Abstract
Selenium (Se) in paddy rice is one of the significant sources of human Se nutrition. However, the effect of arsenic (As) pollution in soil on the translocation of Se species in rice plants is unclear. In this research, a pot experiment was designed to examine the effect of the addition of 50 mg As/kg soil as arsenite or arsenate on the migration of Se species from soil to indica Minghui 63 and Luyoumingzhan. The results showed that the antagonism between inorganic As and Se was closely related to the rice cultivar and Se oxidation state in soil. Relative to the standalone selenate treatment, arsenite significantly (p < 0.05) decreased the accumulation of selenocystine, selenomethionine and selenate in the roots, stems, sheaths, leaves, brans and kernels of both cultivars by 21.4%-100.0%, 40.0%-100.0%, 41.0%-100%, 5.4%-96.3%, 11.3%-100.0% and 26.2%-39.7% respectively, except for selenocystine in the kernels of indica Minghui 63 and selenomethionine in the leaves of indica Minghui 63 and the stems of indica Luyoumingzhan. Arsenate also decreased (p < 0.05) the accumulation of selenocystine, selenomethionine and selenate in the roots, stems, brans and kernels of both cultivars by 34.9%-100.0%, 30.2%-100.0%, 11.3%-100.0% and 5.6%-39.6% respectively, except for selenate in the stems of indica Minghui 63. However, relative to the standalone selenite treatment, arsenite and arsenate decreased (p < 0.05) the accumulation of selenocystine, selenomethionine and selenite only in the roots of indica Minghui 63 by 45.5%-100.0%. Our results suggested that arsenite and arsenate had better antagonism toward Se species in selenate-added soil than that in selenite-added soil; moreover, arsenite had a higher inhibiting effect on the accumulation of Se species than arsenate.

Abstract
Food and water are the main sources of human exposure to arsenic. It is important to determine arsenic species in food because the toxicities of arsenic vary greatly with its chemical speciation. Extensive research has focused on high concentrations of arsenic species in marine organisms. The concentrations of arsenic species in freshwater fish are much lower, and their determination presents analytical challenges. In this review, we summarize the current state of knowledge on arsenic speciation in freshwater fish and discuss challenges and research needs. Fish samples are typically homogenized, and arsenic species are extracted using water/methanol with the assistance of sonication and enzyme treatment. Arsenic species in the extracts are commonly separated using high-performance liquid chromatography (HPLC) and detected using inductively coupled plasma mass spectrometry (ICPMS). Electrospray ionization tandem mass spectrometry, used in combination with HPLC and ICPMS, provides complementary information for the identification and characterization of arsenic species. The methods and perspectives discussed in this review, covering sample preparation, chromatography separation, and mass spectrometry detection, are directed to arsenic speciation in freshwater fish and applicable to studies of other food items. Despite progress made in arsenic speciation analysis, a large fraction of the total arsenic in freshwater fish remains unidentified. It is challenging to identify and quantify arsenic species present in complex sample matrices at very low concentrations. Further research is needed to improve the extraction efficiency, chromatographic resolution, detection sensitivity, and characterization capability.

Abstract
As an essential trace element in the human body, selenium (Se) has various physiological activities, such as antioxidant and anticancer activity. Selenium-enriched proteins/peptides (SePs/SePPs) are the primary forms of Se in plants and animals, and they are the vital carriers of its physiological activities. On the basis of current research, this review systematically describes the extraction methods (aqueous, alkaline, enzymatic, auxiliary, etc.) and detection methods (HPLC-MS/MS, GC-ICP-MS, etc.) for SePs/SePPs in plants. Their bioavailability and bioactivity, and the effect of processing are also included. Our review provides a comprehensive understanding and theoretical guidance for the utilization of selenium-enriched proteins/peptides.

Abstract
Selenium (Se) is a vital micronutrient with widespread biological action but leads to toxicity when taken in excessive amounts. The biological benefits of Se are mainly derived from its presence in active sites of selenoproteins such as glutathione peroxidase (GPx). An enzyme whose role is to protect tissues against oxidative stress by catalysing the reduction of peroxidase responsible for various forms of cellular damage. The benefits of Se can be harvested when proper regulations of its intake are used. In South Africa, Se distribution in people's diets and animals are low with socio-economic factors and heterogeneous spread of Se in soil throughout the country playing a significant role. The possible causes of low Se in soils may be influenced by underlying geological material, climatic conditions, and anthropogenic activities. Sedimentary rock formations show higher Se concentrations compared to igneous and metamorphic rock formations. Higher Se concentrations in soils dominates in humid and sub-humid areas of South Africa. Furthermore, atmospheric acid deposition dramatically influences the availability of Se to plants. The studies reviewed in this article have shown that atomic absorption spectroscopy (AAS) is the most utilised analytical technique for total Se concentration determination in environmental samples and there is a lack of speciation data for Se concentrations. Shortcomings in Se studies have been identified, and the future research directions of Se in South Africa have been discussed.

Abstract
In the presented study, the usability of hydrolytic enzyme immobilized magnetic nanoparticles as an extraction agent for the microextraction of metal ions from food samples was investigated. α-amylase modified magnetic carbon nanotubes (α-amylase-Fe3O4/MWCNTs) was used as an extraction agent for direct microextraction of trace arsenic from food sample phase into liquid phase medium prior to its ICP-MS determination. In extraction studies using hydrolytic enzymes, it is impossible to recover the free soluble enzyme after extraction without losing its activity. In our study, this problem was overcome by immobilizing the hydrolytic enzyme on magnetic support. In this way, α-amylase-Fe3O4/MWCNTs as an extraction agent with a reuse property of at least six times was used. α-amylase-Fe3O4/MWCNTs was characterized by FT-IR, XRD, SEM, SEM-EDX, VSM, TGA, and DTG techniques. Optimization of the presented method was performed using 1568 A rice flour certified reference material. Analytical parameters such as type of hydrolytic enzyme, pH and volume of the aqueous phase, extraction temperature and ultrasonic irridation time were optimized. The microextraction step was performed in ultrasonic water bath within only ∼15 min. Limit of detection (LOD), limit of quantification (LOQ) and relative standard deviation (RSD %) values for the developed method were found to be 14.3 μg kg-1, 47.3 μg kg-1 and 7.5%, respectively. The method was successfully applied to the analysis of arsenic contents of different rice and flour samples.

Abstract
In this present study conducted with the LFGD (Low-Frequency Glow Discharge) (Ar + O2) plasma treated maize seeds, to inspect the effect on seed surface modifications, seed germination, growth, development, productivity and nutritional compositions of maize plants. This study reported that LFGD (Ar + O2) plasma treated maize seeds have a potential effect to change its smooth seed surfaces and, it becomes rougher. It also enhances the seed germination rate up to (15.88%), which might help to increase the shoot length (33.42%), root length (10.67%), stem diameter (13.37%), total chlorophyll content (46.93%), total soluble protein (52.48%), total soluble phenol (21.68%) and sugar (1.62%) concentrations in respect controls of our experimental plants. For this reason, the acceptable treatment duration for maize seeds were 30sec, 60sec, 90sec and 120sec. After treatment, the plants exhibited a significant increase in CAT, SOD, APX and GR activities in the leaves and roots, and also significantly changes in H2O2 (208.33 ± 5.87μ molg-1 FW) in the leaves and (61.13 ± 1.72μ molg-1 FW) in the roots, NO was (369.24 ± 213.19μ molg-1FW) and (1094.23 ± 135.44μ molg-1FW) in the leaves and roots. LFGD plasma treatment also contributed to enhancement of productivity (1.27%), nutritional (moisture, ash, fat, and crude fiber) compositions, and iron and zinc micro-nutrition concentrations of maize. From this research, LFGD (Ar + O2) plasma treatment showed a potential impact on the maize cultivation system, which is very effective tools and both in nationally and internationally alter the conventional cultivation system of maize. Because it promotes seed surface modification, improved germination rate, shoot length, root length, chlorophyll content, some of the growths related enzymatic activity, nutrient composition, iron, and zinc micro-nutrients and the productivity of maize.

Abstract
Background Selenium (Se) in soil mainly consists of selenite, selenate, and elemental Se. However, little is known about the mechanism involved in the uptake and biotransformation of elemental Se by plants. Results In this study, the uptake, translocation, subcellular distribution and biotransformation of selenium nanoparticles (SeNPs) in rice (Oryza sativa L.), and a comparison with selenite and selenate, were investigated through hydroponic experiments. The study revealed that SeNPs could be absorbed by rice plants; and aquaporin inhibitor was responsible for a 60.4% inhibition of SeNP influx, while metabolic inhibitor was ineffective. However, the SeNPs uptake rate of rice roots was approximately 1.7 times slower than that of selenite or selenate. Under the SeNPs or selenite treatment, Se was primarily accumulated in roots rather than in shoots, whereas an opposite trend was observed with selenate treatment. Additionally, most of the absorbed Se was distributed in cell wall of the SeNPs or selenite treated-rice plants, while its proportion was the highest in soluble cytosol of the selenate treated-rice plants. The absorbed SeNPs or selenite was rapidly assimilated to organic forms, with SeMet being the most predominant species in both shoots and roots of the rice plants. However, following selenate treatment, Se(VI) remained as the most predominant species, and only a small amount of it was converted to organic forms. Conclusion Therefore, this study provides a deeper understanding of the mechanisms associated SeNPs uptake and biotransformation within plants.

Abstract
The present study was focused on the preparation and characterization of the antioxidant peptides by microwave-assisted enzymatic hydrolysis of collagen from sea cucumber Acaudina molpadioides (ASC-Am) obtained from Zhejiang Province in China. The results exhibited the effects of microwave irradiation on hydrolysis of ASC-Am with different protease. Neutrase was selected from the four common proteases (papain, pepsin, trypsin, and neutrase) based on the highest content and DPPH scavenging activity of hydrolysate Fa (Molecular weight < 1 kDa). The content and 2,2-diphenyl-1-picrylhydrazyl (DPPH) scavenging activity of Fa obtained by hydrolysis of neutrase increased by 100% and 109% respectively at a microwave power of 300 W compared with no microwave irradiation. Five subfractions were obtained after performing the gel filtration chromatography, and the Fa.2 exhibited the highest DPPH scavenging activity. The amino acid analysis showed that the contents of Glutamic acid, Alanine, Tyrosine, and Phenylalanine in fraction Fa.2 increased significantly, but an obvious decrease in the content of Glycine was observed compared to Fa. Four peptides (Fa.2-A, Fa.2-B, Fa.2-C, and Fa.2-D) were purified from Fa.2 by high performance liquid chromatography, and Fa.2-C showed the highest DPPH scavenging activity. The sequence of Fa.2-C was identified as Phenylalanine-Leucine- Alanine-Proline with a half elimination ratio (EC50) of 0.385 mg/mL. The antioxidant activity of Fa.2-C was probably attributed to the small molecular sizes and the presence of hydrophobic amino acid residues in its sequence. This report provided a promising method for the preparation of antioxidant peptides from collagen for food and medicinal purposes.

Abstract
Enzymatic probe sonication (EPS) was investigated as a novel and alternative technology for the extraction of five Se species SeCys2, MeSeCys, Se (IV), SeMet and Se (VI) from animal feeds. The critical parameters of EPS such as enzyme types, ultrasonic power, sample/enzyme ratio, extraction time and temperature were carefully optimized. Under current conditions, one sample can be extracted in 60s, in contrast to several hours required by the conventional enzymatic methods Moreover, the extraction is performed in pure water, no further temperature control or pH adjustment is needed, and therefore the risk of species interconvertion is drastically reduced or inhibited. The Se species were separated and quantitatively determined by high-performance liquid chromatography-hydride generation atomic fluorescence spectrometry (HPLC-HG-AFS), which allows the separation of organic and inorganic Se species in a single chromatographic run. The newly developed method was successfully applied to the determination of Se species in 18 feed samples collected from markets and local farms. Concerning the feed samples studied, the results of this work suggest that stricter measures should be taken to control the Se-enriched feed supplements in terms of Se species.

Abstract
P-arsanilic acid (AsA) is a emerging but less concerned contaminant used in animal feeding operations, for it can be degraded to more toxic metabolites after being excreted by animals. Rice is the staple food in many parts of the world, and also more efficient in accumulating arsenic (As) compared to other cereals. However, the uptake and transformation of AsA by rice is unclear. This study aimed to evaluate the potential risk of using AsA as a feed additive and using the AsA contaminated animal manure as a fertilizer. Five rice cultivars were grown in soil containing 100mg AsA/kg soil, after harvest, As species and their concentrations in different tissues were determined. Total As concentration of the hybrid rice cultivar was more than conventional rice cultivars for whole rice plant. For rice organs, the highest As concentration was found in roots. AsA could be absorbed by rice, partly degraded and converted to arsenite, monomethylarsonic acid, dimethylarsinic acid, arsenate. The number of As species and their concentrations in each cultivar were related to their genotypes. The soil containing 100mg AsA/kg or more is unsuitable for growing rice. The use of AsA and the disposal of animal manure requires detailed attention.

Abstract
Here we review recent developments in analytical proposals for the assessment of inorganic arsenic (iAs) content in food products. Interest in the determination of iAs in products for human consumption such as food commodities, wine, and seaweed among others is fueled by the wide recognition of its toxic effects on humans, even at low concentrations. Currently, the need for robust and reliable analytical methods is recognized by various international safety and health agencies, and by organizations in charge of establishing acceptable tolerance levels of iAs in food. This review summarizes the state of the art of analytical methods while highlighting tools for the assessment of quality assessment of the results, such as the production and evaluation of certified reference materials (CRMs) and the availability of specific proficiency testing (PT) programmes. Because the number of studies dedicated to the subject of this review has increased considerably over recent years, the sources consulted and cited here are limited to those from 2010 to the end of 2015.

Abstract
Consumption of vegetables grown in arsenic (As)-contaminated soils is an important exposure route to the element for humans. The present study is focused on locally-grown, frequently-consumed vegetables, such as carrots (Daucus carota), beets (Beta vulgaris) and quinoa (Chenopodium) from the As-polluted Chiu Chiu area in Northern Chile. The latter region is affected both by As discharge from copper mining activity and natural As contamination, leading to a high As content in local food and water. For the selected vegetables, the following aspects were investigated: i) Their total As, Cu, Pb, Cr, Cd and Mn content; ii) Arsenic speciation in the edible part of the vegetables by liquid chromatography inductively-coupled plasma mass spectrometry (LC-ICPMS) analysis; iii) Arsenic bioaccessibility in the vegetables during in vitro gastrointestinal digestion; iv) Arsenic species present in the extracts obtained from in vitro gastrointestinal digestion; and v) Arsenic dietary exposure estimates for the assessment of the risk posed by the vegetables consumption. A significant degree of As contamination was found in the vegetables under study, their metal content having been compared with that of similar Spanish uncontaminated products. In vitro gastrointestinal digestion of the studied vegetables led to quantitative extraction of As from carrots and beets, whereas efficiency was about 40% for quinoa. For carrots, only As(III) and As(V) species were found, being their concentration levels similar. In the case of quinoa, around 85% of the element was present as As(V). For beets, inorganic As(V) and unknown overlapped As species (probably arsenosugars) were found. No significant transformation of the original As species was observed during in vitro gastrointestinal digestion. Arsenic dietary exposure values obtained for the three vegetables (0.017-0.021μg As person(-1)day(-1)) were much lower than the JFCFA's safety limit of 50μg As person(-1)day(-1). Therefore, no toxicological risk would be expected from the intake of these vegetables.

Abstract
We report an analytical methodology for the quantification of common arsenic species in rice and rice cereal using capillary electrophoresis coupled with inductively coupled plasma mass spectrometry (CE-ICPMS). An enzyme (i.e., α-amylase)-assisted water-phase microwave extraction procedure was used to extract four common arsenic species, including dimethylarsinic acid (DMA), monomethylarsonic acid (MMA), arsenite [As(III)], and arsenate [As(V)] from the rice matrices. The addition of the enzyme α-amylase during the extraction process was necessary to reduce the sample viscosity, which subsequently increased the injection volume and enhanced the signal response. o-Arsanilic acid (o-ASA) was added to the sample solution as a mobility marker and internal standard. The obtained repeatability [i.e., relative standard deviation (RSD %)] of the four arsenic analytes of interest was less than 1.23% for elution time and 2.91% for peak area. The detection limits were determined to be 0.15-0.27 ng g(-1). Rice standard reference materials SRM 1568b and CRM 7503-a were used to validate this method. The quantitative concentrations of each organic arsenic and summed inorganic arsenic were found within 5% difference of the certified values of the two reference materials.

Abstract
A UV Fenton-like digestion method was developed first time for a complete digestion of milk samples by using 1.6 g L(-1) Fe3O4 magnetic nanoparticles, 0.2% (v/v) nitric acid, and 6% (w/w) H2O2. During the digestion, the liberated As-, Sb-, and Bi-containing species were preconcentrated onto the surface of Fe3O4 magnetic nanoparticles, which were conveniently separated with a hand-held magnet and subsequently dissolved in hydrochloric acid prior to hydride generation atomic fluorescence spectrometric detection. Owing to the integration of UV Fenton-like digestion, solid phase extraction, and magnetic separation into a single step, the developed method significantly simplifies sample preparation steps and reduces chemical consumption and hazardous waste. Limits of detection of 0.0015, 0.0022, and 0.0025 μg L(-1) were obtained for As, Sb, and Bi, respectively, using a 50 mL milk sample. The method was applied to the determination of these elements in a Certified Reference Material and milk samples.

Abstract
Rice is an important source of Se for billions of people throughout the world. The Wanshan area can be categorized as a seleniferous region due to its high soil Se content, but the Se content in the rice in Wanshan is much lower than that from typical seleniferous regions with an equivalent soil Se level. To investigate why the Se bioaccumulation in Wanshan is low, we measured the soil Se speciation using a sequential partial dissolution technique. The results demonstrated that the bioavailable species only accounted for a small proportion of the total Se in the soils from Wanshan, a much lower quantity than that found in the seleniferous regions. The potential mechanisms may be associated with the existence of Hg contamination, which is likely related to the formation of an inert Hg-Se insoluble precipitate in soils in Wanshan.

Abstract
To improve the nutritional value of durum wheat and derived products, two foliar Se fertilisers (sodium selenate and selenite) were tested at four rates (0-10-20-40gha(-1)) in 2010/2011 and 2011/2012 in southwestern Spain. There was a strong and linear relationship between total Se or selenomethionine (Se-Met) accumulation in grain and Se dose for both fertilisers, although selenate was much more efficient. Se-Met was the main Se species (≈90%) of the total Se extracted from all materials. Milling caused a 27% loss of Se due to the removal of Se located in bran and germ. In the pasta making process and the cooking process the loss of Se, mainly as selenite, was about 7%. Durum wheat may be a good candidate to be included in Se biofortification programs under rainfed Mediterranean conditions, as foodstuffs derived from it could efficiently increase the Se content in the human diet.

Abstract
Human exposure to arsenic (As) via rice consumption is of increasing concern. In the present study, the extraction and HPLC-ICP-MS analysis for As speciation in rice were investigated. A simple extraction with water and digestion with α-amylase followed by the analysis using ion-paring mode HPLC separation was developed. The method showed good extraction efficiencies (generally >80%) and column efficiencies (>90%) for rice samples. The optimization of mobile phase showed well separated peaks of As species. The limits of quantification (LOQ) of As(III), As(V), MMA, and DMA that were calculated based on sample mass were 1.6, 2.0, 2.0, and 1.6 μg kg(-1), respectively. A total of 185 rice samples (various types of rice) collected from different four regions in Thailand and some other Asian countries were analyzed. The total As and inorganic As in rice samples were in the ranges of 22.51-375.39 and 13.89-232.62 μg kg(-1), respectively. The estimated weekly intake of inorganic As from rice by Thai people accounted for 13.91-29.22% of the provisional tolerable weekly intake (PTWI).

Abstract
Arsenic is an element widely present in nature. Additionally, it may be found as different species in several matrices and therefore it is one of the target elements in chemical speciation. Although the number of studies in terrestrial plants is low, compared to matrices such as fish or urine, this number is raising due to the fact that this type of matrix are closely related to the human food chain. In speciation analysis, sample preparation is a critical step and several extraction procedures present drawbacks. In this review, papers dealing with extraction procedures, analytical methods, and studies of species conservation in plants cultivated in terrestrial environment are critically discussed. Analytical procedures based on extractions using water or diluted acid solutions associated with HPLC-ICP-MS are good alternatives, owing to their versatility and sensitivity, even though less expensive strategies are shown as feasible choices.

Abstract
A large number of publications describe the determination of arsenic in “environmental” samples in the broadest sense, a substantial subset of which focus on plant-based foodstuffs. There is a considerable interest in the inorganic arsenic content of food, especially rice, as there is recent evidence that concentrations may be high enough to exceed acceptable risk thresholds. The methodology for the determination of arsenic in rice is critically evaluated and results (a) for a rice flour reference material (National Institute of Standards SRM 1568a, certified only for total arsenic) and (b) a recent proficiency test (run by the European Commission's Joint Research Centre Institute for Reference Materials and Measurement) are examined. Difficulties with this particular analysis may lie in the sample preparation stages, over which there is still disagreement with regard to species stability, though a simple, hot-water extraction may be sufficient. High performance liquid chromatography separations with plasma-source mass spectrometry detection are popular; however, chromatographic separations are often not adequately described, the enhancement effect of carbon-containing species is often overlooked, and the fate of chlorine-containing species, responsible for an isobaric overlap interference, often obscure. Compound-dependent responses, for which there is a plenty of evidence, are almost never acknowledged or discussed.

Abstract
An ion chromatography dynamic reaction cell inductively coupled plasma mass spectrometric (IC-DRC-ICP-MS) method for the speciation of arsenic and selenium compounds is described. Chromatographic separation was performed in a gradient elution mode using 0.5 mmol L(-1) ammonium citrate in 1% methanol (pH 4.5) and 15 mmol L(-1) ammonium citrate in 1% methanol (pH 8.0). The potentially interfering (38)Ar(40)Ar(+) and (40)Ar(40)Ar(+) at selenium masses of m/z 78 and 80 were reduced in intensity by approximately 3 orders of magnitude by using 1.0 mL min(-1) CH(4) as a reactive cell gas in the DRC. Arsenic was determined as the adduct ion (75)As(12)CH(2)(+) at m/z 89. The detection limits of the procedure were in the ranges of 0.006-0.009 ng As mL(-1) and 0.009-0.03 ng Se mL(-1), respectively. This method has been applied to determine various arsenic and selenium compounds in cereal samples. The accuracy of the method has been verified by comparing the sum of the concentrations of individual species obtained by the present procedure with the total concentration of elements. The arsenic and selenium compounds were quantitatively extracted with a Protease XIV and α-amylase solution in a microwave field at 70°C during a period of 30 min. The spike recoveries were in the range of 94-105% for all determinations.
