From Attitude to Behavior: The Effect of Residents' Food Waste Attitudes on Their Food Waste Behaviors in Shanghai

Preventing food waste is important. Analyzing the effects of food waste attitudes on urban residents' waste production behaviors is necessary to reduce food waste. As Shanghai is a mega-city with a population of 24 million people, once food is adequately supplied, more attention is paid to the safety of food in terms of quantity, quality, and nutrition. COVID-19 gave a shock to the food supply in Shanghai, which in turn resulted in food waste behavior. The moderating effect of pandemic during the COVID-19 is one that has rarely been mentioned in previous studies. An investigation of urban residents was conducted in Shanghai. A total of 1030 valid questionnaires were collected in October 2020. This study examined the influence of food waste attitudes on food waste behavior under the moderating effects of pandemic expectations, quantity safety, quality safety, and price stability using a multivariate ordered probit model. The results show that food waste attitudes had a significant negative effect on food waste behavior at a p < 0.01 level of significance, which means that the more people feel shame about food waste, the less food waste they will have. The interaction coefficient between food waste attitudes and pandemic expectations was positive at a p < 0.1 level of significance. This paper concludes with strategies for dealing with food waste in the future.

Exploring the impact of the COVID-19 pandemic on energy literacy and conservation behavior in academic buildings of Kuwait

This study investigates the impact of the COVID-19 pandemic on energy literacy and conservation behavior among occupant groups in academic buildings in Kuwait. It explores influential factors, focusing on the pandemic's effect on attitudes, intentions, and behaviors related to energy conservation. The research adopts a mixed-methods approach, incorporating quantitative and qualitative data collection methods. Participants, including students, faculty, and staff, completed surveys, participated in questionnaires, focus groups, and took part in interviews. Statistical tests are used to validate the survey data, while thematic analysis is applied to the qualitative data. The findings of the research showed that COVID-19 had a significant impact on participants' attitudes, intentions, and behavior regarding energy literacy and conservation. Specifically, the student group experienced a significant increase in the relationship between their intentions and behavior, while the faculty group exhibited a strong correlation between intention and behavior. The study also found that education, awareness, personal motivation, values, religiosity, and culture were all crucial factors in promoting energy literacy and conservation behavior. The study recommends specific educational interventions, fostering a culture of conservation, providing access to information and resources, promoting community engagement, incorporating religiosity, and improving policies and infrastructure to enhance energy literacy in academic buildings. Additionally, the study highlights the importance of tailored educational interventions that consider the specific needs and challenges of different occupant groups and suggests incorporating religious perspectives to align with the cultural and religious context of the Kuwaiti population. The study's findings offer comprehensive insights into the impact of unforeseen events, such as pandemics, on energy literacy and conservation behavior. These insights have practical implications for policymaking and implementation. Future research could explore the effectiveness of various educational interventions and examine the role of social and cultural factors in shaping energy literacy and behavior.

A cross-jurisdictional comparison on residential waste collection rates during earlier waves of COVID-19

There is currently a lack of studies on residential waste collection during COVID-19 in North America. SARIMA models were developed to predict residential waste collection rates (RWCR) across four North American jurisdictions before and during the pandemic. Unlike waste disposal rates, RWCR is relatively less sensitive to the changes in COVID-19 regulatory policies and administrative measures, making RWCR more appropriate for cross-jurisdictional comparisons. It is hypothesized that the use of RWCR in forecasting models will help us to better understand the residential waste generation behaviors in North America. Both SARIMA models performed satisfactorily in predicting Regina's RWCR. The SARIMA D_CV model's performance is noticeably better during COVID-19, with a 15.7% lower RMSE than that of the benchmark model (SARIMA B_CV). The skewness of overprediction ratios was noticeably different between jurisdictions, and modeling errors were generally lower in less populated cities. Conflicting behavioral changes might have altered the residential waste generation characteristics and recycling behaviors differently across the jurisdictions. Overall, SARIMA D_CV performed better in the Canadian jurisdiction than in U.S. jurisdictions, likely due to the model's bias on a less variable input dataset. The use of RWCR in forecasting models helps us to better understand the residential waste generation behaviors in North America and better prepare us for a future global pandemic.

Exploring Causes and Potential Solutions for Food Waste among Young Consumers

Young consumers are often described as innovative and concerned about the environment. However, their practices sometimes are not strong enough, which are described as the attitude-behavior gap and are seen in significant amounts of food waste. The objective of this study is to focus on food waste among young consumers in high-income countries and to outline the main determinants of food waste generation. Qualitative data gathered from nine focus groups in Lithuania, Finland and Denmark (2021-2022) contribute to formulating potential intervention to decrease food waste behavior within this segment. The article provides a substantial literature review on food waste and discusses recommendations for possible interventions and further research to solve the attitude-behavior gap. The findings show four specific fields for potential solutions, related to (1) special occasions, (2) assessing food quality, (3) kitchen habits, and (4) shopping habits. Our contribution is discussed at the end of the article.

How risk perception regarding the COVID-19 pandemic affected household food waste: Evidence from Brazil

Food waste is a worldwide problem. One third of the food produced in the world is lost or wasted every year. Most of this waste takes place downstream of the supply chain due to consumer behavior. This issue is expected to increase in both developed and emerging economies. With the beginning of the COVID-19 pandemic, a range of challenges led to changes in consumer behavior. This study explores household food waste behavior during the COVID-19 pandemic through the lens of the Theory of Planned Behavior. The risk perception regarding the pandemic was integrated into a broader framework, which was analyzed by Structural Equation Modeling. The sample comprises the participation of 452 Brazilian individuals. The results show that all the predictors incorporated in the model were statistically significant. The intention of reducing household food waste during the pandemic was found to be the strongest predictor of food waste behavior. Additionally, the pandemic apparently influenced consumers' perceptions about the control they think they have over food waste. This research has theoretical and managerial implications. From a theoretical perspective, this study identifies key predictors of household food waste by considering a period of health crisis in an emerging country. From a managerial standpoint, this research may provide a learning experience for future similar scenarios. Results may also motivate consumers to look for ways to reduce, reuse and recycle food waste.

Has the COVID-19 pandemic changed household food management and food waste behavior? A natural experiment using propensity score matching

Household food management behavior changed considerably during the COVID-19 pandemic. A growing body of work has quantified the impact of lockdowns on household food waste. Yet, previous studies used a retrospective study design which undermines the accuracy of the causal effect on household food waste. This paper investigates the causal impact of the COVID-19 pandemic on household food management and food waste using a natural experiment approach. Using two large national-scale longitudinal data sets (n = 8157), this study quantifies the impact of COVID-19 on food waste and food behavior of Australian households. Propensity score matching (PSM) was carried out to address potential endogeneity issues and to select control and treatment groups for analysis. Findings reveal that Australian households reduced food waste by 9% on average in 2020 (during COVID-19) compared to the pre-pandemic (2019) level. The use of a grocery list, discount purchases, and 'just-in-case' purchases, and food refrigeration have recorded a marked increase during the pandemic compared to pre-pandemic times. The changes to food management and food discard behavior during the pandemic offer important insights for behavior change campaigns to reduce household food waste. Interventions to sustain good food planning and storage practices and involving food retailers are promising entry points in addressing household food waste. The study also highlights the considerable challenge in achieving SDG 12.3 target by 2030.

Excessive Food Buying in Saudi Arabia Amid COVID-19: Examining the Effects of Perceived Severity, Religiosity, Consumption Culture and Attitude toward Behavior

The current study builds on both the Theory of Planned Behavior (TPB) and Protection Motivation Theory (PMT) to examine why consumers in Saudi Arabia engage in excessive food-buying behavior amid COVID-19. The study tests the direct impact of food consumption culture, perceived severity of COVID-19, and religiosity on excessive food-buying intentions and the indirect effect through attitudes toward excessive food buying. The results of the inner model using SmartPLS4 showed that the perceived severity of COVID-19 has a direct significant positive effect on attitudes toward excessive food buying and excessive food-buying intention. Despite food consumption culture being found to have no direct significant effect on excessive food-buying intention during the pandemic, it has a direct effect on attitudes toward excessive food buying. Surprisingly, religiosity was found to have a positive effect on consumers' attitudes and excessive food-buying intentions. The results confirm that consumers misunderstood Islamic religious principles regarding food consumption, which does not accept excessive buying or food waste. Attitudes toward excessive food buying were found to mediate the relationship between food consumption culture, perceived severity of COVID-19, religiosity, and excessive food-buying intention. The results of the study are discussed and implications are highlighted for academics and policymakers.

A data-driven decision support system with smart packaging in grocery store supply chains during outbreaks

The unexpected emergence of the COVID-19 pandemic has changed how grocery shopping is done. The grocery retail stores need to ensure hygiene, quality, and safety concerns in-store shopping by providing "no-touch" smart packaging solutions for agri-food products. The benefit of smart packaging is to inform consumers about the freshness level of a packaged product without having direct contact. This paper proposes a data-driven decision support system that uses smart packaging as a smart product-service system to manage the sustainable grocery store supply chain during outbreaks to prevent food waste. The proposed model dynamically updates the price of a packaged perishable product depending on freshness level while reducing food waste and the number of rejected customers and maximising profit by increasing the inventory turnover rate of grocery stores. The model was tested on a hypothetical but realistic case study of a single product. The results of this study showed that stock capacities, freshness discount rate, freshness period, and quantity discounts significantly affect the performance of a grocery store supply chain during outbreaks.

Environmental assessment of casual dining restaurants in urban and suburban areas of peninsular Malaysia during the COVID-19 pandemic

Food waste has been considered a global problem due to its adverse impacts on food security, the environment, and the economy; hence needs urgent attention and action. Its generation is expected to increase as the world population grows rapidly, leading to more global waste. This study sought the impacts of the COVID-19 outbreak on the 1-week operation of selected casual dining restaurants in urban (Ampang, Kuala Lumpur) and suburban areas (Kota Bharu, Kelantan and Jasin, Melaka) of Peninsular Malaysia, as the local community adjusted to life with COVID-19. The food waste in this study was classified into three categories: preparation loss, serving loss, and customer's plate waste. Our material flow analysis revealed that the highest food loss at these locations came from preparation loss (51.37%), followed by serving loss (30.95%), and preparation loss (17.8%). Meanwhile, the total average electricity consumption and its carbon footprint for Ampang were 127 kWh and 13.87 kgCO₂e, Kota Bharu 269.8 kWh and 29.47 kgCO₂e, and Jasin 142.2 kWh and 15.54 kgCO₂e, respectively. As for water, Ampang exhibited 22.93 m³ total average consumption and 7.91 kgCO₂e greenhouse emissions from this source, Jasin consuming 17.11 m³ of water and releasing 5.88 kgCO₂e of carbon footprint, while Kota Bharu emitted 20.21 kgCO₂e of greenhouse gases from its 58.71 m³ water consumption. Our findings indicate a major 'food leak' at the preparation stage, from which the waste could be utilised as livestock feed, and that electricity consumption is a greater carbon emitter than water consumption, suggesting a need for improvement to the kitchen practices and equipment.

A review of the effects of COVID-19 on food waste

The COVID-19 pandemic exposed significant vulnerabilities in systems of production and consumption. In particular, the economic and social implications of the pandemic highlighted the urgent need for more sustainable and less impactful practices of food production and consumption. Through a systematic literature review, this paper seeks to assess how the pandemic affected the phenomenon of food waste, with the aim of assessing whether the pandemic stimulated changes amongst food system actors, especially consumers. The findings indicate that consumers generally reported behavioural changes during the pandemic and claimed to have adopted sustainable practices that could contribute to reducing food waste. The results also reflect the rapid diffusion of practices such as food delivery during the pandemic, which requires further investigation in terms of its effects on the environment. Simultaneously, supply-demand shocks and disruptions were reported in the areas of production, processing, and retailing, suggesting the occurence of ripple effects. A call is made for greater resilience in the food system, through the adoption of sustainable and less impactful practices, supported by policy.

Food waste in time of COVID-19: The heterogeneous effects on consumer groups in Italy and the Netherlands

Since COVID-19 outbreak, States adopted different combinations of measures to restrain its spread that affected individual behaviors and the already fragile local and global food systems. The aim of this research is to contribute to the scientific debate around food systems sustainability through the analysis of behavioral shifts in household food waste drivers, specifically occurring during the recent global pandemic. A survey was developed based on an extended version of the Motivation-Opportunity-Ability (MOA) approach. A representative sample of 3000 respondents in Italy and in the Netherlands (1500 per country) completed this survey in May 2020, while lockdown to mitigate the first wave of COVID-19 outbreak was active in both countries. A cluster analysis based on individual food-waste- related behaviors identified four homogenous groups of consumers in the Italian sample and five in the Dutch sample. The comparative analysis of these groups led to the identification of several communalities in behavioral patterns, both within and between the two countries. Results suggest that in both countries, self-reported quantities of household food waste actually decreased, with a stronger reduction reported by Italian consumers. The MOA approach allowed to explain this perceived reduction as largely depending on the increase of opportunity to dedicate more time - to food-related activities as compared to the pre-COVID-19 period, with positive consequences on food management ability. These findings assist in drafting recommendations for tailored interventions to reduce the amount of domestic food waste and preserve positive behaviors emerged during lockdown, that could be continued in the absence of crisis.

Investigating the impact of COVID-19 on sustainable food supply chains

Purpose

The ongoing pandemic has gravely affected different facets of society and economic trades worldwide. During the outbreak, most manufacturing and service sectors were closed across the globe except for essential commodities such as food and medicines. Consequently, recent literature has focused on studying supply chain resilience and sustainability in different pandemic contexts. This study aims to add to the existing literature by exploring the economic, environmental and societal aspects affecting the food supply chain and assessing the impact of COVID-19 on food sustainability.

Design/methodology/approach

A survey method has been adopted with a questionnaire instrument investigating the role of technology, government policies, geopolitics and intermediaries on sustainable organisational management. A five-point Likert scale (i.e. 1 = strongly disagree; 5 = strongly agree) is used to evaluate the responses. The findings are based on 131 responses from entry-level workers and senior executives of different food supply chains across Asia and Europe. The data has been analysed to derive insights into the impacts of this pandemic.

Findings

The survey concludes with the significant impact of COVID-19 on the three pillars of sustainability, i.e. economic, social and environmental dimensions. The empirical analysis shows digitalisation and its applications help mitigate the negative effect of COVID-19 on sustainability. In addition, the supportive government policies and intermediatory interventions were helpful in improving sustainability at each level.

Research limitations/implications

The findings have implications for businesses and policymakers. Companies can learn from the advantages of digitalisation to counter the challenges imposed by the pandemic or similar situations in the future in maintaining the sustainability of their supply chains. Managers can also learn the importance of effective organisational management in driving sustainability. Finally, policymakers can devise policies to support businesses in adopting sustainable practices in their supply chains.

Originality/value

This study adds to the limited literature exploring the impact of COVID-19 on food supply chain sustainability through the triple bottom line lens. To the best of the authors’ knowledge, this is also one of the first empirical studies to examine the effect of technology, government and organisational management practices on the sustainability of food supply chains.

The Impact of the Nutritional Knowledge of Polish Students Living Outside the Family Home on Consumer Behavior and Food Waste

Food waste remains a major problem for the world and food security. Despite the fact that consumers are significant producers of food waste, little research attention has been paid to young people who are in college and living away from the family home. The present study aimed to assess food waste among college students living away from the family home, taking into account the nutritional knowledge acquired during college. In addition, the goal was to compare how nutritional knowledge affects food waste and consumer behavior in the study group. Descriptive statistics were performed on behaviors with food management at home, as well as shopping planning and self-shopping at the store, for the total respondents, students with nutritional knowledge and students without such knowledge. A chi-square test was performed to show whether the field of study influences the frequency of food throwing away and the appropriate management of excess food. Spearman's rank correlations were calculated for the frequency of food discarding, the frequency and amount of shopping and the field of study. The results indicate that the field of study determined food discarding and appropriate food management (p < 0.05), while it was found that fermented dairy beverages, fruits and vegetables and bread were the most frequently discarded foods in both study groups (p < 0.05). Students with nutritional knowledge were less likely to throw away food compared to students without nutritional knowledge and were better at managing excess food.

The vulnerability of a centralized food system: An opportunity to improve food security in times of COVID-19-Peru perspective

COVID-19 has had a strong impact on the food supply chain (FSC) in many countries. The objective of this study was to determine the vulnerability of the FSC in a developing country, namely Peru. The main weakness of the FSC is its centralization, and COVID-19 aggravated this deficit in Peru. This prevents its stability on a large scale, especially in rural areas, which suffer from food and nutritional insecurity. In spite of this, the food system was stabilized due to agricultural, livestock and fishing potential of Peru. In addition, the efforts of local producers and informal vendors helped to maintain the availability of food throughout the country. Several examples of short (and decentralized) FSC were described, highlighting their importance for supplying the population in different areas of the country. In addition, they allow for rapid resolution of interruptions such as the current health crisis. Also mentioned are some suggestions for strengthening Peru's FSC such as the use of new technologies, self-production of food and the exploitation of non-conventional food sources. Emphasis is placed on the importance of environmental sustainability of the FSC and of implementing strategies to prevent illness among workers. This study aims to reflect on the importance of having a resilient and flexible FSC. Taking Peru as a model, the information provided is useful to understand how to improve the food system through the intervention of all the agents involved, such as government, academia, industry and the population.

The Shopping Behavior of International Students in Poland during COVID-19 Pandemic

The purpose of this research is to analyze the shopping behavior of international students (Asian vs. European) studying in Poland. Participants were recruited from universities located in Warsaw between June and September 2020. A total of 806 questionnaires were collected, 87 of which were eliminated due to non-response. The research sample consisted of 719 people. We conducted an exploratory factor analysis and cluster analysis for the entire study population and separately for European and Asian students. In exploratory factor analysis, two factors were extracted for the entire population, while three factors each were extracted for the European and Asian student groups. In cluster analysis, we obtained four clusters each for the entire study population and the group of European and Asian students. Our study found that among Asian students, compared to European students, there was a greater change in shopping behavior during the COVID-19 pandemic, expressed by a greater preference for online shopping, greater purchases of fruits and vegetables, purchases of local products, and shorter shopping time.

The Impact of Smartphone Apps Designed to Reduce Food Waste on Improving Healthy Eating, Financial Expenses and Personal Food Waste: Crossover Pilot Intervention Trial Studying Students’ User Experiences

Background

Global sustainability and individual health need coordinated attention. While individuals are recommended a healthy diet to reduce the burden of noncommunicable diseases, global attention to natural resource conservation is also needed. The latter specifically means effective measures to reduce food waste.

Objective

This pilot study evaluates the experiences of students and effect from using smartphone apps designed to reduce food waste on personal healthy eating, financial expenses, and food waste.

Methods

A total of 6 students from different study programs (mean age 24.7, SD 2.9) were recruited to evaluate 2 different apps designed to reduce food waste and to register food consumption, food waste, and financial food expenses before and after the app trials. The apps evaluated were the commercially available TotalCtrl Home and Too-Good-To-Go. Results were analyzed by mixed methods, comprising statistical analyses for quantifiable data and thematic analyses for qualitative data. The apps were used separately in random order, each for 1 month. Primary outcome was user expectations to and experiences from the use of the apps, which were obtained by semistructured interviews. Secondary outcomes were changes in food waste volume, financial food expenses, and healthy eating. While information on food waste and food expenses was obtained by weighing food waste and registering food costs for 2 weeks before and after app trials, scores for consuming healthy diets were calculated from registered food records by scoring criteria matched to national recommendations for healthy eating.

Results

Awareness on food waste increased after app trials, but experiences with apps pointed toward several potential for technical and content improvements. The students reported that there were too many manual operations in the apps to induce permanent use (TotalCtrl Home), that services seemed more concerned about the producers’ interests than the individual’s needs (Too-Good-To-Go), and that they missed a composite app that included functions to promote healthy eating and overview of budget and expenses as well as of food waste (both apps). Use of apps designed to reduce food waste and personal costs and to improve healthy eating did not result in any measurable effects, that is, no change in food waste (mean change 0.81, SD 1.5 kg; P=.13), healthy eating (mean change –0.24, SD 0.43; P=.24), or personal food expenses (mean change 47.5 NOK or US $4.8, SD 416.9 NOK or US $42.5; P=.39).

Conclusions

Apps may aid in increased awareness of food waste at the producer and consumer levels. Large-scale studies with longer duration are needed to see if apps may induce measurable changes in food waste, healthy eating, and financial expenses.

Preference-Based Determinants of Consumer Choice on the Polish Organic Food Market

Background: The development of the organic food market in Poland is currently at a fairly high level. There is a growing demand for organic food, but the share of total sales remains low. There are still many barriers related to the availability of organic food and information about it. In addition, consumers are skeptical of the inspection system in organic farming and admit that these foods do not meet their expectations regarding sensory qualities. Methods: The article conducted its own research, using an author's survey questionnaire, which was distributed in Lublin Province. The research sample consisted of 342 respondents and was diverse in terms of gender, age and place of residence. The purpose of the analysis was to ascertain the determinants affecting the choice of organic food. For the study, the method of correspondence analysis was used, the purpose of which was to isolate characteristic groups of consumers who exhibit certain behaviors towards organic products. Results: Respondents admitted that they buy organic food several times a month, most often spending an amount of EUR 10-20 (per month). They also paid attention to product labeling, with labels read mostly by residents of small towns (up to 30,000 residents). Respondents were also asked about the reasons why they do not buy organic food. The results of the analysis show that respondents believe it is too expensive, but they also cannot point out differences with other products. Conclusions: The main purpose of this article was to study the preferences of organic food buyers and to identify factors that determine their choice but that may also be barriers to purchasing this category of food. These issues need to be further explored so as to create recommendations in this regard for various participants in the organic food market.

Factors behind the Consumer Acceptance of Sustainable Business Models in Pandemic Times

A huge set of sustainable business models have emerged during recent decades to promote decarbonization, but the drivers of their consumer adoption remain somewhat unclear. This paper examines these drivers based on a sample of 622 university students during the second wave of COVID-19 at the end of 2020. Our research links business models to the theory of planned behavior and discusses their adoption from a consumer perspective. Using exploratory factor analysis, we identified five major and nine minor components of SBM adoption. Findings suggest that functional benefits, general attitudes, and habits may play a more important role in these factors than sustainability values during the second wave of pandemic. Still, sustainability values have neither lost nor gained momentum during hard times. Thrift, localization, and digitalization have become more dominant. We find that some SBM models are very strongly embedded in consumer culture, so the spread of SBM models does not necessarily lead to a reduction in environmental impacts.

Consumer expenditure, elasticity and value of food waste: A Quadratic Almost Ideal Demand System for evaluating changes in Mexico during COVID-19

Household food waste is driven by consumer habits and behaviors. The necessary measures implemented during the lockdown worldwide to contain the Covid-19 pandemic altered these consumer practices. This paper examines how household's culinary traditions and food management have changed in Mexico as a result of Covid-related restrictions, and their impact on food waste. We obtained 525 answers using an online survey about food habits distributed through social networks in Mexico between December 2020 and January 2021. The results show that the participating households increased their monetary expenditure on groceries and reduced food waste during the pandemic. The estimation of consumer responsiveness to waste, through the introduction of a framework based on a Quadratic Almost-Ideal Demand System, confirms that, even more during the lockdown, food waste has become a luxury good. The analysis of food category changes allows for a detailed study useful to curtail the level of food waste in Mexican households and to encourage transition towards sustainable and circular consumption behaviors.

Generation and prevention of food waste in the German food service sector in the COVID-19 pandemic - Digital approaches to encounter the pandemic related crisis

The COVID-19 pandemic has affected the food service processes and operations in many ways, such as the use of contactless payment methods or ordering systems has increased. Despite the pandemic-related obstacles the sector faces, SDG12.3, halving food waste at the retail and consumer levels by 2030, needs to be achieved. This study therefore examines the two questions: How far has the pandemic affected the generation of food waste and the implementation of prevention measures? How does the use of digital technology, which has been increasingly accessed since the beginning of the pandemic, offer opportunities to further reduce food waste in the sector? Two online surveys were conducted. In the first survey, 84% of the 170 respondents indicated not to implement further food waste reduction measures since the start of the pandemic, while 11% do. They engaged in more targeted purchasing activities based on more conscious planning of the production volume, the reduction of menus offered, and the standardisation of menu components. In total, 91 food service companies provided data on the food wasted (in %) before and since the pandemic. Of the 179 entries made for the different waste categories, 47% indicated waste had not changed, while 42% and 11% indicated an increase/decrease, respectively. In the context of the ongoing digitalisation of the sector, possible fields of action for digital applications were identified, which are helpful in combating food waste in general and specifically during the pandemic. In this study, a classification scheme for digital food waste reduction approaches was developed. These approaches are systemised into four categories: forecasting, waste analysis, redistribution, and measures catalogue. Further, the process steps in which the applications are applied are indicated and direct and indirect effects on the generation of food waste are provided.

The Covid-19 pandemic and food consumption at home and away: An exploratory study of English households

The Covid-19 pandemic has changed attitudes of English households towards food consumption at home and when eating out. Little academic research has however examined the scope and the scale of these changes, especially in the context of foodservice provision. This mixed methods study explores the effect of Covid-19 on food consumption in English households at home and away. It reveals increased frequency and variety of cooking during lockdown as a driver of household food wastage. The study demonstrates public hesitance towards eating out post-Covid-19. Foodservice providers are expected to re-design their business settings and adopt protective and preventative measures, such as frequent cleaning and routine health checks, to encourage visitation. After the pandemic, increased preference towards consuming (more) sustainable food at home, but not when eating out, is established. These insights can aid grocery and foodservice providers in offering more tailored products and services in a post-pandemic future.

Factors Affecting Food Consumers’ Behavior during COVID-19 in Romania

Crisis periods such as the COVID-19 pandemic may reshape consumers’ behavior and challenge all food chain actors on how to assure and better respond to consumers’ needs and wants. This study aimed to reveal the main concerns of consumers related to food consumption during the COVID-19 pandemic and to identify factors that may influence their behavior. An online survey was performed among 859 Romanian consumers. The Principal Component Analysis revealed five factors: ecofriendly, socio-economic aspects, food waste, plant-based food, and easily accessible food, which affected consumers’ food behavior during the COVID-19 pandemic. It was noticed that females tended to be more preoccupied with the socio-economic aspects and food waste components, compared to males. At the same time, older people were more concerned about the ecofriendly, socio-economic aspects and health concerns, compared with the younger group, the differences being statistically significant. These insights provide information on crucial aspects that shape consumers’ behavior during crisis periods.

Exploring the Role of Sustainability-Oriented Marketing Education in Promoting Consciousness for Sustainable Consumption

Scholars have increasingly examined how education influences consciousness for sustainable behaviour, but studies focusing on developing economies are very few, and the role of sustainability-oriented marketing education is currently underexplored. By applying the theory of planned behaviour, this study explores the influence of sustainability-oriented marketing education on students’ consciousness for sustainable consumption. The study is a quantitative research study based on an online survey of marketing students who participated in a training/seminar programme of the National Institute of Marketing of Nigeria. The participants were drawn from three universities across the South-East and South-South zones of the country. SmartPLS structural equation modelling was applied to test the generated data. We find that sustainability-oriented marketing education influences students’ consciousness for sustainable consumption, attitude, subjective norms, and perceived behavioural control. The findings will strengthen marketing education for sustainable development, and they have implications for students’ environmental consciousness in making purchase decisions. The study also brings more insight into marketing education’s role in actualizing the United Nations’ Sustainable Development Goals in Nigeria.

Assessing the Connections between COVID-19 and Waste Management in Brazil

In addition to the health crisis caused by the coronavirus pandemic, several countries—particularly in developing regions—faced serious additional challenges in the economic, social and environmental areas. In Brazil, one of these challenges refers to the changes in consumption caused by the lockdowns, and the environmental impacts caused by new patterns of waste generation. Against this background, this paper investigates the changes in consumption and waste generation in Brazil during the COVID-19 pandemic. It provides a technical contribution to the topic by comparing the perception of survey respondents on the amount of household waste produced before and during the pandemic, and cross-checking these with information on current aspects of policymaking, the findings suggest that the amount of some specific types of household waste has noticeably increased, challenging even more the local waste management systems. The data instrument was validated by a pre-test, prior to deployment. According to the respondents, packaging (both plastic and paper/cardboard) was the type of waste that reported the highest increase in generation during the lockdowns, which is in line with the results of increased consumption of food delivery within this period. The results also suggest that current waste management policies make Brazil ill-equipped to deal with one of the non-intended effects of the COVID-19 pandemic, which has severely impacted Latin America’s largest country.

Sustainable Consumption and Education for Sustainability in Higher Education

Sustainable consumption (SC) is the concept surrounding the use of products and services with minimal impact on environmental safeguarding resources for current and future generations. Since its implementation in 2015, SC is an expanding area of research as the increased occurrence of environmental impacts is observed globally. In this article, a literature review of sustainable consumption and education is presented as an in-depth review of relevant literature over the last 25 years. The review provides an understanding of the relationship, effect, and current concepts of sustainability education and consumption behavior. An analysis of the historical, geographical, and thematic characteristics of the relevant literature provided the scholarly context of the literature. An exploration into consumer behaviors on an individual and contextual level is presented, highlighting key factors for achieving sustainable consumption on the consumer level. A further review on the effect of education in general, and higher education on consumer behavior, is provided, noting the key findings for the support of sustainable education, as well as the anticipated barriers. In the conclusion, the effect of education on consumption is found to be positive and significant for pro-environmental consumption behaviors, and it is the main approach for implementing the ideals of sustainable consumption in the future.

Impacts of the COVID-19 pandemic on household food waste behaviour: A systematic review

Food waste has adverse economic, social, and environmental impacts and increases the prevalence of food insecurity. Panic buying at the beginning of the COVID-19 outbreak raised serious concerns about a potential rise in food waste levels and higher pressure on waste management systems. This article aims to investigate the impact of COVID-19 on food waste behaviour and the extent to which it occurs using the systematic review method. A total of 38 articles were identified and reviewed following the Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA) guidelines. The findings showed that the COVID-19 pandemic led to reductions in household food waste in most countries. Several changes in shopping and cooking behaviours, food consumption, and managing inventory and leftovers have occurred due to COVID-19. Based on these insights, we predicted that some desirable food-management habits would be retained, and others would roll back in the post-COVID-19 world. The review contributes to the food waste literature by offering a comprehensive overview of behavioural changes during the COVID-19 pandemic and future research directions.

Resources Management for a Resilient World: A Literature Review of Eastern European Countries with Focus on Household Behaviour and Trends Related to Food Waste

Increasing concern about food waste and the consequences of human lifestyle on the environment have intensified attention on this topic. While waste and loss of food occur in all stages of the food chain, more than 50% of the blame relies on the consumers’ shoulders, regardless of their geographical location, age, culture, or historical roots. Ideally, wasted food (from agricultural production to storage and transportation stages, down to final consumers) should return to the habitat it came from (circular economy concept), but man-made materials do not naturally decompose quickly, or they decompose in several hundreds of years, destroying untouched resources. Simply presented, reducing lost or wasted food means more food for us all in the future, more visible economic growth (especially in low-income countries), and less pressure on the environment. While these concepts are largely being investigated in Western economies, Eastern Europe lacks a proper understanding, especially in the best relevant practices. Therefore, this systematic review highlights the need for further research on Eastern European households’ attitudes and the importance of identifying long-term trends in changing behaviour causing wastage. This can only be done properly if past experiences, societal culture, traditions, and food habits are mirrored in future predictions by considering the inherent factors influencing the decision-making process.

Virtual Methodology for Household Waste Characterization During The Pandemic in An Urban District of Peru: Citizen Science for Waste Management

The Covid-19 pandemic has caused the alteration of many aspects of the solid waste management chain, such as variations in the waste composition, generation and disposal. Various studies have examined these changes with analysis of integrated waste management strategies; qualitative studies on perceived variations and statistical evaluations based on waste collected or disposed in landfills. Despite this information there is a need for updated data on waste generation and composition, especially in developing countries. The objective of this article is to develop a data sampling and analytical approach for the collection of data on household waste generation and composition during the pandemic; and, in addition, estimate the daily generation of masks in the study area. The proposed methodology is based on the principles of citizen science and utilizes virtual tools to contact participants, and for the training and collection of information. The study participants collected the information, installed segregation bins in their homes and trained their relatives in waste segregation. The article presents the results of the application of the methodology in an urban district of Lima (Peru) in August 2020. The results suggest an apparent decrease in household waste per capita and a slight increase in plastics composition in the study area. It is estimated that each participant generates 0.124 masks per day and 0.085 pairs of gloves per day. The method developed and results presented can be used as a tool for public awareness and training on household waste characterization and segregation. Furthermore it can provide the necessary evidence to inform policy directives in response household waste issues and Covid-19 restrictions.

Investigating the Impacts of Behavioural-Change Interventions and COVID-19 on the Food-Waste-Generation Behaviours of Catered Students in the UK and India

A food-waste initiative was conducted at two university canteens in the UK and India to examine food-waste attitudes and opportunities for food-waste reduction. Interventions were carried out to reduce food waste in both canteens. In the Indian canteen, postintervention data also included COVID-19-related changes, such as a change from self-service to table service, as well as reduced menu choices and an improved estimation of the number of students requiring meals. Surveys and focus groups were conducted with students to better understand their food-waste-related attitudes, while interviews were carried out with university staff to better understand food-waste management. The study in the UK university canteen found that introducing table cards, posters, and signs led to food-waste reductions of 13%. Meanwhile, the study in the Indian university canteen found that the interventions and COVID-19 impacts led to food-waste reductions of 50%. Concerning food-waste-related differences between the UK and India, culture and food preferences were key reasons for food waste in India, with 40.5% more participants in India stating that they wasted food because the ‘food didn’t taste good’. Students in India were more concerned about social issues and food poverty related to food waste, with around 9% more participants stating that the ‘food could be used by others’. Meanwhile, students in the UK were more bothered by the economic and environmental impacts of food waste, with around 31% more participants stating food waste is ‘a waste of money’, and is ‘bad for the environment’ when compared to India. Key opportunities for both countries included adopting food-sharing initiatives, informed menu choices, and meal planning, as well as student-led engagement projects.

Emissions of future conventional aircrafts adopting evolutionary technologies

The current aviation sector has been shaken by COVID-19, but a few years prior, the industry was experiencing a time of prosperity never seen before. These years were marked by the introduction of new models and record sales. In particular, two cases stood out from the rest: the Boeing 737 MAX and the Airbus A320neo. Such overwhelming success in sales was partly because in essence, these are quite traditional and familiar aircrafts that featured improvements in some critical systems, notably in the use of newer engines. Current projections suggest that the pre-COVID growth rate of aviation will resume in a few years, which raises global concerns regarding the ecological burden of conventional aircraft and their resulting limitations. By reviewing the green technologies likely to be incorporated into conventional aviation over the next 30 years, we explore the limits of the industry's current approach. To this end, we reconstruct an already validated life cycle analysis model to assess a fleet of aircraft and analyze the impacts of these new technologies on emissions. Based on data from the literature, predictions are made for optimistic and pessimistic scenarios in a post-COVID world. The results are compared with the globally established targets set by the International Air Transport Association (IATA). Simulations show that a future based solely on conventional aircrafts using evolutionary technologies is of great concern. There is a need to promote a radical departure from the current aviation models to accommodate the growing demand for aviation with a green future.

Is Covid‐19 changing sustainable consumer behavior? A survey of Italian consumers

Since the beginning of 2020, the world has been hit by the SARS‐CoV‐2 virus that causes Covid‐19. To hamper its spread, policymakers of many countries have put in place strong countermeasures, including lockdowns, that have led to significant changes in people's lifestyles and daily routines. This article aims at assessing the changes caused by Covid‐19 in sustainable consumer behavior under multiple perspectives, contributing to advance knowledge at the intersection between consumer dynamics and sustainable consumer behavior literature. A survey was conducted on 1.535 Italian consumers between December 2020 and February 2021. Respondents were asked to assess the extent to which their consumption behavior—purchase frequency, willingness to pay a premium price, sense of moral duty to purchase, social influence to purchase—related to several categories of sustainable products changed due to the pandemic, as well as the extent to which the pandemic impacted on many other aspects, including their environmental awareness, concern, and habits. Results show that Covid‐19 generated relevant changes. Consumers have increased their purchase frequency and willingness to pay for sustainable products, show growing attention to environmental issues, and behave more sustainably. Further, the extent of change is strongly affected by socio‐demographic variables, such as gender, age, income, and education. For instance, women reported a higher shift towards sustainable consumption and behavior than men. Understanding these changes is important to guide marketers and policymakers to respond promptly and effectively to them and to leverage on them to foster a transition towards a more sustainable society.

The Clean Your Plate Campaign: Resisting Table Food Waste in an Unstable World

The COVID-19 pandemic threatens global food security and has created an urgent need for food conservation. This article presents a review of clean plate campaigns around the world. It aims to fight food waste and reveal the factors that may influence food waste. The Clean Plate Club in the US developed during wartime and relied heavily on political power for compliance, whereas the Clean Plate movement in South Korea was based on religion. China’s Clean Your Plate Campaign (CYPC) has gone through two stages: CYPC I and CYPC II. The latter occurred during the unstable period of the COVID-19 pandemic. It was large-scale and more strongly enforced than CYPC I. In China, CYPC has relied more on personal virtue than on politics or religion. Culture, policy, COVID-19, and behavior are all important social factors that influence food waste. Specifically, two cultural values are drivers of food waste in China: hospitality and face-saving (mianzi). In terms of policy, China’s food waste law mainly relies on persuasion; it lacks any power of enforcement. Laws in France and Italy, by contrast, focus on re-using food and involve both coercion and incentives. COVID-19 may have led to panic purchasing and stockpiling, but, in general, it has resulted in a reduction in food waste.

Are the Slimmer More Wasteful? The Correlation between Body Mass Index and Food Wastage among Chinese Youth

With the economic growth and living standard improvement, food waste has become increasingly common among Chinese youth. To test whether body size affects the food waste performance of youth, we examined university students as representative of the Chinese youth and conducted a large-sample survey in 29 universities across 29 provinces. Based on 9192 questionnaires collected from Chinese college canteens, we found that body size was correlated with food waste. The smaller the body mass index (BMI) value, the higher the likelihood of plate waste, the higher the amount of waste, and the higher the ratio of food waste. Heterogeneity analyses revealed that BMI exerted a more significant impact on males than females, as well as a more substantial impact on northerners than southerners. Robust tests using other proxies to measure body size, robust regressions based on the new adjusted samples, and robust tests with an instrumental variable to overcome the endogenous issue suggested that the slimmer participants tended to be more wasteful. Hence, this study confirms that the slimmer youth tend to leave plate waste and waste more food per capita per meal. This study is the first attempt to analyze food wastage from the perspective of BMI in China to our best knowledge, and it provides a unique viewpoint for understanding young people’s food wastage.

Food Waste Reduction from Customers’ Plates: Applying the Norm Activation Model in South Korean Context

Researchers have pointed out the urgent need to tackle food waste from customers’ plates, considering its environmental and socioeconomic impacts. Nonetheless, little is known about reducing food waste from customers’ plates in the restaurant context. The present research successfully addressed how customers can reduce food waste by using the Norm Activation Model (NAM). A customer survey was employed to collect quantitative data to verify the hypotheses of this study. The NAM of this study involved awareness of environmental impact (of the restaurant industry), ascribed responsibility for food waste, and moral norm for food waste reduction as predictors for food waste reduction intention. In addition, this study adopted self-efficacy to food waste reduction as a moderator on the path from the moral norm for food waste reduction to food waste reduction intention. Our empirical results supported all the hypotheses suggested in the research model. Consequently, the findings of this study adequately explained how restaurant customers form their intention to reduce food waste and thus provided important clues about how it can be encouraged. For example, based on the findings, a nudging message may be displayed on the restaurant wall to raise customers’ self-efficacy, saying, “Saving the earth is as easy as finishing your food or taking it home”.

Effect of COVID-19 on food security, hunger, and food crisis

COVID-19 affected the world’s socioeconomic and food security more than other infectious diseases. In many countries, food industries’ workers were moderated because of the COVID-19 pandemic, which caused food factories to reduce or slow down their production. Airline closures, national and international restrictions, and lockdowns have severely disrupted the food supply chain. These, along with structural weaknesses in the world food system such as production, distribution, access, and stability in the food chain, have exposed more people to the food crisis and acute hunger in the world. Therefore it is necessary to use proper planning by governmental organizations and charities in the field of food supply in critical situations.

Leftover Consumption as a Means of Food Waste Reduction in Public Space? Qualitative Insights from Online Discussions

A considerable amount of food is discarded in canteens every day. This waste has created a countermovement, where groups of mainly students purposefully choose to eat other consumers’ plate leftovers instead of buying fresh meals. This phenomenon highlights two opposing narratives: leftovers as food waste versus leftovers as edible food resources. Using a thematic analysis, we investigated 1579 comments from German news sites and their corresponding Facebook sites related to this countermovement. Thereby, we aim to better understand what consumers associate with the consumption of other consumers’ plate leftovers. Our study demonstrates that the consumption of plate leftovers is shaped by the regulatory, normative, and cultural-cognitive system. Furthermore, associations with the consumption of plate leftovers depend on whether this food decision is perceived as a collective or individual consumer decision. From a consumer movement perspective, food leftover consumption is associated with a sense of community and food waste reduction for idealistic or environmental and social reasons. From an individual consumer behavior perspective, food leftover consumption is associated with satisfying hunger but considered a threat to health and social order. Our findings can inspire food service organizations to develop targeted interventions for plate leftover reduction.

The Effects of Pandemics on the Vulnerability of Food Security in West Africa—A Scoping Review

The purpose of this paper was to show the effects of the Ebola and COVID-19 pandemics on food security vulnerability in West Africa. The methodology is based on a scoping literature review using the PRISMA method. The study showed that food security was affected by the restrictive measures in the different West African countries. In addition, it shows that this region is highly vulnerable to such crises, which can combine their effects with those of other events such as climate change and civil unrest. In both pandemics, all pillars of food security were affected. The effects on urban and rural centers may be very different. The study suggests a better understanding of the differences between rural and urban centers and between men and women and how long-term restraint measures can affect rural areas where agriculture is the main lever for reducing food insecurity. Food security must be seriously considered by governments when implementing restrictive measures during a pandemic. Consideration of health factors alone at the expense of food security can greatly exacerbate health problems and even increase cases of disease.

Food Consumption Patterns in Romania during the COVID-19 Pandemic

Food consumption behavior during the COVID-19 pandemic has changed worldwide as a consequence of the restrictions imposed by law and/or due to the fear of contamination. Although some similarities are found among countries, there are still many particularities for each nation. The present study focused on Romanian consumers and their consumption behavior related to four main food categories: fruits and vegetables, meat and meat products, bread and bakery products, and milk and milk products. Frequency of buying, shopping habits, place of purchase, and concerns related to the place of purchasing food products during the COVID-19 pandemic were analyzed in comparison with the pre-COVID-19 period using descriptive statistics and inferential statistics regarding an online survey. Three types of behavior were identified as being related to the frequency of buying and to organizing a shopping list (less often, no change, more often). Two groups of consumers were identified as being related to the place of purchasing food: people with the same habits and people with new habits. Concerns related to the location of the stores and to the choice of buying directly from producers were also investigated using the ordered logistic regression. The empirical study revealed the new consumption patterns with a reflection on future trends.

The Effects of COVID-19 on Beef Consumer Preferences and Beliefs in Colombia: A Logit Model Approach

The COVID-19 pandemic has brought impacts on the food system in several ways, such as on the supply and demand of food or changes in consumer preferences. However, little is known yet about these effects but needs to be analyzed to define actions and policies for crisis mitigation and achieving food system resilience and food security. In this article, we estimate the effect of the COVID-19 lockdown on changes in food consumer preferences in Colombia, applying a logit model approach for seven attributes, namely animal welfare, environmental sustainability, information on the origin and manufacturing of food, food appearance, food price, fair payment to the producer, and food packaging. In addition, we provide an analysis of changes in beef consumption during the lockdown, since the beef industry is among Colombia's most important agricultural activities and is heavily affected by substitution effects. Our results show that consumer beliefs regarding these attributes remained mostly stable, but that income is a determining factor for the decision to consume certain types of food, such as beef, rather than for possible changes in beliefs. This means that income ends up being decisive for the consumption of food such as beef and that, for its part, it does not have a greater weight in the change of beliefs of the people surveyed. The results will help the food system actors in defining interventions for achieving food security and resilience.

Modeling of municipal waste disposal rates during COVID-19 using separated waste fraction models

Municipal waste disposal behaviors in Regina, the capital city of Saskatchewan, Canada have significantly changed during the COVID-19 pandemic. About 7.5 year of waste disposal data at the Regina landfill was collected, verified, and consolidated. Four modeling approaches were examined to predict total waste disposal at the Regina landfill during the COVID-19 period, including (i) continuous total (Baseline), (ii) continuous fraction, (iii) truncated total, and (iv) truncated fraction. A single feature input recurrent neural network model was adopted for each approach. It is hypothesized that waste quantity modeling using different waste fractions and separate time series can better capture disposal behaviors of residents during the lockdown. Compared to the baseline approach, the use of waste fractions in modeling improves both result accuracy and precision. In general, the use of continuous time series over-predicted total waste disposal, especially when actual disposal rates were less than 50 t/day. Compared to the baseline approach, mean absolute error (MAE), mean absolute percentage error (MAPE), and mean square error (MSE) were reduced. The R value increased from 0.63 to 0.79. Comparing to the baseline, the truncated total and the truncated fraction approaches better captured the total waste disposal behaviors during the COVID-19 period, probably due to the periodicity of the weeklong data set. For both approaches, MAE and MAPE were lower than 70 and 22%, respectively. The model performance of the truncated fraction appears the best, with an MAPE of 19.8% and R value of 0.92. Results suggest the uses of waste fractions and separated time series are beneficial, especially if the input set is heavily skewed.

Sustainability of Household Food Waste Reduction: A Fresh Insight on Youth's Emotional and Cognitive Behaviors

The sustainability of food waste is one of the most important contemporary economic, social, and environmental issues that encompasses useful academic, practical, and policymaking implications. Under the domain of sustainability, food waste is a serious global challenge with a growing public, political, and corporate concern. Existing literature regarding the sensitization of consumers and the promotion of waste cautious behaviors still has much room for improvement in household waste. To bridge the gap in the literature, this study identifies and examines determinants of young consumers' food waste reduction behavior in households. Using a sample size of 391 young consumers of household food products from Pakistan, a full-scaled administrative survey is conducted, and our hypotheses are empirically tested by using the PLS structural modeling equation. Our findings reveal significant impacts from both cognitive and emotional aspects on sustainable food waste reduction behavior. Our results have several important implications for policymakers and all the stakeholders, especially for marketers, including advertising strategies, policies to mitigate the impact of food waste, and the development of educational programs related to food waste.

Municipal solid waste management during COVID-19 pandemic: effects and repercussions

The COVID-19 pandemic has an adverse effect on the environment. This epidemic's effect on the waste composition and management and the impacts of municipal solid waste management (MSWM) on disease transmission or controlling are considered a compelling experience of living in the COVID-19 pandemic that can effectively control the process. This systematic review research was conducted to determine the effects of COVID-19 on the quantity of waste and MSWM. Searches were conducted in three databases (using keywords covid 19, coronaviruses, and waste), and among the published articles from 2019 to 2021, 56 ones were selected containing information on the quantity and waste management during the COVID-19 pandemic. The results showed that COVID-19 caused the quantity variation and composition change of MSW. COVID-19 also has significant effects on waste recycling, medical waste management, quantity, and littered waste composition. On the other hand, the COVID-19 pandemic has changed waste compounds' management activities and waste generation sources. Recognizing these issues can help plan MSWM more efficiently and reduce virus transmission risk through waste.
