Abstract
This study investigated the effects of dietary energy levels on growth, blood metabolites, and stress biomarkers in Korean native calves subjected to heat stress (HS). Twenty-four calves (BW: 221.5 ± 24.9 kg; age: 162 ± 4.8 d) were randomly housed in climate-controlled chambers using 3 × 2 factorial design. There were three treatment groups including low energy (LE = 2.53), medium energy (ME = 2.63), and high energy levels (HE = 2.72 Mcal/kg of DM) and two stress levels (threshold: THI = 70-73; severe: THI = 89-91). The calves were adapted to 22 °C for 7 days, then to the target THI level for 14 days. Energy intake, average daily gain, and gain to feed ratio were determined to decline (p < 0.05) under severe HS compared with threshold. Under severe HS, rectal temperature was increased 0.67 °C compared with threshold. Severe HS increased glycine, ammonia, and 3-methylhistidine concentrations compared with threshold (p < 0.05). Gluconeogenic AAs in the blood were increased among the various energy levels regardless of HS. In PBMCs the expression of HSP70 gene was increased in the LE group (p < 0.05), and the HSP90 gene expression was increased in LE and ME groups (p < 0.05) under severe HS. However, the expression of genes HSP70 and HSP90 in HE group did not differ under severe HS (p > 0.05). It has been suggested that HE intake may have a beneficial effect on PBMCs by mitigating ATP depletion. No differences in growth performance were found when increasing energy intake with high protein (CP 17.5%) under HS. However, the increase in energy levels resulted in increased gluconeogenic AAs but decreased urea and 3-methylhistidine in blood. In conclusion, increased energy levels are thought to improve HS adaptability by inhibiting muscle degradation and glucose production using gluconeogenic AAs in Korea native calves under HS condition.

Abstract
The intramuscular fat (IMF) content in sheep is associated with IMF deposition, which is affected by intramuscular adipocyte hypertrophy. In this study, we established an in vitro high glucose model of intramuscular adipocytes of sheep to investigate the expression of cannabinoid receptor 1 (CB1) gene, fatty acid-binding protein 4 (FABP4) gene, lipid metabolism-associated genes (acetyl-CoA carboxylase [ACC], fatty acid synthase [FAS], and stearoyl-CoA desaturase 1 [SCD1]), and transcription factors (liver X receptor [LXRα]), sterol regulatory element-binding transcription factor 1 [SREBF-1], and carbohydrate-responsive element-binding protein [ChREBP]) as well as the changes in the lipid and triglyceride (TG) levels in intramuscular adipocytes. The results showed that the differentiated mature adipocytes had a spherical shape, and the number and volume of the lipid droplets gradually increased over time under high glucose conditions. The lipid and TG levels in intramuscular adipocytes of sheep continuously increased under high glucose conditions. Furthermore, CB1, FABP4, ACC, FAS, SCD1, LXRα, SREBF-1, and ChREBP were highly expressed under high glucose conditions, suggesting that the energetic nutrients also affect the expression of the CB1 gene, which works in coordination with lipid metabolism-associated genes and are beneficial for lipid deposition in the intramuscular adipocytes of sheep.

Abstract
Over the past few decades, genetic selection and refined nutritional management have extensively been used to increase the growth rate and lean meat production of livestock. However, the rapid growth rates of modern breeds are often accompanied by a reduction in intramuscular fat deposition and increased occurrences of muscle abnormalities, impairing meat quality and processing functionality. Early stages of animal development set the long-term growth trajectory of offspring. However, due to the seasonal reproductive cycles of ruminant livestock, gestational nutrient deficiencies caused by seasonal variations, frequent droughts, and unfavorable geological locations negatively affect fetal development and their subsequent production efficiency and meat quality. Therefore, enrolling livestock in nutritional intervention strategies during gestation is effective for improving the body composition and meat quality of the offspring at harvest. These crucial early developmental stages include embryonic, fetal, and postnatal stages, which have stage-specific effects on subsequent offspring development, body composition, and meat quality. This review summarizes contemporary research in the embryonic, fetal, and neonatal development, and the impacts of maternal nutrition on the early development and programming effects on the long-term growth performance of livestock. Understanding the developmental and metabolic characteristics of skeletal muscle, adipose, and fibrotic tissues will facilitate the development of stage-specific nutritional management strategies to optimize production efficiency and meat quality.

Abstract
The purpose of the current review was to explore and summarize different studies concerning the detection and characterization of candidate genes and genomic regions associated with economically important traits in Hanwoo beef cattle. Hanwoo cattle, the indigenous premium beef cattle of Korea, were introduced for their marbled fat, tenderness, characteristic flavor, and juiciness. To date, there has been a strong emphasis on the genetic improvement of meat quality and yields, such as backfat thickness (BFT), marbling score (MS), carcass weight (CW), eye muscle area (EMA), and yearling weight (YW), as major selection criteria in Hanwoo breeding programs. Hence, an understanding of the genetics controlling these traits along with precise knowledge of the biological mechanisms underlying the traits would increase the ability of the industry to improve cattle to better meet consumer demands. With the development of high-throughput genotyping, genomewide association studies (GWAS) have allowed the detection of chromosomal regions and candidate genes linked to phenotypes of interest. This is an effective and useful tool for accelerating the efficiency of animal breeding and selection. The GWAS results obtained from the literature review showed that most positional genes associated with carcass and growth traits in Hanwoo are located on chromosomes 6 and 14, among which LCORL, NCAPG, PPARGC1A, ABCG2, FAM110B, FABP4, DGAT1, PLAG1, and TOX are well known. In conclusion, this review study attempted to provide comprehensive information on the identified candidate genes associated with the studied traits and genes enriched in the functional terms and pathways that could serve as a valuable resource for future research in Hanwoo breeding programs.

Abstract
The growth, sexual maturity and fertility-related parameters related of young Nellore bulls with divergent residual feed intake (RFI) raised on pasture were evaluated. After classification of 48 young males as low and high RFI (more and less efficient, respectively), the animals were evaluated for growth and reproductive parameters at 28-day intervals from 14.3 to 24.6 months of age. The semen was cryopreserved in the last sampling and fresh and post-thaw semen samples were evaluated. Low RFI bulls exhibited higher initial and final body weight (P < 0.05), but feed intake, body condition score and growth measures evaluated by carcass ultrasound were unaffected by RFI (P > 0.05). The scrotal circumference, sperm concentration, defects, and quality of fresh semen, and ultrasonographic testicular characteristics were unaffected by RFI (P > 0.05). However, velocity parameters such as average path and curvilinear velocities determined by computer-assisted sperm analysis of thawed semen submitted to the rapid thermoresistance test were improved (P < 0.05) in low RFI bulls, but this improvement in quality did not enhance in vitro sperm fertilizing ability. Our results demonstrated significant differences in metabolism and growth performance between bulls of divergent RFI. In addition, there was slight improvement in the semen quality of bulls with low RFI bulls, but this did not enhance in vitro fertilizing ability. Selection of beef bulls for RFI can be performed, which will result in economic benefits by improving the growth performance of the animals without affecting reproductive parameters.

Abstract
Knowledge of the genetic architecture of key growth and beef traits in livestock species has greatly improved worldwide thanks to genome-wide association studies (GWAS), which allow to link target phenotypes to Single Nucleotide Polymorphisms (SNPs) across the genome. Local dual-purpose breeds have rarely been the focus of such studies; recently, however, their value as a possible alternative to intensively farmed breeds has become clear, especially for their greater adaptability to environmental change and potential for survival in less productive areas. We performed single-step GWAS and post-GWAS analysis for body weight (BW), average daily gain (ADG), carcass fleshiness (CF) and dressing percentage (DP) in 1,690 individuals of local alpine cattle breed, Rendena. This breed is typical of alpine pastures, with a marked dual-purpose attitude and good genetic diversity. Moreover, we considered two of the target phenotypes (BW and ADG) at different times in the individuals' life, a potentially important aspect in the study of the traits' genetic architecture. We identified 8 significant and 47 suggestively associated SNPs, located in 14 autosomal chromosomes (BTA). Among the strongest signals, 3 significant and 16 suggestive SNPs were associated with ADG and were located on BTA10 (50-60 Mb), while the hotspot associated with CF and DP was on BTA18 (55-62 MB). Among the significant SNPs some were mapped within genes, such as SLC12A1, CGNL1, PRTG (ADG), LOC513941 (CF), NLRP2 (CF and DP), CDC155 (DP). Pathway analysis showed great diversity in the biological pathways linked to the different traits; several were associated with neurogenesis and synaptic transmission, but actin-related and transmembrane transport pathways were also represented. Time-stratification highlighted how the genetic architectures of the same traits were markedly different between different ages. The results from our GWAS of beef traits in Rendena led to the detection of a variety of genes both well-known and novel. We argue that our results show that expanding genomic research to local breeds can reveal hitherto undetected genetic architectures in livestock worldwide. This could greatly help efforts to map genomic complexity of the traits of interest and to make appropriate breeding decisions.

Abstract
Systems biology unravels the black box of signaling pathway of cells; but which has not been extensively applied to reveal the mechanistic synergy of a herbal formula. The therapeutic efficacies of a herbal formula having multi-target, multi-function and multi-pathway are the niches of traditional Chinese medicine (TCM). Here, we reported an integrated omics approach, coupled with the knockout of an active compound, to measure the regulation of cellular signaling, as to reveal the landscape in cultured rat osteoblasts having synergistic pharmacological efficacy of Danggui Buxue Tang (DBT), a Chinese herbal formula containing Angelicae Sinensis Radix and Astragali Radix. The changes in signaling pathways responsible for energy metabolism, RNA metabolism and protein metabolism showed distinct features between DBT and calycosin-depleted DBT. Here, our results show that calycosin within DBT can orchestrate the osteoblastic functions and signaling pathways of the entire herbal formula. This finding reveals the harmony of herbal medicine in pharmacological functions, as well as the design of drug/herbal medicine formulation. The integration of systems biology can provide novel and essential insights into the synergistic property of a herbal formula, which is a key in modernizing TCM.

Abstract
The study was conducted to develop and validate an equation to predict the metabolizable energy (ME) of double-low rapeseed cakes (DLRSC) for growing pigs based on their chemical compositions. In Experiment 1, 66 growing pigs (initial body weight 36.6 ± 4.1 kg) were allotted randomly to a completely randomized design with 11 diets. The diets included a corn-soybean meal basal diet and 10 test diets containing 19.22% DLRSC supplemented at the expense of corn, soybean meal, and lysine. Neutral detergent fiber (NDF), crude fiber (CF), and gross energy (GE) were the best predictors to determine ME. The best-fit prediction equation of ME (MJ/kg) was ME = 9.33 - 0.09 × NDF - 0.25 × CF + 0.59 × GE (R2 = 0.93). In Experiment 2, a total of 144 growing pigs (initial body weight 29.7 ± 2.7 kg), with six pigs per pen and six pens per treatment, were assigned randomly to four treatments in a completely randomized block design for a 28-day feeding trial. A corn-soybean meal basal diet was prepared, and three additional diets were formulated by adding 7%, 14%, and 21% DLRSC to the basal diet at the expense of soybean meal. All diets were formulated to provide equal standardized ileal digestibility (SID) Lys/ME ratio and SID essential amino acids/SID Lys ratio. Increasing dietary levels of DLRSC had no effect on average daily feed intake, average daily gain, and feed-to-gain ratio. The caloric efficiency of ME (31.83, 32.44, 31.95, and 32.69 MJ/kg, respectively) was not changed by increasing the dietary concentration of DLRSC. Increasing dietary levels of DLRSC linearly reduced (p < 0.05) the concentrations of triiodothyronine and tetraiodothyronine in serum, as well as apparent total tract digestibility of DM, GE, crude protein, acid detergent fiber, and organic matter of the diet. In conclusion, the ME prediction equation obtained in Experiment 1 accurately estimates the ME value of DLRSC fed to growing pigs.

Abstract
The temperament of farm animals can influence their resilience to everyday variations within the managed production environment and has been under strong direct and indirect selection during the course of domestication. A prominent objective measure used for assessing temperament in beef cattle is the behavioral flight response to release from confinement in a crush or chute. This behavioral measure, termed flight speed (also known as escape velocity) is associated with physiological processes including body temperature, feeding behavior, growth rate, carcass composition, immune function, and health outcomes. This review examines the functional links between this suite of traits and adrenergic activity of the sympathetic nervous system and the adrenomedullary hormonal system. It is suggested that flight speed is the behavioral aspect of an underlying “flightiness” temperament syndrome, and that elevated adrenergic tone in animals with a high level of flightiness (i.e., flighty animals) tunes physiological activities toward a sustained “fight or flight” defense profile that reduces productivity and the capacity to flourish within the production environment. Nonetheless, despite a common influence of adrenergic tone on this suite of traits, variation in each trait is also influenced by other regulatory pathways and by the capacity of tissues to respond to a range of modulators in addition to adrenergic stimuli. It is suggested that tuning by adrenergic tone is an example of homeorhetic regulation that can help account for the persistent expression of behavioral and somatic traits associated with the flight speed temperament syndrome across the life of the animal. At a population level, temperament may modulate ecological fit within and across generations in the face of environmental variability and change. Associations of flight speed with the psychological affective state of the animal, and implications for welfare are also considered. The review will help advance understanding of the developmental biology and physiological regulation of temperament syndromes.

Abstract
Early posthatch nutrition is important for gut health. Vitamin E (VE) and omega-3 (n-3) fatty acids can improve gut health through antioxidative and anti-inflammatory effects. The objective of this study was to identify the effects of VE, n-3 fatty acids, and combination of both during the starter phase (0–10 d) or grower phase (11–24 d) on intestinal morphology and expression of genes associated with gut health. A total of 210 Ross 708 broilers were randomly assigned into 7 treatments with 10 replicates of 3 birds each. The control group was fed a corn–soybean meal–basal diet during the entire study (0–58 d). Supplementation of VE (200 IU/kg), n-3 fatty acids (n-6/n-3 ratio of 3.2:1), and combination of both were fed during the starter phase (0–10 d) or grower phase (11–24 d). All of the broilers were harvested at 58 d of age. Villus height, crypt depth, villus width, distance between villi, and number of intraepithelial lymphocytes were obtained. Expression of 21 genes was measured using NanoString analysis. Expression of solute carrier family 15 member 1 (P = 0.01) associated with peptide transport and mucin 2 (P = 0.03) related with intestinal mucus barrier was increased in the broilers supplemented with n-3 fatty acids in the grower diet compared with the control. Expression of solute carrier family 7 member 1 associated with amino acid transport was decreased in the group supplemented with n-3 fatty acids during the starter phase compared with the group supplemented with n-3 fatty acids (P = 0.01) or VE and n-3 fatty acids during the grower phase (P = 0.03). These data suggest that VE and n-3 fatty acids supplemented during the grower phase have a positive effect on improving nutrient transport with n-3 fatty acids supplementation in the grower diet showing the most beneficial effect. These findings can be used in the development of nutritional management strategies to improve broiler growth performance and meat quality.

Abstract
The present study was conducted to estimate the effects of dietary carbohydrates on muscle quality and the underlying mechanisms. Six isonitrogenous and isolipidic diets were formulated to contain graded levels of carbohydrates (0%, 8%, 12%, 16%, 20% and 24%, respectively). These diets were named as C0, C8, C12, C16, C20 and C24, respectively. After a 10-week feeding trial, results showed that the muscle pH, liquid holding capacity (LHC) and hardness were significantly decreased by the increasing dietary carbohydrate levels. Dietary carbohydrates significantly decreased the muscle fibre diameter, and the highest value was found in the C0 group. Accumulated glycogen and degenerated mitochondrial cristae were observed in the C24 group. Significantly higher contents of protein carbonyls were observed in the C20 group and C24 group (P < 0.05). There was a significant decrease of mtDNA copy number in the C24 group compared with that in the C0 and C8 groups. The AMP/ATP ratio in muscle decreased first and then increased with the increasing dietary carbohydrate levels. The dietary incorporation of carbohydrate significantly reduced the expression of opa1, pygm and genes involved in myogenesis (myf5 and myog). Meanwhile, proteolysis-related genes (murf-1, mafbx, capn2 and ctsl), pro-inflammatory cytokines (il-6 and tnf-α) and mstn were significantly up-regulated. In the C24 group, significant increase of phosphorylation of AMPK (Thr172), up-regulation of PGC-1α and GLUT4 were observed, while the phosphorylation level of S6 (Ser235/236) was significantly decreased. It was concluded that excessive dietary carbohydrate level (24%) had negative impacts on mitochondria function and promoted glycogen accumulation, and thereafter influenced the muscle quality of olive flounder. The activation of AMPK as well as the upregulation of PGC-1α and GLUT4 was the key mechanism.

Abstract
This study investigated the effects of dietary rumen-protected L-tryptophan (TRP)
supplementation (43.4 mg of L-tryptophan kg−1 body weigt [BW])
for 65 days in Hanwoo steers on muscle development related to gene expressions
and adipose tissue catabolism and fatty acid transportation in
longissimus dorsi muscles. Eight Hanwoo steers (initial BW
= 424.6 kg [SD 42.3]; 477 days old [SD 4.8]) were randomly allocated to two
groups (n = 4) of control and treatment and were supplied with total mixed
ration (TMR). The treatment group was fed with 15 g of rumen-protected TRP (0.1%
of TMR as-fed basis equal to 43.4 mg of TRP kg−1 BW) once a
day at 0800 h as top-dressed to TMR. Blood samples were collected 3 times, at 0,
5, and 10 weeks of the experiment, for assessment of hematological and
biochemical parameters. For gene study, the longissimus dorsi
muscle samples (12 to 13 ribs, approximately 2 g) were collected from each
individual by biopsy at end of the study (10 weeks). Growth performance
parameters including final BW, average daily gain, and gain to feed ratio, were
not different (p > 0.05) between the two groups.
Hematological parameters including granulocyte, lymphocyte, monocyte, platelet,
red blood cell, hematocrit, and white blood cell showed no difference
(p > 0.05) between the two groups except for
hemoglobin (p = 0.025), which was higher in the treatment than
in the control group. Serum biochemical parameters including total protein,
albumin, globulin, blood urea nitrogen, creatinine phosphokinase, glucose,
nonesterified fatty acids, and triglyceride also showed no differences between
the two groups (p > 0.05). Gene expression related to
muscle development (Myogenic factor 6 [MYF6], myogenine
[MyoG]), adipose tissue catabolism (lipoprotein lipase
[LPL]), and fatty acid transformation indicator (fatty acid
binding protein 4 [FABP4]) were increased in the treatment
group compared to the control group (p < 0.05).
Collectively, supplementation of TRP (65 days in this study) promotes muscle
development and increases the ability of the animals to catabolize and transport
fat in muscles due to an increase in expressions of MYF6,
MyoG, FABP4, and LPL
gene.

Abstract
To clarify the relationship between beef genetic selection for growth and precocity with muscle metabolism and metabolites, we performed metabolomic analysis using Longissimus lumborum (LL) muscle from Nellore cattle with divergent selection for these traits (high growth, HG; low growth, LG; high precocity, HP; low precocity, LP). Genetic potential for growth affected muscle protein and energetic metabolism. HG animals had a high concentration of arginine, carnosine, and leucine compared to LG animals. HP animals presented a high concentration of glutamine, betaine, creatinine, isoleucine, carnitine, acetyl carnitine, and lower levels of glucose compared to LP animals, affecting protein and fatty acid metabolism. Intensity of selection (high or low) was correlated with changes in protein metabolism, and the type of selection (growth or precocity) affected fat metabolism. In conclusion, both HG and HP appear to be correlated with a high concentration of protein metabolites and changes in protein metabolic pathways, while selection for precocity is more correlated with changes in fat metabolism compared to animals selected for growth.

Abstract
The effects of feeding corn steep liquor (CSL; 420 g/kg crude protein, DM basis) along with different cereal grains on performance, digestibility, blood metabolites, ruminal fermentation, and carcass characters of growing lambs were evaluated. The constant amount of CSL was included in basal diet (100 g/kg, DM basis) and grain sources as experimental treatments were as follows: (1) corn grain (CG), (2) barley grain (BG), or (3) wheat grain (WG). The eighteen individually fed Farahani lambs averaging body weight 32 kg were allocated in completely randomized design (6 lambs/each) in a 9-week trial. The results showed that the greatest intake and gain were found in lambs fed CG in contrast to others. Nitrogen intake was constant among diets; however, the greatest nitrogen efficiency was found for corn grain-fed animals. Digestibility of nutrients were reduced in WG-fed animals in comparison with other grains. Ruminal proportions of propionate and butyrate were reduce in WG-fed lambs. The CG-fed animals displayed greater blood glucose and lower BUN concentrations compared with others. The greatest aspartate aminotransferase concentration as well as the greatest liver fat deposition suggested a dysfunction in liver performance in WG-fed animals. Except than that of a tendency for increment in dressing percentage in CG-fed lambs, no carcass character was differed among treatments. In conclusion, results revealed that feeding liquid protein source (CSL) is recommendable when it has been fed along with corn grain in comparison with barley or wheat grains in growing lambs.

Abstract
The biochemical and organoleptic characteristics of the longissimus thoracis muscle from suckler bulls (n = 56) finished on a concentrate-based system (C) or raised in a pasture-based system (P) incorporating 99 (P99), 162 (P162) or 231 days (P231) of grazing prior to indoor finishing on the concentrate-based diet were investigated. Age at slaughter increased with increasing period at pasture. Intramuscular fat concentration was lower (p < 0.001) for P99 than for C, P162 and P231 bulls, which did not differ. Soluble collagen proportion was lower (p < 0.01) for P162 and P231 than for P99 and C bulls. Collagen cross-link content was higher (p < 0.05) for P231 than for P99 and C bulls and for P162 than for C bulls. The proportion of type I muscle fibres was higher (p < 0.01) for P231 and P162 than for P99 and C bulls. Sensory tenderness was higher (p < 0.001) for C and P162 than for P99 and P231 bulls and overall liking was higher (p < 0.01) for C than for P99 and P231 bulls but similar to P162 bulls. Extending the grazing period to 162 days did not negatively influence the sensory qualities of beef compared to the intensive concentrate-based system.

Abstract
This study evaluated the effects of condensed barley distillers soluble (CBDS) on growth rate, rumen fermentation, plasma metabolite, and myofiber properties, and gene expression related to metabolism in the skeletal muscles of Japanese Black calves, compared with soybean meal and corn. Twenty-four calves were divided into four groups: fed 5% CBDS based on the hay dry matter weight (low CBDS) and fed soybean meal and corn at the same nutrition level (control); and fed 15% CBDS based on the hay dry matter weight (high CBDS) and fed soybean meal and corn at the same nutrition level (high soy). The daily gain was larger in the low (p = 0.08) and high (p < 0.05) CBDS groups compared with the control group. In the CBDS-fed groups, plasma β-hydroxybutyric acid concentrations were significantly higher at 6 months of age (p < 0.05), the percentage of type I myofibers was significantly lower and their diameters were significantly larger at 9 months of age (p < 0.05), and carnitine palmitoyltransferase 1b mRNA expression was significantly lower (p < 0.05) and citrate synthase mRNA expression tended to be lower (low; p = 0.06, high; p = 0.05) compared with control group. Thus, feeding CBDS promotes growth and leads to animals with more glycolytic and less oxidative muscle metabolism.

Abstract
The heavy reliance on imported soybean meal (SBM) as a protein source makes it necessary for the European pig industry to search for alternatives and to develop pigs that perform efficiently when fed such ingredients. Digestion and metabolism are major physiological processes contributing to variation in feed efficiency. Therefore, an experiment was conducted to assess the effects of replacing SBM with increasing levels of rapeseed meal (RSM) in diets for young pigs on apparent total tract digestibility (ATTD) of energy and nutrients, nitrogen (N) balance, energy metabolism and carbohydrate, protein and fat oxidation. Four diets were fed to 32 pigs (22.7±4.1 kg initial BW) for three weeks. The diets consisted of a control cereal grain-SBM basal diet and three test diets where SBM and wheat were partially replaced with 10%, 20%, and 30% of expeller RSM. Increasing level of RSM in the diets linearly reduced ATTD of organic matter, CP, total carbohydrates, dietary fiber and energy. Utilization of digested nitrogen (DN) for N retention and total N excretion were not affected by RSM inclusion, however, RSM inclusion induced a shift in N excretion from urine to feces. Despite a linear increase in liver to metabolic BW ratio, heat production and utilization of metabolizable energy (ME) for retention were not affected by increasing RSM inclusion. In conclusion, replacing SBM with up to 30% of expeller RSM in nutritionally balanced diets for young pigs reduced the ATTD of most nutrients and energy, but did not affect N and energy retention in the body or efficiency of utilization of DN or ME for retention.

Abstract
Under current Australian industry pre-slaughter guidelines, lambs may be off feed for up to 48 h before slaughter. The purpose of this study was to examine what proportion of circulating metabolites at slaughter are due to stress and feed deprivation and if this response differs between Merino and Terminal genotypes. In addition the effect of feed deprivation on carcass weight and meat quality was examined. Jugular blood samples were collected from 88 Merino and Terminal sired lambs at rest and at slaughter following 24, 36 and 48 h of feed deprivation and plasma analysed for glucose, lactate, non-esterified fatty acids (NEFA) and β-hydroxybutyrate (BHOB). From the same carcasses hot carcass weight (HCWT) were measured as well as a suite of meat quality traits measured such as M. longissimus lumborum (loin) and M. semitendinosus pH at 24 h postmortem. Loin samples were also analysed for intramuscular fat content and Warner-Bratzer Shear Force. Merino sired lambs had a higher NEFA response compared to Terminal sired lambs at slaughter after 24, 36 and 48 h of feed deprivation, with NEFA levels up to 35% higher than previously reported in the same animals at rest in animal house conditions, whereas BHOB response to feed deprivation was not affected by sire type (P>0.05) and similar to previously reported at rest. In addition to the metabolic effects, increasing feed deprivation from 36 h was associated with a 3% reduction in HCWT and dressing percentage as well as causing increased ultimate pH in the M. semitendinosus in Merino sired lambs. Findings from this study demonstrate that Merino and Terminal sired lambs differ in their metabolic response to feed deprivation under commercial slaughter conditions. In addition, commercial feed deprivation appears to have a negative effect on ultimate pH and carcass weight and warrants further investigation.

Abstract
The aim of this study was to examine the metabolic response to feed deprivation up to 48 h in low and high yielding lamb genotypes. It was hypothesised that Terminal sired lambs would have decreased plasma glucose and increased plasma non-esterified fatty acids (NEFA) and β-hydroxybutyrate (BHOB) concentrations in response to feed deprivation compared to Merino sired lambs. In addition, it was hypothesised that the metabolic changes due to feed deprivation would also be greater in progeny of sires with breeding values for greater growth, muscling and leanness. Eighty nine lambs (45 ewes, 44 wethers) from Merino dams with Merino or Terminal sires with a range in Australian Sheep Breeding Values (ASBVs) for post-weaning weight (PWT), post-weaning eye muscle depth and post-weaning fat depth (PFAT) were used in this experiment. Blood samples were collected via jugular cannulas every 6 h from time 0 to 48 h of feed deprivation for the determination of plasma glucose, NEFA, BHOB and lactate concentration. From 12 to 48 h of feed deprivation plasma glucose concentration decreased (P < 0.05) by 25% from 4.04 ± 0.032 mmol/l to 3.04 ± 0.032 mmol/l. From 6 h NEFA concentration increased (P < 0.05) from 0.15 ± 0.021 mmol/l by almost 10-fold to 1.34 ± 0.021 mmol/l at 48 h of feed deprivation. Feed deprivation also influenced BHOB concentrations and from 12 to 48 h it increased (P < 0.05) from 0.15 ± 0.010 mmol/l to 0.52 ± 0.010 mmol/l. Merino sired lambs had a 8% greater reduction in glucose and 29% and 10% higher NEFA and BHOB response, respectively, compared to Terminal sired lambs (P < 0.05). In Merino sired lambs, increasing PWT was also associated with an increase in glucose and decline in NEFA and BHOB concentration (P < 0.05). In Terminal sired lambs, increasing PFAT was associated with an increase in glucose and decline in NEFA concentration (P < 0.05). Contrary to the hypothesis, Merino sired lambs showed the greatest metabolic response to fasting especially in regards to fat metabolism.

Abstract
Background The ultrahigh density intensive farming model of grass carp (Ctenopharyngodon idellus) may elicit growth inhibition, decrease flesh quality, and increase disease susceptibility of fish. The degradation in quality and excessive fat accumulation in cultured C. idellus have long been attributed to possible alterations in the lipid metabolism of fish muscle tissues as a result of overnutrition from artificial diets. To investigate the effects of different diets on fish muscle quality, a large-scale metabolomics study was performed on 250 tails of C. idellus. Findings The experimental fish were divided into four groups based on sex and diet—female artificial feed (FAF), female grass feed, male artificial feed (MAF), and male grass feed (MGF). After a 113-day rearing period, the artificial feed (AF) group showed a significantly higher total mass of muscle fat (P < 0.01), with the FAF group being the highest. Metabolomics profiling based on liquid chromatography-mass spectrometry revealed distinctive patterns of clustering according to the four groups. Overall, artificial feeding was associated with higher concentrations of docosapentaenoic acid, dihomo-gamma-linolenic acid, and arachidonic acid, whereas grass feeding was associated with elevated n-3 unsaturated fatty acids (UFAs) such as eicosapentaenoic acid, alpha-linolenic acid, and gamma-linolenic acid. Artificial feeding also resulted in significant increased docosahexaenoic acid in MAF muscle than in MGF fish, whereas there was no significance in the comparison of female samples. Metabolic pathway analyses using both targeted and untargeted approaches consistently revealed that arachidonic acid metabolism and steroid hormone biosynthesis pathways were significantly different between AF and grass fed groups. Conclusions Our results suggest that grass is a better source of dietary fatty acid and protein when compared to artificial feed. Grass feeding could effectively lower triglycerides in serum, reduce fat accumulation, and alter lipid compositions in fish muscle by increasing the concentrations of n-3 UFAs, leading to better nutrition and health.

Abstract
The objective of this study was to determine the effect of dietary energy substrate and days on feed on apparent total tract digestibility, ruminal fermentation, short-chain fatty acid (SCFA) absorption, plasma glucose and acetate clearance rates, and insulin responsiveness. Eight ruminally cannulated, crossbred growing heifers were randomly allocated to 1 of 2 dietary treatments. The control (CON) diet consisted of 75.2% barley grain, 9.8% canola meal, 9% mineral and vitamin supplement, and 6% barley silage (DM basis). To evaluate the effect of energy source, a high-lipid, high-fiber byproduct pellet (HLHFP) was included in the diet by replacing 55% of the barley grain and 100% of canola meal. The study consisted of 4 consecutive 40-d periods (P1 to P4), with data and sample collection occurring in the last 12 d of each period. Dry matter intake tended ( = 0.10) to decrease by period and HLHFP-fed heifers tended to eat less ( = 0.09). The ADG of the CON was greater than that of the HLHFP during P1 and P4 (treatment × period, = 0.02). Heifers fed HLHFP tended to have greater mean ruminal pH (6.10 vs. 5.96; = 0.07) than heifers fed the CON, but pH was not affected by period. The CON heifers had a greater digestibility for DM, OM, CP, and NDF ( ≤ 0.03), and the digestibility for DM and OM linearly increased ( = 0.01) and for CP, NDF, and starch quadratically increased ( ≤ 0.04) with advancing period. Total SCFA concentration in the rumen was greater ( < 0.01) for the CON than for the HLHFP (141.6 vs. 128.1 m). The molar proportion of acetate and isobutyrate linearly increased and butyrate and valerate linearly decreased ( ≤ 0.05) with advancing periods. The rate of valerate absorption tended to increase (linear, = 0.06) and the ruminal liquid passage rate tended to decrease (linear, = 0.08) with advancing period. The arterial clearance rate of acetate tended to quadratically increase ( = 0.06) with period, whereas the clearance rate of glucose was not affected by treatment or period. Both fasting plasma insulin and the area under the insulin curve in response to glucose infusion linearly increased ( = 0.04) with period. These data suggest that partially replacing barley grain with HLHFP negatively affects total tract digestibility and performance. Moreover, with advancing days on feed, digestibility and insulin resistance increases without changes in ruminal pH and plasma metabolite clearance rates.

Abstract
A total of 40 lambs of Chios breed were used to determine the effect of rearing system, sex and age on the fatty acid (FA) profile of M. semimembranosus proprius (SP), M. longissimus dorsii (LD) and M. triceps brachii (TB). The lambs were assigned into two groups balanced for bodyweight and sex. The first group (n = 20) underwent natural rearing (natural) and received only maternal milk until weaning. The second group (n = 20) weaned at birth and subjected to artificial suckling (artificial) with a commercial milk replacer. At 35 days of age, 10 animals from each group were weighed and slaughtered. The remaining lambs of both groups, after weaning were fed daily 100 g barley hay per animal and a commercial concentrate diet ad libitum up to 90 days of age, where they were also weighed and slaughtered. The results showed that the FA profile of lamb muscles was related with that of suckled milk (natural or artificial). Sex did not affect the FA profile, whereas the increase in the slaughtered age lead to changes in the FA profile of lamb muscles (SP, LD, TB). In conclusion, both rearing system and age change the FA profile of lamb muscles, but not in the same manner in all of them (SP, LD, TB).

Abstract
OBJECTIVE The objective of the present study was to determine whether mango saponin (MS) could be used as a feed additive in broiler chicks by evaluating growth performance, carcass characteristics, meat quality, and plasma biochemical indices. METHODS A total of 216 1-d-old Arbor Acres male broiler chicks were randomly assigned into three dietary treatments supplemented with 0 (control), 0.14% (MS 0.14%), or 0.28% (MS 0.28%) MS. Each treatment had six replicates (cages) with 12 chicks each. The feeding trial lasted for six weeks. RESULTS Compared with the control, dietary supplemented with 0.14% or 0.28% MS increased average daily weight gain of chicks in the grower (22 to 42 d) and the whole (1 to 42 d) phases, and the final body weight of chicks on d 42 was higher in MS supplemented groups (p<0.05). Lower L45 min* (lightness) and L24 h* values, lower b24 h* (yellowness) value, and higher a45 min* (redness) and a24 h* values of the breast muscle were observed in chicks fed with 0.28% MS on d 42 (p<0.05). The total antioxidant capacity in plasma increased in MS 0.14% group on d 21 (p<0.001). Lower contents of plasma total cholesterol and triglyceride were observed in chicks fed with 0.28% MS on d 21 and d 42, whereas the group supplemented with 0.14% MS only decreased plasma triglyceride content on d 21 (p<0.05). The glucose content in plasma decreased in MS 0.28% group on d 42 (p<0.001). CONCLUSION Overall, MS could be used as a feed additive in broiler chicks, and the supplemental level of 0.28% MS in diet could improve growth performance, meat quality, and plasma lipid metabolism in broiler chicks.

Abstract
Feeding cake with remaining oil contributes dietary energy (fat) in addition to protein (AA) and may provide an opportunity to enrich the n-3 fatty acid content of pork. Information regarding safety, growth performance, and efficacy of feeding camelina cake to pigs is limited. We therefore evaluated the effects of camelina cake inclusion in pig nursery diets. In total, 192 pigs (9.4 kg BW) were randomly allocated by sex to 48 pens, 2 heavy and 2 light pigs per pen. Pigs were fed 1 of 4 wheat-based diets including camelina cake (0%, 6%, 12%, or 18%; variety Celine) replacing soybean meal for 4 wk. Individual pigs, pen feed added, and orts were weighed weekly. Feces were collected on d 26 and 27. A blood sample was taken on d 29 from 24 pigs with the lowest BW/pen, which were then euthanized and necropsied. Gross pathological examination was conducted, and organ weights were measured. Samples of liver, back fat, belly fat, and jowl fat were collected for fatty acid analysis. Increasing dietary camelina cake inclusion linearly decreased ( 0.001) apparent total tract digestibility (ATTD) of DM, OM, GE and ash but did not affect ATTD of CP and P. For the entire trial (d 0 to 28), increasing camelina cake inclusion by 6% linearly decreased ( 0.001) ADFI by 74 g/d, ADG by 51 g/d, and BW by 0.8 kg but did not affect feed efficiency (G:F). Increasing camelina cake inclusion linearly increased ( 0.001) liver weight relative to BW, linearly decreased ( 0.050) kidney weight, but did not affect spleen, heart, and thyroid weights. Increasing camelina cake inclusion did not result in serological (large-animal standard panel, T3, and T4) or gross clinical (morphology) findings that might suggest toxicity. In liver, back fat, belly fat, and jowl fat, increasing dietary camelina cake inclusion linearly increased ( 0.050) total n-3 fatty acids and shorter-chain n-3 and n-6 fatty acids but did not increase docosahexaenoic acid (n-3) or arachidonic acid (n-6). In conclusion, feeding camelina cake to weaned pigs at up to 18% did not elicit clinical signs of toxicity and increased n-3 fatty acids in carcass fat depots. The decrease in ADFI as camelina cake inclusion increased resulted in pigs fed 18% weighing 5 kg less than controls at the end of the nursery period.

Abstract
This study examined the effect of high ambient temperature on the growth performance, meat quality, activity of the hypothalamo-pituitary-adrenal axis, and related gene expression in finishing pigs. All pigs received the same corn-soybean meal-based diet. Twenty-four Landrace pigs (initial bodyweight of 77.64 ± 0.67 kg) were assigned into three groups: Group 1 (22°C, ad libitum, 81% humidity); Group 2 (22°C, pair-fed to Group 3, 78% humidity); Group 3 (35°C, ad libitum, 78% humidity). The experiment lasted for 30 days. The average daily feed intake and average daily gain were markedly reduced in Group 3 compared with Group 1 (P < 0.05). The intramuscular fat content of longissimus dorsi muscle was decreased in Groups 2 and 3 (P < 0.05) when compared with Group 1. Muscle pH at 24 h post-mortem was higher in Group 3 (P < 0.05) compared with Groups 1 and 2, and the pH at 48 h post-mortem was higher in Group 3 (P < 0.05) than in Group 1. The MyHC IIb transcript abundance was lower in Group 3 (P < 0.05) than in the other two groups and that of MyHC IIx was higher in Group 3 than in Group 2 (P < 0.05). The relative abundance of calpastatin transcripts was lower in Group 3 (P < 0.05) than in the other two groups. Cortisol concentrations were lower in Group 3 (P < 0.05) than in Groups 1 and 2 on Day 3. Corticotropin releasing hormone concentrations in Group 3 were lower at Day 3 (P < 0.05) when compared with Group 2 and at Day 30 when compared with Groups 1 and 2. Glucagon concentrations were lower in Group 3 (P < 0.05) when compared with Groups 1 and 2 on Day 30. These results indicate that the decreased intramuscular fat content of pigs at high ambient temperature results from the reduction in feed intake. Independently of its effect on feed intake, high ambient temperature affected the meat quality of finishing pigs by increasing pH value probably due to the lower serum concentrations of corticotropin releasing hormone, and inducing a transition of muscle fibre types from IIb to IIx.

Abstract
In grass-based beef production systems (PS), early maturing (EM) breed types may be preferable to late maturing (LM) breed types in achieving adequate carcass fat cover. Biochemical and organoleptic characteristics of muscle from suckler bulls were investigated in EM and LM (n=28/breed) assigned to one of two PS (ad libitum concentrates and grass silage to slaughter (C) or ad libitum silage plus 2 kg concentrate daily during winter followed by 99 days at pasture and then an indoor finishing period on C (GSPC)) in a 2 breed type×2 PS factorial arrangement of treatments. Bulls were managed to have a common target carcass weight of 380 kg. Intramuscular fat (IMF) content was higher (P<0.05) for EM than LM, and for C than GSPC bulls. Collagen solubility was higher (P<0.05) for C than GSPC bulls. Lactate dehydrogenase (LDH) and phosphofructokinase activities were higher (P<0.05) for LM than EM. Isocitrate dehydrogenase activity and the Type I myosin heavy chain (MyHC) proportion were higher (P<0.05) for EM than LM. The LDH activity and the Type IIX MyHC proportion were higher (P<0.05) for C than GSPC bulls. Sensory ratings for tenderness and juiciness were higher (P<0.01) for beef from EM than LM while sensory ratings for tenderness, flavour liking and overall liking were higher (P<0.001) for C than for GSPC bulls. Differences in sensory quality were largely eliminated when adjusted for IMF. Overall, carcass fat scores, IMF and sensory scores were higher in EM than LM and in C than GSPC bulls but most differences in sensory quality could be attributed to differences in IMF.

Abstract
AbstractAn experiment was conducted with 42 Montbéliard steers to determine if nutritionally induced interrupted growth could influence muscle characteristics of steers and hence meat quality. A restriction/refeeding path was designed in order to induce a discontinuous growth path. At 9 months of age, 21 steers were given a restricted amount of diet for 3 months and were then slaughtered (R steers; no. = 10; intake: 5·28 kg dry matter (DM) per day) or subjected to a 4-month ad libitum refeeding period (R/F steers; no. = 11; intake: 8·99 kg DM per day) with the same diet (11·03 to 11·12 MJ metabolizable energy (ME) per kg DM) prior to slaughter. An additional 21 control steers were offered the same diet but in amounts that allowed them to gain continuously between 9 and 12 months of age, and were then slaughtered (C steers; no. = 10; intake: 7·08 kg DM per day) or maintained on a continuous feeding protocol through to 16 months of age prior to slaughter (C/C steers; no. = 11; intake: 8·07 kg DM per day). M. semitendinosus (ST), m. longisssimus thoracis and m. triceps brachii (TB) were collected for biochemical and histochemical analyses. R steers had a lower average daily gain (ADG; P 0·001), a lower final weight (P 0·01) and a leaner carcass (P 0·01) than C steers. Upon refeeding, R/F steers had a higher ADG than C/C steers (P 0·05) and underwent compensatory growth resulting in compensation of body weight and composition at 16 months. In muscles, glycolytic lactate dehydrogenase activity was lower in R steers (P 0·01) and restored in R/F steers compared with control steers. Among oxidative enzymes, cytochrome-c oxidase activity was higher in the TB of R/F compared with C/C steers (P 0·001) indicating a muscle-specific metabolic adaptation to the feeding level. There was little effect of the nutritional treatment on muscle fibre size and type except for an increase in the frequency of hybrid fibres in R and R/F groups (P 0·05). Total and insoluble collagen content were affected by restriction (P 0·001) in a muscle-specific manner: insoluble collagen content was lower in ST, but total and insoluble collagen contents were higher in TB of R compared with C animals at 12 months of age. No differences were recorded in lipid contents nor in proteasome activities. The data suggest that an alternation of relatively mild nutritional restriction and ad libitumfeeding had only a small effect on muscle characteristics. However, muscles respond differentially to changes in feeding level.

Abstract
Meat colour is one of the cues available to the consumer to gauge overall meat quality and wholesomeness. Colour stability of meat is determined by several factors both inherent to the animal and post-slaughter conditions, including ageing, storage/packaging and display times. A hydrophilic interaction liquid chromatography-mass spectrometry (HILIC-MS) based metabolomics study was undertaken to identify and compare polar metabolites between ovine meat samples that were exposed to different durations of ageing, storage conditions, and display times. Primary metabolites comprising amino acids, sugars, nucleotides, nucleosides, organic acids and their breakdown products were mainly identified as discriminating factors. For the first time, boron complexes of sugar and malic acid were also tentatively identified. As expected, most compounds identified were related to myoglobin chemistry, and compounds with antioxidant properties were found in higher levels in colour stable samples. Supplementary studies identifying semi-polar, non-polar and volatile compounds will provide a holistic understanding of the chemical basis of colour stability in ovine meat.

Abstract
An experiment was conducted to evaluate effects of 2 high-protein canola meals (canola meal A [CMA]: 45.69% CP and canola meal B [CMB]: 46.97% CP) and a conventional canola meal (CM-CV: 35.10% CP) on growth performance, organ weights, bone ash, and blood parameters of weanling pigs. Inclusion rates of canola meal (CM) in the diets were 10, 20, 30, or 40% for CMA and CM-CV, whereas inclusions were 10, 20, or 30% for CMB. A control diet containing no CM was also formulated. Therefore, 12 diets were used in this experiment. A total of 420 pigs (initial BW: 9.8 ± 1.1 kg) were divided into 3 blocks and randomly allotted to 1 of the 12 diets with 8 replicate pens per treatment and 4 or 5 pigs per pen. The ADG, ADFI, and G:F were calculated, and at the conclusion of the experiment, 1 pig in each pen was euthanized to allow measurements of organ weights, collection of blood, and collection of the third and fourth metacarpals from the left foot. Results indicate that ADFI was linearly (P < 0.05) decreased if inclusion of CMA, CMB, or CM-CV was increased. Average daily gain for pigs fed CMA tended to increase quadratically with the maximum response observed at 10 or 20% CM inclusion in the diet ( P= 0.06). However, G:F was linearly (P < 0.05) increased by adding CMA or CM-CV to the diets. Liver weights were also linearly (P < 0.05) increased if pigs were fed diets containing CMB, but kidney weights were linearly (P < 0.05) decreased by the addition of CM-CV to the diets. Thyroid gland weights increased linearly (P < 0.05) for pigs fed diets containing CMA. No differences were observed in heart and bone weights if CM was added to the diets. Addition of any of the 3 CM linearly (P < 0.05) increased bone ash percentage in the metacarpals. Inclusion of CMA or CM-CV linearly (P < 0.05) decreased concentrations of serum triiodothyronine, and the inclusion of CMA also linearly (P < 0.05) decreased serum thyroxine concentrations. No differences were observed for complete blood counts or blood urea nitrogen if CM was added to the diets. In conclusion, up to 20% high-protein CM or CM-CV may be included in diets for weanling pigs from 2 wk postweaning without reducing growth performance or negatively affecting organ, bone, or blood parameters. In some instances, it may also be possible to use greater inclusion rates.

Abstract
Reference limits for metabolic profiles in Holstein late-pregnant heifers and dry cows were determined considering the effects of parity, days relative to calving, and season. Blood samples were collected from 104 pregnant heifers and 186 dry cows (68 primiparous and 118 pluriparous) from 60 to 10 d before the expected calving date in 31 dairy farms in northeastern Italy. Sampling was performed during summer (182 samples) and the following winter (108 samples). All the animals were judged as clinically healthy at a veterinary visit before sampling. Outliers were removed from data of each blood analyte, and variables that were not normally distributed were log transformed. A mixed model was used to test the fixed effects of parity (late-pregnant heifers, primiparous or pluriparous dry cows), class of days relative to calving (60-41 d, 40-21 d, 20-10 d), season (summer or winter), and the interactions between parity and class of days relative to calving and between parity and season, with farm as random effect. Single general reference limits and 95% confidence intervals were generated for analytes that did not vary according to fixed effects. Whenever a fixed effect included in the model significantly affected a given analyte, specific reference limits and 95% confidence intervals were generated for each of its levels. Albumin, urea, triglycerides, alanine aminotransferase, aspartate aminotransferase, creatinine kinase, conjugated bilirubin, calcium, phosphorus, magnesium, potassium, chloride, zinc, copper, and iron concentrations were not influenced by any of the fixed effects. Total protein, globulins, creatinine, glucose, alkaline phosphatase, gamma glutamyltransferase, lactate dehydrogenase, and sodium plasma concentrations were affected by parity. The class of days relative to calving had a significant effect on the concentrations of total protein, globulins, fatty acids, cholesterol, total bilirubin, and sodium. Season affected plasma concentrations of creatinine, glucose, fatty acids, lactate dehydrogenase, and sodium. Interactions between parity and class of days relative to calving and between parity and season did not significantly affect any of the blood analytes tested. The reference limits and the 95% confidence intervals for blood analytes determined in the study could help dairy practitioners to improve the accuracy of metabolic profile interpretation in Holstein late-pregnant cattle.

Abstract
The objectives of this study were to examine systemic insulin response to a glucose tolerance test (GTT) and transcript abundance of genes of the insulin signaling pathway in skeletal muscle, during both dietary restriction and re-alimentation-induced compensatory growth. Holstein Friesian bulls were blocked to one of two groups: 1) restricted feed allowance for 125 days (period 1) (RES, n = 15) followed by ad libitum feeding for 55 days (period 2) or 2) ad libitum access to feed throughout (periods 1 and 2) (ADLIB, n = 15). On days 90 and 36 of periods 1 and 2, respectively, a GTT was performed. M. longissimus dorsi biopsies were harvested from all bulls on days 120 and 15 of periods 1 and 2, respectively, and RNA-Seq analysis was performed. RES displayed a lower growth rate during period 1 (RES: 0.6 kg/day, ADLIB: 1.9 kg/day; P < 0.001), subsequently gaining more during re-alimentation (RES: 2.5 kg/day, ADLIB: 1.4 kg/day; P < 0.001). Systemic insulin response to glucose administration was lower in RES in period 1 (P < 0.001) with no difference observed during period 2. The insulin signaling pathway in M. longissimus dorsi was enriched (P < 0.05) in response to dietary restriction but not during re-alimentation (P > 0.05). Genes differentially expressed in the insulin signaling pathway suggested a greater sensitivity to insulin in skeletal muscle, with pleiotropic effects of insulin signaling interrupted during dietary restriction. Collectively, these results indicate increased sensitivity to glucose clearance and skeletal muscle insulin signaling during dietary restriction; however, no overall role for insulin was apparent in expressing compensatory growth.

Abstract
This study was carried out to investigate the effects of intraruminal infusion of propionate on ruminal fermentation characteristics and blood hormones and metabolites in Hanwoo (Korean cattle) steers. Four Hanwoo steers (average body wt. 270 kg, 13 month of age) equipped with rumen cannula were infused into rumens with 0.0 M (Water, C), 0.5 M (37 g/L, T1), 1.0 M (74 g/L, T2) and 1.5 M (111 g/L, T3) of propionate for 1 hour per day and allotted by 4×4 Latin square design. On the 5th day of infusion, samples of rumen and blood were collected at 0, 60, 120, 180, and 300 min after intraruminal infusion of propionate. The concentrations of serum glucose and plasma glucagon were not affected (p>0.05) by intraruminal infusion of propionate. The serum insulin concentration at 60 min after infusion was significantly (p<0.05) higher in T3 than in C, while the concentration of non-esterified fatty acid (NEFA) at 60 and 180 min after infusion was significantly (p<0.05) lower in the propionate treatments than in C. Hence, intraruminal infusion of propionate stimulates the secretion of insulin, and decreases serum NEFA concentration rather than the change of serum glucose concentration.

Abstract
The objectives of this study were to determine the insulinogenic response to an intravenous glucose tolerance test (GTT) and examine gene expression profiles in the insulin signaling pathway (ISP) in beef animals of differing phenotypic residual feed intake (RFI). Two experiments were conducted. In Exp. 1, a total of 39 Simmental heifers, over 2 yr (yr 1, n = 22, and yr 2, n = 17; mean initial BW = 472 kg [SD = 52.4 kg]), were offered grass silage ad libitum for 104 d. Heifers were subjected to a GTT on d 8 and 65 of the RFI measurement period in yr 1 and 2, respectively. Concentrations of plasma glucose and insulin were measured at -45, -30, -15, 0, 5, 10, 15, 20, 30, 45, 60, 90, 120, 150, and 180 min relative to glucose infusion (0 min). In Exp. 2, a total of 67 Simmental bulls, over 3 yr (yr 1, n = 20; yr 2, n = 33; and yr 3, n = 14; mean initial BW = 431 kg [SD = 63.7 kg]), were offered concentrates ad libitum for 105 d. Biopsies of LM were harvested during the RFI measurement period (yr 1, d 49 and 91; yr 2, d 52 and 92; and yr 3, d 50 and 92). The residuals of the regression of DMI on ADG, midtest metabolic BW (BW(0.75)), and the fixed effect of year, using all animals, were used to compute individual RFI coefficients. Animals were ranked on RFI and assigned to high (inefficient), medium, or low groupings by dividing them into terciles, resulting in 13 heifers and 22, 23, and 22 bulls in their respective RFI groups. In Exp. 1, data from 13 heifers from each of the high- and low-RFI groups, and in Exp. 2, data from the 15 highest and 15 lowest ranking bulls on RFI are reported. In Exp. 1, glucose and insulin response and area under the response curve for glucose and insulin were similar (P > 0.05) between high- and low-RFI heifers. In Exp. 2, no differences (P > 0.05) were found for mRNA expression of 22 genes of the ISP in muscle tissue; however, expression of the transcription factor SREBP1c tended to be positively correlated (r = 0.25, P = 0.07) with RFI. Expression of GLUT4, INPPL1, and SHC increased (P < 0.05) over time, while there was no effect of sample time for any other genes measured. Collectively, these results suggest that insulin response, sensitivity, and associated expression of genes in the ISP within muscle tissue are not contributory factors to variation in RFI. However, further examination of target genes of SREBP1c, which is involved in lipogenesis, may explain some of the biochemical processes underlying variation in phenotypic RFI.

Abstract
The breeding value of marbling score in skeletal muscle is an important factor for evaluating beef quality. In the present study, we investigated proteins associated with the breeding value of the marbling score for bovine sirloin to select potential biomarkers to improve meat quality through comparative proteomic analysis. Proteins isolated from muscle were separated by two-dimensional gel electrophoresis. After analyzing images of the stained gel, seven protein spots for the high marbling score group were identified corresponding to changes in expression that were at least two-fold compared to the low marbling score group. Four spots with increased intensities in the high marbling score group were identified as phosphoglycerate kinase 1, triosephophate isomerase, acidic ribosomal phosphoprotein PO, and capping protein (actin filament) Z-line alpha 2. Spots with decreased intensities in the high marbling score group compared to the low score group were identified as 14-3-3 epsilon, carbonic anhydrase II, and myosin light chain 1. Expression of myosin light chain 1 and carbonic anhydrase 2 was confirmed by Western blotting. Taken together, these data could help improve the economic performance of cattle and provide useful information about the underlying the function of bovine skeletal muscle.
