Abstract
Alongside natural factors, human activities have a major impact on the marine environment and thus influence processes in vulnerable ecosystems. The major purpose of this review is to summarise the current understanding as to how manmade factors influence the marine biocenosis of helminths, their intermediate hosts as well as seabirds as their final hosts. Moreover, it highlights current knowledge gaps regarding this ecosystem, which should be closed in order to gain a more complete understanding of these interactions. This work is primarily focused on helminths parasitizing seabirds of the North Atlantic and the Arctic Ocean. The complex life cycles of seabird helminths may be impacted by fishing and aquaculture, as they interfere with the abundance of fish and seabird species, while the latter also affects the geographical distribution of intermediate hosts (marine bivalve and fish species), and may therefore alter the intertwined marine ecosystem. Increasing temperatures and seawater acidification as well as environmental pollutants may have negative or positive effects on different parts of this interactive ecosystem and may entail shifts in the abundance or regional distribution of parasites and/or intermediate and final hosts. Organic pollutants and trace elements may weaken the immune system of the hosting seabirds and hence affect the final host's ability to control the endoparasites. On the other hand, in some cases helminths seem to function as a sink for trace elements resulting in decreased concentrations of heavy metals in birds' tissues. Furthermore, this article also describes the role of helminths in mass mortality events amongst seabird populations, which beside natural causes (weather, viral and bacterial infections) have anthropogenous origin as well (e.g. oil spills, climate change, overfishing and environmental pollution).

Abstract
Although cooked diets are the primary sources for humans to absorb trace elements, there is limited data available on the concentrations and bioaccessibility of trace elements in cooked food ingredients. This work aims to evaluate the effects of culinary procedures on the concentrations and bioaccessibility of trace elements in common food ingredients. Twelve food species from the local market were treated with four culinary procedures (boiling, steaming, baking, and frying), then the bioaccessibility of copper (Cu), zinc (Zn), and arsenic (As) were evaluated using the in vitro digestion method. The subcellular distribution of these elements was also determined using the sequential fractionation method. The results show that culinary procedures decreased the retention rate of As during cooking (100% for raw and 65-89% for cooked ingredients) and the bioaccessibility of Cu and Zn during digestion (nearly 75% for raw and 49-65% for cooked ingredients), resulting in a reduction of the total bioaccessible fraction (TBF) of Cu, Zn, and As in food ingredients. The TBF of Cu, Zn, and As in all tested food ingredients followed the order: raw (76-80%) > steaming and baking (50-62%) > boiling and frying (41-50%). The effects of culinary procedures were associated with the subcellular distribution of trace elements. As was dominantly distributed in heat-stable proteins (51-71%), which were more likely to be lost during cooking. In comparison, Cu and Zn were mainly bound to the insoluble fraction and heat-denatured proteins (60-89% and 61-94% for Cu and Zn, respectively), which become less digestible in cooked ingredients. In conclusion, these results suggest that culinary procedures reduce the absorption of Cu, Zn, and As in various food ingredients, which should be considered in the coming studies related to nutrition and risk assessment of trace elements.

Abstract
Face paints used by opera performers have been shown to contain high levels of heavy metals. However, whether frequent exposure, via dermal contact and inadvertent oral ingestion, results in occupational diseases is unknown, as is the potential exacerbation of toxicity by high-intensity irradiation from stage lights. In this study, we examined the release of Cr, Cu, Pb, and Zn from 40 face paints and the consequent health risks posed by different practical scenarios involving their use. The results showed that the in vitro bioaccessibility (IVBA) of Cr, Cu, Pb, and Zn in the tested products was, on average, 7.0, 5.5, 19.9, and 7.9% through oral ingestion and 1.1, 2.2, 1.6, and 1.2% through dermal contact, respectively. Stage light irradiation significantly increased the IVBA associated with dermal contact, to the average of 4.8, 34.9, 5.7, and 1.9% for Cr, Cu, Pb, and Zn, respectively. The increase was mainly due to the light-induced generation of reactive oxygen species, particularly hydroxyl free radicals. The vitality and transcriptional response of 3D skin models as well as a quantitative risk assessment of skin sensitization indicated that dermal contact with face paints may induce predictable skin damage and potentially other skin diseases. Long-term exposure to face paints on stage may also pose a non-carcinogenic health risk. The demonstrated health risks to opera performers of face paint exposure should lead to strict regulations regarding the content of theatrical face paints.

Abstract
There are global concerns about dietary exposure to metal(loid)s in foods. However, little is known about the relative contribution of rice versus fish to multiple metal(loid) exposure for the general population, especially in Asia where rice and fish are major food sources. We compared relative contributions of rice and fish consumption to multi-metal(loid) exposure on the city-scale (Nanjing) and province-scale in China. The effects of ingestion rate, metal(loid) level, and bioaccessibility were examined to calculate modeled risk from Cu, Zn, total As (TAs), inorganic As (iAs), Se, Cd, Pb, and methylmercury (MeHg). Metal(loid) levels in rice and fish samples collected from Nanjing City were generally low, except iAs. Metal(loid) bioaccessibilities in fish were higher than those in rice, except Se. Calculated carcinogenic risks induced by iAs intake (indicated by increased lifetime cancer risk, ILCR) were above the acceptable level (1 0 -4) in Nanjing City (median: 3 × 10-4 for female and 4 × 10-4 for male) and nine provinces (1.4 × 10-4 to 5.9 × 10-4) in China. Rice consumption accounted for 85.0% to 99.8% of carcinogenic risk. The non-carcinogenic hazard quotients (HQ) for single metals and hazard index (HI) for multi-metal exposure were < 1 in all cases, indicating of their slight non-carcinogen health effects associated. In Guangdong and Jiangsu provinces, results showed that rice and fish intake contributed similarly to the HI (i.e., 42.6% vs 57.4% in Guangdong and 54.6% vs 45.4% in Jiangsu). Sensitivity analysis indicated that carcinogenic risk was most sensitive to rice ingestion rate and rice iAs levels, while non-carcinogenic hazard (i.e., HQ and HI) was most sensitive to ingestion rate of fish and rice, and Cu concentration in rice. Our results suggest that rice is more important than fish for human dietary metal(loid) exposure risk in China, and carcinogenic risk from iAs exposure in rice requires particular attention.

Abstract
Turkey borders three seas and the most populous locations are squeezed into the coastal territories. Thus, organisms living in these aquatic territories are under longstanding anthropogenic pressure. Hence, this study investigated the consumption outcomes leading to potential child and adult health risks along with the spatial distribution of As, Cd, Cr, Cu, Ni, Pb, V, and Zn in the Mediterranean mussels (Mytilus galloprovincialis) sampled at 23 different stations from the Black Sea, the Sea of Marmara, and the Aegean Sea coastal waters of Turkey. The mean concentrations of trace elements found in the Mediterranean mussels followed Zn (39.75 mg kg-1) > Cu (1.95 mg kg-1) > As (1.84 mg kg-1) > Pb (0.99 mg kg-1) > Ni (0.65 mg kg-1) > Cr (0.62 mg kg-1) > V (0.47 mg kg-1) > Cd (0.08 mg kg-1). Factor analysis revealed that trace elements were mostly derived from anthropogenic sources. Pb values were found to be above the permissible European Union limits at 10 sampling stations. While the estimated weekly intake did not exceed the Joint FAO/WHO Expert Committee on Food Additives limits, the target hazard quotient for As was found >1 for children. The lifetime cancer risk (CR) for adults and children was unacceptable (>10-4) at high consumption rates for As according to US Environmental Protection Agency. Monte Carlo simulation confirmed a CR to adult (62.98%) and children (97.24%) mussel consumers caused by As.

Abstract
Seafood is an important source of arsenic (As) exposure for humans. In this study, 34 seafood samples (fishes, shellfishes, and seaweeds) collected from different markets in China were analysed for total and speciated As before and after boiling. Furthermore, the As bioaccessibility was also assessed using a physiologically based extraction test combined with the Simulator of Human Intestinal Microbial Ecosystems. The results showed that the total As (tAs) contents of seaweeds (raw: 44.12; boiled: 31.13, μg·g-1 dw) were higher than those of shellfishes (raw: 8.34; boiled: 5.14, μg·g-1 dw) and fishes (raw: 6.01; boiled: 3.25, μg·g-1 dw). Boiling significantly decreased the As content by 22.24% for seaweeds, 32.27% for shellfishes, and 41.42% in fishes, respectively (p < 0.05). During in vitro digestion, the bioaccessibility of tAs and arsenobetaine (AsB) significantly varied between the investigated species of seafood samples in gastric (G) and small intestinal phases (I) (p < 0.05). Higher tAs bioaccessibility (G: 68.6%, I: 81.9%) were obtained in fishes than shellfishes (G: 40.9%, I: 52.5%) and seaweeds (G: 31%, I: 53.6%). However, there was no significant differences in colonic phase (C) (p > 0.05). With the effect of gut microbiota, arsenate (AsⅤ) was transformed into monomethylarsonic acid (MMA) and arsenite (AsⅢ) in C. Moreover, as for seaweeds, an unknown As compound was produced.

Abstract
The occurrence of 21 trace elements in native Mediterranean mussel (Mytilus galloprovincialis) from the Calich Lagoon, a typical brackish area of the northwest of Sardinia (Italy), was investigated. The seasonal variation of metals in bivalves was considered, and the highest values were found in spring and summer; in particular, a high significant (P < 0.001) temporal variation was reported for silver (Ag) and mercury (Hg). The highest and similar concentrations were registered for aluminium (Al, mean 32 mg kg-1wet weight), iron (Fe, mean 32 mg kg-1 w. w.), and zinc (Zn, mean 25 mg kg-1 w. w.). The maximum limits set by European Regulations for cadmium (Cd), mercury (Hg), and lead (Pb) were never exceeded. Speciation analysis revealed negligible risk related to inorganic arsenic (iAs). Therefore, M. galloprovincialis confirmed its role as suitable bioindicator to monitor the contamination of coastal environments. Although the recommended tolerable weekly intake (TWI) was not exceeded, the levels of aluminium should be carefully evaluated in monitoring plans in the studied lagoon. Graphical abstract.

Abstract
A systematic investigation into bioaccessible heavy metals in shellfish Crassostrea ariakensis, Chlamys farreri, and Sinonovacula constricta from coastal cities Shenzhen, Zhoushan, Qingdao, and Dandong was carried out to assess the potential health risk to residents in coastal regions in China. The bioaccessible fractions of heavy metals were (μg‧g-1): Zn (0.63-15.01), Cu (0.10-12.91), Cd (0.01-0.64), As (0.11-0.33), Cr (0.07-0.12), Pb (0.01-0.03). The bioaccessibilities of heavy metals were Cr 61.86%, inorganic As (iAs) 60.44%, Pb 55.74%, Cu 46.83%, Zn 28.16%, and Cd 24.99%. As for child and adult, the bioaccessibility-corrected estimated daily intakes were acceptable and the non-carcinogenic risks posed by heavy metals were not obvious. The carcinogenic risks posed by bioaccessible heavy metals at the fifth percentile were 10-fold higher than the acceptable level (10-4), with iAs and Cd to be the major contributors, regardless of child or adult. The probabilistic estimation showed the low risk of shellfish consumption, which was verified by higher values of maximum allowable consumption rate and monthly meals at the 95 percentile; while some control of consumption rate and monthly meals was necessary for reducing heavy metal exposure of most shellfish samples, except for the safe consumption of S. constricta for both child and adult in Qingdao and Shenzhen, China.

Abstract
We aim to assess the risks of renal dysfunction and osteoporosis that is attributed to the seawater acidification caused cadmium (Cd) level increase in human consumed shellfish. A physiology-based pharmacokinetic model was used to estimate Cd concentrations in urine and blood among shellfish-only consumers and among the general population. We used the benchmark dose (BMD) method to determine the threshold limits of Cd in urine for renal dysfunction and in blood for osteoporosis for assessing the human health risk. Our results revealed that seawater acidification could increase the Cd accumulation in shellfish by 10-13% compared to the situations under current pH levels. Under the lower seawater pH level, the daily intake of Cd could increase by 21%-67% among shellfish-only consumers, and by 13%-17% among the general population. Our findings indicated that seawater acidification would lead to a marginal increase in Cd intake among humans in shellfish-only consumers. The results of BMDs of urinary Cd showed that the threshold limits for renal dysfunction at 5% were 3.00 μg g-1 in males and 12.35 μg g-1 in females. For osteoporosis, the estimated BMDs of blood Cd were 7.95 μg L-1 in males and 1.23 μg L-1 in females. These results of the risk of Cd intake showed that the consumption of Cd-contaminated shellfish in the general population is largely unaffected by changes in seawater pH levels. Notably, the potential impact of seawater acidification on renal dysfunction for males in shellfish-only consumers face a 14% increase of risk.

Abstract
Bioaccessibility study is of great significance to the health risk assessment of trace elements in the seafood. In this work, the most consumed crab (Portunus trituberculatus) in coastal area of Shandong, China was analyzed to study the distribution and the bioaccessibility of cadmium (Cd) in the edible tissues of crab, and the dietary risk from consumption of crab was also evaluated. Results showed that the content of Cd in the whole edible tissues of 109 crab specimens ranged from 0.052 to 8.89 mg/kg ww (wet weight) with mean of 2.26 mg/kg ww. The Cd content in 85% of the crab samples was higher than the national food safety limits (0.5 mg/kg ww) of China. The gender study indicated that there was no significant difference in Cd content in total edible tissues between the males and females (p > 0.05). Cadmium was highly concentrated in the brown meat with mean value of 4.13 mg/kg ww, which was about 5 times higher than that in the white meat (0.75 mg/kg ww). The bioaccessibility of Cd ranged from 48.1 to 71.0% in the white and brown meat. The risk assessment based on the bioaccessibility of Cd revealed that the consumption of the edible crab brown and white meat for adults should be limited in 0.13 kg and 1.56 kg per week respectively.

Abstract
Human-induced temperature changes influence coastal regions, both via thermal pollution and ocean warming, which exerts profound effects on the chemistry of metals and the physiology of organisms. However, it remains unknown whether the increased temperature of discharged water or ocean warming, as a result of climate change, lead to an increase of human health risks associated with the consumption of sea foods. In this study, the influence of temperature on metal accumulation by oysters was studied in individuals collected from a coastal area affected by the thermal water discharge of the Houshi Power Plant, China. The bioaccumulation factor (BAF) and oral bioavailability (OBA) of metals in oysters was determined. Elevated temperatures led to an increase in BAF for Cu, Zn, Hg, and Cd (p < 0.05), but no change was observed for As and Pb (p > 0.05). The OBA for Cd, As, and Pb correlated positively to elevated temperatures (p < 0.05). However, for Cu and Zn, OBA was negatively correlated with increasing temperature (p < 0.05). As, Pb, and Cd in the trophically available metal (defined as a sum of heat-stable proteins, heat-denaturable proteins, and organelles) was significantly elevated at the highest temperature seawater site (site A) compared to the lowest seawater site (site B). Thus, the irregular variation of OBA for each metal may be the result of variations in the subcellular distribution of metals and the protein quality influenced by the increased temperature. Moreover, the increased temperature and increased the hazard quotient values of As and Cd (p < 0.05 for As, n = 6, p < 0.05 for Cd, n = 6), which provided an indication of the potential risks of the consumption of oysters or other seafood to future warming under climate change scenarios.

Abstract
Here we characterize the bioaccumulation of mercury (Hg) and lead (Pb) in red swamp crayfish (Procambarus clarkii) from two river courses in Central Spain that are impacted by historical Hg and Pb mining activities, respectively. We estimate the absolute oral bioavailability of metals in crayfish tissues by means of in vitro bioaccessibility simulations, and assess whether their consumption may imply a health risk for humans by estimating target hazard quotients and safe consumption rates. We also study the effect of cooking crayfish on the mobilization of the metal body burden in the context of the traditional Spanish cuisine. The results showed that crayfish from the mining districts accumulated a high level of Hg and Pb pollution in both the tail muscle and the carcass. The in vitro bioaccessibility of Hg and Pb in the edible part was 27.86 ± 4.05 and 33.73 ± 5.91%, respectively. Absolute bioavailability was estimated to be 38.31 for Hg, and 20.21 (adults) and 67.35% (children) for Pb. Risk indices indicated that, even after adjusting for bioavailability, it is not safe to consume crayfish from the mining-impacted rivers because of their high levels of Hg and Pb. Using the carcass as a condiment for flavouring should also be avoided. The cooking procedure extracted relatively small amounts of the total Hg (8.92 ± 2.13%) and Pb (1.68 ± 0.29%) body burden. Further research that will support human and ecological risk assessment, along with the implementation of advisory measures for the local population as regards crayfish consumption, are recommended.

Abstract
The present study was designed to evaluate in vivo the oral bioavailability of lead (Pb) present in the marine bivalve Dosinia exoleta. This infaunal clam, despite inhabiting in clean areas, presents Pb concentrations that are over the 1.5 mg kg-1 wet weight limit for human consumption set by the European Commission. However, Pb is accumulated in this clam in the form of metal rich granules, and it has been shown to be unavailable for trophic transfer to a marine decapod, so it was hypothesised that it might be unavailable for human consumers as well. Twelve Sprague Dawley rats were fed during 14 days with a diet including control mussels (Mytilus galloprovincialis), D. exoleta, or mussels enriched in Pb to the same levels as those found in D. exoleta. Pb accumulation in different rat tissues (blood, bone, kidneys and liver) was analysed. It was observed that Pb assimilation from D. exoleta was about half of Pb assimilation from M. galloprovincialis, and absolute bioavailabilities were around 2% for M. galloprovincialis and 1% for D. exoleta. These results suggest that it might be possible to increase the limit for human consumption for this bivalve to 3 mg kg-1 wet weight without representing an increase in the risk for consumers.

Abstract
The Pacific oyster (Crassostrea gigas) culture has been expanding, thereby leading to a greater importance of hatcheries. Broodstock conditioning is very important in the hatchery process, in which diet composition may have a strong influence on the offspring production and quality. Therefore, the current study evaluated elemental composition and bioaccessibility of oysters fed different ratios of dietary seaweed (SW) and microalgae. The dietary conditioning consisted of direct replacement of microalgae by SW at four substitution levels (0%, 25%, 50%, and 100% diet). It was observed that oysters fed 100% SW had the highest levels of Be, Cu, Zn, Sr, and Cd. The most important trend was a concentration decline of most elements with progressively lower levels of SW substitution for microalgae in the feeds. No Cd or Pb hazard (contents below 1.0 mg/kg for Cd and 1.5 mg/kg for Pb) was found in oyster meat. Regarding elemental bioaccessibility, values were similar, near 100% in the cases of Cu, Br, and I. Only for Mn and Pb, bioaccessibility percentages deviated more from 100%. Indeed, the value for Pb was 50% ± 7% (initial group), and for Mn, all values were equal or lower than 29% ± 2% (final group of oysters fed microalgae). It was observed that Mn, Cd, and Pb bioaccessibility increased with a growing share of microalgal biomass in the feed. Therefore, this study showed that SW incorporation into the feed influences elemental composition and bioaccessibility of the oysters.

Abstract
Bioavailability is not a constant percentage of a contaminant in food but is affected by many factors, such as food type, treatment, diet structure and interaction with other compounds. To evaluate these influences, we measured the bioaccessibility of aflatoxins from nine naturally polluted maize samples, collected from southeast China, using an in vitro digestion model, and analysed the intestinal transport of aflatoxins by a Caco-2 cell model. Steam cooking treatment could reduce the aflatoxin levels in maize bread. The degradation rates of aflatoxin B1, aflatoxin B2, aflatoxin G1, and aflatoxin G2 ranged from 24.9±3.2 to 33.9±3.5%, 27.0±2.0 to 39.0±1.8%, 27.9±7.9 to 34.4±8.2% and 25.6±3.6 to 37.2±6.5%, respectively. As a result, the bioaccessibility of aflatoxins determined by an in vitro digestion model (41.5-63.3%) was much lower than the previously reported 80%. Edible oil could increase the bioaccessibility of aflatoxin, whereas lettuce would decrease the exposure amount from maize. With a Caco-2 cell model, the apparent permeability coefficient exceeding 10-5 cm/s indicated that there is high absorption of aflatoxins in the human body, while the intestinal transport can be effectively restrained in the presence of chlorophyll.

Abstract
In this study, the total concentration and bioaccessibility of four metals (Zn, Se, Cd, Cu) in sea cucumbers (Apostichopus japonicus) before and after cooking were measured. The concentration of Zn, Se, Cd, and Cu were 22.24 ± 0.75, 0.75 ± 0.06, 0.32 ± 0.07, and 1.88 ± 0.09 mg/kg in raw cucumber, respectively. The contents of Zn, Se, and Cu in high-pressured samples were significantly higher than that in the raw sea cumber (p < 0.01). The levels of Cd were all decreased after three thermal treatments. The intake of Zn and Cu increased in sea cucumber cooked by all thermal processes. While the bioaccessibility of Se and Cd decreased after cooking. A significant correlation was observed between the concentration and bioaccessibility of minerals. These data provide useful information for dietary risk assessments of minerals in sea cucumbers.

Abstract
Oysters are important benthic bivalves in coastal and estuarine environments. They are widely farmed due to their rapid growth and taste; they are also widely applied in environmental monitoring of coastal pollution due to their accumulation of contaminants. Most importantly, oysters are among the few marine organisms that are considered to be hyper-accumulators of many toxic metals, such as cadmium, copper and zinc. As such, there is a tremendous call to study the interactions between metals and oysters, especially due to the increasing metal pollution in many coastal and estuarine waters. Over the past decades, many studies have focused on metal accumulation in oysters as well as the ecotoxicological effects of metals on oysters. In this review, we summarize the recent progress in our understanding of the molecular and cellular mechanisms of metal accumulation, sequestration and toxicity in oysters. Applications of modern technologies such as omics and nanoscale imaging have added significantly to our knowledge of metal biology in oysters. Variations between different metals also demonstrate the diversity of the interactions between oysters and metals. Despite this recent progress, however, there is a need for further study of the molecular mechanisms of metal uptake and toxicity as well as the joint effects of metal mixtures on oyster populations. Oysters have higher numbers of stress responsive genes than most animals, which may have been induced by gene duplication during the evolution of their intertidal environmental adaptations. The divergent expression of stress responsive genes may explain the different tolerances for metals among different species. These fundamental studies may eventually provide promising solutions for reducing toxic metal concentrations in oysters for safe consumption by humans. To conclude, the complexity of life history and metal chemistry of oysters coupled with emerging pollution and application of modern techniques represents an important and exciting research area in modern ecotoxicology.

Abstract
The total arsenic (As) and As species were analyzed in 19 species of wild marine organisms collected from 12 locations in Daya Bay, China; additionally, both the levels of As in the seawater and sediments and the salinity were investigated. The greatest level of As was found in crabs (13.4-35.1 μg/g), followed by shrimps (8.52-27.6 μg/g), benthic fish (3.45-28.6 μg/g), and pelagic fish (1.22-5.23 μg/g). There were significantly positive correlations between the As concentrations in the benthic fish Callionymus richardsonii/shrimp Metapenaeopsis palmensis and those in sediments, indicating that As levels in them were highly dependent on those in the sediments. Arsenobetaine (AsB) (87.3-99.8%) was the most dominant form of As found in all marine organisms. In benthic fish and shrimp, the bioaccumulation of As, especially AsB, was positively correlated with the salinity of the seawater, indicating that the salinity could control the transfer of As. The calculated hazard quotients (HQs) of the inorganic As in the marine organisms were all <1; thus, there was no apparent health hazard through the consumption of wild marine organisms.

Abstract
The rapid expansion of construction related to coastal development evokes great concern about environmental risks. Recent attention has been focused mainly on factors related to the effects of waterlogging, but there is urgent need to address the potential hazard caused by artificial topography: derived changes in the elemental composition of the sediments. To reveal possible mechanisms and to assess the environmental risks of artificial topography on transition of elemental composition in the sediment at adjoining zones, a nest-random effects-combined investigation was carried out around a semi-open seawall. The results implied great changes induced by artificial topography. Not only did artificial topography alter the sediment elemental composition at sites under the effect of artificial topography, but also caused a coupling pattern transition of elements S and Cd. The biogeochemical processes associated with S were also important, as suggested by cluster analysis. The geo-accumulation index shows that artificial topography triggered the accumulation of C, N, S, Cu, Fe, Mn, Zn, Ni, Cr, Pb, As and Cd, and increased the pollution risk of C, N, S, Cu, As and Cd. Enrichment factors reveal that artificial topography is a new type of human-activity-derived Cu contamination. The heavy metal Cu was notably promoted on both the geo-accumulation index and the enrichment factor under the influence of artificial topography. Further analysis showed that the Cu content in the sediment could be fitted using equations for Al and organic carbon, which represented clay mineral sedimentation and organic matter accumulation, respectively. Copper could be a reliable indicator of environmental degradation caused by artificial topography.

Abstract
The combined effects of different salinity and temperature levels on the toxicity of Arsenic (As) were studied on the embryonic development of the oyster Crassostrea gigas. A standardized embryotoxicity test was performed to assess the interactive effects of these stressors, in a full factorial design experiment including a range of salinities (15, 19, 24, 28 and 32), temperatures (16, 20, 24, 28 and 32°C) and As concentrations (100, 300, 600, 1200, 2400µgL-1). The embryotoxicity endpoint was about the determination of normal larvae development rates at various conditions, and median effect concentration (EC50) determination for each As exposure condition. Results showed that toxicity induced by As was characterized by retardation of embryonic development observing toxic effects at lower concentrations than previously reported studies. The presence of As in seawater resulted in a narrower range of tolerance to both salinity and temperature. These findings bring new insights on the impacts of a common contaminant on an important shellfish species having a planktonic early life stage development, with potential implications for population survival and ecosystem functioning in a changing environment.

Abstract
The in vitro bioaccessibility of trace metals associated with oral ingestion of market vegetables (lettuce, pak choi, cole, and leaf lettuce) of Beijing, China was studied. The physiologically based extraction test (PBET) combined with the Simulator of Human Intestinal Microbial Ecosystem (SHIME) was applied to simulate stomach, small intestine, and colon of human. In the gastro-intestinal phases, the bioaccessibility of Cu, Fe, Mn, and Zn varied within 5.7–75.5%, 17.3–50.4%, 13.3–49.1%, and 19.9–63.7%, respectively. There was no significant difference in the metal bioaccessibility between the gastric and small intestinal phases, except for higher Cu bioaccessibility in the small intestine. Besides, the bioaccessibility of the four trace metals in the colon phase was first ever reported. A significant decline in Cu bioaccessibility (1.8–63.7%) and slight increases in the bioaccessibility of Fe (16.7–56.4%), Mn (21.2–71.6%), and Zn (15.7–69.7%) were revealed, which could mainly be attributed to the effect of colon microbiota. In addition, the estimated daily intakes (EDIs) of Cu, Fe, Mn, and Zn were worked out to be 0.7, 8.8, 2.7, and 4.5 μg kg−1 body weight d−1, based on which the potential influences of these trace metals in vegetables on the health of the local consumers was demonstrated.

Abstract
The oral bioaccessibility of several essential and toxic elements was investigated in raw and cooked commercially available seafood species from European markets. Bioaccessibility varied between seafood species and elements. Methylmercury bioaccessibility varied between 10 (octopus) and 60% (monkfish). Arsenic (>64%) was the toxic element showing the highest bioaccessibility. Concerning essential elements bioaccessibility in raw seafood, selenium (73%) and iodine (71%) revealed the highest percentages. The bioaccessibility of elements in steamed products increased or decreased according to species. For example, methylmercury bioaccessibility decreased significantly after steaming in all species, while zinc bioaccessibility increased in fish (tuna and plaice) but decreased in molluscs (mussel and octopus). Together with human exposure assessment and risk characterization, this study could contribute to the establishment of new maximum permissible concentrations for toxic elements in seafood by the European food safety authorities, as well as recommended intakes for essential elements.

Abstract
Influences of minerals, oligo- and trace elements on the concentration of biomarkers of the metabolic syndrome (MetS) are reviewed. Since food is a complex mixture of caloric compounds and essential non-caloric food components with multiple interactions and varying bioavailability, it is hard to separate or identify the effect of one single component in a total meal or diet. Moreover the diet contains various non-nutritive biologically active components, which may add some beneficial characteristics. Therefore, conclusions on the effect of components on various biomarkers of MetS are sometimes quite contradictory. Reasons therefore are mentioned. Literature data should be studied in detail to conclude whether a component is related to a reduction of MetS-related symptoms or whether its influence is merely affecting a biomarker.

Abstract
Zebra mussels (Dreissena polymorpha) were exposed to polyvinylpyrrolidone (PVP)-coated silver nanoparticles (AgNP; hydrodynamic diameter 80 nm; solid diameter 50 nm) to investigate the behavior of Ag in the tank water with respect to its uptake, bioaccumulation, elimination and subcellular distribution in the mussel soft tissue. Parallel experiments were performed with ionic Ag (AgNO3) to unravel possible differences between the metal forms. The recovery of the applied Ag concentration (500 μg/L) in the tank water was clearly affected by the metal source (AgNP < AgNO3) and water type (reconstituted water < tap water). Filtration (<0.45 μm) of water samples showed different effects on the quantified metal concentration depending on the water type and Ag form. Ag accumulation in the mussel soft tissue was neither influenced by the metal source nor by the water type. Ag concentrations in the mussel soft tissue did not decrease during 14 days of depuration. For both metal forms the Ag distribution within different subcellular fractions, i.e. metal-rich granules (MRG), cellular debris, organelles, heat-sensitive proteins (HSP) and metallothionein-like proteins (MTLP), revealed time-dependent changes which can be referred to intracellular Ag translocation processes. The results provide clear evidence for the uptake of Ag by the mussel soft tissue in nanoparticulate as well as in ionic form. Thus, zebra mussels could be used as effective accumulation indicators for environmental monitoring of both Ag forms.

Abstract
ABSTRACT Copper is an essential trace element for humans and its deficiency can lead to numerous diseases. A lot of mineral supplements are available to increase intake of copper. Unfortunately, only a part of the total concentration of elements is available for human body. Thus, the aim of the study was to determine bioaccessibility of copper in Açai berry, known as a "superfood" because of its antioxidant qualities. An analytical methodology was based on size exclusion chromatography (SEC) coupled to a mass spectrometer with inductively coupled plasma (ICP MS) and on capillary liquid chromatography coupled to tandem mass spectrometer with electrospray ionization (µ-HPLC-ESI MS/MS). To extract various copper compounds, berries were treated with the following buffers: ammonium acetate, Tris-HCl, and sodium dodecyl sulfate (SDS). The best extraction efficiency of copper was obtained for SDS extract (88 %), while results obtained for Tris-HCl and ammonium acetate were very similar (47 and 48 %, respectively). After SEC-ICP-MS analysis, main signal was obtained for all extracts in the region of molecular mass about 17 kDa. A two-step model simulated gastric (pepsin) and gastrointestinal (pancreatin) digestion was used to obtain the knowledge about copper bioaccessibility. Copper compounds present in Açai berry were found to be highly bioaccessible. The structures of five copper complexes with amino acids such as aspartic acid, tyrosine, phenylalanine, were proposed after µ-HPLC-ESI MS/MS analysis. Obtained results show that copper in enzymatic extracts is bound by amino acids and peptides what leads to better bioavailability of copper for human body. GRAPHICAL ABSTRACT

Abstract
The increasing rate of occurrence and persistence of climatic events causing salinity shifts, in combination with contamination, may further challenge organisms response to environmental stress. Hence, we studied the effects of different salinity levels (10, 20, 30 and 40) on the response of the oyster Crassostrea angulata to Arsenic (As) exposure (4 mg L(-1)). Total As, Na(+) and K(+) concentrations in oyster tissues were determined. Biochemical analysis were performed to assess osmotic regulation (CA), metabolism (ETS), enzymatic (SOD, CAT and GSTs) and non-enzymatic (GSH/GSSG and LPO) markers of oxidative stress. Results obtained showed significantly higher metabolic activities in oysters maintained in low salinity (10) exposure, coupled with higher As accumulation, as well as higher SOD and CAT activities, compared to higher salinities (30 and 40). GSTs activity and LPO levels were higher in oysters exposed to As at salinities 20, 30 and 40, compared to the same conditions without As. From our findings we concluded that the response of C. angulata to As is influenced by salinity. At the lowest salinity (10) oysters accumulated higher As concentrations, here attributed to higher metabolic rate involved in physiological osmoregulation, also stimulating antioxidant related enzymes activity (SOD and CAT) and thus preventing increased LPO (higher ETS activity also observed without As). On the contrary, at salinities 30 and 40 with As, antioxidant SOD and CAT were inhibited, enabling for LPO generation. Given our results, the effects of As on the oysters antioxidant capacity appears to be more deleterious under higher salinities (20, 30 and 40), comparing to salinity 10. The differentiated responses demonstrated in the present study in C. angulata oysters exposed to As under different salinities, bring new insights on the mechanisms of environmental adaptability of this species, namely to salinity shifts, and the interactions between such alterations and As exposure.

Abstract
Ocean acidification processes are major threats to marine calcifying organisms, mostly affecting biomineralization related processes. Abiotic stressors acting on marine systems do not act alone, rather in a combination of multiple stressors, especially in coastal habitats such as estuaries, where anthropogenic and environmental pressures are high. Arsenic (As) is a widely distributed contaminant worldwide and its toxicity has been studied on a variety of organisms. However, the effect of low pH on the toxicity of As on marine organisms is unknown. Here, we studied the combined effects of ocean acidification and As exposure on two closely related oyster species (Crassostrea angulata and Crassostrea gigas), by use of a biochemical approach. Oxidative stress related parameters were studied along with the assessment of biomineralization enzymes activity after 28days of exposure. Results showed that both species were sensitive to all tested conditions (low pH, As and pH+As), showing enhancement of antioxidant and biotransformation defenses and impairment of biomineralization processes. Glutathione S-transferases (GSTs) activity were significantly higher in oysters exposed to As, showing activation of detoxification mechanisms, and a lower GSTs activity was observed in low pH+As condition, indicating an impact on the oysters capacity to detoxify As in a low pH scenario. Carbonic anhydrase (CA) activity was significantly lower in all tested conditions, showing to be affected by both As and low pH, whereas the combined effect of low pH+As was not different from the effect of low pH alone. Multivariate analysis of biochemical data allowed for the comparison of both species performance, showing a clear distinction of response in both species. C. gigas presented overall higher enzymatic activity (GSTs; superoxide dismutase; catalase; CA and acid phosphatase) and higher cytosolic GSH content in As exposed oysters than C. angulata. Results obtained indicate a higher tolerance capacity of the Pacific oyster C. gigas towards the tested conditions.

Abstract
Freshwater crayfish, the world's third largest crustacean species, has been reported to accumulate high levels of metals, while the current knowledge of potential risk associated with crayfish consumption lags behind that of finfish. We provide the first estimate of human health risk associated with crayfish (Procambarus clarkii) consumption in China, the world's largest producer and consumer of crayfish. We performed Monte Carlo Simulation on a standard risk model parameterized with local data on metal concentrations, bioaccessibility (φ), crayfish consumption rate, and consumer body mass. Bioaccessibility of metals in crayfish was found to be variable (68-95%) and metal-specific, suggesting a potential influence of metal bioaccessibility on effective metal intake. However, sensitivity analysis suggested risk of metals via crayfish consumption was predominantly explained by consumption rate (explaining >92% of total risk estimate variability), rather than metals concentration, bioaccessibility, or body mass. Mean metal concentrations (As, Cd, Cu, Ni, Pb, Se and Zn) in surveyed crayfish samples from 12 provinces in China conformed to national safety standards. However, risk calculation of φ-modified hazard quotient (HQ) and hazard index (HI) suggested that crayfish metals may pose a health risk for very high rate consumers, with a HI of over 24 for the highest rate consumers. Additionally, the φ-modified increased lifetime risk (ILTR) for carcinogenic effects due to the presence of As was above the acceptable level (10(-5)) for both the median (ILTR=2.5×10(-5)) and 90th percentile (ILTR=1.8×10(-4)), highlighting the relatively high risk of As in crayfish. Our results suggest a need to consider crayfish when assessing human dietary exposure to metals and associated health risks, especially for high crayfish-consuming populations, such as in China, USA and Sweden.

Abstract
An enlarged range of scallop products on the market allows the consumer to buy lower priced alternatives, which often raises the question of quality and control. Frozen meat of king scallops (Pecten maximus) and Atlantic sea scallops (Placopecten magellanicus) were purchased on the German market and compared with fresh shell-on king scallops of various origin. The approximate composition, inclusive citric acid and phosphates, minerals, free amino acids (FAA) and fatty acid profiles were examined in the muscle to identify changes as a result of processing. The FAA glycine and taurine as well the fatty acids 20:5n-3 (EPA) and 22:6n-3 (DHA) were the most abundant, but were reduced in processed samples. Di- and triphosphate contents were not detectable (<0.01 g·kg-1) in untreated meats. Most frozen scallop products contained added citrates and polyphosphates and had distinctly higher water contents (up to 89%) and an increased moisture to protein ratio (M/P) (up to 9) compared with the fresh king scallops (78%, M/P < 5). Labelling of species, verified by PCR-based DNA analysis, and ingredients were not correct in each case. Overall results indicated no relevant differences in mineral content, except high sodium contents, resulting from additives. Labelling does not readily allow the consumer to recognize the extent of processing effects.

Abstract
The Hong Kong oysters Crassostrea hongkongensis are widely farmed in the estuarine waters of Southern China, but they accumulate Cu and Zn to alarmingly high concentrations in the soft tissues. Health risks of seafood consumption are related to contaminants such as toxic metals which are bioaccessible to humans. In the present study, we investigated the oral bioaccessibility of five toxic metals (Ag, Pb, Cd, Cu and Zn) in contaminated oysters collected from different locations of a large estuary in southern China. In all oysters, total Zn concentration was the highest whereas total Pb concentration was the lowest. Among the five metals, Ag had the lowest oral bioaccessibility (38.9-60.8%), whereas Cu and Zn had the highest bioaccessibility (72.3-93.1%). Significant negative correlation was observed between metal bioaccessibility and metal concentration in the oysters for Ag, Cd, and Cu. We found that the oral bioaccessibility of the five metals was positively correlated with their trophically available metal fraction (TAM) in the oyster tissues, and negatively correlated with metal distribution in the cellular debris. Thus, metal partitioning in the TAM and cellular debris controlled the oral bioaccessibility to humans. Given the dependence of oral bioaccessibility on tissue metal contamination, bioaccessibility needs to be incorporated in the risk assessments of contaminated shellfish.

Abstract
Here we describe the whole genome re-sequencing of the Portuguese oyster Crassostrea angulata, an edible cupped oyster of major commercial importance with an important role as biosensor of coastal water pollution. We sequenced the genome of the C. angulata to 29.3-fold coverage using ABI SOLID system. Comparisons of the sequences with the reference assembly of the Pacific oyster (Crassostrea gigas), yielded 129 million SNPs, 151,620 from which were located in 20,908 genes from the C. gigas database. The analysis of Gene Ontology (GO) terms associated with gene regions containing SNPs, revealed that significant GO terms showing differences between the two oyster species, were related to activities of response to stress caused both by drying and by metal contamination. In the Biological Process domain, the GO terms ion transport, phosphorylation and proteolysis processes, among others, showed many polymorphic genes in C. angulata. These processes are related to combating genotoxic and hypo-osmotic stress in the oyster. It is noteworthy that more than 200 polymorphic genes were associated with DNA repair processes. These results reveal that most of the gene polymorphisms observed in C. angulata are associated with processes related to genome adaptation to abiotic stress in estuarine regions and support that genetic polymorphisms may be the base to the observed ability of C. angulata to retain the phenomenally high concentrations of toxic heavy metals. Our results also provide the framework for future investigations to establish the molecular basis of phenotypic variation of adaptive traits and should contribute to the management of the species' genetic resources.

Abstract
As traditional seafoods, the razor clams are widely distributed from tropical to temperate areas. Coastal razor clams are often exposed to eutrophication. Heavy metal contamination is critical for seafood safety. However, how eutrophication affects bioaccumulation and oral bioavailability of heavy metals in the razor clams is unknown. After a four-month field experimental cultivation, heavy metals (Fe, Cu, Ni, V, As, and Pb) could be bioaccumulated by the razor clams (Sinonovacula constricta) through exposure to metals present in water and sediments or in the food chain, and then transferred to human via consumption of razor clams. Bionic gastrointestinal digestion and monolayer liposome extraction are used for metal oral bioavailability (OBA) assessment. The influence of eutrophication on OBA is decreased for Fe and Pb and increased for V. A significant positive linear correlation was observed between the bioaccumulation factors of Fe, Ni, V, and As in razor clams and the coastal eutrophication. These results may be due to the effect of eutrophication on metal species transformation in coastal seawater and subcellular distribution in razor clams. The maximum allowable daily intakes of razor clams are controlled by eutrophication status and the concentration of affinity-liposome As in razor clams.

Abstract
This paper studied the levels and organ distribution of the toxic heavy metal cadmium in scallops from unpolluted Greenlandic waters. The scallops had an average cadmium concentration of 2.93 ± 0.94 μg/g wet weight in the total soft tissues and no concentration dependent effect was found for gender or size (both p>0.05). The kidney was the primary organ for cadmium accumulation with a mean of 226.2 ± 111.7 μg/g wet weight, and despite the small weight of the kidney, it appeared as the principal contributor of cadmium with 92% of the total cadmium body burden. The cadmium concentrations in the total soft tissues far exceeded the EU-limit of 1 μg/g wet weight for cadmium in bivalves. Based on this, selective evisceration of the cadmium-rich kidney and digestive gland during processing can be regarded as a reliable measure to be taken in order to reduce the cadmium content of scallops used for human consumption.

Abstract
Oysters (Crassostrea angulata) are often exposed to eutrophication. However, how these exposures influence metal bioaccumulation and oral bioavailability (OBA) in oysters is unknown. After a four month field experimental cultivation, bioaccumulation factors (BAF) of metals (Fe, Cu, As, Cd, and Pb) from seawater to oysters and metal oral bioavailability in oysters by bionic gastrointestinal tract were determined. A positive effect of macronutrient (nitrate N and total P) concentration in seawater on BAF of Cd in oysters was observed, but such an effect was not significant for Fe, Cu, Pb, and As. Only OBA of As was significantly positively correlated to N and P contents. For Fe, OBA was negatively correlated with N. The regular variation of the OBA of Fe and As may be due to the effect of eutrophication on the synthesis of metal granules and heat-stable protein in oysters, respectively.
