Abstract
BACKGROUND People worldwide are routinely exposed to tellurium mainly via dietary ingestion. There has been no study to clarify the contribution of tellurium to blood pressure in humans or animals. METHODS In this cross-sectional study conducted in a general population of 2592 residents in Japan, the associations of urinary tellurium levels with blood pressure and prevalence of hypertension were investigated. The potential sources of tellurium were also investigated. An interventional study in mice confirmed the effect of tellurium exposure on blood pressure. RESULTS Linear and logistic regression analyses with consideration of confounders including urinary sodium-potassium ratio showed significant positive associations of urinary tellurium level with prevalence of hypertension and blood pressure. Cereals/beans and vegetables/fruits were determined to be potential dietary sources of tellurium exposure. Intermediary analysis suggested that increased intake of cereals/beans, but not that of vegetables/fruits, is positively associated with the tellurium-mediated risk of hypertension. Correspondingly, the mouse study showed that exposure to a putative human-equivalent dose of tellurium via drinking water increased blood pressure with an elevated level of urinary tellurium. The temporally increased blood pressure was decreased to the normal level by a break of tellurium exposure with a reduced level of urinary tellurium. CONCLUSIONS The interdisciplinary approach provided the first evidence that tellurium exposure is a potential risk for increase of blood pressure. Since the human urinary tellurium level in this study is comparable with the levels in general populations in other Asian and European countries in previous studies, exposure to tellurium may be a latent universal risk for hypertension.

Abstract
Large-scale metal contamination across the food web is an intractable problem due to increasing pollutant emissions, atmospheric transport, and dry and wet deposition of elements. The present study focus on several trace metals that are rarely studied but have special toxicity, including tin (Sn), antimony (Sb), gold (Au), hafnium (Hf), palladium (Pd), platinum (Pt), ruthenium (Ru), tellurium (Te) and iridium (Ir). We investigated trace metals residues and distribution characteristics, and further evaluated the potential health risks from major daily food intakes in 33 cities in China. Sn, Sb, Ir, Hf, and Au were frequently detected in food samples with the concentrations ranged from ND (not detected) to 24.78 µg/kg ww (wet weight). Eggs exhibited the highest residual level of all detected metals (13.70 ± 14.70 µg/kg ww in sum), while the lowest concentrations were observed in vegetables (0.53 ± 0.17 µg/kg ww in sum). Sn accounting for more than 50% of the total trace metals concentration in both terrestrial and aquatic animal origin foods. In terrestrial plant origin foods, Sn and Ir were the most abundant elements. Hf and Au were the most abundant elements in egg samples. In addition, Sb and Ir showed a clear trophic dilution effect in terrestrial environments, while in aquatic ecosystems, Sn, Hf, and Au exhibited obvious trophic amplification effects. The calculated average estimated daily intake (EDI) via food consumption in five regions of China was 0.09 µg/(kg·day), implying the health risk of aforementioned elements was acceptable.

Abstract
The intricate balance between the beneficial and harmful effects of selenium (Se) intake means that its quantification in food needs to be done correctly. Therefore, in this review, we systematized 105 articles to identify the most studied methodologies, analytical techniques, and food matrices. Among the analytical techniques employed, inductively coupled plasma mass spectrometry (ICP-MS) (n = 29) emerged as the most commonly used method. The most prevalent hydrolysis methodology to digest Se in food matrices involved the use of nitric acid combined with ultrasound, which improved both the yield and digestion time. Optimal recovery values were achieved when total Se quantification accounted for the sum of Se(IV) and Se(VI) (94.4-99.4%) and for SeCys (88-96.5%). These findings are relevant for advancing methodological approaches, and their results emphasize the importance of developing alternative, faster, and lower-cost protocols for Se quantification in foods and beverages.

Abstract
This particular study was aimed to establish the level of heavy metals in different horticultural crops cultivated by irrigation and the soil in two sub-cities of Addis Ababa, Ethiopia, and quantitatively assess the health treat they pose for the consumer. A total of 151 vegetable samples comprised of lettuce (Lactuca sativa), cabbage (Brassica oleracea var. capitate), cucumber (Cucumis sativus), potato (Solanum tuberosum), parsley (Petroselinum crispum), Swiss chard (Beta vulgaris subsp. vulgaris), beetroot (Beta vulgaris), green onion (Allium porrum L.) and 28 soil samples were collected for this study. Six toxic elements were analyzed using microwave plasma atomic emission spectroscopy (MP-AES) after microwave assisted digestion of the samples. The concentrations of examined trace elements in vegetables (mg/kg) were found in the range of 5.50-93.00 for zinc; below detection limit (BDL)- 18.50 for copper; BDL-2.50 for nickel; BDL-17.00 for lead; 5.00-4256.50 for manganese and 22.00-8708.00 for iron. Considering the mean Pb content values, all vegetables exceeded the maximum permissible level set by the joint FAO/WHO commission in both irrigation sites. In case of Mn parsley, swiss chard, and green onion all from site two exceeded the maximum allowable values. With the exception of potato from irrigation site one, all vegetables exceeded the maximum permissible limit set for Fe concentration and out of which parsley, swiss chard, and green onion, all from site two, exceeded by more than double amount. The same trend is observed for the concentration of Mn and Fe in the soil samples. In fact, in both irrigation sites their concentration exceeded the allowable limits set by United Nation Environment Program (UNEP) for agricultural soils. The metal pollution load index revealed that in most of the vegetables studied the overall pollution load of trace metals were higher in Kolfe Keranyo irrigation site. The risk assessment study using indices like estimation of daily/weekly dietary exposure, hazard quotient and metal pollution load index all suggested consumption of the studied vegetables poses a significant health risk for the consumer. For adults the calculated target hazard quotient for the trace element Pb is higher than 1 (one) for all of studied vegetables ranging from 11.086 (cucumber) to 17.881 (beetroot) with a 98.216% and 98.464% contribution to the hazard indices, respectively. For a child consumer, Mn showed a higher target hazard quotient vales ranged from 0.0107 (cucumber) to 0.0495 (green onion) with a 70.86% and 88.85% contribution to the total hazard indices, respectively. The soil pollution indices also indicated that the degree of metal enrichment in soils and sediments are higher than the allowable limits. Therefore, a prompt action is required to curb the problem and ensure the public safety along the food system line.

Abstract
In this study, representative urban and peri-urban Indian food baskets have been studied for the presence of toxic and essential elements. The concentration of target toxic and essential elements was used to estimate dietary intakes (EDIs) and health risks. Across all food matrices, toxic elements like Cd and Pb were dominant. The highest concentrations of the target elements were found in vegetables, with Cd, Pb, and Ni being beyond permissible limits of the Food and Agriculture Organization of the United Nations and the World Health organization (0.05 mg/kg, 0.1 mg/kg, and 1.5 mg/kg, respectively) in okra, spinach, and cauliflower. The sum of concentrations of the toxic elements (As, Ni, Hg, Cr, Cd, Pb) in vegetables had a range of 0.54-12.08 mg/kg, the highest sum was found in spinach (median 12.08 mg/kg), followed by okra (median 1.68 mg/kg). The EDI was observed for vegetables with a contribution as high as 92% for Cd. Dairy products were found with the highest loading for Ni with a dietary intake of 3.1 mg/kg/day for adults and twice as much for children. Carcinogenic risk for Ni was the highest and found above the threshold for all food categories, as was the case with As. Cumulative carcinogenic and non-carcinogenic risks were mostly contributed by milk and vegetables, in particular, spinach.

Abstract
Selenium is an essential micronutrient that plays a crucial role in maintaining human health. Selenium deficiency is seriously associated with various diseases such as Keshan disease, Kashin-Beck disease, cataracts, and others. Conversely, selenium supplementation has been found to have multiple effects, including antioxidant, anti-inflammatory, and anticancer functions. Compared with inorganic selenium, organic selenium exhibits higher bioactivities and a wider range of safe concentrations. Consequently, there has been a significant development of selenium-enriched foods which contain large amounts of organic selenium in order to improve human health. This review summarizes the physiological role and metabolism of selenium, the development of selenium-enriched foods, the physiological functions of selenium-enriched foods, and provides an analysis of total selenium and its species in selenium-enriched foods, with a view to laying the foundation for selenium-enriched food development.

Abstract
Trace elements (TEs) are chemical compounds that naturally occur in the earth's crust and in living organisms at low concentrations. Anthropogenic activities can significantly increase the level of TEs in the environment and finally enter the food chain. Toxic TEs like cadmium, lead, arsenic, and mercury have no positive role in a biological system and can cause harmful effects on human health. Ingestion of contaminated food is a typical route of TEs intake by humans. Recent data about the occurrence of TEs in food available in the Mediterranean countries are considered in this review. Analytical methods are also discussed. Furthermore, a discussion of existing international agency regulations will be given. The risk associated with the dietary intake of TEs was estimated by considering consumer exposure and threshold values such as Benchmark dose lower confidence limit and provisional tolerable weekly intake established by the European Food Safety Authority and the Joint FAO/WHO Expert Committee on Food Additives, respectively. Finally, several remediation approaches to minimize TE contamination in foodstuffs were discussed including chemical, biological, biotechnological, and nanotechnological methods. The results of this study proved the occurrence of TEs contamination at high levels in vegetables and fish from some Mediterranean countries. Lead and cadmium are more abundant in foodstuffs than other toxic trace elements. Geographical variations in TE contamination of food crops clearly appear, with a greater risk in developing countries. There is still a need for the regular monitoring of these toxic element levels in food items to ensure consumer protection.

The presence of highly poisonous arsenic (As) elements in food concerns humans and animals. In Bangladesh, arsenic-contaminated groundwater is frequently utilized for agricultural irrigation. This is a significant source of arsenic pollution in the human food chain. For the first time, we investigated the presence of total arsenic in various foodstuffs obtained from 30 distinct agricultural eco-zones of Bangladesh to understand human exposure to arsenic through the food chain in Bangladesh. The greatest and lowest As concentrations were reported in fish among the examined dietary items (0.55 mg/kg, fw) and fruit (0.0068 mg/kg, fw), respectively. The results show that arsenic consumption from daily diet and food with drinking water was estimated to be 0.0352 mg/day for rural residents and 0.2002 mg/day for urban residents, respectively. The highest target hazard quotients (THQ) of arsenic in the fish samples surpassed the allowable limit (> 1), proving that fish are the primary dietary items influencing the possible danger to health. However, the target cancer risk (TR) from nutritional arsenic consumption was likewise higher than tolerable. A value of 10-4 indicates that Bangladeshi people are continuously exposed to arsenic, which has carcinogenic and non-carcinogenic dangers. Overall, our results highlight that people in Bangladesh are exposed to hazardous levels of arsenic throughout the food chain, which should be addressed to ensure the country's food safety.

Abstract
Total selenium (Se) and Se species concentrations were determined in 50 infant formulas and milk samples commercialized in Brazil and Belgium. Infant formula categories were starter, follow-up, specialized and plant-based (soy and rice), while milk samples included whole, skimmed, semi-skimmed and plant-based products. Total Se content was determined by Inductively Coupled Plasma Mass Spectrometry (ICP-MS), after microwave digestion. An enzymatic extraction method was applied to evaluate the Se species, mostly selenomethionine (SeMet), Se(IV) and Se(VI), through High Performance Liquid Chromatography coupled to ICP-MS (LC-ICP-MS). Starters and follow-up samples presented the highest total Se concentrations and values up to 30 µg/kg were observed in the reconstituted product. The lowest level (below the LOQ = 10 µg/kg) was verified in an anti-regurgitation specialized formula. The relative agreement between the measured total Se and the Se content declared on the label varied from 55 % to 317 %. Concentrations in infant formulas were not markedly different from concentrations in milk except for rice and oat milk samples that showed values below the LOQ. SeMet was the main species found in milks, while in infant formulas the species concentrations varied according to the product. The daily intake (DI) of Se via infant formula consumption was calculated and compared with the Adequate Intake (AI) value and the Dietary Reference Intake (DRI) established by the EFSA NDA Panel and ANVISA, respectively. Estimated maximum intakes of total Se obtained for reconstituted infant formula were 40.6 mg/day, corresponding to 400 % and 202 % of the DRI and AI, respectively.

Abstract
Selenium (Se) is an essential trace element for humans. Arbuscular mycorrhizal fungi (AMF) play a crucial role in increasing plant micronutrient acquisition. Soybean (Glycine max (Linn.) Merr.) is a staple food for most people around the world and a source of Se. Therefore, it is necessary to study the mechanism of Se intake in soybean under the influence of AMF. In this study, the effects of fertilization with selenite and inoculation with different AMF strains (Claroideoglomus etunicatum (Ce), Funneliformis mosseae (Fm)) on the accumulation and speciation of Se in common soybean plants were discussed. We carried out a pot experiment at the soil for 90 days to investigate the impact of fertilization with selenite and inoculation with Ce and Fm on the Se fractions in soil, soybean biomass, accumulation and speciation of Se in common soybean plants. The daily dietary intake of the Se (DDI) formula was used to estimate the risk threshold of human intake of Se from soybean seeds. The results showed that combined use of both AMF and Se fertilizer could boost total Se and organic Se amounts in soyabean seeds than that of single Se application and that it could increase the proportion of available Se in soil. Soybean inoculated with Fm and grown in soil fertilized with selenite had the highest organic Se. The results suggest that AMF inoculation could promote root growth, more soil water-soluble Se and higher Se uptake. The maximum Se intake of soybean for adults was 93.15 μg/d when treated with Se fertilizer and Fm, which satisfies the needs of Se intake recommended by the WHO. Combined use of AMF inoculation and Se fertilizer increases the bioavailable Se in soil and promotes the total Se concentration and organic Se accumulation in soybean. In conclusion, AMF inoculation combined with Se fertilization can be a promising strategy for Se biofortification in soybean.

Abstract
Selenium (Se) plays an important role in human health. Approximately 80% of the world's population does not consume enough Se recommended by the World Health Organization. Wheat is an important staple food and Se source for most people in the world. This review summarizes literature about Se from 1936 to 2020 to investigate Se in wheat farming soil, wheat, and its derived foods. Se fortification and the recommended Se level in wheat were also discussed. Results showed that Se contents in wheat farming soil, grain, and its derived foods around the world were 3.8-552 μg kg-1 (mean of 220.99 μg kg-1), 0-8270 μg kg-1 (mean of 347.30 μg kg-1), and 15-2372 μg kg-1 (mean of 211.86 μg kg-1), respectively. Adopting suitable agronomic measures could effectively realize Se fortification in wheat. The contents in grain, flour, and its derived foods could be improved from 93.94 to 1181.92 μg kg-1, from 73.06 to 1007.75 μg kg-1, and from 86.90 to 587.61 μg kg-1 on average after leaf Se fertilizer application in the field. There was a significant positive correlation between the Se content in farming soil and grain, and it was extremely the same between the foliar Se fertilizer concentration rate and the grain Se increased rate. The recommended Se fortification level in cultivation of wheat in China, India, and Spain was 18.53-23.96, 2.65-3.37, and 3.93-9.88 g hm-2, respectively. Milling processing and food type could greatly affect the Se content of wheat-derived food and should be considered seriously to meet people's Se requirement by wheat.

Abstract
Arsenic (As) is a toxic pollutant that mainly enters the human body via plants. Therefore, understanding the strategy for reducing arsenic accumulation in plants is important to human health and the environment. Aquaporins are ubiquitous water channel proteins that bidirectionally transport water across cell membranes and play a role in the transportation of other molecules, such as glycerol, ammonia, boric acid, and arsenic acid. Previously, we observed that Arabidopsis PIP2;2, encoding a plasma membrane intrinsic protein, is highly expressed in NtCyc07-expressing Arabidopsis, which shows a higher tolerance to arsenite (As(III)). In this study, we report that the overexpression of AtPIP2;2 enhanced As(III) tolerance and reduced As(III) levels in yeast. Likewise, AtPIP2;2-overexpressing Arabidopsis exhibited improved As(III) tolerance and lower accumulation of As(III). In contrast, atpip2;2 knockout Arabidopsis showed reduced As(III) tolerance but no significant change in As(III) levels. Interestingly, the AtPIP2;2 transcript and protein levels were increased in roots and shoots of Arabidopsis in response to As(III). Furthermore, As(III) efflux was enhanced and As(III) influx/accumulation was reduced in AtPIP2;2-expressing plants. The expression of AtPIP2;2 rescued the As(III)-sensitive phenotype of acr3 mutant yeast by reducing As levels and slightly reduced the As(III)-tolerant phenotype of fps1 mutant yeast by enhancing As content, suggesting that AtPIP2; 2 functions as a bidirectional channel of As(III), while the As(III) exporter activity is higher than the As(III) importer activity. All these results indicate that AtPIP2;2 expression promotes As(III) tolerance by decreasing As(III) accumulation through enhancing As(III) efflux in Arabidopsis. This finding can be applied to the generation of low arsenic crops for human health.

Abstract
Selenium (Se) is a vital mineral for both plants and animals. It is widely distributed on the earth's crust and is taken up by the plants as selenite or selenate. Plants substantially vary in their physiological response to Se. The amount of Se in edible plants is genetically controlled. Its availability can be determined by measuring its phytoavailability in soil. The low concentration of Se in plants can help them in combating stress, whereas higher concentrations can be detrimental to plant health and in most cases it is toxic. Thus, solving the double-edged sword problem of nutritional Se deficiency and its elevated concentrations in environment requires a better understanding of Se uptake and metabolism in plants. The studies on Se uptake and metabolism can help in genetic biofortification of Se in plants and also assist in phytoremediation. Moreover, Se uptake and transport, especially biochemical pathways of assimilation and incorporation into proteins, offers striking mechanisms of toxicity and tolerance. These developments have led to a revival of Se research in higher plants with significant break throughs being made in the previous years. This review explores the new dimensions of Se research with major emphasis on key research events related to Se undertaken in last few years. Further, we also discussed future possibilities in Se research for crop improvement.

Abstract
Field investigation and microcosm experiment were conducted to examine the uptake of arsenic by vegetable plants grown on the soils contaminated by acidic mine water and evaluate the human health risk from consuming the vegetables. Plant uptake of arsenic was related to the ratio of phosphorus to arsenic in soil solution for the same vegetable species. Bioaccumulation coefficient (BAC) of arsenic was highly variable amongst the different vegetable species with water spinach (white stem) and sweet potato leaf being identified as major vegetable species with high BAC. There was a reasonably good relationship between the gastric phase-bioaccessible arsenic and the gastrointestinal phase-bioaccessible arsenic. Consumption of the vegetables grown in the investigated area poses a significantly potential human health risk with a hazard quotient (HQ) of 2.7. Application of biochar significantly inhibited the uptake of arsenic by the vegetable plant due to protonation of biochar surfaces under acidic conditions, which favoured adsorption of arsenic. The bioaccessibity of arsenic in the edible part of vegetable was also reduced due to biochar application. The HQ of the test vegetable plant (Gynura cusimbua) after soil amendment by biochar was reduced to 2 from 6 for the unamended soil.

Abstract
The essentiality of selenium (Se) and iodine (I) for the human organism and the relationship between these two trace elements in mammal metabolism highlight the importance of the joint Se–I biofortification to vegetable crops in the frame of sustainable farming management. A research study was carried out in southern Italy to determine the effects of the combined inoculation with arbuscular mycorrhizal fungi (AMF) and biofortification with Se and I on plant growth, seed yield, quality, and antioxidant and elemental status, as well as residual biomass chemical composition of chickpea grown in two different planting times (14 January and 28 February). The AMF application improved the intensity of I and Se accumulation both in single and joint supply of these elements, resulting in higher seed yield and number as well as dry weight, and was also beneficial for increasing the content of antioxidants, protein, and macro- and microelements. Earlier planting time resulted in higher values of seed yield, as well as Se, I, N, P, Ca, protein, and antioxidant levels. Se and I showed a synergistic effect, stimulating the accumulation of each other in chickpea seeds. The AMF inoculation elicited a higher protein and cellulose synthesis, as well as glucose production in the residual biomass, compared to the single iodine application and the untreated control. From the present research, it can be inferred that the plant biostimulation through the soil inoculation with AMF and the biofortification with Se and I, applied singly or jointly, proved to be effective sustainable farming tools for improving the chickpea seed yield and/or quality, as well as the residual biomass chemical composition for energy production or beneficial metabolite extraction.

Abstract
The present experiment was designed to evaluate physico-chemical characteristics and phyto-genotoxicity of arsenic (As) contaminated soil collected from different sites of Lakhimpur, Uttar Pradesh (UP), India by employing Vicia faba L. The analyses included various biochemical as well as cyto-genotoxicity assays. The results showed that soil pH was slightly acidic to neutral in nature. The bulk density (1.18-1.23 gcm-3), particle density (2.51-2.59 gcm-3) and porosity (44-53%) varied in different places. The level of available nutrients, nitrogen, phosphorus and potassium was found to vary as 124-165 mgkg-1, 173-186 mgkg-1 and 48-98 mgkg-1, respectively. The maximum As levels were found in soil of Fulvareya (27.13 mgkg-1) and Atareya (24.12 mgkg-1), the level of As in water samples of these sites were 0.19 mgl-1and 0.21 mgl-1, respectively. Phytotoxicity of the As present in soils was evident through significant increases in stress metabolites, hydrogen peroxide (H2O2), malondialdehyde (MDA) and carbonyl groups in root and shoot of V. faba. Cyto-genotoxic effects were also seen through reduced mitotic index (MI) and increased mitotic depression (MD), relative abnormality rate (RAR) as well as other chromosomal abnormalities along with micronuclei in root meristematic cells of V. faba. The phytotoxicity and cyto-genotoxicity assessment suggests the harmful soil properties that might affect biota.

Abstract
Low calorie foods are products designed to replace complete meals or to control snacking in many hypocaloric diets. These products provide many nutrients to the human diet, but little is known about their mineral elements composition. Here we study the mineral profile of weight loss related products, including the analysis of 22 elements (As, Ba, Be, Bi, Cd, Co, Cr, Cu, K, Mn, Mo, Na, Ni, P, Pb, Th, Tl, Sb, U, V, Y and Zn) in 73 commercial products marketed in Spain. In general a portion of these products provide up to 20-30% of the daily dietary reference intake of essential trace minerals like Cr or Mo. On the contrary, some of these foods have large concentrations of toxic minerals like As, Cd or Pb. In fact, the intake of those products with higher concentrations of toxic elements during a weight loss program could pose a risk to human health.

Abstract
Selenate (Se(VI)) and selenite (Se(IV)) are common soluble wastewater pollutants in natural and anthropogenic systems. We evaluated the reduction efficiency and removal of low (0.02 and 2 mg/L) and high (20 and 200 mg/L) Se(IV)(aq) and Se(VI)(aq) concentrations to elemental (Se0) via the use of ascorbic acid (AA), thiourea (TH), and a 50-50% mixture. The reduction efficiency of AA with Se(IV)(aq) to nano- and micro-crystalline Se0 was ≥ 95%, but ≤ 5% of Se(VI)(aq) was reduced to Se(IV)(aq) with no Se0. Thiourea was able to reduce ≤ 75% of Se(IV)(aq) to bulk Se0 at lower concentrations but was more effective (≥ 90%) at higher concentrations. Reduction of Se(VI)(aq)→Se (IV)(aq) with TH was ≤ 75% at trace concentrations which steadily declined as the concentrations increased, and the products formed were elemental sulfur (S0) and SnSe8-n phases. The reduction efficiency of Se(IV)(aq) to bulk Se0 upon the addition of AA+TH was ≤ 81% at low concentrations and ≥ 90% at higher concentrations. An inverse relation to what was observed with Se(IV)(aq) was found upon the addition of AA+TH with Se(VI)(aq). At low Se(VI)(aq) concentrations, AA+TH was able to reduce more effectively (≤ 61%) Se(VI)(aq)→Se(IV)(aq)→Se0, while at higher concentrations, it was ineffective (≤ 11%) and Se0, S0, and SnSe8-n formed. This work helps to guide the removal, reduction effectiveness, and products formed from AA, TH, and a 50-50% mixture on Se(IV)(aq) and Se(VI)(aq) to Se0 under acidic conditions and environmentally relevant concentrations possibly found in acidic natural waters, hydrometallurgical chloride processing operations, and acid mine drainage/acid rock drainage tailings. Abstract
The aim of this study was to quantify major and trace elements in the water, soil, and plants (Carya illionensis) in an agricultural area; and to determine the health risks associated with the walnuts ingestion by calculating the risk quotient. Samples of water, soil, tree leaves, and walnuts were collected; in total, 135 samples were analyzed. Physicochemical parameters were obtained in irrigation water and soil samples. Elemental measurements were performed in an ICP, -OES and -MS. In addition, the distribution coefficient (soil–water), transfer factor (soil–plant), and hazard quotient were evaluated. In the irrigation water, As, Cr, and Pb, showed concentrations above the maximum allowable limits. Likewise, high concentrations of As, Cr, Pb, and Sb were found in tree leave samples, indicating a possible tendency of hyperaccumulation of those elements. Furthermore, Cr concentrations in walnuts were high by far than the reference value (FAO/WHO). A possible competition between chemical congeners were detected from transfer factors. Although, Sb concentrations in walnuts were also high, and no legislation for it in fruits exists. The hazard risk quotient for Sb did indicate a potential health risk. Finally, it is important to consider that the health risk increases when exposure through consumption takes place over a prolonged period of time, even in low concentrations.

Abstract
This study analysed the contents of thirty-six mineral and trace elements in teff (Eragrostis tef L.) grains. What is more, dietary intakes were calculated. Inductively coupled plasma mass spectrometry (ICP-MS) was used to assess mineral and trace element contents. Consequently, the appropriate Recommended Dietary Allowance (RDA) or adequate intake (AI), and provisional tolerable weekly intake (PTWI) or provisional tolerable monthly intake (PTMI) values for adults were determined according to the Food and Agriculture Organization/World Health Organization (FAO/WHO) and Institute of Medicine (IOM) regulations. Teff is a significant contributor to RDAs and AIs for females in the following order: Mn > Cu > Zn ≥ Mg > Fe ≥ P and Ca. For males, teff contributes in the order, Mn > Cu > Fe > Zn ≥ P ≥ Mg > and Ca. The concentration of arsenic (65.9 µg/kg) in brown teff originating in Bolivia exceeded the average acceptable value set by Reg. No. 1881 of 6–50 µg/kg in cereals consumed in the EU. The PTWIs or PTMIs for Al, Cd, Sn and Hg were all under 7%, which is below the limits of toxic element intake related to the body weight of 65 kg for adult females and 80 kg for males, set by the FAO/WHO. Teff grains can be recommended as a valuable and safe source of minerals and trace elements.

Abstract
Selenium (Se) is a trace mineral and an essential nutrient of vital importance to human health in trace amounts. It acts as an antioxidant in both humans and animals, immunomodulator and also involved in the control of specific endocrine pathways. The aim of this work is to provide a brief knowledge on selenium content in daily used various foodstuffs, nutritional requirement and its various health consequences. In general, fruits and vegetables contain low content of selenium, with some exceptions. Selenium level in meat, eggs, poultry and seafood is usually high. For most countries, cereals, legumes, and derivatives are the major donors to the dietary selenium intake. Low level of selenium has been related with higher mortality risk, dysfunction of an immune system, and mental failure. Selenium supplementation or higher selenium content has antiviral outcomes and is necessary for effective reproduction of male and female, also decreases the threat of chronic disease (autoimmune thyroid). Generally, some advantages of higher content of selenium have been shown in various potential studies regarding lung, colorectal, prostate and bladder cancers risk, nevertheless results depicted from different trials have been diverse, which perhaps indicates the evidence that supplementation will merely grant advantage if the intakes of a nutrient is deficient. In conclusion, the over-all people should be advised against the usage of Se supplements for prevention of cardiovascular, hepatopathies, or cancer diseases, as advantages of Se supplements are still ambiguous, and their haphazard usage could result in an increased Se toxicity risk. The associations among Se intake/status and health, or disease risk, are complicated and need exposition to notify medical practice, to improve dietary recommendations, and to develop adequate communal health guidelines.

Abstract
Baby foods, from the Spanish market and prepared from meat, fish, vegetables, cereals, legumes, and fruits, were analyzed to obtain the concentration of antimony (Sb), arsenic (As), bismuth (Bi), and tellurium (Te) as toxic elements and selenium (Se) as essential element. An analytical procedure was employed based on atomic fluorescence spectroscopy which allowed to obtain accurate data at low levels of concentration. Values of 14 commercial samples, expressed in nanograms per gram fresh weight, ranged for Sb 0.66-6.9, As 4.5-242, Te 1.35-2.94, Bi 2.18-4.79, and Se 5.4-109. Additionally, speciation studies were performed based on data from a non-chromatographic screening method. It was concluded that tellurium and bismuth were mainly present as inorganic forms and selenium as organic form, and antimony and arsenic species depend on the ingredients of each baby food. Risk assessment considerations were made by comparing dietary intake of the aforementioned elements through the consumption of one baby food portion a day and recommended or tolerable guideline values.

Abstract
The deficiency of Se, an essential micronutrient, has been implicated in adverse pregnancy outcomes. Our study was designed to determine total serum Se, selenoproteins (extracellular glutathione peroxidase (GPx-3), selenoprotein P (SeP)), selenoalbumin (SeAlb) and selenometabolites in healthy women and their newborns at delivery. This cross-sectional study included eighty-three healthy mother-baby couples. Total Se and Se species concentrations were measured in maternal and umbilical cord sera by an in-series coupling of two-dimensional size-exclusion and affinity HPLC. Additional measurements of serum SeP concentration and of serum GPx-3 enzyme activity were carried out using ELISA. Total Se concentration was significantly higher in maternal serum than in cord serum (68·9 (sd 15·2) and 56·1 (sd 14·6) µg/l, respectively; P<0·01). There were significant correlations between selenoprotein and SeAlb concentrations in mothers and newborns, although they also showed significant differences in GPx-3 (11·2 (sd 3·7) v. 10·5 (sd 3·5) µg/l; P<0·01), SeP (42·5 (sd 9·5) v. 28·1 (sd 7·7) µg/l; P<0·01) and SeAlb (11·6 (sd 3·6) v. 14·1 (sd 4·3) µg/l; P<0·01) concentrations in maternal and cord sera, respectively. Serum GPx-3 activity and concentration were positively correlated in mothers (r 0·33; P=0·038) but not in newborns. GPx-3 activity in cord serum was significantly correlated with gestational age (r 0·44; P=0·009). SeAlb concentration was significantly higher in babies, whereas SeP and GPx-3 concentrations were significantly higher in mothers. The differences cannot be explained by simple diffusion; specific transfer mechanisms are probably involved. GPx-3 concentrations in mothers, at delivery, are related to maternal Se status, whereas the GPx-3 activity in cord serum depends on gestational age.

Abstract
Concentrations of heavy metals (As, Cd, Co, Cr, Cu, Hg, Pb and Sb) in vegetables, meat and fish purchased from traditional agri-product markets in Huainan, China, were measured. Concentrations of the eight metals in most of the measured samples were lower than their respective maximum allowable concentrations (MACs), except for Pb, Cd, Cr and Cu in some of the samples exceeded safe limits. Based on local food consumption, the intake of individual metals was estimated to be less than their respective recommended limits. However, the overall target hazard quotient (THQ) for the eight metals was 1.07 based on the digestion of leafy vegetables and 2.12 based on the consumption of all of the investigated foods. The results of this study suggest that the overall risk from exposure to multiple metals in foods should be of concern, even though low-to-moderate heavy metal pollution is present in foods from Huainan markets.

Abstract
A systematic study of hydride generation (HG) of As, Bi, Sb and Se from solutions containing As(III), As(V), Bi(III), Sb(III), Sb(V), Se(IV) and Se(VI) was presented. Hydrides were generated in a gas-liquid phase separation system using a continuous flow vapor generation accessory (VGA) by mixing acidified aqueous sample, HCl and sodium borohydride reductant (NaBH4) solutions on-line. For detection, a simultaneous axially viewed inductively coupled plasma optical emission spectrometer (ICP-OES) was applied. Effects of the HCl concentration (related to sample and additional acid solutions) and type of the pre-reducing agents used for reduction of As(V), Sb(V) and Se(VI) into As(III), Sb(III) and Se(IV) on the analytical responses of As, Bi, Sb and Se were studied and discussed. Two compromised HG reaction conditions for simultaneous measurements of As+Bi+Sb (CC1) or As+Sb+Se (CC2) were established. It was found that choice of the pre-reductant prior to formation of the hydrides is critical in obtaining the dependable results of the analysis. Accordingly, for a As(III)+As(V)+Bi(III)+Sb(III)+Sb(V) mixture and using CC1, thiourea/thiourea-ascorbic acid interfered in Bi determination and hence, total As+Sb could be measured. If L-cysteine/L-cysteine-ascorbic acid were used, measurements of total Bi+Sb was possible in these HG reaction conditions. For a As(III)+As(V)+Sb(III)+Sb(V)+Se(IV)+Se(VI) mixture and using CC2, thiourea/thiourea-ascorbic acid and L-cysteine/L-cysteine-ascorbic acid influenced HG of Se but ensured total As+Sb determination. In contrast, heating a sample solution with HCl, although did not pre-reduce As(V) and Sb(V), assured quantitative reduction of Se(VI) to Se(IV). Finally, considering all favorable pre-reducing and HG conditions, methodologies for reliable determination of total As, Bi, Sb and Se by HG-ICP-OES were proposed. Strategies for single-, two- and three-element measurements were evaluated and validated, obtaining the detection limits (DLs) below 0.1ngg-1 and precision typically in the range of 1.4-3.9% RSD.

Abstract
Selenium (Se) is an essential micronutrient for humans and animals, but lead to toxicity when taken in excessive amounts. Plants are the main source of dietary Se, but essentiality of Se for plants is still controversial. However, Se at low doses protects the plants from variety of abiotic stresses such as cold, drought, desiccation, and metal stress. In animals, Se acts as an antioxidant and helps in reproduction, immune responses, thyroid hormone metabolism. Selenium is chemically similar to sulfur, hence taken up inside the plants via sulfur transporters present inside root plasma membrane, metabolized via sulfur assimilatory pathway, and volatilized into atmosphere. Selenium induced oxidative stress, distorted protein structure and function, are the main causes of Se toxicity in plants at high doses. Plants can play vital role in overcoming Se deficiency and Se toxicity in different regions of the world, hence, detailed mechanism of Se metabolism inside the plants is necessary for designing effective Se phytoremediation and biofortification strategies.

Abstract
Wild mushrooms can absorb high quantities of metal(loid)s, yet the concentration, speciation, and localization of As, Pb, and Cd in cultivated mushrooms, particularly in the United States, are unresolved. We collected 40 samples of 12 types of raw mushrooms from 2 geographic locations that produce the majority of marketable U.S. mushrooms and analyzed the total As, Pb, and Cd content, the speciation and localization of As in select samples, and assessed the metal sources and substrate-to-fruit transfer at one representative farm. Cremini mushrooms contained significantly higher total As concentrations than Shiitake and localized the As differently; while As in Cremini was distributed throughout the fruiting body, it was localized to the hymenophore region in Shiitake. Cd was significantly higher in Royal Trumpet than in White Button, Cremini, and Portobello, while no difference was observed in Pb levels among the mushrooms. Concentrations of As, Pb, and Cd were less than 1 μg g(-1) d.w. in all mushroom samples, and the overall risk of As, Cd, and Pb intake from mushroom consumption is low in the U.S. However, higher percentages of tolerable intake levels are observed when calculating risk based on single serving-sizes or when substrate contains elevated levels of metal(loid)s.

Abstract
The trace element selenium has an essential role for human health. It is involved in redox center functions, and it is related to the immune system response. Legumes are among the main suppliers of selenium into the human food chain. Not only Se concentration as such but also more the chemical species of Se is of higher importance for successful Se supply to the human diet and its bioavailability. The current study was focused on the investigation of the Se species present in chickpea plants exposed to 0, 10, 25, 50, and 100 μM selenite in short- and long-term treatment studies. The linear increase of total Se concentration could be linked to the increased concentrations of Se exposure. The selenium species (SeMet, SeCys, selenite, selenate, GPx) detected in varying concentrations in shoots and roots depend on the exposure's concentration and duration. The investigation showed that chickpea can accumulate Se in favorable concentrations and its transformation to bioavailable Se species may have positive impacts on human health and aid to implement Se into the diet.

Abstract
A field survey was conducted to investigate the present situation and health risk of arsenic (As), lead (Pb), cadmium (Cd), copper (Cu), and zinc (Zn) in soils and vegetables in a multi-metal mining area, Gejiu, China. Furthermore, three vegetables (water spinach, potato, and summer squash) containing high metal concentrations were selected to further analyze metal speciation. The results showed that the average concentrations of five metals in soil exceeded the limiting values, and their bioavailable concentrations were significantly positively correlated to the total ones. Heavy metals in the edible parts of vegetables also exceeded the corresponding standards. The leaves of pakchoi, peppermint, and coriander had a strong metal-accumulative ability and they were not suitable for planting. Except the residue forms, the main forms of metals in the edible parts of three selected vegetables were ethanol-, NaCl-, and HAc-extractable fractions for As, Pb, and Cd, respectively; however, Cu was mainly presented as NaCl-extractable and Zn as HAc-extractable fractions. A high proportion of ethanol-extractable As showed that As bioactivity and toxic effects were the highest. Although the total and bioavailable Cd were high in soil, its speciation in vegetables was mainly presented as HAc-extractable fraction, which has a relatively low bioactivity. Lead and arsenic were imposing a serious threat on the local residents via vegetable consumption.

Abstract
Vegetables (Tomato - Solanum lycopersicum, green chilli - Capsicum annum and bitter gourd - Momordica charantia) and fruits (Banana - Musa acuminata colla, papaya - Carica papaya and mosambi - Citrus limetta) from the cultivated areas around the Tummalapalle uranium mining site were analyzed for trace metals (Al, Cr, Mn, Fe, Ni, Cu, Zn, Pb, Be, V, Co, Cd and U) using inductively coupled plasma-mass spectrometer (ICP-MS). As per the estimated data, the concentrations of trace metals in vegetables and fruits are found in the range of 47.5-7.8 mg/kg for Al, 9.7-1.0 mg/kg for Cr, 3.8-1.0 mg/kg for Mn, 75.5-13.9 mg/kg for Fe, 1.4-0.2 mg/kg for Ni, 2.3-0.8 mg/kg for Cu, 9.2-3.1 mg/kg for Zn, 0.2-1.4 mg/kg for Pb, 19.2-1.9 μg/kg for Be, 96.1-15.8 μg/kg for V, 48.2-12.9 μg/kg for Co, 46.5-2.3 μg/kg for Cd and 16.4-2.7 μg/kg for U. The trace metals observed are compared to the literature reported values. Trace elemental data were subjected to statistical analysis to examine the interrelationship between the investigated trace elements and possible source identification of the trace metal contamination in vegetable and fruits. Daily intake of trace metals through ingestion of vegetables and fruits are also calculated.

Abstract
BACKGROUND Millions of people have Se-deficient diets and Se-biofortified crops could prevent such deficiency. The aim of the present study was to evaluate the potential of chickpea for use in Se fertilization programs in order to increase available Se. Two foliar Se fertilizers (sodium selenate and sodium selenite) at four rates (0, 10, 20, 40 g ha(-1)) were tested in the 2010/2011 and 2011/2012 growing seasons in a field experiment conducted under semiarid Mediterranean conditions. RESULTS Sodium selenate was much more effectively taken by plants than sodium selenite, and there was a strong and linear relationship between total Se content and Se rate for both. For each gram of Se fertilizer, applied either as sodium selenate or sodium selenite, the increases of total Se concentration in grain were 126 and 87, and 25 and 19 µg Se kg(-1) dry weight, in 2010/2011 and 2011/2012, respectively. Se was found to be incorporated into chickpea grains mainly (>70%) as selenomethionine. CONCLUSION Se-enriched chickpeas would be a good candidate for inclusion in biofortification programs under semiarid Mediterranean conditions and for promotion as a 'functional food'.

Abstract
Four newly synthesized poly (propylene amine) dendrimers from first and second generation modified with 1,8-naphthalimide units in the dendrimer periphery have been investigated as ligands for the detection of heavy metal ions (Al(3+), Sb(2+), As(2+), Cd(2+) and Pb(2+)) by surface-enhanced Raman spectroscopy. Calibration curves were established for all metal ions between the concentration ranges of 1 x 10(-6) to 5 x 10(-4) M. It has been shown that these dendrimers can be coordinated, especially with different metal ions. Using dendrimer molecules and silver colloids at the same time allowed us to obtain an SERS signal from the abovementioned metal ions at very low concentrations. Principle component analysis (PCA) analysis was also applied to the collected SERS data. Four different PCA models were developed to accomplish the discrimination of five metal ions, which interacted with each of the four dendrimer molecules, separately. A detailed investigation was performed in the present study to provide the basis of a new approach for heavy metal detection.

Abstract
The current paper involves overview of several studies concerning quantitative major and trace element analysis of different food samples, such as products of plant origin, e.g., locally grown vegetables (carrots, onions, potatoes) and products of animal origin derived with or without processing (cottage cheese, eggs, honey). Food samples were collected over the territory of Latvia in the time period 2009-2012. Sample pre-treatment was chosen according to the product specifics but mostly wet mineralization with concentrated nitric acid was applied. Analysis of major elements (e.g., Ca, Fe, K, Mg, Na) and trace elements (e.g., As, Cd, Co, Cr, Cu, Ni, Pb, Se, Zn) was performed by appropriate quantitative analytical technique: atomic absorption spectrometry, inductively coupled plasma mass spectrometry or total reflection X-ray fluorescence spectrometry. Not only the influence of environmental factors (e.g., geographical or seasonal impact) was detected in element dissemination in food, also botanical origin (if applicable) and applied agricultural praxis, product processing and storage specifics were found to be important. Possible food contamination by potentially toxic elements can be associated mostly with the consequences of anthropogenic activities. The studies revealed the significance of food research in the context of environmental science.

Abstract
To improve the nutritional value of durum wheat and derived products, two foliar Se fertilisers (sodium selenate and selenite) were tested at four rates (0-10-20-40gha(-1)) in 2010/2011 and 2011/2012 in southwestern Spain. There was a strong and linear relationship between total Se or selenomethionine (Se-Met) accumulation in grain and Se dose for both fertilisers, although selenate was much more efficient. Se-Met was the main Se species (≈90%) of the total Se extracted from all materials. Milling caused a 27% loss of Se due to the removal of Se located in bran and germ. In the pasta making process and the cooking process the loss of Se, mainly as selenite, was about 7%. Durum wheat may be a good candidate to be included in Se biofortification programs under rainfed Mediterranean conditions, as foodstuffs derived from it could efficiently increase the Se content in the human diet.
