. Its structure and immunomodulatory and antioxidant activities were analyzed. The results exhibited that the molecular weight of NLCEPs-1 was 31.4 kDa and it was composed of rhamnose, glucose, galactose, xylose and arabinose in the molar percentage of 11.128: 63.770: 5.439: 6.585: 13.077. The backbone of NLCEPs-1 was mainly consisted of → )4-α-d-Glcp (1→, →6)-α-d-Glcp (1→, →1)-β-d-Galp and β-d-Galp-(1→. NLCEPs-1 exhibited the strong antioxidant activity in scavenging ability of various free radicals and immunomodulatory activity by the enhancement of the pinocytic capacity, nitric oxide (NO) and cytokines.

Abstract
One of the most challenging issues in the food and pharmaceutical industries is finding effective and safe antioxidants from natural resources compared to their synthetic compounds, which have side effects. In this regard, Trehala manna was considered a great antioxidant source categorized as the major type of manna produced naturally and by the Echinops plant in response to insect activity. In this study, the antioxidant activity and phenolic content of the numerous Trehala manna in Echinops sp. have been investigated. Different methods of radical scavenging activity comprising 2,2′-azino-bis (3-ethylbenzothiazoline-6-sulphonic acid) (ABTS) and 2, 2-diphenyl-1-picrylhydrazyl (DPPH) have been investigated to evaluate antioxidant activity. The phenolic contents were measured by Folin–Ciocalteu and standard phytochemical methods. Quantitative and qualitative amounts of phenolic content, including caffeic, ferulic, coumaric, syringic, and hydroxybenzoic acids, were quantified by high-performance liquid chromatography (HPLC). The results indicated the significant changes in the amounts of phenolics and the antioxidant properties in Trehala manna samples, based on the place of collection. Based on results, antioxidant capacity detected by DPPH and ABTS tests showed the IC50 values of 40–94 µg/mL and 28–72 µg/mL, respectively. Results of the FRAP test represented very strong ferric ion reducing activities (0.04–0.83 mmol Fe2+/g). Ferric ion reducing data were not markedly different from ABTS and DPPH ones. These samples also presented the highest phenolic content (1.32–2.28 mg GAE/100 g). Jahrom Trehala manna was the highest in both phenolic content and antioxidant value, while Sabzevar was the lowest. We found a significant relationship between the antioxidant values and total phenolic counts. It indicates that the phenolics contribute to the observed antioxidant activities of these samples.

Abstract
A neutral polysaccharide (HJP-1a) and three acid polysaccharides (HJP-2, HJP-3 and HJP-4) were obtained from Z. jujuba cv. Hamidazao. HJP-1a was mainly composed of arabinose and galactose in a ratio of 56.9:20.0, with an average molecular weight of 3.115 × 104 g/mol. HJP-2, HJP-3 and HJP-4 were homogeneous heteropolysaccharides mainly containing galacturonic acid, arabinose and galactose, with average molecular weights of 4.590 × 104, 6.986 × 104 and 1.951 × 105 g/mol, respectively. Structural characterization indicated that the backbone of HJP-3 appeared to be mainly composed of →4)-α-d-GalpA (1→ and →2,4)-α-l-Rhap (1→ residues with some branches consisting of →5)-α-l-Araf (1→ residues and terminals of T-α-l-Araf (1→ and T-β-d-Galp residues. The four purified fractions displayed dose-dependent radical scavenging activity on ABTS+ radicals and reducing capacity, as well as excellent protective effect on H2O2-induced HepG2 cells and metronidazole-damaged zebrafish embryos, especially HJP-2 in vitro and HJP-1a in vivo. Therefore, the polysaccharides from Z. jujuba cv. Hamidazao could be used as a potential antioxidant in functional foods.

Abstract
The increasing popularity of Morinda citrifolia has many medical and health benefits because of its rich polysaccharides (PSC) and polyphenols (PPN). It has become popular to brew the dry M. citrifolia fruit slice as tea in some regions of China. In this study, optimize the extraction parameters of M. citrifolia fruit tea polysaccharides and polyphenols using response surface methodology. The results indicated the highest PSC yield of 17% at 46 °C for 11 min and the ratio of water/M. citrifolia fruit powder was 78 mL/g. The optimum extraction of PPN was at 95 °C for 10 min and the ratio of water/M. citrifolia fruit powder 90 mL/g, with 8.93% yield. Using dry M. citrifolia fruit slices as a tea is reported for the first time. Based on the results, the maximum level of PSC can be obtained under condition by infusing about four dried M. citrifolia fruit slice with average thickness and size in warm boiled water for 11 min, taking a 300 mL cup (300 mL of water) for example. The maximum level of PPN can be obtained by adding three slices of dried M. citrifolia fruit slice to boiled water for 10 min. Considering the powder used in our study, the further pulverization of cutting into powder is more conducive to material precipitation. This study provides a scientific basis for obtaining PSC and PPN from dry M. citrifolia fruit slice tea by brewing.

Abstract
The structural characteristics and biological activity of polysaccharides were influenced by different extraction methods. In this study, polysaccharides from mulberry fruits (Murus alba L., which were pre-treated with superfine grinding process) (MFP) were exacted using hot-water extraction (HWE), enzyme-assisted hot water extraction (EAHE), ultrasonic-assisted hot water extraction (UAHE), and high-speed shear homogenization-assisted hot water extraction (HSEHE). The extraction yield, structure, rheological properties and antioxidant activities of MFPs were investigated. MFP extracted using the HSEHE method have the highest extraction yields than other extraction methods. The smaller particle size of mulberry powder was found to improve the extraction yields. The MFPs were obtained by the combination between different extraction methods and superfine grinding pretreatment (through 100 mesh sieve) (MFP-HWE100, MFP-EAHE100, MFP-UAHE100, MFP-HSEHE100) showed the same levels of monosaccharide compositions and glycosyl linkages, However, these methods can produce MFP with different monosaccharide proportions, branching degree, different molecular weight, particle size and microstructure. MFP-HSEHE100 achieved the lowest molecular weight and particle size, which exhibited better thixotropy and antioxidant activities than other MFPs. This study identified that HSEHE was the most suitable extraction method for MFP.

Abstract
Inflammatory bowel disease (IBD) is a chronic inflammatory disease impairing the gastrointestinal tract, and its incidence and prevalence have been increasing over time worldwide. IBD greatly reduces peoples' quality of life and results in several life-threatening complications, including polyp, toxic colonic dilatation, intestinal perforation, gastrointestinal bleeding, and cancerization. The current therapies for IBD mainly include drugs for noncritical patients and operation for critical patients. However, continuous use of these drugs causes serious side effects and increased drug resistance, and the demand of effective and affordable drugs with minimal side effects for IBD sufferers is urgent. Natural-derived polysaccharides are becoming a research hotspot for their therapeutic effects on IBD. This study focuses on the research progress of various natural polysaccharides from plants, seaweeds, and mushrooms for the treatment of IBD during recent 20 years. Regulation of oxidative stress, inflammatory status, gut microbiota, and immune system and protection of the intestinal epithelial barrier function are the underlying mechanisms for the natural-derived polysaccharides to treat IBD. The excellent efficacy and safety of polysaccharides make them promising candidates for IBD therapy.

Abstract
In this study, a novel polysaccharide fraction from Ocimum album seed was extracted and then purified by Cellulose DEAE-52 and Sephadex G-200 anion exchange chromatography. The structural, physicochemical and antioxidant properties of the main polysaccharide fraction (OAP-1A) were evaluated. The purified polysaccharide contained 94.3% carbohydrate, 3.56% moisture and 2.14% ash and result of gel permeation chromatography (GPC) showed average molecular weight of 593 kDa. The results of high-performance liquid chromatography (HPLC) showed that OAP-1A was a neutral hetero-polysaccharide composed of mannose (35.7%), glucose (33.32%), galactose (19.6%) and rhamnose (11.38%). In addition, GC-MS data, nuclear magnetic resonance (NMR) spectrum and Fourier transform infrared (FT-IR) analysis revealed that the backbone of OAP-1A consists of →3)-β-D-Manp-(1→, →3,4)-β-D-Manp-(1→, →3,6)-β-D-Manp-(1→, →3)-α-D-Glcp-(1→, →6)-β-D-Galp-(1→, →4)-α-L-Rhap-(1→ and α-D-Glcp-(1→. X-ray diffraction (XRD) analysis showed semi-crystalline structure in OAP-1A. Differential scanning colorimeter (DSC) and thermo-gravimetry analysis (TGA) indicated that OAP-1A had relatively high thermal stability. Moreover, OAP-1A showed strong scavenging activity against 2,2-diphenyl-1-picrylhydrazyl (DPPH) radicals.

Abstract
Anoectochilus roxburghii (AR) has been used in food, medicine and ornamental industries for a long time. Anion exchange resin was proposed to purify the sub-fraction of water-extracted AR polysaccharide (ARPP-70), and a homogeneous polysaccharide ARPP-70a was obtained. The structural features of ARPP-70a were characterized using gas chromatography-mass spectrometry (GC-MS), nuclear magnetic resonance (NMR) spectroscopy, and high performance size exclusion chromatograph coupled with multi-angle laser light scattering (HPSEC-MALLS). The relative weight average molecular weight for ARPP-70a was determined to be 14.8 kDa, and the molar ratio of glucose to galactose was 1.0:3.2. The structure of ARPP-70a was elucidated to be glucogalactan, with backbone comprising β-1,4-linked Galp and some α-1,4-linked Glcp. The conformation characteristics of ARPP-70a were supposed to exist as a random coil chain in 0.1 M NaNO3 solution. Moreover, in vitro antioxidant activity assays revealed ARPP-70a exhibited appreciable antioxidant potential. To the best of our knowledge, this is the first study to obtain this type of glucogalactan, and provide systematic information on its structural and conformational properties. This study improved the understanding of the physicochemical characteristics of AR polysaccharide, which is beneficial for its further application in food and medicinal industry.

Abstract
Endophytic microbes are microorganisms that colonize the intracellular spaces within the plant tissues without exerting any adverse or pathological effects. Currently, the world population is facing devastating chronic diseases that affect humans. The resistance of pathogens to commercial antibiotics is increasing, thus limiting the therapeutic potential and effectiveness of antibiotics. Consequently, the need to search for novel, affordable and nontoxic natural bioactive compounds from endophytic fungi in developing new drugs with multifunction mechanisms to meet human needs is essential. Fungal endophytes produce invaluable bioactive metabolic compounds beneficial to humans with antimicrobial, anticancer, antidiabetic, anti-inflammatory, antitumor properties, etc. Some of these bioactive compounds include pestacin, taxol, camptothecin, ergoflavin, podophyllotoxin, benzopyran, isopestacin, phloroglucinol, tetrahydroxy-1-methylxanthone, salidroside, borneol, dibenzofurane, methyl peniphenone, lipopeptide, peniphenone etc. Despite the aforementioned importance of endophytic fungal metabolites, less information is available on their exploration and pharmacological importance. Therefore, in this review, we shall elucidate the fungal bioactive metabolites from medicinal plants and their pharmacological potential.

Abstract
BACKGROUND The global crisis caused by the outbreak of severe acute respiratory syndrome caused by the SARS-CoV-2 virus, better known as COVID-19, brought the need to improve the population's immunity. The foods rich in polysaccharides with immunomodulation properties are among the most highly rated to be used as immune response modulators. Thus, the use of polysaccharides obtained from food offers an innovative strategy to prevent serious side effects of viral infections. SCOPE AND APPROACH This review revisits the current studies on the pathophysiology of SARS-CoV-2, its characteristics, target cell interactions, and the possibility of using polysaccharides from functional foods as activators of the immune response. Several natural foods are explored for the possibility of being used to obtain polysaccharides with immunomodulatory potential. And finally, we address expectations for the use of polysaccharides in the development of potential therapies and vaccines. KEY FINDINGS AND CONCLUSIONS The negative consequences of the SARS-CoV-2 pandemic across the world are unprecedented, thousands of lives lost, increasing inequalities, and incalculable economic losses. On the other hand, great scientific advances have been made regarding the understanding of the disease and forms of treatment. Polysaccharides, due to their characteristics, have the potential to be used as potential drugs with the ability to modulate the immune response. In addition, they can be used safely, as they have no toxic effects, are biocompatible and biodegradable. Finally, these biopolymers can still be used in the development of new therapies and vaccines.

Abstract
The development and application of new selenium-enriched polysaccharides has become a critical topic in recent years. In this study, a natural selenium-enriched polysaccharide fraction (Se-POP-21) produced by Pleurotus ostreatus was purified, characterized, and investigated the antioxidant and antitumor activities in vitro. The Se-POP-21 was mainly composed of mannose, glucose, galactose and arabinose, with a molar ratio of 18.01:2.40:26.15:7.34, of which molecular weight was 15,888 Da and the selenium content was 5.31 μg/g. Spectral analysis demonstrated that Se-POP-21 represented a non-triple helix pyranopolysaccharide and selenium occurred in the form of C-O-Se and SeO. Molecular size and morphology studies showed that Se-POP-21 exhibited a spherical shape with a particle size distribution between 100 and 200 nm, even though Se-POP-21 aggregates were also found with a size between 500 and 600 nm. In addition, Se-POP-21 showed strong scavenging capacity to DPPH and hydroxyl radical. More, cell experiments showed that Se-POP-21 could reduce viability of A549, SKOV3, HepG2 and MCF-7 cells, induce apoptosis and inhibit metastasis of A549 cells. A potential mechanism was that Se-POP-21 inhibited the epithelial-to-mesenchymal transition of cancer cells. Se-POP-21 featured no significant effect on normal cells. Se-POP-21 showed great potential to develop into a natural antioxidant or low-toxic antitumor drug.

Abstract
This work investigated the effects of hot air drying pretreatment (HAD), freeze drying pretreatment (FD) and vacuum drying pretreatment (VD) on the physicochemical properties and structural characterizations of starch isolated from canistels. X-ray diffraction displayed that the starches separated from canistel by different drying pretreatments showed a typical A-type crystal structure. The SEM image showed that cracks and debris appeared on the surface of HVD and VD particles. The molecular structure of starches obtained by different drying pretreatments was studied using Fourier infrared and solid state 13C CP/MAS NMR analysis. The results indicated that vacuum drying pretreatment could promote the formation of the double helix of starch granules, and hot air drying and freeze drying destroyed the ordered structure of starch granules. These structural changed to affect the physicochemical properties of starch granules. The study of different drying pretreatments to separate starches provided practical value for drying pretreatments. Furthermore, the current study affords information for canistel starches cultivated in China that would be convenient for commercial applications.

Abstract
Abalone viscera were byproducts of the abalone processing and usually discarded as wastes. In this study, we tried to obtain functional polysaccharides from abalone viscera by a combination of enzymatic hydrolysis, membrane separation, anion exchange chromatography, and gel filtration techniques. Abalone viscera underwent successive hydrolyzation with alcalase and flavourzyme. Each enzymolysis was followed by deproteinization via membrane separation. The final yield of crude abalone viscera polysaccharide (CAVP) was 19.72%; the polysaccharide content of CAVP was 51.75%. Furthermore, three fractions of polysaccharides (AVP1, AVP2, and AVP3) were isolated from the CAVP by anion exchange chromatography and gel filtration. The molecular weights of each AVP were 14.99 kDa, 58.48 kDa, and 39.63 kDa, with a carbohydrate content of 62.75, 23.09, and 44.67%, respectively. These AVPs showed excellent antioxidant activities in vitro. Our results provide a scientific basis for the further utilization of polysaccharides from abalone viscera. PRACTICAL APPLICATION: This study demonstrated an eco-friendly approach for industrial production of high purity animal-derived polysaccharides without any environmental pollution caused by the viscera waste of abalone and promoting the comprehensive utilization of abalone resources.
